COMMENT Attending Clerkenwell Design Week 2017 on its second day provided a welcome, if momentary distraction from the tragic events that unfolded the evening before. Though the victims of this heinous act were not, I’m sure, far from anyone’s thoughts, there was nevertheless a grim determination to press on, to defy, with a celebration of creative spirit, freedom and diversity. Each year, Clerkenwell Design Week brings a swathe of activity and bustle to this already vibrant design district in London, opening up its showrooms, studios, streets, cafés and venues to reveal collaborations, installations and product launches galore. The highlights are too many to mention here, but look out for a round-up from the Hospitality Interiors team in the next issue. Continuing in the spirit of creative freedom and diversity, this issue takes in some of the remarkable brands elevating hospitality interiors to new heights. Read about Areen Design’s exciting new recruit, Geoff van Wijk, on page 26, while from page 32 I talk about my recent visit to a glass workshop in Cartagena, where Atelier MEL’s team of fourth-generation craftsmen create staggering glass art and lighting designs. On page 64, meanwhile, the founders of Toronto design firm Navigate Design talk about the trends driving the restaurant design industry, their favourite dining spots in Toronto, and the challenges both owners and interior designers face in the restaurant sector. cost savings while delivering a high quality service.” With this successful model in place, the real challenge is to convey its manifold benefits successfully and to the right target audience. Cue Geoff. “My role is primarily to expand the current offering and build more awareness of Areen Design’s specialist procurement resources and expertise,” he explains. “The remit includes responsibility to bring the procurement agent model to more hospitality customers, as well as applying Areen Design’s sourcing, quality management and production ‘know-how’ to help other industries roll out their brand experience through quality interiors and custom FF&E.” Communication is a key challenge within the procurement sector, on a number of levels. For Areen Design in particular, there are often cultural barriers to negotiate. A significant portion of the firm’s hospitality work is conducted overseas, particularly in developing markets across Africa and Asia. This diversity within its portfolio is celebrated by the firm, but it nevertheless necessitates a degree of
managing expectations with regards to budget, or indeed in emphasising the relationship between price and product quality. “One of the most interesting aspects of this job is how we as procurement agents find ourselves at the centre of the hotel

projects, but is a much wider concern within the procurement industry as a whole. “In the case of fee-based procurement agent services, the key topical issue is the pressure on fees for a service that makes a significant contribution to the design and delivery process,” Geoff explains. “As a result the industry suffers a high staff turnover, which consequently affects the necessary knowledge of the supply chain. “Areen Design is large and diversified enough, however, to offer clients greater flexibility and a choice between supply and procurement models while maintaining design standards.” In much the same vein, Geoff observes a problematic lack of awareness surrounding protocol and quality management from those outside of his field. For Geoff and the team, an intimate knowledge of global industry trends,
manufacturing techniques and professionals acts as a remedy for unrealistic demands. “A good example of a frequent challenge is explaining the process when instructed to find three price alternatives for a specified product,” says Geoff. “This is not as simple as sending a tender out to three manufacturers to have it made. We need to explain repeatedly that this requires a collaborative review of suitable product alternatives available in the market, a decision on design suitability and a commercial review. “This is where our product knowledge and strategic sourcing make the difference to supplying a carefully considered design alternative or simply a product of inferior quality to save on costs in the short term. “The team and I focus on knowing designer products, trends, manufacturers and factories worldwide so that we can work with our

A global brand with Spanish craft at its heart Earlier this year, Hospitality Interiors’ Gemma Ralph had the privilege of meeting the Atelier MEL team at the Museo del Vidrio de Santa Lucia in Cartagena, southern Spain. Having admired imagery of the Barcelona-based brand’s unique glass art and lighting designs prior to the visit, she was keen to find out more about the blend of cutting-edge digital design and traditional glass craftsmanship that informs their creative process ...
Maria Ruiz and her business partner Roberto Molinos founded Atelier MEL in 2014. The pair met while studying architecture at Barcelona University and had long wished to work together when an event at the glass workshop in Roberto’s home town of Cartagena gave them the direction and purpose they were searching for. “When we visited the workshop we had the chance to see our friends performing what seemed a carefully studied choreography to fabricate some colourful vases,” Maria explains. “It was the Museum’s Night, an event celebrated annually in the whole of Spain. We knew that the tradition of artisan glass was being lost in our country and we felt that we had to do something to contribute to the preservation of those magic techniques. We had to rethink them to bring them closer to the actual art trends.” At times it feels as if the notion of ‘craft’ is overused within the design industry, divorced from its true sense and gradually becoming a kind of catchword that belies varying degrees of authenticity. In Atelier MEL’s case, however, there is no such exaggeration or deception. The Glass Craftsmen Association in Cartagena, with whom Atelier MEL works hand in hand from its
central Barcelona office, is made up of fourth generation artisans that are reinventing the trade, while ensuring the longheld techniques of their forebears are kept alive. During my visit to the workshop, I was treated to a demonstration of the painstaking glassblowing process, and taken through the journey of the individual components, from the moment they start to take shape in the team’s custom-designed moulds, through to the intricate assembly of the final piece. Despite the fluid, seemingly effortless motions of these experienced craftsmen, there was no mistaking the skill, physicality and
attention to detail required. Not only this, but the shared respect, affection and passion of the two sections of the team – craftsmen and architects alike – was infectious. The preservation of traditional craft is at the very heart of Atelier MEL’s identity, but their use of modern digital design tools at every level of the design process elevates the scope, adaptability and functionality of their creations. The team works closely with Modelical – a cutting-edge design agency which develops technological solutions to transform designs into reality by integrating, adapting and developing the most advanced 3D tools. Rather than creating finished designs, Atelier MEL deals in concepts, shaping and honing via sophisticated software in order to adapt existing designs, or indeed create new ones from scratch. “Technology is present in every step of our work,” affirms Maria. “Using it to design the glass shapes, we can previsualise and study them carefully before investing in the prototype. “The most modern digital design tools break the limits of artistic creation – the latest contribution of technology to our glass art pieces has been the introduction of lighting motion and interactivity.”

