AUGUST 9, 2013 - FRANKLIN, NORTH CAROLINA - If you pay attention, you will notice about this time every year a fleet of Florida teams make there way up into the mountains. They claim it’s vacation if you ask the wives and children but it only takes a moment of talking to the “fella’s” to understand the truth of the matter. There is a cook-off in Dillard, Georgia one weekend and the next weekend is Franklin, North Carolina. These two towns are only about 5 miles apart even though they are in different states. It is the upper most corner of Georgia as far as you can get. Rob “Rub” Bagby was one of those Florida Boys that made the treck, and I bet he is glad he did. You may have seen him recently on BBQ Pitmasters

shown on Destination America where he competed in the Semi-Finals to be BBQ Pitmasters Grand Champion but was cut just short of doing so. My guess is, after this weekend in Franklin, North Carolina Rub isn’t too worried about all of that too much. When Rub took home Grand at the Mountain High BBQ Festival and Car Show, he clinched his seventh Grand Champion win this year which automatically qualified him to go to The 25th Annual Jack Daniels Invitational Cook-off coming up in October in Lynchburg, Tennessee. It has been rumored that Donny Bray of Warren County Pork Choppers did the same thing this same weekend in McMinnville, TN and I am sure a few more will do the same before it is over.

JULY 20, 2013 GALAX, VIRGINIA - Tucked away in the Smokey Mountains of Virginia lies Galax, a small town of perhaps 7,000 souls. For almost a decade this community puts on a festival in the middle of the downtown area. Lining the streets are local vendors with intermittent BBQ teams, stages with bands, fiddle players (Galax is birthplace of mountain music), vintage autos, and children’s rides. Behind the street booths are the downtown stores featuring plenty of gifts, more food, antiques galore, and variety shops. This MBN sanctioned BBQ event is a welcomed contest for heat weary teams, judges, and MBN reps. It is mid-July and one can awaken in the morning and wish they had brought a jacket. Boars Night Out (BNO) continued their torrid pace by capturing the Grand Championship with their Shoulder entry as well as taking 1st place for Whole Hog, and 4th in Ribs. Bubba Grills took 1st place honors in Ribs. Victory Lane won 2nd place trophies in both Hog and Shoulder. This was BNO’s 3rd Grand in 2013 and padded their lead for TOY.

Don’t Be Envious of the Season I have ahead PAGE 4

THE BBQ TIMES

The BBQ “Season” is a tough phrase to understand. Most of the people

you meet at a competition on the weekends work their normal job Monday through Friday and you meet again at a BBQ in the end. So for those folks, the “season” as it’s called may be dependent on their busy time of the year at work, or it could be the time of the year when they have the extra money or time to get away at home. It may be when their kids are out of school or maybe only when the kids are in school; but what about if they participate in sports? Do you see where I am going with this...hang on maybe you will after the second

paragraph. Have you ever sat back and thought oh wow, I would love to live on the BBQ circuit. That would be my dream job. Everyone has, I’m sure of it. But is it all that great? You know the folks I am referring too: Myron Mixon, Rod Gray, Michael McDearman, myself even...that list could go on for days in reality. We are those folks who are on the roads daily, living competition BBQ reality while our families are at home unless they are lucky enough to go with us at times. So, that “season” I was referring

too, seems non-existent. Our season goes year round. We may not be on the road year round, but you can bet when we get to sit down and enjoy life those few months we aren’t on the road we are still working and preparing for the days ahead. For me personally February thru May is tough, and August thru the first weeks of December are as well. My fall 2013 journey has started by the time you are reading this and I am on the road again. The question is, how do you choose where to go? I don’t have anyone making

Second half of the year off and running!

