I sincerely appreciate the opportunity they are giving me to write this column. It is certainly not an easy challenge with how creative the food industry has gotten recently. Each opinion is different and it is a fact there as many opinions as people who go to these restaurants; however I take great pleasure in writing this column. Besides the amazing Chef Ferrán Adria and his creative genie who completely transformed the traditional food industry, it is not a secret that other plenty spectacular chefs from around the world have made South Florida their home stage to experiment with new food creations. From my own personal experience, eating is an art of its own. Today I want to invite you to forget about what you know about dining and start thinking of it as an expression of art. Nowadays it’s not only about taste, but also experimenting new places and new concepts. I assure you, you will always have an enriching experience. My suggestion is to ask for the tasting menu that will most likely come with the best wine pairing selected by the chef himself. Tasting menus usually have the most exquisite food and the best selections from the house. I think dining options in South Florida are getting better and better and even though I dare to say we still don’t have a top world wide restaurant we do have an outstanding selection of fashion cuisine restaurants. 14

Café Martorano Italian American Restaurant 3343 East Oakland Park Blvd Fort Lauderdale, FL 33308 www.cafemartorano.com $$$ This is one of the best choices if you feel like eating authentic Italian food in Miami. As soon as you walk inside you’ll see how the atmosphere of the restaurant reminisces the “mafia”. TV screens are continually playing movies similar to the famous movie “The Godfather”. The food is excellent but the service is nothing to write home about… If you are willing to accept the conditions I would say you should definitely come and try their food. They say the accept reservations but in reality they don’t. You will have to get there before doors open, so around 5:50pm if you want to have a place to sit down. The place turns into an adult disco bar with really good music at around 7:30pm every night. This restaurant has another location at the Hard Rocket Hotel & Casino in Hollywood, FL and they recently opened two more in Las Vegas and Atlantic City respectively.

This is the best option if you enjoy simple Italian food and would like to enjoy a lunch or dinner in a very attractive place and excellent service. Casa D’Angelo along Café Marturano, are probably my first options in Fort Lauderdale. Casa D’Angelo offers a great menu with reasonable prices. Their wine cellar is reason enough to visit this restaurant.

Chima Brazilian Steak House 2400 E Las Olas Blvd Fort Lauderdale, FL 33301 954-712-0580 • www.chima.cc/site $$$ Of all Rodizzios I’ve tasted (which are many in South Florida). Chima is definitely the most glamorous. It is situated in the popular Las Olas Blvd, which in case you didn’t know, is the perfect place to see and be seen. Their entrance patio is home to their full liquor bar featuring a variety of wines and champagnes from around the world, and it is also the best place in the house to listen to live Brazilian music. The restaurant is an attractive combination of Rodizzio, in fact, you can see gauchos walking around with an exquisite selection of meat including beef ribs, top sirloin, lamb, chicken, quail, sausage, fish, and of course, their famous Picanha. They have a delicious salad buffet including soups, cold seafood, cheeses and different varieties of salad. But BEWARE! Do not fill yourself up with the salad bar, leave room to enjoy my absolute favorite cut, the picanha.

Under new management, the talented and world renowned Peruvian chef Gastón Acurio, owner of the famous restaurant “Astrid y Gastón” in Lima, Peru, has made the Mandarin Oriental Hotel in Miami his new stage to let his creativity explode. Ask for the talented young chefs, trained by Gaston Acurio himself, and ask them to cook you a special tasting plate. You will not regret it.

SLS Hotel South Beach The Bazaar by José Andres 1701 Collins Ave., South Beach, FL 33139 305-674-1701 • www.sbe.com $$$$ This is home of one of the students of the popular Spanish chef, Ferrán Adriá, now famous throughout the USA thanks to his TV show. This restaurant is located in the hall of the SLS Hotel, it might be easy for you to miss it, but trust me! You have to go! Their tapas are delicious… Let your self go in an exquisite tasting adventure with their modern and magnificent tapas selection!

Xixon 2101 SW 22nd St., Miami, FL 33145 www.xixonspanishrestaurant.com (305) 854-9350 $$ If you find yourself desiring simple traditional but delicious Spanish food this

is the best option. They have a vast selection of tapas and wine. Xixon is an owner-run restaurant, so you can meet the genius behind it all, Mrs. Begoña from Xixon, Asturias. The restaurant is also home of a small delicatessen store where people can get high quality products imported directly from Spain.

