Show Your Lawn Some Love Your lawn has had a busy few months: rainy spring, spotty summer, maybe a fair bit of foot traffic. So show it some love before the snow falls with a little pre-emptive upkeep. One simple step, says Bob Stanford, sales and account manager for the Ground Guys in Barrie, can help prevent snow mould — mowing. “Typically, you want to cut your grass shorter than normal — about an inch to an inch and a half,” he says. “It’ll help stave off snow mould and winter damage.” What else can you do? Stanford advises applying a good fall fertilizer late in the season. This will give your lawn the nutrients it needs over the winter for a lush look come spring. — R.N.

Extending an Olive Branch… North! We were delighted (and surprised) to learn that not only can olive trees thrive in Canada, but we can even enjoy our own homegrown olive oil. Back in 2000, George and Seri Braun planted 3,000 hardy olive trees on their Salt Spring Island farm, but it wasn’t until last December that their waiting and tending paid off with a harvest of more than 1,000 pounds of green olives. Within minutes of being picked, the olives were pressed into delicious, healthy oil. As temperatures dip, we all start shutting the windows — and closing in the dust. In case you could use some motivation to stay on top of those bunnies, consider this: A new study from Duke University says that house dust might actually be making us fat. New findings published in the journal Environmental Science & Technology report that exposure to the endocrine-disrupting chemicals, or EDCs (found in everyday household products like cosmetics, cleaning products and food packaging) may disrupt our metabolism, triggering an increase in body fat. House dust tends to harbour EDCs, prolonging our exposure to the chemicals. — Karen Robock

A Coffee (or Three) a Day For many of us, there’s nothing like that morning cup of joe to get a perked-up start to the day. But now it seems caffeine worshippers may wind up with more days in their lives to enjoy than those who don’t drink coffee. Scientists have identified a link between daily coffee intake and a reduced risk of death from a whole host of diseases, including cancer, diabetes, stroke and kidney disease. U.S. researchers analyzed the data of 185,855 adults between the ages of 45 and 75, followed for an average of 16 years, and found an 18 per cent lower mortality risk in those who drank three cups of coffee a day. “Coffee contains a lot of antioxidants and phenolic compounds that play an important role in cancer prevention,” says lead study author Veronica W. Setiawan of the Keck School of Medicine at the University of Southern California “Although this study does not show causation or point to what chemicals in coffee may have this ‘elixir effect,’ it is clear that coffee can be incorporated into a healthy diet and lifestyle.” — K.R.

If you’re a gold bug like me here’s a once in a lifetime opportunity. 150 grams is just shy of 5 troy ounces of raw natural Yukon river gold for sale. I’m sure you’ve seen this stuff on TV shows like Gold Rush Alaska and Yukon Gold but there’s nothing like owning a bit yourself. A travelling miner came through town and offered for sale a small portion of what he had prospected from his secret location somewhere around Dawson city. 150 grams was all I could convince him to sell me. He really didn’t want to sell any but you can’t just walk into the local hardware store for supplies and pay with raw gold. After some delicate negotiations he reluctantly parted with just enough to get him the cash he needed. These are not tiny fine dust particles of gold some measure almost 1cm in length. They are big enough to use in hand made nugget jewellery. This gold resembles oat meal flakes in general dimensions.

The glass bottle is a little smaller than of a roll of nickels but what in contains is about 3500 times more valuable. Raw gold like this isn’t typically 100% pure. Often there is a little silver, copper and trace amounts of other metals. River gold from the Dawson area is usually quite good. We picked a few random samples from the bottle and had them tested with a x-ray fluorescence spectrometer. This cool high tech instrument calculated the samples contained on average 94.6% gold, 3.8% silver, a bit of copper and other metals. This testing method is non destructive and gives the most accurate results besides melting the entire lot down and ruining the natural beauty. We will not separate the material into smaller amounts. That chill in the air means it’s time to think about the great indoors. Sue Kay of Sue Kay & Company, Allandale Decorating, Barrie, shares her insights for bringing a touch of warmth to your home. Think pink: “I struggle with pinks, but I am starting to love pink in different ranges,” Kay says. “Think faded and chalky, pink glass and rose gold.” The hue brings a warm counterbalance to the cooler greys we’ve been seeing. D

esigner Madison Taylor’s approach to renovations begins with functionality. First, she assesses the priorities of her clients and how the household operates daily. Then she makes it stunning. “If you don’t have function first, it doesn’t matter how good things look,” Taylor says. “Without function, it isn’t a successful design.” Once the practical issues are compiled, Taylor asks her clients to create a Pinterest and Houzz account to select photos that appeal to them. “It’s the clearest way to communicate, through pictures,” she says. “The terms ‘modern’ and ‘contemporary’ have different definitions for people. One person’s idea of traditional can be completely different from another’s. This way, we can look at their selections to see if we’re heading in the right direction. Taylor’s most recent main-floor renovation on an Innisfil property was for active professionals who love to entertain. They would need the kind of kitchen that supported the rigours of a big crowd, without sacrificing the intimacy of their day-to-day lives with young children. Taylor installed double islands for the kitchen on the open-concept main level and bumped up the wow factor with rare, semi-precious gemstone countertops shipped in from Israel and finished by York Fabrica. Absolute Cabinets did the Shaker panel cabinetry throughout, painting it in Benjamin Moore Collingwood, with walls in complementary Rockport Gray. The island closest to the hidden fridge and freezer is the functional cooking area with a sink, a dishwasher, trash collection and cutlery storage. It’s all within arm’s reach of the built-in Thermador coffee maker, wine fridge and stackable ovens.

The second island acts purely as a server and entertainment area to lay out food, with additional plate storage and beverage fridge below. Four comfy leather stools (from Lee Industries through Catherine Staples Interiors) are at the ready for family meals. Sparkling pendants in polished aluminum from Restoration Hardware’s Maritime Collection provide the lighting. Taylor deliberately situated the two islands on either side of the massive four-foot, six-burner Thermador range for impact. She wanted the sleek range hood and herringbone-laid Mutina Ceramica backsplash (Stone Tile) with pot filler to act as a framed focal point. The functionality is addressed and the symmetry is pleasing, creating a satisfying tableau — especially important, since it’s all in view of the main living area and is the first thing you see as you descend the stairs from the second level.

