KATSUE
Katsue is a reservation-only restaurant that serves mizutaki (chicken hot pot), a local specialty—perfect for entertaining out-of-town guests. The rich soup is made from herbfed Kyushu chicken, ginseng and cloud ear mushrooms and comes with boneless thigh meat, cartilage, chicken meatballs, and veggies. After trying the soup, add some homemade seasonings—yuzu pepper paste, spicy miso with garlic or freshly grated ginger—if you wish. Course prices vary depending on content. If you want to try the popular squid and sea urchin sushi, choose the ¥6,300 or ¥7,700 course.

예약 제로만 운영되는 하 카타 향토 닭 요리 미즈타키 전문점. 허브를 먹여 키운 큐슈산 닭에 인삼, 목이버섯 등을 넣고 끓여낸 깊은 맛을 자랑하는 유백색 육수에 뼈를 발라낸 다리살, 연골과 다짐육을 섞어 빚은 완자, 배추, 소송채, 파를 넣어 조리한 후 고객에게 서빙한다. 취향에 따 라 각 종 양 념(검은 색 은 죽 탄 이 들 어간 유즈코쇼, 빨간색은 마늘이 들어간 붉은 미소 된장, 흰색은 간 생강)을 곁들일 수 있다. 총 3 가지 코 스가 준비되어 있는데 간판 메뉴인 오징어와 성게 초밥이 함께 나오는 6,300엔과 7,700엔 코스를 추천한다.

TORA SHOKUDO FUKUOKA BUNTEN
Shirakawa Ramen, from Shirakawa in Fukushima Pref., is a rich but subtle soy sauce ramen served with hand-kneaded curly noodles. At Tora Shokudo Fukuoka Bunten lines form as soon as it opens just like at the parent shop. Tora Shokudo prides itself most on its hand-kneaded noodles, and you won’t taste anything like them anywhere else. The medium-thick noodles are left to age for three days, which results in a surprisingly smooth noodle. The rich, clear soup is made from chicken carcasses and soy sauce, and the umami seems to increase as you eat. There are no additives, so there are no unnatural flavors and the aftertaste is clean. The char siu, made from char-grilled pork thigh simmered in soy sauce, is a perfect fit. Topped with spinach, pickled bamboo shoots, and naruto fish cake, the entire bowl is well-balanced and visually appealing to boot. Also, try the salt ramen—only available at the Fukuoka shop—or the hand-made wonton noodles.

The trademark set meals, which change weekly, are packed with seasonal veggies. Choose the A set, which contains no eggs, dairy or meat, or the B set, which comes with free-range Akadori chicken or fish. Just want a quick nibble? Try the rice ball set, which comes with miso soup, or one of their raw cakes that are plant-based and have no carbs.

제31회 유메타치바나 매화 감상회
후쿠오카현의 꽃인 매화. 2~3월이면 현 내 각지에서 절정을 맞이하게 된다. 80헥타르에 달하는 광대한 부지에 잘 손질된 약 2만 그루의 매화나무가 심어진 타니가와 매화나무 숲은 매화 감상회 기간 중에만 특별히 일반 공개되며 야메 특산품, 먹거리 등도 판매된다.

cluster of 140 islands off the western coast of Kyushu make up the Goto Islands. Blessed with beautiful scenery, the entire chain of islands constitutes the Saikai National Park and is home to several Catholic churches. In 2018, UNESCO inscribed the Hidden Christian Sites in the Nagasaki Region to the World Heritage List, so the hidden gem that is Goto is not so hidden anymore! In fact, Goto City now boasts the highest rate of transplants within all of Nagasaki Prefecture. In 2017, 129 people moved to the islands, followed by 202 in 2018, and more than 70% of these new residents are younger than 40. While guest houses and hotels have their appeal, the best way to enjoy Goto’s glorious natural beauty is to glamp! Glamping experience purveyor Nordisk Village opened in Sept. 2018 in a former elementary school nestled in the mountains. Each tent comes equipped with a heater and a bed, and a separate building houses showers and toilets. After watching the sun set over the bucolic fields and hills, you can relax around a fire and enjoy a serene silence that you can’t get in the city. HIDDEN CHRISTIAN SITES OF NAGASAKI AND AMAKUSA
When Christianity was banned from the 17th to the 19th centuries, believers practiced their faith in secret on the islands off Kyushu. UNESCO recognized the historical significance of these practices and related sites by inscribing the Hidden Christian Sites in the Nagasaki Region to the World Heritage List in June 2018. The site consists of 12 component properties in Nagasaki and Kumamoto Prefectures.

The Local Roaster By The Beach
Things have really come together for Shunji Yoshii, owner of Thalia Coffee Roasters, at the Nogita intersection on Route 54. Six years in the same spot, he opened under the banner of Honey Coffee and slowly added this and that to make the cafe a popular stopover for locals, tourists, and cyclists. Roasting mostly South American and African beans, his flavors are not unlike before but include some new accents and notes that Yoshii hopes will distinguish himself and appeal to locals. Aloha Shrimp!
Many have remarked how Itoshima’s coastline resembles parts of Hawaii. That’s even more imaginable since Shotaro Chisaki set up his garlic shrimp truck last summer near Kishi Port on Sunset Road. He became hooked on those tasty crustaceans from his many trips to the islands and began making them for himself and friends at barbeques. Fast-forward and now he and his lovely staff Nana are serving Original, Lemon Butter, and Spicy Sauce garlic shrimp five days a week as eat-in on a picnic table or take-away.
