Pigs and Wings 2013 ...It’s Here!

Well, I guess it is hitting that time of year again. Everyone keeps asking, and we have begun to start planning. The date is set, February 2124, 2012. The Overall Winner payout is set at $4,000! Yes, you read that right, check again. So you just marked your calendar right? It’s hard to believe I am approaching my third year of being Editor of The BBQ

Times and being Event Organizer for Pigs and Wings. The first year we did Pigs and Wings was 2008, it was when the Georgia Barbecue Association was first looking to expand and have more than just one contest a year. My father, Danny took it upon himself to make it happen and it did. They had 14 teams and off they went. In 2010, I came on board as Editor at The BBQ Times and we decided it would probably be a good idea to host the competition again and drum up some talk amongst the cook-teams since the paper was coming back. Boy, did I not have a clue what I was getting myself in to. Not really, I can say that open-heartedly and jokingly now. Then, I really did not have a clue! Susan Stuart worked with us and she helped me put together the contest. We had 30 teams at Pigs and Wings 2011 and were greatly impressed with what we had pulled off. This past year, we hosted the

event again with The Houston-County Airport Authority and we had the largest GBA cook-off EVER! We had 60 teams and paid out over $12,000 in prizes. So, why am I telling you this? Because you need to be aware, we are kicking of for Pigs and Wings 2013 and this is an event you will NOT want to miss. There are still A LOT of variables up in the air for the contest coming up and I will release the details to you as soon as we tie them down, but for now MARK YOUR CALENDER. We will have entry forms, payouts and all that good stuff out in the next month or so, and with the Overall Grand Payout being larger than we have ever even paid Grand for GBA, you know there will be some money on the table for grabs. Are you the best at cooking Chicken? Pork Loin? Brisket? Ribs? Pulled Pork? Come show me what you’ve got! Until next month....keep rubbin’ those butts!

Pitmaster Big D’s Firehouse Smokers Coming up with that perfect combination of time and temperature seems to be a never-ending quest to cook the award winning Pork Loin. And no, I haven’t done it yet. I have cooked some mighty good ones at home, but when the pressure of the contest comes along, I just can’t get it right. I have had some people

watch in my Facebook page and question me on how I’m cooking the Loins. Many of them have won Pork Loin divisions themselves, so I don’t know why they would want to know how to cook a bad one? They want to know how long I cook it, the smoker temp and at what temperature I pull it. I know they think I pulling their leg when I answer. But I tell them some where between 250 and 475 degrees and pull it anywhere from 130 to 180 degrees. Folks, I’m not pulling anybody’s leg. I have tried all of these combinations. From a Stump’s Smoker to Weber Grill, I have tried it all. I’m working with Jeff Conley at Assassin Smokers on what I think will be the perfect Loin cooker, but who knows what that will bring until I tried all the different angles. Overall I hope my future in Pork Loin (If I don’t

mess it up) will move up in the ranks. If it doesn’t, it sure isn’t because I haven’t cooked a lot of them! ••• You notice when I talk about me not doing well at cook off, I always talk about what I did wrong. The only person at a cook-off that can beat me is myself. The other teams, Judges bad rules or anything else can’t beat me. I say this because as I looked at my smokers the other day, they both where sitting at 100 degrees all by themselves. No fire, no one cooking on them. The only way to make them change is for me to add charcoal or wood and light up. If I get it to hot or use the wrong fuel, I did it, not the smokers. They only respond to what you do to them. A lot like a woman if you know what I mean. No, I don’t mean they are cold as steel, but you have to start each one differently and s

The big thrill of this event was the anticipation of winning the Georgia Barbecue Association State Championship and being crowned Grand Champion of the Hambone Jam. This year’s winner was Smokin’ grills from Duluth and Byron Georgia. First time Grand Champion and first time Georgia State Champions. Stacy and Bobby have come a long ways and worked really hard to accomplish this task. They not only compete at each event, they also vend to the public and we all admire their determination and friendliness. This article is about the spirit of Joy and Happiness when you hear your named called at the awards ceremony. The anticipation of your team name being called is a moment filled with anxiety and joy. That magic moment

when Stacy heard.... “and the winner of the seventh annual Hambone Jam GBA Georgia State Championship is”.... “Smokin’ Grills” She was really beside herself. No words can express that feeling as she danced and made tearful loud gestures on her way up front to receive the award. For Stacy and Bobby, it was great moment of joy and happiness. Many of you who are reading this article have experienced that feeling and some will get to experience it. We all look at this sport of barbecue as a challenge of our cooking skills and enjoy so much competing with our friends to showcase our talents. The joy of winning a BBQ contest and having fun while socializing with your friends is what it is all about folks. When you can no longer do this, it’s time to find yourself another sport! Not everyone can be a winner, but if you can look

back on the event knowing that you did your best and had fun doing it, “you’re a Winner”! I would like to say to all the readers of my article each month, if I can help you, please contact me. A Message from Your President

