all’angolo più a nord d’Italia, The CORNER vi offre un reportage su una terra ricca di storia, di tradizioni, di buon cibo, di ottimo vino e di mille curiosità. La Valle d’Aosta diventa protagonista di un racconto ricco di profumi, di colori e di sapori, per una vacanza da assaporare con tutti e cinque i sensi. Una terra fertile e generosa, che merita di essere conosciuta per le sue vallate pittoresche ma anche e soprattutto per i suoi prodotti inconfondibili, per le sue tipicità territoriali e, non da ultimo, per la dedizione dei suoi produttori, che sanno con sapienza proporre il meglio della loro Valle. C’è molto da scoprire, in questo angolo d’Italia così privilegiato per paesaggi, colture, allevamenti e produzioni di qualità: sarebbe un peccato attraversarlo in direzione dei monti e dei valichi senza scoprirne le mille storie e assaggiarne le mille bontà. Io stesso, da sempre amante dello sci, ho percorso questa Valle per molti anni, da Milano a Courmayeur, senza rendermi conto delle affascinanti possibilità di piacevoli visite o di incantevoli itinerari del gusto. La Via del Prosciutto, le visite alle cantine o al Rifugio del Vino, le grotte di stagionatura della Fontina, gli alambicchi dei distillati, La Maison Bruil, la festa del Lardo ad Arnad o del cioccolato a La Thuile, il mercato contadino Lo Matsòn sotto il Monte Bianco: sono solo alcune delle deliziose occasioni per chi desidera divertirsi e rilassarsi approfondendo la propria cultura in tema di enogastronomia. Questo primo numero vi porterà alla scoperta dei vini valdostani e della città di Aosta.

I primi stanno sorprendendo gli appassionati di tutto il mondo con prodotti di estrema qualità sempre più convincenti, conosciuti ed apprezzati. Aosta certamente merita una sosta e una visita: dedicatele un po’ di tempo e vi sorprenderà per animazione, cultura, gusto e alloggi di charme. rom the most northern corner of Italy, The CORNER offers you a report on a land rich in history, tradition, good food, excellent wines and a thousand curiosities. The Aosta Valley becomes the protagonist of a story full of scents, colours and flavours, for a holiday to be enjoyed with all five senses. A fertile and generous land, that deserves to be known for its picturesque valleys but also for its unique products, for its typical characteristic territory and, not least, for the dedication of its producers, who can skilfully bring the best of their Valley. There is much to discover in this part of Italy so privileged for its landscapes, crops, farms and quality productions: it would be a sin to cross it in heading to the mountains and alpine passes without discovering its many stories and to sample the many tasty things. I, myself, have always been a ski lover. I have journeyed this Valley for many years, from Milan to Courmayeur, without realizing the fascinating possibility of pleasant visits or enchanting itineraries of taste. La Via del Prosciutto, visits to wineries or to the Rifugio del Vino, the caves for aging Fontina, the stills of distilleries, La Maison Bruil, the Lard festival in Arnad or the chocolate festival in La Thuile, the farmers’ market Lo Matson below Mont Blanc, are just some of the delicious opportunities for those who want to have fun and relax improving their own culture in terms of food and wine.

This first issue will lead to the discovery of Aosta Valley wines and the city of Aosta. The first mentioned are surprising fans around the world with extremely high quality products that are increasingly convincing, known and appreciated. Aosta is certainly worth a stop and a visit: dedicate a bit of time and it will surprise you with entertainment, culture, taste and charming accommodation. Begin the journey from our pictures, leave on the wings of fantasy and enjoy all the taste of the Aosta Valley.

i dice spesso che la botte piccola contiene un grande vino. Ebbene la regione Valle d’Aosta è indiscutibilmente un territorio mignon, ma possiede diversi e straordinari giacimenti gastronomici; se facciamo un rapporto potremmo affermare che l’indice fra territorio e prodotti di qualità la pone ai primi posti del Made in Italy gastronomico.

Dal lardo di Arnad, forse meno popolare di altre denominazioni, ma qualitativamente eccellente, alla più nota Fontina, dal prosciutto di Saint Marcel al Jambon de Bosses, dai Grissini di Fenis alla Fëta di Teteun, dai salumi di selvaggina ai boudin e alla Toma di Gressoney si ha un caleidoscopio di profumi e di sapori unico. E anche i vini non sono da meno a cominciare da quei vitigni autoctoni quali il Fumin, il Cornalin, il Petit rouge, il Mayolet, il Prié Blanc che offrono un’identità vinicola unica e apprezzata dai nasi raffinati.

Well, the Aosta Valley region is undoubtedly a miniature territory, but possesses different and extraordinary gastronomic treasures; if we make a report we could say that the index between territory and quality products places it at the top of Made in Italy gourmet. From Arnad lard, perhaps less popular than other denominations, but of excellent quality, to the most famous Fontina cheese, from the ham of Saint Marcel to the Jambon de Bosses, from breadsticks of Fenis to feta du Teteun, from game salami to boudin and Toma from Gressoney you have a kaleidoscope of aromas and unique flavours.

And the wines are also top. Beginning with those local varieties such as the Fumin, the Cornalin, the Petit rouge, the Mayolet, the Prié Blanc that offer a wine producing identity and are appreciated by the finest noses.

Anna Bogoni Novarese di nascita, torinese di studi, milanese per lavoro, Anna Bogoni ha scoperto gli chef stellati molto prima di Expo e di Masterchef occupandosi dei temi legati al cibo e al vino da oltre vent’anni. Curiosa e golosa per natura, ha diretto recentemente Elle a Tavola, il bimestrale di food e lifestyle dall’anima femminile e ha collaborato al progetto del nuovo settimanale Ci piace cucinare del gruppo Universo. Le sue passioni?

Mangiare in modo sano, (ha diretto Starbene), fare attenzione alle mode e alle tendenze della tavola, (ha diretto Cosmopolitan), ma anche scrivere di cibo per raccontare storie di donne, di territori e di tradizioni. Cresciuta con le ricette della Cucina Italiana e del Cucchiaio d’argento preparate da una mamma insuperabile ai fornelli, ama anche le sperimentazioni e incursioni nelle cucine etniche, i viaggi e lo shopping gourmand.

Arabella Pezza Milanese di nascita ma valdostana d’adozione, dopo una tesi di laurea sulla “Cultura dell’Alimentazione” ha iniziato a scrivere di food&wine per testate e guide di settore e di nutrizione per agenzie pubblicitarie che si occupano di healthcare.

Sa cucinare? Ci prova, ma preferisce stappare - in compagnia! - ottime bottiglie di vino, e così si è diplomata Sommelier AIS per dedicarsi con consapevolezza a questa passione. Ama viaggiare: per The CORNER scrive di cibo e di vino ma anche di viaggi e di turismo.

Diego Bovard Valdostano di nascita e valdostano per la vita, agrotecnico di professione, si occupa da parecchi anni di territorio e in modo particolare degli aspetti legati all’agricoltura di montagna. Nel settore dell’allevamento è competente sulle produzioni primarie della Valle d’Aosta, e segue per passione gli aspetti legati alla comunicazione al pubblico; collabora con l’Associazione regionale degli allevatori, all’organizzazione di eventi e alla gestione di disciplinari di etichettatura dei prodotti zootecnici. È infine collaboratore di Enti e di aziende private in diversi progetti di valorizzazione dei prodotti del territorio.

Nicolò Balzani Cresce a Milano fino alla maggiore età quando, l’amore per la montagna e la neve, lo portano in Valle d’Aosta dove inizia a fare e raccontare di snowboard come maestro e reporter per varie testate di settore. Dopo divagazione nel mondo dell’outdoor, decide di allontanarsi dalle montagne valdostane per andare a scoprirne di nuove dall’altra parte del globo. Si trasferisce nella Valle Sacra di Cusco (Perù) dove collabora con alcune Onlus impegnate nella tutela delle minoranze andine. Nel 2015 ritorna sotto le pendici del Monte Bianco contribuendo alla realizzazione del progetto iMontBlanc con Magazine, App e attività social. Il resto è storia di oggi, anzi, lo state sfogliando in questo momento.

Nato in terra comasca, l’amore per la montagna lo porta in Valle d’Aosta dove, da quasi vent’anni, ha trasferito corpo e spirito. Maestro e istruttore nazionale di snowboard, coniuga la propria passione per il mondo della neve con un profondo amore per l’alpinismo, che lo ha spinto a esplorare innumerevoli angoli delle Alpi, in Italia, Francia e Svizzera. Grande amante delle parole, da anni si occupa di attività redazionali e di comunicazione, collaborando con testate giornalistiche del settore sportivo e partecipando a iniziative editoriali sempre legate al mondo della montagna. Qualcuno dice di lui che è come un viandante su un sentiero, costantemente alla ricerca della misteriosa saggezza che pervade la cultura alpina, di cui ama profondamente le radici, le tradizioni ma soprattutto le persone.

Paolo Recalcati Nato a Milano, con ascendenze meneghine e bergamasche (le montagne sono comunque nel Dna). Dopo una laurea in filosofia a Milano, per molti anni fa il copy-writer pubblicitario. Tre anni di esperienza lavorativa in una multinazionale della bellezza gli aprono orizzonti internazionali.

Affianca per una decade Gianluca Martinelli come organizzatore di eventi sportivi.

Grazie a una lunga consuetudine con poeti e musicisti, diventa in proprio produttore musicale, autore di testi per canzoni, organizzatore di concerti e spettacoli.

Sportivo poco praticante, ama le montagne come luoghi dello spirito, itinerari di trekking e mete di turismo eno-gastronomico.

Una pausa caffè, un pranzo di lavoro, o un aperitivo.

ella regione più piccola d’Italia si è più vicini al cielo. La Valle d’Aosta infatti vanta due primati: una superficie di soli 3.262 kmq e le montagne più alte e più belle d’Europa, i mitici 4 K: il Monte Bianco, il Monte Rosa, il Cervino e il Gran Paradiso. Questo palmarès si traduce in paesaggi alpini spettacolari di giorno, al tramonto e di notte, d’estate come d’inverno, e così unici che anche i più assidui frequentatori della Valle ne rimangono ogni volta affascinati. Oltre alla vista, in Valle d’Aosta, si nutrono tutti i sensi, dal gusto con

la cucina del territorio, all’olfatto con i profumi della flora alpina, al tatto, con un artigianato che usa con sapienza legno, ferro e tessuti.

La Valle d’Aosta un territorio magico

n paesaggio alpino può sembrare una cartolina, con le case in pietra dai tetti spioventi, i campanili sottili, e sullo sfondo, oltre alle montagne, un castello medioevale. In Valle d’Aosta questi elementi caratteristici si animano, cioè prendono vita, grazie alle persone che ci vivono e ci lavorano, ai turisti che la frequentano e a un fittissimo calendario di eventi che mette in circolo artigiani, tradizioni, relazioni, insomma tutto ciò che fa economia.

cantine, rilassarsi alle terme, fare un giro in elicottero, prendere il sole con vista sul Monte Bianco, gustare una specialità locale, partire per una scalata. È un percorso virtuoso: individuare i propri bisogni, scegliere l’opportunità migliore per soddisfarli, quindi godersi cieli, colori ed emozioni.

n alpine landscape may look like a postcard, with its stone houses with sloping roofs, slender steeples, and in the background, apart from the mountains, a medieval castle. In the Aosta Valley these

characteristic elements are animated, that is, they come to life, thanks to the people who live there and work there, the tourists who visit it and a full program of events that showcases artisans and traditions, in short everything that makes economy.

A little big paradise, where everyone can find his rhythm: skiing, dancing, visiting the cellars, relaxing at the spa, taking a helicopter ride, sunbathing with views of Mont Blanc, enjoying a local specialty and leaving for a climb. It’s a virtuous cycle: identifying the needs, choosing the best opportunity to meet them, then enjoying skies, colours and emotions.

