“O
ur home had seven bedrooms when we bought it,” says Joanne Weisbrod, speaking of her log-cabin residence that rests at the foot of the Blue Mountain ski resort. “There were four bedrooms upstairs and another three on the lower level. All these little rooms down there. With only two small children we simply didn’t need them all.” Eliminating two of the extra lower bedrooms was a challenge. Walls had to come down and they turned out to be supporting ones. Weisbrod didn’t want pillars breaking up the floorplan, so an engineered beam was needed for structural integrity. “That steel beam was huge,” she recalls. “ And it couldn’t possibly come down the narrow stairs. It was very tricky. They brought it in through a small window.”

You sink in and never get out of that thing. Joanne Weisbrod has nothing but glowing praise for the tradesmen who have done the work updating her property over the last 16 years, making her unique dwelling an exceptional family home that has become the entertaining hotspot for all. Built originally in 1987, the Weisbrods are only the third owners of the chalet. “It’s easy to understand why once you’re in it,” she says. “It’s just one of those houses that everyone loves. Very welcoming. A good energy.” The Weisbrod family joined the diaspora of suburban dwelling Torontonians heading northward back in 2001. Their primary residence at the time was in Toronto’s tawny Avenue Road and Lawrence area but they kept a weekend condo at Lighthouse Point to which they commuted for ski trips. “We learned to ski and just loved the area so much we started thinking about moving up permanently,” she says. “But we wanted to be closer to the mountain.” They began touring the listings until the day they opened the door to the Heritage Drive log home and Weisbrod said to her husband, “Oh my gosh, we have to have this house!” The one-acre property was originally an anchor lot, lived in by the builder, who had

the giant BC Fir logs trucked in from the west coast. The residence sits askew on the property accessed by a winding paved driveway lined with lush, mature maples. Blue Mountain Four Seasons did all of the landscaping and Elaine Kettelwell of Kettlewells designed the garden. “We planted 22 maple trees all the way up the driveway,” says Weisbrod. “It was a big job. But when the trees are changing it’s absolutely gorgeous. Canopying the driveway.” The second owner had already put on a family room addition and added a main floor powder room off it, so Weisbrod tackled the few jobs she felt were important. “We removed an anteroom at the front. Took the door out and made a window, adding a hutch and bench. Then laid black slate flooring.” Georgian Design Centre did the work. “They’re fabulous. I love them.” It was important to the homeowners that they retained the character of the original dwelling while updating with contemporary touches. “The front porch was all wood,” she explains. “We added the pillar and made it stone. Marcus from Blue Mountain Four Seasons did that work. They’ve done a lot of stuff for us. sign choices. “Our decor is expensive but not fussy,” says Weisbrod. “We wanted a house that you didn’t have to take your shoes off. As did the brass pendants over the kitchen island, the custom Lee Industries sofa in the family room, turned leg side chairs in the living room and the Lee counter height chairs parked at the soapstone-topped bar. “The most comfortable stools I have ever had,” exclaims Weisbrod. On the second level, each of the children’s bedrooms now hold built in desks. “We like to encourage homework,” she says. And the master suite recently experienced a closet makeover. The wood burning fireplace in the master was also clad with wood to modernize the look. “Stone remains underneath,” explains Weisbrod. “Just remove the wood and it is in its original state again.” At night the view from the bed is the ski hills of Blue Mountain Resort. “The hills are lit up until 11:30,” she says. “I got black out curtains installed. That’s how close we are.” Outside, the grounds of 118 Heritage Drive are a homeowner’s dream playground. “The kids have friends over. Walk to the village and back, have a swim and settle in front of the fire to roast marshmallows,” she says. Squire Johns provided the outdoor furniture, BBQ and kitchen and Rob Hobson of Hobson Masonry did the fireplace. “He is so fabulous at stonework,” Weisbrod reports. “He’s originally from England. My husband had him put clips on the inside of the fireplace so he can put in a rack and cook a roast beef on it.” A pool house nearby provides a changing room and storage and this last year they converted a shed in the back into a bunkie hangout for the kids. “They play games and guitar there,” says Weisbrod. The bunkie is supplied with electricity, heat, internet access and a fridge. Chris Hobbs did the construction.

It’s so pretty. We own a foot of land on the other side of the bridge and get quite a runoff in the spring from the mountain.” Garden Holistic maintains the lawns weekly. As empty nest syndrome soon approaches, the Weisbrods are finally planning to downsize.
“Our children grew up here.

