The former first lady invites readers into her world as she chronicles the experiences that have shaped her in this intimate and powerful memoir.
It’s an inherent need we all have: to have that sense of community and feel that we’re connected with others. But in today’s age of social media “friends” and fewer face-to-face interactions, how does one accomplish this? Such is the issue that Radha Agrawal attempts to tackle in her new book, Belong: Find Your People, Create Community and Live a More Connected Life. With a personal recommendation on the cover from the Whole Foods Market co-founder and praise inside from Deepak Chopra, I began the book with high hopes of profound revelations on increasing connectedness. The publication breaks finding meaningful connections into steps, such as determining what we want in a friend and community, gauging the type of energy we emit and respond to and becoming intentional about our relationships. A plethora of feel-good statements kept me turning the pages, waiting for Agrawal to delve into certain aspects in a way that spoke to me. While the concepts she presented scratch the surface of what it takes to create community, they don’t dive deep into the topic like I hoped they would. An excessive use of acronyms created by the author didn’t make it any easier to retain the concepts she was striving to convey and gave the book a juvenile feel. And Agrawal’s attempt to rewrite Maslow’s hierarchy of needs and rename it after herself also struck me as unnecessary. The fluctuating font sizes and excessive amount of visuals made for an overall choppy read. This book may appeal to 20-somethings who are looking for practical ways to connect with others, but I think most people older than this will find it’s largely based on common sense.

BRIAN BARRER An artist resumes his career after a devastating accident by Dawn Ritchie 14

Six years ago, Brian Barrer’s work came to a crashing halt following a collision with a drunk driver. While stopped at a light, his car was totalled from behind, and the brain bleed that resulted silenced his creative force. For the next five years, Barrer found he couldn’t quite organize his thoughts to form the quality of art he had previously taken for granted. Prior to the accident, Barrer had exhibited in 11 solo shows, 33 group shows, sold his work internationally and received awards in four juried competitions. One of his pieces hangs in the Children’s Diabetic Ward at the Royal Victoria Hospital, and a Polaroid transfer print resides in the permanent collection at the MacLaren Art Gallery. “I couldn’t focus and concentrate,” he recalls. “It wasn’t working.” He finally put his art on the
back burner and focussed on his teaching. But this year, it all came surging back again and suddenly Barrer found himself absorbed by a flurry of work. “You can only define it as a catch-up for time lost,” he says. “The creative process doesn’t know 9-5. It doesn’t sleep, and these ideas were constantly gnawing at the back of my head. I just needed to develop my skills back up.” The “gnawing” was precipitated by a trip to New York, which Barrer made during his recovery. He spent hours in the Natural History Museum there, photographing the habitat dioramas of endangered wildlife, struck by the unbearable irony that the animals in the displays had to be killed so that he could appreciate them. “We should be nurturing nature,” Barrer says. “But it’s the other way around. They’re taking care of us.”

This catharsis laid the groundwork for his next series—a different type of collision—between humanity and the natural world. In his work Moose Lodge, a herd of regal Bison rest before a Bingo sign like ghostly figments of the past. They are hauntingly out of place against the decay of man’s ugly construction. In another work, Bear Pulling an Oil Tanker, a Polar Bear is hitched to an eighteen-wheeler in an industrial landscape devoid of ice and snow. These are not hopeful images, but rather a treatise on the invasion of man upon nature. An important message that needs to be heeded. “What forms our perception, confirms our realities,” says Barrer. Barrer is a mixed media artist, incorporating photographic assemblage, print work and painting into his art. He studied photography at Ryerson University and Arts Design at Georgian College. “My process is multi-layered,” he explains. “I get an idea, draw it in my sketchbook, then photograph objects. I Photoshop them, print them on board and then manipulate the images before I begin painting over top of them.” The results are slow to be revealed, but not all is dire and apocalyptic. Barrer’s sense of humor is also on display in his painting Toast, where an abandoned Airstream trailer is revealed to have a second life as a toaster. “It’s my warped sense of humor,” he says. “I’m always looking outside of the box.” Getting his chops back, Barrer is looking forward to his first exhibition in five years, this fall (October 18th – November 3rd, 2019) at Double Doors Studios in Anten Mills. “It’s a strong new body of work that I’m quite proud of,” he says. “I am back. heir new home was a four-bedroom bungalow in the Innisfil Estates executive development in family-friendly Stroud. Constructed by custom home builder, A.N.T. Homes, the residence offered three bedrooms up, with room for a fourth on the lower level. It also featured an oversized lot, spacious three-car garage, and upscale finishes throughout. The Cappelli’s liked the small town feeling of Stroud, with its easy access to the 400 Highway, amenities of Barrie and proximity to the school where Steve Cappelli teaches. But once they took possession of their new residence, their customization spirit just wouldn’t quit. Every subsequent design decision they made would be focussed on beauty, togetherness, and functional family living. Steve is a hands-on man who enjoys building and keeping busy. Extra architectural detailing was something he knew he wanted. He personally installed wainscoting on the long hallway from foyer to the great room bringing an elegance to that journey. He mounted 1 x 8 MDF in a tic tac toe pattern on the ceiling of the master bedroom to impart a calming waffle effect. And he added built-ins and storage throughout the residence to organize their lives. In the laundry room, the double doors were removed from a closet and Steve constructed bench seating inside to produce a handy mudroom area. An out-of-sight spot where kids could kick off boots and shrug off coats before charging into the main living space. On the lower level, he framed-out the basement,