We always slow down a little in the summertime and all look forward to Damons contest in Live Oak as the kickoff to the second half of the season. Team Unknown won 3 contests, Sweet Smoke Q looked like the team to beat with Hot

Wachulas right there with them. Big Papa has chased these two and the Team Of The Year race is going to be fun to watch the rest of the year. Live Oak always provides for a good contest and even though Damon had to shuffle at the last minute to move to a new location the event went off well. It was tight at the top is an understatement. Big Papas managed a Grand Championship over the hottest team in BBQ edging Team Unknown by less than .05 points. Chatham Artillery was a close third with Hot Wachulas coming in 4th and Git R Smoked rounded out the top 5. 52 teams made the trip to Live Oak and the new facility will be able to hold a huge crowd next year. Swamp Boys won the

cool chicken trophy for 1st place chicken, Hot Wachulas won the cool pig trophy for 1st place ribs, Team Unknown won the 1st place pork pig and Chatham Artillery won the coolest brisket trophy ever. The Art teacher from the high school makes these trophies every year and they are truly awesome and all teams are proud to win one. Janet and I usually get to Live Oak on Thursday night so we can go eat at the Brown Lantern and hang out with all our North Florida friends but we only made it as far as Ocala on Thursday night and had some axle problems. We had a romantic evening of Krystal burgers and red box movies in a truckstop parking lot and finally got back on the road at noon on Friday. We made it into Live Oak a little late and took a page out of the Swamp Boy/Hot Wachula book of show up late but still cook good. I have a lot of friends in bbq and its like having a big extended family. I hope they all feel the same way about us cause when one of them has a little mishap I make and present them with a little trophy for their efforts. The latest winner was Larry John

from LJ Smokin. A while back Larry had a mishap with an injector that ended up sticking completely thru his thumb. With a little Tequila and a little paramedic work we had Larry patched up and back to cooking. He did win the “Injector of the year award” and accepted it with a smile! From Live Oak we moved on to a new contest in Bainbridge which is in a nice little town in Georgia. The organizers did a fantastic job setting up a new contest expecting about 25 teams and ending up with 45 professional teams and 14 backyard teams. The facility is at a golf country club and they plan to make the infrastructure even bigger and this contest could hold 100 teams. I was lucky enough to get an early morning tour of the course and the dear and turkeys are all over some beautiful land. Bring your clubs and grills and have a good time next year. Big Kids won the Grand in the backyard division with Granddaddys Best winning Reserve Grand. Pitboys Smokin took 3rd, Wicked Lickin bbq took 4th and Coke Smokers took 5th. Wicked Lickin is going to be a big winner in the future

my schedule; I have to figure it out. It seems like there are a million great contests coming up this year. Not only do you have the 25th Annual Jack Daniels Invitational, you have the American Royal and now we have added The World Food Championship in the last couple of years. All of which are top-notch events. Then you mix those with the events everywhere else in the world. I can only begin with the ones right here close to home, you have The National BBQ Cup, The Big Pig Jig, Hawkinsville Harness Fest Pigs and Produce, Amelia Island Tailgate plus the Brisket cook-off a few

– He is a teenager that will be in the pros soon. This kid can cook! Young teams stole the stage this weekend with Old Man Joes BBQ winning their 1st Grand Championship in just their 2nd contest. He is an Air Force active military member and is scheduled to go back out of the country soon and I was proud to see him win. I was sitting next to him on the stage when he got called for Grand and he was shaking like a leaf and was truly excited to win. Another young fella with perhaps the best equipped trailer in bbq – Big Kahuna won Reserve Grand. Poverty Hills Smokers gets better every time out and had a nice 3rd place finish. Big Papas squeaked out a proud 4th place finish and Bethel Smokers had some good calls and finished 5th. Tripp Smoke is another young guy that gets better everytime he cooks and won 1st in chicken. Hicktown bbq had a big score in ribs for a 1st place finish, Sweet Smoke Q owned a 1st in pork and Old Man Joes iced his Grand with a big score and ist in brisket. All the Folks at Bainbridge worked hard to put on a great contest and I recommend everyone sign up

weeks later, The GBA State Championship “The Hambone Jam”, Lake City Pig Fest, Sumner Egg Fest (and the last two are on the same weekend) Mulberry FBA, the FBA Triple Crown...ok I think you get the picture. And that’s only a few weekends between now and December. I really have no idea where I will go. I can’t ever really decide until the last minute. I have grown accustomed to the newspaper editor’s lifestyle I assume, you fly by the seat of your pants and hold on when it comes down to a deadline. They always seem to bite you in the pants! Wherever I end up in

early next year cause that contest is gonna fill up fast. Big Green Egg put out an awesome display and raffled a large Green Egg. I told all my friends that I planned on winning that egg and I don’t think anyone believed me. I was in shock when they pulled my ticket and I will laugh about my luck for a long time. We just need a recipe for cooking gnats on the Green Egg and Bainbridge will sell out early! Everyone needs to pay attention to the contest coming up in Lake City. There is going to be a Florida Georgia throwdown at the end of the contest and this is going to get serious. Robbie Royal the BBQ superstar movie star champion cook is going to put togethera a team of BBQ wannabes out of Georgia to Take on Big Papas BBQ All Star Team from Florida in a turn in at 3:00. Robbie has to hire some teams to show up and I could draw names out of a hat and have a winning team. Bragging rights, some trophies, some cash and some special little side wagers are on the line. I promise you this will be fun!