Customized FunCtionality A secondary prep sink with reverse-osmosis water faucet was installed at the end of the main counters, next to the formal dining area. This means children can grab a quick drink without entering the kitchen proper and getting in the way, and it proves useful for hosting events. “Fill it with ice and put in some drinks for guests,” Taylor says. Cabinets reach all the way to the 10-foot ceilings, but since accessing cupboards at that height is not practical, Taylor made it into a lighted presentation area with a spot for specialty cookbooks. Everything is thoughtfully laid out and in just the right spot. Mugs are stored in the cabinet above the built-in coffee station, drawers with builtin knife blocks keep sharp edges away from children and pull-out spice and oil organizers keep counters clear, but condiments accessible. The more chaotic food storage and unwieldy cooking trays slip nicely into the adjoining walk-in pantry around the corner, tucked behind a sliding barn door. Taylor is a big believer in placing pantries where they belong — next to the kitchen, but within direct access from the garage, from where you’re also likely to bring in groceries. Her renovation plan also involved adding in a mudroom with cubbies, cabinets and a coat closet with meshed doors, so moisture from drying winter coats would never cause mould issues, but could still be hidden from

Also off the same hallway is a secondary laundry room with apartment-sized Miele stackable washer/dryer to handle light loads, and an enamelled cast iron utility sink (Glen Falls by Kohler) — handy for tossing in dishtowels, dining linens or children’s clothing. Taylor used the same tiling for the laundry as in the kitchen for visual continuity. In the front office, two work stations with top-of-the-line Herman Miller Aeron chairs make daily routines ergo dynamic. Taylor kept the design clean and fresh in here with crisp millwork, but added a touch of barnboard (from Barn to Table) again on a feature wall for an element of “texture and coziness.” This motif is repeated in a wall niche and on the giant mirror in the entryway. A lovely window bench in the office has a plush, upholstered seat cushion with colour matching the barn wood. “We installed the window bench basically because the window was a lower height and we couldn’t put a desk there,” Taylor says. “We added file storage beneath the bench. To the right of that, there’s a full pantry for office storage and a walk-in closet.” The side desk in the office has a rustic wooden top with a scrolled base that was hand-drawn by Madison Taylor Design and custom cut, again by Absolute Cabinets.

“understanding how you get there, beyond the clients’ experience. You have to get that package together to protect their investment. Our clients wanted to enjoy Christmas in their new home and gave us a deadline of December 17. We finished on December 17, brought in a cleaning crew, and prepped and staged the home. They actually hosted a party for 100 people on December 18. They put a lot of faith in us and we delivered.”

People

who live in century homes tend to be passionate about them. The rooms are quaint and resound with history; the verandas, deep, resonating with tall tales spun over decades. Cathy Cudmore and Bernie Keating are two such impassioned homeowners. Both grew up in century homes and value the gravitas that old places command. But with age comes antiquated electrical and plumbing systems and creeping structural issues — concerns that can wreak havoc if not addressed. So, when the Cudmore-Keating clan purchased their stunning 1800s north Oro-Medonte property, they knew what was in store. “We weren’t in a hurry to renovate,” Cudmore says, “but we knew the electrical was older and a lot of stuff would need maintenance and upkeep. The wiring was a nightmare. It was arcing when we first investigated.” The home, while much loved by its previous owner, was also dated. Brown shag carpeting covered the floors. Walls were clad in old cedar panelling. One of the tiny upper bathrooms had a chocolate brown bathtub and brown toilet. Cudmore’s eight-year-old daughter took one look at it and said, “I’m not using that!” So, bathrooms were the first thing the couple addressed. “The main-floor powder room and the children’s second-floor bathroom really needed to be refreshed,” Cudmore says. “The upper hallway was incredibly wide, so we knocked down a wall and stole from the hallway to make the bathroom wider.” It was the beginning of a massive renovation that would last the full nine years they have enjoyed their Penetanguishene Road home, a transformation that would eventually result in a structurally solid, mechanically sound and visually pleasing treasure. On New Year’s Eve 2009, following the bathroom renovations, they took on the ancient textured velvet wallpaper in the dining room during a party they were hosting.

“We tore it down and everyone wrote their names and sayings on the walls in Sharpies,” Cudmore says. One of the guests had written the words “Copley Gray” on a wall and Cudmore asked why. She was informed that it was, by far, the most perfect paint colour. So Keating headed out and bought a can of Benjamin Moore Copley Gray sight unseen. “We’ve repainted it that colour every year since,” Cudmore says. “Although, I didn’t know at the time you couldn’t paint over Sharpie markers. It took TSP [trisodium phosphate powder, a strong cleaner], elbow grease and a lot of primer.” The following New Year’s Eve, an ice storm revealed another weakness in the structure when water streamed down the bricks of the gas fireplace in the family room. “We had a serious leak. The room had to be gutted,” Cudmore says, “but it had panelled walls and was not the most attractive anyway.” They used the opportunity to properly insulate the area and build an exterior porch atop the room, affording panoramic views of Kempenfelt Bay. They also converted the adjoining Muskoka room, which overlooks their 18-by-20-foot pool (G&G Pools), into a bar. Today, the rustic bar, with its knotty pine walls and oak counters, is a hot spot for the family’s social gatherings and hockey team parties. “People like to sit on the chairs and belly up to the bar,” Cudmore says. “My husband will spend the entire party behind that counter.” Renovator Eric Cole did all the work, replacing the Napoleon fireplace insert and installing new stonework from the local quarry. The next project was new hardwood flooring to replace the wretched carpeting. The following year, their neighbour Doug Brennan of DMB Reno stepped in to renovate the master bath and closets. He also borrowed space from the huge hallway and created a spa bathroom with frameless shower, pebbled floor, slate wall tile, heated floors and Toto bidet and commode.

