“A lot of people try too hard,” Smith says. Keep your table to the essentials with minimal florals and fuss. “By the time you add people, food, drinks, bread baskets, water — the table gets overwhelmed with stuff.”

“If you’re entertaining people in your home, it’s mandatory that you do your very best,” he says, “so bring out that good crystal. The last thing you want is regrets.”

When he has a large dinner party, Smith says he rents china, flatware, champagne flutes, linen — the works. “It arrives ready to use, looks great and when it’s all over, I just pack it up and send it back. No cleaning.” Sounds good to us.

You’ll need: 2 green apples, cut into small pieces Zest of orange, cut in long strips with a vegetable peeler 3/4 cup fresh orange juice 3/4 cup brandy 1/2 cup fresh lemon juice 1/3 cup sugar 1/4 cup orange liqueur 1 750 mL bottle red wine 1 cup club soda orange slices Stir apples and orange zest with juice, brandy, lemon juice, sugar and orange liqueur in a large pitcher. Let sit at room temperature for an hour, then add wine; stir to combine. Pour sangria over ice, add club soda and garnish with orange slices.

Picnic Problems Picnic lovers beware: Summer can be high season for the 11 million annual cases of food-borne illnesses, characterized by nausea, vomiting and diarrhea. Outdoor lunches and dinners may mean that foods are not properly refrigerated, allowing bacteria to grow and thrive. Drink Up? The next time you’re jonesing for a caffeinelaced energy drink, think twice. A recent study found that participants who drank four cans of a popular energy drink experienced abnormal changes in their blood pressure and heart’s electrical activity compared with participants who drank a control beverage with the same amount of caffeine. Second generation plumber earns your business one drain at a time “When customers have a backup it inevitably happens at the worst moment,” says Paul Bosse, owner of Poly-B Ltd. “It’s often at the holidays or just when twenty people are about to arrive. People are in a rush and things get dumped down the sink that normally wouldn’t be. Or worse, guests put something in the toilet they shouldn’t have.” When people panic, Bosse wants customers to remember his company’s name, Poly-B. “Poly-B is a type of pipe,” Bosse says. His wife, who co-owns the business, suggested they make a play on words for the company name. “Call it Poly for my first name, Paul, and B for Bosse. So, people will remember.” Poly-B “You Plug It, We Clear It” expert work Bosse has been in the plumbing business for 13 years. He learned the trade right out of high school under the guidance of his father who owns a licensed commercial plumbing company in Newmarket. Unlike many subcontractors who are only trained in drain snaking, Bosse was educated in how to lay pipe from faucet to sewer line. “I enjoy the service side of the business,” he says. “Each job is different. While some unscrupulous companies may draw out a job to increase fees, Poly-B is opposed to the practice. “It’s not good business,” says Bosse. “Everyone is in business to make money of course, but we’re here for a service, and not to take advantage of our customer’s hard earned money.” Happy customers generate recommendations and repeat business. “If I can’t get in and get out in under an hour, then there’s a greater issue in the line, like deteriorating old clay pipes and aggressive evasive root systems causing a reoccurring blockage. The goal is always to get the water moving again so the customer can get back to their day. melding of two households into one always presents a design challenge, especially when the new couple occupies an existing home belonging to just one of the pair. For Mary Poeta and Steve Periard, the solution was an extensive renovation of their waterfront home. “We thought about selling the house for a fresh start,” Poeta says. “Then we realized, are we crazy? We’ll be sitting in a backyard without a lake. We already had it listed and had an offer before we came to our senses.” The Oro-Medonte property enjoys 85 feet of rare frontage at the tip of beautiful Kempenfelt Bay, with a full dock, boat, watercraft, canoes and a kayak. “We have lots of toys,” says Periard, the original owner. “It was always my dream house, to be on the water, boating. But once we decided to stay, we knew we needed to renovate and update it to turn it into our home together.”

The stunning kitchen includes Raywal cabinetry and Jenn-Air appliances. The only thing they kept from before was their gas countertop range.

Heat oven to 425ºF.

That would mean compromises. For Periard, it was the emotional work of letting go of the old and embracing the new. For Poeta, it was the struggle to create both a sense of belonging and a feeling that the home was equally hers. Originally a cottage, the home has a 1,700-square-foot footprint, with two bedrooms and a spacious enclosed sunroom that Periard had installed only a few years prior. The remainder of the home hadn’t been updated for 16 years. It also lacked a basement and posed serious storage issues, given Poeta’s extensive wardrobe. Storage for a fashionista Designer Cyndie Jerome had a solution to the storage dilemma. By turning the home’s small front TV room/office into a luxury dressing room/walk-in closet, there would be room for her ample wardrobe and a second section for Periard’s growing one. His wardrobe already occupied the entire master bedroom closet and was spilling over into the second-floor guest room’s storage.

Combine first 3 ingredients. Spray 1 phyllo sheet with cooking spray; top with 2 of the remaining phyllo sheets, spraying each sheet with additional cooking spray before using as directed. Place remaining phyllo sheets between sheets of plastic wrap; set aside until ready to use. Place 1 Salmon fillet along one short side of phyllo stack; top with 1/4 of the spinach mixture. Fold over long sides of phyllo, then roll up, starting at fish-topped side. Repeat with remaining phyllo sheets, Salmon and spinach mixture. Place, seam sides down, on parchment-covered baking sheet; spray with cooking spray. Cut 3 diagonal slits in top of each wrap. Bake 10 to 12 min. or until crusts are golden brown and Salmon flakes easily with fork. Meanwhile, mix Greek Yogurt, Dill Olive Oil and Balsamic cucumbers and dill until blended Serve fish with Greek Yogurt mixture.