John Garbe approached Chef Jeff Anderson for a business partnership. “We noted a need for an upscale seafood steakhouse in Collingwood,” said Anderson, executive chef at Gustav Chophouse and Bar. And that’s how the restaurant’s concept was created. To find out more about this fairly new restaurant I chatted with Chef Anderson.

How would you describe the atmosphere at the Gustav Chophouse? Gustav has a casual yet sophisticated style that is warm and inviting. We offer a fine dining quality menu but with a laidback atmosphere. Can you tell me more about your team in the kitchen? My sous-chef Lonnie Suneberg and I have 60 years of culinary experience combined. We always work together along with restaurant manager, Allison Raven, to change and update our menu every season. Usually I think of different ideas, we try them out together and choose the ones that are up to spec. I sense some international flavours from my menu. Can you tell me more about that? 36 | GoodLife Georgian Bay | Winter 2016 ■
You’ll find that I have an influence of different international cuisines in my menu with French background as my base but also Indian, Asian and Australian. When I was younger I travelled all around the world. My mother was a flight attendant for Air Canada. She loved to cook and had a lot of influences on me with ingredients and spices that she would bring back from different regions. I noticed you have a breakfast menu, which is different for a steakhouse. Are you open that early everyday? We do have a breakfast and brunch menu in addition to our lunch and dinner menus that are available everyday. Since we are affiliated with the Georgian Bay Hotel as the hotel’s main restaurant, we have to be open this early to serve hotel guests as well as general visitors.
What three-course meal would you order for me? I’d definitely recommend our French Onion Soup to start. It’s a favourite for many of our guests. For an appetizer, I would say either the Sesame Crusted Tuna Salad or the Heirloom Beet Salad, which has roasted beets with goat cheese and pistachios. Both are absolutely delicious. And you really can’t go wrong with our Surf and Turf, which is an Atlantic lobster tail and top sirloin with you choice of side. But if you were coming with a party of three or four I would highly recommend you try the Gustav Feast, it’s a delicious combination of our most popular steaks and seafood. To finish I would bring you our Flourless Chocolate Cake. It’s our most popular dessert. How do you cater to diners with special dietary needs? I like to say we’re a “yes restaurant”. I will do everything that I possibly can to accommodate dietary needs. As long as it’s brought to our wait staff’s attention we can work around guest’s needs. For example, we have three vegan menu items that are possible to make, as well as gluten free alternatives. We also have a kid’s menu for our little guests. What about private events? Do you have any designated area? Within the restaurant space, we can facilitate up to 200 guests if the whole space was rented out. Since we are affiliated with the hotel we also provide the catering for their event spaces. Through the hotel, the ban-

flourless chocolate cake 4oz.fine quality bittersweet chocolate 1/2 cup unsalted butter 3/4 cups sugar 3 large eggs 1/2 cup unsweetened cocoa powder
Preparation 1. Preheat oven to 375*F and butter and 8 inch round baking pan. Line bottom with a round of parchment paper. 2. Chop chocolate into small pieces. In a double boiler or metal bowl set over a saucepan of barely simmering water melt chocolate with butter stirring until smooth. Remove from heat and wisk sugar into chocolate mixture. Add eggs and wisk well. Sift cocoa powder over chocolate mixture and wisk until smooth. Pour batter into baking pan and bake for 25 minutes or until top has formed a crust. Cool cake for 5 minutes invert onto serving plate. Dust with iceing sugar and cocoa powder. Cake keeps for 1 week in an airtight container.

How have local diners reacted to your restaurant? We’ve been around since winter 2015. It was a slow start but once the locals found out about this place it’s been quite steady. Our “Buck-ashuck” oysters on Friday nights are quite popular. We also have live music from Wednesday to Saturday nights. We bring in different local musicians from Collingwood and its surrounding area. Just to name a couple, we’ve had Aaron Garner and Jason Redman. Any interesting future plans? We’ll be changing to our winter menu soon. There won’t be too many changes to the major

items but we’ll be adding more of the season’s flavours. I would also like to work more on the cooking classes that we offer. They are customized group cooking classes that are very interactive. The group picks something from our menu that they’d like to learn how to make. We charge $50 a head and we have to have a minimum of 10 people. You’ve got the attention of thousands of local diners, anything else you’d like to add? Right now we have the Chefferylicious menu featured. It’s a play on the “Winterlicious” idea. We have a pre-fixed 2-course meal. For appetizer, we have either the Forest Mushroom Soup or the Autumn Salad. For entrée, you have a choice between St. Tropez Chicken, Black and Blue Sirloin or the Braised Lamb Shank. All choices are so delicious and only featured until the Holidays. It’s definitely worth trying!