The Breakers The Seafood Bar One South County Rd., Palm Beach, FL 33480 • 561-655-6611 www.thebreakers.com $$$$

Simply the best Gazpacho I’ve had outside of Spain! This magnificent hotel located in the island of Palm Beach, offers many exquisite dining options; like their famous brunches every Sunday and on special dates like New Year’s Day. My recommendation however is definitely The Seafood Bar, not only is their gazpacho delicious, but the view is absolutely romantic as you have clear view of the ocean. Plus, it’s always nice to visit this beautiful hotel

Vienna Café is a different alternative when you find yourself looking for a restaurant in the city of Davie. This restaurant is home to authentic Viennese food. Nothing can compare to their delicious Muschroom Fricassee, and of course… The traditional Weiner Schnitzel.

Bice Palm Beach 313 Worth Avenue, Palm Beach, FL 33480 (561) 835-1600 www.palmbeach.bicegroup.com $$$ Bice has been the favorite Italian Ristorante for family dining and special events, not only on Palm Beach Island, but throughout Palm Beach County for more than two decades. Their winning combination of fine dining and service is only surpassed by the warm friendly atmosphere you'll feel from the time you arrive, through dessert. General Manager, Jose H. Gonzalez and Executive Chef Elmer Saravia, deliver unparalleled cuisine and personal attention for you and your guests. The freshest of ingredients, superb wine list, home made pastas, fish, chicken, lamb and steaks will delight the most discerning palates. Save room for dessert as you won’t want to miss Elmer’s after dinner specialties. My favorite warm chocolate volcano cake, delicious! Bice Palm Beach is also known to be a favorite after dinner, late night Palm Beach social scene. Friday nights, the after dinner crowd gathers around the bar with Dj music and dancing. Open for lunch and dinner seven days a week. Happy Hour daily.

Seasons 52 11611 Ellison Wilson Rd Palm Beach Gardens, Florida 33408 • 561-625-5852 $$ Conscious diners feel they can "indulge in every course" at these New American gems because everything is under 475 calories – from delicious flatbreads to scrumptious "shot-glass desserts" – on the reasonably priced menu that changes with the seasons; while big eaters complain portion sizes can be "a bit lilliputian", the exceptional service, "effortlessly classy" setting, "hopping bar" and "top-of-the-line wine list" are other reasons this option is "always crowded."

Devine Bistro 2465 S State Road 7, Suite 300, Wellington, FL 33414 • 561-204-5432 $$ The chef is a genius in the kitchen. My favorite dish is the Porterhouse Pork Chop. Cooked to perfection by someone who knows how to make consistent mouthwatering meals. The friendly atmosphere is lively but not overpowering. Food is excellent, service outstanding and there is an all you can drink wine special going on. Good for friends or quiet night with special person.

Casa Tequila Wellington • 12795 W Forest Hill Blvd 11A Wellington, FL 33414, (561) 557-1378 www.casatequila.com $$ Loved Casa Tequila since the first time. This place has a very cool atmosphere and amazing food! The real and fresh salsa was a great start with chips homemade and fresh from the oven. Prices are reasonable and the food is excellent. Big portions, everything is fresh. Sangria is delicious and great margaritas too. Fridays you can enjoy mariachis band. The restaurant is large so can accommodate larger parties.

The February event kicks off Valentine’s and Presidents’ Day weekend, February 13 and runs through February 22. Not only is the extended holiday weekend a cause for celebration, but while winter weather will be in full force throughout the country, South Florida’s charming village by the sea, Delray Beach, will be the perfect beachfront winter paradise. “We have the unique distinction of being the only event that has both the ATP Champions Tour and ATP World Tour at the same venue in the same holiday week,” said Mark Baron, tournament founder and director. “Tennis fans are able to reminisce by watching their all-time favorite players and also scope out new players.” The ATP Champions Tour event pits a US team with Michael Chang, James Blake and Justin Gimelstob against a European squad led by Goran Ivanisevic, Emilio Sanchez and Mark Philippoussis. The first team to win five of the nine matches will retain the Delray Beach Cup. A highlight to opening weekend will be Super Sunday when all six ATP Champions Tour stars will be in action. While the 10-day event is known for tennis, it is also a full-fan entertainment experience with attendance reaching 60,000 fans, and more than 50 hours of live tennis is 24