Delighted with his work, Cudmore asked how he would renovate the main floor. Brennan said he’d remove the walls in the kitchen, and family and dining rooms and install 12-foot-wide sliding windows so the family could enjoy the spectacular view of the lake from the top of the hill. And so, the final, massive main-floor renovation began. Soon their tiny galley kitchen was a thing of the past as six walls were removed to create an open space that would maximize light. Heated Rustic Espresso Romano travertine tiling leads the way from entryway to kitchen. Granite Arctic White countertops from Italy reflect light from the new windows, brightening the room. Now, magnificent views of Kempenfelt Bay are visible from every possible angle. Flowing cabinetry, a built-in desk, freestanding pantry and multiple food preparation stations create a fabulously functional gourmet kitchen that has become the heart of the home. “We’re not fancy frou-frou people,” Cudmore says, “but we knew one day we would sell and Doug would have a better idea of what to build that would sell. Not only is he a good renovator, but he’s also creative. He can look at a space and have a vision of what it can be. We trusted him to go with it and we have no regrets. Let the artist do the work.” By the end, all electrical, ductwork, plumbing and insulation were brand new. The brickwork was repointed and chimney reinforced, there were new floor joists and subfloors built, and a high-efficiency heating system installed. The original post-and-beam supports in the basement and the sagging timbers of the roof were all redone. “Nothing is original now,” Cudmore says. Even the formerly tiny and seldomused “stuffy parlour” was transformed into a lively music room with enough space for a baby grand piano and all the family’s instruments. “There’s more steel in this house than brick now,” Brennan says. “Seven steel beams were placed throughout the ceiling and walls.” Brickwork was removed to accommodate larger windows with new lintels. “There’s one steel post that goes from the basement to the second floor supporting everything,” he says.

What does remain in its original state is the sprawling porch, refurbished with new stonework around the entryway. It’s the stuff of southern plantations where mint juleps are enjoyed and the worries of the day carried off on the wind. “It’s eight feet wide and 150 feet all around,” Cudmore says. “We’ve brought dining room tables out there and seated 30 people on the porch for our pancake breakfasts. We hosted a big family graduation dinner on the porch for my niece when she graduated law school. Many meals have been enjoyed out there in the pouring rain.” The pancake breakfasts she’s referring to are an annual celebration of the family’s spring maple syrup harvest, tapped from trees on the adjoining corner lot, which they also own. “We produce 30 litres of maple syrup. It’s very social,” Cudmore says. “We boil it outside in an outdoor wood evaporator on the weekends and have a constant flow of people dropping in to hang out.” And perhaps this is one of the greatest qualities about century homes — built in a time when life was less hectic and the pleasures of grand verandas and steady socials were commonplace. Pumpkin Power When you carve up your jack-o’-lantern this year, don’t pitch the seeds or you’ll be throwing out a tasty nutritional powerhouse. Just 2 tsp of roasted pumpkin seeds delivers protein, fibre and 25 per cent of the daily recommended amount of magnesium, essential for muscle and bone. If that weren’t enough, the seeds are also a rich source of tryptophan, which helps relieve insomnia. Preparing this natural snack is easy. Homestead Artisan Bakery has plenty of tasty news to share. “We never sit still,” chuckles Cait Patrick who owns and operates the downtown Barrie bakery and cafe with Lise Garden. “From creating new recipes and offering more products, we’re always dreaming up ideas customers will enjoy.” The bakery, which specializes in artisan breads and baked goods, crafted by hand in small batches, has a full fall lineup. Moving onto mergers, Homestead recently joined forces with fellow food artisan, Rhys Jenkins of Craft Pie Company. “We’ve been friends for a long time, and both businesses win by working together,” Patrick explains. Formally located in Barrie’s east end, Craft Pie Company specializes in high quality sweet and savoury pies. Sloppy Joe, curried chicken, roasted vegetables, pizza, spinach and artichoke and braised beef are the savoury pie choices. “Braised beef and curried chicken are our top sellers,” explains Jenkins. For the holidays, a festive turkey pie is available. Savoury pies will also be served as a daily lunch feature. When it comes to making a great pie, Jenkins says the secret is in the crust. “You have to use plenty of butter in your crust. Beyond that, fresh, high quality and local ingredients (when available) are key.”

motto is ‘Sanctifying the ordinary,’ and that kind of sums us up,” says Jill Dyck, owner of Bohemia, downtown Barrie’s artsy café. “We aren’t doing anything here that’s revolutionary — we aren’t inventing things — but what we are doing is really, really good.” That includes coffee, a range of sandwiches and salads, and freshly baked treats. “Nothing is too fancy here,” Dyck says. “That’s not our thing. Everything here tastes like it should taste.” It’s proven to be a winning formula: the charming eatery is marking 13 years in business this fall. We recently caught up with Dyck to learn more about the bustling 30-seat café and its loyal following.

What inspired you to open a café in downtown Barrie? After working as an actor on radio, stage and TV across Canada for many years, I decided I wanted some certainty and control over my life. I moved to Barrie from Edmonton with my husband [Larry Yachimec, who passed away in 2010] and two kids, Isabella and Joseph, to be closer to my elderly parents. Barrie is my hometown and it felt right to be back. After two years of working in the café at the MacLaren [Art Centre], I decided to open up Bohemia in 2004 with a good friend of mine, Jill Strapp. The original location was on the north side of Dunlop Street [where Ripe Juicery is now], but we moved to our current site in 2009.

What was your vision for Bohemia? The idea was to open a cool little café where like-minded artsy people could just hang out. Back then, it seemed that Barrie needed a place like that. And I guess a lot of other people felt that way, because Bohemia took off right from the very beginning. Then, after about a year, Jill went on to do other things, and I took over full ownership of Bohemia. How would you describe the decor? It’s eclectic and quirky, but not over the top. We have a tin ceiling, black-and-white tiled floors, repurposed furniture, and the walls feature a variety of local art. It’s a non-corporate kind of place.

