Show Your Lawn Some Love Your lawn has had a busy few months: rainy spring, spotty summer, maybe a fair amouont of foot traffic. So show it some love before the snow falls with a little pre-emptive upkeep. One simple step, says Bob Stanford, sales and account manager for the Ground Guys in Barrie, can help prevent snow mould — mowing. “Typically, you want to cut your grass shorter than normal — about an inch to an inch and a half,” he says. “It will help stave off snow mould and winter damage.” What else can you do? Extending an Olive Branch… North! We were delighted (and surprised) to learn that not only can olive trees thrive in Canada, but we can even enjoy our own homegrown olive oil. Back in 2000, George and Seri Braun planted 3,000 hardy olive trees on their Salt Spring Island farm, but it wasn’t until last December that their waiting and tending paid off with a harvest of more than 1,000 pounds of green olives. Within minutes of being picked, the olives were pressed into delicious, healthy oil. As temperatures dip, we all start shutting the windows — and closing in the dust. In case you could use some motivation to stay on top of those bunnies, consider this: A new study from Duke University says that house dust might actually be making us fat. New findings published in the journal Environmental Science & Technology report that exposure to the endocrine-disrupting chemicals, or EDCs (found in everyday household products like cosmetics, cleaning products and food packaging) may disrupt our metabolism, triggering an increase in body fat. House dust tends to harbour EDCs, prolonging our exposure to the chemicals. — Karen Robock
A Coffee (or Three) a Day For many of us, there’s nothing like that morning cup of joe to get a perked-up start to the day. But now it seems caffeine worshippers may wind up with more days in their lives to enjoy than those who don’t drink coffee. Scientists have identified a link between daily coffee intake and a reduced risk of death from a whole host of diseases, including cancer, diabetes, stroke and kidney disease. U.S. researchers analyzed the data of 185,855 adults between the ages of 45 and 75, followed for an average of 16 years, and found an 18 per cent lower mortality risk in those who drank three cups of coffee a day. “Coffee contains a lot of antioxidants and phenolic compounds that play an important role in cancer prevention,” says lead study author Veronica W. Setiawan of the Keck School of Medicine at the University of Southern California “Although this study does not show causation or point to what chemicals in coffee may have this ‘elixir effect,’ it is clear that coffee can be incorporated into a healthy diet and lifestyle.” — K.R.

CATHERINE STAPLES INTERIORS Interior Design & Fine Furnishings For The Home & Cottage
T
imeless and classic are the two words that most clearly define Canadian designer Catherine Staples’ style. “Projects have to reflect the client’s taste,” she says. “We give guidance on where to spend and where to save. A timeless, classic design provides a strong return on investment. You want the design to last. I suggest investing more on the main pieces and save on accessorizing. The items you don’t want to change often, like draperies and sofas, should be done right the first time.” Staples is an award-winning designer whose success in the field came mid-career. “I have a business background,” she says. “And was a business management coach for many years.” But as she entered her forties she was ready for a career change. So, she did what any business management professional would do. She hired a life coach one summer and took a deep dive into her passions to help determine her next path. Staples grew up in Orillia with creative parents who exposed her to all of the skills she would need to become a residential and commercial designer. Her father built homes and furniture
and taught drafting at a high school. Her mother opened an art gallery and school and gave Staples her first summer job there. Canadian artisans and art students flocked to the shop. Staples managed all of the bookkeeping and learned to become a potter, weaver and painter. “I drew, painted, knit, became a seamstress and made all my own clothing,” she recalls. “I loved it.” The life coach winnowed down her options to two career choices, event planner or designer. “I didn’t want to work every weekend and holiday,” says Staples. “So, designer it was.” But embarking on a new career at age 40 would mean acquiring new credentials. Staples went back to school. Enrolling fulltime in the three-year Interior Design Programme at Georgian College. “I was the oldest in my class,” she laughs. But what she had going for her was a tenacious attention to detail and a familial history of originality. Her earliest inspiration was Canadian Designer Patricia Gray out of Vancouver who has designed for the likes of John Travolta. And her work inspired the design for Staples’ first project

while still at school. Salon ID in Barrie still uses that design today. Timeless. Staples’ commercial and dental office design work accounts for 20% of her business today, but 80% is now residential. “My favourite projects are cottage or chalet weekend retreats. Because that’s where memories are built. It becomes more emotional for them. It gives me great enjoyment.” Staples travels all over Canada, the U.S. and Europe shopping and sourcing products for her projects. “That’s what makes us unique,” she says. “We go to many of the big design shows every year and stay on top of what’s new and exciting.” “I love to source and find Canadian brands too. To find new and unique products that give clients something different from what everyone else has in their home.” What’s next for this designing dynamo? Her own line of furniture, of course. “We’re designing beds and tables now,” she says. “Working with local artisans and craftsmen. We are creating our own Canadian brand. I used to make my own clothing, why not make furniture?”