How do you interprete instruction and correction?

Jeff Petkevicius Pitmaster Give it To God yokedup@gmail.com Hey, hey, hey.... BBQ family. How ya’ll doing? Down here in the deep

South, it’s baking hot and so humid all you have to do is think about going outside and the sweat starts to roll. Go ahead and laugh you Yankees.... I’ll be wearing shorts in January when you’re on your third tank of gas for the snow blower. :) One of the many things I love about God is His ability to cut to the chase and get to the point. Take this scripture for example: Whoever loves instruction loves knowledge, But he who hates correction [is] stupid. (Pro 12:1 NKJV) Now, that is the kind of bible verse that defies interpretation or explanation. If we are not willing to learn,

if we are not willing to put our pride down and take instruction...well, we’re just stupid. I’ve been there, and I continue to visit this location on a regular basis. Professional BBQ is custom made for men and women who love to compete, who love to be challenged on so many levels. It all culminates on Saturday afternoons when the winners names are called. After all is said and done, with score sheets in hand, we all have the opportunity to learn. We can take the results, make excuses or look for justification ie.. bad judging. Or, we can take correction, think about what we did and how

Farewell & Welcome

Harry Faircloth President

Georgia BBQ Association hlfcloth@bellsouth.net Hello to all of The Georgia Barbecue Association members and guests. We have just finished our election process for the 2013-2015 cook years. I am very proud to tell you that we have a highly qualified slate of officers to run the Association for the next two years. Mr. Danny Meadows will be your President. He has a list of qualifications from Jackson to Brunswick. He has years of experience as an organizer, an event cocoordinator, a judge and cook. Believe it or not he can cook! Mr. Jim Sewell will be

your Vice President. Jim runs our web site and does an outstanding job. I can’t begin to tell you how helpful he has been to me the past several years. He also is an event organizer, judge and cook but not competition. However Lucy, his wife, says he can cook up some pretty fair bbq himself. Mrs. Pam Nelms will continue to be your Secretary Treasurer. Pam has worked very diligently the past years to help grow our trained judges. She and her husband, our past Vice President Jimmy Nelms. have done a great job of running our judges training classes. Pam will continue to handle our communications with the members as needed. And, she is also the lady that collects your dues—-if you haven’t paid yours yet you need to do so. As my farewell is at hand, let me tell you it has been a heck-of-a-ride! I can’t begin to thank all of you that have supported The Georgia Barbecue Association and have gone out of your way to help us grow and become more successful. It is really good to see many of our contests are increasing

their pay-outs, some as high as $10, $12 and $13,000.00. As these pay-outs have increased, of course, we have had more pit masters come on board. Teams from Florida, South Carolina, Tennessee, Alabama and even from as far away as Texas and Iowa have competed in our events just this year. We have some very fine judges in our stable now and they know their “stuff”. They will give you fair and honest scores. Every contest brings a different set of qualified judges to different tables. I have monitored tables and I see some outstanding scoring by our judges. I ask that you support your new slate of officers and give them the same support you have given me. Lets make this next year more successful by working hand-in-hand –, judges, cooks and EVERYBODY. Don’t forget to communicate with the Board of Directors so they can get a better feel for what is going on. Always feel free to make suggestions. They do listen. Farewell and welcome onboard Danny, Jim and Pam.