Aside from the desirable savings on time and cost that this approach brings, Atelier MEL’s clients can participate in the creative process through an online tool which allows them to experiment with and customise their own designs. Designers can trial the form, colour combinations, positioning and intensity of a piece, with the software recalculating and adjusting the visual of the design automatically. “When we work with a new client they usually come to us with an idea based on one of our previous projects,” says Maria. “With that reference as a starting point we develop a bespoke design for their projects, working hand in hand with their design team. “Once our clients understand all the possibilities of our methodology, they usually come back to us to develop totally bespoke projects that might not have anything to do with what we had previously done for them.” Atelier MEL has four base modular collections which can be adapted to a client’s bespoke requirements – DUNA, LOTO, PÉTALO and HIEDRA, as well as a brand new collection of suspended lamps soon to be launched at the time of going to press. This latest addition will be the first mouth blown collection by Atelier MEL, and will be composed of a series

of complementary pieces that come from a single mould, which was designed and fabricated digitally. Whether free-standing, or mounted on walls or ceilings, these designs are incredibly versatile in their impact. The softly curved form of the DUNA system, for example, has been employed to create a striking wall art piece at the new Hyatt Place in Long Island, NYC. Making a centrepiece of the 6m high wall behind the hotel’s reception desk, the piece features glass components distributed on a gradient composition, on top of a geometrical metallic frame. The brand’s LOTO collection of elegant flower-shaped pieces, meanwhile, has created a bold, fresh look in the breakfast room of Room Mate Valeria, Spain. Mirroring the striking black and white flooring, and picking out the vibrant aqua shade of the banquette seating beneath, the installation brings all the various visual strands of the space together without overshadowing any one aspect.
With high profile projects such as these complete and underway across the globe, from Europe to the Middle East, it would seem Atelier MEL is already in great demand despite its relevant infancy. But the brand is keen to maintain this momentum, developing their portfolio and reach further in the years to come. “We would like to be referenced as a studio in the world of bespoke installations for the high end market,” says Maria. “Glass and technology are the two ingredients that define our work and we would like to be able to develop the two jointly, and also independently.
“We have already designed sculptures or interactive installations that have no glass, and bespoke artisan glass pieces with almost no technology involved.” Perhaps it is Atelier MEL’s two fold approach to lighting design that is at the heart of its success. The brand captures both our shared love of craft and the elevated functionality that can be achieved through technology. The design duo behind London-based studio, Meraki Design, have applied their “casual luxury” philosophy to the interiors of Michael Caines’ new luxury Devon retreat, Lympstone Manor.
Lympstone Manor Devon Nestled between the small farming and maritime village of Lympstone and the neighbouring town of Exmouth, Lympstone Manor encapsulates the term ‘rural getaway’. Indeed, this truly striking Grade II Listed Georgian mansion is set admist 28 acres of idyllic countryside with views over the Exe Estuary. When the renowned British chef aquired the mansion, once a private home, it was in need of considerable renovation in order to
of escapism, reflecting the beauty of the surrounding landscape, while injecting a more contemporary feel. “With a building of this nature you are bound to encounter many problems; walls weren’t straight, pipes couldn’t go where they were meant to and so on,” the Meraki duo explain. “It is never as straight forward as a new build but this is what creates all the character and what makes it unique.” Advantageously, the Meraki team found that

Context is certainly integral to the hotel’s interior, which captures and celebrates the natural beauty of the surrounding area. The design team channelled these pastoral references, along with the history and Georgian architecture of the manor itself, to create an authentic and inviting narrative. “As a company we believe every project has its own story to tell,” the team told Hospitality Interiors. “We start off by looking at the context which informs the majority of the design and in this case there was inspiration everywhere – the views, the grounds and the Manor itself. “The Estuary and Jurassic coast led the colour scheme and sense of serenity throughout the hotel. The colour of the tide continuously changes from golden hues, to soft dove blues to champagne. Michael had already settled on using the birds of the estuary as room names which again informed the colour schemes of all the rooms. “We then looked at the interiors of the Manor which were tired, but had echoes of what once was and we all were in agreement that it had to be restored and brought back to its former glory. This created a beautiful shell that contemporary furniture could sit within, creating a balance of old and new. We played a lot with textures and subtle colour tones to create a sense of serenity and warmth.”

The hotel’s lounge is light and airy, awash with soft beige and cream details, and offers guests spectacular views of the garden and beyond from the French windows. Nautical maps adorn the walls, referencing the area’s appeal as a centre for trade and exploration during the medieval era, while a striking copper bar at the end of the room provides the perfect complement to the lounge’s cream tones, serving up the hotel’s signature cocktails and plethora of wines. Speaking of which, it is no surprise that at the heart of the hotel’s identity is its phenomenal food and beverage offering. Michael has built his reputation on a visionary style of cuisine, one that has earnt him two Michelin stars which he held for 18 years. Having taken a year out to focus on developing Lympstone Manor, Michael has been able to spend time working on new dishes and concepts that will celebrate the seasonal bounty of Devon and the southwest. His exciting cuisine will be served in the hotel’s three beautiful dining rooms – Haldon, Mamhead, and Powderham – each of which offer their own distinct identity. There is a key emphasis, too, on the wine selection at Lympstone Manor, and both Michael and co-director Steve Edwards have carefully developed an impressive wine list. A wine tasting and dispense room situated opposite the three dining rooms will be used to
house wine storage cabinets, alongside a bank of Wine Emotion dispense machines for the service of wines by the glass. A sommelier’s table, meanwhile, will allow small groups to enjoy a bespoke wine tasting experience. Exciting plans are in place, too, to plant a vineyard on the slope leading down to the Exe estuary. A strong F&B offering was integral to Michael’s vision of contemporary country house hospitality, but customer experience was the guiding force in all the decisions he and his
team have made. “This project was driven with a lot of love and passion by everyone involved,” affirms Meraki. “Every single detail has been looked at meticulously, not only in terms of the interiors. The customer experience was the epicentre of Michaels ambition and we can without doubt confirm it is incredible. “We hope Lympstone Manor brings more people from all over the world to come and experience the beauty of Devon.” merakidesign.co.uk

Universal Design Studio has reinterpreted the brutalist architecture of this contemporary hotel in the Swedish capital for a complete interior renovation.
At Six Stockholm The high rise structure that today houses At Six was originally designed in the 1970s by Swedish architectural firm Boijsen & Efervgren as a hotel, but instead became the headquarters of Swedbank. It is one of four buildings that occupy Stockholm’s Brunkebergstorg Square, each built as part of a government initiative aimed at replacing much of the city centre’s belle époque grandeur with brutal modernity. Universal Design Studio wished to mirror this spirit of regeneration and to reinterpret the architectural landscape of the square through
a considered, contemporary interior scheme. Taking in a new entrance façade, a 100-cover restaurant, wine bar, cocktail bar, 10 floors of guest rooms, a penthouse suite and a 2000m2 events space – the renovation was no small task. Brutalism is, of course, traditionally associated with rather uncompromising, unforgiving aesthetic characteristics, and the design team was keen to soften and humanise the architecture to bring a sense of luxury and desirability to the hotel. A juxtaposition of light and dark, fineness
and mass thus plays out through the public areas and guest rooms. The team has created a palette of sawn stone, blackened steel, fine timber and polished granite to lend a sense of permanence and authenticity. Warm greys and texturised natural materials are used throughout, contrasted by soft furnishings and well-placed decorative items. In terms of furnishings, Universal Design Studio has opted for a blend of contemporary and classic, complemented by speciallycommissioned pieces by local makers and established Scandinavian designers.