fiesta is held in San Juan Capistrano every spring when the swallows return to nest and raise their young. Mariachi bands, tortilla and churro makers and massive crowds flood the Mission grounds to witness the spectacle and celebrate. Unfortunately, with the ensuing cacophony, the sleek little birds have been returning in fewer numbers each season, having found quieter nesting grounds — one of them being the garage belonging to Darice Lush and Rob Turnpenny in the Blue Mountains.

“There was a barn torn down at Georgian Bay Club,” Lush says. “All the endangered barn swallows looked for a new home and found our garage. So, we have these little mud balls — 23 barn swallow nests — on the front of our garage. They come back to the same nest every April, and most of them are gone by the end of July. They’re harmless and they eat the bugs. That’s part of the charm of where we are.” Lush appreciates the progressions of nature, and it’s a good thing, given their property is rife with wildlife. Bunnies flit through the yard, deer meander through the adjacent protected land and birds bathe in the three waterfalls on the upper terrace of the couple’s lavishly landscaped property (work done by the Landmark Group based in Thornbury). “That’s why I like this area,” Lush says. “It’s a little closer to nature. The bigger a community gets with development, the more it scares nature away.” The 5,700-square-foot two-storey home is located on the Georgian Trail. There are magnificent views of the escarpment out the windows of the gourmet kitchen and panoramas of the bay from the his-and-her office. The family cross-country skis from the backyard, downhill skis at Blue Mountain, cycles the trails and are members of the Georgian Bay Golf Club, which is directly next door. “I’m just as happy as the day it closes as the day it opens,” Lush says. “It’s so beautiful walking the dogs and snowshoeing there. Such great views and sunsets on Georgian Bay.” The residence was originally built to replicate a modern farmhouse, but there’s nothing rough-hewn about the interior. It’s clean, fresh and spotless, with a white/wood theme and rustic touches throughout. Hardware on interior doors sport old skeleton keys to bring the farmhouse theme to life. Flooring is engineered wide-plank hardwood. When the family purchased the home, it was essentially a shell. “It wasn’t a reflection of our lifestyle or how we wanted to live,” Lush says. “The design features are what makes it a home.” So, she set about redecorating each level to achieve that. Today, the four-bedroom, five-bathroom home has all the earmarks of a luxury executive property: gourmet kitchen with marble counters and Viking appliances; spa bathrooms

“I like looking at design magazines for inspiration. But I have a look that I like. I’m eclectic” with stand-alone tubs; multi-levelled decks; three-car garage with tandem space for two more cars; high ceilings; geothermal heating; and luxurious furnishings by Barrymore. There are other special details that were added not to impress, but for rather practical purposes. The lower level, for example, has a wine room with a stone entrance, visible as you descend the stairs. “Friends usually bring along a bottle of red wine at parties,” Lush says. She and Turnberry prefer white wine, so it goes into the wine room. Then when guests come over for dinner, part of the tradition is to invite them to make their own selection of red. “Everyone loves the wine room,” she says. There, Lush put deep comfortable chairs for her husband and two sprawling chaise lounges for herself. “I’m big on chaises,” she says. “When little kids are over, the adults can be upstairs eating dinner while the children are downstairs. We put on a movie and they’re as happy as clams.” Not everything in the home is new. For Lush, repurposing furniture and incorporating family heirlooms into the design are the recipe for hominess and continuity of family history. As a result, family artifacts are found in corners and hallways throughout the residence. Some have a story; others remain a mystery. The cabinet in the upper hallway, now used for books and sculptures, once stored diapers in the nursery. A pine armoire in the kitchen is now a bar. I want a house where I can use everything” who travelled the world. She doesn’t know the history of that piece, but only of the value it held for her father. It’s all part of personalizing the home. “I do my own decorating,” Lush says. “I like looking at design magazines to get inspiration, but I have a look that I like. I’m eclectic. I find things in consignment stores and add bit by bit. I don’t just go out and decorate a whole room — we don’t want a home that looks like a showroom. I put my feet up when I read a book. And we’ve always had two dogs at a time. Pets are allowed on the furniture.” There’s proof of that as her miniature Australian shepherd, Bryar, takes position on the plush linens in the master bedroom. No furniture is ever off limits to anyone in this household — not the oatmeal-coloured sofas in the living room, or the silk Persian rugs in the dining and living rooms that Turnberry purchased in Turkey. Lush’s relaxed house rules are due in large part to her history. “My family has a European heritage,” she explains. “I grew up with a grandmother who put sheets and plastic over the furniture. I want to have a house where I can use everything.” Seven years have passed since Lush and Turnberry took possession of the farmhouse and turned it into the exquisite beauty it is today. Now they are preparing to downsize. While the swallows continue to return, it’s not so for the children. “All the birds have flown the coop,” Lush says. “They have their own homes. But we’ve decided to build in the same area — we just love it here.”

