The days are getting shorter and shorter and we are losing the light. A great way to combat the loss of light and time outside is to create comfy corners at home where you can sit and sip a warm tea, read a book or cozy up to watch a movie. Add a fur lined throw, a gorgeous candle and a new pillow in a warm fall colour to set the tone

Have an unused corner you’ve always been dreaming of using? Try creating a new space that you can enjoy this fall. I am loving these ideas from Walmart to create a fresh new space in the home. MADDIE & KIKI This dish could fool you into thinking it’s just another healthy recipe (and it totally is!) but it’s also rich and flavourful enough to be labelled as a comfort food as well! Serve as a hearty appetizer or as a main dish alongside a garden salad, just don’t forget the napkins, as the squiggly wiggly spaghetti squash can sometimes be a little messy! SERVES 2-4

BISON BOLOGNESE SPAGHETTI SQUASH RINGS

Prep Time: 15 minutes Grill/Oven Time: 1 hour, 30 minutes Total Time: 1 hour, 45 minutes INGREDIENTS 1 tbsp (15ml) avocado oil 226g (8oz) Noble Premium Bison Steak Cubes 2 tbsp (30ml) olive oil 1 carrot, finely minced 1 small yellow onion, finely minced 2 stalks celery, finely minced 3-4 cloves garlic, finely minced Salt and pepper to taste 1/4 cup (59ml) red wine

DIRECTIONS

Preheat a skillet over medium high heat. Add the avocado oil. Add the bison and cook until nicely browned on all sides - about 10 minutes. Add the olive oil, carrot, onion, celery and garlic, and cook until fragrant - about 5 minutes. Season to taste with salt and pepper. Add the red wine, beef stock, tomato paste, chopped tomatoes, oregano, and bay leaf. Stir. Cover and reduce the heat to low. Simmer on low heat for 1 hour and 30 minutes, until the bison is tender. Meanwhile, preheat oven (or grill) to 400° Fahrenheit.

Using a sharp knife, carefully slice the squash into 1.5 inch thick rings. Remove the seeds and place on a parchment lined baking sheet. If grilling, put them on a plate to bring out to the grill. Spray with avocado oil spray, and season with salt and pepper to taste. Roast for 30 minutes per side in the oven, or grill them over direct heat for 15-20 minutes per side. To serve: spoon the bolognese into the centre of the squash rings. Top with the cheese, and broil until the cheese melts. Garnish with fresh basil.

1 cup (237ml) beef stock 2 tbsp (30ml) tomato paste 398ml canned chopped tomatoes 1/4 tsp (1.25ml) dried oregano 1 bay leaf 1 large spaghetti squash 1/2 cup (125ml) mozzarella cheese Fresh basil, for garnish

MASHED SWEET POTATOES WITH GOAT CHEESE While Thanksgiving may be over, planning meals around harvest season with fresh vegetables makes any meal time a treat! This delicious medley of sweet potatoes, goat cheese, butter and heavy cream makes a perfect side to anything you’re serving up. INGREDIENTS: 6 pounds sweet potatoes 6 tablespoons butter, melted ½ cup heavy cream or milk ½ cup goat cheese (plain) or try “woolwich dairy” cranberry cinnamon goat cheese for a twist 1 teaspoon salt pepper to taste DIRECTIONS: 1. Preheat the oven to 400 F. 2. Prick each sweet potato with a fork a few times. Wrap each potato in tin foil and place on a foil lined baking sheet. 3. Bake until tender, about 1 – 1 ¼ hours. 4. Remove sweet potatoes from oven and let cool slightly. Halve sweet potatoes and scoop out flesh into a large bowl. Add melted butter, cream, crumbled goat cheese and salt. Mash until smooth and season to taste with pepper. Note: if you’re a goat cheese lover like me, try crumbling additional goat cheese on top of the mashed sweet potatoes before serving.

TIPS AND TRICKS BY DANA SHORTT Have you ever wondered why “restaurant” mashed potatoes taste so much better than the ones that you make at home? Well… the amount of fat involved is often shocking. I can remember working at a catering company in Toronto that used equal parts of cream & butter to potatoes – no wonder they tasted so good! In addition to going heavy on the cream and butter, chefs have a number of other tricks up their sleeves. As a parent, Halloween tends to take a lot of planning to ensure a safe Halloween for kids.