They needed that storage.” Innovative Closets installed the sleek two-toned cabinetry in the walk-in. Jerome brought a subtle colour palette of soft beachy greys and blues to the renovation, from draperies to the flooring from Mirage, engineered red oak stained a lighter Nordic colour. “They live by the water, and our initial discussion was to incorporate some shade of blue,” Jerome says. “So, we decided on a southern coastal look and kept the same colour story going through all the rooms.” Jerome also had pocket doors installed to maximize space and flow between the connecting spa bathroom and master bedroom. Crystals and river stones The main-floor bathroom was transformed into a luxury spa with a stand-alone Neptune soaker tub lit by a flush-mounted drum shade

with dangling crystal water balls from Union Lighting. The roomy walk-in shower (Accurate Glass & Mirror) has both hand-held and rainhead fixtures. Inside, the bench, wall and niches are Sarana tile from Irvine Carpet One Floor & Home in Barrie. Jerome added a tower cabinet between the dual Koehler sinks for added storage. Noteworthy is the Driftwood tile on the floor, from Urban Zebra, as are the river stones in the shower floor and the accent strip. In the adjoining master, the stucco ceiling was replaced with new whitewashed grey planking. “We also changed the mirrored closet doors and put in custom shuttered closets,” Jerome says. “It gives it that coastal waterfront feeling.” A wool Indian Surya rug warms the toes in the morning. Poeta chose the fabrics for the bedding and custom draperies, and Jerome designed them. The Roman shades above the bed and banded lower trim on the drapes with beading and tassels are seen again in the dressing room, bathroom and living room. “Every day I’m in awe of how beautiful it is,” Poeta says. “The transformation is exquisite.” But as lovely as the new rooms are, what this has meant for Periard was the sacrifice of his small but well-used “man cave” escape. “Yes, I’ve lost it,” he says, “but, no, I don’t miss it. There are lots of spots to be.” For one, his sunroom has become a new hangout, once Weatherwall windows were installed, making it a three-season room. With comfy rattan chairs, an outdoor dining area, propane fire-pit tabletop and restful waterfront views, it can now house his television. “I watch TV out there a lot now that the space has been enclosed,” he says. Heating and a guest sofa bed for the room are next on the agenda. Jerome also designed a gender-neutral sunken living room that any man could claim as his own. Warm, rustic Stikwood barnboard embellishes the wall behind the sectional sofa/ chaise lounge. Textured wallpaper adds extra depth. Dark grey leather Natuzzi club chairs and a sizable wooden coffee-table chest are all set on rich, dark hardwood flooring. Plants are situated about the living room, books are found on bookshelves, handy side tables are within reach. There’s colour as well as warmth and meaning. Jerome chose a calming Benjamin Moore Stonington Gray paint for the main living areas and added cabinet doors to existing shelving on either side of the Napoleon fireplace to conceal storage. Here, the rustic wooden Bellamy dining table and bench from Stoney Creek Furniture invites leisurely meals. Upholstered dining chairs from Urban Barn provide seating. Above it all, a striking Legno Rustico 12-light island chandelier illuminates the area with Edison bulbs from Artcraft. A stunning stand-up bar from La-Z-Boy bridges the gap between the living room and dining room, and stands beside a wall-mounted Eco-Feu fireplace the couple installed to bring added ambience during dining. The spectacular kitchen was also redone with Raywal cabinetry, Blanco Silgranit sinks and Jenn-Air appliances. Steve Board at Bardon Supply supplied all the fixtures and faucets, and plumbing work was from Amos Plumbing. “The only thing that we kept was our gas countertop range,” Periard says. The countertops are Britannica Cambria, the floating vent is from Arda and the amber glass globe pendants are from Universal Lighting. If Poeta had her druthers, she’d have added a third bedroom too, but their $150,000 original budget had already ballooned to $230,000 as the renovation grew and furnishings were added. “We started to make changes to the laundry room, even upstairs that we hadn’t intended,” Poeta says. “The finale was the stairway.” Stairhaus tore out the carpets, recapped the steps and repainted the railings. “I love it. It’s more than fantastic,” Poeta says. “It’s an inviting place to come. We were sitting here the other night talking about it and there’s nothing we would have done differently.” Living on the lake, Periard says, is what everyone dreams of. “And now,” Poeta says, “we get to enjoy it.”

Old-World Charm A French Chateau-style home proved to be the perfect place for this family of five by Dawn Ritchie

A

stately stone manor nestled among 95 picturesque acres may be a regular sight in the European countryside, but it is far less commonplace in Simcoe County. “I like French Châteaux,” says homeowner Luisa Almeida. “I like the old-world feel.” Which is exactly why Luisa and her husband, Valentim, built one in Essa. The Almeida family estate is a prodigious 10,000 square feet of stunningly finished space top to bottom, with five bedrooms, five bathrooms, a gourmet kitchen, fitness gym, art studio, theatre and numerous multi-use rooms and stone-floored balconies. Outside, you’ll find a stone barn with a vegetable garden and a spiderweb of trails and small waterways that wind

through the property’s wooded lands. Even for a family of five, 10,000 square feet is a significant amount of footage, but when you’re predisposed to invite 120 relations over for sit-down dinners, you need a lot of table space. Luisa and Valentim are both of Portuguese descent, and family traditions are important to them. “We don’t like to eat out,” she says. “We stay at home and entertain and cook. My kitchen is the heart of the home, and I want to be able to seat a large number of people and eat in my dining room every night.” In addition to Luisa’s family, Valentim is one of five brothers and they each have families and grandchildren of their own. “We used to rent a hall for our get-togethers,” Luisa says, “until we built this.”

A touch of country living Besides all the space, the house also gives the Almeidas a touch of country living. Prior to purchasing the land, they owned a cottage, but mere weekends away were not enough. “I always wanted to live in a retreat-type setting,” Luisa says. “I wanted it to be my everyday life. My kids were still young and I love the country, but I don’t want to be out in the middle of nowhere. I don’t want a 40-minute drive to cinemas. Here, there are creeks and streams and walking trails. It’s so peaceful. And I’m in the south end of Barrie in five minutes.” The country feeling extends to how they finished the outside of their home. The exterior facing is a modified Citadel-French Country stone blend from Arriscraft; the roof is slate. “It’s a natural element,” Luisa says. “It cost a fortune, but that’s what I really wanted — all the natural elements. The home is a part of the geography.” The striking limestone surround marking the front entryway, meanwhile, alludes to the grandeur that lies inside. “It was £40,000 [approx. C$67,400] and it came like a puzzle,” she says. “My husband comes from a masonry background and even he said this is not your norm. He had to put all the pieces up, but the top cornice was separated into three sections.” The keystone alone weighed 4,000 pounds, and the Almeidas realized a forklift couldn’t lift it. “Limestone is soft,” Luisa explains, “and it was worth $40,000. Straps were required to move it correctly.” A crane company was called in. “They came out, took one look and said, ‘There’s no way we’re gonna touch that.’” Finally, Valentim called Simcoe Block, which brought in a truck and a crew and got it done.