finished it and added that extra guest bedroom, a full bath, (bringing the total baths to four,) a kitchen, children’s playroom, and a lounge with a Napolean fireplace ensconced in beautiful woodgrained Italian porcelain wall tiles. Next came the pool, cabana, and the children’s backyard soccer pitch. Steve even constructed the soccer net himself out of plumber’s piping. Why buy, when you can build? He also built the family’s live-edge dining table, accompanying benches, and side tables. Whew! Steve’s wife, Kelly, was no slouch either. With a proclivity for classically rustic design, she took on the interior elements, choosing exceptional fixtures, finishes and furnishings, and accessorizing with the eye and restraint of a designer. Today their home sparkles with prestige lighting, copious trim work, a clean efficiency, and plenty of room to roam—a huge bonus for a family with two active boys. In the kitchen, cabinets are crisp white shaker style with svelte modern hardware. The Bianca backsplash and under counter lighting brightens the culinary workspace. Supplies and sundries are hidden from view behind a door in an adjoining pantry. One would think the white décor that abounds could be an issue with the life-force of two rambunctious children in the house but Steve insists it is problem free because of the way the home is organized with all the extra storage. “Overall, it’s fairly neat,” he says. “Other than an occasional scuff on a baseboard. We run a tight ship. Wash your hands. Organize yourself. Be clean, be neat.” A concept that is also successful in the lower level children’s playroom where Kelly has created a separate daycare area for children of a select clientele of educators. playing and movie nights. “We’re very family oriented,” he says. “We like doing things together.” The adjacent second kitchen here enjoys a full-sized fridge for entertaining and adds the potential for an in-law suite for future owners. The facing of the counter is barn wood, but the backsplash is Italian porcelain tile that mimics that look. Continuity in materials was important to Steve, who wanted every part of their customization to hold together as one uniform design concept. Mission accomplished. Turning to the exterior of the home, the Cappellis chose a vinyl pool, constructed by a friend at Apex Pools. Two four-foot waterfalls deliver ambience and sixteen-foot wide entry steps are seamlessly integrated from the Rinox deck to the waterline. Steve built the cozy cabana from scratch himself with the conscious intent of creating a resort experience. “Our previous residence had a pool as well,” he says. “But I wanted a cabana that wasn’t just a spot where you stood behind a bar and served drinks to guests. I wanted it to be a

place to socialize. We’d go away to Mexico and Cuba, and I liked the lobbies where you lounge and everything is open. You can see the pool. The waterfalls are going. The music is going. You relax. It takes the hustle and bustle of life away.” His choice of material for the structure was rustic pine tongue and groove, sourced from Breens Lumber in Horseshoe Valley/Moonstone. Like many new luxury custom builds, a threecar insulated and heated garage is de rigueur for today’s families who own a minimum of two cars and plenty of toys. But Steve Cappelli admits that other than a workshop area, his massive garage remains entirely empty for the most part. His car tends to end up on the parking pad because the garage serves an entirely different function. The interior space is large enough that it is being used for a nightly game of basketball with the kids. Steve even erected a small basketball net inside. Now that their home has reached peak-customization, the Cappellis are seizing on their next challenge. “We want to build on our own,” says Steve. “A custom home, from the ground up. So that the floorplan is to our exact specifications.” The family plans to stay on in Stroud because of the warm family atmosphere of the area. “We’re currently negotiating land deals,” he says. “I’ve never done it before. I
t was in the early 2000’s that Catherine Staples took a sharp left on her career path. After years of working in accounting and business management, she took a risk and decided to pursue a career within the creative world of design. Returning to school as a mature student at the age of forty, she dove into her studies with an eagerness to begin her new journey. By 2005 she had launched a successful design business; Catherine Staples Interiors. What began with an intimate team of three quickly expanded into a 3000 square foot showroom, equipped with a full design team who offer custom designs and carry out multi-million dollar residential and commercial projects. Today Catherine’s impressive resume boasts a series of achievements including designs for residential and unique commercial projects. With residential projects being the primary clientele, her growing focus has been on waterfront properties, mountain chalets and weekend homes. Catherine spoke with us from her own country residence in scenic horseshoe Valley. Not every designer opens a retail business. What made you take that leap into adding retail to your business model? Yes, that’s where we are exclusive. In the beginning, I struggled with trying to find products that no other designers were showcasing. Over the years, I have discovered that many retailers carry the same pieces and styles. Purchasing online is where it’s at today, but I wasn’t comfortable sourcing and selling products if I wasn’t able to

see firsthand that it was expertly crafted. In High Point, North Carolina at one of the world’s largest furniture design shows, is where we have the opportunity to source directly from the manufacturers. I’ve travelled to Atlanta, Las Vegas, Vancouver, Quebec and even Europe to find the perfect pieces for our clients. I’m constantly sourcing from around the world to ensure that we offer the most current designs and styles. I have a weekend chalet in Collingwood and I love to spend my time visiting all of the local shops and galleries where I’ve come across some amazing artisans and that we’ve now worked with directly. Are people starting to understand the value of original art in home design? Yes they are. If people have a home with inexpensive artwork, we like to throw in an original piece. It instantly transforms a home like you wouldn’t believe. There are a lot of young, new artisans just getting out there right now and if you purchase at the right time you really are making an investment. You just need to know where to look for these artisans. What are your top three tips for homeowners who can’t afford the services of a professional designer? Search Pinterest, you’ll get some great ideas. We’re often on Pinterest ourselves pulling together inspiration boards that our clients can ‘follow’ @catherinestaplesinteriors, they can also follow our hash tag on Instagram #aprojectbycatherinestaplesinteriors for our latest projects and de-
sign inspiration. Before they make a major investment, such as purchasing new upholstery pieces or a bed, we always recommend to space plan it. If the store doesn’t provide the service, tape the floor yourself so you can see how your piece will fit in the space. Everyone wants a sectional today and so they just buy a sectional thinking it will fit no problem, then they get home and realize it’s far too large to fit in their space. It’s beneficial to invest in good quality pieces and to take the time to shop around for your smaller, accent pieces. Lastly, paint does wonders and can be very cost effective when looking for a quick refresh. A fresh coat of paint and perhaps a pop of colour, can give your space a whole new look and feel. Which paint colours are you favouring right now? Benjamin Moore ‘Racoon Fur’ is my favourite colour for this year. It’s a deep black with notes of blue and grey. We just completed a log cabin project with a stunning foyer and we used it on the walls there. It’s dramatic and spectacular! As soon as you enter the foyer there’s an immediate ‘wow’ moment. I’ve also incorporated it on the exterior of homes and on kitchen islands. It offers a beautiful contrast with whites and wood tones. How did you approach the design of your own home? We collaborated with Architect Steve Charron of McKnight Charron. We worked together on bringing our vision to life and he executed the perfect layout for what we wanted, which was open style