BBQ gets busy: Fall Season has a lot in store

President Fl BBQ Association We are coming into the fall bbq season and man can you get your fill of competitions. We just had the annual Fun Cook at Clerbrook RV park and a great time was had by everyone that came. We had 28 teams competing in a typical competition along with what is becoming a yearly cant miss event – the desert contest – a chili contest, the Kids Q, and the 1st annual golf outing. The golf outing was an absolute blast – we had a high school golfer steal the show, Karen Hyde proved she knows her way around a golf course, Marty Hyde proved he can do more then power point presentations, My son Cadin proved he can do more then wrestle and Bob Youngblood was doing his best Arnold Palmer imitation. We would have won but somebody from the other team sunk a 60 foot putt like he had done it before. The Kids Q was a big success with the kids keeping the grills they cooked on. The Chili contest was a feast. The desert contest was amazing. I got to be a judge for the second year in a row and I am not giving up my seat for next year. There were 17 entries and no one deserved to lose. I would order any of the deserts at any 5 star restaurant and be happy. One desert was about 6 layers tall with a raspberry ice cream on top and was a true delicacy. I would have never thought bread pudding could be as

good as the one turned in but it had cranberries and a secret flavor that might have had a hint of alcohol that was off the charts. I was so full I ate very little at the dinner later that night. We had a successful judging class, a box building class and our annual meeting and Wendy Wolfe had a great team of help to put it all together for a great weekend. Swamp Boys took the Fun Cook seriously and took 1st in ribs pork and brisket to walk away with the Grand. Team Wooley Bully took the Reserve Grand with Barn Goddess bbq taking 3rd, Beachneck bbq taking 4th and All Racked Up taking 5th. The Kansas City Royal is coming up along with the Jack in Lynchburg Tennessee and in November the World Food Championships are in Las Vegas. Several of our FBA teams are making the trip to Vegas to prove to the whole country that great cooks come from all over but the best are from Florida. Terry McKay is a great cook and also a lucky one – he got the draw for the Jack and is in for a real adventure. The trip to the little town of Lynchburg is an opportunity not many get. You have to win qualifiers to get your name put in a hat to get drawn. Only one team from each state gets drawn and Terry got the draw from Florida. He is also making the trip to Vegas along with Big Papas, Team Unknown and Hot Wachulas. I guarantee this group will leave their mark in the city that never sleeps. We have a full FBA schedule this fall with Lake City, Grant, Mulberry, Jessup, Zephyrhills, Naples, Melbourne, Elba, Sebring, and Perry. Get on the website and let these organizers know you are coming. These are all great contests raising money for good charities. See you all at a contest soon and to all the teams that took

Big Papas Cooking School hurry up and give me something good to write about. I want to give a special thanks to everyone that comes to a BBQ contest that enjoy just being a part of bbq. We have had a lot of success due to a lot of the friendships and help we have had along the way. When we vend an event we have the Big Papa “A” team on board and we could not do it without them. David and Stacey from Daytona are a big part of our team and are part of our bbq family we could not live without. They are an accomplished cook team when they decide to compete and also can brew some of the finest home brew beer I have ever had including Big Papas Pale Ale and David is an accomplished racecar driver. Look up the “Chump Car” series and follow Lead Sled Racing. Stacey is one of our best food sellers and is also the prettiest girl in bbq. David you are a lucky man. A contest is not the same without Uncle Wendy’s bbq team in attendance either competing, judging or helping run the “A” team. No one has a passion or enjoys themselves more at a bbq then Rich and Wendy. Mike Perry became a big part of our team when he showed up in Grant several years ago and I truly believe he is one of our good luck charms because we sure do well when he comes to help. Vending would not be the same at Clermont without Dennis Schmidt and all his hard work. I sure do miss my “Gopher”. Bob Youngblood has come to help us cook and this guy is more then just a good looking golfer. Bob worked his tail off with us at Fernandina and is a real treat to hang out with – thanks for taking care of Janet and Mawws Country Kitchen. My Daughter Jana worked her tail off in Fernandina and we will never run out of buns or ice when her husband Mike is on the

team. We just cant function as a team without Papa and Nanny. They come to visit us at a bbq and work their tails off. Papa made the trip out to the Royal with us last year and it was a good time I will never forget. My son Cadin is the best help I have ever had and my nephew Cody is great help and I love to have him at a contest. My son Vonn vended with us one time and told his mom that is just to much work! Thanks to everyone for your help along this fun road. Mike Bird has cooked with me twice and we won Grand Champion both times. Mike you are a true friend and will be a part of my team forever. See everyone soon.