we can learn, grow and get better at our craft. That’s BBQ, and the same is true in our daily lives. Each and every day, we make decisions on how we are going to play out life. We make decisions on what is important to us, and who we are going to serve, by what we “Do” and don’t “Do”. We often times want to forget that our lives are being judged as well as our BBQ. Ultimately, we will all stand before the Creator God and get our final score sheet. No excuses will be accepted or allowed. The good news is that surrendering our lives to Jesus Christ has enormous benefit

at the final Award Ceremony. Check it out for yourself: What then shall we say to these things? If God [is] for us, who [can be] against us? He who did not spare His own Son, but delivered Him up for us all, how shall He not with Him also freely give us all things? Who shall bring a charge against God’s elect? [It is] God who justifies. Who [is] he who condemns? [It is] Christ who died, and furthermore is also risen, who is even at the right hand of God, who also makes intercession for us. Who shall separate us from the love of Christ? [Shall] tribulation, or distress, or persecution,

or famine, or nakedness, or peril, or sword? As it is written: “For Your sake we are killed all day long; We are accounted as sheep for the slaughter.” Yet in all these things we are more than conquerors through Him who loved us. For I am persuaded that neither death nor life, nor angels nor principalities nor powers, nor things present nor things to come, nor height nor depth, nor any other created thing, shall be able to separate us from the love of God which is in Christ Jesus our Lord. (Rom 8:31-39 NKJV) So... What are you waiting for?

Florida Barbecue Association President’s Message August 2013

Tony Wolfe, FBA President

Last month I had the pleasure of visiting with the fine folks at Southern Fuel Woods. Believe it or not, I learned a lot about wood! I spent several hours with the owner, Pat Post, and Keith. They took me on a tour of the facility and explained the differences in the types of wood and methods of drying the wood. I also got to see how the wood is cut, prepped, and stored. They kiln dry and heat-treat southern hardwoods. The process is very interesting and actually makes the wood easier to light and burn hot. I have cooked with a lot of wood, but I can really see a difference using their wood. I also found out the Florida Department of Agriculture has rule 5B-65 (Firewood and Unprepared Wood Products). Basically, this means that you cannot legally transport un-

prepared woods over 50 miles from where it is harvested. In order to be prepared wood, it must be kiln dried. Don’t know if anyone is really going to get on you about this, but it never hurts to be careful. Southern Fuel Woods is one of our FBA sponsors and one you might want to get to know. They have a wide variety of woods available and even have natural wood charcoal. Visit the index, main, contest, or links page on the FBA website to get contact information. We are still adding new contests to the calendar. And there will be even more next year! Be sure to check the website frequently for the latest information. Look forward to seeing you out there on the circuit - whether you cook, judge, or just visit. Be sure to stop by and say hi!

It really doesn’t matter if you are a newcomer to BBQ or if you have been in BBQ for 50 years, the fact remains the same: you will know who Famous Dave Anderson is. If you ever get the chance to meet him personally, take it. I can promise you will not find a nicer, more genuine person that Dave. I won’t forget the first time I met him and probably won’t forget the times after either. He is just that kind of guy. I am pleased to annouce that Famous Dave is going to be contributing to The BBQ Times each month. It may be a column on BBQ sometimes but I believe mostlly we are going to stick to recipes and cooking tips. Some that you will find in Dave’s books and some that you won’t find anywhere but here. In this article, you will find some general information on Dave I have complied as well as a few tips and tricks that are available in his new book Barbecue Party Cook-

book. This book went on sale in June of 2013. I have not gotten my hands on a full copy yet but I am surely excited too. Famous Dave was generous enough to send an advance copy of the book and some sauces to cook with and try out some of the recipes. That is where the concept began that we should do a column and spotlight Dave a little more. Have I mentioned he is just an awesome guy? Alright, well here is a little about Dave and the new BBQ Party Cookbook, straight from Dave: “If you want everyone to leave your party, saying...“WOW what a fun party! We’ve never had so much fun and the food rocked the house!!! ...I am just dying to get my hands on a few of those recipes— they were so delish!” Then you’re going to absolutely love my new BBQ Party Cookbook! Most folks may be interested to know that my restaurants got their start from my rockin’ & rollin’ backyard BBQ parties. Before I ever opened up my first restaurant, I would invite my friends over for an old-fashioned backyard barbeque