he demands that come along with a second home can turn a dream getaway into just another series of items on an already full to-do list. Not so with the rustic yet refined Collingwood weekend retreat of Stef Edwards and David McVicker. With the help of Shima Yazdan, vice-president of operations for Aurora’s Niche Decor, the couple turned their 1,600-square-foot town bungaloft into a comfortable, fuss-free space with rustic touches befitting their love of the outdoors. “They are very outdoorsy, athletic people — very health-conscious,” Yazdan says. “They love the lifestyle in Collingwood, with access to trails for running and cycling.” A long-time client of Niche Decor, Edwards at first came into the showroom to buy odds and ends. She later turned to Yazdan to fully decorate their Aurora condo. For the Collingwood chalet, Edwards consulted with Yazdan
over floor plans while the building was being constructed last winter. The couple selected major furniture pieces from the Niche Decor showroom. Once the chalet was completed this past spring, the Niche Decor team went in and added decorative finishes. “It’s a neutral palette, so she’s able to bring colours through accessories and seasonal decor,” Yazdan says. Furniture and accessories punctuate a warm and woodsy foundation, including wide-plank, reclaimed-look hardwood flooring throughout the living space. The couple called on Adam Garbutt of Collingwood-based A.G. Designs to install a bedroom feature wall using reclaimed wood. He also crafted two sliding barn doors — one between the dining room and bedroom, and one for the bedroom ensuite. In the dining room, a live-edge dining table with a raw metal base offers a touch of indus-

trial chic. “It has a clean finish, but it’s rustic enough to be a comfortable piece in the space,” Yazdan says. A large mirror helps to open up the space in the windowless room. The futuristic glass orb “Atom” light fixture offers a visual contrast to the wooden table and floors; upholstered Parsons chairs make for comfortable entertaining. The family room pays tribute to the outdoors with a floor-to-ceiling stone-layered fireplace. Windows on either side of the fireplace have privacy blinds, but no drapery. “Stef really wanted to bring the outdoors in,” Yazdan says. “This room did not call for window treatments.” Sliding doors to the deck were left uncovered to maximize views. Nesting coffee tables carry on the natural theme via their marble tops, one dark grey, one light grey and one white. After busy days on the trails, Edwards and McVicker need a comfy place to kick back. “The couch has a clean look, but it’s also comfortable and approachable,” Yazdan says. “Overall, the goal was a chalet feel that was comfortable, with nothing too delicate.” Looking back, there may have been one more subconscious influence guiding the decor choices. “Stef realized their dog, Max, matches the decor,” Yazdan says with a laugh. “With his dark greys and warm beiges, he’s just so perfectly fitted to the space.” And just try to keep him out of a photo. The couple’s main-floor bedroom has a restful feeling, thanks to a muted colour scheme. The reclaimed wood feature wall is accented by two chandelier pendants with glass droplets on either side of the bed. “Instead of having night-table lamps, hanging light fixtures are very popular,” Yazdan points out. “It keeps your

The drapery panels have a subtle tone-on-tone texture. “We wanted to add a bit of texture to the space,” Yazdan says. “The bedroom is not fussy. It’s very earthy with a tiny bit of colour. The feature wall has those gorgeous chandeliers and the rest is subdued.” Edwards and McVicker partnered with the home builder on the chalet’s kitchen. Open to the family room, it has a clean and contemporary look, with white cabinetry, white subway tile and a white marble countertop. The island was painted grey for a warming contrast; three clear pendant lights above the island maintain the overall calm feel. “There’s nothing too busy in the space,” Yazdan says. “Everything flows together very nicely.” With the design and decorating behind them, the homeowners now have a clean yet cozy small space that suits their active lifestyle. It’s a second home that clearly gives more than it demands.

