I have a confession to make. The first time I tried one of the trendy new “mainstream” ciders offered from the LCBO, I politely sipped the first half, while waiting for my host to turn their back so I could dump it down the sink.

It was more than a year later, this past summer, when I was at a community event and there it was — local craft cider. The combination of a hot summer day and my desire to support a new, locally produced product pushed me to keep an open mind and try this beverage again. What a difference. The flavor profile was clean and crisp, and I knew we needed to profile these fantastic producers. Katherine takes us on a tour of several local craft cider producers, each offering a unique recipe and offered either direct or at the LCBO, just in time for fall.

For me, autumn is always an extravaganza of root vegetable soups, warming stews and homemade apple pie. So what fun it was to take the culinary tour of The Apple Pie Trail this season.

In 2008, there was only one craft cidery in Ontario — now there are 19 with more on the way. And many of these cideries are located right in our own backyard.

I’m not a big seafood girl since I didn’t grow up eating a lot of it. So when the lovely people at the Tremont Cafe in Collingwood prepared some Smoked Trout on a crustini for me to try, I was a bit scared. Wow, who knew it was so delicious? And why had I never tried it before?

Having a German background, I appreciate the European touches and designs of this Thornbury home. I particularly liked the sauna room and love the kitchen. German engineering and design with classic, clean lines made this home a pleasure to visit and photograph.

t’s a catchy lyric from the Broadway musical Fiddler On the Roof, and a daily refrain for homeowners Florian and Sherry Lenders, who insist that the colours, painted across the sky at their Georgian Bay property was the determining factor in settling there permanently. “We are on a point and have so many pictures of the sunsets we’ve lost count. You just can’t capture the beauty of it anymore,” says Sherry Lenders, who rounds out her evenings in a fire lit gazebo on their street fittingly named Sunset Boulevard. The land was the original spot of the family’s summer cottage but when Florian sold his business to retire early, he razed the structure to the ground, deciding that instead of downsizing, they were super sizing. Fans of Jon Hutman’s production design for the film Something’s Gotta Give will draw comparisons between the Lenders’ new Blue Mountains residence and the hit movie’s delicious Southampton beach house. A white and ebony staircase rises to a balcony that overlooks the great room, with expansive views to the water through floor to ceiling windows. Plush blue and white club seating (Elizabeth Interiors) and cozy leather sofas (Stoney Creek Furniture) await below before an impressive fireplace. Although the span of this residence is just slightly lesser than the film’s luxurious Long Island beach house, it possesses the same spacious casual elegance that has made Hutman’s design a mainstay for builders and decorators for over a decade. A porch swing would be the defining statement for the residence — “inviting and relaxing.” cluttered or confining about this home. There is room to move. Steve Garrow of Dezign 2000 was the builder. During the design phase, he presented the Lenders with a basic plan of what he called “boxes” for the couple to mull over. “Steve had a lot of great ideas about ceilings,” says Florian. But the couple had an entirely different style in mind. “We’d already done extensive landscaping with thick ropes and posts lining the path to the shoreline and we wanted a post and beam look to the house. A lot of glass looking out to the lake with a nautical theme.” The Lenders went through the existing plan, room by room, picking through every possible detail from flooring to cabinetry to windows. They moved some things around and added a bedroom. This was the moment to get every single thing they had ever dreamed of. For Sherry, a porch swing would be the defining statement for the residence, making it “inviting and relaxing.” 12 | GoodLife Georgian Bay | Fall 2016 ■


“She’s a big fan of To Kill A Mockingbird,” laughs Florian. “She always said, ‘when we do a complete build, I’m getting a swing on the front porch.’” After about four or five different sets of plans, the steadfast builder finally landed on the right fit. Rockwood Tree Farm & Timber Frame Homes was brought in to do the post and beam work with the exposed trusses the Lenders loved. The effect of this attention to detail by the owners produced a wealth of distinctive elements in virtually every room. Like the barn board wall treatment in the powder room and the transom windows above beds in the two masters that carry in the flow of lake breezes (engineered by Van Dolder’s Home Team out of Owen Sound). A deeply set bottle glass window directly behind the kitchen range floods the kitchen with light while blocking the view from the neighbours – an ideal location for succulents. “That was really Steve’s idea,” says Florian. Recessed tongue and groove panelling in coffered ceilings right above, impart the ‘ship’s cabin’ look the Lenders desired. On the second level, sliding barn door hardware uniquely hung with lead-paned French doors mark the entrance to the fitness room. “Everyone puts their workout room in the basement, says Sherry. “We

wanted it upstairs, with light coming in and doors facing out. It doesn’t feel enclosed.” “The barn door gear also breaks up that massive wall,” adds Florian. “It turned out even better than I imagined in my head.” The primary living area on the main floor is open concept with all three rooms (kitchen, great room and dining room) connected. A steel support beam was required to bear the load. But the Lenders decided just a hint of a division between the great room and the kitchen’s working area would better define the spaces. A doubled-sided glass-door cabinet was the answer. Custom painted to achieve a distressed look with mahogany undertones and an ebony finish; it is a purposeful piece of furniture. On the great room side, the cabinet serves as a bookshelf. On the kitchen’s side, it accommodates wine racks and Florian’s extensive rum collection. The arch connector between the cabinetry incorporates an inlay of a compass at his request. “They did a spectacular job,” praises Florian. For Sherry, a plate rack was essential to display her collection of serving dishes – a design element also found in Jon Hutman’s wonderful production design. But for the Lenders’ layout it was inventively used to separate the pantry from the kitchen proper. The kitchen island countertop is constructed of mixed natural media. The combination was inspired by a design found on the Houzz website. “We spent a lot of time researching and looking through design websites to get ideas,” says Sherry. The Lenders handpicked their slab of sycamore from the Tree Green Team in Collingwood, a group that transforms salvaged trees into handcrafted furnishings. Then, Exquisite Wood Designs, who constructed all the cabinetry in the home, laser cut the sycamore so the granite portion of the countertop would match the wood perfectly. It was sent back to Tree Green Team for finishing before the final assembly. A black granite prep sink in the island balances the whole composition. “We wanted to introduce a lot of textures into the house,” says Florian. seating. “We also brought in sea grass and wicker,” says Sherry. “It’s in the kitchen and the living room. That ties it together.” The Lenders are firm believers of installing design elements in multiples. “We’re big on a design of three”, says Florian. “Three of the same, to make it look like it matches.” “It brings consistency throughout the house,” agrees Sherry.” For the kitchen, they chose a magnificent hammered copper range hood – the Regal model from Copper Kitchen Specialists. Then complemented with striking Prismatic Glass copper pendants from Restoration Hardware and finished the triptych with copper faucets. The copper theme also carries through to teapots and serving dishes and to a retro fire extinguisher in the great room. Outside the dining room window, copper exterior lighting is also visible above the BBQ. Copper is found yet again in the main floor master bath where a show – stopping claw – foot tub with hand hammered nickel interior from Signature Hardware, creates a dazzling focal point. “It’s gorgeous,” says Sherry. “When you get in it, the water doesn’t cool down. It holds the heat. I’m tall and I can lie in that tub and be totally immersed.” Materials used in the exterior were again installed in multiples and deliberately chosen to blend in naturally with the environment. The brickwork is a rich Eldorado Stone in Shadow Rock shade, which is dry laid, a technique of masonry craftsmanship where the stone is cemented in without grout, achieving the textural depth of stacked stone. This stonework repeats again on the great room’s fireplace, exterior planters and on the privacy wall on the deck, which was specially built with eight by eight beams, then framed out and insulated with soundproofing material to reduce noise from the adjacent residence. For interior finishes, the Lenders insisted that they reflect the talents of local artisans in the region. Georgian Design in Collingwood did all the tile work and flooring (beautiful Douglas Fir.) Oasis North from Thornbury handled the landscaping, deck and gazebo. Artwork was acquired from nearby Clarksburg. “It’s important to bring the community into your home,” says Florian. “When you have this kind of talent in your neighbourhood, you must support them.”