Guglielmo Pramotton: raccontare scolpendo

U

no dei maestri dell’artigianato valdostano è un narratore capace di dar vita, attraverso le sue opere, alla cultura, alla spiritualità e alle tradizioni antiche quasi cento anni. Un viaggio a ritroso dove vengono intagliati nel legno di noce frati francescani incappucciati (presenti in Valle fino a metà del ‘900), contadini, pastori o guide alpine, uomini che hanno creato la storia di questa regione.

Numerose le sue mostre in passato; ora espone nel suo Atelier a Donnas e si possono trovare alcune delle sue opere più interessanti presso l’Hotel Duca d’Aosta nel capoluogo.

ne of the Aosta Valley artisan experts, is a storyteller capable of giving life, through his works, to the culture, the spirituality and to traditions that are almost one hundred years old. A journey back to where hooded Franciscan monks (who were present in the Valley until the middle of the 1900s), farmers, shepherds or mountain guides, men who created the history of this region, are carved in walnut. He has had numerous exhibitions in the past; now he exhibits in his workshop in Donnas and you can find some of his most interesting works at the Hotel Duca d'Aosta in the regional capital.

V Una magica prospettiva

Volare con l’elicottero, prendere la funivia, ma anche scalare le montagne: ci sono molti modi per ammirare dall’alto la Valle e provare quella sensazione di brivido e piacere che regala quella magica prospettiva.

Per fortuna esiste anche un’esperienza più accessibile ma non meno appagante; la Passerella Panoramica di Pré Saint Didier si raggiunge con una breve e facile camminata di 10 minuti lasciando l’auto nel parcheggio adiacente il Parco Avventura (sulla strada verso La Thuile). 160 metri a sbalzo sulla gola dell’Orrido con una vista quasi a 360 gradi sulla catena del Monte Bianco. Se poi si scende con lo sguardo tra le rocce si può vedere l’ingresso della grotta da dove sgorgano le sorgenti che alimentano lo stabilimento termale di Pré Saint Didier.

To fly by helicopter, to take the cable car, but also climbing mountains: there are many ways to admire the Valley from up high and experience the feeling of thrill and pleasure that this magical perspective gives. Fortunately, there is also a way which is more accessible but no less rewarding; the panoramic walkway of Pré Saint Didier which is reached by a short and easy walk of 10 minutes, leaving the car in the parking lot adjacent to the Adventure Park (on the way to La Thuile). 160 metres overhanging the Orrido gorge with a view of almost 360 degrees of the Mont Blanc chain.

And if you look down, between the rocks, you can see the entrance of the cave where the water that supplies the thermal spa of Pré Saint Didier comes from.

N D Gli zoccoli gioiello

Dipinti interamente a mano da Chicco Margaroli, le calzature Dzoyé, (in dialetto valdostano, gioia, gioco e gioiello), reinterpretano l’antica scarpa medioevale valdostana, la soque. Realizzate in legno e morbido suède, le scarpe sono preziosi pezzi unici: la destra è sempre diversa dalla sinistra, il fronte dal retro, così come ciascuna suola. Parte della produzione è dipinta liberamente dall’artista valdostana nello studio nel centro storico di Aosta, parte è realizzata su commissione, interpretando desideri e personalità del cliente.

Due consigli: chiedete sempre la scatola personalizzata a mano che fa da contenitore alle scarpe e fate tappa nello showroom milanese in via Morimondo 26 per ammirare le creazioni più suggestive, spesso esposte anche in gallerie d’arte e musei.

Painted entirely by hand by Chicco Margaroli, the Dzoyé footwear, (in Aosta Valley dialect: joy, play and jewel), reinterprets the ancient Aosta Valley medieval shoe, the Soque. Built of wood and soft suede, the shoes are precious unique pieces: the right is always different from the left, the front from the back, as well as each sole. Part of the production is painted freely by the Aosta Valley artist in her studio in the historic centre of Aosta, part is made on commission, interpreting the desires and personality of the client. Two tips: always ask for the box which is customised by hand and acts as a container for the shoes and make a stop at the Milan showroom in via Morimondo 26 to admire the most evocative creations, often exhibited in art galleries and museums.

Non chiamatela grolla. La coppa dell’amicizia, più bassa e larga, in legno di noce tornito e decorato, con coperchio e vari beccucci, è un oggetto che racconta una tradizione tipica della Valle d’Aosta.

Si usava nelle campagne, soprattutto in inverno, tra amici e parenti per bere insieme, à la ronde, una bevanda a base di caffè; il cosiddetto caffè alla valdostana, un mix corroborante di caffè, grappa e spezie. Ancor oggi, la coppa dell’amicizia è usata rispettando due semplici regole: va passata di mano in mano in senso orario, ripetendo anche più volte il giro, senza mai appoggiarla sulla tavola (porterebbe sfortuna). Attenzione poi a non bere mai dallo stesso beccuccio, proprio per rispettare quell’antico senso d’intima condivisione che esprime questo rito.

Do not call it grolla. The friendship cup, is lower and wider, in decorated walnut wood with a lid and various nozzles, it is an object that tells of a typical tradition of the Aosta Valley. It was used in the countryside, especially in winter, amongst friends and family to drink together, to pass round, a coffee-based beverage; the so-called Aosta Valley coffee, an invigorating mix of coffee, grappa and spices. Even today, the friendship cup is used respecting two simple rules: it is passed from hand to hand clockwise, even repeating the circle several times, never laying it on the table (it could bring bad luck). Be careful never to drink from the same spout, to respect that ancient sense of intimate sharing that expresses this ritual.

S Campanacci tra arte e musica

If the silence of the mountain has something magical and absolutely unusual for those who live in the cities, the sounds of the mountain may have a very special melody. Especially if it comes from the cowbells made by Mauro Savin, accordionist and blacksmith for generations, in his laboratory in Challand-Saint-Victor. These objects have a unique feature: they are musically tuned, in fact, Mauro Savin works with a hammer and files the mouth of the bell with the aid of a tuning fork. Real objects of art are born, such as the "Coquette", like a handbag from the 40s and the "Ventre potente" with a more serious sound, to name only two of 900 models that have left the Aosta Valley lab. And that's not all: to complete his creations, Mauro Savin also makes the collars to support the bells, in leather or in folded and sculpted wood.

Se il silenzio della montagna ha qualcosa di magico e assolutamente insolito per chi vive in città, i suoni della montagna possono avere una melodia molto speciale.

Soprattutto se proviene dai campanacci realizzati da Mauro Savin, fisarmonicista e fabbro da generazioni, nel suo laboratorio di Challand-Saint-Victor. Questi oggetti hanno una caratteristica unica: sono intonati musicalmente, infatti, Mauro Savin lavora con il martello e lima la bocca del campanaccio aiutandosi con il diapason. Nascono dei veri e propri oggetti d’arte, come la “Coquette”, simile a una borsetta Anni 40 e la “Ventre potente” con suono più grave, solo per citare due tra 900 modelli usciti dal laboratorio valdostano. E non è tutto: per completare le sue creazioni, Mauro Savin realizza anche i collari per sostenere i campanacci, in cuoio o in legno piegato e scolpito.

Il vino valdostano ha una storia antica, che merita di essere raccontata: furono i Salassi i primi che in Valle d’Aosta praticarono la coltura della vite, agevolati anche dal fatto che un tempo le condizioni climatiche erano migliori; seguirono i Romani e gli abati dei monasteri. I religiosi hanno portato avanti la tradizione vitivinicola nei secoli, e nel 1550 Leandro Alberti loda i vini locali nella sua “Descrittione di tutta Italia”. Durante la seconda metà dell’800 la fillossera - un insetto parassita che ha distrutto l’85% del patrimonio viticolo europeo - sterminò anche buona parte dei vigneti autoctoni valdostani, ma col nuovo secolo nuova vita per la vite! Dai primi del ‘900 è stata nuovamente coltivata in Valle, soprattutto lungo il versante sinistro della Dora Baltea, che si allarga su terreni aperti e soleggiati di natura sabbioso-argillosa; sono ideali per la coltivazione dei numerosi vitigni, che sono per il 15% bianchi e per il restante 85% rossi, su una superficie di oltre 500 ettari di terreno vitato.

Dal 1985 i vini valdostani sono riuniti nella DOC Valle d’Aosta, che comprende numerose sottodenominazioni (sottozone e vitigni).

A

osta Valley wine has a long history which deserves to be told: the Salassi were the first in the Aosta Valley to cultivate vines, facilitated by the fact that in the past the climatic conditions were better; they were followed by the Romans and the abbots from the monasteries.

The religious have carried out the tradition of winemaking for centuries and in 1550 Leandro Alberti praised the local wines in his “Descrittione di tutta Italia”. During the second half of the 1800s phylloxera - a parasitic insect which destroyed 85% of Europe’s wine assets - wiped out a large part of the native Aosta Valley vineyards, but with the new century new life came for the vine!

From the early 1900s the Valley was cultivated again, especially along the left side of the Dora Baltea, which expands on open land, is sunny and has sandy-clayey soil; it is ideal for the cultivation of many varieties which are 15% white and the remaining 85% red, on an area of over 500 hectares of land planted with vines. Since 1985 the Aosta Valley wines have come together in DOC Valle d’Aosta, which is comprised of various sub-denominations (sub-areas and varieties).

Quali sono, oggi, questi vitigni? A Sud, all’ingresso della Vallée, il vitigno più diffuso e coltivato è il Nebbiolo, qui chiamato “Picotendro”, che in Italia cresce solo in ben delimitate aree piemontesi, lombarde e valdostane. Le prime notizie di questo vitigno risalgono al 1300, e la leggenda narra che il suo nome derivi da “nobile”, perché da questo vitigno si ottengono vini “generosi, gagliardi e dolci”, o da “nebbia”, in quanto l’uva matura in ottobre, spesso in concomitanza con le prime nebbie autunnali. I vini prodotti col Nebbiolo sono caratterizzati da un bel colore rosso rubino che tende a sfumare al granato, a seconda del periodo di affinamento.

Today, what are these vines? To the south, at the entrance of the Valley, the most common and cultivated vine is Nebbiolo, which is called “Picotendro” here, and which in Italy only grows in some areas of Piedmont, Lombardy and the Aosta Valley. The first news of this vine comes from 1300, and legend says that its name is derived from “noble” because this vine produces wine which is “generous, strong and sweet” or from “fog” due to the fact it matures in October coinciding with the first autumnal fogs. The wines produced from Nebbiolo are characterised by their lovely ruby red colour which tends to soften depending on the aging period.

Risalendo la vallata si scoprono i vitigni originari, come la Petite Arvine (che tuttavia alcuni ritengono importato in Valle dai canonici), da cui si produce l’omonimo vino bianco giallo paglierino con sfumature oro antico, fresco, elegante e fruttato; il Petit Rouge, che è alla base del Torrette, dell’Enfer d’Arvier e dello Chambave rosso, vini rossi freschi e dotati di buona struttura; il Fumin, un vitigno riscoperto ultimamente; il Cornalin, da cui si ottiene un vino rosso rubino, sapido e caratteristico; il Mayolet, un vitigno precoce a bacca rossa da sempre presente in Valle ma riscoperto solo negli ultimi anni; la Prëmetta - detto anche Prié Rouge -, un vecchio vitigno autoctono diffuso soprattutto intorno ad Aosta; il Vien de Nus, che origina un vino

rosso violaceo, vinoso e piacevole: si racconta che fosse già apprezzato da Ponzio Pilato. Tra i vitigni internazionali, da ricordare lo Chardonnay, da cui si ottengono vini con buona predisposizione all’invecchiamento in barrique; il Gamay, che è stato introdotto in Valle d’Aosta dalla Francia per la precocità e per la notevole resistenza; il Gewürztraminer, un vitigno aromatico diffuso solo nelle regioni settentrionali perché non gradisce i climi caldi; il Moscato Bianco, che ha antichissime origini greche e orientali ed è diffuso soprattutto in Piemonte; il Syrah, introdotto in Italia dalla Francia alla fine del 1800, che si ritiene provenga dall’Iran per la consonanza col nome della città di Shiraz; il Merlot, originario del Medoc francese e coltivato in Italia dalla seconda metà dell’800; il Müller, ottenuto da un incrocio tra Riesling renano e Madeleine Royal dall’omonimo Professore svizzero, introdotto in Italia nel 1939; il Pinot gris (che a

Nus prende il nome di Malvoisie di Nus), originario della Borgogna e importato in Italia intorno al 1820, e il Pinot noir, un vitigno gallo-romano che trova l’habitat migliore a latitudini elevate: il nome “Pinot” è probabilmente dovuto alla caratteristica forma a pigna del grappolo maturo. Arrivati in Valdigne, ai piedi di Sua Maestà il Monte Bianco nei comuni di Morgex e di La Salle si coltiva il Prié Blanc, un vitigno autoctono sopravvissuto alla fillossera le cui prime notizie documentate risalgono al 1838; cresce a oltre 1000 metri d’altezza, ai limiti della sopravvivenza della vite.