and would feed them new recipes that I was working on. I WOW’d them with my appetizers, my grilled and smoked meats, and freshfrom-the-oven desserts... and they would say, “Dave you just absolutely have to open up your own restaurant! Your cooking is amazing and the flavors are so robust... your restaurant is going to be a sure winner!” Today, Famous Dave’s is one of the fastest-growing barbeque restaurant companies in America, including winning over 700 Best of Class awards... more than any other restaurant in America, including the renowned restaurants in New York City or the famed celebrity chef restaurants in Las Vegas. You know what they say, “It ain’t braggin’ if it’s the truth!” To say BBQ parties have made me who I am today, would be a huge understatement. In fact, I am proud to say, Nation’s Restaurant News has declared Famous Dave’s as one of “America’s Hot Concepts!” Throughout the years, many people have stopped me in my restaurant asking me for my barbecue secrets. So, by popular demand, I am sharing my best recipes that you can have fun serving to your family and friends at your next party, pignic, tailgate, or neighborhood

shindig. Here’s the most important thing about this cookbook...it is not just a book of recipes. Hopefully the process you go through to make these recipes will transform how you think about cooking in general. This cookbook is all about extracting the purest flavors out of each ingredient and then carefully “stacking flavors” to create the best tasting food possible. I know you’re going to love my recipes, so... throw a party, have fun, and enjoy! “May you always be surrounded by good friends and great barbeque!” Rib-O-Liciously Yours, “Famous Dave” Anderson Be sure to come back next month for the first hand view straight from Dave on his wonderful recipes. next few months, if you see me and I don’t speak or I don’t see you, Please speak up. Let me know your thoughts on the paper or just say hello. I will be running crazy I can assure you but it is always pleasant to put a face with a name and have a good conversation. It really doesn’t matter where you are, who you are or what you do for a living, you have to take different chances and roads in life. How do you pick them? I guess that depends on your lifestyle individually. The other person may have to report to work just as you do or do what you do on a daily basis but we all report to somewhere. No matter what BBQ “season” is yours so to say, we all pile in on Friday, or Thursday in some cases, we hang out, we do what we love to do and we live the competition BBQ life. Just keep in mind, “ Whatever you do, work at it with all your heart, as working for the Lord, not for men. “Colossians 3:23 Family is the one thing we all have in common and we even share our families at BBQ. My challenge to you this month, live out loud. Make decisions to improve your life and others around you. Love the life you have and the family you have been given. You might have them around today, but will they be there tomorrow?

Do you have a passion for writing or photography like you do BBQ? Maybe you just would like to see your teams or friends more often in The BBQ Times? The BBQ Times is looking for folks to submit photos and stories from competitions you attend when we aren’t able to. We want to give you the best coverage in the US for competition BBQ. Lotta Repeat at the SC Festival of Discovery By Jan Jeup-Wilson Contributing Writer

Lotta Bull travelled a long way from Marietta, Oklahoma and proceeded to claim the grand championship again this year, becoming the only team in the contest’s history to win twice. This team is led by the husbandand-wife duo of Mike and Debbie Davis, and also won this competition in 2011. “I’m in shock,” said Mike Davis moments after winning the much-coveted $3,000 grand prize. “It seems like the wins always come when you least expect it. We only got one award out here. You could’ve knocked me over out there.” Lotta Bull’s only other honorable mention on the afternoon was a second-place finish in the pro pork category. The team overcame Big

Red’s Barbecue, of Pacolet SC, to win its second title. Lotta Bull has competed at the festival the last four years, and is the only team with multiple championships in the cook off. “I didn’t even know that, that makes it even sweeter,” he said. “It’s a tough field. Out of 94 teams, there were probably about 80 that could’ve won it. So as many teams that are here, it’s pretty sweet.” The announcement of competition winners was the highlight of the final of the three-day festival, and event officials said the mid-summer jamboree appeared to grow even more this year. Last year’s outdoor party drew 30,000 visitors from all across the nation. Officials estimated that this year’s installment may have eclipsed the 40,000 mark.

“We did an amazing job,” said Laura Ackerman, Uptown Greenwood Manager. “First year putting it on Main Street, and our team just came together and worked so closely. I think things just came together perfectly.” There was a great showing of Backyard competitor’s as well, with a field 14 crews competing this year. It was a good day for the underdog team known as Bar-B-Que Knights, led by Tanner Knight, who walked to the stage multiple times and ultimately the last time, claiming Backyard Grand Champion. The strong field did not end there...Swineholio, led by John Goff, claimed Backyard Reserve Grand position, followed by REC BBQ in 3rd Backyard Overall.