Visually, your roof is the first thing people notice when they approach your home. nvariably, the number one stipulation for buyers of multimillion-dollar residences is a good view. High ceilings, chef’s kitchens, spa bathrooms, architectural details and privacy are prominent on the must-have list, but a superb view is by far the most desired attribute, and the mark of an exceptional country estate. Discovering the potential for that kind of view in a secluded forested lot takes a keen eye. Which is exactly what Nancy Stewart and Robert Stilwell have. Searching for a new property for more than 18 months, the couple knew they wanted to move into the vibrant four-season Blue Mountain area after years of living in Muskoka. But Stewart had a few reservations. “If we’re leaving the waterfront, I at least have to have a view of the water from my next home,” she told Stilwell. A tall order given that they also wanted acreage, privacy and the experience of luxury country living. After being escorted to numerous properties with only an escarpment view they were driving down a country road disheartened when they suddenly saw a fortuitous sign: 30-acre lot for sale. They careened off the roadway onto a rough dirt path that was swathed in five-foot high grasses, got out of the car and started walking. Moving through a heavily wooded area, they finally came to the top of the ridge … and then they saw it. The view of all views – unlike any they’d 24 | GoodLife Georgian Bay | Fall 2016 ■

seen before and totally obscured by a dense thicket of ash trees. Any other couple may have cut and run, but not Stewart and Stilwell. They knew they had found the right property. They tagged the trees that would stay and, for the next nine months, Stewart worked the chain while Stilwell drove the heavy-duty tractor as they cleared the land themselves, tree by tree. Hundreds and hundreds were felled.

What they unmasked is a breathtaking vista that extends down a lush rolling slope, dotted by the few conifers and hardwoods they left standing to frame the spectacular view of the Niagara Escarpment, Blue Mountain ski resort and crystal waters of Georgian Bay on the horizon. On a clear day even the golden sands of Wasaga Beach can be seen glistening on the far side of the bay.

The cloud movement is amazing. There’s never the same scene.” Neither their words nor even a photograph can truly capture it. It is the sort of scenery one must sit and absorb unhurriedly. “Our company comes and they sit and say, ‘just leave us alone, we’re fine,’” laughs Nancy. The couple designed their country home, from the ground up, entirely around this view. Even in the smaller bathrooms they dumbfounded builders by insisting windows be installed on narrow corner walls to allow visual access to the scenery. “There are no window treatments in the house except for the master bath,” says Nancy. “That’s how much privacy we have.” Aesthetics were tremendously important to this design-savvy couple. Each step of the building process was meticulously mulled over. They knew they wanted a pristine design unmarred by the clumsy vulgarities of heating, plumbing and ventilation systems. They started with floor vents, forgoing them altogether in the great room. The heating ventilation is incorporated within the base

trim below the window, making it completely undetectable and leaving the impressive hemlock floors unblemished. “The windows are like a piece of furniture,” says Robert. “The columns of the window extend right to the floor. It’s like they are supporting the magnificent bank of windows with legs.” The flooring below brims with character. It was reclaimed barn wood (finished by Jeremy Gourlay), which runs end to end throughout the home. The couple had the roughhewn boards milled and laminated before all knotholes were filled with a dark epoxy. It’s a rich, agreeable look that was an “astronomical cost,” according to Robert. But ever so worth it. Travertine flooring was the choice for all the bathrooms with curbless shower stalls in each. “How many times have you gone into a shower and stubbed your toe?” asks Robert. It certainly won’t be happening in this home. The drains in the showers were also angled to such an exacting level of accuracy that no water ever runs out of the doorless stalls. Even the roofline was taken into consideration for aesthetic impact. The couple did not want their roofline interrupted by vents and stacks of any kind, so instead they had a pleasing copper cupola build atop. This attractive architectural feature holds a thermostat that monitors temperatures and ignites a fan whenever temperatures rise above 80 degrees Fahrenheit. These little details are the finer points that eliminate those annoying structural eyesores that one only begins to notice after years in a home. But how they got here was a whole other odyssey. Originally, the couple had searched the Internet looking at thousands of homes online to find the one that would most closely match their vision. Next they made their adjustments. Architectural technologist, William Leithead drew up the initial plans and they set them out on a table for months so they could look at them constantly. They wanted all changes made pre-build. “I would get up in the night with an idea and jot it down,” says Nancy. She wanted very specific functional things, like a medicine cabinet in the master en suite, but it had to be undetectable, flush to the wall. “They’re old fashioned but so convenient, and they just work,” she says. It tests your marriage.” Together they can laugh about it now, but the gruelling decision-making was a crucial step in this outstanding home’s design because once the blueprints were finally set in stone, there was not one single change. There are seven different ceiling profiles throughout the residence. Fourteen-foot ceilings in the great room are coffered with tongue and groove insets that add visual depth. The master bedroom boasts a highly detailed 12-foot vaulted ceiling, also with dramatic inlays of tongue and groove. Here, a spacious window seat invites a leisurely read. The well-appointed guest wing that possesses three bedrooms and two baths was given equal attention. Bedding and furnishings are all top of the line. Closets have automatic lighting. Bead board runs three quarters of the way up the wall in the guest en suite and guest powder room, just as it does in the home’s main master en suite. Robert is proud to point out no fossil fuels are used on the property. The home is heated by geothermal with additional infloor radiant heating. The wood-burning fireplace imbedded in thick Wiarton stone (repeated also on the exterior of the residence) acts as a heating component in and of itself. “This stone literally gets hot to the touch and there are vents and a fan,” says Robert. “It can be zero outside and that little fireplace can keep the house at 70 inside.” Which is a remarkable feat, given the immense windows found in virtually every room of this grand country residence.