Da queste uve si producono vini bianchi secchi, spumanti e “speciali”, cioè vendemmiati di notte nei mesi invernali, a temperature molto rigide, quando gli acini sono ancora gelati.

Gli abbinamenti La bassa produzione dei vini valdostani è dovuta alla mancanza di terreni adatti alla coltivazione della vite, e proprio per questo sono ancora così poco diffusi e conosciuti: vale la pena di scoprirli e di assaggiarli, in abbinamento alla gastronomia tipica regionale, rustica e generosa, che si distingue per originali influssi di tipo franco-provenzale e di ceppo tedesco nella valle del Lys. La “cena delle meraviglie”? Si apre con uno spumante da degustare accompagnato con formaggi freschi, salumi locali e antipasti di verdure; prosegue con un vino bianco che ben si armonizza con la zuppa valpellinentze o con la fonduta; continua con un vino rosso da abbinare a polenta con selvaggina, funghi o carbonade, la tradizionale carne cotta nel vino; si chiude in dolcezza con un vino passito, tegole - biscotti rotondi a base di mandorle pasticceria secca e dolci tipici. D’obbligo infine un assaggio di génépy, una specialità ottenuta con un’infusione idroalcolica dei fiori dell’Artemisia glacialis, e di coppa dell’amicizia, una ricetta segreta a base di caffè e liquori.

Dove assaggiarli?

La maggior parte dei vini valdostani è consumata sul territorio, e si possono degustare nelle Cantine e in tutti i ristoranti della Vallée; per gli appassionati, da segnalare anche la “Strada dei Vini della Valle d’Aosta”, un itinerario che consente di scoprire questi “eroici” vini delle Alpi. oing up the Valley you discover original vines, such as the Petite Arvine (which, some believe was imported into the Valley by the canons), from which an eponymous pale yellow white wine is produced with antique gold shades, fresh, elegant and fruity; Petit Rouge, which is at the base of the Torrette, Enfer d’Arvier and the red Chambave, fresh red wines with good structure; Fumin, a wine that was rediscovered recently; Cornalin, from which you get a ruby red wine, sapid and characteristic; Mayolet, an early red grape variety that has always been present in the Valley, but was only rediscovered in recent years; the Prëmetta - also called Prié Rouge -, an old native vine especially common around Aosta; Vien de Nus, which gives rise to a purplish red wine, vinous and pleasant: it is said that it was appreciated

by Pontius Pilate. Among the international varieties, we must remember Chardonnay, used to produce wines with good predisposition to aging in barrels; Gamay, which was introduced in the Aosta Valley from France for its precociousness and high resistance; Gewürztraminer, an aromatic grape variety widespread only in the northern regions because it does not like warm climates; Moscato Bianco, which has ancient Greek and oriental origins that is particularly common in Piedmont; Syrah, introduced into Italy from France at the end of 1800, and which is believed to come from Iran for consonance with the name of the city of Shiraz; Merlot, a native of the French Medoc and cultivated in Italy since the second half of the 1800s; Müller, obtained from a cross between Riesling and Madeleine Royal by the eponymous Swiss professor, introduced in Italy in 1939; Pinot gris (which in Nus takes the name of Malvoisie of Nus), a native of Burgundy and imported into Italy around 1820, and the Pinot noir, a Gallo-Roman vine that has its best habitat in high latitudes: the name “Pinot” is probably due to the characteristic cone shape of the ripe bunch.

Arriving in Valdgine, at the foot of Mont Blanc, in the municipalities of Morgex and La Salle, the Prié Blanc is cultivated, a local vine that survived phylloxera and whose first documentation dates back to 1838; it grows above 1000 metres, at the limit of survival for the vines. From these grapes, are produced dry white wine, spumantes and “specials” that are harvested in the winter months at very low temperatures when the grapes are still frozen.

Pairings The low production of Aosta Valley wines is due to the lack of land suitable for grape growing, and that's why they are still so unknown and not widespread: it’s worthwhile discovering and tasting them, and matching them with the typical regional cuisine, rustic and generous, which is known by original influences like French-Provencal and Lys valley.

The “Wonderland dinner”?, opens with a sparkling wine to be tasted accompanied with fresh cheeses, local salamis and vegetable appetizers; it continues with a white wine that blends in well with a valpellinentze soup or with fondue; it continues with a red wine to match with polenta with wild game, mushrooms or “carbonade”, the traditional meat cooked in wine; and ends on a sweet note with a sweet wine, tegole - round biscuits made with almonds - pastries and typical sweets. Finally, a must, is a taste of génépy a specialty obtained with a water-alcohol infusion of the flowers of Artemisia glacialis, and a friendship cup, a secret recipe based on coffee and liqueurs.

Where to taste them?

Most of the Aosta Valley wines are consumed on the territory, and can be tasted in wine cellars and all of the restaurants in the Valley; enthusiasts, take note of the “Strada dei Vini della Valle d’Aosta”, an itinerary that allows you to discover these “heroic” wines of the Alps. Le cantine più affermate, e bravissimi nuovi produttori, offrono con successo al mercato vini di estrema qualità e unicità, che possono essere tranquillamente equiparati ai migliori vini di altri territori. Il passo successivo, a mio parere, è di non fermarsi qui ma di prendere atto di questi valori e di studiare opportune strategie di marketing, di comunicazione e di distribuzione che riconoscano a queste cantine, a questi vini e a questi produttori il successo che meritano”.

Sono tre le principali zone vitivinicole della Valle: bassa, media e alta. Ognuna con sue caratteristiche e sue tradizioni

Forte di Bard - Il Nebbiolo Siamo all’ingresso della Vallée, ai piedi del Forte di Bard: ieri complesso fortificato risalente all’Alto Medioevo - appartenuto ai Signori di Bard e ai Savoia -, oggi fortezza completamente restaurata che racchiude il celebre Museo delle Alpi. Questa zona ha un’antichissima tradizione viticola, nonostante la forte pendenza delle montagne; qui da sempre si coltiva il Nebbiolo, che in Valle è chiamato “Picotendro”. Le prime notizie di questo vitigno risalgono al 1300, e secondo alcune leggende il nome deriverebbe da “nebbia”, mentre un’altra versione farebbe derivare il nome da “nobile”, poiché da queste viti si ottiene un vino importante e austero. Il Nebbiolo si presenta rosso rubino tendente al granato, con sfumature aranciate; il profumo è intenso ed elegante, speziato ed etereo; il sapore è pieno, caldo, tannico e di grande persistenza. Da gustare con lo stufato al vino rosso.

Castello di Aymavilles - Lo Chardonnay Risalendo per la Vallée, subito dopo Aosta e all’imbocco della strada che conduce verso il villaggio di Cogne si scopre il Castello di Aymavilles, facilmente riconoscibile per le sue 4 torri e per la sua struttura elegante. Tutt’intorno si coltivano i vigneti dello Chardonnay, un vitigno internazionale che in Italia è diffuso soprattutto nelle regioni settentrionali. In Francia è invece coltivato nella

Champagne e in Borgogna, dove già all’inizio del 1900 i viticoltori si accordarono per riconoscerlo come Chardonnay e non come Pinot, con cui un tempo era erroneamente scambiato. Da questo vitigno si produce un vino giallo paglierino tendente al dorato, con profumo fruttato, molto intenso e fine; al gusto esprime un buon equilibrio tra freschezza e morbidezza e si presta bene all’affinamento in barrique. Un abbinamento da provare? Ravioli ai porcini saltati al burro.

Castello di Avise - Il Petit rouge Proseguendo lungo la SS26 che porta verso il Monte Bianco e verso il passo del Piccolo San Bernardo, arrivando ad Avise sulla destra si scorge un fabbricato di 3 piani, con una torre quadrata: si tratta del Castello di Avise, costruito verso la fine del XV secolo da Bonifacio o da Rodolfo d’Avise.

E ai suoi piedi si scatena… l’inferno! Esatto, perché qui le vigne si trovano in un anfiteatro naturale con esposizione a sud e il clima è caldissimo, proprio da inferno, nonostante siamo a 800 metri d’altezza. Tra i vitigni autoctoni si coltiva il Petit rouge, che tuttavia alcuni ritengono originario della Borgogna. I vini che si producono da queste vigne si riconoscono grazie a un rosso rubino con riflessi ramati e a un sensuale aroma di frutti di bosco maturi e note speziate; in bocca sono di buona struttura, equilibrati e armonici e hanno una buona predisposizione all’invecchiamento.

Ottimi con un piatto di agnolotti al ragù.

Forte di Bard - Nebbiolo We are at the entrance of the Valley, at the foot of the Fort of Bard: once a fortified complex dating from the early Middle Ages - which belonged to the Lords of Bard and the Savoia -, now a fully restored fortress that encloses the famous Museum of the Alps.

This area has an ancient wine-growing tradition, despite the steep slopes of the mountains; here Nebbiolo has always been grown, known in the Valley as “Picotendro”. The first news of this vine date back to 1300, and according to some legends, the

name derives from “fog”, while another version claims the name comes from “noble” because from these vines you get a very important and austere wine.

Nebbiolo is ruby red, tending to garnet, with orange reflections; the scent is intense and elegant, spicy and ethereal; the flavour is full, warm, tannic and very persistent. To be enjoyed with a red wine stew.

Aymavilles castle - Chardonnay Going up the Valley, just after Aosta and at the entrance of the road leading to the village of Cogne you discover the Aymavilles Castle, easily recognizable by its four towers and its elegant structure. All around Chardonnay vines are cultivated, an international vine that in Italy is particularly widespread in northern regions. France has instead grown it in the Champagne and Burgundy areas, where at the beginning of 1900 the growers agreed to recognize them as Chardonnay and not as Pinot, as they were once mistaken for.

This vine produces a light yellow to golden wine, with a fruity aroma, very intense and fine; its taste expresses a good balance between freshness and softness, and is well suited for aging in barrels.

Something to pair with it? Ravioli with porcini mushrooms sautéed in butter.

Avise castle - The Petit rouge Continuing along the SS26 that leads to Mont Blanc and to the Piccolo San Bernardo pass, when you get to Avise on the right you can see a 3-storey building, with a square tower: it is the Avise Castle, built in the late fifteenth century by Bonifacio or by Rodolfo d’Avise. And at its feet ... all hell breaks loose!

That’s right, because here the vines are located in a natural south facing amphitheatre and the weather is very hot, just like hell, even though we are 800 metres high. Among the indigenous grapes grown is Petit rouge, which some believe native of Burgundy. The wines produced from these vineyards are recognizable by a ruby red colour with copper reflexes and by a sensual aroma of ripe berries and spicy woods; in the mouth it is well structured, balanced and harmonious and has a good predisposition to aging. Excellent with a plate of agnolotti with bolognese sauce.

