Is it normal to have your BBQ weekends with a side of mud?

There is just something about this time of year

when it comes to competition BBQ it just gets plum crazy. It starts to seem like you are gone weekend after weekend after weekend at some competition somewhere. I can imagine that is why some folks love it and why some folks hate it. You don’t necessarily get tired of the barbecue, seeing your favorite friends or even the cooking portion; you just get tired. Everyone comes to the point they just want a few weeks at home. I know if you live anywhere near me, you will have that in a few months. We have some great contest coming up but they are not as frequent when we start seeing the 90-degree

days. We rest and get ready to roll again in the fall. I did not get to attend Memphis in May this year. I sure wish I could’ve been there to see so many faces that I don’t get to see as often during the year. Some of you that is the only time. I know you all had a blast without me and had a drink or two for me. That’s for sure. We have some great coverage in this edition with special thanks to some teams who have submitted some photos and also Jimmy Wagner who was on site taking some photos for me. I couldn’t have done it with out you all. Now, here is where I tell you what I did instead of

year. If it rains down here it is only for a few hours at a time and we do have the nicest weather in the states. It may get a little warm in the summertime but that is what swimming pools are for. We do have an occasional hurricane but what do us southerners do when we have a hurricane? We have a hurricane party! Up north they have blizzards and in some places they cant dig thru the ice and snow to even find their grills! All a hurricane is is God shaking off some branchs and tree limbs for us to have firewood to cook with. Buttonwood is one of the best smoking woods around and you are not allowed to cut down a buttonwood tree unless heavy winds happen to blow one over. One of the hurricanes a few years ago knocked

power out in our neighborhood for about a week. We fired up our old cook trailer and started the smokers and grills and cooked for everyone on the street until the power came back on. The most decent folks you will ever meet are here in the south and it is hard to find anyone that cooks bbq with us that you don’t call family. You will also have a hard time finding anyone who does not believe in our constitution or anyone that has a problem mentioning God are saying prayers for our families and our country. I think if we had a real down home bbq team in the Whitehouse we could fix all our issues that need fixing. I wonder if Myron Mixon is interested in the job. There would be a Wagyu brisket in everyones grill and a diesel

going to Memphis in May. A couple of months ago, I contacted a man who was putting on a first time contest, unsanctioned in Union Point, GA. If you have ever been into riding 4-wheelers, jeeps, dirt bikes or anything to that nature, you have probably heard of the Largest Off-Road Park in the Southeast. Probably the world. It’s Durhamtown Plantation. After speaking with this gentleman, I asked him to join me at a contest in April and introduced him to a few folks and tried to help him get some teams signed up. Of course after getting involved to this extent, I am going to go to the event and check it out. WELL FOLKS, it is one of a kind! The 2014 BBQ Festival at Durhamtown Plantation is already under way being planned. I will tell you know, it will be towards the end of March and will be a

Georgia Barbecue Association Sanctioned event. And it is one you do NOT want to miss. This year, they had a few cast members from the Show “Moonshiners” on site and it was not only a BBQ festival but a joint moonshiners festival. They had a people’s choice category, pork and ribs. The finale consisted of Fireworks, Pro Trick Motocross riders, and Harley Davison Drag Races simultaneously and we had front row seats from our cook rig. Over 1,400 people attended this first year non-sanctioned event, if that doesn’t speak for itself. They have a 7,000 SqFt. Chicken House that has been converted into a bar. Over 150 miles of tracks for you to ride your 4-wheelers, ATVs, or dirt bikes. Did I mention after awards, they had a Mud Run for anyone to compete to win up to $500? Yes, I did it. Actually I think I was

one of the first in line since I had already been pulled off to ride trails and go muddin’ between people’s choice and awards. I was actually cleaner when I finished the mud run than when I started. We stayed and rode on Sunday and I just want you to know this is a contest you cannot beat. Mark your calendar’s for next year and plan to stay for Sunday and ride your ATV’s. dually in everyones driveway! Some of the competition bbq teams around the country are just starting their seasons and down here in Florida we have already had 13 contests. We welcome teams from all over to come down and cook with us if you cant find your cooker in a snow drift somewhere. Just give us a call cause all you have to do is show up – someone will always loan you cookers, tents, anything you need. You will meet some great people and see how much fun we have. The competition down here keeps getting tougher and there are many teams with the cooking abilities to win. When we compete against each other on a weekly basis it makes all the teams work harder on their overall game and it would not surprise me to see an FBA team win the Jack or the Royal this year. The team of the year battle is fun to watch. We have a big time race going on this year with 3 points separating the top 3 teams and several other teams well within reach of the top guys. On a serious note – this is where prayers come in and there is power in prayers – Our good friend Marco