s our nights grow cooler and we reluctantly dig out the sweaters, there are still plenty of reasons to celebrate the season that lies between swimming and skiing. It’s apple harvest time! Now in its ninth year, the Apple Pie Trail is a self-guided culinary food trail with 40 fabulous whistle stops from Creemore to Meaford that celebrate the scrumptious Ontario apple. Apple production drives much of the economy in the region and while the trail goes year-round, the fall is always the highlight because the picking season is in full swing and fall colours are at their peak. Kristin Ellis of The Blue Mountain Village Association, the group that publishes the trail’s map, says “Grey County is the most concentrated apple growing area in Canada. Each of the 40 trail stops have been thoroughly screened to ensure that vendors and farms are either cooking or working with local apples.” By dawn ritchie

40 DELICIOUS APPLE-INSPIRED TRAIL STOPS There are six major vicinities along the scenic trail route and conquering one or two towns per day may be the best way to approach this embarrassment of riches. At the southern end, there’s the Creemore & Stayner leg. A little further north brings you to the Collingwood, Craigleith and Blue Mountain Village trail. The Beaver Valley – just to the west is the heart of the applegrowing region – and not to be missed, the Clarksburg, Thornbury and Meaford destination that lies at the north end of the map and offers a winery as well. To help visitors manage all the excitement, The Blue Mountain Village Association is now working on creating daily itineraries to curate visitors’ adventures. PLANNING YOUR ITINERARY A typical day trip could start with breakfast at a café with apple pancakes before heading to an artisan’s gallery to view exhibits of paintings and jewelry with an apple orchard theme. Next, onto a cidery or honey house to acquire some Apple Cinnamon Creamed Honey for the pantry. Later browse through a local cheese shop that serves apple smoked cheddar and stir the appetite for a lunch of curried apple and ginger soup. After lunch, a pit stop at a local coffee shop for a caramel apple latte

revs the engine before an afternoon of apple picking. Wind down the day’s exploits with a leisurely dinner of apple smoked ribs (Trail Stop #28), roasted salmon with apple lentil salad (Stop #32) or another apple-inspired menu at one of the many excellent restaurants on the trail. PICK YOUR OWN Two pick-your-own orchards are cited on this culinary trail: T&K Ferri Orchards and Farmer’s Pantry, both in Clarksburg. T&K Ferri (Trail Stop #21) is an award-winning orchard known for it’s high intensity planting system. The Farmer’s Pantry (Trail Stop #22) is activity central with tons of things for the kids to do. ACTIVITIES There the family can enjoy a wagon ride and game of mini-putt in the orchard, visit a petting zoo, negotiate a rope maze and blow off steam on a sand mountain. There are candy apple dips and calf roping … and for the adults, the lovely market to peruse. But everywhere along the trail there are activities to be enjoyed. A cooking class in Creemore is at The Mad Maple Country Inn (Stop #1.) Two museums offer the history of the apple industry and tools used in the harvest (Stop #18 & 37) or one can view apple knit textiles at the Meaford Museum at the Harbour. GoodLifeMagazine.ca | 31

Many consumers have only ever eaten four or five types of apple, because that’s all grocers carry, when in fact there are more than 7,000 types of apples grown worldwide. The Apple Pie Trail thankfully has its fair selection, including the rare and fabulous winter apple, the Red Prince, grown only in Thornbury. Exclusive to Binkley Apples, a sponsor the Apple Pie Trail, the Red Prince was brought over from Holland. No one else in Canada has the rights to grow or distribute it. This royal Red Prince is a cross between a Golden Delicious and a Jonathan, and while it is picked in the fall, it won’t ripen until January or February. It needs to be “cellared” for three months to develop its sweet and tangy flavour profile, much like a fine wine does. Pick up a Red Prince Apple Pie at the Thornbury Bakery Café, (Stop #31 on the trail.) The bakery is even generous enough to supply itsrecipe. ORGANIC APPLES Those seeking organic apples will definitely want to pull in to The AppleTop Farm (Trail Stop #23) in The Beaver Valley, open every day 9 a.m. to 5:30 p.m. (except Tuesdays) from September to October. Only seven minutes from Clarksburg (two concessions down,) AppleTop is the only certified organic grower currently on the trail. They have 27 acres of apples and sell Paula Reds, McIntosh, Galas, Empires, Cortlands, Ambrosia, Jona Golds and Northern Spy right

This is the trail stop where free (yet priceless) educational sessions on organic growing are offered. It’s a casual lesson about good stewardship of the land according to grower Helena Johnson. “People are really curious about what we do,” she says. “So we take them into the orchard and let them ask questions.” Johnson insists that apples should be handled with care. “Apples should never touch the ground and should be picked carefully. BREWERYS, VINEYARDS & BAKERIES If refreshments at a winery or local brewery are more appealing, dusty trail-goers can enjoy a cold one and still leave with a bag full of brewery-made Spent Grain Apple Doggy Biscuits for Rover (Stop #11). “The dogs just love them,” says Ellis. Two vineyards on the trail offer hard cider and an outstanding “Ida Red Frozen to the Core” dessert wine (Georgia Hills Vineyard: Trail Stop #20). For kids: apple slushies (Ravenna Market: #19) and ice pops (Currie’s Farm Market: #10) are to be found along the route. PIE FROM SCRATCH! Getting down to the ‘core’ ingredient of the Apple Pie Trail is of course that iconic Canadian dessert. No day trip would be complete without filling the shopping bags with

Which means just before bed, there’s the reward of that sinfully good slice of pie to feast on. The Apple Pie Trail may be the ultimate Canadian day trip – the changing leaves, the crunch of a crisp apple and a whole lot of rural Canadiana thrown in. Is it of any wonder that it received the premiere’s award for Agri-Food Innovation Excellence?