During the harvest season, Azzurra’s chef, Leona Nyman, goes through bushels of fresh local apples. “We love cooking with apples and serve up plenty of delicious dishes,” says the chef of the Italian restaurant located in Collingwood. Azzurra is part of the Apple Pie Trail (www.applepietrail.com), a guide to locally produced apple edibles in and around The Blue Mountains. The Apple Pie Trail includes wineries, art galleries, a cheese gallery, museums, restaurants, cafes, orchards and more. “Our featured Apple Pie Trail item is our

sweet potato and apple gnocchi,” explains the chef, who honed her culinary skills in Parma, Italy and at the Four Seasons and Bonjour Brioche in Toronto before taking over the Collingwood kitchen eight years ago. “We also serve an apple and pear crumble, a pecan apple carrot cake, and a pork dish with maple apple chutney and more.” Apples offer culinary versatility because “they are so flavourful and add a natural sweetness to everything,” she explains. Her favourite varieties are Honey Crisp, Pink Lady, Gala and Cortland.
Along with apple dishes, visitors to the bustling, yet relaxed, contemporary Italian eatery will be tempted by various farm to table inspired menu items. “We cook everything from scratch with as many local ingredients as possible,” she explains. “I grew up on a farm, so it’s important for me to use seasonal, fresh ingredients grown or produced by our neighbours. 1-1/2 lbs Yukon Gold potatoes 1-1/2 lbs sweet potatoes 3 egg yolks 1 lb (454 grams) all-purpose flour Salt, to taste
1-1/2 Tbsp butter 1-1/2 Tbsp canola oil 1/8 cup double smoked bacon, finely diced 24 Brussel sprouts, quartered 1/8 cup apple, finely diced 4 leaves fresh sage Salt, to taste Maple Syrup, to taste Parmigiana Reggano, shaved and to taste
PREPARATION: On baking sheet, roast both types of potatoes (whole with skins on) at 350F until soft in the middle. Remove from oven and peel. Rice Yukon Gold potatoes with ricer while still warm, and puree sweet potatoes until very smooth with food processor. Mix potatoes together, add eggs and stir until well combined. Stir in flour until well combined, add salt to taste. Turn out onto floured surface. With floured hands, pat mixture into a ball and cut into quarters with a floured knife or pastry cutter. Form one quarter into a short log, then roll into a rope about 1/2” thick. Cut rope into gnocchi dumplings. Roll in flour. Continue until finished. Flash blanch gnocchi in boiling salted water; when floating for 30 seconds remove and cool completely on oiled sheet. In hot sauté pan, add butter and canola oil, then bacon. When fat begins to render, add Brussel sprouts and sauté for 5 minutes, add gnocchi. Continue to sauté, add sage, salt and continue until gnocchi has a roasted colour. Add apples and maple syrup, sauté until crisp-tender, 2 minutes. Put into bowls and top with cheese. Serves 8.

eruvian artist Cecilia Spihlmann is an admirer of Mark Rothko’s abstract expressionism. A giant of the art world, Rothko’s work was heavily influenced by the concepts of mythology and spirituality. We know him largely for his memorable colour blocks, but Rothko didn’t start out that way. His early work was peppered with religious iconography. For Spihlmann, the artistic journey has moved in the exact opposite direction. Starting out as a graphic artist she spent her early years as an acrylics artist exploring geometrical forms with a graphic structure before suddenly shifting to religious iconography. “It just happened,” insists Spihlmann. “It wasn’t a deliberate act at all.” Her work began to migrate from abstracts to figures a few months ago, when the barely discernable image of a face emerged unexpectedly from the canvas. It was the beginning of her foray into the realm of the religious iconography which now transfixes her. Spihlmann thinks the change has
something to do with being at a place of great peace in her life. After years of traveling, upheaval and familial changes she finds herself settled and content. The serenity is changing her work. “As an immigrant you have to work two jobs to get by,” says Spihlmann, “But now, I am freer. I’m happy. It’s allowed my spiritual side to come out.” Spihlmann came to Canada with her family from Lima, Peru in 2004, where she had worked for the global advertising firm of McCann Erikson. “Canada was offering Visas,” Spihlmann remembers. “And Lima was experiencing tough times, so we came.” Born and raised Catholic in her home country, her days there were filled with lively cultural activities and exposure to religious art, a revered art form in Peruvian culture. “I was always spiritual but I had left that part of me behind after I immigrated and struggled with the paces of life.” Her first years in Canada were lived in Oakville, followed by a period in Toronto. She eventually moved to Collingwood with her partner and set up a studio in the light-filled mezzanine of The Press

