They are looking for the full luxury experience, all the while returning from their holidays feeling revitalised. The yachting and wellness industry has evolved massively over the past few years. emphasis placed on different elements including how cuisine can contribute to the guests’ experience, as well as
importance focused on sourcing a multitalented crew. Plus the incredible inspiration behind the materials sourced to create unique designs found on board some of the world’s most exclusive wellness centres. Inspired by this ongoing industry trend, this edition of the GG Yachting Magazine is dedicated to health and wellness on board – starting off with our cover story about the 80m Dragon, the truly awe-inspiring project delivered by Palumbo Superyachts in 2019. As one of the newest yachts on the market, she has a host of exquisite features including an unheard-of 7m pool, a 180-degree view from the owner’s cabin, and six decks of luxury. We had the opportunity to talk to the shipyard about its most triumphant project of the year, and the challenges it faced to launch this masterpiece in less than 27 months. Continuing with this industry trend, an exclusive interview can be found with master chef Stephan Staats on page 26. With a career spent creating delicacies on board, Stephan shares his insights into the world of fine cuisine. PEARLS IN THE AZURE BLUE SEA
They are located close to one another and yet they are so different at the same time. And both have no shortages of fans. Some, like the German Chancellor, prefer the charms of Ischia. Others, many of them affluent artists and bon vivants, have always sworn by Capri. As a volcanic island, Ischia entices visitors with its thermal baths and impressive fortress known as the Castello Aragonese. Meanwhile, Capri is enchanting for its spectacular limestone caves such as the Grotta Azzurra, and the evening comings and goings on La Piazzetta, a vibrant square and meeting point of vanities.

HOTSPOT THROUGH THE AGES
It doesn’t always have to (just) be Venice. The region of Veneto also has a wealth of appealing attractions to offer, especially when it comes to physical and mental well-being. The thermal baths in the Euganean Hills and the spa town of Albano Terme, not far from Padua, have been a veritable hotspot for this since the era of Ancient Rome. A boat trip on the Brenta Canal also provides stimulating relaxation: Venetian villas dating back to the 17th and 18th centuries line the banks on this trip into a bygone age. 8

The coast between Trieste and Duino rises up steeply from the sea. Small bays with idyllic beaches for bathing and small villages reveal themselves, while the castles in Miramare and Duino stand enthroned above the surf below. Well-Organised Planning and improvisation are key ingredients for star chef Stephan Staats, whose superyacht career takes him round and round the globe. Stephan, what inspired your passion for food? My childhood! I grew up with a French mother and a German father. In the 70s it was quite normal to grow your own food and cook every day. And that’s exactly what my parents did. So preparing meals is something that’s fascinated me from a young age, and still does. Do you have a signature dish or style of cooking you specialize in?
Over the years I’ve realised that food and everything relating to it is a living thing that evolves over time. So as chefs we also need to grow. I’d say my speciality is adapting to any cuisine that my client requests, or responding to the specific cuisine of a particular region. Wherever I happen to find myself working in the world. Having said that, I’m a huge fan of Asian cuisine. How have you incorporated the flavours of your travels into your
The beautiful thing about being a travelling chef is that you’re exposed to literally everything. Interacting with local people and experiencing their local markets has transformed the way I work as a chef. More so than any schooling, book or online content could ever do. As well as striving to incorporate regional flavours, I also try to capture the atmosphere of a place.

about being a chef in the superyacht industry?
There are endless sources of excitement. But to name just a few: Exploring the unknown and new shores for the first time, being part of an elite circle of chefs with uniquely versatile skills, and embracing the idea that pretty much everything seems possible even if it isn’t. I feel very fortunate to have experienced so much during my years working at sea. I’ve been tested to my limits and had the privilege of working alongside some of the best chefs in the world. Plus the travel itself is a joy. The most exciting thing, in three words, is: the incredible lifestyle. How specific do guests’ requests get? The whole idea for most yacht owners I work for is being able to sample the local cuisine as well as the culture. Sometimes without stepping foot off the boat. So if I’m somewhere in the middle of nowhere, in the fjords of Chile, for example, I need to know a thing or two about the local produce, and have access to that produce too. These days I have contacts almost everywhere in the world and can get my planning done well in advance. How do you prepare yourself for the unexpected? Well, when I’m not chopping away or stood at my stove in my kitchen, it’s preparation that dictates my day. Experience helps of course, but there are no guarantees everything will go to plan. The size of the vessel plays a big role too. The larger the yacht, the more storage options are likely to work in my favour. It’s also vital to be up to date when it comes to preference sheets and international food trends. And, of course, any particular dietary requirements of those on board at any given time. The rest is simply improvisation!

Whilst some specific destinations like the Indian Ocean are certainly conducive with spiritual and relaxing experiences, a charter yacht is actually always an ideal place to rest the mind and treat the soul. Wherever the destination might be, there is no better place to be than surrounded by the fresh ocean breeze to relax, revitalise and invigorate the body. This process is enhanced by ensuring privacy and providing an exclusive standard of service from a dedicated and highly skilled crew. Before the end of your charter, have your crew locate a top-of-the-line SPA with traditional treatments, before you head back aboard to enjoy an al fresco dinner.

There is a trend right now towards eco SPAs, which boast natural and earthy tones throughout. For example, the sauna on board from M/Y SOLO is finished in wood sourced a medieval castle in Finland.