She would like The Petal Pushers to be known as THE flower shoppe that is affordable, knowledgeable, creative and dependable. Shirlee Williams opened Buddha Rider in 2007 after relocating from Toronto. Her dream was to create a space where people of all ages and abilities could come and connect to themselves and each other. “E

ven if there’s a light rain, we can still sit here and have dinner,” says Helmet, who points out the exterior heaters installed above the table. The entire patio area is a lush, welcoming sight. Bordered with purple lavender, blooming fragrant Phlox and a copse of trees that sway in the lake breeze, the garden is just what it should be – a little piece of Nirvana. “The property drops a metre in depth over there,” Helmet continues. Explaining that instead of levelling the land and razing the trees beyond the fire pit, they installed a retaining wall using the immense boulders extracted from the excavation site for the home’s foundation. Keeping a small measure of the forest intact enhances the natural atmosphere of the garden but also serves to cool the hot summers, block winter winds and supply erosion prevention – the innate wisdom of the natural world at work. The Mayers built their custom Europeanstyled home with these considerations of sustainability and environmental friendliness in mind. The home was constructed entirely with ICF (insulated concrete forms.) “Not only in the basement but on the main floor,” says Helmet. “Only the roof is framed and there’s in-floor radiant heating on all three levels.” Forced air heating and air conditioning from a traditional furnace is also avail-

able but only employed when absolutely needed. The couple takes the chill off the morning with an hour’s fire in their Chantico gas fireplace before the sunlight streams through their massive windows and warms the house. An impressively high-tech electrical room runs the operations of the home and is further evidence of their commitment to energy efficiency and functional preparedness. A Lifebreath air ventilation system purifies the air, a 400-amp system and generator is at the ready for power outages, all pumps for the exterior in-ground Jacuzzi reside here, out of the elements, and a German-made Viessmann furnace boiler hangs on the wall

Originally from Hamburg, Germany, the Mayers relocated to Toronto for business in the 1990s and, after they retired in 2009, decided Lora Bay would be the place of their retirement. “We learned about the development through the Toronto Star,” says Anke. “Friends said it’s a great spot because it’s a four-season community. It’s not deserted in the winter like other areas because there are winter sports.” The couple had searched across southern Ontario, thinking about Niagara on the

Surveying the home, one might not notice the unassuming Graf manhole cover on the floor inside the garage. It is the primary access point to a 6,500-litre cistern that harvests surface rainwater from the roof. “It is used to flush toilets, water the gardens and for use in the washing machines,” explains Anke. “Washing with rainwater is wonderful,” adds Helmet. “It’s soft water. And since water in the cistern is not exposed to light, it develops no bacteria.” When water levels in the cistern drop, the

Lake before finally settling on Lora Bay. “We joined the club and learned to golf,” says Anke, who adds that she needs to rush off to a prearranged golf date shortly. The vibrant community of Lora Bay is flush with affluent retirees like the Mayers, cycling the roadways and flying past on golf carts, racing from activity to activity. It lies right on the shores of picturesque Georgian Bay and just a few minutes drive to the quaint town of Thornbury with its resident galleries and burgeoning gourmet shops. “There’s so much to do here,” says Anke.

The spectacular Italian kitchen from Nima Kitchens is supplied with a Miele dishwasher that emits no noise when running and a Miele espresso machine, embedded seamlessly into the sleek kitchen cabinetry. A wine fridge lives in the island and a Thermador magnetic range top and fridge (produced by Bosch and Siemens Home Appliance Group) rounds out the appliances. Faucets throughout the home are Grohe and the sink is Franke. The stunning granite countertops travel all the way up the wall, installed by Nima as well. “They are a family-owned company. Excellent,” says Anke. “He came out and double measured and then he played a round of golf. You have to combine pleasure and work.” The bathrooms in the home (there are five) sport unique Geberit flushing systems that hide that unsightly water tank behind tiled walls, thus allowing for hanging toilets – a bonus for easy floor cleaning. Discreet modern urinals are found in several bathrooms. Even the Mayers’ living room seating and media room lounges, manufactured in the fjords of Norway, used meticulous Germanmade instruments in the construction. The backs of each section of the supple leather sofas tilt and swivel to provide the ultimate in comfort. Which is not an understatement. Retailing at over $3,700 (just for the one recliner) these are pieces built to last. “Everyone fights over that chair,” laughs Anke, referring to the striking apple green recliner and ottoman (Jazz series.) “I usually win.” “She does,” says Helmet, as he takes charge of the recliner, momentarily. But it’s all part of the Mayers’ mandate to create a home that is as supportive, enriching and stress-free as possible. Which also explains the ample storage systems found about the home. In designing the home, the Mayers ran down their laundry list of how to reduce stress. Spa bathrooms and a spacious sauna were musts. A pet washing station in the laundry room could also double as a wash area for dirty boots and sports equipment. Separate offices on separate floors would provide solace and good light was crucial. “Light is so important for health,” says

Anke. “We didn’t want dark floors again.” The couple chose maple floors, high ceilings and light pine doors throughout. Even the lower level has nine-foot ceilings. “I feel like I can breathe down here,” says Anke. The home has five bedrooms in all – three on the top floor and two generous bedrooms on the lower level. Each bedroom there enjoys large windows with deep window wells that flood light in. The window wells are spectacularly lined on the exterior with those eye-catching granite boulders pulled