Pumpkin Power When you carve up your jack-o’-lantern this year, don’t pitch the seeds or you’ll be throwing out a tasty nutritional powerhouse. Just 2 tsp of roasted pumpkin seeds delivers protein, fibre and 25 per cent of the daily recommended amount of magnesium, essential for muscle and bone. If that weren’t enough, the seeds are also a rich source of tryptophan, which helps relieve insomnia. Preparing this natural snack is easy. Just rinse about 2 cups of seeds, removing any stringy bits, and spread in a single layer on a couple of baking sheets to dry thoroughly. Then, toss with 2 tsp of vegetable oil and ¼ tsp of salt to coat, and roast at 375°F for 15 to 20 minutes, stirring occasionally for even toasting. Chez Michel
A travelling chef with a passion for fresh ingredients has brought the upscale tastes of French cuisine to Creemore

P
rovence: rolling hills of gold and lavender, heady bite of wine reductions wafting from windows, bustling markets with asparagus, figs and fougasse. Why would anyone leave such a paradise? “Adventure,” says Michel Masselin, executive chef of Chez Michel, a popular French restaurant in picturesque Creemore. “I wanted to see the world.” In 1976, Masselin, then 20, packed his bags and left his village of Brignoles, France, heading for Canada where a future in the culinary arts awaited. He landed in the kitchen of Chez Pierrot in the Bathurst/St. Germain
area of Toronto, where he was taken under the wing of chef Pierre Lelasseux, who schooled him in the nuances of soups and sauces. Once he was seasoned in the ways of the kitchen, Masselin was overtaken by wanderlust again. He travelled down to the U.S., up to Vancouver, then on to Australia, where he met his future New Zealander wife, Elinor. Together, they opened a restaurant north of Sydney and learned about restaurant management. “We didn’t get rich, but didn’t lose any money either,” he says. Five years later, the couple returned to Canada, for which Masselin found he had developed a bond. He

took a job as sous chef at Toronto’s prestigious Hunt Club, cooking for the likes of Margaret Thatcher, François Mitterrand and Ronald Reagan during the G7 Summit. By 1989, Masselin knew he needed his own restaurant again, and he and Elinor moved to Craigleith, where the first of the Chez Michel establishments was born, and quickly became the local hot spot. Sixteen successful years later, the Ontario countryside started calling. So in 2004, they moved to Creemore and opened Chez Michel, with an expansive kitchen garden behind the restaurant. Inside, the restaurant has the authentic flavour of a true French bistro, with its yellow-and-blue theme and candlelit tables. Outside, patio tables invite dining en plein air during fairer weather. Aubergine et Chèvre Maison (Eggplant With Goat Cheese) (recipe from Chez Michel) For the pesto: 2 oz fresh basil 1 clove garlic 1 tbsp shredded Parmesan cheese pinch of ground white pepper 3 tbsp extra-virgin olive oil handful of roasted pine nuts (approx. 2 oz)
INGREDIENTS 1 slice eggplant 2 1/2 inch wide by ½-inch thick 1 tsp olive oil 1 slice goat cheese, same size as eggplant 1 cherry tomato, halved (for garnish) sprig of basil (for garnish) 1 slice each grilled zucchini and grilled tomato (optional)
In a food processor, blend basil, garlic, cheese and pepper. Drizzle in olive oil and continue to blend. Add pine nuts and blend until mixture becomes a paste.
Preheat grill on high. Brush eggplant on both sides with olive oil and set on grill for 2 to 3 minutes. Do not let it burn. Flip over and grill other side until medium-soft. Remove from heat, place on baking sheet and top with slice of goat cheese. Place under a hot broiler until gratiné (light brown). Set aside, keeping it warm. Strain sauce onto a plate. Place eggplant on top of sauce. Top with remaining pesto. Garnish with cherry tomato and sprig of basil. If you like, add a slice of grilled zucchini and tomato to make it larger.
For the sauce: 2 oz 35% cream 1 tbsp pesto (above) pinch each of salt and white pepper Stir all ingredients in a saucepan and heat on medium until it thickens enough to cover the back of a metal spoon, about 2 to 3 minutes.

