GLAMOROUS ISLAND OF PALM BEACH
Palm Beach was born with “a silver spoon in its mouth.” Their rich pioneers arrived with a dream of building a resort in which to please the exquisite taste and the demands of the wealthy that came looking for summer in the winter season. In 1894 Henry Flagler built his first hotel, The Royal Poinciana Hotel at Lake Worth, attracting the elite to what would become a world’s premier resort destination, Palm Beach. In 1896, Flagler built a second hotel, doubling the size, he named it The Breakers. Guest as the multimillionaire Rockefellers, Vanderbilt, Asters, Andrew Carnegie, and J.P. Morgan vacationed alongside United States presidents and European nobility. Actually, Palm Beach is residence to prestigious families and celebrities. Private yachts glide up and down the beautiful Intercostals Waterways all year, mooring at marinas for overnight docking or extended visits. The island of Palm Beach is a real paradise, its blue beaches with gold sands and calm waters, very inviting to walk and/or practice water sports. Only to walk and see the windows is an experience that nobody can afford to miss! When you're ready to eat, the two restaurants that I like the most are Taboo, with excellent service, an exquisite menu and a romantic atmosphere. The younger generation seems to be the highest at lunchtime, when the residents take the place. The Bice Restaurant is the place to see and be seeing at night. Excellent bar to socialize, people very nicely dressed with the colours of season and very good food. If you want to stay at a waterfront hotel in the Island, places like the Palm Beach Oceanfront Inn or the Breakers are the 5 stars options, on the other hand if you want to be close to the water, like two blocks away from the ocean is the tropical Brazilian Court Hotel. This last one has a beautiful

Si quieren alojamiento frente al mar, la isla ofrece 2 hoteles 5 estrellas, pero si tan solo quieres estar cerca, Brazilian Court es la mejor opción. Es hotel 4 estrellas con un restaurant emblemático en la zona . Café Boulud, donde combinan lo mejor de la cocina francesa en un ambiente casual muy elegante. Sensory Evaluation More and more people are enjoying wine and beer tasting these days, and the choices available have never been so diverse. Tasting is an art and it is also called sensory analysis. Obviously, you can taste without understanding the physiological mechanisms involved with the senses. However, the taster can avoid errors of perception and the influence of suggestion if he or she has some knowledge of the functioning of the taste and odor receptors and is aware of the internal and external factors which can affect judgment. It is very important to know the mechanism of how the human senses function. Every stimulus makes vibrations to the nervous system of the sensory organs (eyes, ears, nose, tongue, skin), these transmit the information to the brain and these must analyzed and interpret the stimulus. Almost every person is able to make a sensory evaluation because with just the fact of consuming a food product this process becomes a sensory analysis. There are different procedures when a taster is going to perform an evaluation; it depends on the type of the product. When tasting wine, every sense plays an important role in the sensory test. Visual impressions should be obtained first, 14

second the aroma, third the taste. For beer, aroma impressions should be obtained first. Then small sips of sample should be taken to minimize sensory fatigue. A taster should allow 15 to 60 seconds between each sample to allow the receptors to re-adapt. When different types of samples are to be tasted, the less flavored product should be tasted first to avoid saturation. Everyone could try a tasting or sensory analysis at home; just get two bottles of different wines, for example a Malbec and a Cabernet. Serve a glass of each wine and try to evaluate the aroma and then take a sip to get the flavor impression, and pay attention. Immediately you will notice the different aromas, would you identify then? It does not matter. You already notice that they are different and it is very important! You can also describe with your own words the characteristics of each wine. Congratulations! You are already tasting or performing a sensory analysis. Tasting is a way of life; we taste everything that comes into contact with our senses. It is an exercise in moderation and common sense. Looked at this way, tasting is a means of perceiving and understanding the outside world.

antes se había encontrado en el mercado una gran variedad. Degustar es un arte y este es también llamado análisis sensorial. Obviamente se puede degustar sin entender el mecanismo fisiológico de los sentidos, pero el degustador puede evitar errores de percepción y ser influenciado subjetivamente si se tiene algunos conocimientos del funcionamiento de los receptores del sabor y el aroma y también estar consciente de los factores externos e internos que pueden afectar la decisión. Es muy importante conocer el mecanismo de cómo los sentidos funcionan. Cada estimulo produce vibraciones al sistema nervioso de los órganos sensoriales (ojos, oídos, nariz, lengua, piel), estos transmiten la información al cerebro y luego deben ser analizados e interpretar el estimulo. Casi todas las personas son capaces de realizar una evaluación sensorial porque con solo el hecho de consumir un alimento ya se está haciendo la misma. Existen diferentes procedimientos cuando un degustador va a realizar una degustación y esto depende del tipo de producto. Cuando se degusta vino, cada sentido juega un papel importante en la evaluación. Primero se obtiene las
Impresiones visuales, luego el aroma y de ultimo el sabor. Para cerveza, las impresiones del aroma se obtienen primero luego pequeños sorbos deben ser tomados para evitar fatiga sensorial. Cuando se degustan diferentes tipos de muestras, se debe degustar primero la menos concentrada para evitar la saturación ce los sentidos. Sírvase una copa de cada uno, aprecie el aroma y luego el sabor y ponga mucha atención. Inmediatamente usted se va dar cuenta la diferencia en el aroma, puede identificar la diferencia?, No importa si no puede identificarlas. Pero ya usted se dio cuenta que los dos vinos son diferentes y esto es muy importante!. Usted también puede con sus propias palabras describir, las características cada vino. Felicitaciones! Ya esta realizando una degustación o análisis sensorial. Degustar es una forma de vida; Nosotros degustamos todo lo que está en contacto con nuestros sentidos. Este es un ejercicio moderado y de sentido común. Veámoslo de esta manera, degustar es una forma de percibir y entender el mundo que nos rodea.

