Ms. Shannon Dalton, Judges Coordinator, and Ron Passmore, Festival Coordinator, were extremely pleased with the record number of teams that turned out this year. Smoke Under the Oaks • Bainbridge, Georgia • FBA

AUGUST 8-9, 2014 BAINBRIDGE, GEORGIA - The FBA teams rolled into Bainbridge, GA for the 2nd annual cooking of the Smoke Under The Oaks BBQ Festival and set the town on fire. In a field of 40 Pro teams, even after awards for all four meat categories, there was no clear winner. That’s until Budmeisters, Thomas and Josh Henry of Lake City, Florida were called to the stage for Reserve and Matt Barber with Hot Wachula’s hauled in the Grand. There’s no argument that Matt’s Pork score of 199.3 tipped the scales in his favor. Wink and Robin Yelverton held on to a good competition with their team Wink’s Barbeque pullng a third place overall out of their second place brisket, ninth place chicken, eighth place pork and ninth place ribs. Brisket was won by Bite My Butt BBQ. All agreed this was a great contest and Rob McRae did a superb job of organizing the event.

The Fall season is quickly approaching us

Audrey Evans

Editor & Publisher aevans@bqtimes.com I am absolutely aware I was the number one person in the world complaining about the cold weather we had at the first of the year. I was also the same person who said, “If I hear one word about it being hot this

summer, I will knock that person OUT!”. Now, I am the one sitting here saying, I’m so ready for some cooler weather. Maybe that’s the problem. By the end of every season you are ready for the changes to come with the next season. We all love fall and we all love spring...I sure wish we could just have weather about 75 degrees with low humidity year round. I would probably have to move out of Georgia to get that wish and I don’t see that happening so, maybe I just need to suck it up and get used to it. With that being said, we are on the verge of a new season to appear. We have cooler weather on its way, football season about to start up, hunting season about to hit full

our horizons a good bit. Yes in some ways that means I am going to cut back on traveling but in alot of ways it means the substantial growth on the way for The BBQ Times. So, if you see me out at a competition please don’t hesitate to come up and speak. I am out in the BBQ world to meet as many great folks as I can and I always love putting a new face with a name. I hope you have enjoyed the fresh changes over the past few months and that you will love the ones still in progress. Until next month...keep rubbin’ those butts.

some of the best people in BBQ. We get a chance to eat at Aunt Carolyn’s - by far the best breakfast ever and the best cakes and key lime pie in the country! Miss Carolyn is Janet’s aunt and is the hardest working lady in north Florida! It runs in the family cause Janet is just like her We come home for a weekend and host a backyard cooking throw down and then it is off on vacation to Myrtle Beach for some R and R with my good friends Brant and Myra Littlejohn. Janet and Myra are going shopping and Brant and I are going to lose some golf balls and enjoy some adult beverages and might even sneak down the little Pee Dee river and catch some monster cat fish. We also plan to cook a little BBQ on Myrtle Beach. Truly looking forward to this trip. The Fun Cook is the same weekend as our Myrtle Beach trip but we had been missing invitations from our friends for so many years we decided we had to miss this event. Put it on your schedule because it is truly a fun time. We were lucky enough to get chosen for a television show called American Grilled and it was a lot of fun. It was really cool to pull into the parking lot in Pensacola Beach and see Lori Frazee’s van. We left Tavares late and drove all night to get to Pensacola and sure welcomed the extra hour from the time falling back 1 hour! We competed against Daniel Waters, Lori Frazee and Sherri Williams and loved being a part of this with some really cool people. We did not do as well as we wanted but losing to some people that really deserved it made it an easier ride home. Good job to Daniel and Lori and big congrats to Sherri who is very good at this cooking stuff. There is a big FBA contest in Hobbs New Mexico and it looks like a bunch of Florida based teams are going to make the trip. If you have not made a long road trip