What about the menu? While it’s not extensive, a lot of thought has been put into everything we serve. We have beautiful salads, wraps, paninis [made with sourdough baked on site], soups [colder months only], yoga bowls and more. It’s a mix of vegan, vegetarian and meat dishes. We also have an amazing selection of baked goods. We’re famous for our carrot cake, fresh muffins and scones every morning, various squares and cookies. What are the two most popular items on the menu? I’d have to say it’s the Bohemia burger — a vegetarian burger made with tons of vegetables and plenty of toasted hazelnuts and almonds, served on our house-made whole wheat bun with all the fixings and a side of roasted sweet potato fries. Our yoga wrap is also a crowd-pleaser. It’s a chicken salad mixed with lots of fresh apples, grapes, celery and cilantro, with a very light dressing of lime, mayo, yogurt and curry, all wrapped up in a whole wheat tortilla. On your website, Bohemia’s philosophy says: “We believe in real ingredients, imagination and great flavours. We’re excited about modern twists on old-fashioned recipes.� Can you elaborate? We make everything from scratch here, right down to our own jam, bread and almond milk, because we want our flavours to be authentic and delicious. We’ve even started to make our own bacon. On the atmosphere side, it’s an environment that supports community, conversation and just chilling out. Tell me about your staff. They are creative, hard working, loyal, funny and beautiful. I feel really fortunate to have worked with such a wonderful parade of amazing young people over the years. My chef, Cole Churchward, is super-gifted in the kitchen. He’s crazy obsessive about good food and just loves cooking. As we speak, he’s in the kitchen making homemade butter for one of our special dinner nights. Cole has worked on and off with me since he was a teenager. He went off to school, worked in various great Toronto kitchens and now he’s back at Bohemia.

1 1/4 cups all-purpose flour 1 1/4 cups whole wheat flour 1/2 cup brown sugar, plus extra for sprinkling on muffin tops 1/2 tsp cinnamon 1 tsp baking powder 1/2 tsp baking soda pinch of salt 2 cups rhubarb, cut into small pieces 1 cup buttermilk 1/2 cup vegetable oil 1 egg 2 tsp orange zest 1 tsp real vanilla extract

Preheat oven to 350°F. Line 12 muffin cups with baking papers. In a large bowl, mix together flours, brown sugar, cinnamon, baking powder, baking soda and salt. Stir together until incorporated: no lumps of sugar or little hard pockets of baking soda. Add rhubarb and mix until all the fruit is coated. In a medium bowl, combine buttermilk, oil, egg, orange zest and vanilla. Mix together until it’s the consistency of a nice thick goop, with no oil sitting on top.

Make a well in rhubarb mix and pour buttermilk mixture into it. Mix everything together just until it looks super-lumpy. Scoop batter into muffin cups (Bohemia uses an ice cream scoop to do this). Sprinkle brown sugar on the tops and bake for about 23 minutes. When a knife inserted into the middle of a muffin comes out clean, or with little crumbs clinging to it, they’re done. Makes 12 muffins.

We have an amazing espresso machine, a 3 Group Aurelia from Zuccarini Imports in Toronto, and it runs all day long, making some of the freshest, most beautiful coffee around. Our coffee supplier is [Barriebased] Hamley’s Tea & Coffee Co. [barrieteaandcoffee.ca], and they make a special blend for us. We grind the beans and pull each shot separately for every customer. Our coffee is never more than four days old from the time it’s been roasted, and it’s organically grown and fairly traded.

We do one about every six weeks, advertising them on Facebook and Instagram, and they always sell out. Cole is really inspired by and makes great use of seasonal ingredients for these dinners. BRAISED BURDOCK GRATIN If you’re having a hard time finding burdock, try your local Asian grocery store, where it might be called gobo. FOR THE BURDOCK 10 spears burdock root, peeled and washed 4 cups vegetable or chicken stock Over medium-high heat, in a covered saucepan or deep skillet, gently boil burdock in stock, making sure it’s submerged at the start. Keep covered and cook until almost fork-tender, about 40 minutes. Transfer burdock to a lightly buttered ovenproof casserole dish, arranging in a single layer; set aside. Reserve stock for the cheese sauce (top up if need be). Preheat oven to 350°F.

FOR THE CHEESE SAUCE 2 tbsp butter 2 tbsp flour ¼ tsp white pepper ¼ tsp nutmeg ¼ tsp fine sea salt ¼ cup medium-dry sherry ½ cup vegetable or chicken stock (use reserved stock) ½ cup 18% cream 1 cup grated sharp or extra-old white cheddar In a medium saucepan over medium-low heat, melt butter. Add flour, pepper, nutmeg and salt, and stir continuously until butter and flour are a nutty brown, smooth, thick paste — about 5 minutes. Add sherry, stock and cream and stir briskly to combine. Fold in cheese until melted and combined. Pour evenly over burdock. Set aside.

FOR THE TOPPING 1 cup puffed rice cereal 1 tbsp melted butter ½ cup grated sharp or extra-old white cheddar 1 tsp fine sea salt white or black pepper, to taste ¼ cup finely chopped fresh chives or garlic scapes for garnish (optional) Add cereal to a small bowl and drizzle with butter; toss to coat as evenly as possible. Add cheese, salt and pepper and toss to coat as evenly as possible. Sprinkle mixture over sauced burdock and bake at 350°F for 40 to 45 minutes or until bubbling and golden on top. Garnish with chives or garlic scapes. Makes 4 to 6 side-dish servings.

HONEYED ORANGE-PERSIMMON CORNMEAL CAKE INGREDIENTS ¼ cup butter 3 tbsp honey juice of one large orange (about ¾ cup) 3 large store-bought persimmons (or about 7 tiny wild ones), tops trimmed, cut into half-inch wedges ¾ cup flour 1 cup finely ground yellow cornmeal 1 tsp baking powder ¾ tsp fine sea salt 3 eggs ½ cup sugar ½ cup runny or warmed honey 2/3 cup maple water or sap; milk or apple juice will also do ½ cup extra-virgin canola oil zest of 1 large orange; about 1 tbsp Preheat oven to 350°F. In a 9- or 10-inch cast iron skillet over medium-high heat, add butter, honey and orange juice. Melt, stirring to combine. Reduce heat to low. Add persimmons and let simmer for about 5 minutes or until liquid has reduced slightly. Turn heat off and set skillet aside while making the batter. In a large bowl, combine flour, cornmeal, baking powder and salt, breaking up any lumps.

Set aside. In the bowl of a stand mixer, or in a large bowl, using a whisk, beat eggs, sugar and honey until frothy. Add maple sap (or other liquid), oil and zest, and continue to beat until well combined. All at once, add dry ingredients to egg mixture and blend to combine well, breaking up any lumps and making sure everything is moist; but don’t overmix. Gently pour over persimmons.