Cedarport in Thornbury installed the Pella architect series windows throughout (with ironclad exteriors and wood interiors). On the second level of the home, storage solutions really take hold. There are not only two walls of closets with built-in closet systems, but two additional small rooms devoted specifically to storage. “Other homes around here don’t have this,” says Anke, who enjoys the fact that everything is tucked away neat, clean and serene. The Mayers take great satisfaction in the stress-free environment they’ve created. “We hired all the trades ourselves,” says Anke. Right down to the electrician who did all of the electrical inside and out. “They’re the highest quality fixtures and the exterior lighting automatically comes on when it gets dark,” says Helmet. “He’s our son,” says Anke proudly. “He’s a master electrician for his company Oarcon.” Which now explains the meticulous organization of the electrical room in their basement. hat does the rusting hull of a Great Lakes ship have in common with a delicate bouquet of white flowers in a clear vase? They are the things that move artist Kaz Jones and have become part of her art. “My philosophy is paint what you know, paint what moves you, paint for the pure love of disappearing into the paint,” said Jones, a Collingwood-based fine-art painter. “I find painting meditative. The concentration required makes hours disappear.” Her interest in art developed as she lived the life of a globetrotter, travelling widely in Europe and South America. “I always found myself sketching, sometimes it was the chickens on the road outside a pension in Crete,” she said. “While teaching in Colombia, South America, I loved painting images of the lush plants and flamboyant birds.” Jones studied art history and printmaking at university, then obtained a degree in teaching from Queen’s University. She taught Kindergarten and worked as the liaison teacher for alternative education on Quandra and Cortes Islands in British Columbia. She moved from BC to Georgian Bay about eight years ago and has been a full-time fine artist ever since. Jones, who paints daily at the Tremont Studios in Collingwood, always works in series, sometimes spending a year or more on a specific subject.


After moving to rural Ontario, Jones frequented local fall fairs and began to love old tractors. “I was captivated by their hard-working nature and their longevity,” said Jones. “Painted in their ‘working clothes,’ the tractors convey their nobility in all of their rusty simplicity.” Her next project also featured rust prominently as she painted a series based on the Great Lakes ships that were constructed in Collingwood’s shipyards. “The scrapped and marred monumental hulls became my subject matter,” she said. “Layering paint and scraping down to reveal multiple hues was great fun.” Jones’ latest group of paintings – the Monochromatic Still Life Series – features many shades of white and depicts flowers such as tulips or daisies in glass vases near windows. The paintings reveal her latest affinity for depicting reflection and glass. In each of her series, she strays from embellishments in favour of pure beauty. “My goal is always to simplify my subject matter and convey its essence with minimal information,” she said. “I have always enjoyed naïve art. Looseness, innocence and peacefulness are what I strive for.” Though the simplicity she works to convey in her paintings – mostly acrylic – doesn’t mean they are void of small details. “In my paintings, I choose to take everyday flowers – the humble tulip for example –

teapots, vases and plates of fruit and infuse them with iconic status,” she said. “They are my monuments to an optimistic, thoroughly happy domestic life. My subject matter speaks to me of the beauty of the everyday and the majesty of nature’s creations.” Jones calls her view a “happy-go-lucky” one. She draws inspiration from what she calls naïve art, which is work done by selftaught artists. She was also influenced by the First Nations art and culture she experienced while living in the remote community of Bella Bella in BC. Ultimately, it is her travels, her surroundings, her fascinations and her infatuations that move her to create art. “At teacher’s college, a wonderful professor once said that whatever the curriculum, ‘you are really teaching who you are,’” said Jones. “I feel this applies to my art. I am not just painting tulips or daisies, I am painting who I am … I paint for personal satisfaction. I rejoice when people show appreciation and when paintings are purchased, but I don’t paint because I think it is what folks want to see. I hope that people enjoy what I choose to see and represent.” Jones is one of several local artists being showcased in the Collingwood Art Crawl, which takes place Sept. 24. The Collingwood Art Crawl is a free, self-guided art walk featuring more than 100 artists in 40

venues with live music, food and beverage samplings and art in downtown Collingwood. For more, visit collingwoodartcrawl. com. Jones’ monochromatic still life series will be featured in the group show at The Press Gallery during the art crawl. The show, Still Life Now, runs to Nov. 14. Jones’ Great Lakes series will be showing in her studio at The Tremont during the art crawl. Jones’ work will be featured on Oct. 1 and 2 alongside several artists during the Purple Hills Arts and Heritage Society’s annual arts festival. When chef Christophe Boivin and his wife stumbled upon the beautiful town of Collingwood, they knew the time would come for them to call it home. Finding the perfect location was enough motivation to sell The Roxton in Toronto and move north of the city. Inspired by fine European dining, The Tremont Café was opened in one of Collingwood’s few heritage buildings. I had the chance to chat with Chef Boivin further about the café.

How and when did it all start? I was in Collingwood at the Canadian Chefs’ Congress with my wife a few years ago. We decided to take a drive around the town and that was when we decided to move up from the city. We rented a place for a month and then found a gorgeous property on Sunset Point to call home. Not too long after, we came across the Tremont building while it was being gutted and restored. We loved it, sold our restaurant in Toronto and opened The Tremont Café in September 2010.

How would you describe the atmosphere at The Tremont Café? We wanted to model it after European fine dining cafés. Similar to ones you see in Paris. The concept was to offer high level cuisine and service but maintain café aesthetics. Can you tell me more about your kitchen staff? Chef Josh Fevens is our talented head chef who comes with years of experience at some of Ontario’s leading restaurants. He leads a team of three other well-experienced chefs that we’re blessed to have. In addition, I also bring in extensive culinary experience as a chef and I often work with Chef Fevens to create our seasonally changing menus.

How have local diners reacted to your restaurant?

To start, I would highly recommend the House Chicken Liver Mousse with cornichons and Granny Smith apple, which is served on a Collingwood Bread Company baguette. For the main course, you really can’t go wrong with the Daily Fish Market Special. Chef Fevens always comes up with something different and delicious. Our flourless chocolate torte is quite popular but we usually also have a dessert special that’s always worth trying.

Our guests really enjoy the ambiance and the food. We get lots of good reviews online. People really take to the building and the café space itself. And others who like good food are often very pleasantly surprised. Most are usually excited to find such a cosmopolitan place in a heritage building. It all comes down to the fact that we take a lot of pride in what we do and we’re blessed with such amazing staff.

How do you cater to diners with special dietary needs?

We aim to source locally as much as possible. Our menu tends to change with every season. Right now Chef Fevens and I were just talking about the fall menu. I think it’ll be a fun one to do. We’re excited. The fall kind of changes everything. You have longer cooking processes that include braises and other hearty dishes. Even though some things carry on we try to update it seasonally.

Our menu is structured such that we always have vegetarian options available, both as appetizers or mains. We don’t have many breaded items on our menu so we can also accommodate for gluten-free diets. Generally most items on the menu can be adjusted to the guests’ liking.