or put together a flight and all the things that go into one of these trips you need to give it a try. Hobbs has a big payout and promises to be a real adventure. I would love to go but don’t think we can pull it off. Get on the FBA web site and check out the schedule for the rest of the year. It is amazing to see all the contests that have come on to the schedule and how many have signed up for several years. Please contact organizers early on just to let them know you might be planning to attend there contest. The earlier they know your coming the less stress these poor folks go through. Janet and I recently had to make a trip to McMinnville Tennessee to take my aunt Shirley to her final resting place. It is tough to lose a loved one but knowing she is no longer suffering like she was gives you some comfort. I had the good fortune to run into some family I had not seen in a while and got to hang out with my young cousin Grayson Mayfield. He took me outback behind his daddys house and showed me their homemade BBQ pit. It was made of block and brick and had a custom air intake and grate and when he pulled the top off it smelled incredible. I left him with some sauces and stories and figured out the love of good cooking runs in the family. I cant wait to go back and hang out at there cooking shack. I also got to hang out with my good friend Ricky Yates and telling tales from our younger days gave my wife some good laughs. I stopped by to see my aunt Joyce and uncle Frank and I am here to tell you go visit your kin folk you have not seen in a while. You will be glad you did. See everyone at a contest soon. Keep watching these food shows because we get to see a lot of our friends on the big screen! Safe travels and keep on smokin!

swing and of course BBQ season is about to hit full swing. If you are anything like me your calendar is already looking full for the fall season and you couldn’t be happier. It means we get to enjoy our time sitting by fires, having a cold one with some of our best buddies. I am looking to expand my calendar over the next year and visit some events and states that The BBQ Times hasn’t made it’s first official visit to yet. If you are located in one of those places and you have an event that, I JUST DO NOT NEED TO MISS, please shoot me an email and let me know. I can’t guarantee I will get to everyone in the next year but I am definitely looking to broaden

Pitmaster Big Papas Country Kitchen lighthousepointe@hotmail.com Down here in south Florida we take a little break from competition BBQ in the middle of the summer to stay at home and take care of honey do lists and remember what it feels like to be home on a weekend. Well the break is over. We are headed to Bainbridge Georgia for a really cool contest. Last year in Bainbridge was a lot of fun - I got to watch a guy win his first grand championship, showed a few of my friends you only need to buy one raffle ticket to win (I won a big green egg) and got coffee and a guided tour of some real pretty country. We took a ride around the country club on a golf cart, drank some really good coffee and saw lots of deer and turkeys. Southern hospitality is easy to find in this town! The following weekend we head to Panama City for a first year contest and we are going to vend and hopefully sell a bunch of food and compete well. We don’t usually vend this far from home but feel this is going to be an awesome event. Then it is off to Fernandina beach to vend in Janet’s home town. We get to set up 100 yards from the ocean and hang out with

LET’S GO BBQ ... It’s the height of BBQ season

Jeff Petkevicius Pitmaster Give it to God yokedup@gmail.com

Let’s Go BBQ! Is that one of the coolest things you can hear? We all just love the sound of the battle cry....Let’s GO BBQ!

We are in the height of the BBQ season and as summer winds down, kids go back to school and football is just around the corner.... So too, is the Fall Pro BBQ Competition season. Teams will be gearing up for fall classics including the American Royal – (Grand Daddy of All BBQ competitions) and the Jack Daniels Invitational with all of the history and prestige that go along with it. The second half of the year is always an exciting BBQ time of year. Every “season” creates it’s own anticipation. It seems like whatever “season” we are in, we’re looking ahead to the next one. We are a funny bunch of people which shows God’s sense of humor once again I was recently asked by a sister in Christ on Facebook, “Jeff, how do you maintain a Jesus focus 24/7?” It’s a great question and also a great compliment to hear that some-

Looking Ahead to a New Year By Jim Sewell GBA Vice President

As the last dog days of summer slide by, the Georgia Barbecue Association (GBA) is ramping up for the start of the 2014-2015 contest season. To put a cap on the 20132014 year, the GBA held their first ever annual banquet on August 16 at the Healy Point Country Club in Macon. About 150 members and guests turned out to enjoy an evening of fun, fellowship and to announce the GBA’s annual awards. The GBA’s corporate partners provided many great door prizes that were given away in separate drawings for cook teams and judges. Among the door prizes were 2 Stumpster Jr smokers from Stumps Smokers; 2 fire pits by Bubba Grills; Rub & Sauce gift boxes by Sweet Swine O Mine and gift baskets by The BBQ Times. Several GBA contests also chipped in with free team entry certificates or gift certificates for the drawings. Brad Sweet of Sweet