harvest his own vegetables, bringing sun-kissed produce right to the tables of his customers within moments of picking. The flavours are deeper, robustly vine-ripened and brimming with earthy umami. “I live and breathe the restaurant business,” Masselin says. “It’s what drives me. If you don’t have the passion for what you do, you have nothing. I guess it’s like an artist — you never stop. You’re always thinking about what you are going to do the next day. It would be nice, though, to get a protégé who would eventually take over running the restaurant. I want to still cook — always — but I don’t want to be the captain so much anymore.” While retiring is still many years away for the 62-year-old, today his restaurant is thriving. “Summer is crazy,” he says. “Book a few days in advance.” On his menu you’ll find French cuisine classics: carré d’agneau (rack of lamb, sauce du jour), steak frites, ris de veau (sweetbreads), calf liver Lyonnaise and rabbit. But you’ll also find crevettes Franco-Canadienne (black tiger shrimp with Dijon and maple syrup sauce), and venison and bison featured in the fall — delicious salutes to his beloved Canada.

Who is your favourite chef? Roger Vergé. He was cooking the cuisine of Provence, a real gentleman. What is your signature dish? I love to work with vegetables and seafood — lobster, with garlic, basil and olive oil; scallops; Arctic char; pickerel. We also do duck à l’orange and lamb shank. We are a destination restaurant specializing in different flavours and sauces. For lunch, I do a special crepe, omelettes, steak frites, sandwiches. What are your must-have herbs and vegetables for a kitchen garden? Rosemary, thyme and basil are my three favourite herbs, and I love tomatoes for salad. I plant basil between the tomatoes. It keeps the bugs away; basil has a strong aroma and insects don’t like it. It’s a Provence trick. I also like to have chili, but mostly for me, I must have rosemary — it’s perfect for lamb. For our lamb, we
stuff garlic inside and then rub rosemary on the outside. For the restaurant garden, I also plant zucchini, summer squash, garlic, beans and eggplant. What is your best kept secret for cooking? The biggest secret is to always use fresh ingredients from the back to the front. As a child, I was raised being in the garden; that’s how we cook in France — everyone has a garden. I also deal with a local farm in Creemore.

BRAISED BURDOCK GRATIN If you’re having a hard time finding burdock, try your local Asian grocery store, where it might be called gobo. FOR THE BURDOCK 10 spears burdock root, peeled and washed 4 cups vegetable or chicken stock Over medium-high heat, in a covered saucepan or deep skillet, gently boil burdock in stock, making sure it’s submerged at the start. Keep covered and cook until almost fork-tender, about 40 minutes. Transfer burdock to a lightly buttered ovenproof casserole dish, arranging in a single layer; set aside. Reserve stock for the cheese sauce (top up if need be). Preheat oven to 350°F.
FOR THE CHEESE SAUCE 2 tbsp butter 2 tbsp flour ¼ tsp white pepper ¼ tsp nutmeg ¼ tsp fine sea salt ¼ cup medium-dry sherry ½ cup vegetable or chicken stock (use reserved stock) ½ cup 18% cream 1 cup grated sharp or extra-old white cheddar In a medium saucepan over medium-low heat, melt butter. Add flour, pepper, nutmeg and salt, and stir continuously until butter and flour are a nutty brown, smooth, thick paste — about 5 minutes. Add sherry, stock and cream and stir briskly to combine. Fold in cheese until melted and combined. Pour evenly over burdock. Set aside.
FOR THE TOPPING 1 cup puffed rice cereal 1 tbsp melted butter ½ cup grated sharp or extra-old white cheddar 1 tsp fine sea salt white or black pepper, to taste ¼ cup finely chopped fresh chives or garlic scapes for garnish (optional) Add cereal to a small bowl and drizzle with butter; toss to coat as evenly as possible. Add cheese, salt and pepper and toss to coat as evenly as possible. Sprinkle mixture over sauced burdock and bake at 350°F for 40 to 45 minutes or until bubbling and golden on top. Garnish with chives or garlic scapes. Makes 4 to 6 side-dish servings.