The Lionfish Invasion in the Atlantic Ocean and Caribbean Sea

Did you know that there is one particular fish in the South Pacific and Indian Oceans that is able to fit the palm of a human hand could kill about eighty percent of the fish that live on a reef? The fish that is able to be this destructive is known as the lionfish (Pterois volitans). It is typically known for its beautiful features and lethal poison. Lionfish are indigenous to the Indo-Pacific Ocean; however, the Atlantic Ocean and Caribbean Sea have recently been invaded. In the early 1990's, the red lionfish was introduced to U.S. waters in Florida from one private aquarium that burst during a hurricane, spilling 6 lionfish in the Biscayne Bay in Miami. The fish then multiplied and expanded into waters off the Bahamas and the rest Florida, and has now been sighted throughout the Caribbean, Mexico and even off the Northeastern U.S. (Kennedy, n.d.) The small predators with the far-reaching appetites have been found too inside the Indian River Lagoon and Loxahatchee River of Florida in 2011, marking the first time they made their way inside any river on the Atlantic said Craig Layman, a biology professor at Miami's Florida International University. With the lagoon being an important nursery for scores of species, having a predator with a ravenous appetite living in it could be problematic —

even more so since each female lionfish can release 30,000 eggs every four days and almost 2 million in a lifetime. (Masterson, 2007). S.O.S. We must prevent that!

CONSEQUENCES? 1) Dead of our reefs in Florida and Caribean Sea. Studies show that lionfish could be decreasing Atlantic reef diversity by up to 80 percent (Waite, 2011). They are the biggest threat to the reefs because with having no natural predators in the Caribbean, it allows them to reproduce in rapid succession year-round. Experiments have shown that native reef fish may avoid feeding on juvenile lionfish, probably because of their venomous defense apparatus. Also, they prey on herbivorous fishes that consume macro algae and help protect corals from algal overgrowth. 2) Impact the economic value of the shelf reef ecosystem. There is great concern about the effect of the invaders on commercial and recreational fisheries. Since lionfishes pray on crustaceans and smaller fishes that are usually consumed by snappers, groupers and other native fishes, their existence could negatively affect the food chain of many commercial and other species. As one NOAA coral reef manager in North Carolina stated,

What & When & Where

31

"our biggest concern is how they impact the economic value of the shelf reef ecosystem. There may be reduced economic returns from commercial fisheries. The economic value of heavily impacted and devastated reefs may be reduced also as recreational divers and snorkelers stop visiting, and perhaps causing a major collapse of the local tourist industry. Recreational and commercial value of reef-related pelagic and benthic species is close to a half-billion dollars each year to the Carolinas. "As lionfish colonize more territory in the Caribbean, they can have a devastating effect on coral reefs already stressed by climate change, pollution, disease, overfishing, sedimentation, and other stressors. www.coris.noaa.gov/exchanges/lionfish

ANY SOLUTIONS??? The population of this invasive specie is growing at uncontrollable rates. Marine biologists and everyday snorkelers have started taking the matter into their own hands to get rid of them promptly. Although it is extremely unlikely that lionfish will be completely removed, there are many projects in place to control lionfish abundance. Many projects working against the lionfish are currently in action like unlimited amounts of open water hunting for these species. Persuading restaurants to start serving lionfish as a luxurious dish, to bring level of lionfish human consumption up. Although it requires careful harvesting, lionfishes “make wonderful sushi and ceviche. They also are excellent when eaten fried whole or filleted. There are websites that provide recipes and techniques for harvesting and preparing lionfishes for edible consumption. The Bahamas Reef Environmental Educational Foundation (BREEF) encourages the consumption of lionfish and has been actively promoting the capture, safe handling, cleaning, and preparation for the table. Lionfish hunting competitions are being held, with prizes to the winners in catching the most lionfish within the time frame given. (World Lionfish Hunters Association). Federal, state and local partners, as well as divers and dive operators,