Taylor with Forrest Lumps Charcoal had an accident in his family – his daughter had an accident while cooking on a stove and was severely burned – Marco had to rush home and we all need to keep his daughter in our thoughts and prayers. If anyone needs charcoal call his cell phone and help keep his business running in his absence – Marco has given a lot of time and effort and product to support the Battle At BBQ Junction and all the contests in the FBA. I will keep up with the family thru facebook and email. There has been some entertaining things going on at some contests lately. The Fort Pierce contest had a Battle at BBQ Junction with Smoking Pink BBQ cooking against Two Crackers Cooking and our old friend Jim McCoin with his Cowboys team going against the Barn Goddess out of Ocala. Two Crackers and Barn Goddess won the first round and Barn Goddess won the championship to become the 6th winner this year. We are going to have a playoff when we finalize all the contests to see who the best all around cook is in the FBA! So far we have some talented champs – Naples BK BBQ – Ft Pierce Cowboys Divine

Swine – Clermont Florida Boys – Ft. Myers Blitzkrieg – Venice BGE Pit Crew and Fort Pierce Barn Goddess. Several teams that have taken Big Papas Cooking School have done well lately – including Big Papa – winning Grand at Ft. Pierce, Sweet Smoke Q won his first Grand, Newmans BBQ had 4 top ten calls, Two Crackers Cooking won first in brisket and won his first grand at St. Cloud with a second chicken and a first in ribs pork and brisket, Pharter Starters got 2 good calls and several others have been cashing in with walks to the stage. A few birthday boys got some cake and maybe a birthday pie, I heard rumor there was a birthday gram delivered by a policewoman, some pigs and lamps and trailer tires were misplaced and one team is having surgery hoping it will help his chicken score. Keep an eye on Pitmasters and look for Rub and Big Papa – I heard television makes you look 10 pounds lighter – God I hope that’s true. See everyone at a contest soon. week from competition, with joy in my heart, I scan all the contest results to see how my friends have done. Barry Smith – GC, Lex and Robert – RGC, Parrothead John – 3rd place, IAB boys move onto Bentonville, John – House of Q 13th… and many more.. Reality sets in and I realize that my 3rd Rib, and 3rd Pork National rankings are going to plummet, drop like a rock, due to the points these guys are piling up and all I’m doing is cooking my extra chicken and grilling

some burgers. There’s nothing I can do, but wait for Monday to assess the extent of the devastation. And then, God takes me back to the lesson He’s working on with me. He has me think about Columbus, MS where I scored a perfect 180 in Pork coming in ahead of another 180 turned in by Hotty Totty. He reminds me of my 1st brisket there and the first time I won either category. Where does my mind drift toward? The 22nd rib. That’s right, my focus is on

that darn 22nd rib and how, if it had been just a little better, GC would have been mine. That’s just like us all, we are blessed with so much right around us in so many ways, but we choose to focus on what we “don’t” have, what we are missing, what WE want as opposed to what God needs us to have and utilize for His Kingdom. The next time you get into this mind-set, ponder this. God’s word is the perfect GPS to the truth and the peace of Jesus Christ in this

world, if we are willing to open our hearts, drop our pride, and respond to His voice. “And all these blessings shall come upon you and overtake you, because you obey the voice of the LORD your God: - Deu 28:2 NKJV That’s the good part, but we need to understand the character of God and how He responds to disobedience… God also says this: If you will not hear, And if you will not take [it] to heart, To give glory to My

Thank you God for loving us and being a great Father to your children. Thank you Jesus for BBQ!

Something just isn’t right about this either. Next I read about “guncontrol” and the NRA convention. In my opinion, one of the very few associations that is truly taking a stand and sticking to the issues at hand (my political opinion here folks). Then I read about feral hog problems in the state of Georgia. The state of Georgia and other organizations are spending up to $550,00.00 to help get rid

of these feral hogs in one section of the state. At least some of them are being used to help feed the needy thru local churches in the area. It seems like to me they should sponsor a big-ole bbq’ing. Cookers could gain experience cooking and then feed the “masses”. Last but not least from the Sunday newspaper is “BBQ & Back Pain”. One of the local orthopedic groups wants you to come by their complex hear about “managing back pain” and then eat some “Q”. Excuse me, we don’t interfere with orthopedic medicine so why on earth should they enter into the bbq world and to try entice back-pain suffers with bbq? I am not positive but I am pretty sure there is not one bbq team in this part of

the country sponsored by an orthopedic group. So what do they know about “Q”? Maybe they should have invited a professional cooking crew to come cook for them if they want this whole concert to be professional. I know there are some “backyard” cooks that can come up with respectable bbq but listen if you are gonna work on my back I want professionals and by the same respect if you want the best available bbq then you should at least step up to the plate and have a professional Barbecue Team from the Georgia Barbecue Association cook for you and remember: “It’s All About The Taste”! Besides, barbecue folks are about the nicest group of folks you ever want to be around. I have said this be-