Bros Graphix donated the Team of the Year banners. For the first time, the GBA recognized a Judge of the Year. Each Lead Contest Rep nominated two judges for the award based not only on judging expertise but the person’s volunteer spirit and their standing as an ambassador for the Association. The Reps then voted on the top two nominees. We are proud to recognize Carrie Frost East as the 2013-2014 Judge of the Year. The GBA also recognized the top 20 Teams of the Year and the top 5 teams in each of the three meat categories. Smokin 42 BBQ captured the Pork Loin Team of the Year award. The Pulled Pork Team of the Year went to Sauced Hogs Smoke Shack. Bubba Grills topped the Ribs Team of the Year category. The overall Team of the Year contest turned into a two team race down the stretch. Sauced Hogs Smoke Shack captured the Team of the Year championship,

body sees that in me... All the glory to God, because it’s the Jesus in me that is reflected in situations like this. As I thought about it, keeping the Jesus focus is ON PURPOSE. It’s on-purpose because it’s something that I commit to every day as my feet hit the floor out of bed. The very first thing I do is thank God for another day of opportunity to serve Him. After stumbling down the hall to heat up day old coffee (I love it), the very first thing I do is sit down at my desk, with my puppy by my side, and break open the word of God. I’ve been reading the bible in a year for the past five years or so and it gives me the opportunity to spend time in the Old Testament, Psalms, Proverbs and the New Testament every day. It’s a conversation with my Father God that strengthens my relationship with Him and deepens my understanding of who God is. The readings takes ten minutes at the most, but it’s what opens my day, opens my mind and opens my heart to learn more about my God, my King and my Savior Jesus Christ. With each new day, that’s how it starts for me whether at home or on the road, that bible is my breakfast of the most important nourishment we have. From that point, it’s a day full of prayer and praise for the God who give me everything I have and takes care of me in the most simple, yet amazing ways. I look for,

and find, blessings throughout the day that encourage me and humble me to think that the Creator of the Universe loves me the way He does. The more I grow closer to God, the more I just want to serve Him. It’s the only way I can muster to humbly thank HIM for what He has done, and continues to do in my life. The Bible, and scripture are powerful. I am reminded everyday of the ministry that God has blessed me with and I seek to honor Him, thanking Jesus and finding ways to tell people about the man who changed my life by giving His for me. 2 Preach the word! Be ready in season [and] out of season. Convince, rebuke, exhort, with all long-suffering and teaching. 3 For the time will come when they will not endure sound doctrine, but according to their own desires, [because] they have itching ears, they will heap up for themselves teachers; 4 and they will turn [their] ears away from the truth, and be turned aside to fables. 5 But you be watchful in all things, endure afflictions, do the work of an evangelist, fulfill your ministry. [2Ti 4:2-5 NKJV] Jesus wants your whole heart! Nothing else is acceptable.... It’s worth it, what are you waiting for? Give it to God

The power of dream big & surrender!

“Famous Dave” Anderson Pitmaster /Founder Famous Dave’s of America

Success Secrets from America’s Rib King One of the most meaningful lessons you will learn in life is that your future begins to manifest into reality the moment you fully focus on your vision, trust in your ideas, and follow where your heart leads you. Successful people view their future as already being achieved. They believe in their dreams—Always! The second part of the lesson is that your future is never determined by your present

circumstances. People who focus on their present circumstances never move into their future. Remember your future quality of life is always determined by what is in you and never by what is around you! Failures in life always blame what is around them for their excuses and lack of success. Successful people always tell you their past circumstances were the motivating factors for their success, never their excuses! Start everyday like everything was “brand new!” Don’t pollute your new day with the negatives of yesterday. Treat everyone with genuine interest like they were the one person that you were just dying to meet, no matter how frustrating they might have been to you the day before. Give them the same second chance in life that you would want if you screwed up. Put aside your worries and disappointments. Instead look at everything with optimism and hope. Start seeing the good in everything or everyone that you come in contact each new day and soon your days will be filled with blessings and joy. When I was young I spent a great deal of time and effort trying to earn a lot of money so everyone would think I was “rich and important!” My whole life changed from the depths of personal failure when I was stunned by the fact that my selfishness to