PUFFY EGG SQUARES INGREDIENTS ½ cup mascarpone, at room temperature ¼ cup nduja (a spicy, spreadable salami), at room temperature, casing removed 5 eggs, divided 1 sheet all-butter puff pastry, thawed according to package directions 4 tsp roasted red peppers in olive oil, mild or spicy (store-bought is fine) finely chopped fresh basil, chives or flat-leaf parsley for garnish (optional) Preheat oven to 400°F. In a small bowl, add mascarpone and nduja and blend well; set aside. With a fork, beat 1 egg in a small bowl. Place a length of parchment paper on the coun-

With the tip of a sharp paring knife, cut sheet of pastry into 4 squares. Turn up edges of each pastry square to form a lip, pinching at the corners to keep in place. Brush edges of pastry squares with egg; prick bottom of squares several times with a fork. Spread the mascarpone mixture among the four squares, making a depression in the centre of each. Crack an egg into each depression and top with 1 tsp of the roasted peppers. If you have any runaway whites, pinch pastry edge to make it higher. Bake for 10 to 12 minutes or until edges are puffed and golden and yolks are starting to set. Sprinkle with chopped herbs, if desired. Makes 4 servings.

Happy Foods May help ward off depression.

Stabilize your moods, reduce stress and boost your health with these easy dietary tweaks BY LIZ BRUCKNER

S

ometimes nothing quells the effects of a crappy day quite like a big-asyour-head bowl of Ben & Jerry’s. But loading up on calorie-heavy foods isn’t the only (or the healthiest) way to calm an emotional storm, researchers say. It turns out that noshing on nutritious foods can provide many mood-enhancing effects — many of them on par with those you’d experience with prescription antidepressants. Case in point: Scientists from Australia’s Swinburne University of Technology reported that volunteers who simply downed regular high doses of dark chocolate beverages experienced greater

feelings of overall calm and contentment, while a study by Nurses’ Health found that women who boosted their daily intake of alpha-linolenic acid — found in flaxseed, soybeans, walnuts and tofu — were less likely to experience feelings of depression. And there’s more: Research presented at the American Chemical Society cited that chemical properties found in a variety of berries and foods containing omega-3 fatty acids (found in such foods as eggs, yogurt, spinach, fatty fish and seafood) mimic the structure of valproic acid, a widely used prescription moodstabilizing drug incorporated into many antidepressants.

“Simply put, choosing to eat healthy foods that benefit your body and mind will help you feel good from the inside out, and will do so almost immediately,” says Angela Wallace, a Vaughan-based registered dietitian, certified personal trainer and family food expert. Some of the near-instant benefits she cites include an improved mood, increased energy, better focus and clarity, and deeper, more restful sleep. “Healthy eating, physical activity, emotional well-being and better sleep are all interconnected and dependent on each other,” she says. “By focusing on and improving one of these areas, you are likely to see improvements in the others, as well.” Here are the feel-good foods Wallace recommends. AVOCADO. A great source of vitamins C, E and K, avocados also contain copious amounts of magnesium, beta-carotene, omega-3s and folate — all of which help ward off depression. This creamy fruit also packed with B vitamins, which help reduce the production of amino acids linked to anxiety and depression, and is high in healthy fats and protein — essential components for brain function and healthy skin — and low in sugar. Aim to eat half an avocado a few times a week for maximum effect. NUTS AND SEEDS. They make a great snack, can be easily added to many meals (think cereal, salad and quiche) and provide your body with much-needed plant-based protein, healthy fats, fibre and essential vitamins and minerals. Wallace says eating just one-half cup of each per day has been shown to improve heart health and weight maintenance, as well as reduce symptoms of depression.

DARK, LEAFY GREENS. With myriad varieties to choose from — rapini, spinach, kale and Swiss chard among them — these leafy beauties can boost the overall health factor in any salad, soup, pasta dish, stir-fry and more. And because each option is an excellent source of antioxidants, fibre, calcium, iron and magnesium, they’re also linked to increased energy levels and lowered symptoms of depression. Regular intake of these veggies is also touted to benefit blood pressure and nerve function, control blood sugar levels and boost bone density. For best results, aim for three one-cup servings per week. BERRIES. Easily added to cereal, yogurt, baked goods and pancakes or enjoyed on their own, blueberries, raspberries, strawberries and blackberries are teeming with antioxidants, known to reduce the risk of chronic diseases, cancers and overall inflammation. A study published in the Journal of Nutritional and Environmental Medicine also found that antioxidant-rich berries minimize the effects of anxiety and depression after participants treated with antioxidants for two years logged significantly lower depression scores than those treated with a placebo. For maximum benefits, aim to eat one cup of berries every day. FATTY FISH (salmon, trout, mackerel). Brimming with omega-3s, these fish species have been linked to a host of health benefits, including heightened mental clarity, lowered risk of heart disease, and helping the body

protect against cancers, dementia and arthritis, Wallace says. A recent study also reported that omega-3 supplements improved the symptoms of those diagnosed with depression. Try to eat your favourite fish variety twice a week for optimal mood-boosting results. OATS. Sure, they’re a warm and fuzzy way to start the morning, but oats are also full of mood-boosting selenium and dietary fibre, which help reduce the risk of heart disease and lower cholesterol. They’re also low on the glycemic index, so your blood sugar levels will stay stable long after you’ve eaten them. Look for large-flake options to up the nutritional ante, and think outside the box and include them in baked goods and pancakes, and as the main ingredient in homemade granola. CHOCOLATE. Its decadent flavour aside, chocolate does the body good. Studies show that it contains medicinal properties that inhibit cancer growth, regulate genes that control body weight, increase blood flow to the brain and protect nerve cells, all while acting as an anti-inflammatory and antioxidant. Recent findings have also shown it contains feel-good chemical compounds that minimize symptoms of depression and anxiety, and enhance calmness and contentedness; plus, its natural dose of caffeine works as an energy booster. Work more into your diet by choosing dark versions (look for variations with 70 per cent or more of cocoa), and aim to enjoy it in regular, but moderate, amounts.

