MADDIE & KIKI This dish could fool you into thinking it’s just another healthy recipe (and it totally is!) but it’s also rich and flavourful enough to be labelled as a comfort food as well! Serve as a hearty appetizer or as a main dish alongside a garden salad, just don’t forget the napkins, as the squiggly wiggly spaghetti squash can sometimes be a little messy! SERVES 2-4

BISON BOLOGNESE SPAGHETTI SQUASH RINGS

Prep Time: 15 minutes Grill/Oven Time: 1 hour, 30 minutes Total Time: 1 hour, 45 minutes INGREDIENTS 1 tbsp (15ml) avocado oil 226g (8oz) Noble Premium Bison Steak Cubes 2 tbsp (30ml) olive oil 1 carrot, finely minced 1 small yellow onion, finely minced 2 stalks celery, finely minced 3-4 cloves garlic, finely minced Salt and pepper to taste 1/4 cup (59ml) red wine

Preheat a skillet over medium high heat. Add the avocado oil. Add the bison and cook until nicely browned on all sides - about 10 minutes. Add the olive oil, carrot, onion, celery and garlic, and cook until fragrant - about 5 minutes. Season to taste with salt and pepper. Add the red wine, beef stock, tomato paste, chopped tomatoes, oregano, and bay leaf. Stir. Cover and reduce the heat to low. Simmer on low heat for 1 hour and 30 minutes, until the bison is tender. Meanwhile, preheat oven (or grill) to 400° Fahrenheit.

Using a sharp knife, carefully slice the squash into 1.5 inch thick rings. Remove the seeds and place on a parchment lined baking sheet. If grilling, put them on a plate to bring out to the grill. Spray with avocado oil spray, and season with salt and pepper to taste. Roast for 30 minutes per side in the oven, or grill them over direct heat for 15-20 minutes per side. To serve: spoon the bolognese into the centre of the squash rings. Top with the cheese, and broil until the cheese melts. Garnish with fresh basil.

MASHED SWEET POTATOES WITH GOAT CHEESE While Thanksgiving may be over, planning meals around harvest season with fresh vegetables makes any meal time a treat! This delicious medley of sweet potatoes, goat cheese, butter and heavy cream makes a perfect side to anything you’re serving up. INGREDIENTS: 6 pounds sweet potatoes 6 tablespoons butter, melted ½ cup heavy cream or milk ½ cup goat cheese (plain) or try “woolwich dairy” cranberry cinnamon goat cheese for a twist 1 teaspoon salt pepper to taste DIRECTIONS: 1. Preheat the oven to 400 F. 2. Prick each sweet potato with a fork a few times. Wrap each potato in tin foil and place on a foil lined baking sheet. 3. Bake until tender, about 1 – 1 ¼ hours. 4. Remove sweet potatoes from oven and let cool slightly. Halve sweet potatoes and scoop out flesh into a large bowl. Add melted butter, cream, crumbled goat cheese and salt. TIPS AND TRICKS BY DANA SHORTT Have you ever wondered why “restaurant” mashed potatoes taste so much better than the ones that you make at home? Well… the amount of fat involved is often shocking. I can remember working at a catering company in Toronto that used equal parts of cream & butter to potatoes – no wonder they tasted so good! In addition to going heavy on the cream and butter, chefs have a number of other tricks up their sleeves. I’ve listed several of them below: start with a starchy potato such as Russet or Yukon Gold cut the potatoes into evenly-sized chunks so that they cook at the same rate place the potatoes in a pot of cold, salted water cook the potatoes to the right stage – you want them tender but not falling apart, otherwise they will absorb too much water drain them well, and dry them out a bit (after draining, I put the potatoes back into the hot pot and shake them around for a bit) don’t add liquids until the potatoes are smooth and lump-free (you can add butter and salt earlier, though) warm up your liquids (cream, milk and/or stock) before adding them to the potatoes If desired, you can pass the potatoes through a food mill or potato ricer (it takes more time, but results in super silky potatoes) season well with salt and pepper

10 TIPS TO KEEP YOUR KID’S SAFE THIS HALLOWEEN Halloween is just around the corner! Children are so excited to hit the street and gather their yearly treats. As a parent, Halloween tends to take a lot of planning to ensure a safe Halloween for kids. Here are some tips to help make Halloween a fun and safe experience for children: PLAN AHEAD: Choose a well-lit and familiar neighborhood for trick-ortreating. Establish a route in advance and share it with someone in case of emergencies. COSTUME SAFETY: Ensure costumes fit properly and are not too long to prevent tripping. Use makeup and face paint instead of masks that can obstruct vision. Avoid costumes that drag on the ground and could pose a tripping hazard. VISIBILITY: Use reflective tape or stickers on costumes and bags to make children more visible to drivers. Carry flashlights with fresh batteries, or use glow sticks to increase visibility.