Bless our troops and I miss juice and garlic. Brush the caps on both sides and you pop. sprinkle with salt and pepGARLIC GRILLED per. Let stand for 15 minutes stem side up. Cook PORTOBELLOS mushrooms on both sides Here is a simple recipe for for 3 to 4 minutes. Do not burn – they are done when a tastes great. they pierce easily with a sharp knife. Cut into thick 4 4 to 5 inch mushrooms slices and garnish with 1/3 cup evoo – extra virgin olive oil parsley 3 tablespoons lemon juice Serve with any meal! 2 cloves garlic peeled and minced Salt and pepper to taste ( I like more pepper) 2 tablespoons minced fresh parsley Cook over medium hot fire.Remove stems and clean mushrooms of any dirt.Combine oil, lemon

Georgia Barbecue Association Team of the Year

The 2011-2012 Team of the Year Awards for Georgia Barbecue Association was held on Friday September 7, 2012 at the Hambone Jam in Fort Valley, GA. Each year teams vivaciously compete contest after contest to see who is the best in Georgia. For each cook a team competes in, they are guaranteed

2 participation points per category, so for three meat categories a team would accumulate 6 points. In these three categories ( Ribs, Pulled Pork and Pork Loin) a team will earn one point for any top ten finish starting at first place earning ten points and ending with tenth place earning one point. A team will be awarded

They followed that with a near perfect Rib entry in the finals round to capture the Grand Championship. I’ve heard all of my professional life that communication was the key to success in the business world. Of course I bought into that concept with inter-office memos, voicemails and weekly staff meetings. Yes, I am a believer in communications, or should I say “old school” communications. It was suggested that I create a Facebook account so I could expand my communication horizons. Now wait a minute here, this old dog is not going to participate in this new fangled social media stuff that I have heard about. Bad things happen on Facebook such as houses get broken into when the kids post vacation plans. Even worse, my neighbor and I share an agricultural road between our farms, which leads to his cabin on the creek. His 19-year-old son Morrey Thomas posted a message on Facebook Executive Director telling his buddies of a keg party. South Carolina No sooner than they got all Barbeque trapped down a one-way road at Association the cabin, the police appeared and they all went to jail. So, I’m supposed to set up an account to join Facebook too?

But as irresponsible as some of this usage seems, I slowly realized the power this new digital media could offer. Our business has a Facebook page which gets all kinds of reader traffic and my wife has a successful Facebook account for her retail business. I began to realize the merits of social media and how it can be used in a responsible way. How else could we in the SCBA find a more popular and economical (free is economical) way to communicate with our members on an almost daily basis? This Facebook thing started making sense all of a sudden.

With the help of my business friends, I set up a personal page, which is necessary to have prior to managing the SCBA Facebook page. There is some learning curve involved, but I found it challenging and interesting. Maneuvering around has gone much better than I anticipated even though, as I was told to expect, I get hit up for personal information. I simply pass over the personal requests and stay focused on the SCBA posts, which is my reason for being a Facebook user.

When the meeting was over I put my hand on his shoulder and said, “Lake, I’ll be glad to help you set-up a Facebook page and get started.” His reply was short and to the point, “That will be the day.” Where, I asked myself, have I heard those same, exact words before?

Ingredients 3 beef shoulder center steaks (ranch), cut 3/4 inch thick (about 8 ounces each) Spicy Pico de Gallo: 1 cup chopped red onion 1 cup chopped seeded tomatoes 1/2 cup coarsely chopped fresh cilantro 1-1/2 teaspoons minced pickled jalapeño pepper slices 1 tablespoon fresh lemon juice 1/4 teaspoon salt Cowboy Coffee Rub:

Instructions 1. Combine Spicy Pico de Gallo ingredients in medium bowl; mix well. Set aside. 2. Combine Cowboy Coffee Rub ingredients in small bowl. Press evenly onto beef steaks. Place steaks on grid over me-