The maple leaf flies proudly abroad, through these notable wines BY MICHAEL PINKUS

I

n July we celebrated Canada’s 150th birthday – and sure, we could have gone all out and promoted Canadian wine then, but we know you were too busy drinking Canada’s national beverage: beer. But seriously, I’m sure everyone and his dog was giving you advice about which Canadian wine to buy – but how many told you about which wines were made by Canadians? The Canadian wine scene – and by extension Ontario – is full of crafty winemakers from all over the world who have come here to test their mettle in our cool climate region. However, just like some of our best talent in the acting field, our winemakers have crossed the border to seek fame and fortune, honing their skills and plying their trade. This month the wines I’m recommending are made by – and in some cases financed by – entrepreneurial and intrepid Canadians who have decided to spread their wings and fly the maple leaf elsewhere in the world of wine.

Bachelder 2013 Niagara Chardonnay Ontario ($24.95 LCBO#302083) While Montreal native Thomas Bachelder’s work is also known in Burgundy and Oregon (where he still makes wine) he has always come back to where it all began, Ontario. His Chardonnays are much heralded and this 2013 is no different, with its subtlety of mineral along with apple and pear fruit, delicate use of oak and balanced acidity. (¬¬¬¬)

La Crema 2014 Monterey Pinot Noir California ($26.95 LCBO#367896) Elizabeth Grant-Douglas hails from St. Catharines and was one of the first to graduate from Brock University’s wine program. She brought those cool-climate skills to California’s premier Pinot- and Chardonnayproducer La Crema and has created this easy-drinking Pinot, loaded with crancherry and a touch of spice. (¬¬¬ ½ +)

Lake Sonoma 2013 Zinfandel California ($18.95 LCBO#498766) Tony Stewart’s family started Quails’ Gate in the Okanagan Valley, BC, then in 2012 decided they need to add to their work load and try their hand in another region. Regular readers will know my love of Zinfandel and this one ticks all the right boxes: fruit-driven with mulberry, plum and black cherry – plus a hint of cocoa. (¬¬¬ ½ +)

Versado 2012 Reserva Ancient Malbec Argentina ($59.95 LCBO#316984) Anne Sperling and Peter Gamble are the equivalent of a winemaking super group: she’s the winemaker, he’s the consultant, and together they have worked in Ontario, British Columbia, Nova Scotia and now Argentina. This Malbec is firm yet fruity, with lots of grip from both tannins and skin contact. (¬¬¬ ½ +)

Prevedello 2016 Asolo Superiore Extra Dry Prosecco Italy ($16.95 LCBO#262881) Toronto Restauranteur Franco Prevedello went back to his family’s vineyard in the Prosecco region (Veneto) to help bring Italian sparkling wine back to the fore. This food-friendly bubbly might seem simple at first sip but it’s the lemon-lime and minerality that makes it special. (¬¬¬ ½ +)

Quadrus 2012 Red Portugal ($19.95 LCBO#440305) Born in the Azores, the Amaro brothers (Tony and Mario) have roots both in Toronto’s food and wine scene as well as in Portugal, both literally and figuratively. In 2010 they launched the first vintage of their Quadrus wine to some acclaim and the hits just keep on coming. Vitamin Zzz Want to ward off a cold this season? Hit the sheets. A recent study found that people who clock less than six hours of sleep per night are more susceptible to the common cold virus than those who sleep seven hours or more. Interestingly, researchers noted that age, stress level, whether or not the person smoked and BMI made no difference in the study’s findings. So what’s the sleep-sneeze connection? It seems that sleep has a key role in regulating the immune system. The study’s authors found that a lack of shut-eye affected the behaviour of T cells — important to immunity. Yet another reason to make sleep a health priority.

Save for a Holiday Why do you never get out of Dodge? Because you’re not trying hard enough. The biggest reason people don’t travel is they think they can’t afford it. You’re smarter than that BY DOUG WALLACE

1. Believe it. Adopt the mindset that “you can do it” rather than mentally shutting down your travel goals the minute you envision them. 2. Schedule it. Pick the best time of year to visit your dream destination, then assign it a month — and a year if it’s a doozy. Travelling just before or after high season can lead to savings, and some destinations offer deals during these low periods.

Learning cowboy skills is just part of the adventure when you head to Red Reflet Guest Ranch BY KATHERINE CARD, AS TOLD TO BART CARD

aving visited Wyoming, and the West, before, I had a rough idea of what was in store for us at Red Reflet Guest Ranch, but this would be an inaugural trip to the state for my travel partner and friend, Lauren Wood. We had decided early on that to truly make the most out of our adventure, we needed to add a few days, and instead of just visiting the ranch, we should start with a short road trip, so we could truly appreciate what Wyoming has to offer. We flew to Billings, Montana, and rented a car to drive to the ranch. Instead of taking the most direct route, however, which would have been about 300 kilometres, we opted to head to Cody, Wyoming, and spend a little time exploring Yellowstone National Park.

BEYOND ALL THE SKILLS WE WERE LEARNING, THE RANCH WAS ALSO OPENING OUR EYES TO THE PRACTICAL AND SYMBIOTIC RELATIONSHIP THAT EXISTS BETWEEN HUMANS AND HORSES

Incorporated in 1901, Cody is approximately 80 kilometres from the east entrance of Yellowstone, making it the perfect destination for anyone hoping to experience one of America’s most beautiful National Parks. The drive to and from Cody is equally as breathtaking as the park itself, with the vast landscape dotted by dream-inspired ranches, free-range livestock and wide open roads. Founded by none other than Colonel William (Buffalo Bill) Cody, the present-day town is home to nearly 10,000 people and boasts a rich western culture and feel, with its extra-wide main street flocked by western facades and friendly townsfolk. With the mountains of Yellowstone in the background and the Shoshone River in the foreground, Cody is as picturesque as it is welcoming. This thriving community hosts an influx of annual visitors. Despite this, the city hasn’t lost its small-town charm or appeal. We spent

the night there and woke up early the next morning in order to spend as much of the day in Yellowstone as possible. Despite what you may think, Yellowstone is not as big as it seems. At nearly 9,000 square kilometres, it’s a wilderness recreation area located atop a volcanic hot spot. The park straddles three separate states — Wyoming, Montana and Idaho. In addition to the famous geysers, such as Old Faithful, Yellowstone is also home to hundreds of animal species, including bears, wolves, elk, antelope and, my personal favourite, bison. A car trip, taking in all the tourist sights, can be accomplished in a couple of days. After our day in there, we made our way to the Red Reflet Guest Ranch. After being greeted by general manager Sarah Aciego and owners Laurence and Bob Kaplan, we were further welcomed with a glass of wine and delicious refreshments, followed by a home-cooked meal and great conversation with the Kaplans and a few