Local glassmaker, Carina Seth Anderson, was commissioned to create handmade glass pieces for the public areas, while a local saddle maker hand-wrapped the Swedish leather handrail for the white granite grand staircase in the lobby. One of the most impressive attributes of the hotel’s interior, however, is its ambitious contemporary art collection. Curated by Sune Nordgren, formerly of the BALTIC Centre for Contemporary Art, the collection features original artwork from the likes of Jaume Plensa, Olafur Eliasson, Julian Opie, Sol Le Witt, Tacita Dean, Spencer Finch, Richard Long and Marijke van Warmerdam within the public spaces, in addition to individual artworks by Kristina Matousch in the guest rooms. universaldesignstudio.com

Years after completing the hotel’s original interiors, Martin Hulbert has returned to The Grove to create the architecture and design for a series of inspiring private events spaces. Hospitality Interiors’ Gemma Ralph was kindly invited to visit The Grove to see the new facilities for herself ...
The Grove Hertfordshire The reputation and outstanding facilities of this five-star luxury hotel and resort in the beautiful Hertfordshire countryside are recognised far and wide and so too, now, are the hotel’s meeting and events spaces. Martin and his team at Martin Hulbert Design (MHD) were commissioned to create an atmospheric, highly adaptable series of spaces that would meet with demand for customised and experiential events in today’s market.

In effect we were designing a beautiful blank canvas!” Another key aspect of the brief was to ensure that each of the social spaces can be hired as a whole, or used as separate spaces, each with its own entrance, reception area, dining areas and exclusive after-dinner drinks spots. The hotel’s existing venues, Amber and Ivory, have thus been artly reconfigured
required. Some rooms offer full white-board walls to promote creativity, while others feature solid oak, chestnut and walnut tables. The piéce de résistance of the project, however, is conceivably the grand Cedar suite. As the first opportunity for MHD to lead the creative architectural concept of a building, Martin and his team have not disappointed. This entirely new building is a wonderfullyproportioned oval pavilion in the hotel’s formal
“The Grove is an incredibly inspiring place for special events, full of wit and flair, wonderfully unexpected and naturally inspired by its setting in 300 acres of parkland and gardens,” explains Martin. “The original interiors had lasted really well, they just needed a shot in the arm, something to push them forward into the future. “Coming back to The Grove, we knew that it still had to be quirky and interactive, but things have changed in the last 15 years, people now want a beautiful space to work with – so they can be creative, with a sense of freedom, and
to ensure that they are more independent from one another, each boasting a dedicated entrance complete with stylish leather-clad reception desks, slick steel flooring and furniture that has been custom-designed by MHD. The break-out spaces and meeting rooms have been thoroughly modernised with all the latest technology. Floor to ceiling windows flood the rooms with light and offer guests views over the immaculate gardens, while black-out banners, hung with material designed expressly for The Grove, create privacy when
gardens, which links seamlessly with the new reception rooms and service areas in the main building. Martin’s guiding inspiration for the structure was the integral role that the hotel’s abundant gardens play in the guest experience. Over half of the pavilion’s floor-to-ceiling windows are thus formed from glass, emphasising the blur of outdoor and indoor and bringing in plentiful natural light. A series of striking exterior fins, formed from leaves and greenery set in resin, have been hung vertically behind the glass wall to provide privacy.

The bright Verdigris copper exterior is another key highlight, acting as a point of contrast to the existing redbrick building, yet sitting perfectly at home. The structure’s living roof adds texture, while creating an uninterrupted view onto the gardens from above. The interior of the Cedar suite is perfectly in keeping with its exterior. A bespoke tapestry, commissioned by MHD and created by Rosalyn of Mollie Regan Textiles, echoes the glass of the exterior with its abstract take on the magnification of flowers and plants. The tapestry’s fine details and pale colour palette add texture and visual interest, yet appears colourless from afar in order to maintain a neutral backdrop. A ceiling of acoustic leaves meanwhile – inspired by those in the Royal Albert Hall – ensures that all kinds of events can be catered for. From this striking pavilion space, the Cedar Suite extends into the original main building through a new private entrance. Every element here is bespoke, and was either commissioned by or designed by MHD. At the heart of the space is a working
striking example of which, I felt, was an installation of 150 copper leaves strewn across

Not only visually striking as a decorative centrepiece, the table also functions as a dining table or cocktail bar. Some of the tables have been designed using pipes and glass, while others incorporate solid wood or are inspired by petal shapes. Another integral aspect of the new Cedar Suite is the bold use of artwork; the most

Elsewhere a woman’s face has been depicted using 15,000 steel screws and a video challenges the viewer with snapshots of women being carried by men from films throughout history. Within the Amber and Ivory spaces, too, there are a number of specially-commissioned pieces designed to encourage creativity and provoke thought. None more so than a large photographic work that chequers photographs of Lady Margaret Thatcher and Jeremy Corbyn together. Bold and original touches such as this have been masterfully integrated by Martin and his team to create stylish interiors that will

