Cream Cheese This is one of my new favourite things to make, it is absolutely delicious and hands down the easiest recipe to replicate. All you need is a block of cream cheese, your favourite seasoning or BBQ rub, some parchment or butcher paper and a smoker. If you only have a gas grill THAT’S OK! with a few wood chips and some tinfoil you can turn almost any grill into a smoker. You can serve the smoked cream cheese on its own with some crackers or feel free to add some jam, jelly or sauce to the mix. You can go sweet or savoury. I haven’t come across a bad combo yet.

What you will need • 1 250 gram block of cream cheese • 1.5 Tablespoons of Broil King - The Perfect KC BBQ Rub

• Small Sheet Pan • Small Sheet of Butcher or Parchment Paper (enough to cover sheet pan)

CLINT is a full time grilling social media content creator and BBQ genius, Clint loves to experiment with flavours and focuses on the way food looks when its presented, colour is key. Clint is an experienced grill master, pit master, food stylist, photographer and videographer. Follow me on Instagram cookinwithclint I can’t wait to share some of the tips I have learned along my BBQ journey with you!

Directions 1. Start smoker and get your temperature somewhere between 225-250F 2. Remove cream cheese from fridge and unwrap foil leaving the blue sheet on the bottom of the block 3. Score cream cheese approx halfway into the block to allow more surface area for seasoning to absorb 4. Season block with The Broil King Perfect KC BBQ Rub with a nice even coating 5. Line Sheet Pan with non stick paper of choice 6. Put the pan in the smoker for 2 hours 7. Remove, let cool for a few minutes before you serve

P.S. Always make at least 1 more block than you think you will need.

T H E K I TC H E N Trio recently introduced a 6-course tasting menu, making it one of the most refined restaurants in the region. Trio offers an ever changing a la carte menu that is built to highlight the seasons. High quality products are very important to the Chef Rennie & his team such as Snake River Farms Wagyu, B.C. Halibut & Nova Scotia Lobster. Rennie & Sous Chef Mike Pinke visit local farms & local markets weekly from Spring until the snow flies. Future plans include using local plots & a local farmer to grow their own produce unique to Trio. Tasting menus offer elevated, balanced plates with presentations that are as visually appealing as they taste. The increasingly polished vegetableforward cooking is light, bright and fresh, hinging on often novel combinations of superb Ontariosourced ingredients. Most of the minimalist menu descriptions are purposefully under stated, such as Wagyu Flat Iron - Romesco, Caullini, Frites, Hamachi -Cucumber, Avocado, Jalapeno or Milk Ice Cream Rhubarb, Spruce, Strawberry Sorbet. Trust Chef Rennie & your server; you won’t be disappointed.

Without a doubt Hoover has proved herself a powerhouse author with a large catalog of books to choose from. Her latest book Reminders of Him tells the story of Kenna, a mother trying to find her way back into to her daughter’s life. It’s a story of forgiveness, redemption and finding love in the places you least suspect.

It’s 2010. Bix Bouton is desperate for a new idea. He’s forty, with four kids, and restless when he stumbles into a conversation with a professors who is experimenting with downloading or “externalizing” memory. Within a decade, Bix’s new technology, Own Your Unconscious—that allows you access to every memory you’ve ever had, and to share every memory in exchange for access to the memories of others—has seduced multitudes. But not everyone. Jennifer Egan’s book explores themes like longing, our need for real connection and the morality of how far technology should reach.

EXCEPTIONAL STYLE SELECTION AND SERVICE FOR HUMBLE BEGINNINGS

47 YEARS

UNIQUE FINDS IN STORE AND ONLINE

If you live in Kitchener-Waterloo, there’s a good chance that Snugglers Furniture was a part of your furniture shopping experience at some point.

“We carry a lot of things you won’t find anywhere else,” says Christina. There’s never two of the same thing on the floor and the product lines they carry offer extensive custom options.

Many years ago, Christina Springer, founder of Snugglers Furniture, took an interior design course in her native Austria, but when she moved to Canada she worked at a factory, in an office and as a waitress. After a serious workplace accident in 1996, Christina decided to return to school to take the Interior Design course at Fanshawe College in London.

Among the Canadian brand names available at Snugglers are Canadel, Décor Rest, Amisco, Trendline, Jaymar, Romano, Geovin, Huppe and Mobican. Our website features import products such as Ashley Furniture, the largest furniture manufacturer in the world and other notables such as Magnussen and Sunpan.

Christina’s appreciation for comfortable, creative home décor inspired her to open a 1,400 square foot shop at 55 Erb Street in Waterloo. The store featured bean bag chairs, assorted plants and other funky furnishings. Christina admits her initial foray into home furnishings was less than successful and feels her first line was too contemporary for that time.