HONEYED ORANGE-PERSIMMON CORNMEAL CAKE INGREDIENTS ¼ cup butter 3 tbsp honey juice of one large orange (about ¾ cup) 3 large store-bought persimmons (or about 7 tiny wild ones), tops trimmed, cut into half-inch wedges ¾ cup flour 1 cup finely ground yellow cornmeal 1 tsp baking powder ¾ tsp fine sea salt 3 eggs ½ cup sugar ½ cup runny or warmed honey 2/3 cup maple water or sap; milk or apple juice will also do ½ cup extra-virgin canola oil zest of 1 large orange; about 1 tbsp Preheat oven to 350°F. In a 9- or 10-inch cast iron skillet over mediumhigh heat, add butter, honey and orange juice. Melt, stirring to combine. Reduce heat to low. Add persimmons and let simmer for about 5 minutes or until liquid has reduced slightly. Turn heat off and set skillet aside while making the batter. In a large bowl, combine flour, cornmeal, baking powder and salt, breaking up any lumps. Set aside. In the bowl of a stand mixer, or in a large bowl, using a whisk, beat eggs, sugar and honey until frothy. Add maple sap (or other liquid), oil and zest, and continue to beat until well combined.
All at once, add dry ingredients to egg mixture and blend to combine well, breaking up any lumps and making sure everything is moist; but don’t overmix. Gently pour over persimmons. Pop skillet into the oven and bake for 40 to 45 minutes until golden. Note: There might well be some bubbling up and dripping, so a bit of foil under the skillet — or on the bottom of the oven — is a good idea. Serve warm with whipped cream. Makes 6 to 8 servings.
PUFFY EGG SQUARES INGREDIENTS ½ cup mascarpone, at room temperature ¼ cup nduja (a spicy, spreadable salami), at room temperature, casing removed 5 eggs, divided 1 sheet all-butter puff pastry, thawed according to package directions 4 tsp roasted red peppers in olive oil, mild or spicy (store-bought is fine) finely chopped fresh basil, chives or flat-leaf parsley for garnish (optional) Preheat oven to 400°F. In a small bowl, add mascarpone and nduja and blend well; set aside. With a fork, beat 1 egg in a small bowl. Place a length of parchment paper on the coun-
ter and flour very lightly. Unroll pastry onto paper and, with a floured rolling pin, carefully roll out dough to stretch it another 1 to 2 inches. Lift paper with dough onto a baking sheet. With the tip of a sharp paring knife, cut sheet of pastry into 4 squares. Turn up edges of each pastry square to form a lip, pinching at the corners to keep in place. Brush edges of pastry squares with egg; prick bottom of squares several times with a fork. Spread the mascarpone mixture among the four squares, making a depression in the centre of each. Crack an egg into each depression and top with 1 tsp of the roasted peppers. If you have any runaway whites, pinch pastry edge to make it higher. Bake for 10 to 12 minutes or until edges are puffed and golden and yolks are starting to set. Sprinkle with chopped herbs, if desired. Makes 4 servings.

n July we celebrated Canada’s 150th birthday, and sure, we could have gone all out and promoted Canadian wine then, but we know you were too busy drinking Canada’s national beverage: beer. I’m sure you’ve heard loads of advice about which Canadian wine to buy, but how much of that insight involved telling you about which wines were made by Canadians? The Canadian wine scene — and by extension Ontario’s — is full of crafty winemakers from all over the world, who have come here to test their mettle in our cool climate region. However, just like some of our best talent in the acting field, our winemakers have also crossed the border to seek fame and fortune, polishing their skills and plying their trade. This month, the wines I’m recommending are made by (and in some cases financed by) entrepreneurial and intrepid Canadians ,who have decided to spread their wings and fly the maple leaf elsewhere in the world of wine. 64 | GoodLife Georgian Bay