Leña Restaurante Toronto, Canada The latest Toronto venture of Oliver & Bonacini, famed for its longstanding fine-dining restaurants, Leña Restaurante is corporate executive chef Anthony Walsh’s homage to his Argentinian mother-in-law, Elena, from whom he has drawn a wealth of culinary inspiration and warm hospitality. Located in the corner of Saks Fifth Avenue – a Listed, art deco property that has always been the city’s most prestigious department store, Leña is an early-morning to late-night restaurant, bar, lounge and event space,
aiming to appeal to the business, shopping and theatre crowd alike, and act as a beacon in the continuing renaissance of this important stretch of Yonge Street. DesignAgency has created an array of interiors, each with its own ambiance, but universally celebrating the restaurant’s joyful inspirations and its historic setting. “With Leña, we were excited to create a new and authentic space that would support Oliver & Bonacini’s reputation for phenomenal dining experiences,” commented DesignAgency
principal Matt Davis. “Spread over four floors and restricted by heritage requirements, many would have seen the location as a challenge. Marcus Samuelsson’s multicultural background became the inspiration for his new venture, MARCUS.
MARCUS Washington, D.C When chef Marcus Samuelsson decided to open his first standalone restaurant in the Washington, D.C. area, he pulled in design agency Parts and Labor Design, a New York City-based firm, to deliver a space that celebrates Americana style through the cultural lens of Baltimore and the nation’s capital. Situated within a new luxury resort, the restaurant’s aesthetic pays homage to the chef’s multicultural background and personal style, celebrating a rediscovery of American craft rooted in African American influences,
Principals and Owners of Parts and Labor Design, explain how Marcus’ roots are translated into the interior design concept: “Guests can enter the restaurant through an outdoor space that features geometric floor tiles and furniture that takes cues from modern and colonial styles, backed by a custom glass façade. Inside, a charming entry hall features an intricate compass rose inlay on the floor that serves as a nod to American craft. “The 84-seat main dining room showcases custom-made tribal wall tapestries and African-
coffered ceilings, colonial millwork, and a deep amber and cream coloured palette. Behind the expo-style kitchen, old craftsman tools, such as antique saws and drills, hang on custom made brass hooks.” Andrew and Jeremy continue: “Tucked in the back of the restaurant, a French-colonialinspired sliding door opens into a prohibitionstyle supper club with live musical acts reminiscent of Harlem’s jazz clubs.” One of the pair’s favourite design elements is the multi-faceted experience throughout the
local music and urban lifestyle. Andrew Cohen and Jeremy Leavitt,

main bar, the raw bar, the open kitchen and the supper club. What makes that really successful is how they’re laid in the restaurant – as you move through one, the next presents itself. The use of pattern in the restaurants also stands out as a favourite design element. Incorporating a variety of patterns, colours and textures was a necessity, but the challenge was to find a way to interweave those varied elements into one cohesive design. Jeremy and Andrew comment: “We layered multiple patterns and textures, resulting in a successful juxtaposition.” Another challenge encountered by the team was the actual shape of the space. Jeremy and Andrew recall: “We went through multiple iterations of floorplans and furniture layouts during the design process until we arrived at a plan that worked.” Marcus Samuelsson’s values are about community and paying homage to culture – and this restaurant does just that. Parts and Labor Design have created a social and positive atmosphere that will attract both locals and tourists alike. The pair conclude: “Marcus’ personality is beaming throughout the restaurant – from the patterns and colours to the furniture and light fixtures. Led by founder Ian Haigh, Central Design Studio has completed the refurbishment of a historic Grade II Listed Mecure hotel in Bristol.
Mercure Bristol Grand Hotel South-west England The striking Victorian architecture and rich heritage of this refreshed Mercure hotel offered a fruitful starting point for Ian and his team, but creative references to the strong independent spirit of Bristol throughout bring a sense of renewed vibrancy and life. Over the past five years, Central Design Studio has built a sound reputation for creating relaxed and informal interiors which connect with the feel and identity of a space, rather than meeting a set script of aesthetic markers.

This project was no different, and Ian worked closely with a local gallery and street art festival, Upfest, to curate the Mercure Bristol Grand Hotel’s plentiful artwork. Guests can enjoy over 500 pieces from local artists, including bespoke commissioned installations by Gemma Compton and Cai Burton. Central Design Studio also worked with emerging textile designers, Kitty McCall and Midula Dey, to develop unique upholstery
the hotel has been bespoke designed by Ian and the Central Design Studio team, including a feature chandelier in the reception with handmade glass panels by artisan Jo Downs. Central Design Studio also collaborated with Accor to create the interior of the restaurant and bar, Keepers – an inhouse brand created by the hotel group. The space features an eclectic blend of found objects and salvaged materials inspired by the famous St Nicholas Markets – or St Nicks as it’s known locally –