public aquaria, and foreign fisheries departments have been working together to document lionfish sightings and remove the fish when possible. Divers are encouraged. Understanding the problem of invasion, it is unlikely that the lionfish invasion can be reversed. Due to their extensive geographical range and diversity of habitats and depths they occupy, any major attempts to eradicate existing lionfish populations would be impractical and doomed to failure. Control is now the only option left. It is necessary scientists and managers continue to collect data and develop measures to control the expansion of lionfish populations, while also identifying and reducing the negative impacts of established populations on different marine communities in the Caribbean. Other measure to control the lionfish population explosion include killing those lionfishes that are easily spotted and captured; controlling the aquarium trade in lionfishes in the Americas; encouraging a lionfish fishery for human consumption and other commercial industries uses. Florida Fish and Wildlife Conservation Commission at their regular meeting in Fort Myers, approved changes that take effect Aug. 1, 2014 and include: •Prohibiting the importation of live lionfish. •Allowing the harvest of lionfish when diving with a rebreather, a device that recycles air and allows divers to remain in the water for longer. •Allowing participants in approved tournaments and other organized events

to spear lionfish or other invasive species in areas where spear fishing is not allowed. This will be done through a permitting system. "Changes like these will make it easier for divers to remove lionfish from Florida waters and will help prevent additional introductions of lionfish into marine habitats," REFERENCES The IndoPacific lionfish invasion of the U.S. south Atlantic sea coast and Caribbean Sea. Making Good human consumption is not adequately tested. There have been NO long-term studies conducted on the safety of GMO on humans.

We support the Non-GMO Project, a nonprofit dedicated to promoting the use of non-GMO ingredients and verifying products that avoid GMO ingredients. www.labelgmos.org/blog

What are GMOs or genetically modified organisms? Genetic Modification is a technique that changes the genetic makeup of cells, including alteration of genetic materials and other biologically important chemicals, and allows genes to move across species. It produces new combinations of genes and traits that do not occur in nature. Plants that have been altered in this way are called GMOs, or genetically modified organisms, or GE, genetically engineered. The correct scientific term is "transgenics." GMO plants are modified to include genes allowing them to survive the application of chemical herbicides, or cause the plants to produce pesticides.

Much of the World Already Requires Labeling of Genetically Engineered Foods 61 countries with over 40% of the world’s population already label genetically engineered foods, including the entire European Union. China labels genetically engineered foods. California should lead on this important issue. What do these countries know that we don't?

What foods are most likely to contain GMOs? With regard to our North American food supply, approximately 93% of soy, 88% of field corn, 94% cotton, and over 90%

A Simple Proposition for California in 2012 The California Right to Know Genetically Engineered Food Act is simple: The initiative would simply require food sold in retail outlets to be labeled if it contains genetically engineered ingredients. It will be a huge step towards the transparency people deserve. Once people KNOW what is in their food, they can then make the informed choice to avoid the potential health risks of GMOs until more research on their long-term effects can be done. www.labelgmos.org/blog

Raw foods are fruits, vegetables, nuts, and seeds that have not been cooked, pasteurized, steamed, broiled, grilled, roasted, baked, fried, irradiated, or exposed to heat above 115 degrees F. The application of heat above this temperature denatures food and creates toxins. Many of the valuable nutrients within food are heat sensitive. On average, the cooking process destroys: 50% of the minerals and fiber 75% of the protein and vitamins 100% of the hormones, oxygen, phytonutrients, and enzymes. A deficiency of these vital nutrients contributes to a weakened immunity, low energy, susceptibility to disease, and pre-mature aging. Cooked food also creates free radicals, twisted proteins, twisted carbohydrates,

and Advanced Glycation End-products (AGE’s.) These by-products of excess heat are toxic and a burden to the body’s immune system. Free radicals are deficient in energy and act like energy vampires. Because they have an unstable electron pair they seek out and “steal” electrons from stable molecules to satisfy themselves. Raw foods contain life-giving, sustaining, and healing nutrients critical to optimal human health. In their natural state fruits and vegetables are replete with bio-available vitamins A, B complex, C, D, E, K, and U. These vitamins boost immunity, brain function, are anti-cancer, reduce stress, and strengthen nerves. Vitamins also have a powerful antioxidant activity. These antioxidants act like “energy givers” and have spare electrons which are used to neutral-