She worried at the time that it was far too big, but now thinks she could have gone even larger because the 20-foot-high ceiling scaled the light fixture right down. propane. It looks through to the great room and also has the front entrance’s limestone surround for continuity. Livio Veroni installed the piece and hand-carved the master ensuite’s Eramosa marble block trough sink as well. On the lower level, a BIS Tradition CE high-efficiency wood-burning fireplace heats the art studio. Radiant heating is found throughout the house. “We also have geothermal,” Luisa adds. “It’s environmentally friendly.” It was important to the Almeidas that architectural details in the home gave the impression that they belonged. Ceilings are coffered, vaulted and wood-clad. Exterior doors to walkouts are 10 feet high (from Grace Windows and Doors). In the great room, 16 feet of Weather Shield windows flood the space with bucolic scenery. Keeping the right perspective The sheer magnitude of the home required constant adjustments during the year-anda-half building phase. Perspective is always an issue on builds of this grand a scale. “Men prefer all the answers right up front,” Luisa says, “but as something begins to take character, the house speaks to you and you get a certain feeling about things.” She soon realized that the depth of the arched separation between the kitchen and dining room was not substantial enough. “It needed to be a double wall, because it was too small and it didn’t fit the house,” she says. Luisa also recalls bringing in the wrought iron chandelier from Universal Lighting for the great room. When it arrived, it was laid on the floor and she worried about its girth. “I thought, ‘That thing is massive. It’s too big.’ It was five feet wide.” But once raised to the 20-foot-high ceiling, the scale changed entirely. “Now it looks tiny,” she says, realizing they could have gone even bigger. surely chit-chats over steaming galão coffees. The deeply set, six-burner Viking rangetop has all the earmarks of a true European hob, with inset shelving for spices and flavourings overseen by a stately range hood. But it is Luisa’s Gaggenau oven that is her most cherished appliance. “It cooks everything differently,” she says. “Like in Italy and Europe. I do my roasts in my Gaggenau; put potatoes in with no liquid, a little olive oil maybe, and they roast perfectly, almost like wood-fired.” The adjoining butler’s pantry provides additional prep space, storage and sink, including a well-placed cutting board installed in the cabinetry at a lower workable level. The Almeidas worked with designer Debra Blagden on the details they wanted. “Basically, I made a list for her about how we live and entertain,” Luisa says. “It’s hard to believe we’ve been here for 10 years. It’s just gone by so quickly.” Reflecting on the past decade, Luisa fondly

remembers all the bonfires they had using fallen trees after storms, how they went ATVing through the woods along the trails, the children’s campouts on the land and the western-themed event they threw for 150 people with horseshoes, marshmallow roasts and hay bales. “One night we were in the basement, sitting there talking with all the lights out, and a deer and fawn walked right up to our window. othing brings the outdoors in like flowers. And while few of us would say no to a gorgeous arrangement from a favourite florist, there’s something so satisfying about creating your own. Here’s how.

You’ll Need: • sharp paring knife (cut stems at a 45-degree angle and clean knife with a disinfectant wipe) • a vase or vessel (painted Mason jars are a great warm-weather look) • seasonal flowers and greenery

Step One: Consider Where It’s Going Before beginning, decide how big you want your arrangement, what type of vessel you’re going to use and where it’s going in your home. For tabletops, keep in mind the height of your arrangements. “If you put your elbow on the table, it shouldn’t be higher than your fist, so you can still see people across the table,” says Don Waltho, director and founder of the Canadian Institute of Floral Design, which runs classes for both professionals and hobbyists. Step Two: Choose Your Flowers Garden roses, dahlias, ranunculus, hydrangeas and lilacs are all great picks for this time of year, Waltho says. And he suggests that new do-ityourselfers “work in groups of three.” For example, Waltho recommends using three larger blooms, such as hydrangeas, with three medium-sized flowers, like Gerbera daisies, which you can terrace into your design. Use smaller flowers such as spray roses or miniature carnations as a filler flower in little pockets and groupings around the hydrangeas. Along with blooms, you’ll want to add some greenery, such as myrtle, Italian ruscus or eucalyptus. For greenery grown closer to home, consider something like cedar. “Cedar has a beautiful fragrance. It lasts a long time and it’s nice to have in a design as well,” Waltho says, adding that you can get it from your own backyard.

Boxwood, pussy willows and other kinds of branches will also work. “Anything natural in our own environment is great to incorporate indoors.” Tip: Use flowers to add seasonal colour to your space. Monochromatic schemes (tints, tones and shades of the same colour) are ideal for newbie floral arrangers. Step Three: Condition the Water Skip the homemade formulations and opt instead for a floral preservative from your florist, Waltho recommends. Made of sugar, which acts as food, citric acid to maintain pH and bactericide, those little packets contain everything your cut flowers need. Bacteria shorten the life of flowers and cause water to go green and slimy, so the bactericide is especially important. Be sure to change the water every few days, ideally adding some floral preservative each time. Tip: Keep bacteria at bay by removing foliage below the water line. Step Four: Create a Base “I think where a lot of do-it-yourselfers get themselves in trouble is trying to design in just straight water,” Waltho says. A grid, he advises, acts as a guide for placement, gives some structure to a design and keeps flowers where you want them. “It narrows the space for better placement.” To make a simple one, apply tape in a small checkerboard pattern (roughly

made up of about 3/4-inch squares) to the top of the vessel. Tip: Branches can serve both a decorative and mechanical function. For example, you could fill a container with birch branches and place calla lilies or any kind of Asiatic lily in between, Waltho says, explaining the branches create a rustic look while helping to secure and control the placement of the flowers. Step Five: Get Arranging While you can choose to evenly distribute your flowers so they’re spotted across your arrangement, Waltho says he prefers the impact of clusters. If you don’t like the placement of the flowers, you can simply take them out and try again. When it comes to design, there are plenty of trends (and pics on Pinterest) to inspire you. “Currently, florists have a trend of creating a vegetativetype style arrangement — created by Mother Nature or as seen in the garden,” Waltho says. Depending on the look you want to achieve, you can start with flowers and fill in with greenery, or do the reverse for something a little different. Tip: Flowers will continue to open, so don’t overstuff your arrangements.

Using Backyard Beauties Ever notice your backyard blooms smell far more fragrant than the store-bought kind? There’s a reason for that. It’s been determined that “The scent is what shortens the life in a lot of flowers,” Waltho explains. “So now roses that come in with little fragrance will last two to three weeks, but our big garden roses that are full of scent and beautiful to smell will only last four or five days.” If you do opt for flowers and greenery from your backyard, be sure that visitors such as ants don’t hitch a ride indoors. (A warm 10-minute “bath” is great for removing bugs and dirt.) Waltho also recommends spraying everything with an insecticidal soap, available at garden centres.