Big Papa takes home Team Unknown Specialty Guitar in Live Oak, Florida By Audrey Evans Editor & Publisher

Every year, in the middle of July, the hottest month to be in Florida Damon Wooley puts on the Smokin’ on the Suwannee BBQ Festival. Some might ask why you would do this; well let me give you a little insight into what Damon does. Damon is the HOPE (Health Opportunities for Physical Education Class) teacher at Suwannee High School. Of course summer would be the only time he could put on a BBQ Competition. This contest is in its fifth year and no matter what might come their way, they “Adapt and Overcome”, that is if you ask Damon and “Pops” his father, Johnny Wooley. This year, Damon and his family faced a last minute decision of cancelling the competition or moving the competition. Leave

it to the Wooley family to find a new location, much better location if you most and pull the competition together in as little as six weeks time. There are a lot of competition organizers out there who wish they could pull off something like that, with no less than 52 competition BBQ teams. When asked about the new location, Wooley stated, “We love it. It’s a great location here in town. There’s plenty of space.” They have a few power and water technicalities to work out by next year, but Wooley said, “We knew we weren’t set up to be spread out like we wanted it but that was something we already knew and there’s already plans to improve that.” Vendors and competitors were already making plans to come back next year before the rolled out Saturday evening. At this point, one is prob-

ably wondering where in the world does this guitar come into play. Team Unknown is sponsored by George Dickel. In part of the sponsorship for Smokin’ on the Suwannee George Dickel and Team Unkown got Terry McKay to do one of his wonderful wraps on this guitar. Dorsey Odell signed it and played on it a string or two and it was to be passed on to Grand Champion. Little did anyone know, 5/100ths of a Point . . . . .. would be all that separated Grand and Reserve at this competition in Live Oak, Florida - 766.68 to 766.63 – so close to a tie. Nor did anyone know that Team Unknown would be one of those two teams. For the second time in the history of the Smokin’ on the Suwannee contest, Dana and Janet Hillis, who were joined by their family for the weekend clinched the

win for Grand Champion by taking home a second place chicken, a fifth place rib box, and third place pork box. Team Unknown BBQ out of Winter Haven, Florida made up of Clark & Jason Whitcomb, Dorsey Odell, Angela Iverson and Civil War Steve Daniels managed a first place in pork, and second place in brisket but it just wasn’t enough to hold off Big P a p a ’s Country Kitchen. R o b “Rub” Bagby, Pitmaster of team Swamp Boys took home first place in chicken and Matt Barber of Hot Wachula’s took home first place in Ribs. This contest was a Qualifier

from m o n out to the Suwannee County Maintenance Department, Board of County Commissioners and mostly the Wooley & Owens families for everything that was done to make this contest possible. These folks endured long hours to make sure everything went off without a hitch and to show everyone the best hospitality possible in Live Oak, Florida. So do you still ask why Damon does all of this each year? It’s simple. All proceeds from the contest go to The Youth Advocacy Partnership, a non-profit group in Live Oak.

Rocky Top BBQ on TOP at Smokin the Valley BBQ Cookoff Unicoi, Tennessee • July 19-20, 2013 • Kansas City Barbecue Society By Jan Jeup-Wilson Contributing Writer

The inaugural Smokin the Valley BBQ Cookoff was one hot & steamy competition...with sizzling temperatures and smokin’ hot teams. This event was held on Saturday July 20th at the Farmhouse Gallery and Gardens in Unicoi, TN. The rains were an issue in the days leading up to the event but, for the most part, held off until after the winner was announced and the crowd dispersed. The “home” of this event was the beautiful Farmhouse Gallery & Gardens. One of Northeast Tennessee’s hidden treasures and the home, studio/ gallery of Wildlife Artist Johnny Lynch and his family. On their 75-acre preCivil War farm, the Lynch’s have created a showcase of this area’s natural beauty where birds, butterflies, wildlife and peacocks abound! Surrounded by beautiful gardens and enhanced with relics of our Appalachian heritage, the Farmhouse Pavilions provide you with an atmosphere suitable for formal and casual events – especially for BBQ, since this property used to be a hog farm! First time event organizer, Robbie Adams, pulled off this event with the help of his brothers & sisters of the Unicoi Volunteer Fire Department. “I want to THANK everyone who came out and joined us for our first Smokin the Valley BBQ Cook off over the weekend. A big THANK YOU to all of our volunteer staff, each and every one of you did an outstanding job! To my brothers and sisters from Unicoi Volunteer Fire Dept, you will never know how much it means to me to have such