The Fumin DOC a cultural, historical and geographical asset C’era una volta la Famiglia Charrère, che si stabilì ad Aymavilles dall’Alta Savoia intorno al 1750 e che iniziò a produrre vino già all’inizio del 1800. Verso il 1950 Antoine Charrère si specializzò in viticoltura e fu il primo, negli anni ‘70, a vinificare il Fumin in purezza. Forse non tutti sanno che il Fumin era già stato citato da Lorenzo Francesco Gatta nel suo “Saggio intorno alle viti e ai vini della Provincia d’Ivrea e della Valle d’Aosta” nel 1833. “Pianta robusta, feconda, di lunga età, resistente al freddo […]; vino carico, assai spiritoso, molto durevole”.

Ampelograficamente si tratta di una varietà ancestrale, legata alla Valle d’Aosta fin dai tempi dei Salassi: parlando di Fumin si supera il concetto di autoctono, perché recenti studi hanno dimostrato che il DNA del vitigno non ha alcuna parentela con altri vitigni internazionali. Questo vino rappresenta quindi un patrimonio culturale, storico e geografico, una vera ricchezza per il territorio alpino, ed è stato grazie a Costantino, il figlio di Antoine, se nel 1993 - ben 24 anni fa! - Les Crêtes è stata la prima azienda valdostana a produrre il Fumin DOC. Per mantenerne il carattere originario, il Fumin è affinato in grandi botti di legno da 30 ettolitri: ne risulta un vino meno speziato ma più fruttato, con sentori di sottobosco, mirtillo in primis, e di ginepro, che si conserva a lungo e nel tempo. Oggi a guidare Les Crêtes, un’azienda legata alle tradizioni ma anche altamente innovativa, sono Costantino con la moglie Imelda e le figlie Elena ed Eleonora.

nce upon a time there was the Charrère family, who settled in Aymavilles from the Upper Savoy in 1750 and who began producing wine at the beginning of 1800. In 1950 Antoine Charrère specialized in viticulture and was the first in 70 years, to use Fumin grapes for single variety winemaking. Maybe not everyone knows that the Fumin had already been mentioned by Lorenzo Francesco Gatta in his “Tales of the vines and wines from the province of Ivrea and the Aosta Valley” in 1833. “A strong plant, fruitful, long age, cold-resistant [...]; a heavy wine, very fun, very durable.” A vine of an ancestral variety, linked to the Aosta Valley since the time of the Salassi: talking about Fumin is beyond the concept of indigenous, because recent studies have shown that the DNA of the grape has no kinship with other international varieties. This wine represents a cultural, historical and geographical asset, a real treasure for the Alpine region, and it was thanks to Constantino, the son of Antoine, that in 1993 - 24 years ago- Les Crêtes was the first Aosta Valley company to produce the Fumin DOC. To maintain the original character, Fumin is aged in large wooden barrels of 30 hectolitres: the result is a less spicy but more fruity wine, with hints of undergrowth, blueberry first and foremost, and juniper, which lasts for a long time. Today managing Les Crêtes, a company linked to tradition but one that is also highly innovative, are Constantino and his wife Imelda with their daughters Elena and Eleonora.

Maison Vigneronne Grosjean Frères

Grandi vini di montagna

Ben 15 gli ettari coltivati tra Quart e Saint Christophe; circa 130.000 le bottiglie destinate al mercato valdostano, italiano ed estero (Stati Uniti in primis); 5 i fratelli, Vincent, Piergiorgio, Marco, Fernando ed Eraldo, i Grosjean che dall’inizio degli anni ‘70 portano avanti - con successo - questa storica azienda vitivinicola valdostana. Questi sono i numeri… ma è la storia della famiglia che produce questi grandi vini di montagna che merita di essere raccontata, dal XVIII secolo ai giorni nostri. Alla fine del 1700 i nonni materni dei fratelli Grosjean scesero verso Aosta da Fornet, un piccolo villaggio della Valgrisenche, per rifornirsi di castagne e di vino; il vino allora non era solo simbolo di ospitalità, ma era anche una medicina e un nutrimento nobile. Così nel corso degli anni le donne della famiglia (era solo la nonna a detenere il possesso delle chiavi della cantina!) decisero di dedicarsi alla coltura della vite per autoconsumo. Si trattava di tempi difficili per i vitigni valdostani, penalizzati prima da una forte glaciazione, che portò alla chiusura dei colli verso Francia e Svizzera, isolando la Vallée; poi nel 1885 dall’arrivo della ferrovia e dei vini del Sud - meno cari e meno noti, quindi “di moda” - ; infine dall’attacco della fillossera, che in Valle risparmiò solo i vigneti di Prié Blanc coltivati a Morgex, e dagli anni delle due Guerre.

Finalmente arrivò il 1968, l’anno della svolta per i vini valdostani: l’allora Assessore all’Industria e al Commercio Albaney organizzò la prima “Exposition des Vins du Val d’Aosta” e convinse, l’anno successivo, “papà” Dauphin Grosjean a imbottigliare il proprio vino e a presentarlo alla Fiera.

In seguito, grazie ai preziosi consigli del Canonico Vaudan e alla passione del figlio maggiore Vincent, l’azienda di famiglia passò da 3000 mq di vigneto a 10 ettari; i vitigni coltivati erano il Petit Rouge, il Gamay, il Pinot noir e la Petite Arvine.

Merito del terroir e, soprattutto, di un certo Dauphin The history of the Grosjean family dates back to 1700 and comes with success, up to the present day, thanks to five brothers at the forefront of producing highly prestigious labels, thanks to the territory, and above all, thanks to a certain Dauphin Oggi si coltivano anche vitigni autoctoni come il Fumin, il Cornalin, il Mayolet, la Prëmetta e il Muscat, oltre a vitigni internazionali come il Traminer, lo Chardonnay e il Syrah.

hectares cultivated between Quart and Saint Christophe; about 130,000 bottles intended for the Aosta Valley, Italian and foreign (US in particular) market; 5 brothers, Vincent, Piergiorgio, Marco, Fernando and Eraldo, the Grosjeans that from the beginning of the 70's have carried on - with success - this historic Aosta Valley wine company. These are the numbers, but it is the story of the family that produces these great mountain wines that deserves to be told, from the eighteenth century to the present. At the end of the 1700s the maternal grandparents of the Grosjean brothers went down to Aosta from Fornet, a small village of Valgrisenche, to

stock up on chestnuts and wine; wine then was not only a symbol of hospitality, but it was also a medicine and a noble nutriment. So, over the years the women of the family (it was only the grandmother who held possession of the keys of the cellar!) decided to devote themselves to the cultivation of grapes for their own consumption.

These were difficult times for the Aosta Valley grapes, affected first by a strong glaciation, which led to the closure of the hills towards France and Switzerland isolating the Valley; then in 1885 by the arrival of the railway and wines from the south - cheaper and less well-known, so “fashionable” - ; finally, from the attack of phylloxera, which in the the Valley spared only the vineyards of Prié Blanc grown in Morgex, and the years of the two wars. Finally came 1968, the year of change for Aosta Valley wine: the then regional Minister for Industry and Commerce Albaney organised the 1st “Exposition des Vins du Val d'Aosta” and persuaded, “dad” Dauphin Grosjean the following year to bottle their own wine and submit it to the fair. Later, thanks to the valuable advice of Canon Vaudan and the passion of his eldest son Vincent, the family business passed from 3000 square metres of vineyards to 10 hectares; the vines cultivated were Petit Rouge, Gamay, Pinot Noir and Petite Arvine. Today, native vines such as Fumin, Cornalin, Mayolet, Prëmetta and Muscat are cultivated, as well as international varieties such as Traminer, Chardonnay and Syrah.

nche ogni etichetta ha una storia: ad esempio il Torrette Supérieur, il Cornalin, il Fumin e la Petite Arvine sono coltivati nelle Vigne Rovettaz, un sito eroico di antica tradizione vinicola a 550 mt, in fortissima pendenza, esposto a sud in un clima particolarmente asciutto e ventilato, con ottima luminosità e grande escursione termica in fase di maturazione delle uve. Apparteneva a un appassionato vignaiolo della zona conosciuto come Tinì, che - arrivato a 92 anni! - decise di affittarlo ai Grosjean affinché continuassero a coltivarlo.

Il Pinot noir viene invece coltivato nelle Vigne Tzeriat, un anfiteatro a 800 mt protetto dalle correnti fredde, un “cru” già citato in documenti risalenti al 1838; mentre il Traminer aromatico si trova nelle Vigne Creton (cucuzzolo). Anche il “Flétri au Vent” è coltivato nelle Vigne Creton: si tratta di un vino ottenuto da uve stramature di Moscato bianco e di Traminer aromatico, che viene fatto appassire sui graticci prima della vinificazione nei primi giorni di dicembre. Tutte le vendemmie sono fatte a mano in cassette durante la seconda settimana di settembre, e nei vini vengono utilizzati solo lieviti autoctoni. Ma qual è il segreto dei vini dei Frères Grosjean? Certamente il terroir, perché

le vigne sono ben esposte e sane, vengono concimate con prodotti rigorosamente organici e dal 2015 hanno ricevuto la certificazione bio; ma sono soprattutto il rispetto per la flora e per la fauna di queste terre e la passione che la famiglia Grosjean trasmette anche nelle proprie bottiglie a fare la differenza, perché “il rispetto della natura riporta la vita nel vigneto e la salute nel bicchiere”.

ven each label has a story: for example, Torrette Supérieur, Cornalin, Fumin and Petite Arvine are grown in Vigne Rovettaz, a heroic site of ancient wine tradition at 550m above sea level, on a steep slope, facing south in a climate that is particularly dry and ventilated, with excellent brightness and a large temperature range during the ripening of the grapes. It belonged to a passionate winemaker of the area known as Tinì, who - reached 92 years old! - he decided to rent it to Grosjean so that they continued to grow it. Pinot noir is cultivated in Tzeriat Vigne however, in an amphitheatre at 800m protected from cold winds, a “cru” already mentioned in documents dating back to 1838; while the aromatic Traminer is cultivated in Vigne Creton (at the summit). Even the “Flétri au Vent” is grown in Vigne Creton: it is a wine made from overripe

white Muscat grapes and from aromatic Traminer, which is left to dry on racks before processing in the first days of December. All harvests are done by hand, in crates, during the second week of September, and only natural yeasts are used in the wines. But what is the secret of the Grosjean brothers’ wines? Certainly, the territory, because the vineyards are well exposed and healthy, and are fertilized using strictly organic fertilizers and in 2015 received the organic certification; but above all respect for the flora and fauna of this land and the passion that the family Grosjean also transmits in their bottles to make a difference, because “respect for nature brings life back to the vineyard and health in the glass.”

uesta rinomata azienda agricola è una piccola realtà privata di recente fondazione che, in sole pochissime vendemmie, ha saputo distinguersi per la grande autenticità nel realizzare i propri prodotti. Il punto forte è il legame con il territorio e un’attenzione particolare alla salvaguardia del proprio ambiente; la cantina ad oggi è completamente ecosostenibile grazie al supporto di pannelli fotovoltaici. Nell’anno 2001, la famiglia Rosset decise di coltivare a vigna i terreni di proprietà in località Senin di Saint-Christophe; l’appezzamento di circa tre ettari vide, come prima messa a dimora, le barbatelle internazionali di Chardonnay, seguite di lì a poco dal Syrah e l’autoctono Cornalin; nel recente ampliamento della gamma, oltre al Muscat de Chambave, sono state impiantate nuove barbatelle autoctone di Petit Rouge, selezionate con estrema attenzione da Matteo Moretto, agronomo ed enologo dell’azienda. L’obiettivo è la continua ricerca nella crescita qualitativa e naturale dei prodotti, cercando di preservare e valorizzare sempre più questo particolare terroir che ad oggi è l’unico patrimonio che distingue i vini valdostani a livello internazionale.

Nicola Rosset prosegue così la scelta nell’unire la ricerca per i vitigni autoctoni ad un’interpretazione regionale di preziosi vitigni internazionali. L’azienda produce annualmente circa 25.000 bottiglie, è aperta al pubblico e organizza in varie occasioni degustazioni e incontri con gli appassionati.