All Ears Whether boiled, barbecued, eaten on its own or thrown into salads or salsa, corn is an iconic summer taste. To make sure every cob you choose is the best it can be, Morris Gervais, owner of Barrie Hill Farms, offers this advice: Go local. “Anything in your grocery store is going to be three or four days old,” Gervais says. “Go to your local farmers’ market — or a pick-your-own farm — for corn that is absolutely fresh.” After corn is picked, he explains, the natural sugars start to turn to starch, so the fresher the corn, the sweeter and more tender it will be. Seek brown. If you’re picking your own corn, check the silk at the top. If it’s brown and dry, the corn is good to go. If it’s damp, it’s not ready, Gervais says. Perform the pinch test. “Squeeze the top,” he says, “to make sure the cob is filled out.” Corn, Gervais explains, grows from the bottom up. If it’s picked too early, the kernels at the top won’t be developed yet.

Chavo Crepes How one couple made their culinary dream come true, to the delight of Barrie diners By Katherine Elphick | photos by Ellie Kistemaker

I

n the summer of 2013, Charlie Robev and his wife, Karolina Robeva, started selling crepes in downtown Barrie. “We began at the Barrie Farmers’ Market on Saturday mornings with two crepe makers, a couple of tables and a tent,” says Robev of Chavo Crepes’ humble beginnings. Market goers quickly took notice and were soon lining up for the sweet or savoury, flavourful French street-food staple. “We would serve ham-and-cheese crepes to the adults, and banana and Nutella, or strawberry crepes to the kids,” Robev says. “It was a win-win situation for everyone.” The

couple’s success led to a crepe food truck on Owen Street and finally a Dunlop Street restaurant, which opened in August 2014. Fast-forward three years and Chavo Crepes is a popular downtown Barrie dining establishment. “Crepes are the perfect culinary envelope for any number of sweet or savoury fillings,” Robev says. “They are so versatile and can be eaten for breakfast, lunch, dinner or dessert.” To learn more about Chavo Crepes and its owners, we sat down with Robev to discuss his move to Canada and fulfilling the dream of opening up a crepe business. Why did you focus on crepes? Crepes were a big part of my childhood in Bulgaria. Every weekend, my grandmother would make fresh crepes for breakfast. They were meltingly rich and soft, and my family members would sit around the table, grab a crepe and fill it up with anything from jam or Nutella to cheese and bacon and so on. That’s how we started our mornings, and I wanted to bring that tradition to Barrie. Also, crepes are a very popular street food in France and people often associate crepes with family vacations and good memories. Why do you think your crepe business has been such a success? Apart from being versatile, our crepes are healthy and delicious. We use fresh ingredients and nothing is prepared ahead of time — each crepe is made fresh to order. People love how fast they can be prepared. You can come in for a meal and be out very quickly, which is great for people with a time limit.

What’s on the menu? We serve sweet and savoury authentic French crepes, fresh salads with homemade signature dressings and soups. We are open for breakfast, lunch and dinner and are a quick dessert stop. We make everything in-house from scratch — we even roast our own turkey, make our own sausages, and all of our soups are made from homemade stock. What’s popular? All of our crepes sell really well. Because we offer so much variety, including vegetarian, vegan and gluten-free options, we really do cater to everyone’s needs. I always say that if I get 10 people sitting at a table, I’ll get 10 different crepe orders. What are some of your favourites? For savoury meat or fish options, the Bulgarian village sausage; the turkey, bacon and avocado; or the smoked salmon are always crowd-pleasers. For vegetarian choices, go for the goat cheese with pecans, and for vegan, try the hummus crepe. Add a glass of wine and you have a perfect meal! For sweet crepes, try lemon, cheesecake or “hazelberryana” (fresh strawberries, sliced banana and Nutella).

ALKALIZING GREEN SOUP (recipe by Karolina Robeva, Chavo Crepes) This soup can be enjoyed warm or cold. Note: You can make a chunky version by adding the split peas after puréeing the rest of the ingredients. 1 cup cooked split green peas 2 oz spinach, de-stemmed (about 2 handfuls) 1 large celery stalk 1 oz parsley leaves (about a handful) 1 oz cilantro leaves (about a handful) 1 clove garlic 1 tbsp miso 1 tbsp nutritional yeast 2 tbsp coconut cream or full-fat coconut milk, divided 2½ cups water

Combine split peas, spinach, celery, parsley, cilantro, garlic, miso, yeast, 1 tbsp coconut cream and water in a blender; purée until silky smooth. If desired, transfer to a medium saucepan and heat gently until hot but not simmering. Taste, and adjust with a bit of salt or more miso, if needed. Drizzle with remaining cream and whatever other toppings you desire (see below). Toppings Use any or all of the following: shaved watermelon radish, or daikon (I like to soak in salt water), toasted almonds, celery leaves, cilantro leaves, pepitas (pumpkin seeds) or hemp seeds.

How did you pick the name “Chavo Crepes”? Chavo is my nickname in Bulgarian. My real name is Chavdar, so the resturant’s name comes from that. Where do the recipes come from? Both Karolina and I have always loved cooking, so most of the recipes are ours. But Karolina is the real kitchen expert and she comes up with most of our menu creations. Her holistic nutritionist training is extremely helpful for our business. What’s the secret to the perfect crepe? Experience, skill and time are key ingredients. It’s the little things that count, like refrigerating the batter for at least six to seven hours before you use it, cooking it at the perfect temperature, flipping it at the exact moment and using high-quality ingredients. What’s your food philosophy? It’s threefold: healthy first, fresh is second and third is creativity. Being artistic is very important to me, as I don’t like a sloppy job. People eat with their eyes first, and food is art, so I want it to look creative. When diners ask me to cut their crepes to make sharing easier, I always say no. I don’t want to destroy my beautiful creation before it gets to the table. I will bring them extra plates and knives, but they have to see it first before it gets cut. What about the future? Starting in the fall, we will have live jazz music on Friday and Saturday nights. We are also working on a new expanded menu, which will include new crepes, more appetizers and charcuterie boards. We will also be making more desserts, such as cakes. With respect to our business, our goal is to start franchising Chavo Crepes.

Summer Crostini 1 baguette ½ cup goat cheese 1 lb fresh strawberries, cleaned and sliced 20 mint leaves, washed and torn Honey and balsamic glaze, for drizzling (available at supermarket) Cut baguette into ž-inch slices and toast until golden brown. Spread goat cheese on each slice, add a layer of sliced strawberries and torn mint leaves, then drizzle with honey and balsamic glaze. Makes 10 to 12 crostinis.