hard working dedicated men and women in our FD family; I couldn’t have done it without you! Mother Nature was not on our side these past couple of months but we managed to pull it off and have an amazing weekend...” And an amazing event it was...with music, food, and fun and plenty of local community support! KCBS Reps, Richard Preston and Micky Williams, manned the helm for this event. They were active and prominent throughout the entire weekend and maintained a firm and fair event – if only they could’ve handled the weather as well as they did the event! This event was loaded with any number of teams that could’ve walked away with top bragging rights. Yet, in the end, it was Walt & Becky Moulton, of Rocky Top BBQ out of Jonesborough, TN who made the final walk (and many others) as the first ever Grand Champion at Smokin’ the Valley. Rocky Top BBQ was a household name by the end of the day; taking 1st in chicken, 1st in ribs, and 5th in brisket...I’m not quite sure they had enough room for all that hardware on the ride home! Hot on their heels, in stinging position, was Killer B’s BBQ adding another Reserve Grand trophy to their illustrious collection this year. Jim Burg, of Evans, GA, lead Killer B’s to the stage a few times, claiming 2nd in ribs, 2nd in pork and 1st in brisket. Jim has certainly been putting the sting to his competition lately. Another local team, Ash Kickers BBQ out of Kingsport, TN were led by Alan Clem and Jerry Ray and rounded out the top 3 overall today. Ash Kickers heard their name a few times as well,

getting calls for 3rd in chicken and 1st in pork as well as 3rd Overall! The Blue Bloods made the walk for the Carl Jones Award for Best Blueberry Dessert and Hoggy Bottom Boys claimed the Carl Jones Award for Anything Butt. Smokin the Valley partnered with Pirate 50 Trophies for some of the most unique and one-of-a-kind trophies and awards. These Pirate 50 trophies included a “nod” to the volunteer firefighters with the use of diamond plate on each of the top awards. Many teams, judges, and attendees were heard chattering about what this event will look like next year; there was a lot of talk about how great this event was already, that next year can Grand Champions Rocky Top BBQ only be better!

Smoke Under the Oaks Surpasses 50 Teams in Inaugural Event By Audrey Evans Editor & Publisher

AUGUST 9-10, 2013 BAINBRIDGE, GEORGIA A first year contest is usually a little uneasy. That’s for everyone to a certain degree. The organizer is probably ready to flat out give up if one more thing comes up and it’s only Wednesday, two days before the contest. The cook team is a little uneasy because the conditions may not be right, the power may not be right and so forth beyond your normal weekly forgetfulness and busy schedules trying to get on the road. The judges, well what if they don’t have proper air conditioning, space, heaters? A first year contest can be a little uneasy for everyone, Right?? Well, this is where it has to be handed to a young gentleman and his new wife, Rob & Megan McRae. Somehow

they managed to get married and July, honeymoon and be back to organize this wonderful inaugural contest which proved to be a huge success. With forty three professional BBQ cook teams from the Florida Barbecue Association and fourteen backyard teams, Rob managed a first year contest to have a whopping fifty seven cook teams and the Bainbridge Country Club was the perfect place. This event also put a chip in the cup to cook the 25th Annual Jack Daniels Invitational BBQ Cookoff. Friday evening cook teams and sponsors enjoyed a wonderfully prepared low country boil with great fellowship (and air conditioning) and then got down to business. Cooking in their second ever FBA event, Old Man Joes amazed the judges with a near-perfect Brisket at 198 points, a fifth place rib box, a seventh

place chicken turn in and went on to win the 1st Annual Smoke Under The Oaks BBQ Festival in Bainbridge, GA. Big Kahuna BBQ took home Reserve with a fifth in brisket, third in ribs and a tenth in chicken. Poverty

Hill Smokers, Big Papa’s Country Kitchen and Bethel Smokers rounded out the top five at this competition. The backyard grand champion was Big Kids BBQ.