Rosset Terroir

T

his well-known agricultural business is a small private reality that has recently established and has, in only very few harvests, been able to stand out for the great authenticity in achieving its products. The strong point is the link with the land and special attention to the protection of its environment; the winery today is completely eco-sustainable thanks to the support of photovoltaic panels. In 2001, the Rosset family decided to cultivate vines on their land in Senin at Saint-Christophe.

The plot was of about three hectares and the first planting was of international cuttings of Chardonnay, followed shortly thereafter by Syrah and the native Cornalin; in the recent expansion of the range, in addition to the Muscat de Chambave, new cuttings of native Petit Rouge were planted, selected carefully

by Matteo Moretto, the company’s agronomist and oenologist. The goal is the continuous research in the qualitative and natural growth of the products, trying to preserve and enhance even more this particular land which today is the only heritage that distinguishes the Aosta Valley wines at an international level.

Nicola Rosset continues with the choice of joining the search for indigenous grapes to a regional interpretation of valuable international vines.

The company annually produces about 25,000 bottles, is open to the public and organises a number of tastings and meetings with enthusiasts.

L I fratelli Cunéaz dedicano tutto il loro tempo libero alla cura minuziosa delle loro vigne e ad affinare il loro vino in botti in legno, ottimamente conservate nella loro piccola ma ospitale cantina di Gressan (AO).

Tra queste mura è facile sentirsi a proprio agio e gustare con calma un calice del vino della Cave Gargantua.

The Cunéaz brothers devote all their free time to the meticulous care of their vineyards and to refining their wine in wooden barrels, well preserved in their small but hospitable wine cellar in Gressan (AO). aurent Cunéaz, titolare con fratello André della Cave Gargantua, ritiene “l’enologia una complicatissima forma d’arte, una continua ricerca della perfezione”, e non possiamo dargli torto perché per fare “il lavoro più bello del mondo” bisogna essere sì fantasiosi, ma sopratutto preparati e rigorosi. Ogni vino prodotto da Laurent rappresenta un obiettivo, che si può capire fino in fondo solo narrando la storia di questa Cantina. La passione per il vino è nata grazie al lavoro di nonno Pierino, che per tutta la sua vita ha lottato per valorizzare le terre che oggi ospitano queste vigne. Il recupero di vitigni autoctoni molto antichi è iniziato dal comune di Gressan: Petit Rouge, Cornalin, Fumin, Vien de Nus, Mayolet, e varietà internazionali, oltre che di influenza piemontese, come Freisa, Nebbiolo, Gamay, Pinot noir e Barbera. Oltre ai terreni di Gressan, negli anni Laurent ha anche scoperto dei vigneti a Charvensod, in regione Ampaillan, dove sono stati piantati del Merlot e del Fumin.

Infine, l’ultima frontiera è stata una vigna tra Morgex e La Salle, dove si coltiva il celebre Prié Blanc. Da queste vigne coltivate con amore e attenzione sono nate delle bottiglie tutte da scoprire, il Gargantua in primis, dedicato a nonno Pierino e ottenuto solo da vecchi vitigni; ma anche l’ultimo nato, il Daphne, che deve il suo nome a la Daphne Alpina, una pianta rarissima e velenosa che cresce sulla morena di Gressan. Si tratta di uno Chardonnay ispido e velenoso? Per niente, è invece un vino ispirato ai grandi bianchi affinati in legno del mondo, raro, unico, morbido e avvolgente.

Every wine produced by Laurent represents a goal, that you can fully understand just by telling the story of this wine cellar. l gusto classico è lo yogurt alla vaniglia; in primavera aggiungiamo quello al limone, in autunno quello alla mela verde. Usiamo solo il nostro latte che subisce una fermentazione lenta che dura ben 20 ore, che regala allo yogurt una golosa cremosità”. E che dire dei grissini al cioccolato che vanno a ruba tra gli ospiti delle Terme? “Ho inventato questo prodotto per caso, dieci anni fa”, racconta Fabrizio Rosset, socio amministratore dello storico panificio Bovio di Aosta; “ ho aggiunto ai nostri tradizionali grissini stirati a mano, cotti in un forno largo 12 metri, delle gocce di cioccolato riuscendo a non farle sciogliere durante la cottura”. Dalle Terme di Pré all’hotel QC Termemontebianco la distanza è breve, in tutti i sensi: tre chilometri verso Courmayeur e ci si trova in località Pallesieux, per un soggiorno con vista sul Monte Bianco.

Un soggiorno che offre camere dal comfort ricercato, la possibilità di concedersi trattamenti all’Alpine spa interna, colazioni spettacolari e cene a lume di candela nel ristorante (Alpine spa e ristorante sono aperti anche agli ospiti di passaggio che non si trattengono per la notte).

L’allestimento delle colazioni comprende sei tipologie di latte fresco e autoctono, quattro tipi di burro, salumi, cibi biologici e gluten free e poi torte, marmellate e miele che hanno un sapore speciale.

Quale modo migliore per concludere una giornata dedicata al benessere e al piacere in quota?

Sicuramente con uno sguardo al Monte Bianco che, con la sua maestosità e la sua sacralità, ci fa sentire parte di un’anima mundi più grande. Il centro di Aosta ricalca l’antica città romana di Augusta Praetoria Salassorum, fondata da Ottaviano Augusto nel 25 a.C. Ancora oggi le vie principali coincidono con gli antichi Kardo e Decumanus Maximi e il cuore più antico della città è delimitato da una cinta muraria di oltre 2000 anni. Dal monumentale Arco d’Augusto parte una lunga via pedonale che, dopo aver attraversato la grandiosa Porta Praetoria, originario ingresso principale sul lato est della città romana, arriva in Piazza della Repubblica, nota anche come “Piazza della Lupa” grazie al monumento di epoca fascista che la caratterizza. Where?

The heart of the Valley? Aosta, of course! When you speak about the region many people think immediately of the side valleys and the most famous ski resorts, but its real soul is hidden in this elegant and mysterious city, that is waiting to be discovered.

The centre of Aosta follows the ancient Roman city of Augusta Praetoria Salassorum, founded by Ottaviano Augustus in 25 B.C. Even today the main streets coincide with the ancient Kardo and Decumanus Maximi and the ancient heart of the city is bordered by a wall that is more than 2000 years old. From the monumental Arco d’Augustus a long pedestrian street starts which, after crossing the magnificent Porta Praetoria, the original main entrance on the east side of the Roman city, arrives at the Piazza della Repubblica, also known as “Piazza della Lupa” thanks to the monument from fascist times that characterises it. How? Aosta can be reached via the A5 Mont Blanc motorway, the SS 26 of the Piccolo San Bernardo from France or the SS 27 Gran San Bernardo from Switzerland. Besides the railway, there is also a bus service that can be found on the site www.savda.it

When?

It seems obvious to say that Aosta is open all year? Yet it is a city that is alive and open summer/winter, taking into account the climatic variations: the summer is usually warm but windy while the winter is harsh and damp.

Già il mattino la città si sveglia presto, i bar sono aperti per una colazione corroborante e c’è veramente l’imbarazzo della scelta! Proprio sulla via centrale si affaccia Mafrica, moderno bar-pasticceria minimal ma molto curato: qui ci si ferma volentieri per una ricca colazione con pasticceria di qualità - brioche, cheese-cake, torte e mignon - da accompagnare con espressi e cappuccini aromatici.

Pausa pranzo gustosa all’osteria Da Nando, dove assaggiare genuini piatti del territorio realizzati solo con ingredienti di qualità e possibilmente a km 0: da provare la “loro” Fonduta alla Valdostana, la Polenta della casa, la tipica Bourguignonne o la Bagna cauda piemontese, oltre a un menu che varia ogni 3 mesi seguendo la stagionalità delle materie prime.

10.00 - 12.00 Dopo colazione, pronti per visitare i monumenti più significativi della città? Imprescindibile una visita alla Cattedrale: si trova in Piazza Giovanni XXIII, là dove anticamente sorgeva il foro romano, è intitolata a Santa Maria Assunta e San Giovanni Battista ed è un polo religioso di grande importanza regionale. La storia del complesso risale al IV secolo d.C. quando venne creato il primo fonte battesimale. La grande cattedrale romanica del X secolo si deve alle modifiche volute dal vescovo Anselmo. Al suo interno si celano tesori preziosi: dai grandi mosaici romanici fino al raro ciclo di affreschi di epoca ottoniana visibile nel sottotetto. La facciata della Cattedrale si compone di due parti distinte, un atrio cinquecentesco ed una fronte neoclassica aggiunta nel 1848.

L’atrio presenta un elegante prospetto architettonico in cotto, ornato da statue e da affreschi raffiguranti scene della vita della Vergine cui la chiesa è dedicata, bell’esempio di arte rinascimentale in Valle d’Aosta.

Nel pomeriggio d’obbligo una visita all’elegante Piazza Chanoux (intitolata a Emile Chanoux, martire assassinato dai fascisti nel 1944), dove si erge il monumento al soldato valdostano noto anche come “l’alpino” -, realizzato nel 1924 da Piero Canonica. Sulla piazza si trova anche il Municipio della città, in stile neoclassico.

Questa piazza, da cui si gode anche la vista della catena delle Alpi, è il “salotto buono” della città. Da non perdere anche una visita alla Collegiata dei SS Pietro e Orso, altro magnifico complesso religioso cittadino le cui origini risalgono al V secolo d.C. Con la sua poderosa torre campanaria alta 46 metri, lo splendido ed

affascinante chiostro romanico, la corte del Priorato tardo quattrocentesco, ingentilita da magnifiche finestre crociate in terracotta, gli affreschi ottoniani e il mosaico noto come “quadrato magico”, è questo un luogo dalla sacralità avvolgente ed indimenticabile, molto amato dai

Valdostani e cuore della millenaria Fiera di Sant’Orso che si tiene ogni anno il 30 e 31 gennaio.

20.00 - 22.00 Per chi proprio non rinuncia alla tradizione, il Vecchio Ristoro è il posto giusto dove fermarsi per una serata romantica. Alfio e Katia

Camminare così a lungo mette un certo appetito…; merenda golosa e successivo aperitivo al Café Saint-Vout, uno spazio moderno ed elegante dove scoprire tutte le migliori eccellenze valdostane a km 0 e ottimi vini: qui si possono sia acquistare, sia degustare in loco, magari accomodati nello splendido dehors estivo con vista sul magnifico Arco d’Augusto.

Fascendini sono i perfetti padroni di casa di questo ristorante-bomboniera, ieri vecchio mulino, oggi locale intimo e accogliente come un salotto.

Dal menu piatti del territorio e di ricerca, mai azzardati né banali, ma pensati ed eseguiti con passione e competenza. Cantina di alto livello, che spazia dalla Vallée al resto del mondo. La Brasserie Cafè D’Europe, ad un passo da piazza Chanoux, è un altro indirizzo rinomato e consigliato; elegante ed informale, in poche stagioni è divenuto uno dei punti di riferimento e di incontro per chi ama la buona cucina.

17.00 - 20.00 Proseguiamo ora il nostro pomeriggio con lo shopping più sfrenato: impossibile resistere ai prodotti tipici della gastronomia locale, quando si è su un territorio così ricco e generoso.

I formaggi della Vallée ne sono un esempio, realizzati secondo ricette tradizionali e col latte delle vacche valdostane. Ad Aosta si possono assaggiare alla latteria Erbavoglio, un piccolo negozio che offre solo specialità selezionate, come la Fontina di diverse stagionature, le tome, i caprini, gli erborinati. Ma qui si trovano in vendita anche sughi, salse, marmellate, mieli e dolci da forno, così come da Agrival, storico marchio valdostano specializzato in prodotti del territorio.