TOTO PART OF RENOVATION PROJECT AT THE LOUVRE Japanese bathroom supplier, TOTO, has been part of the Pyramid Project – a massive renovation effort at the Louvre, Paris. Opened in 1989, the pyramid was originally designed to accommodate 4.5 million visitors per year. Just 25 years later, with visitors closing in on the 10 million mark, it was clear that the entrance area needed to be reimagined. The project, planned by the museum’s teams in collaboration with architectural firm, Search, has restored the Hall Napoléon to its original purpose: a place for visitors to get ready for their museum visit. In the course of the project, TOTO was selected as the supplier for the sanitary facilities located in the Hall Napoléon. Acting as a patron of the restoration process, TOTO donated toilets, urinals, washbasins and dryers for the men’s and women’s washrooms. Museum employees also have the opportunity to enjoy the added comfort TOTO products, with WASHLET shower toilets installed in the staff washrooms. They can now enjoy all of the hygiene and comfort
technologies that make WASHLET so special: gentle warm water cleansing, heated seat, adjustable water temperature and pressure, and much more. BESPOKE ART INSTALLATION UNVEILED AT THE GREAT NORTHERN HOTEL Artist Debbie Smyth has created a striking new bespoke art installation on the staircase walls leading to Plum and Spilt Milk, a restaurant at The Great Northern Hotel in King’s Cross Station. ‘A Tying of Knots’ is a site-specific sewn piece that portrays a city in transition; referencing everything from Ordnance Survey maps from bygone years and heat maps charting interaction in the age of the internet to the unspoken conversations and bumping bodies of strangers along the local waterways and winding streets, plus the hustle of intersections and stations. Debbie has used nails and embroidery pins connected by threads to portray real places as strings of memory, creating a cartography of string that is both real and imagined. As a fittingly poetic end to the project, the artist celebrated her own engagement whilst staying at The Great Northern Hotel – the transition to ‘tying the knot’ in her own life. The installation is the latest success in the close relationship between ARTIQ and
the hotel’s owner-operator Jeremy Robson, involving the orchestration of spectacular and integrated art installations for the ground and first floor public spaces, as well as key stairwells, corridors and lift lobbies. “Patrick McCrae of ARTIQ has an instinctive appreciation of how architecture, interior design and art must come together to play an influential part in generating a strong identity for a boutique hotel,” Jeremy comments. “The Great Northern Hotel is a dignified
icon that sits at the centre of the cultural and transportational crossroads that is King’s Cross St Pancras. In Conversation – Maher Murshed & Ken Lam, Navigate Design In just two short years, Toronto agency Navigate Design has evolved from a team of three to a 13-strong crew, offering interior design, identity development, branding and digital marketing services with a specialisation in hospitality. Here, founders Maher and Ken talk about the trends driving the industry, memorable restaurant projects and their favourite dining spots in Toronto.
What would you say are the top three “trends” or drivers influencing restaurant interiors at present? Instagram moments: with the influence of social media, restaurant owners nowadays spend more time on digital marketing, focusing on the growing millennial market segment. Restaurant owners and designers place more emphasis on curating entry experiences, food plating, glassware selection, cocktail programs, special art installations, custom lighting, etc. “Instagram moments” have become pivotal for customers to discover while they are dining, allowing them to share their food stories spontaneously. This trend not only influences how the public select restaurants to visit, but also how interior designers think of focal points, visual queue, layout and flow of the restaurant. Materials and lighting design not only have to complement the décor and food presentation, but also serve as a great backdrop for selfies! It’s no longer conventional restaurant design, but more experiential design. The “Vibe”: or the “energy” of the restaurant defines the tone of the brand and creates a lasting impression on
customers. To create this energy, restaurant owners and designers have started to place more emphasis on the arrival experience, putting a feature bar area at the front in order to animate the entry area, for example – crowds draw people. With a bustling front area where music, ambiance, smell, and lighting are controlled perfectly, this “vibe” builds anticipation upon arrival. In the dining room, spacing between aisles and tables is also a lot tighter and more intimate, people prefer to sit closer to other diners, to feel part of a social scene rather than a relatively secluded dining experience. Animating the kitchen also helps create

energy beyond the bar, so diners can experience their food being cooked first-hand and watch chefs do their magic. An open-kitchen design or making the plating area or the dessert station completely visible to diners, certainly helps create the vibe in the dining room. Crafting a “vibe” is a vague concept, but with the right combination of zoning, design and operation, it elevates the dining experience and encourages people to interact. Is it a bar? Or a restaurant?: We are seeing a shift towards a mix-use bar area, usually at the front of the restaurant. There is a blur between what is the bar and what is dining, and recently it has become more of a grey area where it can be both at the same time. Deeper bar counters allow for both cocktail and dining, and lounge areas with chat height tables allow for social drinking, share plates or even a full meal.

What challenges do you feel are unique to restaurant design, and how do you overcome them? Flow: Creating the right flow for the restaurant is equally important to creating the right menu. The flow of a restaurant will determine not only how efficient a restaurant is operating (i.e. service turn over, response time,

bottleneck etc), it also dictates the different zones of a restaurant (i.e. bar, dining, server stations, kitchen). It has a direct impact on revenue. A 6000 square foot restaurant could be the most stunning space, but if it does not have the right flow, it could create long customer wait times and bottlenecks, which later will translate into a poor review and non-returning customers; whereas a 2000 square foot pizza joint with the right flow that streamlines their bar and kitchen in one counter will amplify efficiency as well as create animation at the bar. Creating the right flow will require a deep understanding of restaurant operations from front of house to kitchen. There is no shortcut to gain this knowledge other than working diligently with executive chefs, general managers, bartenders, and experienced restaurateurs to figure out what works and what doesn’t, and what can be compromised. The “optimum” seat count: Generally speaking in a restaurant, more seats equals higher revenue. However, the true capacity of a restaurant has more math and science behind it than purely “put as many seat as you can in the space”. An 80-seat restaurant will have different requirements in regards to kitchen size/ equipment, bar size, POS stations, wait staff, washroom counts; than a 140 seat restaurant. A 4000 square foot space sure can pack 250 seats, but left with only a tiny kitchen and bar will not be feasible, simply because the kitchen will not be able to handle the output of 250 servings. When working with experienced restaurateurs, more often they will have a realistic forecast on seat count vs operation cost, to see what makes the most sense to generate the fastest return of investment. It is
important to also consider sustaining business during a slower season, a 250-seat half-empty restaurant will have a lot more risks as it can deter potential customers from walking in. To overcome this, zoning becomes important during the design phase, to cleverly ensure the

visible part of the restaurant always seems “full”. Creating a mix-used bar, or creating visual barriers to the unused area of the restaurant. Opening date / patio season: Every owner wants to open their restaurants ASAP, but an experienced restaurateur will always know when to open to gain maximum momentum in sales. For example, in Toronto, the best times to open are usually early September for TIFF, mid-April for patio season. December and January are not so great being at the tail end of New Year, and postholiday syndrome makes people want to spend less. In Dubai, the ideal time to open is August, allowing a one month lead into the peak spring / winter season. The challenge as a designer is not so much to rush for these dates, but to manage client expectations and set a realistic timeline with the owners to strategically align design, marketing, procurement with opening date. If a client comes in February, rather than rushing to open April knowing there is a high-chance of failure; the right approach is to plan out for a much better launch for September. It will always be a challenge to communicate what is the right opening date, since it is always tied to revenue. Helping clients to set

With true collaboration with investors, kitchen designer, executive chefs, staff, local project manager, etc., we were able to transform this sky tower into a destination dining saloon where the Weslodge brand was fully realised. We have also hand-picked and installed over 157 pieces of framed art and over 100 pieces of antiqued objects placed throughout the restaurant. It has won an Interior Design Award for Best Bar and Restaurant UAE, and two other awards (BBC, Timeout Dubai) for the best restaurant in 2016.

