It’s no secret that with the rising cost of living, enjoying a meal at a nice steakhouse has never been more expensive, especially when adding extras wine to the mix. Fortunately, with a few simple techniques, basic ingredients and a trusty cast iron pan, you can enjoy steakhouse worthy steak from the comfort of your own home without breaking the bank.

One of the critical keys here is to brine your steak with Kosher salt in the fridge for at least a few hours before cooking – this can literally make a mediocre cut punch way above it’s weight. The second key is to achieve a nice sear as this locks in the juices and provides the ideal texture that all great steakhouse steaks are known for.

How to Choose the Right Steak

Most people would agree there’s really two main choices here; either a Ribeye (sometimes also called Rib-steak) traditionally known as the ‘King of Steaks’ or a NY Striploin. Ideal thickness is anywhere from about 1’ to 1.5”, and in terms of the grade, we’d recommend going for AAA or Prime if you feel like splurging.

Many butchers and grocery stores in the region frequently have great sales, so if you keep an eye on that, you can pick up high-quality cuts for a very reasonable price. Brady’s and Four Quarter are a couple of great butchers if budget is of no concern, while Central Fresh Market is very tough to beat for it’s high value combo of price and quality.

The Brining Process

Brining is the simple process wherein your steak is treated with a coarse salt prior to cooking to enhance tenderness and overall favor. For our purposes, you’ll want to place your steaks on a plate, pat them dry with a paper table, season liberally on both sides with Kosher salt, and leave in the refrigerator uncovered for at least several hours before cooking. Trust us on this one.

Time to Cook

1. Remove your steaks from the fridge approximately an hour before cooking to ensure they get to room temperature. At this point, you can add a little more salt as well as some pepper.

2. Start heating your cast iron pan over high heat until the pan is piping hot. Add Olive oil to the pan, or better yet, if you save your bacon grease, add that to the pan for a real treat.

3. Once the pan is suffciently hot, place your steaks in the pan away from you to avoid any oil splashing, and set a timer for 3 and a half minutes. After the timer expires, fip your steaks and cook for another 3 and a half minutes for rare to medium rare, or longer if you prefer your steaks closer to well done. You can also add butter and thyme to the pan towards the end for some extra favor.

4. When fnished, remove the steaks, transfer them to a plate or cutting board, and immediately cover them with tinfoil – this is an important step that allows the juices to settle in.

5. Wait 5 minutes, remove the tin foil, serve, and ENJOY!

Creme scones

There’s almost nothing better than the smell (and taste) of fresh-baked scones straight out of the oven. Fluffy. Sweet. And oh so perfect with fresh whipped cream and your favourite fruit preserves. Make these from scratch or save some time by purchasing the readymade dough in-store. Either way, you’re sure to be the star of that next holiday soiree.

METHOD:

1. Preheat oven to 375 F.

2. Mix dry ingredients together in a large mixing bowl and whisk to evenly distribute the ingredients.

3. Using a box grater, grate the cold butter into the dry mixture with fngertips to a coarse meal.

4. Add almond extract to the whipping cream and stir. Pour cream mixture into the four mixture and mix until just combined. Set aside the bit of remaining cream – you will use it later.

5. Transfer to board and knead four or fve times until all of the four is incorporated and dough holds together. Shape the dough into 1 large circle approx. 8” in diameter.

6. Using bread knife, cut into 8 wedges. Brush each scone with the small amount of cream remaining in the measuring cup. Sprinkle scones with sliced almonds and sugar.

7. Transfer scones to a parchment lined baking sheet (leaving space in between each scone to allow for expansion when baking) and bake for 22-30 minutes or until lightly golden and cooked throughout.