SALSA?
Where did it come from? What’s Salsa Rueda? Salsa music is not something easily defined, as it did not stem from one specific place or person. Instead, it is a combination of multiple roots and cultures as well as the creativity many different persons. In general, Salsa evolved as a fusion of many Latin and Afro-Caribbean dances. It is not only Cuban; nevertheless we must give credit to Cuba for the origin and ancestry of creation, a large part of the dance originated on the island. The French who fled from Haiti brought the Danzón or the country-dance of England /France to Cuba. This dance began to mix with the African rhumbas such as Guaguanco, Colombia and Yambú. Added to this is the Són of the Cuban people, which was a mixture of the Spanish troubadour (sonero) and the African drumbeats. This type of harmonization occurred in other places like the Dominican Republic,
Venezuela, Colombia, and Puerto Rico, even though in smaller degrees as in Cuba. Bands of these countries took their music to Mexico City in the era of the famous films of Perez Prado, and shortly after, arrived to New York. It was in New York where the term "Salsa" that means sauce was created. The term became popular as nickname to refer to a variety of different music, from several countries of

Hispanic influence: Rhumba, Són Montuno, Guaracha, Mambo, Cha cha cha, Danzón, Són, Guguanco, Cubop, Guajira, Charanga, Cumbia, Plena, Bomba, Festejo, Merengue, among others. Salsa varies from site to site. The metamorphosis of salsa to what is heard and danced in clubs today has been a long, slow, and varied process. In New York, for example, new instrumentalization and extra percussion were added to some Colombian songs so that New Yorkers that dance mambo "on the two" - can feel comfortable dancing to the rhythm and beat of the song. Now in Miami, CASINO Rueda is very popular in dance school and nightclubs. Rueda is a form of Salsa danced in a round, with one person calling out the steps. All the dancers know the moves that correspond to the calls, or hand signals. There are over 170 documented calls, and more being invented all the time. They have basic steps considered the “core” steps and are danced in a similar fashion around the world. Some of them are: Al Medio,

What advice will you give women who want to carry out a change in their lives? For example, stop smoking, move to another country, or make a career change? That what is important is to think about the results and the goals.
In your opinion what are the more pressing social problems that people have to fight against? Hunger and education, 75 million children in the world still receive no education and half of the population lives with less than $2 a day. In Latin America there are 9 million children that suffer from malnutrition and 22 million that have no access to education. As long as there are hungry children in the world dying due to avoidable
causes, we are closer to being apes than a modern and sophisticated civilization. If we invest in our children today, we’ll have productive adults tomorrow and a more prosperous society. Education is the magic formula for this.
Do you assure that women today know what they want and fight to get it. Do you attribute your success to this? How did you achieve it? Along my career path I’ve had to persevere, put a lot of effort and dedication to feel satisfied with my work. I think it is very important to fight for what you feel and believe in. That is what I have done all this time. There are times when I get really tired. But I gave up many facets of my life to get to where I am now so I do my best no matter what, I love what I do and to me this is what makes one successful in life.

A lo largo de mi carrera he tenido que ser muy perseverante, poner mucho esfuerzo y dedicación para poder sentirme satisfecha con mi trabajo. Creo que es muy importante luchar por lo que uno cree y siente. Eso es lo que he hecho todo este tiempo. ¿Qué consejo les das a las mujeres que desean realizar un cambio en su vida? Por ejemplo, dejar de fumar, mudarse de país o elegir otra profesión. Que lo importante es pensar en los resultados, en las metas.
¿Cuáles son para ti los problemas sociales más apremiantes que se deben combatir? El hambre y la educación; 75 millones de niños en el mundo aún no reciben ningún tipo de educación y la mitad de la población vive con menos de 2 dólares al día. En Latinoamérica son nueve millones de niños pequeños los que sufren de desnutrición y 22 millones que no tienen acceso a la educación. Mientras haya un niño con hambre en el mundo, muriendo por causas evitables, estaremos aún más cerca del simio que de una civilización sofisticada y moderna. Si invertimos en nuestros niños hoy, mañana tendremos adultos productivos y una sociedad más próspera, equitativa y en paz. Para esto, la educación es la fórmula mágica.

FLYING Congratulations to Palm Beach International Airport Palm Beach International Airport (PBIA) is the gateway to Palm Beach County; it was recently voted third best airport in the U.S. and sixth best in the world by the readers of the prestigious Conde Nast Traveler magazine. In the last century, the humankind has developed technology and the advances of science have allowed us to live a more comfortable life, but what is the price we are paying? With this accelerated pace and environmentally uncontrolled industrialization and urbanization, we have been contaminating the natural environment, deteriorating almost all its elements, breaking the cycle of life of many animals and plants, and destroying nature as if we were not part of it. We need to wake up and be aware that we are part of nature. Also, it is imperative find a way to live in harmony with our environment because the mankind’s destruction of nature will lead to mankind destruction, too. For the foreseeable future, sustainable management of the environment will be one of the greatest challenges confronting the world imposing a global cooperative response. I believe that environmental education is the first step that could help us to alleviate these problems. We have to get involve with our local pollution problems, understanding how our individual actions affect the environment, increasing public awareness, and inspiring our neighbors to take personal responsibility for nature preservation and restoration. Only personal accountability will provide us with the answer; nevertheless, we cannot forget
that citizens united in one voice ensure that politicians are held accountable.