realistic goals and be very transparent on all the building blocks, in most cases, helps the entire process. What would you say is the most memorable/ unusual restaurant you’ve worked on, and why? Weslodge Dubai. This is the first premium restaurant we have designed outside of Canada, and also the first in the UAE. There were a lot of “firsts” on this project, including a full year of understanding the Dubai dining scene, learning their cultural dos and don’ts, figuring out festival dates, religious constraints, city approval processes, government hierarchy, and first time working with local contractors and fabricators. This is also our first project where we were involved beyond just interior design. For example, we were involved in operations, marketing, staffing, hiring, social media, plateware and glassware selection, procurement, art curation, styling. Design-wise, the space is situated on the 68th floor of JW Marriott Hotel, a glass tower with floor-to-ceiling curve glass with a 270 degree unobstructed skyline of Dubai, and a curve structural wall on the interior. There were a lot of spatial constraints, not to mention
How would you describe Toronto’s restaurant scene? Uniquely multi-cultural. A lot of new restaurants are still Chef-driven, both in food offering and design aesthetics. Toronto being a true multi-cultural city, has a lot to offer, bringing in flavours from different ethnicities, and with our unique take on authenticity. Culturally, Torontonians are influenced by big global trends yet conservative when it comes to spending money and taking bigger risks compared to American and European counterparts. We are also excited as some of our home-grown brands are starting to gain presence globally, such as Weslodge and Morah, in Toronto, Miami and Dubai.
The restaurant scene is also neighbourhood driven. The fun part of dining out in Toronto is to venture the culinary scene in different neighbourhoods. Gentrified areas are typically the most sought after for new concepts. These trendy restaurants usually help shape the culture of that area as well. Ossington, Parkdale, Dundas, The Junction, for example, all have well defined food offerings. They attract specific types of customers with specific price points and aesthetic appreciation. These areas evolve constantly and quickly, keeping the restaurant scene fresh and giving “foodies” a lot to consider. Have you got any new projects on the horizon that you’re able to share with us? Celino Hotel, Miami – an iconic four-building hotel restoration in the middle of South Beach, Miami. This will include a re-design of all rooms and suites, common areas, swimming pool, grand lobby, courtyard, and two brand new F&B concepts within. It also has the longest stretch of patio seating along Ocean Drive. Also, Mira – a Peruvian concept which combines an authentic menu inspired by the culinary scene in Lima, and a speakeasy bar featuring import infused piscos. Do you feel that hospitality venues are increasingly looking to create more of a connection between indoors/outdoors? If so, how can Alitex accommodate this process? Increasingly, people want to know more about what they’re eating; where was it grown, was it locally sourced? A single glazed Alitex structure provides a perfect growing environment to grow fresh, seasonal produce for local menus. We work closely with head gardeners, head chefs and estate managers to get a real understanding of their vision. From concept to

design, we revisit and talk our clients through every step of the project to ensure the bespoke structure we are designing for them fits with their company ethos and will provide the best environment, be it for plants, or for people. The Potting Shed at Bowcliffe Hall is a great example of this. For this structure, a large ¾ span, we used partitions which are perfect for adapting that space to make it suitable for dining and growing. The central and west wing are double glazed and used for hosting guests. The east wing is single glazed for growing kitchen vegetables and herbs. Alitex has created an impressive greenhouse for The Pig – how did this project come about, and how do you feel the greenhouse has enhanced the brand’s emphasis on a kitchengarden dining experience? We love working with The Pig and have nurtured some great relationships with the gardeners and chefs at the restaurants. We now have greenhouses at The Pig in the Forest, The Pig on the Beach and The Pig near Bath. They have a fantastic set-up there and a really enthusiastic team. We’ve seen for ourselves how the gardeners and chefs work together in planning menus and ensuring they have enough produce. They’re also not afraid to try something new so you’ll always see something exciting on the menu. What works really well is that guests can walk all around the garden and inside the greenhouse to see what’s growing. The gardeners always get chatting to guests and share their growing knowledge. More than likely, what guests see in the gardens is what will be on their plates; it’s that fresh. From a practical point of view, the Alitex greenhouses provide more growing space and extend the growing season, allowing them to protect seedlings and tender plants. Have you got any further hospitality projects in the pipeline that you’re able to talk about? We were thrilled to be the chosen company to work with Chewton Glen on their new cookery school and provide the greenhouse. We worked with estate manager Darren Venables, from the outset, visiting the establishment to get a real understanding of everything they do there. It’s an incredible set-up and the Cliveden greenhouse, from our National Trust collection, looks great at the heart of the kitchen garden. Guests on the cookery courses can pick ingredients to work with straight from the greenhouse and garden, giving them a real understanding of the notion of ‘from seed to plate’. We have also recently installed a large greenhouse at Limewood Hotel in Hampshire.

