Beer brewing is an art that originated from ancient Mesopotamia about 6000 years ago Beer is the world’s most widely consumed and probably the oldest of alcoholic beverages. It is the third most popular drink after water and tea. If we have to explain in a clear and detail procedure, the process of making beer, it would result passionate to discover the complexity of how this traditional beverage, of bitter flavor and noble aroma is produced. What prevail until today are the basic ingredients, water, malt (malted barley), brewer’s yeast and hops. A mixture of starch sources may be used; it is called adjunct, maize (corn), rice or sugar. Beer brewing is a complex biochemical

process and it appears to be a complicated process, but in reality it can be simplified into a sequence of steps. The stages are malting, milling, mashing, brewing, cooling and fermentation, followed by maturation (racking), filtering (finishing) and packaging. The most popular varieties of beers are Ale, Lager, Stout and Light. Beer could be from blond to dark, even in different shades, between amber, caramel or grape. This different of tonalities is due to the way the malted barley is roasted. Beer could be called strong, dense, cloudy, and it is always pleasant to the demand of the palates of those who are seduced by its wonderful properties. Beer invites to socialize and share

spaces in classic pubs or bars, in restaurants, with family or friends, at home, at the race track or at the soccer stadium. Dressed in golden yellow or black velvet, beer can be appreciated and consumed thanks to its purity, its appearance as a drink is always a pleasant sight.

La elaboración de la cerveza es un arte que tiene su origen desde la Mesopotamia antigua aproximadamente hace 6.000 años. La cerveza está entre las bebidas alcohólicas más antiguas consumidas en el mundo y es la tercera bebida más popular después del agua y el té. Si tuviéramos que explicar en una forma clara y detallada el proceso de elaboración de la cerveza, resultaría apasionante descubrir la complejidad de cómo esta tradicional bebida, de sabor amargo y aroma noble es producida. In this season of celebrations, parties and gatherings with friends, it’s always good to know what wine to choose for those dinners to come. It could be a stuffed turkey with cranberry sauce and sweet mashed potatoes, or the traditional pork of the season. I will recommend for these dinners two wines from my favorite selection. To begin the pairing with the Turkey, I recommend a Waterbrook Merlot 2007, a wine that seduces with aromas of black cherry, mint and charcoal. When you bring it to the mouth, it shows nuts, smoky molasses and a persistent but wellmanaged wood at the end. This wine is on the market in Palm Beach for around $ 25 and ready to drink but it could be stored for about 5 to 7 more years. Continuing with the pork, a common dish during the holidays, I recommend a Loring Clos Pepe Vineyard Pinot Noir 2006. This complex Pinot with rich tannins and vibrant acidity combines a silky style with plenty of fruit, cherries and blackberries predominating, earth, spice aromas and some smoky notes. The sweet wood is present and it’s

perfectly balanced and developing as expected. Medium bodied with an excellent long lingering finish. This wine is in the range of $ 35 to $ 40. We couldn’t miss the bubbles during this important time of the year, so I recommend a special LaMarca Prosecco di Conegliano-Valdobbiadene NV, this great Italian sparkling pale color, very dry, with mineral notes can dazzle anyone showing baked apple notes, grapefruit and lemon. To the palate shows a creamy texture, medium body, a clean and a classic aroma of bread toast. This great Italian bastion is at a fabulous price of $ 12. If you want to pair this wine with any dish, you can enjoy it with creamy cheeses, cured meats, creamy risottos or light pasta, this Prosecco makes an excellent tribute to the famous Dim Sum Asian and other traditional dishes of Asian cuisine.

En esta época de celebraciones, fiestas y reuniones entre amigos, siempre es bueno saber que vino tomar para esas deliciosas cenas venideras. Sea pavo relleno con salsa de arándonos y puré de batatas dulces o sea el tradicional cerdo de la época. Para estas cenas recomendaré dos vinos de mi selección favorita.

Para empezar la vinculación con el Pavo recomiendo un Waterbrook Merlot 2007, un vino que seduce con sus aromas de cerezas negras, menta y carbón. Al llevarlo a la boca se muestra con notas ahumadas de nueces, melaza y una persistente pero bien manejada madera al final. Este vino se ve en el mercado de Palm Beach alrededor de los $25, está listo para tomar aunque pudiera ser guardado por unos 5 a 7 años más. Para continuar con el cerdo que muchos comen en éstas épocas de festividades, recomiendo un Loring Pinot Noir Clos Pepe Vineyard 2006. Este complejo Pinot con ricos taninos y acidez vibrante combina un estilo sedoso con mucha fruta, predominando las cerezas y las moras, aromas de tierra, especias y algunas notas ahumadas. La dulce madera esta presente aún y esta perfectamente balanceada y desarrollándose como se espera.