Gallery, where she now paints five days a week.” “The art was in me from the moment I was born,” says Spihlmann. “I liked colour. I liked creating with my hands. When I approach the canvas I feel whole.” Aside from Rothko, Spihlmann’s other influences include celebrated Peruvian artist Ramiro Llona, the recipient of a Fullbright Scholarship, who is highly recognized in both the U.S. and Latin America. Spihlmann feels a deep kinship with Llona and not just because of their shared roots. They both paint from the perspective of linear geometry and explore what Llona calls ‘inner landscapes.’ “When I paint, it’s me,” says Spihlmann. “It’s totally my own self coming out without any repression.” Today Spihlmann is firmly rooted in Canada, but still travels frequently to Lima with rolled canvasses of her works for her many exhibits there. Her most recent religious works of Saint Rose of Lima, Virgin of the Bread and the monk,
Saint Martin de Porres, are less likely to make the trip, however. “I’ve been expanding into mixed media, using textiles, gold leaf and even coco plant liners,” she says. “There’s a 3D dimension to them. You can’t roll these canvasses, and freight to ship them to Peru is over $9000.” Although Spihlmann sometimes senses that she is now painting for a different culture, that hasn’t stopped her enthusiasm in prevailing. “In Peru people understand it,” explains Spihlmann. “But some here say, just paint the abstracts because they sell so well.” The idea of painting merely to sell goes against her artistic spirit. “You should honor yourself and your expression,” she says. “Otherwise you’re just faking it.” “People hang paintings to decorate their walls, for color. I’m asking, why not hang paintings that have more than a decorative purpose. More of a selfmeaning that enlightens. Every time I see them, they enlighten my life.”

etired designer Michelle Crowley developed her cozy post and beam Cape Cod home from the ground up... literally. “I took a piece of rock from Georgian Bay,” she explains. “Then hunted around to find a slab that matched it for our granite countertops.”
Every aspect of her restful 4700-square-foot six-bedroom Collingwood home was planned with this deliberateness. From the canary yellow walls on the lower level that take advantage of a southwestern exposure to brighten the room, to the double doors leading out from the library to her secret rock garden, to the private den off the master suite which provides a quick escape when needed. “If the boys want to watch The Walking Dead. I can still watch Downton Abbey,” she says happily. She and her husband, musician Kerry Crawford, chose a Cape-styled home because of their deep love of New England architecture. “We used to go to Kennebunkport all the time,” says Crowley about their many road adventures to the East Coast. “We love the houses in Maine.” They also wanted their new quarters to have a bit of the character of their former Parry Sound cottage, adding a gabled roof with cedar shakes and board and batten siding. Timberpeg, the premiere artisans of post and beam construction in New Hampshire, was their choice of fabricator.

Timberpeg assisted in the design, then cut, milled and assembled the structure in New Hampshire before disassembling it again, packing it and shipping it to Ontario. “What you get essentially is a barn,” says Michelle. “The interior is all up to you.” The couple hired contractors Carl McCoy and Pat Coulter for the excavation, founda-

The couple wanted the tongue-and-groove walls set behind the posts and beams. This meant that all the inner workings of the home that are normally hidden behind drywall (wiring, heating, plumbing) would have to be done on the outside of those walls. Each decision, from the placement of lighting fixtures and heating vents to the sort of window framing that would be installed, had to be made mindfully. Once built, any changes could create permanent visual blemishes. Michelle Crowley brought the eye of a seasoned designer to the job. The former owner of Pack Rat, a Toronto design and furnishings boutique at Yonge and Rosedale, Crowley knows a few things about how to create atmosphere. “I went through every single room mentally,” she says. “What we wanted, from ceiling

to floor. That took a long time.” In the dining room, for instance, the ceilings are only eight feet high, which helps create a more intimate dining setting. The great room right next to it enjoys soaring 27 foot vaulted ceilings. Flooded with light from a wall of windows, it delivers a grand, dramatic impact, buffered by the earthy elements of a Maxwell river stone fireplace and the many downhome accessories Crowley has used. Dressing the mantle and side tables are models of sail and lobster boats handcrafted by folk artists in Quebec. Twig lamps illuminate sofa tables. Sofas and armchairs are all custom designed by Crowley herself and slipcovered with light fabrics for the summer months, then changed over to darker upholstery for the winter. “All the slipcovers come off Nov. 1, says Crowley. “The colour underneath is tobacco, so it’s warmer for the winter months.” Beneath the yellow and white cushion covers there’s a cheery red and white weathervane motif. Crowley loves to source unique items, transforming them into useful objects as she unveils what she calls her funky casual chic style. She found an obelisk-shaped object in an antique store that came out of the corporate office of an oil company and made it into a lamp. Her