What about private events? Our Book Room, in the back of the restaurant can accommodate about 22 guests and has its own washrooms. It actually got that name because when we first opened we used to sell books out of there. Our dining room can seat 26 and we can combine both spaces for larger gatherings. Our open kitchen is a nice link between the two spaces. People usually enjoy seeing the food being prepared right in front of them, especially if they’re sitting at the bar.

Smoked Trout Crostini with Boursin Boursin 16 oz of cream cheese 4 oz of softened unsalted butter (1 stick) 1/4 cup of heavy cream (35%) 1 shallot minced 1 small clove of garlic minced (optional) 2-3 tbsp of fresh chopped herbs Choice of herbs Chive Parsley Dill Zest of one lemon Salt and white pepper to taste (a teaspoon each should do it) 1. Method: In stand-up mixer, incorporate all ingredients (or in mixing bowl with a spatula. Let Boursin set in fridge for 1 hour. 2. Cut slices of your choice of bread, we use Collingwood Bread Company baguette. Drizzle olive oil on bread then lightly toast. Spread Boursin on bread then top with smoked trout. We use Kolapore Springs smoked trout. (Smoked salmon would also work well) 3. For the Tremont final touch, we toss some nice peppery arugula in lemon juice and top with floral pink peppercorn. bygone days aspiring, musicians gathered in garages to create their sound, then roughed it on gruelling road tours with the hope of being discovered and inking a record contract. Times have changed. Today singing competitions are the launching pads for careers. Laptops are recording studios and the World Wide Web is everyone’s record store. No longer do bands have to pigeonhole themselves into a specific genre, work in isolation or beg for a return on their creative investment. Social networks are musicians’ new tools and revolving alliances are their creed.

The Challengers THE COLLINGWOOD MUSIC COLLECTIVE is one such example of this new way of making music. The brainchild of Kolston Gogan, COSOCO is a group of Georgian Triangle artists who have joined to form a musical community with the mission of releasing new music monthly. “There is a challenge presented at the beginning of every month,” explains Gogan. “Each musician involved writes and composes a three-minute piece. At the beginning of the following month, the music is released and it all starts again.”

COSOCO’s monthly challenges are inspired by theme words, poems, artwork or even individuals in the community. The theme of the 3rd Volume in the collective’s series was Animals and all proceeds from sales were pledged to the Georgian Triangle’s Humane Society. The Collaborators STEEPSOL Steepsol is the newest musical “collaboration” from 22-year-old James Stephens, who is another participant in the Collingwood Sound Collective. In partnership with violinist Shawn Patrick Fisher, who has been playing with Stephens for three years, the band recorded their first alternative rock EP, Good Friend, at Threshold Recording Studio in Hamilton. That collaboration brought in Tanner Noth on lead guitar and Kolston Gogan on drums. Stephens’ vocals are crisp and distinctive with plenty of air to accommodate Fisher’s energetic flare on the strings. Arcade Fire is Fisher’s main inspiration. “They have an orchestral indie sound which I love,” he says. For Stephens, influences range from M83 to Bon Iver, but his vocal attitude sits somewhere between Nirvana and Doug and The Slugs (as evidenced on the Drowning in a Cauldron and In Norway tracks.) Steepsol recently built a home recording studio and they’re busy at work on their next album with new collaborators Kyle Dreany on bass and Brenen Ackert on drums. Their first track, Cage of Steel, was pre-released on Cosoco’s Volume 3 in June and written from the perspective of Mother Nature, according to Shawn Fisher. The lyrics have great significance for Stephens, who, like many millenials, is deeply concerned about climate change and protecting the environment. “Twenty-five per cent of the upcoming album’s sales are going to the 64 | GoodLife Georgian Bay | Fall 2016 ■

The Genre Busters STRANGE POTATOES Three grown men in kilts playing guitars, the fiddle, squeeze box and penny whistle are Strange Potatoes – a fun-loving cover band who deliver a wealth of musical genres from The Irish Rovers to Led Zeppelin, Elvis, Guns n’ Roses and Frank Sinatra. With their self-professed “lunatic approach” to music, band members John Eaton, Derek McLean and John Miller take turns singing lead vocals and harmonies while they bounce around the stage, tartans flung akimbo. “Kilts are comfortable garments,” says bass player John Eaton, who claims things really get rolling during their midnight handstand contest. Antics aside, Strange Potatoes offers rock solid musicianship with McLean and Eaton on guitar and Miller on just about everything else (harmonica, fiddle, mandolin, penny whistle and squeeze box.) The band formed purely by chance after a night of spontaneous jamming at a local bar. At the conclusion of the jam session, the club manager approached them and tried to book “the band” for an empty slot in the entertainment lineup. The musicians didn’t even know each other’s names but the manager insisted and Strange Potatoes was born.

What followed was years of playing Celtic festivals, and the inevitable album, The Pub Spuds Collection: Good For What Ales You, packed full of much-loved old Celtic tunes mixed in with a few new band originals. Today the trio plays the Georgian Triangle every weekend at pubs and either plug in or go all acoustic at any time, says Eaton, who explains that having fun is really what this group is all about. Strange Potatoes may still be wearing Jacobite shirts and kilts, but their musical terrain includes country, rhythm and blues, rock, pop, alternative, swing and retro. “We take all requests,” says Eaton. “We have 300 to 500 songs at our disposal and can appeal to a diverse crowd. If the crowd loves ’50s or ’60s music, we’ll do that. If they’re into the ’90s, we’ll go there. We can go whole nights without playing a single Celtic tune. Our job is to make sure the party is rolling. The Competitors EMMA WRIGHT Solo artist Emma Wright may only be 12 years old, but she has the pipes and soul of a singer a decade her senior. The 2015 winner of The Collingwood Idol, runnerup at The Rising Star Talent Competition for the Canadian National Exhibition and winner of both the Mitchells 66 | GoodLife Georgian Bay | Fall 2016 ■