22.00 - 24.00 Pronti a ritirarvi in albergo? Certo, ma prima di dormire imprescindibili un digestivo o una tisana rilassante: se pernottate presso l’Hotel Duca d’Aosta in Piazza Narbonne, il bar dell’albergo è la tappa ideale dove fermarsi in tranquillità per fare due chiacchiere, commentare la giornata e le foto, prima di decidere l’itinerario del giorno dopo. Per chi invece preferisce una Chambre d’Hôtes più informale, non mancano numerosi B&B di gran charme.

After breakfast, you are ready to visit the most significant monuments of the city.

A visit to the Cathedral is unmissable: it is located in Piazza Giovanni XXIII, where the Roman forum once stood, is dedicated to Santa Maria Assunta and San Giovanni Battista and is a religious centre of great regional importance. The history of the complex dates back to the fourth century A.D. when the first baptismal font was created. The great Romanesque cathedral of the tenth century is due to the changes desired by the Bishop Anselmo. Inside there are hidden treasures: from the great Roman mosaics to the rare frescoes from Ottonian times visible in the attic. The facade of the cathedral consists of two distinct parts, a sixteenth-century hall and a neoclassical facade added in 1848.

The hall features an elegant architectural design in terracotta, decorated with statues and frescoes depicting scenes from the life of the Virgin to whom the church is dedicated, a fine example of Renaissance art in the Aosta Valley.

In Aosta you can sample, at the Erbavoglio dairy, a small shop offering only selected specialties such as Fontina of different ages; tome; goats cheese; herb cheese.

But here you can also find sauces, jams, honey and cakes, as well as from Agrival, a historic Aosta Valley brand specializing in local produce.

A high-level wine cellar, which ranges from the valley to the rest of the world. La Brasserie Café D’Europe, one step away from piazza Chanoux, is another address that is famous and recommended; elegant and informal, in just a few seasons it has become one of the landmarks and meeting places for those who love good food.

Sessant’anni e non sentirli: ecco il segreto del successo di questo storico e centralissimo locale, inaugurato nel 1957 da Nando e Germana Scarpa e condotto oggi dal figlio Corrado, da sua moglie Franca e da Paolo, la terza generazione.

Completamente rinnovato e ammodernato 10 anni fa, oggi l’Osteria da Nando si presenta come salotto caldo e accogliente, con cucina a vista, arredi in legno e un tocco di originalità dato dal gusto squisitamente femminile della Signora Franca, che regna in cucina. Ed è proprio lei a conquistare l’affezionata clientela con le specialità della casa, realizzate solo con genuini ingredienti del territorio possibilmente a km 0, freschi e di stagione. Tra i “loro” cavalli di battaglia sempre nel menu la classica Fonduta alla Valdostana, una calda crema di Fontina presentata con polenta di granturco integrale e crostini di pane nero; la Polenta della casa, preparata con polenta ottenuta dalla macinazione di antiche varietà di granturco, servita con Fontina e uovo al tegamino; gli spaghetti alla chitarra “Nabuisson” con condimenti che variano a seconda della stagionalità delle materie prime (Finferli o lardo di Arnad, Fontina e pepe nero); la Carbonade con le patate lesse, teneri bocconcini di vitellone saltati nel vino rigorosamente bianco con spezie e cipolle. Per i più golosi non mancano inoltre le assiette con gli affettati valdostani e con i caci - di chèvre, di latte vaccino e della zona del Monte Bianco - selezionati dalla Latteria Erbavoglio di Aosta. Osteria da Nando is a warm and cozy room with an open kitchen, wooden furniture and a touch of originality given by the exquisitely feminine taste of Franca, who reigns in the kitchen. And it is she who wins over the loyal customer base with the house specialties, made only with natural ingredients of the area possibly at 0 km, fresh and seasonal. Among “their” big hits always on the menu the classic Aosta Valley fondue, a hot Fontina cream presented with whole corn polenta and brown bread croutons; Polenta of the house, prepared with polenta obtained by the grinding of ancient varieties of corn, served with Fontina cheese and fried egg; guitar spaghetti “Nabuisson” with sauces that vary depending on the seasonality of raw materials (chanterelle mushrooms or Arnad lard, Fontina cheese and black pepper); the stew with boiled potatoes, tender morsels of beef sauteed in strictly white wine with spices and onions. For the greediest, don’t miss the “assiette” with Aosta Valley cold cuts and cheeses with - goats cheese, cow's milk cheese and those from the Mont Blanc area - selected from the Erbavoglio dairy of Aosta.

To drink there is a nice selection of 100% Aosta Valley labels, also served by the glass and half bottle, but there are also the organic “Free Wine” from Italy and the famous beers of the Gran San Bernardo Valley. Fancy something sweet? Close with the pleasantness of the sweet of the house, beautifully presented and packaged like the rich Caffè Gourmand, from something so French in taste, the Sant'Orso cream with tegole or hazelnut cake, only made with hazelnuts, eggs and brown sugar, to pair with - why not? - a glass of Aosta Valley Passito, before trying a taste of 7 local génépy. And for the next 60 years ... there is no shortage or energy to keep up the quality and tradition of this restaurant, nor the passion for authentic local cuisine, but always in continuous, constant evolution.

t the entrance of the historic centre of Aosta is the Arch of Augustus, erected in 25 B.C. in honour of Emperor Augustus. In the Middle Ages it became Saint-Vout, with a double significance: Santo Volto, due to a wooden image of Christ, and the Santo Voto, as a destination for prayer processions to avert the flooding of the nearby Buthier. Forse, perché non tutti sanno che un detto popolare afferma che “l’acqua fa ruggine” - quindi Antirouille significa anti-ruggine! -, e che questa è sì una vineria, ma anche un’osteria dove assaggiare i prodotti più tipici della gastronomia valdostana. Accanto a un’ampia scelta di etichette proposte anche al calice, valdostane in primis, qui si trovano specialità locali semplici e abbondanti. l passaggio è d’obbligo per chi proviene da o va verso il Monte Bianco; è un rito per gli escursionisti d’estate e gli sciatori d’inverno fermarsi da Dupont a Villeneuve. Una pasticceria/caffetteria che, da quasi un secolo, fa parte della storia del gusto valdostano. Una storia sempre a braccetto con le tradizioni e che, dal 2007, vede la famiglia Bertola nella gestione della pasticceria. Una piccola azienda familiare di cui Giancarlo, insieme alla moglie Patrizia, sono riusciti ad accrescere la fama anche fuori dai confini regionali. Le specialità Dupont rispettano le antiche ricette di una volta e trovano la loro massima espressione nei tipici dolci del territorio. I torcetti al burro e zucchero, fragranti e gustosi; le famose tegole valdostane alle nocciole; i trolliet, biscotti alle noci simile ai cugini “Brutti e Buoni”; per arrivare fino al Crescent o focaccia valdostana, di cui consigliamo di assaggiare la dolce consistenza al mattino. Non possono mancare le torte e la finissima pasticceria, tutta realizzata rigorosamente fresca in giornata. A ogni ricetta viene aggiunta quella passione in più di chi, già dalle prime ore del mattino, lavora per soddisfare il gusto di una clientela sempre più variegata ed esigente.

assing by is a must for those coming from or going to Mont Blanc, stopping by Dupont in Villeneuve is a ritual for summer hikers and winter skiers. A patisserie/coffee shop that, for almost a century, has been part of the taste history of the Aosta Valley. A story always hand in hand with tradition and that, since 2007, has seen the Bertola family running the patisserie.

A small family business whose fame Giancarlo and his wife Patrizia have managed to increase also outside of the region. Fontina DOP

L

a “regina” dei formaggi valdostani si ottiene solo col latte crudo e intero di una sola mungitura di bovine sane e di razza valdostana; per produrre una sola forma sono necessari 100 litri di latte, e la maturazione deve durare minimo per 80 giorni nei magazzini di stagionatura. Ne risulta un formaggio che profuma di latte, dolce e morbido in bocca, con una discreta occhiatura: sono gli “occhi” della dolcezza!

he “queen” of the Aosta Valley cheeses is obtained only with raw whole milk obtained in a single milking of healthy Aosta Valley cows; to produce a single form 100 litres of milk are required, and the ripening lasts a minimum of 80 days in aging warehouses. The result is a cheese that smells of milk, sweet and soft in the mouth, with discreet holes: they are the “eyes” of the sweetness!

Jambon de Bosses DOP

I

n questo piccolo comune quasi al confine con la Svizzera si produce un prosciutto ricavato da cosce di suino pesante italiano (da Valle d’Aosta, Piemonte, Lombardia, Veneto, Emilia Romagna) a cui si aggiungono spezie ed erbe aromatiche locali. La stagionatura dura minimo 12 mesi (ma si arriva anche fino a 18!), poi questo jambon di montagna, dolce, aromatico e profumato, sarà pronto per essere degustato in abbinamento a pane di segale, miele, burro e frutta secca.

n this small village near the border with Switzerland a ham is produced that is made from Italian pork thighs (from Aosta Valley Piedmont, Lombardy, Veneto, Emilia Romagna) with the addition of local herbs and spices.

The minimum aging lasts for 12 months (but also up to 18!), then this mountain ham, sweet, aromatic and fragrant, will be ready to be tasted in combination with rye bread, honey, butter and dried fruit.

Lardo d’Arnad DOP

Q

uesto celebre lardo si ottiene dalle spalle e dal dorso di suini provenienti da allevamenti veneti, lombardi, piemontesi, emiliani e valdostani: ma è solo ad Arnad che può avvenire la salatura, con spezie ed erbe aromatiche di montagna negli appositi contenitori in legno (Doils) che devono essere di castagno, rovere o larice. Per acquisire quel sapore così intenso e caratteristico deve riposare per almeno 3 mesi; si accompagna con castagne, miele e pane nero.

his famous lard is obtained from the shoulder and back of pigs that come from farms in Veneto, Lombardy, Piedmont, Emilia Romagna and the Aosta Valley; but it is only in Arnad that the salting, with spices and aromatic mountain herbs, can take place. To capture this flavour that is so intense and characteristic it must rest for at least 3 months; it is accompanied with chestnuts, honey and brown bread.

Fromadzo DOP

I

l termine francoprovenzale Fromadzo significa semplicemente “formaggio”, un prodotto della grande famiglia delle tome che si ottiene con latte vaccino oppure con un’aggiunta di piccole quantità di latte di capra, magro o parzialmente scremato, con anche erbe aromatiche e spezie. Semidolce quando è fresco, quasi piccante quando raggiunge una maggiore stagionatura (8-10 mesi e oltre), è un ottimo formaggio da tavola.

he Franco-Provencal term Fromadzo simply means “cheese”, a product of the great family of the tome that is obtained from cow’s milk or with the addition of small amounts of goat’s milk, skimmed or semi-skimmed, also with herbs and spices. Semi-sweet when fresh, almost spicy when it is more mature (8-10 months or longer), it is an excellent table cheese.

l Bleu d’Aoste è un particolare e caratteristico prodotto del territorio valdostano, è una specialità esclusiva della Centrale Laitière de la Vallée d’Aoste. Il “Bodeun”, un salame molto speciale di Diego Bovard

uando mi è stato chiesto di collaborare a The CORNER ho accettato volentieri, anche se il mio lavoro non è scrivere di cibo, seppur da alcuni anni collaboro con enti, associazioni e aziende alla valorizzazione dei prodotti agroalimentari di questa splendida terra che è la Valle d’Aosta. Ho una mia idea di prodotto del territorio: sicuramente prediligo i prodotti a filiera completa, cioè quei prodotti che sono realizzati a partire dalla materia prima locale, ma non trascuro le produzioni che trasformano in loco materie prime provenienti da altri territori. Vorrei parlare proprio di alcuni prodotti: la scelta non è facile, ma partirei da un salume valdostano interessante: il Bodeun. Un salame, certo ma non un salame qualunque, poiché realizzato prevalentemente con prodotti vegetali. A quello preparato con le barbabietole rosse, sono state aggiunte le patate bollite e cubetti di grasso di maiale, una piccola percentuale di sangue (di maiale o di bovino), vino, spezie e aromi naturali. La barbabietola rossa, oltre a regalare un gusto leggermente dolce e a “colorare” il prodotto, svolge un’importante funzione di conservante.