And she placed roomy, rustic twig chairs from The La Lune Collection in the living-room instead of outside on the patio deck. The overall effect is a delicious banquet of artistically inspirational comfort. “We live in our whole house and it’s very casual,” says Crowley. “We live everywhere. I’m not a person who says, don’t sit there.” Keeping that mantra in mind, Crowley designed a long entry foyer that looks like an extended mudroom with slate flooring running from end to end. Plenty of hooks are available to hang coats and gear and at the far end of the hall is the two-piece powder room. “I was just being practical,” she explains. “Life is different here from downtown life. More casual. People coming in a door and having a little three by three-foot section to stand on just doesn’t work. You come in from hiking all muddy or you’d have six kids piling in from snowboarding. This way, there’s plenty of room, and no need to take off boots if they have to use the washroom quickly. So what if they get a little water on the stone? You don’t worry. Keep your life as stress-free as possible.” There’s another reason Crowley chose stone floors at entrances and it has to do with passive solar heating. While the home utilizes forced-air heating, it also benefits from a measure of passive solar heating due to the post-and-beam construction. “When the sun streams in the windows, you get ambient heat that warms the timbers,” explains Crowley. “They hold the heat, as do stone floors. Drywall holds heat for about a nano second in comparison.” The exterior of her charming home enjoyed just as much attention to detail. An avid gardener, Crowley wanted an English garden. “You start a garden and you see how

it’s going, she says. “Where’s the light? You take things out, move things. It’s not a hodge podge, but it’s casual. I have things that come up from May to September now. There’s something always blooming.” There was a single cedar on the property when the family moved in. Now there are over 330 trees and bushes. “I placed every shrub and tree myself,” says Crowley. Bates Sand and Gravel, who did all the landscaping, planted them. “Our maples were 15 feet when we put them in. Now, they’re sixty feet high.” Carl McCoy built the lovely gazebo at the back of the pool and all the stairs were done by Parklawn Landscaping, which also did the driveway. But when it came to the outdoor furniture, it was Crowley’s design skills that kicked in again. “All the cape cod chairs, lounges and umbrellas were designed by me,” says Crowley, who found a few old cape cod chairs at a junk store, took them apart and examined their structure before redesigning exactly what she wanted. “I took my new design prototype to a carpenter. He’d build it, then I would try it out and make adjustments as he worked on it.” She wanted just the right size paddle arms and wide seat pans large enough to curl up in. An arch was also put in all the chaises. “So your legs don’t go numb after a while,” she explains. When she finally landed on the exact fit, thick cushions were custom ordered from her manufacturer in New Jersey and covered with Sunbrella fabric. “Cottage life should be comfy,” she says.

Holiday essentials By Robin LeBlanc One of the fantastic things about beer is how varying it can be. We’ve reached a point now where there is a perfect beer for every shade of fancy you may have and there is no other season that showcases that better than winter. There’s the dark and boozy, the light and crisp, and even beers that are right in between those two. Some are good for sharing, and some are perfect for those times where you just need a break from all the festivities the season brings. So with that, here are a few selections that are essential to making your holiday season a comfortable and joyous one.
Shinnicked Stout Muskoka Brewery ABV: 5.2% LCBO#484972 (single), 474361 (Survival Pack) For the true Muskoka winter experience, this recent release from Muskoka Brewery in Bracebridge is made with Lumberjack medium roast coffee from Muskoka Roastery. Where some stouts go big, bold, and boozy, Shinnicked (meaning “to be numbed or paralysed with cold”) runs on the lighter side of things in regards to mouthfeel, with hints of chocolate and a beautiful well-roasted coffee character that creates a warming feeling that spreads throughout your body. This beer is perfect for when you’re just coming indoors after shovelling the drive or running an errand. Stouts and other dark beers are great, but if you’re in a piping hot kitchen you want something cold and crisp to drink. Enter Clutch Pale Ale from Redline Brewery. With bright hits of grapefruit, orange, peach, and pine in the flavours, this favourite from Barrie’s youngest brewery is several steps above the typical pale ale and is sure to quench your thirst. Winter Weiss Muskoka Brewery ABV: 5% LCBO#474361 (Survival Pack) Joining Shinnicked Stout in Muskoka Brewery’s annual Winter Survival Pack is a dark beer for those who like their tastes a little on the lighter side. Acting as the winter sibling to the much-loved Summer Weiss, Winter Weiss provides the flavours of banana and clove with a light mouthfeel, but adds a delicate, slightly warming note of warm toffee. This beer is perfect in those times when a stout seems like too much and a lighter beer just won’t do.