fore but our cooks and judges are really good folks and they are fun to be around. I have seen cookers helping each other with equipment failures. My fan just broke, well I have an extra one you can borrow. I forgot so&so I have some extra you can use. I have seen our older judges giving pointers to our new judges and the new judges are thankful for the help because it just makes them a better judge in the end. The Georgia Barbecue Association family is just a “laid-back” except when they are running late with a turn-in box, group of people always willing to share expertise and advice with just about anybody. Now you must remember there are a few “closely-guarded secret”

recipes they don’t completely share. Our “Sweet Treats” column shares all with those who care to try and there are some good ones this month. We only have a few contest left in this cook season and it has been quite a ride and I sorta hate to get off the wagon but my time is drawing near. I am not a candidate for next year. Smell the smoke at Smoke on the Lake, Breanau Barbecue Championship, GBA Goin’ Costal and finally The Pig N Swig in Newnan Ga. Folks lets go cook and judge some “mighty-fine-Q” and leave the “doctoring” to the doctors and the barbecuing to us. Whatdoya say?

We are looking forward to a brand new contest in Bainbridge, Georgia this year. I know the organizer has been working very hard to put on a great event.

The merchandise trailer has started making the rounds again. Dothan was the first stop up north this year. We are running low on some items (pink shirts, who would have thought) but will be reordering. In fact, I just ordered pink baseball caps! We will even have a limited number of children’s hats. The trailer will be making stops at Venice, Ft. Pierce, Cocoa, and Oviedo. We now accept credit cards! I would like to have the trailer at

Gluten-Free Crustless Coconut Pie

Whirl the ingredients together in a blender, pour in a pie plate, bake, and dessert is ready. You can use regular all-purpose flour if you’re not concerned about eating glutenfree. 4 ¼ 1 ¼ ¼

eggs cup butter, softened cup granulated sugar cup gluten-free all purpose flour teaspoon baking powder

cups whole milk teaspoon vanilla extract teaspoon salt cup flaked coconut

Preheat oven to 350 degrees F. Grease a 10-inch pie dish. Combine all ingredients in a blender, blend until smooth. Pour into pie dish. Bake for 1 hour and let cool for at least 1 hour or you make chill for a short time. Then serve. Recipe from: Janice Lankford

Old-Time Coconut Cream Pie

1 egg yolk 1/3 cup sugar ¼ cup all-purpose flour ¼ teaspoon salt 2 cups milk 1 tablespoon butter 1 teaspoon vanilla extract 11/2 cups shredded coconut 1 9 inch graham cracker pie crust 2 cups extra-creamy whipped topping

In a medium bowl, mix egg yolk, sugar, flour, and salt with a whisk; set aside. In a medium saucepan, heat milk on medium-high heat, do not boil,. Add ½ cup heated milk to egg yolk mixture and whisk until most lumps are out. Slowly add egg yolk mixture to remaining heated milk in saucepan; reduce heat to medium low and cook until thickened, stirring constantly. Add butter & vanilla; stir until mixed well. Remove from heat and stir in coconut. Pour into pie crust. Chill at least 2 hours or until set. Top with extra-creamy topping and add 2 tablespoons of toasted coconut to top before serving. Two Minute Hawaiian Pie 1 (20-oz) can crushed pineapple in syrup, undrained 1 (6 servings size) package instant vanilla pudding and pie filling 1 (8 oz) container sour cream 1 (9-inch) prepared shortbread pie crust 1 (8-oz) can sliced pineapple, drained and halved 8 maraschino cherries, drained 2 tablespoons sweetened flaked coconut In a large bowl, combine crushed pineapple with syrup, dry pudding mix, and sour cream; mix until well combined. Spoon into pie crust with pineapple slices and cherries on top; sprinkle with coconut ( more if needed). Welcoming Columnist, Paul Schatte Battle of Brandon BBQ Challenge

Paul Schatte, is Co-owner of Head Country Food Products in Ponca City, OK. His bar-b-q career began at a young age in Houston, TX. His dad Ed taught him the art of bar-b-q. For the Schatte family it was a way of life. “We were cooking meat on the pit every weekend,” Schatte said. “While we were mowing the yard, washing the cars and other weekend chores, dad had ribs, brisket or chicken on the brick pit.” Paul moved to Ponca City in 1979, He and his wife, Shelly, moved there to teach school at First Lutheran School. Paul taught for nine years and was then the principal for 11 years. His first taste of competition bar-b-q was in 1990 at the Ponca City Cherokee Strip contest. That is where he met Danny Head of Head Country Food Products. Paul competed in the backyard division at that contest with his dad. “We finished 5th in brisket and I was hooked,” Paul said. The next spring