Which room in your home do you spend the most time in? We tend to hang out in the kitchen or great room. We have some really comfortable seating in our great room so we love to cozy up by the fire and have our two dogs nestled by our feet. We designed our great room so it can fit plenty of seating so everyone can be seated and relax. We usually have company or family over to watch sporting events and it’s great to be able to have everyone gathered together. What’s really practical is that there are new upholstery fabrics such as Crypton or performance fabrics that are incredibly durable and easy to clean so we don’t need to worry about our pets. Performance fabrics have been one of the greatest introductions in the design world! They are incredibly sensible for families with pets and small children who still want to have custom furniture pieces. Soft to the touch yet water resistant, moisture repellant, stain and order resistant. Is it a spray or in the weave? It’s a treatment to the fabrics done in the manufacturing facility. So, no more spraying because that stuff never works anyway. I have it on my own chairs. I have four creamy white chairs in our great room with Crypton. Love it. For your parting advice. What is the biggest mistake homeowners make when decorating? Trying to use every trend. Don’t overdo it. Keep things simple. Don’t try to wow every room. Simple is always best.

COLOUR MAKES A COMEBACK! Colour returns according to the Pantone Color Institute, which tracks global trends. Pantone declares the vibrant, “life-affirming,” Living Coral 16-1546, as the 2019 colour of the year. This spirited hue will be showing up in furnishings, textiles, accessories and on walls, bringing energy and joy back into the home. Blush tones are prominent in furnishings at all of the major design shows and most paint manufacturers have heeded this call for increased warmth. Sherwin Williams’ announced Cavern Clay as their 2019 colour and Pratt and Lambert has revealed their terracotta-inspired Earthen Trail for their 2019 pigment. Only Benjamin Moore stands its ground, keeping things cool with the neutral grey of Metropolitan.

GEOMETRIC ART Living spaces with artistic personality will be huge in 2019. Curated collections will personalize home design and banish that bland generic look. Owners of a Carriage Driving Show Stable in OroMedonte, they have always had a deep appreciation of fashion and quality craftsmanship. When trying to purchase the exquisite handbags for their mothers, they were shocked to discover that while the Cavalinho line was a staple accessory in fashion-conscious Europe, it had yet to make it to the shores of North America. There was no distributor at all in Canada, a wrong they sought to right. Kohler and Ferreira opened their stunning Cedar Pointe Business Park storefront, the only retail showroom for Cavalinho in North America “Being a smaller design house, we’re able to produce more collections and more styles much more frequently in limited quantities,” the partners explain. “Which ensures ongoing exclusivity. Our goal is always to provide the best selection, variety and uniqueness to our customers, and our goals have become a reality”

The beginning of a new year is often the time we try to start fresh, close a chapter, and establish new habits and goals. As we trample through the mess of old Christmas wrapping and ornaments under the stairs, we also think of purging and re-organizing to make our lives feel calmer and under control. In an effort to help our readers, GoodLife reached out to local professional Margaret Harlos of “Living Organized” for her tips and tricks on where to start with this sometimes-daunting task.

community. To drop off batteries (YES, drop off – they do not go into the garbage), visit call2recycle.org for a location near you. Now that the clutter is cleared you can focus on the kid’s artwork, your heirlooms, sports equipment – the things that you need, use and love! Home organization is a process. I’m not going to lie to you. It is work and it’s not always easy BUT the results are rewarding. Get a portfolio or bins for organizing kid’s art work and school work. Be brutal about this. You don’t have to toss them all – keep the best or the most touching. If you’re inclined to scrap book the pictures will take up a lot less space.
Create Four Piles • Throw Away - toss out all items that are garbage • Recycle – all plastics, cans, paper, cardboard and electronics • Give Away - Give items that you want to keep in the family to a child or grandchild now or donate to charity • Sell Follow these 9 home organization steps: Suggestion: Get out your camera and take some before pictures so later you can see what you have achieved. 1. Start with those items that have no sentimental value. 2. Leave the heirlooms, the kids school and art work for now. Start with the bathroom vanity or a kitchen utensil drawer that does not hold the same emotional attachment as the bedroom, living room or a photo box. As you work through the decluttering and purging process ask yourself these questions: • Do I use this? • When was the last time I used this? • When was the last time I wore this? • Do I need this many of the same or similar item? • Can I get another one if I need it? • Can this be donated to someone else who can really use it?
Suggestion: Take photos and create a digital photo album. • They make lovely coffee table books, gifts or a memory book (or two) for your children. And they make great gifts for family members. • 6 Boxes of photos – Scanning to a USB is a great option, however, keep in mind technology changes. Will you be able to open those “older” programs 10, 20 or 30 years from now? Going forward in the digital age it will be much easier to deal with all those pictures if you download them to secure online storage. Suggestion: Embrace technology. Check out Flickr, Google Photos or Photobucket. Create a space to store bins. • Preferably off the floor. If you are placing bins on the floor make sure they are heavy so not to float in case of flooding. Label the bins and don’t write on them with markers. • Place roasting pans, party trays, and platters for special occasions on shelves in an out of the way area. Under the stairs is a great place for storing these items.
Sell what you can. Hold a garage sale. For online my personal favourites are VarageSale, LetGo, your classifieds and even Facebook marketplace. Or seek out experts such as auctioneers and consignment stores. Donations • place them in clear bags or labeled boxes and place in the trunk of your car. Or better yet, on the seat beside you so that you can see it. The visual clutter will nag at you until you stop at a charity. Electronics • Old computers, printers, etc. Drop off at an e-waste bin in your 38