Berry & Coconut Frozen Yogurt Squares Base 2 cups chocolate cookie baking crumbs 2 tbsp sugar 1/3 cup butter, melted Filling 3 ¾ cups full-fat coconut-flavoured yogurt 1 cup sugar ¼ tsp kosher salt Chopped berries (optional) Topping ½ cup sweetened shredded coconut, divided sliced strawberries (or a mix of berries of your choice) Line a 9-inch square metal baking pan with 2 sheets of parchment paper, making sure there is overhang on the sides. In a medium bowl, combine chocolate crumbs and sugar, stir in butter

and massage ingredients together until crumbs are evenly coated with butter. Press evenly into bottom of pan and use the flat side of a cup to press down firmly, making sure base is tightly packed. Place in the freezer while making topping and filling. For topping, in a frying pan set over medium-high heat, toast coconut until lightly golden brown, stirring constantly to avoid over-browning. Let coconut cool on a plate while you prepare yogurt mixture. In a large bowl, whisk together yogurt, sugar and salt until sugar is completely dissolved. Fold in chopped berries, if using. Remove pan from freezer and, using a spatula, spread yogurt spread yogurt mixture in a thick, even layer over cookie crumb base. Top with sliced strawberries (or mix of your choice) and toasted coconut flakes. Freeze for 4 to 5 hours. Using a sharp knife, cut into evenly sized squares. Arrange on a serving platter and let thaw for about 5 minutes for a creamier texture. Makes 10 squares.

Grilled Bacon Burger 2 ž lbs lean ground beef ½ lb double-smoked bacon Salt and pepper 8 burger buns Lettuce Tomato Barbecue sauce Fresh radish relish (see recipe) Preheat the grill to 500 F Slice the bacon into small strips and place in a large mixing bowl. Add the ground beef and mix by hand until the bacon is incorporated into the beef. Divide the meat into 8 equal portions just over 1/3 lb each. To shape the burgers, roll each portion into a ball and push down in the middle to flatten them out into a traditional burger shape. The burgers will cook more evenly if the middle is thinner than the edges of the burger. Sprinkle each side of the burgers with salt and pepper. Place the burgers on the grill over direct heat. Cook on one side for 4 mins then flip and grill for another 4-5 mins. Aim for an internal temperature of 160 F for mediumwell. If you notice any flare ups or excessive browning, move the burgers to a cooler part of the grill. Once the burgers are almost finished cooking, brush them with your favourite barbecue sauce and place on a plate to rest for a few minutes. While the burgers are resting, gather the rest of your condiments and buns, build your burger and enjoy! Makes 8 servings.

Beer-Battered Onion Rings 3 large cooking onions or yellow onions 2 cups all-purpose flour, divided 1 ½ cups corn starch 1 tbsp baking powder 1 tsp garlic powder 1 tsp smoked paprika 2 tsp kosher salt 1 ½ cups beer, preferably an ale 1 cup sparkling water 1 egg 4 cups vegetable oil for frying

Preheat oven to 250 F. Set two cooling racks over two rimmed baking sheets. Cut onions crosswise into ½-inch thick slices and separate into rings. Reserve small inner rings for another use. Add 1 cup flour to a large bowl. Toss rings in flour and let sit 30 mins. This is an important step as it will help the batter to adhere to the onions. When ready to fry, whisk together remaining 1 cup of flour, cornstarch, garlic powder, baking powder, smoked paprika and salt in a large bowl. In another large bowl, whisk together the beer, water, and egg. Gradually whisk the dry mixture into the wet mixture. Heat the oil in a large pot over medium-high heat until it registers 350 F on a deep fry/candy thermometer. Working in batches to prevent crowding, dredge the onion rings in the batter and immediately drop into the oil. Cook onion rings, turning once, until golden (about 3 minutes total). Transfer cooked rings to the cooling racks set over the baking sheets. Keep warm in oven while frying remaining batches. Makes 6 servings.

In a small pot, place the apple cider vinegar, water, sugar, coriander, lemon juice, salt, pepper and chili flakes. Place the pot over medium heat and stir to dissolve the sugar and salt. Once dissolved, remove the pan from the heat and allow to cool. Using a mandolin, slice the radishes into very fine slices. If you do not have a mandolin, you can use a vegetable peeler or a knife. In a small bowl, combine the green onions and the radishes, packing them in tightly. Fill with the liquid and make sure the radishes are submerged. Place the radishes in the fridge to marinate for 5 minutes. Serve immediately or keep covered in the fridge for up to a week .

I

have recently returned from the south of Italy, and loved it so much I’m going back, this time even further. But I’m not here to rub it in, I’m here to extoll the virtues of the wines being made there. What I learned, besides the thriving culture and zest for life the southern Italians have — how the Nepalese see driving as a sport and stop signs as merely a suggestion — is that the wines of southern Italy encompass more than merely Cabernet Sauvignon, Merlot and Chardonnay. In fact, you would be hard pressed to find those varieties in any meaningful amount down there. Instead, grapes like Primitivo, Greco di Tufo, Falanghina, Grillo, Aglianico, Malvasia and Nerello Muscalese are the ones seen on wine-bottle labels and make up the blends within.

When talking about southern Italy, there is an air of wistfulness in everyone’s voice and a longing in their eyes. They’d love to go, or go back. The areas I’m referring to are Campania, Puglia, Sicily, Sardinia and Basilicata — regions that, in our heads, are as familiar as our own backyards, but then seem so far away when one thinks about the wines they produce. Many have had wine from these regions, but never realized it as they are some of the most underrated of Italy’s wines that come into our province. The sunny south never fails to conjure up images of hot weather in peoples’ minds, so white and cool is the thing you want to drink. But if you have even a passing knowledge of wines, you wonder how white wine production exists in these hot places. I can tell you that those cool breezes off the water help

to shape the whites and rosés that make the way of life in Southern Italy so relaxing and seemingly carefree. Grapes like Grillo and Falanghina provide summertime relief in the afternoon while enjoying a seafood lunch, and help to make the noon hour much more bearable. Southern Italy offers some great wines for the red lover as well, made from indigenous grapes, such as Aglianico, Primitivo and Nero d’Avola, at prices that make them affordable and allow for wines that are ageable as well. You won’t break the bank to start a cellar or — if you happen to buy too much — you can hold them for the next few years. Here are some great examples of how you can bring southern Italy home to experience la bella vita for yourself.

Sunny Ways What’s better than a day at the beach? Grab your sun hat, slap on some sunscreen and you’re good to go, right? Not quite, says Dr. Stacie Weber of Barrie’s Cosmetic & Facial Rejuvenation Clinic. Most people still either don’t wear sunscreen or don’t use it properly. And that can have serious consequences, such as premature aging and, more concerning, skin cancer. “Most people don’t apply enough,” Weber says. Guidelines advise applying 30 grams of sunscreen to your body. “That means you’re only getting about 10 applications out of a typical bottle,” she says. Plus, slathering it on in the morning won’t protect you all day. Depending on the amount of exposure and how much you sweat, you’ll need to reapply every two to four hours — more if you swim. And don’t think you can take a pass on an overcast day. “Even with clouds, 80 per cent of UV rays get through,” Weber says. “If you can even faintly see your shadow, you need protection.”