Head asked Schatte to join the Head Country competition team. Schatte jumped at the chance and went to a completion in Oklahoma City to watch how Danny competed. Schatte was amazed at how similar the two cooking styles mirrored each other. The Head Country teams have been known to cook “hot and fast.” In May of 1991, Head and Schatte entered Head Country and Head Country II in the Oklahoma Joe’s Oklahoma State BBQ Championship in Perry, OK. Schatte’ s Head Country II team won Grand and Danny’s Head Country team won Reserve Grand. In 1999, he left the education filed and went to work at Head Country as their General Manager. In 2008 Paul purchased part of the business from his partner Danny. Paul doesn’t compete as much as he used to. He has won his share of contests over the years, including The Jack Daniels Grand Champion, American Royal

Reserve Grand Champion, Great American BBQ Reserve Grand Champion and over 50 other regional, state and local championships. Head Country Food Products produces an average of 6,000 gallons of bar-b-q sauce a day at its 30,500 square foot plant in Ponca City, OK. The company distributes their product in 18 states and 17 foreign countries. Head Country recently received the Oklahoma Governor’s Award of Excellence in Exporting for 2013. Head Country Food Products is British Retail Consortium (BRC) certified. “Food safety is a growing concern for the FDA,” Schatte commented. “We except the concern for food safety, and have implemented the highest food safety standards in our plant.” “Retailers don’t have to worry about our food manufacturing procedures.” Paul will be writing articles for The BBQ Times periodically.

Secrets of an Award-Winning Pit Master When people find out you are a pit master of a BBQ competition team they always have plenty of questions. Do you own a restaurant? Do you stay up all night? Being from South Carolina, home of four different sauce styles, it is only fitting to combine two of those styles. It is a tomato base, vinegar-pepper style sauce. 1 part Sonny’s BBQ Sauce (Sam’s Club) 1 part Apple cider vinegar 1 part Apple juice Red pepper flakes to taste There you have it. I know you are probably scratching your head and saying something like there has to be more to the recipe. It can’t be that simple. Well that is all of it and it is that simple. That is the honest truth…this time anyway. I have only shared this secret sauce (not so secret now) recipe with a couple of friends. I now share it with you in hopes we can become BBQ friends. Enjoy! Education Foundation Memorial Weekend BBQ Cook-off in Seneca, S.C.

To some teams, homemade sauce is their Holy Grail. Their super-secret recipe is to be guarded at all cost. Some will even say, “If I tell you I’ll have to kill you”. The individual asking the question does not realize how close they are to meeting their sauce maker just for asking a seemingly innocent question. No doubt pit masters keep certain things secret. And to get you off the trail, some will throw a curve ball at you. I admit I’ve done it on the BBQ field of battle. Do I feel guilty? Maybe a little sometimes…but all is fair in love and competition BBQ. However, one of those untruthful concoctions turned into a shocking surprise. A little “curve ball” that turned into a surprisingly simple and inexpensive sauce so good we use it to this day for our onsite public samplings. And today I am going to break the secrecy of the pit master code. I am going to share the secret sauce recipe.

Smokin’ 42 BBQ Earns First Grand Championship at Smoke on the Lake

ACWORTH, GA - It’s a long haul up I-75 from Tifton to Acworth. The trip back down the interstate after the Smoke on the Lake contest didn’t seem quite as long for Smokin’ 42 BBQ with their first Grand Championship trophy riding shotgun. However, the win didn’t come easy the Men in Black. For the first time in GBA history there was a three way tie for Grand Champion. Smokin’ 42 BBQ turned in the best Ribs of the day. Bubba Grills was runner-up and Sauced Hogs Smoke Shack took third place. But Rubbin’ BBQ and Rub Shakers Que rounded out the top five. The GBA also held it’s first ever Cooking for Fun division at Smoke on the Lake. The Cooking for Fun division is for teams who love to cook and want to get started in the GBA style of competitive BBQ. Cooking for Fun contests have lower entry fees than a regular GBA contest and do not have a finals round. The Fat Guys had the highest scoring box of the day with a 595.1 in Pulled Pork to take the Grand Championship.

The Fat Guys also has the highest cumulative score over the three categories, but since they won Grand Champion, the Reserve Grand Championship passed down the the second highest cumulative score by Direct Lender BBQ. The Fat Guys won the Chicken category with Squealz on Wheelz in second and Red Top BBQ in third. Holy Smokers NS took first in Ribs followed by Hickory Flat BBQ and Direct Lenders BBQ. It was The Fat Guys again getting the first place call. This time for Pulled Pork. Sweet Bottom BBQ was the runnerup and Direct Lender BBQ again took third place. The GBA would like to thank the North Cobb Rotary Club and the City of Acworth for hosting a great contest on beautiful Lake Acworth.