Bay Singing Contest and Wheatley Idol is a homegrown talent hailing from Meaford. She began her vocal training shortly after her musical gift was recognized by family friends who heard her belting out Disney tunes at age four while playing in the basement. “I really liked Dora,” laughs Emma. She has since appeared at numerous charity events and in local musical productions of Les Misérables, Annie and the Sound of Music. Last year Emma performed a full set at the Collingwood Elvis Festival and was recently well received at the Hughes Room in Toronto in July. According to proud mom Jennifer Wright, Emma takes her newfound celebrity in stride. “She’s very humble. She seems to enjoy collaborating with musicians and is taking guitar lessons and starting to write songs.” “There’s lots of ups and downs to being discovered,” says Emma. “I’m only 12 and want to hang out with friends and have fun and sing on the side right now. There’s schoolwork and skating and other sports.” And then there’s the issue of the maturing voice to negotiate. “You go to sing a song from your repertoire from last year and you have to switch it down a key,” explains Emma, who remains diligent about her daily vocal workouts. “Your voice can change right before you have a gig and you just have to work it out and be strong. You’ve been doing this song for years and the notes and belts are off. But you don’t let it beat you. You can still sing it. It’s just not in your sweet spot anymore.” Emma’s genre of choice is country and Carrie Underwood remains her favourite artist, which is why she’ll offer her country stylings of Underwood’s plucky Church Bells on the competition stage again this year at the CNE’s Rising Star Show. Although her undeniable talent means she could easily be swept up into the swell of musical stardom, as Justin Bieber was at a young age, her parents are keeping her feet firmly on the ground. “She’s a member of the school basketball team and sings in Owen Sound’s The Choir That Rocks,” says her mom. “We just want her to be happy. And we kind of hope that one day she’ll be a figure skater and skating to her own music.” See Emma at the 40th anniversary of Thornbury’s Olde Fashioned Christmas on Dec. 10 where she’ll be singing a new Christmas song.

Small Halls Festival. Nine of Clearview Township’s community halls get together to pack a weekend full of entertainment and wacky events. In previous years, the festival included an outhouse building competition, a super hero breakfast, a whiskey tasting, guided hikes, euchre tournaments, locally catered dinners, barbecues, baseball, a candlelight cemetery tour, comedy, music, and chicken races. Each hall’s volunteer board comes up with weekend events to reflect the community and represent the local hall. Fundamentally, the event is a fundraiser for each of the halls. It also serves as a showcase of the community’s best features and local talent. This year’s event takes place Sept. 30 to Oct. 2. smallhallsfestival.ca

Scarecrow Invasion. The Invasion of Scarecrows begins inmid-September and runs through to mid-October. More than 250 scarecrows can found in the downtown Meaford area alone – dangling sassily from downtown lamp posts, hiding in bushes and trees, lounging happily on benches, peeking out from behind cornstalks and resting comfortably on porches and verandas. They frolic everywhere. Meaford’s main street (Sykes Street), and harbour area are particularly alive with scarecrows during this time. This year’s decorating theme is Scarecrows Celebrate 20 Years with Music. Visit Meaford on Sept. 30 for the Family Festival, including a performance by the OPP Golden Helmets, a parade and family-friendly activities.

It’s no secret that Ontario craft cider production is on the rise. In fact, according to the Ontario Cider Association, cider (including imported) is the fastest growing category in the LCBO. Often attached to wineries, these craft cideries have become a burgeoning business. Locally, there are several craft cideries worth visiting. One has even popped up in Barrie. On that note, let’s raise a glass to local cider.

So how does one get into the craft cider and winery game? “It all started out with our love of wine,” explains Peter, who owns and operates the orchard and vineyard with his wife, Jocelyn. Heritage Estate Winery and Cidery is located just south of Highway 11 on Penetanguishene Road. Eager to share details of their business journey, Peter and Jocelyn let their story unfold while sitting on the patio of their onsite production and tasting facility which overlooks rolling farmland planted with grape vines, apple and pear trees. Their two

dogs – a black lab named Beaufort and a cockapoo named Oliver – lounge nearby in the summer heat. “The original plan was to buy an existing winery, but when we realized that would be an expensive undertaking, we decided to look to our own property,” explains Peter, an engineering technologist with a business background in renewable energy. “We love this area. It’s home — in fact my family first settled in this township in the 1850s.” Jocelyn, who also works as a physiotherapist, adds: “Our (existing) farmland already had tons of wild grapes,

Supporting Ontario craft cider makes sense Not only do Ontario craft ciders taste great, craft cideries bring many benefits to all of rural Ontario from Windsor to Ottawa, Collingwood to Prince Edward County and everywhere in between. (Ontario Craft Cider Association) There are currently 202 jobs held within the 19 cideries in Ontario. That is projected to increase to 350 positions by 2018, not including an additional 220 jobs that would be created in the industry and among its suppliers. In 2008, there was one craft cidery in Ontario; in 2014, there were 19 craft cideries, with more on the way. Cider is the fastest-growing category in the LCBO, but 77 per cent of all cider sold is imported. It’s time to support local. According to the report prepared by the George Morris Centre, the Ontario cider industry will be using 10 per cent of all apples grown in the province by 2018. With projected Ontario sales of $35 million by 2018, Ontario craft ciders will bring the province $2 million in tax dollars paid to local, provincial and federal governments, not including income taxes. Total payroll including benefits would total $12 million for the cider industry and its suppliers. Ontario cider is recognized globally. Our cold climate creates a perfect cider apple and our cider wins awards in some of the biggest cider competitions in the world.

so we thought well, if they can grow here, why can’t other vines?” With the decision made, the couple started sowing the seeds of their boutique beverage business in 2014. Over the past two years, 17,300 grapevines have been planted, and 1,250 fruit trees (1,000 apple and 250 pear) have taken root. The farm is also home to a two-and-half-acre heirloom apple orchard, and a century farmhouse. The family focused business opened to the public this past July. The fruits of their labour have paid off and this summer Heritage Estate Winery and Cidery is now producing two boutique apple wines and two artisanal ciders, Dragon’s Gold and Eden’s Apples. “Dragon’s Gold is off-dry, has a light gold colour and has notes of caramel apples, while Eden’s Apples has citrus and floral notes and a sweeter finish,” explains Peter. “But even though Eden’s Apples is sweeter, it still has only half the sugar content of most larger commercial ciders.” Both ciders are only available in cans. “The imagery on the products is inspired by (the HBO hit series) Game of Thrones because Peter just loves that show,” explains Jocelyn. Both ciders are made with 100-percent Ontario apples and feature no additives or preservatives. And the apples for the ciders and wines will be processed on-site. “To process your own apples is very expensive, and not all cideries do it,” explains Peter, who attended Peter Mitchell’s Cider Academy at Cornell. “But we have invested a lot of money into our equipment and will be processing the apples on-site.” The local business is expecting to produce 20,000 litres of cider this year and 100,000 to 200,000 litres in 2017. Once a popular drink in North America, with farmers utilizing the apples on their farmland to make hard cider, the tasty beverage virtually vanished from the North American landscape during Prohibition. Even when Prohibition ended, the beer industry took over and cider never recovered, until recently.