make myself look important was my greatest stumbling block. I learned a very important lesson when I finally understood that there was power in the word “surrender.” By surrendering my personal ego and selfrighteous pride, my blindness turned into enlightenment. This incredible awakening enable me to access a universal wisdom that life’s higher purpose was to become a positive difference in the life’s other people. Instead of asking “what’s in it for me?”...

AUGUST 2014

I started asking, “how can I give of myself to make someone else’s life better?” Today with humbleness, I am now recognized beyond anything that I might have dreamed possible because I have surrendered myself into the service of others. Using the giftedness that God blessed you with to make someone else’s life a little bit better is the greatest reward and personal fulfillment that one can achieve.

See a new Stumps Smoker and a cash award by edging out Smokin 42 BBQ by just 8 points. Bubba Grills, 92 BBQ & Bethel Smokers rounded out the Top Five. The GBA, like Nascar, kicks off each new season with its premier event. The GBA State Championships are held each year at the ComSouth Hambone Jam in Fort Valley, GA on the first weekend in September. Team of the Year points are doubled for the State Championship contest. The contest year will consist of 20-25 contests. New contest venues in Griffin, Austell, Milledgeville, Duluth and Fort Gaines are already on the calendar with a couple other new contests in the works. In addition to Fort Valley, the GBA will be returning to Swainsboro, Hawkinsville, Richland, Moultrie, Jekyll Island, Tifton, Union Point, Douglas, Jackson, Hazlehurst, Acworth and Dallas. In addition there were many volunteers from the local communities that did everything from checking in judges, giving out “goody bags”, and assist onsite judges get to their proper teams. One of the trademarks of the Galax contest is the number of high end teams that attend. The competition is intense as most MBN teams there are in the Top 20 TOY standing. What were also obvious that these teams represented serious BBQ were the immense rigs they pulled into town. Many locals would be standing in awe as these Pro pit masters dazzled everyone with huge

displays of whole hogs, or over a dozen rib racks. Perhaps the most unique grill of the day was The Shed with their hog grill built into the back of an old jeep. You won’t find that grill in your local hardware store! Galax is one of the most unique contests on the MBN circuit. Located in the Smokey Mountains this contest enjoys pleasant temperatures even in July. Downtown is a great venue, and the many volunteers available shows how much the community supports this great festival. The Tomato Man

Brandt Haney

Pitmaster Backyard BBQ Studs If you have a garden at your home then you surely know it is a true sign of summer when you can walk out and see those bright red spheres mixed in with the green leaves. Whether you believe it is a vegetable or a fruit, everyone has a favorite kind of tomato to grow. Better Boy, Beefsteak, Juliet, Early Girl or the Cherokee Purple are all popular and folks will give vivid descriptions of each and argue the merits as to why they are the favorite of theirs and better than the rest. For me it is the Abraham tomato and it goes way beyond the structure and flavor, although that argument is a fine one in itself. Sure you can buy tomatoes year round just like everything else, but there is something about having a fresh tomato that has not been picked

Riding in the engine of a Southern Railway train he worked on and farming at his home. He had a nice plot of land where he grew all kinds of vegetables. Watermelons that were huge and sweet, strawberries, cantaloupes by the hundred that I helped pick one summer, and Abraham tomatoes. He was famous, at least locally, for his tomatoes. He had a table under his carport that he would spread the freshly picked delights and the locals would stop by daily to pick up a few. When he was not there he had a scale and self service money box and bags where people would use the honor system to get their daily fill. Oh his tomatoes were of legendary status and to this day I have not been able to come close to growing them the way he did. Even using Abraham seeds I get a few here and there and they tend to be the size of a golfball. Papaw knew what he was doing and tended to them daily. His would grow to the size of softballs. Deep red in color, firm in the flesh, meaty, and juicy when sliced with a strong flavor that was fairly acidic. When we would pay him a visit in North Carolina during tomato season he would pull out some plates and white bread with mayonnaise and pepper, and he would move to the refrigerator where he had already selected the largest tomatoes of the last day or two. He would carefully take a