The greenhouse, inspired by the hotel’s Italian themed restaurant, features lots of Mediterranean herbs and a stunning olive tree. Aptly named ‘Serra’, meaning ‘greenhouse’ in Italian, we have really enjoyed designing this project and seeing it come to fruition. What do you feel sets Alitex apart? The key difference between Alitex and other conservatory and greenhouse manufacturers is that, while they have continued to use timber, we have pioneered aluminium. Over half a century ago we realised that it was the only material that could provide the performance, the flexibility and the longevity to meet our exacting requirements. Our maxim is
‘aluminium made beautiful’, summarising our dedication to achieving the beauty of wood without the limitations. This is not just about the design of a restaurant, it is also about meeting deadlines and delivering a project on brief and within budget. Creating the ‘wow factor’ starts with detailed research. A good designer will immerse themselves in a hospitality operator’s business to get to the heart of the operation – understanding the heritage and brand ethos to create stand-out appeal for the target demographic and audience. In addition to the all-important operational requirements, great design can be achieved through the creative use of finishes, features and ‘stand-out’ pieces to catch the customer’s eye. What a designer should be looking to achieve are focal points, which will deliver a bold, visible difference to the environment. It is also important to remember that great design can be achieved regardless of budget. It’s all about being resourceful and finding the right materials. To give you an example, we recently completed the transformation of Searcys at The Gherkin, in London, where we created a bespoke bronze fretwork design for the restaurant’s bar front, which reflected the geometric window design of The Gherkin. To give the ‘wow factor’ we
positioned the fretwork away from the bar front to give it a three-dimensional look, and incorporated it over three levels including the front reception desk and lobby doors, to continue the theme and highlight Searcy’s identity throughout. A good designer will know how to get the most out of any budget by using creative thinking and the clever use of locally sourced materials that can be upcycled or refurbished. For larger budgets, designers can experiment with more unorthodox materials, features and structures to capture the customer’s attention. We’ve also experienced an explosion in technology, which is starting to change the face of interior design in the restaurant sector. In today’s connected society, it is important to remember that customers use a growing
number of electrical devices on a daily basis. Therefore, consider charging outlets, which can be conveniently and unobtrusively incorporated into table tops, booths and poseur shelfs. Additionally, make your customers feel right at home, with the use of ‘table tablets,’ to check their newsfeed and emails or play the latest games. However, it is also important that operators have ‘technology free’ areas for customers who want to concentrate on social gatherings with friends or family. We’ve also seen significant developments in lighting technology in recent years, which can enhance a restaurant interior to create an impressive effect. An example of this is through the use of colour changing light bulbs that can be used to create drama and different moods, whilst being easily controlled via an app, which allows operators to change the ambience to suit the time of day or occasion. But how do you know if you’ve achieved that all-important ‘wow factor’? As a designer, one of the highest accolades we can achieve is either a recommendation or repeat business. Andy Thornton supplies furniture for Wakefield bar and grill A characterful former bank building in central Wakefield is the new home for Qubana, a Cuban-Spanish-inspired bar and grill, following a £1m investment by hospitality operator Matthew Burton. Qubana, which first opened in 2008, has always been a firm favourite amongst the city’s diners, but had outgrown its previous home. Interior design by Paul Schofield of PA Schofield has transformed the interior, retaining all the striking architectural features of this impressive building, including the panelled ceiling, enormous fluted columns and ornate plasterwork. Matthew and Paul sourced all the bar and restaurant furniture from Yorkshire-based contract furniture supplier Andy Thornton. Centrepiece in the former banking hall is a large American walnut bar, for which Andy Thornton supplied the sumptuous leather upholstered button back bar stools. Facing the bar, the company’s popular Draughtsman bar stools have been used extensively, along the drink shelf attached to the front of the decorative metal balustrading, again supplied by Andy Thornton. They are also paired with Continental cast iron poseur tables in the Gin & Cocina area. In the main dining area on the raised section, Andy Thornton supplied all the loose furniture, including leather-upholstered dining chairs, lounge chairs and table bases, whilst also providing furniture for the private dining room, The Vault. Outside, Andy Thornton supplied furniture for the covered La Terraza rooftop space, which is quickly becoming the most popular summer drinking destination in Wakefield and for the popular informal cobbled area to the rear. Qubana Tapas & Grill has certainly justified its considerable investment, transforming Wakefield’s busy restaurant and nightlife scene. The MyTent Service When Dan says “manage” he means it. Intent’s recently launched MyTent service offers hospitality companies the opportunity to own a stretch tent and have it managed externally 360 days a year. “It’s the complete package,” says Dan, and it shows: the service already has 120 clients. Using 3D modelling, Dan and the team will organise a custom-built, fully branded and customised canopy tent (standard designs are also available) within 3-5 weeks of ordering. “Once the tent’s ready, we’ll come and fully install it in its required setting, before coming to remove it again when the summer comes around or the event finishes. Egger’s Decorative Collection continues to inspire Egger’s 2017 Decorative Collection made waves when the wood-based material manufacturer introduced it to the global market in January. Hospitality Interiors’ Gemma Ralph was treated to a tour of Egger’s impressive Hexham plant and a presentation on the new collection in the company’s sophisticated showroom space. For Egger, the collection represents its biggest-ever portfolio of decors for the interior design and specification sector. Architects, distributors and fabricators can take their pick from 297 laminates and 95 MFC decors with matching edging, 124 new designs and seven new textures. Egger is renowned for its intelligent, trend-led collections which capture and anticipate the momentum and demands of the interior design and furniture industries. Its decors are painstakingly developed with these trends and the functional demands of its customers in mind. “We have listened long and hard to what customers are telling us they want and have addressed the needs of architects, interior designers and fabricators with our biggestever range and a host of service improvements,” explains Egger UK’s head of decor development, Elliott Fairlie. “We have captured the latest design ideas from across Europe with woodgrain, unicolour, textile, metallic, concrete and ceramic decor effects – all designed to work individually or in combination.” Just some of the trends Egger worked with for this collection were ‘Industrial Style’ – bringing metallic lustre and limed pores to the fore; ‘Handcrafted’, which takes in deeply brushed wood reproductions and sandblasted surfaces for an artisanal feel; and ‘Nordic Style’, which focuses predominantly on light woods that mirror the landscape found in the northern reaches of Europe. Although best known for its ultra-realistic woodgrains, Egger has taken stock of the growing demand for unicolours with more than 90 options in its laminate range. Neutral decors – in particular white and grey in both cool and warm tones – are widely represented, while new on-trend blue tones have been added in a range of shades. There are also a number of new muted decors, new brights and additions in the orange-brown and violet-pink spectrum. Egger’s 9-Grid format makes selecting from its 300+ strong collection of decors both easy and efficient. By grouping colour tones and wood species in sets of nine, each colour can be easily viewed and comparisons drawn. Another highlight of the new range is an expanded choice of 24 Feelwood decors, with industry-leading deep textures and synchronised-pore finishes across all of its laminate, compact laminate, worktop, MDF and melamine-faced chipboard products.