Bachelder 2013 Niagara Chardonnay, Ontario ($24.95, LCBO#302083) While Montreal native Thomas Bachelder’s work is also known Burgundy and Oregon (where he still makes wine), he has always come back to where it all began — Ontario. His Chardonnays are much heralded and this 2013 is no different, with its subtlety of mineral along with apple and pear fruit, delicate use of oak and balanced acidity. (¬¬¬¬)
Versado 2012 Reserva Ancient Malbec, Argentina ($59.95, LCBO#316984) Anne Sperling and Peter Gamble are the equivalent of a winemaking super group: she’s the winemaker, he’s the consultant, and together they have worked in Ontario, British Columbia, Nova Scotia and now Argentina. This Malbec is firm yet fruity, with lots of grip from both tannins and skin contact. (¬¬¬ ½ +)
La Crema 2014 Monterey Pinot Noir, California ($26.95, LCBO#367896) Elizabeth Grant-Douglas hails from St. Catharines and was one of the first to graduate from Brock University’s wine program. She brought those cool-climate skills to California’s premier Pinot- and Chardonnay-producer La Crema, and has created this easy-drinking Pinot, loaded with cran-cherry and a touch of spice. (¬¬¬ ½ +)
Prevedello 2016 Asolo Superiore Extra Dry Prosecco, Italy ($16.95, LCBO#262881) Toronto Restauranteur Franco Prevedello went back to his family’s vineyard in the Prosecco region (Veneto) to help bring Italian sparkling wine back to the fore. This food-friendly bubbly might seem simple at first sip but it’s the lemon-lime and minerality that makes it special. (¬¬¬ ½ +)
Lake Sonoma 2013 Zinfandel California ($18.95 LCBO#498766) Tony Stewart’s family started Quails’ Gate in the Okanagan Valley, BC, then in 2012, decided they need to add to their workload and try their hand in another region. Regular readers will know my love of Zinfandel, and this one ticks all the right boxes: fruit-driven with mulberry, plum and black cherry — plus a hint of cocoa. (¬¬¬ ½ +)
Quadrus 2012 Red, Portugal ($19.95, LCBO#440305) Born in the Azores, the Amaro brothers (Tony and Mario) have roots in Toronto’s food and wine scene, as well as in Portugal, both literally and figuratively. In 2010, they launched the first vintage of their Quadrus wine to some acclaim and the hits just keep on coming. Plenty of dark fruit, plum, cherry, licorice and pepper make up the bulk of the 2012 edition. (¬¬¬ ½ +)

Vitamin Zzz Want to ward off a cold this season? Hit the sheets. A recent study found that people who clock less than six hours of sleep per night are more susceptible to the common cold virus than those who sleep seven hours or more. Interestingly, researchers noted that age, stress level, whether or not the person smoked and BMI made no difference in the study’s findings. So what’s the sleep-sneeze connection? It seems that sleep has a key role in regulating the immune system. The study’s authors found that a lack of shut-eye affected the behaviour of T cells — important to immunity. Yet another reason to make sleep a health priority.

Save for a Holiday 1. Believe it. Adopt the mindset that “you can do it” rather than mentally shutting down your travel goals the minute you envision them. 2. Schedule it. Pick the best time of year to visit your dream destination, then assign it a month — and a year if it’s a doozy. It’s harder to back out of something once you’ve put it on the calendar and your whole family has seen it. 3. Timing is everything. Travelling just before or after high season can lead to savings, and some destinations offer deals during these low periods. 4. Take the long view. Start browsing for vacation packages well before the rest of the world does. Buy the flights as soon as you can, so that when travel time comes, they’re already paid off.

5. Grow it. Contribute a few dollars every week or every paycheque to a fund created specifically for the trip. Redeem any travel reward points collected on your credit card. Sign up for frequent-flyer memberships with all the airlines if you haven’t already. Ditto for the hotel chains, which often results in free breakfast — even an upgrade. 7. Pad it. Kick in all the extra funds that come your way: dividends, work bonus, piggy bank, $10 lottery-ticket win, everything. 8. Package it. When booking, take advantage of any bundling options when you can, particularly with websites like Expedia.ca.
9. Research deeper. Find discount accommodations like family-run B&Bs and decent hostels so you can splurge elsewhere. 10. Think small. While online sites like Hotels.com and Trivago.ca can be true friends, consider that privately owned hotels are easier to negotiate with about both rates and room upgrades. You may have to just turn on the charm when the time comes. 11. Go local. If saving is extremely difficult for you, spend your vacation time in a neighbouring community or at a country inn or spa. You don’t have to go far to feel like you’ve been away. 12. Reach out. Any university friends or long-lost relatives with spare rooms in far-off places? Go for it. Just remember Benjamin Franklin’s rule: Guests, like fish, begin to smell after three days.

H
aving visited Wyoming, and the West, before, I had a rough idea of what was in store for us at Red Reflet Guest Ranch, but this would be an inaugural trip to the state for my travel partner and friend, Lauren Wood. We had decided early on that to truly make the most out of our adventure, we needed to add a few days, and instead of just visiting the ranch, we should start with a short road trip, so we could truly appreciate what Wyoming has to offer. We flew to Billings, Montana, and rented a car to drive to the ranch. Instead of taking the most direct route, however, which would have been about 300 kilometres, we opted to head to Cody, Wyoming, and spend a little time exploring Yellowstone National Park.