Cowpens Mighty Moo BBQ Cowpens, a small town of 2,100 folks located in upstate of South Carolina, host a unique festival every year on Father’s Day weekend. The event is The Mighty Moo Festival. The town and the close-by Revolutionary War Battleground National Park is brimming with history. Yet the Might Moo doesn’t refer to the Revolutionary War era but to the WWII aircraft carrier USS Cowpens nicknamed the Might Moo. Sailors who sailed on the Cowpens have been returning to Cowpens, SC ever year for close to 30 years to celebrate the memory of their ship and shipmates. Several years ago the Town decided to include a Bar-B-Que contest with the Festival and the SCBA was invited to sanction the event. This year fifteen teams braved the hot June weather and a brief downpour to produce some great BBQ for the public and judges. Winning the butts competition were: Great job Thomas Volker, Event Chairman and Brian Snavely, SCBA Marshal.

Girls DO BBQ, Inc. develops Bonafide Tantalizing BBQ Spice Rubs. Since the Fourth of July, when grills and smokers are rolled out to prepare for summer months of BBQing, Girls Do BBQ, Inc. has introduced a new line of BBQ spice rubs, that are anything but ordinary. Located in Northwest Florida, Girls Do BBQ, Inc. combines humor with spice! Their recipes for seasoning and rubs have been developed over the last decade and provide great flavors and sassy names. Their Spice Rubs began from a love of coffee that developed into “Perk It Up” a coffee based BBQ rub, excellent for beef, poultry or pork. After much successful feedback from customers, Girls

Do BBQ created three more BBQ Spice Rubs; “Tongue Teaser” a smoky spicy rub, “Hot to Trot” an increased “heat” spice rub, “Gettin’ Lucky” a smoky, tangy, sassy, heat rub, as well as a multipurpose rub, “She Gets Around.” The humor and spice combination of Girls Do BBQ, Inc. has evolved into producing a cookbook, BBQ sauces and next up is beer! Girls Do BBQ, Inc. Spice Rubs are available on-line at www.girlsdobbq. com You can also check out recipes, tips and information about Grilling and BBQ on their Facebook page http://www. facebook.com/GirlsDoBBQ and Twitter @GirlsDoBBQInc.

Tina Cannon Takes American Grilled PRESS RELEASE

Georgia resident Tina Cannon has taken the BBQ World by (fire) storm. In just 4 years, she has captured Regional titles, won many thousands of dollars, and collected over 50 awards and trophies. When she and her husband Bobby enter a BBQ contest, there is a 70% chance that they will win or place. Tina’s culinary talents and her fiery personality have made her a fan favorite and have earned her a webbased cooking show series, her own blog (thePitCrewBbq.wordpress.com), and she is part of a team that recently placed 5th in Ribs in the World Food Championship. She has now made her national debut on a new television show found on the Travel Channel. Like many American backyard grillers, “American Grilled” is firing up this summer on the Travel Channel. Tina represented the state of Georgia in an episode that aired on July 30th at 9:00 pm. Tina is a classically trained chef who has tasted and created dishes from all over the world, but she has chosen to return to her roots,

Southern BBQ. She brings spice, style and sparks to her table. Tina has a catering company that specializes in smoked and grilled meats and is about to launch her own product line of bottled sauces. Sparks included. In addition to being both a European and American classically trained chef, Tina is an avid gardener, former owner of her own restaurant and catering service, and was more recently the floral design artist behind the Blue Lady Florist in Peachtree City. Tina can be described as a feisty and fiery Martha Stewart. Fiercely original and independent, she claims,” I am the only woman who has captured a Regional Championship for Sam’s Club.” Seems like that might just be the beginning. Tina’s motto is “Girls CAN Grill.” Catch American Grilled on the Travel Channel to watch Tina’s episode as she takes home the prize.