HI-MACS®’ new geometric dimension Square, triangle, diamond – these terms don’t do justice to the pearl white HI-MACS® interior design found in the entrance hall of the HVB-Tower of HypoVereinsbank. Acute angles, sharp or soft corners and tilted surfaces of various inclines are all combined to form a polygonal structure, resembling a crystal. It serves as a parapet, stretching across three floors and creating a spatial boundary to the atrium. Using this crystal shape, Munich-based HENN architects made the DNA of the building visible for everyone, following the brief by the owner. Its impressive effect could not have been achieved without HIMACS® which can be bonded seamlessly, giving the crystalline body a smooth appearance. At the same time, it posed a challenge for the partners 5D Engineering and Arnold AG who were tasked with implementation planning. In order to meet the requirements, Arnold AG developed a two-part substructure that absorbs the movement of the cladding – the primary substructure transfers all loads to the building, while a secondary one, fixed to the primary substructure, follows the HI-MACS® surface on the inside. Today, this installation, challenging even for solid surface material experts Rosskopf+Partner, is no longer visible in the seemingly weightless – despite an actual weight of 36 tonnes – crystal. Close to 850m² of HI-MACS®, supplied as 500 different individual components, were assembled, screwed together, bonded and smoothed on site with millimetre precision – all across three floors. Despite its impressive size and shape, the look and warm feel of the HI-MACS® surface creates a welcoming atmosphere in the entrance hall. The solid surface material is ideal for use in heavy traffic areas, as it is hygienic, low maintenance and robust. Jan Kath’s glorious cloudscapes Jan Kath drew inspiration from the works of the baroque painters of the 16th and 17th centuries for his HEITER BIS WOLKIG-Collection 2017. Discovered during his travels through the Alpine region, Jan felt that these artists “captured a piece of idealised sky in the domes of magnificent churches”. As one of the world’s most in-demand designers of hand-knotted carpets, Jan Kath is renowned for breaking with conventional styles and design rules. A key theme of his contemporary work is the interpretation of photorealistic motifs in textile art, something Jan has perfected together with his carpet weavers in Nepal. This collection captures the sky in various weather conditions, rendering them as realistically as possible, even down to the smallest colour nuances and shadings. Up to 30 blue or grey tones, in fact, are used in the designs. The material mix used for the collection is typical of Jan Kath’s carpets, which are hand carded and hand spun in Tibetan highland wool and Chinese silk. This combination gives these striking designs a unique depth and three dimensionality. Each and every knot is carefully planned beforehand and intricately reproduced by the weavers in the workshops in Kathmandu. This interplay between the design and the high-quality raw materials enlivens the cloudscape, as if it were actually under your feet. Craven Dunnill Jackfield creates bespoke tiles for Barbecoa Piccadilly Faience-tiled walls, inspired by 1920s’ styling, create a striking and dominant feature at Jamie Oliver’s new Barbecoa restaurant in Piccadilly, London. Bespoke-manufactured by Craven Dunnill Jackfield, the specialist tile manufacturer, they stand 2.8m high by 11m long. Thirteen imposing and ornately decorated tiled columns are each crowned with a giant, intricately moulded fleur-de-lys, featuring a vibrantly
coloured, crackle finish. The alkaline-based glaze was specifically created to produce the desired crackle effect, specified colour and vibrant tone. Gemma Ball, senior sales manager at Craven Dunnill Jackfield, reveals it was the fleur-de-lys tiles which proved the biggest challenge: “At 500 x 600mm the size was the largest, handmade, 3D tile we had ever attempted to produce.

The restaurant’s interior has been thoughtfully designed with the surrounding landscape in mind and Crestron – a leading provider of control and automation systems – was keen to ensure that the lighting system should reflect this same level of care and consideration. A team from acclaimed Crestron integrator, Morelight, welcomed the challenge of designing and installing an innovative lighting control solution. “We were absolutely delighted to be asked to help with this innovative project and knew that by using Crestron products alongside our creative lighting design we would be able to achieve a brilliant combination of creativity and technology,” explains Ben van de Bunt, creative director at Morelight. Thanks to Crestron’s DINAP3 processor, efficient control of all track, pendant, LED strip and wall lights, are managed, with a number of scenes pre-programmed into the system. The tuneable luminaires can be controlled to imitate the changing tones and colours of the sunset, while also cleverly embracing the natural light occurring outside. Dimmable pendant lights – suspended impressively from the ceiling – can be adjusted to accompany the rest of the lighting scheme, along with the wall lighting. To complement the interior style of the restaurant, Morelight has installed the space-saving TSW752 touch screen featuring a clean, contemporary appearance with edge-to-edge glass and advanced high-definition Smart Graphics. Creams Café unveils cutting-edge AV system Creams Café has unveiled a cutting-edge AV system in its Whitechapel franchise, designed by Elite Engineering with LG commercial displays, interactive digital signage applications and integrated sound design. “We wanted to create a unique environment for our clients with multimedia entertainment integrated into the interior design throughout, but also to be able to offer bespoke content packages as an added revenue stream for the café,” says Yusuf Rab, owner of Creams. “When we have birthdays with special messages on the video wall and screens, the customer can provide us with photos or messages which can be displayed at an additional cost. It’s been a really popular feature and the design as a whole helps us to attract a variety of demographics throughout the week.” The centrepiece of the café is a 4x2 LG 47in 47LV35A5BC videowall mounted on a Peerless retractable videowall bracket for ease of installation and maintenance. The whole system is controlled by a Kramer VS-44HDMI matrix managing Brightsign hardware and software, a Denon Pro bluray player, a media PC and local HDMI points. Six other LG SM5K-B displays are placed around the cafe in booths to relay content to customers. These are also controlled by the state-of-the-art rack system, alongside an Audac audio matrix for music reproduction throughout the cafe. This can be controlled by web OS with an iphone or PC application to change sources locally and import MP3s and microphone inputs when required for special occasions with local volume controls throughout the café. The walls throughout feature innovative TV glass tailored to fit the café walls and screen sizes, which enables the screens to be seen when they are switched on or becomes an opaque mirrored effect when they choose to have no media playing in the café. Infinity mirrors installed in the ceiling change colour on timers to create added interest for customers in the counter area. Sleek cabinet fittings to stand the test of time Sugatsune There’s no doubt that big cabinet doors make a great first impression with discerning guests. Customers like the clean continuous surfaces and practical advantages of being able to open a door and expose a world of storage options. Engineers, however, scratch their heads as they work out tolerances for doors made from substrates which were envisioned for cabinetry half the size. Cabinet doors need to be light enough to whisk open and stiff enough to maintain dimensional stability. With designers specifying cabinet doors not only as large as standard internal doors, but often with a complete shelving system bolted on the inside, the challenges are immense. Sugatsune, which produces ruggedised versions of standard concealed hinges, is recommending the use of tensioner bars for large doors used with its J95 hinges. A tensioner bar works rather like a guitar truss rod or the tensioners in pre-stressed concrete. A steel bar is fitted either internally or surface mounted for most of the length of the door. By turning a threaded section of the bar tension or pressure can be applied which straightens the door. Using this system thinner 20mm panels can be used and a lighter more user friendly door results. Thicker composite doors of different materials are particularly susceptible to warping which again can easily be managed with tensioner bars. The TN400 series can be engineered into the door or fitted beneath covers or veneers. It can be adjusted from the top or bottom of the door with hex keys via inconspicuous holes. The ST700 series is a complete unit built into a smart aluminium extrusion. It is installed in a groove on the inside of the door where it gives visual reassurance. The ST740 series is often with pocket doors where a lighter door is valued. The tensioner bars are surface mounted where they serve to stiffen the door and also double up as a handle which, when a pocket door is closed, conceals the pocket for a cleaner look.