1 cup buttermilk 1 tbsp vegetable oil or butter, melted 1/2 tsp vanilla 2 cups small diced peeled Ontario apples (such as Empire or Crispin) 1/2 cup icing sugar, sifted 1. In large saucepan or deep-fryer, heat oil over medium-high heat to about 360°F on candy thermometer. Reduce heat when temperature is reached. (If not ready to start frying, remove pot from stove.) 2. In medium bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg and cloves. 3. In large bowl, whisk together egg, buttermilk, 1 tbsp oil and vanilla. Stir in apples. Stir in flour mixture just until moistened. 4. Using small ice cream scoop or spoons, gently drop about 1 tbsp of batter into hot oil. Cook about seven fritters at a time, for four minutes, or until lightly browned. If needed, touch gently on top to flip. With slotted spoon, remove to paper towel-lined plate. Cut one fritter open to check if cooked through and adjust time or temperature. After draining about one minute, dust with icing sugar. GoodLifeMagazine.ca | 57

-recipe courtesy Foodland Ontario; ontario.ca/foodland This warm cake has the rich flavours of gingerbread on top of apples and a caramel sauce. You could also use pears in place of apples. Cake: 4 Ontario apples, peeled and very thinly sliced 2-1/2 cups all-purpose flour 1-1/4 tsp baking soda 1-1/2 tsp ground ginger 1 tsp ground cinnamon 1/2 tsp each salt and ground nutmeg 1/4 tsp each ground allspice and ground cloves 1 cup fancy molasses 3/4 cup water 1/2 cup unsalted butter, at room temperature 1/2 cup granulated sugar 1 Ontario egg 3/4 cup lightly packed brown sugar, preferably dark Topping: 1-1/3 cups hot water 1/4 cup unsalted butter, melted Whipped cream and ground nutmeg (optional) 1. Lightly butter a 13- x 9-inch baking dish. Scatter apples evenly in dish. 2. In medium bowl, whisk flour with baking soda, ginger, cinnamon, salt, nutmeg, allspice and cloves. In large measuring cup, whisk molasses with water. 3. In large bowl, using an electric mixer, beat butter with sugar until creamy. Beat in egg. On medium speed, beat in flour in three additions, alternately with molasses mixture, ending with flour mixture. Scrape down sides as needed. Spoon over apples; gently smooth to cover. Sprinkle with brown sugar. In large measuring cup, stir hot water with butter. Slowly pour over cake; but don’t stir it in. Bake in 350°F oven for 45 to 50 minutes or until a cake tester comes out clean. Let stand on wire rack 10 minutes before serving. Top with whipped cream and sprinkle with nutmeg, if using.

Bake in 350°F (180°C) oven for 45 to 50 minutes or until tester inserted in centre comes out clean. Let cool in pan on rack for 15 minutes. Turn out onto rack to cool completely.

Carrot-Walnut: Substitute 1 cup (250 mL) shredded Ontario Carrots for apples. Mini-Loaves: Use three approximately 5- x 3-inch (12 x 8 cm) loaf pans and bake 20 to 25 minutes. Tip: Wrap in plastic wrap and store at room temperature for up to 3 days. Or, place into freezersafe bags and freeze up to 3 months.

Located in the upstairs section of the grocery store, the informal TV style kitchen studio, which can seat about 30 people, was dressed up for the evening with classroom tables adorned with white tablecloths, candles and flowers. PREPARATION: 1. Place butter, icing sugar and vanilla in stand mixer fitted with paddle attachment (or bowl with electric mixer). Beat on medium-high speed 2 to 3 minutes or until creamy and light in colour. In separate bowl, whisk together flour, cornstarch and salt; add half to butter mixture and beat on low speed just until combined. Add remaining flour mixture; beat just until combined. Beat in chocolate. 2. Divide dough in half; place each half on a piece of plastic wrap; using plastic wrap, roll each into a tight log about 6 inches long. Chill 1 hour or until firm.