Create a hanging space. • Use a shower curtain rod and hang it from the rafters to give you extra storage for ski pants, winter coats, gowns, etc. • For out of season clothing, blankets. use Ziploc® Space Bags. They keep out dust, mildew and odours. • Set them aside those items you can’t part with - for now. • Schedule a date to re-visit in approximately 6 months and absolutely no longer than one year. Again, ask the above questions. • Now take some after photos. Look at all the pictures to see what you have accomplished. It’s not about what is left to do. It is what you have accomplished! Let’s deal with all the paper weighing you down. • Did you know that over 80% of the paper that we get on a daily basis can be immediately recycled? • Go through your mail over the recycling bin. It takes about 10 minutes to do this simple task. • Immediately, get rid of old flyers, and expired print products hanging around. I do this at my kitchen counter. If you do not have a recycling container in your kitchen create a pile that can be taken out to the recycling bin. • If your family reads any of the above items walk over to where you store them. Quickly gather the old editions and replace them with the new ones. Toss the outdated items into the recycling bin or add them to the pile you started. • Paper with your personal information that you do not need to keep goes into a shredding pile. • Open the bills. If you pay bills online add the envelopes to your recycling pile. Any inserts that are not relevant, toss. Divide the bills into business bills and house bills. • Place them in their appropriate file or tray to be paid. If you have things like updated insurance documents, place them in the appropriate file or tray for filing. Replace the outdated wallet size card in your wallet or glove box immediately. Sorting mail should just take 10 minutes. If you cannot commit the time immediately to do the filing, schedule 15 minutes at another time in your calendar to file these items.

This past fall, the Common Good Cafe and Social House, located on the ground floor of the Georgian Tower in downtown Barrie, quietly opened for business on October 15. “We didn’t advertise, our website wasn’t live, and we didn’t have a social media presence,” explains restaurant manager, Christian Hampshire. “We wanted to start slow on purpose.” But word travelled fast, and within a week or two, the 35-seat hip eatery which specializes in fresh, clean, healthy and flavourful food, began filling up with curious diners. “It didn’t take long for this place to get really, really busy,” he admits. To find out what all of the buzz is about, this Goodlife reporter caught up with both Hampshire and Common Good’s sales and marketing manager and Georgian International’s special projects manager, Sarah Keith, to get the scoop on Barrie’s newest culinary option. What led Georgian International, one of the main owners of the Georgian Tower, to open up Common Good on the main floor? Sarah Keith: In the summer of 2017, we started thinking about how we could fill this wonderful space that had recently been vacated. We wanted something that would compliment the building, downtown Barrie, while keeping our employees, customers and tenants happy. The initial idea was a grab and go concept with really good coffee and healthy takeout. People could come in the morning and grab what they needed to fuel their day. But then we decided to take it a few steps further by turning it into a sitting and staying kind of place with fun cocktails and sharing plates at night. Why the change in direction? SK: We had done some research and felt that downtown Barrie was missing this style of venue. Once we decided to make it more of a full service food and beverage boutique operation, we brought on Christian [Hampshire], who is the former owner of Groovy Tuesdays and a local food and beverage expert. I understand you visited a number of top bars in Toronto for inspiration. Christian Hampshire: We did! And it was fun! [laughs]. Highlights included a Toronto trip to BarChef barchef.com, where all of the creative cocktails are made in the kitchen and the presentation is out of this world, along with a visit to Aloette aloetterestaurant.com, a new French diner from the Alo team. Sarah, myself and our bar manager/mixologist, Darren McDonald, made the trek and we hit 10 of the top 50 bars in Canada, based in Toronto (according to a major Canadian hospitality publication). I don’t drink alcohol, so I was the DD [smiles]. It was a great way to do research and help get direction with our own vision. We studied everything from food and beverage menus to staff and decor. Common Good’s philosophy “is to inspire environments, good food and good drinks — the kind to help you wake up and the kind to help you unwind.” Can you expand? SK: We believe in being healthy most of the time, but also allowing yourself to have some fun and indulge once in a while. So, you can come here for a healthy breakfast or lunch, but then enjoy something a bit more decadent and fun here in the evening.

Leaning Tower O’Veg (recipe courtesy of Common Good Cafe & Social House) This tasty veggie dish is a popular seller at Common Good Cafe & Social House. Ingredients: 2 large green courgettes (zucchini) 2 large yellow courgettes (zucchini) canola oil, for grilling 4 medium Japanese eggplants 5 oz baby spinach 4 whole (jarred) roasted red peppers, cut into quarters 10 large portobello mushrooms, stems removed 10 oz goat cheese, crumbled 10 cherry tomatoes, quartered DRESSING: 1 bunch basil, reserve some for garnish 5 oz baby spinach 10 sprigs thyme 6 cloves garlic 3 oz canola oil sea salt, to taste cracked black pepper, to taste Preparation: 1. Using a mandolin, set for 1/4 thickness, slice eggplants and courgettes. 2. Lightly oil and grill courgettes, eggplant and portobellos. 46

3. Dressing: In a food processor, blend basil (reserving some for garnish), spinach, thyme, garlic, oil, salt and pepper until well combined. Set aside. 4. In a nonstick 8-inch x 8-inch, or a 12-inch by 6-inch brownie pan, begin with a layer of green courgette as a base. If the pan isn’t nonstick, lightly oil the bottom before layering the vegetables. Flatten layer. 5. Spread a thin layer of dressing and a thin layer of goat cheese followed by a layer of eggplant. Note: reserve 1/4 of cheese for the topping. Using the same technique, add the rest of the vegetable layers (except for the tomatoes) finishing with the yellow courgette as the top layer. 6. Top with cherry tomatoes and remaining goat cheese and bake in a preheated 350F oven for 20 minutes, or until the cheese melts a bit and the tomatoes brown slightly. 7. Let chill, garnish with extra basil, and serve and enjoy this lovely meal with good friends and a glass of wine. Serves 6 to 8.
The restaurant’s decor is best described as modern vintage — think old meets new with an injection of colour and quirky accents like a zebra photo, brass trophies and green crocodile leather. It features a bar, a large harvest table, tables for two, and booths. Can you explain the design process? SK: It really is a beautiful space, and people seem to love it. Ashley Montgomery Design pulled together our vision and captured the idea of making someone feel good and inspired as soon as they walked in. She excels at executing the modern/ vintage vibe we were looking for and we were thankful to get her on our team. Let’s get down to the menu. Right now you are serving breakfast, lunch and a great cup of coffee. Correct? CH: That’s right. Breakfast ranges from fresh fruit smoothies, oatmeal, avocado toast to various healthy egg dishes and more. While, lunch showcases anything from soup or Buddha bowls to salads, a BLT, or a beer braised roast beef sandwich. Various vegan, vegetarian and low-gluten choices are also on offer, and there is very little refined sugar on the menu. Everything is made in house, from scratch, except for the bread, which is sourced locally. What menu items are selling fast? CH: Our Pollo Loco Buddha bowl and our Leaning Tower O Veg (vegetarian lasagne) are already super popular. Along with daytime offerings, an evening menu is now available? CH: We opened as of January, in the evenings from Tuesday to Saturday, along with brunch on Saturdays. The evening menu is much more indulgent. Think sharing plates, tapas, appetizers, charcuterie boards and decadent desserts such as iced lavender soufflé and house made truffles. We also offer takeout.