L’impasto viene poi insaccato in un budello, quindi legato per essere appeso e stagionato per almeno una decina di giorni. L’impasto fresco può essere utilizzato in cucina; se gratinato sprigiona i suoi aromi speziati. Il Bodeun è un PAT (prodotto agroalimentare tradizionale), norma nazionale di protezione delle denominazioni locali gestita dal Ministero delle politiche agricole alimentari e forestali: oltre all’elenco dei prodotti, suddiviso per regione, viene depositato un disciplinare di riferimento che contiene le indicazioni del territorio, gli ingredienti e le tecniche di produzione.

hen I was asked to collaborate with The CORNER, I gladly accepted even though my job is not to write about food.

Although for several years I have collaborated with organizations, associations and companies for the enhancement of food farming products of this wonderful land that is the Aosta Valley. I have my own ideas about products from this territory: I definitely prefer complete supply chain products, therefore, those products that are manufactured from local raw material, but I do not neglect the productions that transform raw materials here, from other territories.

I would like to mention just a few products: the choice is not easy, but I’ll start with an interesting Aosta Valley salami: Bodeun. A salami, but certainly not just any salami, as it is mainly made with vegetable products. To the one prepared with beetroot, boiled potatoes and pork fat cubes, a small percentage of blood (pork or beef), wine, spices and natural flavours are added. Beetroot, as well as giving a slightly sweet taste and to "paint" the product, performs an important preservative function.

The mixture is then stuffed into a casing and then bound to be hung and matured for at least ten days.

The fresh mixture may be used in the kitchen; if cooked gratinéed, its spicy aromas are released.

The Bodeun is a PAT (traditional food product), a national protection of the local denomination regulation which is managed by the Ministry of Agricultural, Food policies and Forestry which in addition to the list of products, broken down by region, deposits a reference guideline that contains the indications of the territory, the ingredients and production techniques.

rrivando nel borgo antico di Introd si ha la sensazione di fare un salto nel passato; paragonato a realtà affermate del turismo valdostano come Courmayeur o Cervinia o, ancora, a città come Aosta, il paese sembra fuori dal tempo ma proprio in questo risiede il suo fascino.

Nella direzione di un turismo legato sempre più alla scoperta e alla riscoperta del territorio, ha ripreso vita l’unico museo etnografico valdostano: la Maison Bruil. Grazie al suo gestore, Mathieu Champrétavy, il vecchio casolare situato nella parte più caratteristica del paese è rifiorito, attraendo un numero sempre più numeroso di turisti e proponendosi anche come luogo d’incontro per feste e mercati. Il museo ha una struttura divisa in tre piani, dove ogni spazio racconta la vita rurale di un tipico borgo tra le montagne valdostane a metà tra il diciottesimo e gli inizi del ventesimo secolo. Ogni stanza sviluppa una tematica legata allo stile di vita del passato: si passa da quelle adibite a dormitori, condivise con

gli animali, a quelle per la conservazione dei cibi quali la salatura, l’essiccazione, l’isolamento dall’aria, fino a quelle assegnate all’orto di casa per la coltivazione delle verdure nei lunghi periodi invernali. L’allestimento interno, fedelmente riproposto con mobili d’epoca, fornisce spunti e approfondimenti non solo sui temi dell’alimentazione tradizionale ma anche sull’architettura tipica valdostana: il tetto in pietra losa antica e travi datate diciottesimo secolo ne sono testimonianza.

Maison Bruil rappresenta un modo diverso di fare turismo, quello in grado di collegare il visitatore alle radici culturali di un territorio, ancora oggi non del tutto esplorato. E di dargli informazione, conoscenza ed emozione allo stesso tempo.

rriving in the ancient village of Introd you have the feeling of stepping into the past; compared to established Aosta Valley tourism resorts like Courmayeur or Cervinia, or even to cities like Aosta, the village seems to be from another time ... Therein lies its charm. In the direction of a tourism linked increasingly to the discovery and rediscovery of the territory, the only Aosta Valley ethnographic museum: the Maison Bruil has been revived. Thanks to its manager, Mathieu Champrétavy, the old farmhouse situated in the oldest part of the village has flourished, attracting an ever increasing number of tourists and also presenting itself as a meeting place for parties and markets. The museum has a structure divided into three floors, where each space tells of rural life of a typical village in the mountains of the Aosta Valley halfway between the eighteenth and early twentieth century. The interior, faithfully furnished with period furnishings, offers guidance and insights not only on traditional alimentation issues but also typical Aosta Valley architecture: the ancient stone tiled roof and eighteenth century dated beams are testimony. Maison Bruil represents a different way of tourism, one that can connect the visitor to the cultural roots of a territory, still not fully explored.

he history of the oldest distillery in the Aosta Valley began with hard work: you needed to select the vineyards, see the land and exposure, check the vines, test the colour, the smell, the quality of grapes and Alpine herbs that blossom at high altitudes, such as Artemisia génépy. In 1968, Natalina Levi together with her husband, founded the Saint-Roch Distillery.

The company then moved to Quart, opening up to modernity and technology.

A history of many decades, hundreds of products with a unique "common thread": tradition and quality. The Artemisia Génépy ranks first among the creations of the business, thanks to its chromatic aspect, the balsamic fragrance and the full and bitter taste arising from the characteristics of those plants harvested in the moraines of the glaciers, at over 2000 m. The project of the company is to create unique products anchored to the territory, including the Artemisia Blanc, génépy obtained by self-distillation, the Génépain, sweet génépy and beer, clear, high fermented inspired by the Belgian Beers Pale Ale, with the addition of Génépy Artemisia 100% Aosta Valley to the traditional recipe. Miele: varietà e alta qualità

I

n Valle d’Aosta l’apicoltura era praticata già in epoca feudale, in quanto la cera era molto preziosa per l’illuminazione e nella medicina popolare il miele si adoperava come toccasana sia per lenire piaghe e scottature, sia per combattere tosse e raffreddore.

Solo a inizio 1900 però si scoprì il legame tra fioritura e tipo di miele, grazie agli studi de l’Abbé Henry de Valpelline: le varietà di fiori presenti in Valle sono tantissime, ed è proprio per questo che oggi la produzione di miele è ottima e di qualità!

Quali sono le principali tipologie di miele?

Il miele di rododendro, detto anche “miele dei ghiacci”, è raro e prezioso perché deriva da alveari collocati a 1600-2000 metri, nei pressi di boschi e pascoli d’alta quota; floreale e fruttato, è da provare con i dolci della tradizione.

Il miele millefiori è ottenuto col nettare di diverse specie botaniche, dalle quali prende le diverse caratteristiche organolettiche; ben si sposa con il tipico Lardo d’Arnad.

Il miele di tarassaco è prodotto nella zona di media e bassa montagna, ma solo nel periodo primaverile; dolce e cremoso, è il perfetto abbinamento con i salumi regionali.

Il miele di tiglio è prodotto in pochissime zone della Vallée tra i 600-1000 metri; grazie al suo intenso aroma balsamico è ottimo miscelato nel latte e nella grappa.

Infine il miele di castagno, che è raccolto in tutta la regione e possiede un gusto intenso e caratteristico: l’ideale per accompagnare i caprini e i formaggi freschi locali.

Il territorio della Valle d’Aosta offre situazioni privilegiate per la produzione di ottimo miele con differenti caratteristiche.

n the Aosta Valley beekeeping was practiced already in feudal times, because the wax was very valuable for lighting and in folk medicine as a ‘cure all’ to soothe lesions and burns, and to fight coughs and colds. Only at the beginning of 1900, however, did they discover the link between flowering and types of honey, thanks to the studies of l’Abbé Henry de Valpelline: the variety of flowers in the Valley are many, and it is precisely for this reason that the production of honey is now excellent and of high quality!

What are the main types of honey?

Rhododendron honey, also known as “ice honey”, is rare and valuable because it comes from beehives located at 1600-2000 metres, in the vicinity of forests and mountain pastures; it is floral and fruity, it should be tried with traditional desserts.

The ‘mixed-flower’ honey is obtained with the nectar of various plant species, from which it takes its different organoleptic characteristics; it goes well with the typical Arnad Lard.

Dandelion honey is produced in the medium and low mountain areas but only in the spring; sweet and creamy, it is the perfect match with regional cold cuts.

Linden honey is produced in very few areas of the Valley between 600 and 1000 metres; thanks to its intense balsamic aroma it is great mixed in milk and grappa.

Finally, chestnut honey, which is harvested throughout the region and possesses an intense and characteristic flavour: it is ideal with goat’s cheese and fresh local cheese.

Il ginepro comune (Juniperos communis) è una pianta della famiglia delle Cupressaceae che è presente su tutto il territorio della regione, dalle quote più basse fino a oltre 2800 metri. In Valle d’Aosta viene utilizzato da sempre, grazie alle sue numerose proprietà quale diuretico, stomachico, antispasmodico, balsamico e antisettico delle vie urinarie. Si presenta come un arbusto con foglie aghiformi, appuntite e pungenti, e aromatici frutti sferici di colore blu che maturano ogni 2 anni perché – così narra la leggenda – il ginepro punse la Madonna mentre cercava riparo e lei lo maledì.

Un tempo il legno era utilizzato quale decotto grazie al suo potere sudorifero, oppure veniva bruciato per la disinfezione di case e di stalle; le foglie, diuretiche e digestive, lenivano la pelle eczematosa, mentre i frutti - detti coccole o galbuli - sono da sempre una panacea, alla base di una preparazione tipica valdostana chiamata dzenevrà o dzén-évroù, considerata uno dei rimedi naturali più efficaci, tanto che ogni famiglia ne custodiva un vasetto in dispensa. La preparazione di questa specialità è molto lunga e complessa, ma è possibile trovarla già confezionata secondo un’antica ricetta presso Agrival®, lo storico marchio custode delle tradizioni locali, che promuove il territorio con la produzione di confetture principalmente a base di mele valdostane e che recentemente, grazie al nuovo titolare, lo chef Luca Berolatti, ha dedicato particolare attenzione alla selezione di antichi frutti e ortaggi provenienti da piccoli produttori locali per la preparazione di veri e propri piatti da asporto. he common juniper (Juniperos communis) is a plant from the Cupressaceae family that is present throughout the territory of the region, from the lowest levels up to 2800 metres and above. In the Aosta Valley it has always been used, thanks to its many properties such as diuretic, stomachic, anti-spasmodic and balsamic and as a urinary antiseptic. It looks like a shrub with needle-like leaves, which are sharp and pungent, and aromatic blue spherical fruits that ripen every 2 years because as legend says - the juniper stung the Madonna while she was trying to shelter and she cursed it.

In the past, the wood was used as a decoction with its sudoriferous power, or was burned for the disinfection of houses and stables; the leaves, diuretic and digestive, soothed eczematous skin, while the fruit have always been a panacea, at the base of traditional Aosta Valley preparations called dzenevrà or dzén-évroù, considered one of the most effective natural remedies, so much so, that every family kept a jar in the cupboard.

The preparation of this specialty is very long and complicated, but you can find it ready-made according to an antique recipe at Agrival®, the historic brand, that is a guardian of local traditions, and which promotes the territory with the production of jams mainly made with Aosta Valley apples and that recently, thanks to the new owner, the chef Luca Berolatti, has paid special attention to the selection of ancient fruits and vegetables from small local producers to make some real takeaway dishes.

But how do you use this ancient remedy?

It only takes a teaspoon dissolved in a coffee cup of hot water to aid digestion or as a disinfectant of the urinary tract or in a cup of hot milk for it to have a revitalising effect: try it!

a montagna è uno straordinario laboratorio alchemico, un ambiente pulito e salubre dove erbe, radici, bacche, farri, fiori, frutti vengono da secoli selezionati e raccolti per farne infusi, distillati, liquori. La Valle d’Aosta, magnifica nella sua natura alpina, incarna appieno questa realtà e chiama a testimoniarla i suoi pacati ed esperti monaci e le sue minuscole distillerie. Da centinaia di anni gli abitanti di questa Valle selezionano con sapienza e coltivano le migliori essenze vegetali per trasformarle in autentiche specialità alpine.