fellow guests. Sarah then escorted us to the Ponds cabin. Located at the entrance to a private canyon, the Ponds is a 1,600-square-foot oasis offering dramatic views, day and night. We were only two people, but this beautiful cabin sleeps up to six guests and includes a master bedroom with king-size bed, steam shower, full kitchen and a six-person hot tub. When we arrived at the stables the next morning, we were introduced to Tammy and Clay Trollinger, who manage all horse operations at Red Reflet, no easy feat considering the size of the team and the expectations of the guests. We opted to spend the morning taking in the ranch on a trail ride up on the canyon ridge, a ride that provided phenomenal views. For the afternoon, Tammy and Clay asked us to spend the afternoon sorting cattle.

LET The type of riding Lauren and I do at home is often very disciplined and structured, with the rider and horse aiming for a certain look and practising until this is achieved. On the ranch, horses are very much working animals. Beyond all the skills we were learning, the ranch was also opening our eyes to the practical and symbiotic relationship that exists between humans and horses on a working ranch. Our horses at home were suddenly beginning to look very lazy, spoiled and likely bored. After a wonderful day in the saddle, Tammy and Clay informed us of another challenge: the next day they were to embark on a cattle drive through town to move the cattle to winter pasture; they asked if we would like to join in. The following morning, riding the same two horses we had gotten used to the day before, we moved cattle through the small town of Ten Sleep, up the red rock cliffs and to the grazing grounds that would be their home for the winter months. Soon we found ourselves completely submerged in the western ranching culture. Our team of six riders, and two amazing herding dogs, kept the cattle on the right path with only a few rebellious cows in the crowd. We were secretly happy for the rebellious ones because they allowed us to put our new-found cowboy skills into action. We spent all our riding time outside either on the trails or working the cows, but the ranch also has extensive training facilities, including indoor and outdoor riding arenas, outdoor round pens, a stable and dedicated horse pastures, all overseen by the Trollingers. Although we were there to take advantage of everything horse related, there are many other activities available to all guests at Red Reflet, including ATVing, fishing, hiking, mountain biking, skeet shooting, rock climbing and stargazing. Using the ATVs to cover as many ranch trails as we could was an experience we will never forget. These machines allowed us the freedom to explore the ranch at our own pace, and explore we did. Our last morning there, we woke up at sunrise and were on bikes before the sun came over the red rock. After a two-hour ride, we begrudgingly made our way back to our chalet and prepared to leave.

1. GET BACK TO NATURE. It’s often hard for vacationers to evaluate the healing power of simply embracing nature, until after they return home. This holds true in the Nicoya region of Guanacaste, a tourist hub for those heading to rainforest, parkland or beach. It is also one of the five “Blue Zones,” designated parts of the world where residents have abnormally high life expectancies. Nicoyans are proud of this association, as shared Blue Zone characteristics include a focus on family, a semi-vegetarian diet rich in legumes, constant physical activity and engagement in the community. The water in Nicoya is also said to contribute to the healthful tenor of the region, championed by William Salom, owner of Rancho Humo, a private ecological reserve and cattle ranch near Palo Verde National Park. “Drink as much as you like,” he says. “The well is deep!” Salom converted what was once his family vacation property into a 10-room paradise, where the surrounding wetlands is home

to dozens of bird species, including herons, storks, gulls and ibises. Watching dozens of big, white egrets nesting in the foliage of a tiny island sanctuary has a powerful, hypnotic effect. And when you spend an hour boating down the Tempisque River trying to spot baby crocodile eyes poking up out of the water among all the floating driftwood, your mind drifts right along with the passing waterline (ranchohumo.com). 2. HIT THE BEACH. If beach bumming is written in pen on your itinerary, Guanacaste has more than its fair share of sun and sand, from the Santa Rosa National Park in the north right on down to the Pacific coastline. Some are remote and super-quiet, while others are full-on beach towns, teeming with surfboards, beach bars, water sports and condo rentals. Nosara Beach is a great getaway known for its yoga retreats, hiking, farmland, forest and waterfalls (nosara.com, nosarayoga.com).

3. TREAT YOURSELF. We all know how far a little posh pampering can go. The Papagayo Peninsula has that in spades. This so-called Gold Coast is known for its luxury and exclusivity, not to mention a close proximity to the Liberia airport and its popularity with the rich and famous: Beyoncé has visited a few times and Pink got married here. Charlie Sheen, Spike Lee and Madonna all have homes here. Yachts, big and small, moor at the Papagayo Marina on the Culebra Bay side of the peninsula, the largest marina in the country. If the Four Seasons is too rich for your blood, melt your cares away at the relatively new Andaz Peninsula Papagayo. This is a Hyatt spinoff, a boutique lifestyle brand with 153 exquisitely designed rooms, blended right in among the bamboo trees, and blackand white-sand beaches. “We really try to reflect the local culture with little touches that all mean something to Costa Ricans — details that make you feel welcome,” says Mariela Cabezas, the hotel’s

Guests are also encouraged to participate in visiting the local people, through various sponsored initiatives, having a cultural experience as well as a relaxing one. There’s even a surprisingly extensive yet not-too-scary Serpentarium for you to eye up more than a few indigenous snakes (guachipelin.com). 5. TAKE THE WATERS. Part of the Hacienda Guachipelin complex includes nearby Rio Negro Hot Springs, where thermal hot springs and spa mud baths, courtesy of the 9,000-year-old Rincon de la Vieja Volcano, take your mind off absolutely everything except how nice your skin feels. Tucked away at the edge of the river in the middle of the forest are six natural mineral water pools, with a vat of mud stewing in a big clay pot near the hot springs vent by the

riverbank. Paintbrushes are at the ready for you to create your body art. Once you’re covered from head to toe, you let your mud mask dry before washing it off with a cool outdoor shower or a dip in the river. With average highs of 30°C year-round, Guanacaste is primed for a visit any time, depending on your threshold for rain. High season is from November to April. From May to August, it may rain in the afternoon and during the night, but you can still get your fair share of sun. hough summer tends to be the favourite season for many in Ontario, the arrival of autumn brings its own particular pleasures. Think about how your heart lifts the first time you see a blazing red maple, or the first bracing day you can retrieve your favourite soft sweater or fleece jacket from summer storage. Then there’s Thanksgiving, where a fabulous dinner and lots of time to talk renews the joy of relationships among family and friends. Plus, there’s the twilight thrill of Halloween on the horizon. In central Ontario, autumn also heralds the anticipated arrival of the Images Thanksgiving Studio Tour, October 6 through 9, from 10 a.m. to 5 p.m. This year, the annual artist-run, juried event marks 34 years of showcasing the work of some of the province’s best artists at their studios. The self-guided tour gives visitors the opportunity to meet and chat with 30 artists at 19 studios in beautiful