“Let food be thy medicine, and let medicine be thy food.” Hippocrates, ca. 400 BC

ize free radicals by sharing their spare electrons. Minerals such as calcium, iron, magnesium, potassium, zinc, and many more are the building blocks of cells, bones, and tissue. They are good for your brain, bones, hair, skin, teeth, nails, diabetes, sexual health, and are anti-aging. Your body is constantly repairing and rebuilding itself and an ample supply of minerals are necessary for healthy re-construction. Minerals are more bio-available in Araw foods. Hormones and oxygen are energy giving nutrients. Raw foods contain an abundant supply of bio-identical hormones such as Abscisic acid, Auxins, Cytokinins, Ethylene, Gibberellins, Brassinosteroids, Salicylic acid, Jasmonates, Polyamines and many others. When consuming a diet high in raw foods these bio-identical hormones contribute to increased vigor, vitality, stabilized mood, and sexual health. Raw foods are also rich in oxygen which increases energy and helps build & repair

tissues and cells. Enzymes such as amylase, protease, and lipase are necessary for digestion and critical for every metabolic function in your body. They are the catalyst for every single chemical reaction. Enzymes are required for every biological process, every action, every muscle movement, every sense, every thought, and every word spoken. The more enzymes you have inside of you the more energy you have and the more alive you become. Enzyme depletion has been associated with autism, arthritis, allergies, cancer, cardiovascular disease, old age and death. People on the Standard American Diet (SAD) are chronically deficient in vital nutrients. Transitioning to a healthier diet consisting of at least 80% raw foods naturally replenishes these critical nutrients often resulting in astonishing recovery, good health, energy, dynamic vitality, and the harmonious integration of your body, mind, and spirit.

Identity Thief By: Erica Rohrscheib

Although the role of our mothers and fathers coincide in many areas there are a few values that only our fathers can give us. It is the role of our father through love, discipline, and mentoring that is instrumental in shaping our identity. In primitive cultures this is called the ritual of initiation. It is the natural gift of the father to help his son or daughter, especially during puberty, to identify their special talents and gifts. Fathers by nature encourage us to take risks, whereas mothers are more protective. It is when we take risks that we discover our identity and potential. It is the role of the father, not only to help us bring out those attributes but also to encourage us and be our mentor in developing them. We can all identify with how important it is to get our father’s approval. So if you grew up without a father, or a disinterested, dysfunctional, perfectionist or emotionally absent father, it is very likely that you suffer from uncertainty as to whom you are. You may experience confusion about your worth and authenticity. In the United States, the percentage of children who are growing up in a

place other than at home with their natural parents has increased. The majority of the time it is with single mothers. No matter how good the mother, she may never completely replace the role of the father. Many people, who have not had a father to free them toward their identity, have spent their lives searching for themselves in all the wrong places. The problem is that if you do not know who you are, you end up being "someone else. For those who didn’t have a positive experience with their fathers, to see God in a role of a loving father can be a difficult and a confusing task and it can take a lifetime to separate these two father figures. The image of the earthly father attempts to rise many times as a shadow to prevent us from seeing the fatherhood of God as the father par excellence! What does this all mean? Our identity is born and formed in our relationship with our own father. It begins with our biological father and other father figures, but it is completed in our relationship with our heavenly father. Perhaps you have never had someone wholesome tell you "imitate me." Maybe you still do not know who you are, why

you are unique, or just how special you are and the talents and gifts that you have. Perhaps you have spent your life searching for who you are. God Promised the Restoration of Fatherhood: “Behold, I will send you Elijah the prophet before the coming of the great and dreadful day of the Lord. And he will turn the hearts of the fathers to the children, and the hearts of the children to their fathers, lest I come and strike the earth with a curse.” -Malachi 4.5-6. Today, find your identity in God. He will say today "Do it.” Take a chance and find your potential. Take the risk and discover whom you really are. I'm proud of you and I'll be here to catch you if you fall. Rejoice in God the father who waits for you to cry out before him as the child you are and receive back all that the enemy has stolen from you. Let God restore your life and let your children know the father that God raised in you!

If you have never received Jesus Christ or if you once walked with God but you turned away and you want to return to the feet of the cross, say this prayer: Father God, I come to You recognizing that I am a sinner and my sin separates me from You. Jesus, I repent of all my sins. Forgive me. Wash me with Your blood. I accept You as my Lord and Savior. I believe You died for me and God the Father raised You from the dead. Jesus Christ, come into my heart and change me. I proclaim that You are my Lord and my Savior and if I were to die today, when I open my eyes I will be in your arms. In Jesus’ name I pray, amen. We want to pray for you. Contact our House of Peace in Wellington and let us know that you just prayed this prayer. Connect with us so that we can pray for your needs and serve you.