I understand guests can look forward to a craft cocktail playground. CH: Our dedicated bar manager/mixologist, Darren McDonald, uses local and out-of-the-box ingredients to fuse the perfect concoctions. We’re using Alliston vodka, gin from Collingwood, rye from Prince Edward County, dry sherries, vermouths, artichoke liqueurs, freshly squeezed juices, and in-house made bitters and syrups. Local craft beers and wines from either Niagara or local wine importers are also available. Your espresso machine makes a fabulous cup of joe. Is it true that it’s the only espresso machine of its kind in Canada? CH: It’s an Italian hand-made Electra Indie machine and it’s beautiful . And yes, it’s the only one in this country. Not only does it make great coffee, but it also glows at night and turns different neon colours. It’s the real centre piece of the restaurant. What about the kitchen brigade? CH: It’s a pretty happening kitchen and it includes European trained red seal chefs. Our executive chef, Kevin Isherwood, started working at Soho House in London, England, and helped to open the Toronto location. Are you open for private events? CH: Absolutely! And we can even get special event liquor license permits for these private events. I should also mention that we’re already extremely busy with takeout catering, private events both at the cafe and offsite at guests’ homes. What’s on tap for the future? CH: We have plenty of exciting things in the works, including: live music, Saturday brunch, and an English high tea. For the tea, we will be offering both a traditional as well as a modern version, which will feature items made with non-refined sugar, and a low gluten footprint. During the summer months, diners can look forward to our open air private patio, that will be surrounded by container gardens overflowing with plants, herbs and vegetables that our kitchen will utilize.

NEW COOKBOOK HOLDS SPECIAL MEANING FOR LOCAL WRITER By Katherine Elphick
L
ike most food writers, every morning I wake up to an inbox full of emails pitching potential food stories. They come in from all over North America and range from the latest and greatest prune recipes to slow cooker recipes for nudists (this makes sense as nudists have a major incentive to avoid hot splatters). Nothing against nudists or their cooking methods, but, the reality is that I write for a broader reader base. So, the nudist slow cooker recipe pitch, just like the majority of emails I get — went right into the trash bin. Recently, however, one of these emails caught my eye. In fact, as soon as I saw it, I knew I had to craft a story about it. Turns out, one of Canada’s greatest food artisans, David Wood, who is also a former boss of mine, had written a new cookbook David Wood: Cooking For Friends. Let’s just say, my interest was peaked. For those of you who don’t know, or are too young to remember, David Wood was a legend on the gourmet food front in Toronto in the mid
eighties to1990. He founded three specialty food stores, ran a bustling catering business, and was a bestselling cookbook author. He then moved to British Columbia and started the highly successful Salt Spring Island Cheese Company. My connection to David dates back to my university days, when I worked for him part-time at one of his legendary Toronto food shops. The experience was life changing for me, a child of the 70s who was raised on Hamburger Helper, meatloaf and grey roast beef dinners (no offence mom), as it opened my eyes to the wonders of gourmet food, and cemented my love of cooking. And let’s just say, I have never looked back. Recently, I caught up with David, now aged 74 and semi-retired, at his sister’s house in Yorkville. Over tea and cookies, we reminisced about the old food shop days and chatted about his new cookbook, which chronicles his life’s adventures from Toronto to Salt Spring Island and his current take on food and home cooking.
It’s been over 30 years since you first published your classic ‘green’ David Wood Food Book and David Wood Dessert Book. What led you to pen another one? DW: Five years ago, the publisher of my original books was in Salt Spring visiting a mutual friend. We had dinner together and somehow or another by the end of the meal we all thought it would be a great idea to revamp the old books. But soon after, I quickly realized that you can’t revamp something that happened 30 years ago, so the book took on a new direction. Makes sense. Thirty years ago, you were introducing Toronto foodies to the delicious new wonders of triple cream brie, smoked trout, flourless chocolate cake, Californian cuisine and several other international delights. But, now those things are all commonplace. DW: Exactly! In the 80s, that kind of food was ground breaking, new and very exciting, but now it’s just two for a penny. Chicken Thighs with Fennel, Olives, and Lemon This is a good choice for a party because it holds well, even when guests take their time coming to the table. Boneless thighs are easier to eat in a crowd, but bone-in and skin-on have more flavour. The recipe calls for a very small amount of saffron, and grinding it in a pestle and mortar with salt makes a little go a long way. Saffron has a mildly bitter taste, as do the olives, and this brings out the sweetness in the fennel. If the olives have pits, be sure to tell your guests. 1 lemon, sliced in 1/4-inch (6 mm) rounds
Small pinch saffron threads
3 Tbsp (45 mL) olive oil, divided
1/2 tsp (2 mL) salt + extra as needed
12 chicken thighs
2 cups (480 mL) chicken stock
1 Tbsp (15 mL) butter
1 cup (250 mL) green olives (preferably pitted)
4 large fennel bulbs
2 Tbsp (30 mL) flat leaf parsley, coarsely chopped
PREPARATION: 1. Preheat the oven to 400°F (200°C). 2. Arrange the lemon slices on a baking sheet, preferably on parchment paper. Sprinkle lightly with salt, and bake on the top rack of the preheated oven for 12 minutes. Remove and set aside; turn the oven down to 350°F (180°C).