Troubleshooting My tan has started to look patchy. Always exfoliate before applying a sunless tanner to get rid of dead skin cells that could cause an uneven fade. If after a few days you notice dark patches in the areas where you sweat, lightly exfoliate those spots with a gentle scrub. I have age spots on my face and a sunless tanner makes them darker. Before application, dab a small amount of oil-free moisturizer on dark spots. This will create a barrier that will prevent them from absorbing tanner. I want to maintain a faux glow for the whole summer, not just a week. Minimize swimming and showering to extend the life of your tan. Also massage on a gradual tanner every four or five days, especially on your face and hands. Every 10 to 14 days, fully remove your tan by massaging baby oil over your entire body. Leave it on for 10 minutes, then hop in the shower and exfoliate with a scrub or mitt. Reapply your glow from top to toe.

Before heading into a sunless tanning booth, prep at home. Moisturize your skin frequently for a couple of days and shower and exfoliate the day before. Avoid wearing deodorant, lotion, perfume or jewellery to your appointment and wear dark, loose-fitting clothing. When you arrive, you choose your shade and pick a fragrance, such as warm vanilla sugar. Next, you apply the provided barrier cream to your hands, feet, hairline, knees and elbows — areas that tend to over-absorb the tanning agent DHA — stepping into the booth for your automated spray tan via a clear solution. “You’ll see no colour for the first four hours,” says Shaun Vizzacchero, president of Richmond Hill’s California Waves, which offers Mystic Tan HD. “Generally, your window is six to 12 hours after application. When you’re happy with the depth of the tan, showering stops the process.”

Pre-tan prep at home is the same as for an in-salon application: shower, exfoliate and moisturize the day before. Right before the application, apply cocoa butter or aloe vera– based moisturizer to your hairline and over your hands, feet, knees and elbows. Next, in a circular motion, slather on tanning lotion or mousse (or massage in a spray) with a tanning mitt. Never use your bare hands, as you could end up with orange palms. Avoid placing tons of product on your wrists, hands and feet, and instead fade the tanner out with a light touch over those areas. If you want to use a body tanner on your face (instead of purchasing a separate face product), apply moisturizer first, because the skin on the face tends to absorb DHA more rapidly than other parts of the body. Finally, shave your legs the day after applying your tan so the tanning agent won’t seep into pores and darken them.

For your skin To protect against the sun’s harmful rays, sunscreen is essential. “Choose one that is broad spectrum and protects against both UVA and UVB rays,” Gri says, adding, look for an SPF of 30 or more. Not a fan of conventional sunscreen? Gri says look for a product with seven per cent zinc oxide or titanium dioxide, either of which work to block the sun’s rays. Worried your sunscreen will make you break out? Look for one designed specially for the face, keeping skin both moisturized and protected without clogging your pores. For ouchies Walking barefoot on the deck can lead to painful splinters. Keep tweezers on hand to easily extract the offending shred. For cuts and scrapes, treat the area with an antibiotic cream to help ward off infection while speeding up the healing. P L AY Got a family of beach bums? New Brunswick’s beaches boast the warmest ocean water temperatures in North America. But, as our unfortunately chilly experience showed, there’s no accounting for weather. So, it’s a good thing that, should summer be on holidays when you are, there are other natural diversions to enjoy. We kicked off our first day, for example, with a bear-y cool experience: Little, Big Bear Safari, about a half-hour drive from Moncton, brings you as close to gorgeous black bears as safely possible. Watch while charismatic founder Richard Goguen interacts with a dozen or more black bears of all ages, coming and going to the “bear stand” on his property. It’s a uniquely New Brunswick experience. That can also be said in spades for kayaking through the province’s famous Hopewell Rocks. Perhaps the highlight of our trip, experiencing Hopewell Rocks started early (for teenagers) with all of us getting equipped by the helpful staff at Baymount Outdoor Adventures at 9 a.m. Well worth the whiny hassle, by the way: paddling our way in, around and through the spectacular New Brunswick shoreline is something none of us will forget. That vision was reinforced as we walked the same route mere hours later after the world’s highest tides went out. And, should you feel like a family stroll, New Brunswick will spoil you. We doubled our pleasure by first exploring Fundy National Park and hiking through the stunning Dixon Falls trail (capped off with a lobster taco lunch at Cape Enrage), followed by a challenging trek along fossil beach and taking in the raw and timeless beauty of the landscape — all enhanced by the call of the area’s famous lighthouse. By day’s end, you’ll wonder how anyone could simply pass through this province.

How to

Pack a Suitcase Follow these easy steps and get your gear ready to go in a snap By Doug Wallace 1. Start early. Haul out a suitcase and throw in the seasonal stuff you know you’ll need right away. This is also a good time to discern if anything needs to be mended, dry-cleaned or replaced. Start a list on your phone and add to it as things occur to you, and make another list of stuff you need to buy.

5. Embrace the Power of One. That means one jacket, one suit, one skirt, one pair of blue jeans, one pair of khakis, one swimsuit, etc.

2. Check the facilities on the other end. Is there going to be a washer and dryer at your destination or a laundromat nearby? This can halve the number of clothes you need to take along. Do a big wash several days beforehand and throw all your favourite items into the suitcase.

7. Easy on the shoes. Again with the Power of One. Take only one of everything: one dressy, one casual, one sandal, one runner. Make sure at least one pair is waterproof.

3. Mix and match. Absolutely everything in your luggage needs to go together in some way. Break it down into one colour palette. 4. Go with neutrals. White shirt, black shirt, blue shirt, repeat. Tan pants, black pants. Versatile neutrals can be dressed up with colourful accessories that weigh much less.

6. Embrace the Power of Two. If you’re not going to wear something at least twice, leave it at home.

8. Wear things out. Pack a few items that are on their last legs, then just wear and toss. This makes room in your suitcase for shopping and souvenirs. 9. Keep outerwear simple. Jackets need to be either on your back or made of scrunchable nylon. No bulky sweaters allowed.