EXCEPTIONAL CUSTOMER SERVICE To help customers sort through their choices and make the Snugglers’ experience enjoyable and easy, the Snugglers team of non-commissioned salespeople and interior designers provide professional, personable assistance including an “Interior Design” software that allows customer to see their potential room layout done right before them. Several on-staff interior designers offer in-home consultations as well.

LOCAL SUCCESS WITH EXPONENTIAL GROWTH Sales for Snugglers was less than stellar, and Springer acknowledged that she had to make some changes by shifting from funky to fabulous Canadian furniture and accessories.

“Our selection, options and our service are second to none” - Garry

That shift, it turns out, was key to Snugglers’ growth and imminent success, resulting in expansion and, in time, relocation to its current home at 30 Weber Street North, Waterloo.

SNUGGLERS FURNITURE

30 Weber Street North, Waterloo

“We made the move here in 1983, expanding the showroom to over 8,000 square feet,” says Garry Springer, Christina’s son and Snugglers’ co-owner who joined the company eighteen years ago. Snugglers also acquired a new 15,000 square foot warehouse at 266 Marsland Dr. in Waterloo in 2014 that has over 5,000 square feet of showroom space.

POTENTIAL

Jo Alcorn Principle Designer Alcorn Home Design

Taking a small space and making the best use of the square footage always thrills me. This teeny tiny bedroom had a dramatic makeover that stunned the clients.

Photography: Jason Hartog

Given the tiny footprint of this room, I opted for bunk beds. They are always a great feature in a small space to help get the most out of the square footage. In a design project, I love to start with the colour scheme. We transformed the walls, ceiling and closet door with paint. I wanted it to be fresh and bright so I used Benjamin Moore’s Chantilly Lace OC-65 on the walls. I also wanted to tie in a traditional cottage colour, so on the ceiling and barn door I used Benjamin Moore’s Smoke 2122-40. Painting a ceiling adds a twist to the space when you walk in and really adds a wow factor to anyone sleeping in the space.

Once the bones were in place for this room the real fun began! No bedroom is complete without the most supple, comfy mattress! I used an Emma Sleep mattress on both beds. This is the world’s most awarded mattress for a reason! They combine hotel-quality comfort, pressure-relief, motion-isolation, cooling, and zoned support – come on, now who doesn’t want to sink into this? I also topped them with their three-layer foam pillows that are perfect for any type of sleeper. Now for the bedding. I turned to eco-friendly Canadian made envello. They are premium quality bedding designed with the finest and strongest thread count. For the sheets, I used their Premium Percale set in Ciel and topped them with a white duvet cover to make a huge dramatic contrast. I also love setting up a guest suite with throw blankets and towels so I also used envello’s bath towels and their light weight alpaca throws to add the ultimate luxury for any guest. Let’s talk smart lighting. I really wanted to add some special lighting which tied into the cottage theme, but it was the bulbs that really wowed me! I used the Philips Hue White and Colour Ambiance Starter Kit. The light bulbs use smart technology where you simply download an app (or use the remote control dimmer switch) and you can instantly set the mood with millions of shades of white and colour light. There is even a really cool feature where you can use ‘Wake Up With Light’ for a relaxing simulated sunrise on your schedule. And finally, the icing on the cake…the accessories, art work and décor. I headed to Homesense where I literally found the perfect assortment of furniture and décor for amazing prices. From the artwork and rug to gorgeous natural wood wall hooks, a side table, and throw pillows, they had the perfect finishing touches to pull the space together.

Egg salad with fresh dill DANA SHORTT Owner of Dana Shortt Gourmet & Gifts

INGREDIENTS: • 10 hard-boiled eggs, peeled (tip – older eggs are much easier to peel) • ¼ cup shallots, minced

• ¼ cup celery, finely chopped Most egg salads are bland and loaded with mayonnaise, but this one is vibrant with fresh dill and chopped veggies. It’s the perfect choice for an upcoming summer Picnic – try it on sliced olive bread or baguette. For a low-carb, lower-calorie version, spoon the salad onto a piece of bibb lettuce and roll up in a rice paper wrap.

• ½ cup red bell peppers, finely chopped • ⅓ cup fresh dill, chopped

• ⅓ cup mayonnaise, use more if you like • Salt and pepper to taste

• A couple teaspoons of sriracha hot sauce if you like it spicy

METHOD: 1. Using a box grater, grate the eggs into a large mixing bowl. Add the other ingredients and stir to combine. Season to taste with lots of salt and pepper.