5. With a pestle and mortar, grind the saffron and 1/2 tsp (2 mL) salt to a fine powder. Pour the chicken stock into the pan, bring to a boil, add the saffron, and cook for 3. In a large pan, cook the chicken in 1 Tbsp 1 minute. Add the chicken, skin side up, (15 mL) oil and butter until the skin side is arrange the fennel around and on top, and well browned and the underside lightly so; spread the olives and lemon slices on top. remove from the pan and set aside. Transfer to the centre of the preheated oven and bake uncovered for 30 minutes. 4. Trim the fibrous stalks from the fennel, set a bulb upright on a board, and cut it into 6. Sprinkle the chopped parsley on top. Serve 4 slices, each about 1/2 inch (13 mm) thick with couscous, orzo, or rice, and a green and held together at the root end. Cook salad. Does it include some of your classic recipes? DW: About 40 percent of the book are tried and true classics and 60 percent are new. And when I say new, I don’t mean blindly new or innovative. The new recipes are simple, everyday dishes that I regularly cook and enjoy. What’s the theme of the new book? DW: It’s about the pleasure of food. It’s not about what you eat, but how you make it that matters. The idea is to show how fresh, everyday ingredients can be elevated with proper care and attention to detail. What’s your current food philosophy? DW: My starting point for food is that it should be relatively simple to make. After that, it should taste good, preferably look good, but most of all, it should be enjoyable. It should also fit the situation, the environment — whatever that is. In other words, the food should match the people and the setting. And it must always include a dessert [smiles]. I’ve heard you say that food should be like a back up band. Can you expand on that? DW: I don’t believe that the meal should be the centre piece — the showstopper of the evening. Instead, it should simply strike all of the right notes. Otherwise, it might be intimidating for guests. The meal should be more about the setting, the people and the conversation. The food just needs to taste good, and support the flow of the event. For example, one of the most memorable meals I’ve ever had was spaghetti and sausages made with a canned tomato sauce in a cow pasture in California. It wasn’t the best food I’ve ever eaten, but it was just how everything came together. The food was absolutely perfect for the occasion.

What are some of your favourite new dishes in the cookbook? DW: Blinis with Smoked Salmon and Crème Fraiche is one of my favourite things to eat of all time. I also love Apple Pancakes for breakfast. I simply adore pasta and could eat it all the time. Two of my favourite pasta recipes are Spaghetti with Mussels and Roasted Tomatoes and Tagliolini Alla Siciliana, a dish with pistachios and anchovies — just divine. I also love the Beef Tenderloin with Morels and Madeira and the Lamb Shanks with Figs, Red Wine and Quince. Belgium Endives with Bacon and Cream is also perfect with a steak. I know you adore desserts. What are your favourites in the book? DW: The Pear and Ginger Galette is delicious and really simple to make. I also love the Baked Apples and Custard, Summer Pudding and Tarte Tatin (Upside Down Apple Tart). The book also includes a Birthday Cake made with hazelnut meringue, French buttercream and chocolate ganache and it’s one of the best cakes you will ever have. What classic recipes made the list? DW: We couldn’t leave out the Chocolate Chunk Cookies or Apple Pie Muffins, which are so good! Other favourites that made the list include Thai Beef Noodle Salad, Lemon Meringue Pie and Poached Pears, of course.

What are some of your fondest memories of those gourmet food shops in Toronto? DW: The best part was the people that worked there. They were just such a lovely bunch. We also had some amazing and really supportive customers. They would spend most people’s mortgage money on dinner and that kept us going. With so many cookbooks on the market these days, why do you think this one will stand out? DW: I’m hoping it will stand out to people in Toronto with long memories [chuckles]. Beyond that, I’ve tried to make it an interesting read by introducing every recipe with a story, because I generally find most cookbooks pretty dull when it comes to reading content. There are also some touches of humour in it, as I like to give people a good laugh.