BEYOND ALL THE SKILLS WE WERE LEARNING, THE RANCH WAS ALSO OPENING OUR EYES TO THE PRACTICAL AND SYMBIOTIC RELATIONSHIP THAT EXISTS BETWEEN HUMANS AND HORSES
Incorporated in 1901, Cody is approximately 80 kilometres from the east entrance of Yellowstone, making it the perfect destination for anyone hoping to experience one of America’s most beautiful National Parks. The drive to and from Cody is equally as breathtaking as the park itself, with the vast landscape dotted by dream-inspired ranches, free-range livestock and wide open roads. Founded by none other than Colonel William (Buffalo Bill) Cody, the present-day town is home to nearly 10,000 people and boasts a rich western culture and feel, with its extra-wide main street flocked by western facades and friendly townsfolk. With the mountains of Yellowstone in the background and the Shoshone River in the foreground, Cody is as picturesque as it is welcoming. This thriving community hosts an influx of annual visitors. Despite this, the city hasn’t lost its small-town charm or appeal. We spent the night there and woke up early the next 78 | GoodLife Georgian Bay

morning in order to spend as much of the day in Yellowstone as possible. Despite what you may think, Yellowstone is not as big as it seems. At nearly 9,000 square kilometres, it’s a wilderness recreation area located atop a volcanic hot spot. The park straddles three separate states — Wyoming, Montana and Idaho. In addition to the famous geysers, such as Old Faithful, Yellowstone is also home to hundreds of animal species, including bears, wolves, elk, antelope and, my personal favourite, bison. A car trip, taking in all the tourist sights, can be accomplished in a couple of days. After our day in there, we made our way to the Red Reflet Guest Ranch. After being greeted by general manager Sarah Aciego and owners Laurence and Bob Kaplan, we were further welcomed with a glass of wine and delicious refreshments, followed by a home-cooked meal and great conversation with the Kaplans and a few fellow guests. Sarah then escorted us to the Ponds cabin.

Located at the entrance to a private canyon, the Ponds is a 1,600-square-foot oasis offering dramatic views, day and night. We were only two people, but this beautiful cabin sleeps up to six guests and includes a master bedroom with king-size bed, steam shower, full kitchen and a six-person hot tub. When we arrived at the stables the next morning, we were introduced to Tammy and Clay Trollinger, who manage all horse operations at Red Reflet, no easy feat considering the size of the team and the expectations of the guests. We opted to spend the morning taking in the ranch on a trail ride up on the canyon ridge, a ride that provided phenomenal views. For the afternoon, Tammy and Clay asked us to spend the afternoon sorting cattle. The type of riding Lauren and I do at home is often very disciplined and structured, with the rider and horse aiming for a certain look and practising until this is achieved. On the ranch, horses are very much working animals. Beyond all the skills we were

learning, the ranch was also opening our eyes to the practical and symbiotic relationship that exists between humans and horses on a working ranch. Our horses at home were suddenly beginning to look very lazy, spoiled and likely bored. After a wonderful day in the saddle, Tammy and Clay informed us of another challenge: the next day they were to embark on a cattle drive through town to move the cattle to winter pasture; they asked if we would like to join in. The following morning, riding the same two horses we had gotten used to the day before, we moved cattle through the small town of Ten Sleep, up the red rock cliffs and to the grazing grounds that would be their home for the winter months. Soon we found ourselves completely submerged in the western ranching culture. Our team of six riders, and two amazing herding dogs, kept the cattle on the right path with only a few rebellious cows in the crowd. We were secretly happy for the rebellious ones because they allowed us to put our new-found cowboy skills into action.

We spent all our riding time outside either on the trails or working the cows, but the ranch also has extensive training facilities, including indoor and outdoor riding arenas, outdoor round pens, a stable and dedicated horse pastures, all overseen by the Trollingers. Although we were there to take advantage of everything horse related, there are many other activities available to all guests at Red Reflet, including ATVing, fishing, hiking, mountain biking, skeet shooting, rock climbing and stargazing. Using the ATVs to cover as many ranch trails as we could was an experience we will never forget. These machines allowed us the freedom to explore the ranch at our own pace, and explore we did. Our last morning there, we woke up at sunrise and were on bikes before the sun came over the red rock. After a two-hour ride, we begrudgingly made our way back to our chalet and prepared to leave.