Bake in centre of oven 15 to 18 minutes or until light golden at edges and baked through. Cool on sheets on rack. Repeat with remaining dough. Discard any remaining granulated sugar. MAKE-AHEAD: Wrapped logs can be refrigerated for up to 3 days before slicing and baking.

n 2011, the Canadian census reported the Baby Boom Generation comprised over one-quarter of
Canada’s population (27per cent). By July 2015, 18.2 per cent of the nation’s population had already reached age 65. A tsunami of aging Canadians will soon sweep the land and age-appropriate housing is of major concern. Universal Design is the newest concept for home design that addresses the needs of homeowners’ diminishing mobility. Design adjustments such as single floor living, curbless walkin showers with stalls that can accommodate a shower »seat, roomy passageways for wheelchair and walker access, easy-grip handles in kitchens and rollout cabinetry are just some of the features that remedy these challenges.

For a modest monthly fee, members of Balmoral will have the services of a medical concierge (nurse practitioner) who acts as their personal liaison with their physician. “The medical concierge will make medical appointments, interpret medical and prescription information, arrange transportation and look after any services they need,” says Vincent. “They’ll also check in with members each month about their overall health and condition, reviewing meds and helping them to maintain their schedules.” According to Vincent, statistics show a vast number of seniors simply cease taking their medications after a surprisingly brief amount of time and this kind of oversight is critical to the sustainability of ongoing care. If a family member is out of town they are able to contact the concierge to ask that they check in on their relative while they’re away. The medical concierge is available 24/7 every day of the year and is even available to members if they are traveling if issues arise in a foreign destination. In addition to the medical concierge and onsite health facility, Balmoral will house an 8,000-square-foot recreation centre and club house with a swimming pool, pub, games room, cardio and weight training room, lounge, banquet facilities and a demonstration kitchen. Here residents will commune, exercise and learn, all in the spirit of developing friendships and maintaining physical and mental fitness. There’s also a theatre, chapel and a greenhouse/planting room for those with a green thumb. When Vincent chose the site for The Balmoral Village, he wanted it to be situated right in the centre of things to keep residents active. MTCO Development Group was chosen as the developer and operator of the retirement residence and Royalton Homes, a local niche builder well-known to the Georgian Triangle area, (as the builder of Monterra Ridge in The Blue Mountains and several developments around The Cranberry Golf Course,) will be the builder of the residences. Some great rooms have cathedral ceilings and many basements have walkouts to the environmentally protected forest right behind the residences. The inclines integrated into the exterior of the homes’ design are also graduated. “We have rain and snow so the homes can’t just be flat on the ground,” says Chaaya. “So there’s a small rise at the edge of the
driveway, then another a bit of the way in, spreading the steps out so residents don’t have to climb a huge bank of stairs all at once.” Developer Thomas Vincent originally planned a three-phase rollout for Balmoral Village, but the residences have been selling so fast, they’ve eliminated the model homes and combined the third phase with the second. Clearly, the demand for this new type of housing is growing. In fact, so convinced about the value of the project in maintaining a healthy vigorous lifestyle, Vincent intends to have a unit in Balmoral for his own retirement. “I’m putting my money where my mouth is,” he says.

It’s mid-afternoon as the flight nears
my final destination. The lush green island of St. Kitts comes into view, nestled like an emerald jewel in the sea of clear blue water that surrounds it. St.Kitts is one of the Leeward Islands, one of the dots of land in a string that separates the Caribbean Sea from the Atlantic Ocean. It’s home to about 35,000 Kittitians, as they are known, on its 65 square miles, served by an international airport near the main city of Basseterre. Robert L. Bradshaw International Airport is serviced by the usual commercial carriers, but today I’ll take advantage of something special this tiny island has to offer.

travel|St. Kitts The usual hussle ensues to leave the plane as the hatch is opened and the first rush of hot, humid air enters the cabin. It’s a full flight and there will be a line to get through customs. As I descend the stairs into the sunlight, sure enough, there is the usual line of passengers moving at their swiftest pace to be near the front of the line. Many are peering over their shoulders as they pass. A Porsche has pulled up right next to the plane’s stairs, the smartly dressed driver waiting for his passenger to appear on the tarmac. I smile. He waits for me. This is one of the newest services on offer in St. Kitts: The YU Lounge. It’s a private air terminal, tucked just next door to the main terminal, servicing private jets, their owners and passengers. It is a service also available to those arriving on commercial flights, with some hotels and resorts incorporating the service into the packages offered to their guests. I am on my way to one of the island’s newest resorts – Belle Mont Farm – and they offer just such an inclusion. The driver greets me by name, takes my luggage and passport, and in seconds I am in the backseat of a luxury car being whisked the few hundred yards from the main terminal to the YU Lounge. In moments, I am settled into the private terminal’s lounge, sipping a glass of Champagne, as the YU Lounge’s staff takes care of my documents and luggage. Certainly, the swiftest, most civilized arrival in any country I have visited. The lounge itself is worth entering the country this way. Elegant, comfortable, equipped with private washrooms, showers, a pool, ample space to relax, work, wait and experience the service of the well-trained staff. It seems all too soon (barely one glass of Champagne time) until my passport is returned and I’m off to my home for the next few days: Belle Mont Farm. I’ve heard a lot about this new hotel before I arrive. The entire project is based around a model of sustainability; not just environmentally, but in every possible way. Care has been taken in every detail: land, water management, agriculture and food sourcing, training and education of locals to work on the property and attention to how the entire project fits into the landscape and values of St.Kitts itself. “My vision is to bring together community and culture, mindful conservation of natural resources, along with rewarding activities and learning opportunities,” says founder Val Kempadoo. “This means we can offer an unforgettable experience, whilebringing lasting,