Pear and Ginger Galette This is a rustic tart, baked free-form on a cookie sheet, using a shorter and more melt-in-the-mouth pastry than might work in a conventional tart. The pears are softened in butter and sugar before baking. 7 oz (210 g) unsalted butter, divided 1-½ cups (360 mL) all-purpose flour 1/3 cup (80 mL) granulated sugar ½ tsp (2 mL) salt 1 egg yolk + 1 extra for glazing the pastry (optional) 2 to 3 Tbsp (30 to 45 mL) cold water 3 lb (1.4 kg) pears ½ cup (125 mL) sugar 3 Tbsp (45 mL) ginger (preserved or crystallized), chopped in small chunks
PREPARATION: 1. Measure 5 oz (150 g) butter and put it in the freezer, in 1 piece, for 30 minutes or more. 2. Whisk together the flour, sugar, and salt in a large bowl. In a cup, whisk the egg yolk and cold water until well blended, and set aside. 3. On the coarse side of a box grater, grate the frozen butter into the flour. Mix together with your fingers, sprinkle the egg and water over it, and mix again: it should be barely moist and quite crumbly. 4. Tip the pastry onto a work surface and, with the heel of your hand, smear it across the surface. It will take about 8 pushes to spread all of it. Gather it into a ball, working it gently with your hands to bring it together; add a little more water if it needs it to form a ball. Wrap it in plastic and set aside at room temperature for up to 3 hours (refrigerate if longer). 5. Peel the pears and cut them in half lengthwise. With a melon baller, remove the core from each half, and trim away any hard parts around the stem and the bud with a small knife. 6. Melt the other 2 oz (60 g) butter (should equal about 1/4 cup [60 mL] once melted) and 1/2 cup (125 mL) sugar in a large frying pan over low heat. 7. Cut each half-pear lengthwise into 1/4-inch (6 mm) slices, then add them to the frying pan. Cook, stirring occasionally, until the juices run and the pears are almost tender, adding water as needed to stop
the sugar browning. When softened, turn up the heat to medium, add the chopped ginger, and stir gently until the juices are thick and syrupy—you only need enough juice to moisten the pears. Remove from the heat and set aside to cool. 8. Preheat the oven to 375°F (190°C). 9. On a well-floured board, roll out the pastry about 3/16 of an inch (5 mm) thick and 16 inches (40 cm) across—it does not matter if the circle is not round or its edges are rough. Line a baking sheet with parchment, roll the dough around your rolling pin and unroll in the centre of the paper. 10. Arrange the pears in the middle of the pastry, in a circle about 10 inches (25 cm) across, leaving a pastry border all around. Lift a point on the edge of the pastry up and over the pears toward the centre. Continue round the perimeter, folding the outside toward the centre, each fold covering part of the previous one. It will take 6 or 8 folds until all of the pastry has been folded in, leaving a circle of uncovered pears in the centre. You can give the pastry a nice gloss by glazing it with an egg yolk mixed with 1 Tbsp (15 mL) water. 11. Bake in the middle of the preheated oven for 25 to 30 minutes. When the pastry is nicely browned, remove from the oven and leave to cool for at least 30 minutes. Serve with lightly whipped cream, crème fraîche, or plain Greek yogurt (or any mixture of these). New Year is an opportunity to start fresh and try something new. Many of us set resolutions, goals and must-do’s for this new season. For the rest of us this is not something we embrace and it leaves us wondering should we be doing something, anything? I have never been one for New Year’s resolutions, the idea of setting unrealistic goals and letting myself down never seemed like a great way to start the year. I have been so far removed from this notion, that I am unsure if this is still a “thing”. This new movement may be part of why the New Year resolution is fading in popularity. I sense that there is a movement guiding us back to basics, back to community markets, back to good old fashioned homemade food around the table, back to time spent with family face to face. We have become accustom to feeling sub-par and we have accepted this as the status quo, just part of life and aging. I am here to tell you, that you do not have to feel sick, tired, bloated and annoyed with all of the above. You do not need a magic New Year’s resolution or a big plan; you just need to tune into yourself and tune into your gut. Our gut is at the center of our body and the center of our wellbeing. If you do one things this New Year; I urge you to tune into your gut. One of the main drivers of our overall health is our gut health; and up until the last few years we have completely ignored this area of our body. Our gut does more than just digest food and move nutrients though; our gut is home to various micro-organisms that play an important role in communicating to the rest of our body. These micro-
organisms can control how we feel physically and most notably how we feel emotionally. This helps to explain that twinge in our gut when we walk into a job interview, when we meet a significant other or after receiving some tough news; our gut communicates with the rest of our body. This is such powerful information, our emotions may alter how our gut feels. We are also discovering that the opposite may be true, that our gut health may influence how we feel emotionally. I bet you have never been having a bad day and thought I am really craving a kale salad. Our gut usually sends our system the message that it wants comfort food, chalk full of carbohydrates and fat because it wants to find the quickest form of fuel for the brain; so that emotionally we can feel better. Now the bad news, eating macaroni and cheese every day will not make you happier. We need to nourish and feed those micro-organisms in our gut. Close your eyes for one second and imagine summer; the sun beating down on the most luscious garden with mineral rich dark soil and the most colorful fruits and vegetables growing in abundance. Keep your eyes closed and imagine that same diversity and beauty in your gut, make it your job in 2019 to grow that garden in your gut. Feeding the micro-organisms in your gut is the best decision you can make to bring balance back to your sleep routine, stress levels and over all wellbeing. This task will take you back to the basics; drinking more water, drinking better water, eating better, eating slower and ultimately a stronger awareness of your gut and the signals

it sends you. Drink plenty of filtered or natural spring water. Setting ourselves up for success in 2019 means setting realistic goals with respect to our gut health; which includes not depriving ourselves of foods we enjoy. We have a strong emotional connection with food, this is a good thing but can become dangerous when we do not listen to our guts signals. My advice, eliminate the foods that we know do not sit well. When you listen to your gut, it will tell you what it wants and what it needs to thrive. I can confidently tell you that eventually the cravings will go away, because when we fuel our body with abundant fresh food and plenty of good bacteria; it yearns for nothing more. Take the time this year to ditch the old resolutions; and find solace in tuning into your gut and fueling it the best way possible. You will sleep better, connect with others better and ultimately enjoy 2019 and feel well doing it.

The reality of Grace Bay, and my hotel, is far beyond expectations from the first impression. In the shared taxi van from the airport in Providenciales, the various passengers chat, sharing information about where they’re from, where they’re staying. When the taxi drives up to my hotel, The Gansevoort, there’s a noticeable silence. Then, the six-year-old across from me says to her mother, “Is this our hotel?” “No, dear.” “Can we stay here, please?” “Maybe next time,” her mom sighs. Talk about a first impression. The entrance to the Gansevoort Turks and Caicos is drop-dead spectac64

ular. White steps lead up to an open-air lobby that flows through to the infinity pool, with its lounge pods and cool white curtains. Then, beyond that, is the beach and the turquoise waters of Grace Bay. For check in, I’m settled on a white sofa with a clear view of the pool and ocean, complete with a frosty rum punch and chilled facecloth. I’m close enough to the pool to observe the bodies soaking up sun on loungers. The Gansevoort Turks and Caicos is the sexy cousin to the three other properties in the collection, two in New York and one in Dominican Republic. The Turks and Caicos version, located on the northern shore of Providenciales, continues the
reputation for clean contemporary style, with white décor, colourful art in the rooms and manicured gardens. The 7,000-square-foot infinity pool at the heart of the hotel may well be the most gorgeous in the Caribbean. There are 91 guest rooms, including 32 suites and four penthouses. My suite has a full kitchen, a massive bath and a perfect view of Grace Bay from the terrace. The hotel makes an unforgettable first impression, but the islands themselves are equally impressive. The Turks and Caicos Islands is a British Overseas Territory, made up of more than 40 small islands. The two largest island groups are the is-