Today, cider is making a comeback and is the fastest–growing category of alcoholic beverages on both sides of the border ...by a mile, according to the Ontario Cider Association (see Ontario Cider Association sidebar for more details). Why is cider so popular? “People are rediscovering cider for obvious reasons,” muses Peter. “It’s delicious, refreshing, more thirst quenching than beer, gluten-free and has about 30-percent less calories than beer.” As for the apple wine? “It’s beautiful,” says Peter. “We make both a still and a sparkling apple wine.” The difference between cider and apple wine is as follows: if it’s below 7-per-cent alcohol it’s considered cider. Above 7-percent alcohol is classified as wine. Apple wine production is expected to be about 2,000 litres this year, with grape wine somewhere between 5,000 and 10,000 litres. While the cider business is getting off the ground first, Peter says Heritage Estates is both a cidery and winery. “We’ve got lots of great wines planned for the future,” he explains. On the white wine front, grape varieties include Vidal, Geisenheim, New York Muscat, Osceola Muscat and Frontenac Gris. For red wines, the grape varieties are Baco Noir, Geneva Red, Lucy Kulmann and Marquette. Vanessa McKean, from the Town of Blue Mountains, is the resident winemaker. So far, the business seems to be chugging along nicely. “The vineyard is taking hold, and we are really enjoying ourselves,” says Peter. Their biggest challenge is unpredictable weather. “A late spring frost is our biggest enemy.” The couple also credits its success to the tremendous support of friends, family, vendors and contractors. They have big plans for the future. Along with increasing production levels, a renovation of the existing farmhouse is in the works. “Our goal is to turn it into some kind of an event centre,” says Jocelyn. “We want to embrace the community and invite them onto our property.” Open from Tuesday to Friday, noon to 6 p.m., Saturdays, noon to 5 p.m., and Sundays from 1 to 4 p.m. for retail sales. Tasty things are happening at the Thornbury Village Cidery. Not only is the boutique beverage company serving up an award-winning natural cider made with 100-per-cent fresh-pressed local apples, its landmark manufacturing building is getting a makeover. Built in the mid-1880s, and then reconstructed (after a fire) in 1932 by John Mitchell of Mitchell Brand Apple Products, the historic building was one of the first large apple processing facilities in Canada. Since 2007, it has been home to the Thornbury Village Cidery. “By this fall, our goal is to have the building open for tastings,” says Danielle Giroux, vice-president of marketing for Colio Winery, which purchased the cidery earlier this year. Renovation plans also include a large onsite hospitality centre with a patio, a new production facility for its craft brewery, Thornbury Craft Brewery, and a retail shop. Up until now, the facility wasn’t open to the public. Thornbury Premium Cider is the flagship product of Thornbury Village Cidery. “Our cider is carefully hand-crafted and each bottle contains about five local apples,” she explains. “Using the finest apples that the local orchards have to offer, it’s an easy drinking, light, crisp and refreshing cider. It has a very dry and pure taste and it’s not too sweet.” The cider pairs well with various foods, but is especially great with chicken, salmon, seafood, pork and various cheeses, she explains. This fall, Thornbury Village Cidery will release a spiced apple cider and towards the holidays, a cranberry apple cider will be available. Thornbury Village Cidery will be open to the public this fall (timing will depend on the renovation schedule) for tastings. See website or call for details. Making fun and approachable wines and ciders is Hoity Toity Cellars’ driving philosophy. “There’s nothing fancy about us,” explains Gary Fischer, who started the Mildmay-area cellar in 2010 with his wife, Diane. “We’re just hard-working farmers making artisan wines and craft ciders.” Along with red, white and dessert wines made from Bruce County cold climate grapes, Hoity Toity’s trend-setting ciders are made from local apples and other fruits. “We’ve made cider right from the beginning,” says Fischer. Depending upon the time of year, five to six ciders are on offer, ranging from dry to semisweet. Flavour varieties include apple, grape-apple-pear, pear, raspberry-apple and more. The most popular cider is 66 Pick Up. “We’ve won a few golds with it at international cider competitions,” quietly boasts Fischer. Why cider? “Hard cider is the hottest market going right now,” he explains. “The market is growing about 60 to 70-per-cent per year right now, eclipsing both the wine and craft brewing industry in terms of growth.” Along with daily complimentary tastings, the winery can host special events for up to 35 people. Impromptu tours can be accommodated, but calling ahead is recommended. “Visitors love the behindthe-scenes stuff,” chuckles the local wine and cider maker. “Even if you are just washing out a barrel, they want to know what’s going on.” Hoity Toity wines and ciders can be purchased from the on-site gift shop. Along with its boutique wines, Coffin Ridge’s Forbidden Fruit hard cider is worth a try. “Made from 100-per-cent Ontario apples, our artisanal cider is cold pressed and filtered to preserve the fresh, crisp, new harvest apple flavours,” says Todd. “Robust with a pleasantly intense finish and complex flavours of juicy apple and lemon, Forbidden Fruit embodies the essence of the autumn harvest.” Along with Forbidden Fruit, Coffin Ridge recently started doing seasonal small batch ciders, such as extra dry rhubarb, strawberry and wild mint and wildflower honey. “Each batch is interesting and unique,” says Todd. Enjoying the stunning local views is part of the Coffin Ridge experience. “We overlook the crystal blue water of Georgian Bay, and we’re in the shadow of the Niagara Escarpment – the setting is stunning,” explains Todd. “Our modern tasting room has massive windows so the outside really comes in.” Guests can also enjoy cross-country skiing, hiking or snowshoeing on 25 acres of trails. During the warmer months, visitors can enjoy a glass of wine or cider from the tasting room’s large outdoor deck. Coffin Ridge offers tours and can accommodate group functions for up to 75 people. Along with wines, Coffin Ridge’s Forbidden Fruit hard cider can be purchased at the winery’s tasting bar, online, and at select LCBO locations. Open seven days a week. The readers have spoken. The top businesses in the south Georgian Bay area, as chosen by readers of the Wasaga/Stayner Sun and the Collingwood Connection, were presented with the 2016 Readers’ Choice Awards.