life-changing benefits to the local people and economy.” The master plan includes a golf course – something that seems to go against all practices of sustainability – but the project is being touted as the first “edible golf course,” one that will take advantage of natural plants and topography, maintaining many of the existing fruit trees and edible plants. Designed by Ian Woosnam, every hole of the par 71, 18-hole course features enchanting views across the sea. The course weaves through tropical farmland and fruit orchards, transforming natural obstacles into challenging opportunities for all skills levels, while remaining true to the vision of sustainability. Walking is encouraged, and caddies from the local golf academy will share their tips on the course – including where the ripest, juiciest fruit is ready to pick and eat in the shade of a wild calabash tree. The course is scheduled to open in mid-December. Belle Mont Farm is about a 30-minute drive from the airport, just enough time to get a good glimpse at this lush green landscape, mountainous, winding and flanked by the sea. As the twisting road to the property opens up, there is what I have been waiting for. A resort discreetly tucked into the tropical forest. “The Potting Shed” is the main point of arrival and meeting place, from here staff take guests via golf cart further up the hillside on a winding trail through thick vegetation, slowing down for the occasional monkey stopped for a snack. The guesthouses are charming cottagestyle bungalows dotted along the hillside, all facing out to the view of the ocean. All of the accommodations are designed by the award-winning architect, Bill Bensley. They have been crafted in harmony with the natural landscape, boasting views of the ocean and forest that never fail to impress. Behind my guesthouse are the verdant green slopes of Mount Liamuiga, and from the front verandah, across my private pool is the Caribbean Sea. One-bedroom guesthouses at Belle Mont Farm are dotted around the Greathouse, where you’ll find the main pool, restaurant, bar and the Lookout, a gorgeously designed space with the very best views. These private cottages are meant to wrap guests in comfort, privacy and relaxation. This seems like the perfect place to truly escape and spend every minute relaxing, but if you are feeling adventurous, the forest and farm are waiting for you to explore. Start the day with an early morning nature walk, and learn about natural plants and traditions while getting in your workout before breakfast. The long winding trail under the lush forest canopy is an easy stroll going down, but you’ll have to work a bit to get back up to the main house for breakfast. Various walks and hikes can be arranged, as well as yoga classes and spa treatments. Farm-to-table enthusiasts will want to take advantage of participating in the daily vegetable harvest, and explore the property’s expansive plantings and groves. There are miles of fertile farmland, tropical forest, cane fields and fruit trees to explore. I became a Chiropodist in 1987. I opened and ran hospital based clinics in Peterborough, Southhampton, Collingwood and Huntsville until 2010. I recently came out of semi-retirement to open a permanent location and am thrilled so many of my original patients have sought me out. I am a conservative, easy-going, friendly, hands-on care giver. Dr. Anna Dionisio graduated with Honours from the University of Waterloo in 2009 where she obtained her Doctor of Optometry degree. She grew up in Owen Sound and always knew she wanted to live close to Georgian Bay. In 2010 she and her husband Darrell moved to Wasaga Beach where Dr. Dionisio became the full-time Eye care Professional at the Georgian Bay Optometry Clinic (GBOC). At the age of 7, Dr. Dionisio was given her first pair of glasses. Dr. Peter Wilson (Dr. Pete) has rooted himself in the community and is an active member of the Wasaga Beach Rotary Club. Pete lives in Wasaga Beach with his spouse, Tanya, and their daughter, Madison. He is involved in a multitude of recreational sports. He is also an avid snowboarder and has also joined Dr. Sarah’s now infamous running club. Dr. Pete is a musculoskeletal specialist treating many conditions related to the muscles, joints, ligaments and nerves.