Horseshoe Valley, the charming town of Orillia and along the gorgeous shores of Lake Simcoe. The artists welcome visitors to ask about how they work and their paths as artists, or to just view superb sculpture, pottery, photography, painting, turned wood, textiles and jewellery. New to the tour this year is stone carver Irene Sirko. She appears as a guest artist at Stop L in Horseshoe Valley. Sirko knew sculpting was in her future from the first time she set her hands on stone to learn the art. Her ability to feel flow and form results in simple, organic abstract sculpture that lets viewers discover their own perspectives. Sirko’s pieces reflect her appreciation for stone as a medium. Returning for his second year (after a brief hiatus) is renowned contemporary artist Charles Pachter, who will be at Stop U in Orillia, a.k.a. Pachter’s Moose Factory studio.

“Their art is their passion, so they can very easily talk about what they do,” Novak explains Even if you’re not familiar with the painter, printmaker, sculptor, designer and lecturer himself, you’ve likely seen his iconic pop paintings of waving Canadian flags, Queen Elizabeth and assorted Canadian moose. His work has been displayed at the Art Gallery of Ontario, the McMichael Canadian Art Collection and internationally. However, tour visitors only have to drive to Orillia to see his amazing work. Jan Novak, an award-winning photographer and chair of the Images Studio Tour steering committee, persuaded Pachter to come back to the tour in 2016. Part of the allure was an innovative marketing plan featuring a series of video documentaries about the Images Tour and its artists in partnership with CTV Bell Media. A nine-minute documentary about the long-running tour features 10 artists; shorter films showcase individual artists, and trailers to advertise the tour were shot as well. The documentaries can be seen on YouTube on the Bell Fibe system. “The evolution of broadcasting via YouTube brings the tour to the attention of the

general public around the province,” Novak says, whose JDN Photography Canada studio in the Horseshoe Valley is Stop K on the tour. “Images was approached by CTV Bell Media about 18 months ago to do a documentary on the Images Thanksgiving Studio Tour. They knew it would support arts and tourism, but when they saw the finished product, they were blown away. The documentary was done in 2016 to use for this year’s tour. Right now, they are filming a new group of artists to broadcast for next year’s tour.” In their videos, the artists are at ease, working in their studios and talking about their work and techniques. “Their art is their passion, so they can very easily talk about what they do,” Novak explains. “Charles Pachter’s video was filmed in stages — before the tour, on the first day and after the tour. It’s quite funny, and he thought it was great.” Novak’s robust marketing and a shakeup of the tour’s target market last year resulted in crowds that had artists calling him on Sunday to say they had sold all of their original works. With the power of YouTube, the num-

ber of visitors this year may be even bigger. “The YouTube channel takes them worldwide in a way that can be shared,” Novak says. “Various branches of Ontario Tourism are marketing Images this year, and we’re also using social media. Metroland Media [publisher of this magazine] has come aboard as a sponsor. For visitors who are not online, we have a beautiful brochure and 11 portable graphic road signs that will be placed throughout the county in September.” Visitors who want to avoid the crowds and have the widest selection of artwork may be well advised to come on Friday, the traditionally quieter opening day. “Because Friday is a working day, it is calm, like a warm-up,” Novak says. “Artists get the quirks out of the way, figure out how to get things positioned. On Saturday, people can be lined up at the front door. If it’s raining, they may come at noon. Normally for us, between noon and 4 p.m. is absolute organized chaos.” Crowds are one sign of the popularity of the Images Tour, but so is the number of

artists who have been on the tour for decades, or even from the very beginning. On this year’s tour, veteran artists such as potter Gary Brierley, painters Dave Beckett and Wendy Bermingham, and sculptor/imagineer Jimi McKee will be happily opening their studios to visitors once again on Thanksgiving weekend. For next year’s 35th anniversary of the Thanksgiving Images Studio Tour, Novak is inviting other original founders and hoping they will come for the celebration. But for now, he and the 30 artists on the Images Tour are anticipating a fabulous time greeting and chatting with art lovers and art-lovers-to-be. “Our artists have a following,” Novak says. “[Devotees] bring their spouses and kids and friends to see their favourite artists’ works. I know people who buy a couple of pieces every year from different studios. It makes you feel good because you know people appreciate what you do. We had one artist who people wanted to photograph and would ask him for his autograph. I told him to get used to it.”

British-born Millington started her SwapaholicsCanada events because she’s always had an interest in vintage clothing consignment, but also supports charities and community actions. “It’s a way to get more people to go out,” she says, adding that fashion swaps are wildly popular in England. “My daughter attends one of these on a regular basis in London. There, they hold them in pubs. But as far as I know, this is the only one in Canada.” Landing the wine-bar venue in July of this year was a coup for Millington, who had held her first six swaps in a church community room. Now friends can really make an evening of it, casting off the old, embracing the new and later celebrating with charcuterie and libations at the bar. Smith House, Barrie A fixture on Blake Street for more than 100 years, Smith’s House, as the moniker suggests, was for many years home to the Smith family. In fact, the family founded the Lake Simcoe Motel on the west side of their actual property. But the most famous resident of the stately home may be the original owner, Frederick Gore. Educated at Trinity College in Dublin, Ireland, Gore, a noted mathematician, was headmaster at the Barrie Grammar School, a subsidized private school that eventually became one of the first collegiates in the province.