10. Halve the toiletries. Pack bathroom items that provide as much double duty as possible — moisturizer with sunscreen, shampoo with conditioner, scented lotion and so on. 11. Dump the heavy stuff. No books or magazines: tablets only. Speaking of which, you don’t need both a laptop and a tablet. 12. Streamline the other electronics. Pack the point-and-shoot, not the SLR, and leave things like travel steamers and coffee makers at home. Bonus Tip: Create a mini drugstore kit. This should include ibuprofen, acetaminophen, sinus congestion medicine, cold/flu tablets, alcohol-based wipes, anti-diarrhea medicine, anti-nausea medicine, an antacid, various sizes of adhesive bandages and throat lozenges. Check with your doctor before taking any medication. Don’t forget your vitamins.

ortugal’s beachified south coastline has long been the country’s summer playground. And while the west side of the Algarve has enjoyed the lion’s share of the tourist trade since the 1970s, the east side, stretching from the central city of Faro to Spain, is far more relaxing and infinitely more cool. This is where the smart Europeans are buying — and renting — their summer properties, and where creative expats are opening boutique hotels and hot restaurants. The sleepiness of the the various towns and empty beaches weeds out those who can’t sit in a chair for more than a few minutes. The common denominator here, for both locals and tourists, is an innate ability to appreciate life. It’s easy to see how this came about. Secluded beaches can stretch for many kilometres with no one else in sight. Centuries-old towns — with narrow walkways, whitewashed markets and village square cafés — are more than quaint. Exquisite mosaic tilework is everywhere you look; ditto for ice cream shops. Traditional salt-cod fritters, octopus salad, seafood rice and fresh bread are plentiful, tasty and inexpensive. Each bakery has a different recipe for the ubiquitous pastel de nata, or egg tart, which makes repeat taste tests essential. And the wine is not only incredible, but can be had for as little as €2 a glass. Clearly, these people know how to live.

Sightseeing without crowds The hub city of Faro splits the Eastern and Western Algarve. Travellers fly into its small international airport — and then promptly leave town. As a result, Faro’s worthiest spots seldom make it into the guidebooks. There’s a lot of history here, and a visit to the Arco da Vila Interpretation Centre, built within one of the city’s oldest Moorish gates dating from the 11th century, gives visitors the basics. From there, you can stop at nearby Faro Cathedral, but even more intriguing is the Church of Nossa Senhora do Carmo, noted for its golden interior and the chilling chapel in the rear, its walls and ceilings lined with the skulls and bones of more than 1,000 monks. The town of Olhão, a 20-minute drive east, is where all the cool people live. This busy fishing port has slowly been adopted by artists and creative entrepreneurs over the years, drawn to its grittiness and to the mix of old and new. Boutique hotel developments mix with mom-and-pop restaurants on intricately tiled pedestrian streets. Here, as throughout the Algarve, beautifully renovated buildings border completely derelict properties, either abandoned or waiting for some long-lost cousin to lay claim to them. This juxtaposition creates a sort of romantic, tumbledown-chic that underlines Olhão’s history, connecting past with present. The best of beach-hopping A short ferry ride from Olhão to the marshes south of town will get you to Culatra Island, the first of the sandbar islands that stretch eastward, all the way to the Spanish border and beyond. Once you get a taste for these incredible beaches, you’ll need a daily dose, and there is ample opportunity to beach hop to a different one every day. Take a 15-minute drive a little farther up the coast to Barril Beach on Tavira Island. It’s a dolled-up former tuna fishermen’s camp, reached by walking from the mainland across a pontoon bridge, then hopping on a small train that wends its way through marshes and dunes to the Atlantic Ocean. You will have no trouble finding solitude here: the beach is 11 kilometres long. A cluster of bars and restaurants lends a bit of relief from the surf and sun tanning, and an

Instagram-worthy anchor graveyard commemorates the region’s fishing history. Keep your camera out for the city of Tavira itself, one of the Eastern Algarve’s most gorgeous spots and a very popular home base for tourists. White stone-tiled streets, worn smooth by centuries of feet, line the narrow pathways, grand boulevards and quaint church squares. Lucky for you, it feels as if there’s a gelato shop every 10 metres. One of the many day trips to take in while you’re in Tavira is the old Moorish fishing village of Cacela Velha, a few minutes farther east. There’s a great local beach here where bathers walk or wade out to the sandbars, keeping an

eye on the time so they don’t get stranded when the tide comes in. There are no public amenities there, but a couple of great restaurants are in the town itself. Keep in mind that all over the Algarve, lunch is sacred, and always served between 1 and 3 (many of the smaller shops close during this time, too). If you try to have lunch later or earlier, you will be met with a shrug. Slip Into Spain By the time you get to the town of Vila Real de Santo Antonio, another fun day trip, you’re at the Guadiana River, with Spain on the other side. Built in less than six months in 1774 as a centre for tuna fishing, it now teems with travellers, the streets lined with comfy cafés and interesting markets. Steer clear of the pot holders and the beach towels sporting the mug of soccer star Cristiano Ronaldo, and stock up instead on local crafts. Cork home furnishings, ceramic bowls and tiles, terracotta cookware, wool rugs and fine-milled soaps are all perfectly packable for your trip home. When you grow weary of shopping in Vila Real de Santo Antonio, head into Spain for something to eat. Simply jump on the 20-minute ferry and cross the river to the town of Ayamonte for tapas and a glass or two of sangria. Note, though, that there is a one-hour time difference here, and a similar outlook on lunch times. If golf is your passion, tee off at nearby Monte Rei Golf & Country Club, just north of Vila Real, ranked by Golf Digest magazine as the number one course in all of Portugal. Designed by Jack Nicklaus, it blends in with the landscape, sporting views of the Serra do Caldeirão mountains to the north and the ocean to the south. Before heading back to home base, take a quick side-step into the wee town of Castro Marim to roam through the 12th-century castle ruins. Chances are better than good you will be the only ones there. And because this is the centre of sea salt production in the Eastern Algarve, it’s fitting that there’s an open-air mud bath to wade into at the edge of town. Nestled right in the salt pans, it’s more of a wallow than a bath, but an optimal opportunity to “take the waters.” With all this salt and sand and sitting around, it’s not hard to exhaust yourself doing absolutely nothing. This truly is the best way to appreciate life.