La Valdôtaine è una piccola distilleria di montagna dove i bellissimi alambicchi, in lucente rame lavorato a mano e dal respiro discontinuo, a singole cotte, distillano piccole quantità di spiriti unici, resi inimitabili dalle acque ricche di minerali, talvolta dal colore stupefacente, che dai monti precipitano a valle, fino alla distilleria. In particolare “Acqueverdi” è una sorgente dalle acque di un incredibile colore turchese, dovuto alla presenza di rari minerali, che si trova a 1400 metri di quota sui monti alle spalle della distilleria, nell'ampio Vallone di Saint-Marcel. Affascinante esperienza che può essere vissuta a meno di due ore di cammino dalla distilleria, qualche goccia di quell’acqua “magica” entra nei prodotti. Ed è sempre nello stesso Vallone che si raccolgono alcuni degli inusuali, segreti botanici che vengono infusi e poi distillati nei piccoli alambicchi discontinui, dai quali emerge il carattere “alpino” di queste produzioni.

he high mountains surrounding our Alpine distillery form an extraordinary laboratory where herbs, rhizomes, berries, cereals, flowers and fruits have been grown over the centuries in the fresh mountain air. Monks and master distillers used them to make their precious infusions, spirits and liqueurs. Since time immemorial the inhabitants of the magnificent Aosta Valley in the heart of the Alps have selected the finest plant essences and transformed them into unique alpine spirits. La Valdôtaine is a small mountain distillery which draws its inspiration from these traditions, where fine old copper stills produce small batches of hand-crafted spirits. Rare mountain botanicals are infused and then carefully distilled.

Our traditional alembics and the local alpine ingredients and mineral-rich waters give the special mountain character. Less than two hours' walk high up the hill behind the distillery is a unique spring whose waters have an almost unbelievable turquoise colour due to the presence of rare minerals which turns the stones over which the water tumbles into bright emeralds.

Set high up in an enchanted Alpine valley, the Acqueverdi cascades down the slopes to the village of Saint-Marcel, home to our distillery. These magical, mineral-rich waters have an incredible effect on the purity of these spirits.

L’affinamento del prosciutto Saint Marcel a quote diverse nei villaggi dell’omonimo Comune seguendo il concetto di “stagionatura diffusa” e le annesse “Merenderie”, ove poter degustare questo ed altri prodotti del territorio, tracciano la “Via del Prosciutto” che dalla Frazione di Surpian (547 mt) porta alle miniere di Servette 1819 mt. Il campo base di questo spettacolare e gustoso itinerario è nel Comune di Saint-Marcel al prosciuttificio La Valdôtaine (Merenderia n.1). È proprio per assecondare questo trend che un giovane imprenditore d’Introd, località situata all’inizio della Valle del Monte Bianco, Mathieu Champretavy, ha deciso di creare Tascapan.com una piattaforma e-commerce specializzata in prodotti valdostani, riuscendo a riunire attorno ad essa piccole/medie eccellenze locali: dal vino al formaggio, dai salumi ai biscotti passando per i tessuti e i cosmetici.

he Aosta Valley has undoubtedly started a long process to get known outside their territories; tourism has been the driving force allowing you to discover not only the natural beauty, but also the regional food and wine.

It is to respond to this trend that a young entrepreneur from Introd, a resort town at the beginning of the Mont Blanc Valley, Mathieu Champretavy, decided to create Tascapan.com an e-commerce platform that specializes in the Aosta Valley products, managing to reunite around its small / medium local excellences: from wine to cheese, salami to biscuits through to fabrics and cosmetics. Il mercato contadino di Courmayeur: appuntamento a Lo Matsòn domenica 3 settembre di Anna Bogoni

P

otrebbe stupire che quella di quest’anno sia la diciassettesima edizione.

Ma non è così, in Valle d’Aosta le tradizioni hanno storie molto antiche.

Potrebbe stupire che a essere coinvolti siano circa 70 produttori e che l’edizione del 2016 abbia visto la partecipazione di oltre 10.000 visitatori.

Ma non è così: i numeri non esauriscono certo l’unicità della manifestazione chiamata Lo Matsòn (merenda, in patois) che si svolgerà a Courmayeur domenica 3 settembre.

Si tratta infatti di un mercato contadino all’aperto, una sorta di appuntamento delle eccellenze del territorio, da segnarsi subito in agenda per non lasciarselo sfuggire. Perché? Per almeno tre motivi.

Il primo è che Lo Matsòn è l’unica occasione per incontrare numerosi produttori che partono dalla materia prima del territorio per trasformarla, restando sul territorio, in formaggi, salumi, latte, yogurt, vino, birra, dolci di una qualità che solo in Valle si può trovare. Non capita facilmente di frequentare un mercato fatto di storie: c’è chi ha parlato con le api per produrre il miele migliore, chi ha spazzolato le fontine, chi ha vendemmiato in salita, chi conosce ogni segreto delle sue mucche e chi è andato a caccia di génépy tra le rocce.

Sono i produttori l’anima autentica di Lo Matsòn, gli stessi che dalle cinque del mattino mettono in mostra sui banchi il frutto del loro lavoro fresco di giornata o quello che ha richiesto un anno di fatica ed è ancora più prezioso: il vero buon cibo, perché etico, sano e naturale.

“Chi li fa, ti aspetta!” è l’originale invito che accompagna questo entusiasmante appuntamento in Alta Valle sotto il Monte Bianco.

t may surprise you that this year is the seventeenth edition. But it is not so, in the Aosta Valley traditions have very ancient histories. It might surprise you that there are about 70 producers involved and that the 2016 edition saw the participation of over 10,000 visitors.

But it is not so: the numbers certainly do not exhaust the uniqueness of the event called Lo Matsòn (snack, in patois) which will be held in Courmayeur Sunday, September 3.

It is actually an open-air farmer's market, kind of an appointment with the excellence of the territory, write it down immediately in your diary so as not to miss it.

Why? For at least three reasons. The first is that Lo Matsòn is the only opportunity to meet many producers who, starting with raw materials from the territory transform it into cheeses, meats, milk, yogurt, wine, beer and sweets of a quality that can only be found in the Valley. You won’t often attend a market made of stories: there are those who have spoken to the bees to produce the best honey, those who brushed the Fontina, those who has harvested the grapes on steep slopes, those who know every secret of their cows and those who went génépy hunting among the rocks.

The producers are the authentic soul of Lo Matsòn, the same ones who from five in the morning display on their stalls the fruit of their work fresh from the day or that which took a year of hard work and it is even more valuable: real good food because it is ethical, healthy and natural.

Gente che si tramanda attività da generazioni, altri che hanno lasciato lavori più tradizionali e si sono trasferiti in Valle per diventare artigiani del cibo scappando dalle frenesie delle città; storie belle di uomini e donne, di giovani che non pensano di fare fortuna all’estero, ma che hanno la voglia e il coraggio di rimboccarsi le maniche e di credere nella terra, nella tradizione e nei valori di una cultura contadina che qui è ancora molto sentita.

Infine, Lo Matsòn esprime una lezione di vita, perché in una giornata si racconta una storia lunga un anno. Rappresenta il culmine di stagioni vissute laboriosamente, al ritmo delle giornate trascorse con gli animali, o piegati a raccogliere uva, delle levatacce nel cuore della notte per mungere le vacche, delle estati sempre troppo brevi negli alpeggi e degli inverni sepolti sotto la neve. Una Valle divertente per natura

Quando si pensa alla Valle d’Aosta subito la mente vola alle montagne innevate, allo sci e alle baite dove fermarsi a gustare i piatti tipici della gastronomia di questo territorio così ricco e generoso; ma non solo, perché la Vallée nasconde anche numerose attrattive per grandi e piccini, tutte da scoprire!

Partiamo dall’ingresso della Valle, dove il Forte di Bard domina maestoso sull’antica Via Francigena: è possibile visitarne gli interni e percorrere un suggestivo percorso paesaggistico a cielo aperto; le sale della fortezza ospitano inoltre il Museo delle Alpi - un percorso multimediale, pluridisciplinare e interattivo per i più piccoli -, oltre a eventi e mostre che variano periodicamente. Nel capoluogo di Aosta vale invece la pena di visitare sia l’Area Megalitica di Saint-Martin-de-Corléans, uno dei siti archeologici più interessanti d’Europa dove scoprire testimonianze dal Neolitico ai giorni nostri, sia il Teatro Romano, la cui monumentale facciata in arenaria alta 22 metri oggi viene utilizzata come inusuale quinta scenografica, e che ospita rassegne musicali e concerti estivi, e le graziose baite del mercatino di Natale cittadino, il Marché Vert Noel. Proseguendo verso l’Alta Valle, nota anche come Valdigne, il posto giusto dove fermarsi con i bambini è il Parc Animalier d’Introd, il primo e unico parco faunistico della Valle d’Aosta dove osservare, scoprire e capire flora e fauna locali.

Per chi ha voglia di avventura, imprescindibile una discesa di Rafting.it, lo sport fluviale per eccellenza: i gommoni partono da Morgex e scendono lungo quello che per gli sportivi è uno dei fiumi più importanti d’Europa. Ancora carichi di adrenalina?

hen you think of the Aosta Valley right away the mind flies to the snowy mountains, skiing and mountain huts where you can stop to taste the typical dishes of this territory that is so rich and generous; but not only, because the Valley also hides many attractions for young and old to discover! Let's start from the entrance of the Valley, where the Fort of Bard dominates majestically on the ancient Via Francigena: it is possible to visit its interior and follow a beautiful path in the open air; the halls of the fort also house the Museum of the Alps - a multimedia, multidisciplinary and interactive route for the children -, as well as events and exhibits that change periodically.

the Megalithic Area of Saint-Martin-de-Corléans, one of the most interesting archaeological sites in Europe where you can discover testimonies from the Neolithic to the present day, as well as the Roman Theatre, whose monumental sandstone facade is 22 metres high and is used today as a rare scenic backdrop, as well as for music festivals and summer concerts, and even for the pretty huts of the town Christmas market, the Marché Vert Noel. Continuing towards the Upper Valley, also known as the Valdigne, the right place to stop with the kids is the Parc Animalier d'Introd, the first and only wildlife park in the Aosta Valley where you can look, discover and understand the local flora and fauna. For those who want adventure, a Rafting.it descent is essential, it is a river sport par excellence: the rafts start at Morgex and go down along what for sports people is one of the most important rivers in Europe. Still loads of adrenaline? A must is to take a “jump” to the Parco Avventura in Pré-Saint-Didier, a recreational-sports course in an ancient forest with spectacular views of the chain of Her Majesty Mont Blanc. For wellness and relaxation try the magnificent Terme di Pré Saint Didier. Last stop at the SkyWay Mont Blanc, the Eighth Wonder of the World, a completely transparent futuristic cable car that rotates on itself and arrives on the glaciers of Mont Blanc, at more than 3,400 metres high; from the rooftop terrace you contemplate all the highest peaks of the chain, and from there you can complete the journey to France and the Aiguille du Midi, which is connected to Chamonix.

10-17 SETTEMBRE 2017 LOCATION VARIE TOR DES GEANTS Partirà domenica 10 settembre alle 10 dal Comune di Courmayeur l'ottava edizione del Tor des Géants, un endurance trail di bellezza unica ai piedi dei 4000 che si snoda lungo le due Alte Vie della Valle d'Aosta, per un totale di circa 330 km e 24.000 metri di dislivello.

The eighth edition of the Tor des Géants, a unique endurance trail at the feet of the 4000m mountains, will start on Sunday 10th September at 10am from the town hall of Courmayeur.