lands of Grand Turk to the east and Caicos to the west. The islands are located southeast of Miami, Florida, south of the Bahamas and east of Cuba. The majority of tourism development is on the island of Grand Turk, where many cruise boats stop at the large cruise port, and on Providenciales, the most developed of the islands. I am staying on Providenciales, or ‘Provo’ for short, in the gentle curve of Grace Bay, the area of the islands where most of the resorts and tourism facilities are located. From the beach in front of the Gansevoort, I can walk for miles in either direction, along a sugar sand beach, beside crystal clear water. It comes as no surprise that the 12-mile Grace Bay beach was named the best beach in the world in 2018 by TripAdvisor, and figures on many ‘best beach’ lists every year. On my first afternoon, I enjoy a long sea kayaking trek along the coast. It’s an easy paddle and a good way to view the range of small hotels, resorts and restaurants that line the popular beach. A rare and quick storm blows in that quickly turns the sky and water into a dozen different shades of blue, green and grey. The rain is warm, the winds gentle, and the sun is back in under 10 minutes. A day-long excursion on the Island Dream, a catamaran run by Caicos Dream Tours, takes me out to the Leeward Reef and the Caicos Bank for some good snorkelling, with exotic fish and a variety of coral formations. The crew shows us how to get conch meat out of the shell, and then prepares a lunch of conch salad and fresh grilled fish on the boat. Later we push on to Half Moon Bay, where we discover a colony of iguanas, take a short hike, and then swim again in the clear water. There’s a good diversity of activities on Provo. Visitors with a love of horses can ride along the beach and even swim with the horses with different companies that provide riding experiences. Provo Ponies and Caicos Corral are two that offer riding excursions along the beach and in the ocean. There are hour-long and 90-minute rides that can include transportation to and from Grace Bay hotels. Riding belly-deep in the ocean on the back of a friendly horse is a cool way to enjoy the water and the beach — and so Instagramable! History lovers will enjoy tours of Cheshire Hall to witness the remains of colonial times and plantation history on the island. Night life isn’t a big thing in T&C; the islands are more about relaxation, enjoying nature and indulging in water sports. A short walk from my hotel along the beach is the quirky Somewhere Café, where there is often live music and a bit of a social scene, and there are other small

places with live music, but most visitors find the sun and the sea is all the excitement needed. Dining possibilities in Provo are multiple, from the upscale likes of Coco Bistro to the informal fun and casual food of the T&C Thursday Fish Fry at Bight Park. There’s also live music and dancing at the Fish Fry, and it’s one of those island experiences that lets you meet up with locals and taste some authentic island food. Wherever you eat, fresh fish and seafood are the most frequent culinary choices for dining on the island. The chef at the Gansevoort, Joel Valero, does some elegant Asian fusion dishes and the hotel runs a weekly Asian barbecue at the beachfront grill that features Thai, Indonesian and Balinese specialties. For the ultimate in a luxury visit to the islands, families and groups can rent a private villa. In Turtle Tail, just down the coast from Grace Bay are the Gansevoort Villas: half a dozen four- and fivebedroom luxury oceanfront units that are beyond beautiful, combining the sleek design of the hotel with a private hillside location. Guests at the villas can use all the facilities of the mother resort. Each villa has two pools, a large fire pit overlooking the ocean and full dining facilities. A private chef can be arranged through the hotel. The real knockout feature is an elevated swimming platform attached to each villa, with a suspended sun bed, white lounge beds and the waves just a short step below. The villas effortlessly combine island cool with urban chic; it’s the perfect bolthole for the stressed-out urbanite who wants peace and quiet with a contemporary, high-design aesthetic. Surrounded by one of the largest reef systems in the world, the Turks and Caicos offer spectacular and multivarious ocean adventures. Go whale watching on Salt Key, or try bone fishing, take day trips to other islands for kite surfing or scuba diving, or learn to paddle board. There’s an excellent golf club on Providenciales and nature walks around Cheshire Hill for the ecologically inclined. There is even the opportunity to be spectacularly and totally idle.

or many women, shopping for a swimsuit for a winter vacay is equal parts anxiety and frustration. Jane DeCola, owner of Brabary in south Barrie and Collingwood, understands. Having faced her own difficulties finding attractive, perfectly fitted swimwear, Jane included fine swimsuit lines for real women in her speciality bra business when she opened Brabary 14 years ago. Swimwear is now a larger part of the company thanks to the store’s mandate to find the right swimsuit style and proper fit for every customer. Women leave the store feeling fabulous. “We are here to make women feel comfortable,” says Jane, whose swimwear ranges from size 6 to 24 for customers that include teens and ladies in their 80s. “When a woman is going away and needs a swimsuit, we will direct her the whole way through her appointment. She will leave ecstatic. We get feedback from customers about how many compliments they got from their husband, family and even strangers.” Jane and her daughter Alex, Brabary’s Fitting

Specialist, can look at a customer and immediately have an idea of what swimsuit style will work. They don’t categorize by shape, but by seeing what will be best for the individual. “Every single person’s body shape is different,” says Alex. “ People tell us their issues. If they need lift and support, we give them a suit with an underwire. If their main issue is drawing focus from their tummy, we give them a style with ruching or a pattern.” Both women know every customer is concerned with shape and wants to look their best on the beach. “Sometimes people come into the store traumatized,” says Jane. “We put them at ease and bring in a selection of suits to try on. We are not here to judge. We just assist with their choices. It helps that our selection is extensive. Often the style that looks wonderful on them is not the style they had in mind. Invariably, they say, ‘This is amazing!’” Jane often has requests for suits with skirts. However, rather than cover problem areas, skirts accen-

tuate hips and give the appearance of added weight. “We’ll ask the woman to try a suit with ruching to tuck the tummy and support to get the ‘girls’ up. The reaction is usually amazement. You can wear a slim skirt over a suit. It looks chic and hides issues without volumizing. A woman will say there’s no way she’s wearing a bikini, and will leave with a bikini plus confidence. When a bikini fits properly, it works. The tankini was hot, but women now find a one piece suit or bikini is more flattering. The one piece has more structure for better support.