De cuerpo medio y un excelente final largo y persistente. Este vino se encuentra en un rango de $35 a $40. No podían faltar las burbujas en estas épocas tan importantes del año, así que recomiendo un extraordinario Prosecco LaMarca di Conegliano-Valdobbiadene NV, este gran espumante Italiano de color pálido, muy seco y con notas minerales puede deslumbrar a cualquiera, muestra notas de manzana al horno, toronja y limón. En el paladar muestra una textura cremosa de cuerpo medio, un final limpio y un clásico aroma de pan tostado. Este gran valuarte Italiano se encuentra en un fabuloso precio de $12. Si quiere acompañar este vino con algún platillo, podrá disfrutarlo con quesos cremosos, carnes curadas, risottos cremosos o una pasta ligera, este Prosecco hace un excelente homenaje al conocido Dim Sum Asiático y otros platos tradicionales de la cocina Asiática.

With that in mind, I asked some of the top residents and visitors in the Palm Beach area, “What is one of your favorite holiday drinks?” The response varied from exotic punches to the classics. 3/4 oz Vodka 3/4 oz Campari Chilled Champagne Pour the Vodka and Campari into a cocktail shaker filled with ice. Shake well • Strain into a chilled champagne flute. Top with champagne.

1 tbsp honey 3/4 glass tea 2 shots Brandy 1 slice lemon Brew tea and fill a tall glass 3/4 full. Mix in honey. Mix in brandy shots. Add lemon slice and enjoy. Serve in: Collins Glass

Is there a Horse Whisperer in you? According to Wikipedia, the free encyclopedia, the definition of a Horse Whisperer is a horse handler who adopts a sympathetic view of the motives, needs, and desires of the horse, based on natural horsemanship and modern equine psychology. Body language is a great communicator between the horse and the handler. Horses use ear and head positions, showing of teeth, swinging of hips and speed of movement to communicate. Recognizing the signs of fear or threat to build trust between the horse and the handler is vital to communication. Horse Whisperers understand that fear, pain and distrust do not result in a relationship that will benefit the horse or the handler. After all, the object is for the horse to be calm and feel safe throughout the training process. A horse that feels safe will bond with the handler and the results can be remarkable. Whenever I hear the term "Horse Whisperer", I first think of my grandfather who was well known for his unique ability with horses especially those considered difficult, dangerous or at times, ready for shipment to the glue factory. I used to watch him from a

distance as he approached each new arrival facing the magnificent animal with calmness, patience, and great presence. He always began the introduction by slowly walking around the small coral never turning his back from the horse. His steps were equally paced and his eyes were locked in with those of the horse. I watched as the horse turned to face my grandfather and was always a gasp away as I wondered if horse would charge. When a horse would become uncomfortable or seem to begin a charge, my grandfather would hold his ground and stand still facing the animal with quiet strength and resolve and eventually the horse would calm and the dance between the two would begin again. The second phase of training began by encouraging the horse to run away as my grandfather made loud noises and large flapping hand movements. This seemed an odd way to build on the trust they had developed but my grandfather explained he was giving the horse the choice to flee or follow. Unlike most traditional horse training techniques where the trainer demands that the horse be subservient, my grandfather was giving the horse a choice. What, When & Where

The training was complete when my grandfather turned his back on the horse and, through body language alone, invited the animal to follow. To my amazement, the horse would follow - head down slowly inching toward my grandfather in quiet submission. This act was proof that the horse somehow understood my grandfather s intentions were not to harm him but rather to communicate. My grandfather would later teach me many important lessons over the years but his horse training techniques taught me at a very young age that through kindness and the sincere desire to understand the needs of another we can develop and nurture a relationship with animals as well as each other. Now you may wonder, how can I develop these techniques for myself? In order to create the proper training environment between yourself and the horse, I recommend the

following: Adopt a sympathetic view of the motives, needs, and desires of the horse. • Use and interpret body language to communicate. • Establish eye contact with the horse. • Approach the horse with calmness, patience, and great presence. • Recognize the signs of fear and threat to build trust between the horse and you. • In the face of adversity hold your ground with quiet strength and resolve. • Give the horse the choice to flee or follow. Congratulations to Palm Beach International Airport Palm Beach International Airport (PBIA) is the gateway to Palm Beach County; it was recently voted third best airport in the U.S. and sixth best in the world by the readers of the prestigious Conde Nast Traveler magazine. United States: One of the worlds top consumer Estados Unidos: uno de los mayores consumidores del mundo