t’s 1 p.m. and Cheryl Hickey, Entertainment Tonight Canada’s glamorous host, has already been to makeup, recorded a guest spot on a morning show, run down the show’s lineup, recorded voice work, performed studio readings and taped the intros. Now she’s squeezing in an interview on her lunch break before returning to the set to finish the day’s taping. It’s a departure from her usual lunchtime fitness routine of plyometrics to keep her figure trim. Every day is like this. From early breakfasts with the family — her number one priority — to the hard midday work of hosting ET Canada, followed by appearances and interviews, Facebook Live events with fans, afternoon daycare pickups, children’s gymnastics, dinner prep and then what she calls “family fun time,” playing with the kids after dinner. Her life is non-stop action. Come evening, there’s the inevitable homework supervision and tuck-ins, but once bath and bedtime rituals are completed, Hickey’s attention turns to her entrepreneurial exploits, including an up-and-coming launch of a secret “family product.” Thus far, in her whirlwind 20year career, Hickey has hefted a camera, romanced the radio mic, reported from the clouds while teetering out the door of a helicopter, written and produced news segments, hauled cables for production, headlined a documentary and worked the rope line of star-studded events both north and south of the 49th parallel. Whew! And that was all before becoming the host of ET Canada. An indisputable force, Hickey is fresh-faced and fit, and at the heart of it all, a hometown gal who puts family first. Hailing originally from Owen Sound, Hickey developed a deep love of nature and all things family while growing up. She skied the mountains in winter and swam the lakes in summer. “Sauble Beach

was like 90210 in Owen Sound,” she recalls. “It was where you were developing who you are. It puts your feet in the ground.” Staying grounded has been key to Hickey’s success. While many personalities are swept up in that heady world of fame that can derail a life, her train moves smoothly in and out of the stations of celebrity with a steely focus that started early. At age 16, Hickey volunteered at Maclean-Hunter’s local TV station, and it was then she knew she’d found her media calling. After high school, she left Owen Sound for Fanshawe College in London to study broadcast journalism and landed a job at a radio station just two weeks after graduating. Within 18 months, she was employed at Barrie’s NewVR TV, and by 1999, she was climbing the ladder again, hired as videographer for Global Television. The variety of roles and their associated duties never fazed Hickey, unless heights or fish were involved. “I won’t swim in an ocean,” she says. “Swimming in open bodies of water with fish?” She shudders at the thought. But that didn’t stop her, not after all those years waterskiing on Georgian Bay. And during ET Canada’s “Get Over Your Fears Week,” Hickey allowed herself to be dunked inside a shark-infested pool at Ripley’s Aquarium of Canada — cage-free! Hickey also bulled her way through her previous gig as an on-air chopper reporter for years, despite her utter fear of heights. Every day, the challenge of boarding that helicopter rose anew, she says. And when producers asked her to parachute out of a plane over the CN Tower with the Canadian Armed Forces SkyHawks, she suited right up. “It was horrendous,” she says. “They attached me to another jumper and we jumped out of the plane. When we landed, my dad was so mad. ‘You

could’ve killed yourself !’ he said. I told him my work asked me to do a story on it, so I had to. I was doing it with the military.” Aside from these stunts, Hickey’s most harrowing moment in her hosting career came in an on-camera interview with veteran interrogator Barbara Walters. She asked Walters a pointed question about something she’d written in her book. Walters flatly denied it ever happened, leaving Hickey agape. She paused a beat, ruminating over whether to nail her with a gotcha or let it slide. “Do I correct Barbara Walters or not? What is respectful?” Hickey says. “You have to go with your moral compass.” This was an entertainment program after all, not The National. “I’m glad I chose not to.” Hickey’s ethics are indeed rock-solid, but her sense of humour is a little bent. “I love bloopers,” she confesses, “when people fall — but in a good way.” She recalls one of her own bloopers that resulted in a public wardrobe malfunction. “I was messing around on set, like we do, doing something ridiculous between takes. I had this dress on that came out

very far from the waist,” she says. “I looked like a pelican and my six-inch heel caught it and I had a full-on Britney [Spears] moment.” Although she dishes celebrity dirt on Canada’s premiere entertainment program for a living, she is just as quick to turn that lens on her own foibles. Perhaps that’s because her childhood wasn’t completely rosy. There were family struggles Hickey mentions but won’t elaborate on, and those challenges built character. Hickey’s mother, Lori, suffers from MS and theirs is a close relationship. “My mother is a mind-over-matter lady,” she says, “a glass-half-full girl, and I try to take that example.” Indeed, she credits much of her entrepreneurial spirit to her mother, whom she calls “my little soulmate.” When Hickey was a teenager and couldn’t sleep, they would sit at the kitchen table and create inventions. “We’d daydream about what the world needed and what we could invent to make people’s lives better,” she says. “I still journal about what would make my life easier as a mom and how I can share that with others.” As a wife and mother of two now herself, Hickey chooses to only endorse merchandise that she believes to be humane or beneficial to society. One of the products she has endorsed is KidsWifi, a product from a Canadian-owned company that sets up parental controls through a dashboard to scrape inappropriate websites and data from access. The purpose is to help keep children safer online. “I was struck by their mission,” she says. “The Internet is just like the Wild West.” Her own daughter had been on YouTube looking for Peppa the Pig cartoons and Hickey was horrified to discover an adult had created something very different with unsavoury content. After using KidsWifi for six months, she agreed to sign on to endorse it. “You plug it into

By the fall of this year we will have our Advanced Cardiac program in full swing including an outstanding team of eight cardiologists, a new cardiac catheterization lab and team providing diagnostics and interventions such as angiograms and angioplasty procedures.

That’s not the only healthcare game changer in the region. The playing field is also being levelled for children and youth facing mental health issues. We know that suicide is the second leading cause of death among teens and that one in five children and youth are affected by mental health issues and that’s a heartbreaking tragedy. Soon these young people will find care they need closer to home as RVH has begun construction on an eight-bed inpatient unit, set to open in late 2017. The unit will provide care for up to 300 young people a year. A comprehensive day hospital program will provide an additional 3,000 outpatient visits annually.

This news is music to Rick Jocsak’s ears.

This is not just good news, it is hope for families who in the past have looked to us for the care they need and we have not been there for them.

That’s because Jocsak, 61, had a heart attack at his cottage at Six Mile Lake, north of Port Severn, and didn’t realize he’d have to drive right past RVH to get the care he needed.

Now we will be!

“I had to go to Newmarket. That’s a long drive and I thought, ‘but, I’d be driving right by Barrie, why aren’t we stopping there’,” says Jocsak. “Of course at the time you just do what you have to do. And so as I headed down the highway in the back of ambulance I was thinking, ‘I hope to hell nothing happens on the highway.’” Soon, cottagers and residents throughout North Simcoe Muskoka dealing with a heart issue won’t have to make that trip and will be able to get their care closer to home at RVH.

Lount’s Castle, Barrie A majestic feature in north Barrie for more than a century, Lount’s Castle was built in 1877 as a summer home for William Lount, a lawyer who worked in Barrie and Toronto. The Lount family was prominent in the area: Lount’s grandfather was a United Empire Loyalist, and his father, also named William, was the registrar for the County of Simcoe. His uncle Samuel, though, was a member of Parliament until 1837, when, as part of the Upper Canada rebellion, he led a group of farmers from Holland Landing to Mongomery’s Tavern in Toronto, where they were defeated and he was hanged. Lount went on to represent North Simoce in the local legislature and the Toronto Liberals in the then Dominion government.