What would you think about a country that has less than 5% of the world’s population and yet it consumes one-fourth of the world’s energy resources? Do you believe that the people of that country should be aware of this fact and should be doing something about it? Well, that country is the United States of America. United States consumes far more energy than any other country -- more than China and Russia combined. Just five percent of the world's population consumes 23% of its energy! That's really extravagant! Imagine if you wasted five times more gasoline as your neighbors...or five times more food...or produced five times more garbage. Your neighbors wouldn't be very happy! Yet, that's what we're doing. In terms of water consumption United States is also regarded as one of the most extravagant wasters of water in the world—consuming roughly 350 liters a day, per person. According to the United Nations 50 liters a day per person is all that is required for drinking and sanitation. If this figure has not yet impacted you I would like you to think of another problem. Energy is more than numbers on your utility bill, every time you buy something; you're also buying all the energy that was used to produce that something. In fact,

much you buy, both economically and environmentally. Reuse: So many items are made to be disposable that it’s easy to forget that not everything has to be thrown away. Reusing not only avoids the production of new items, but it eliminates waste that will be disposed off in a landfill. Recycle: If everyone in America simply separated the paper, plastic, glass, and aluminum products from the trash and tossed in the recycle bin, the amount of waste in the landfill could decrease by 75%.

on average, every time anyone spends an American dollar, the energy equivalent to half a liter of oil is burned to produce what that dollar buys! We want lots of stuff and create huge demand for products of all types. We want more and more! We don’t think where all that is going or how many tons of materials, water, and energy were spent to make it. In other words, if we think of a woman in India who has seven children, she'd have to have more than 20 children to match the impact of an American woman with just one child. Our behavior as the world’s top consumer of energy, water and largest producer of waste affects the entire world. We need to be aware of our actions; we must be conscious of the need to conserve energy and water for the immediate future.

It is important to add another two R’s that would make it possible to achieve this goal, R for Rethinking and R for Refusing. Both are your rights in this society. Rethinking is to examine, we need to change our thoughts in order to change our actions. We need to understand that we as a thinking species have the responsibility to change our relationship with planet earth. We need to find the sustainability, which means to find balance “developing a healthier environment”. Refuse comes from the power we have as consumers, since we have the will to decide whether or not to buy something. Evaluate want versus need. If it’s just a desire, can it be quelled? Our individual actions make a difference in the preservation of the environment.

Now that you have the big picture of the problems, and this truly is the big picture, I will give you some simple steps about how to conserve energy and water in your home and in this way start to help saving the planet. We begin with the R’s. Reduce, Reuse, and Recycle. These three R’s. are the key to living a greener life and reducing the amount of waste we generate.

I like the expression “dream globally, join locally, act personally” written by Diane McDilda in Living Green, because it conveys the idea that people need to visualize a greener world, participate in community improvement activities, and make their own lives compatible with a healthy environment.

¿Qué pensaría usted de un país que tiene menos del 5% de la población mundial y sin embargo consume una cuarta parte de los recursos mundiales de energía? ¿Cree usted que la gente de ese país debe ser consciente de este hecho y debe hacer algo al respecto? Bueno, ese país es Estados Unidos de América. Estados Unidos consume mucha más energía que cualquier otro país - más que China y Rusia juntos. ¡Sólo cinco por ciento de la población mundial consume el 23% de su energía! ¡Eso es realmente extravagante! Imagínese si usted desperdicia cinco veces más de la gasolina que usan sus vecinos... o cinco veces más comida... o produce cinco veces más basura. ¡Sus vecinos no estarían muy felices! Sin embargo, eso es lo que estamos haciendo. En términos de consumo de agua los Estados Unidos también es considerado como uno de los desperdiciadores de agua más extravagantes del consumo mundial de alrededor 350 litros al día, por persona. Rechazar viene del poder que tenemos como consumidores, ya que tenemos la voluntad de decidir si comprar o no. Evaluar el querer frente a la necesidad. Si es sólo un deseo, ¡puede ser reprimido! Nuestras acciones individuales hacen una diferencia en la preservación del medio ambiente. Me gusta la expresión “sueña mundial, únete local, actúa personal”, escrito por Diane McDilda en “Living Green”, porque transmite la idea que la gente necesita para visualizar un mundo mas verde, participar en actividades de mejoramiento de la comunidad, y hacer su propia vida compatible con un medio ambiente mas sano. ¡Vamos a hacer una buena Elección!
