Build a Better Burger

What takes a hamburger from ordinary to OMG? Cam Dyer, owner, founder and chef of TheSmoke (thesmoke.ca) in Collingwood, shares his secrets. 1. THE BUN has to be up to the task. “It has to be soft and hold whatever juiciness is there without falling apart,” Dyer says. “It should be the same diameter as the meat, so that first bite isn’t just all bun.” 2. THE MEAT should have enough fat, so don’t use extra lean. “Use lean or medium, or a combination of those two,” he says, “so you get that juiciness.” 3. THE CONDIMENTS you choose are key. “In my opinion, mayonnaise is part of a burger — it has to be,” Dyer says. Four veggies — lettuce, fresh tomato, red onion and pickles (can be on the side) — are also recommended. Beyond that, it’s a matter of your own tastes, so consider cheese, bacon, jalapeños and the like. 4. THE TEMPERATURE at which you cook your burger is also important. You want very high heat, Dyer says, to really sear the meat and hold in the juices. Then salt and pepper your patty as you cook it…and bon appétit.

hen MacPherson Master Builders opened their Mountain Modern Collection of homes at Windrose Estates in Collingwood, prospective homebuyers lined up early to see the Adelaide model. The modern bungalow with rustic chalet roots and panoramic views of Osler Bluff and the Escarpment, was an immediate hit. “We had great feedback on the whole Modern Mountain Collection, but there was a high demand for bungalows so we offered the Adelaide,” says MacPherson interior designer Michelle Pasquale, designer of this stunning modern version of a traditional slopeside chalet. “The Adelaide is modern in many ways, number one being the flatter roof

line. The overall exterior look is quite contemporary with black-framed windows and new siding colours in darker tones. I handpicked the natural stones at the quarry with the representative there. Coming up with this blend was a lot of fun.” Located at 1 Windrose Valley Blvd. at Sixth Street near Collingwood, the luxuriously upgraded Adelaide model home is currently listed for sale. Room. A walk out from the dining area brings everyone onto the large deck running across the back of the home. Lofty ceilings, light hued engineered oak floors, tall windows and a neutral décor palette used throughout give the house an airy, spacious feel. Clean-lined 8 ft. doors balance the 12 ft. ceilings that are in most rooms. In the Great Room, a 17 ft. ceiling with high gloss black beams is reminiscent of a vintage chalet. “The ceilings are fantastic,” says Pasquale, who has worked at MacPherson for 15 years. “Since we have a flatter roofline with this home, we don’t have the traditional vaulted ceiling. What I did to make it more modern was put in painted beams as opposed to rustic wood beams. They give the Great Room a modern twist, but with that rustic chalet feeling.” Another innovation in the three-bedroom home is the use of a double master. There are two master bedrooms with 4-piece ensuites and walk-in closets. A master suite features a sitting area with a flat screen television and double-sided gas fireplace in a stacked stone feature wall. Having a second master bedroom provides a private getaway for guests. “Based on feedback and our market research, there was a high demand for a double master,” says Pasquale. “There were three bedrooms in the standard plan. What I did to create a second master was take out the two bedrooms that were the same wing and turn them into one master bedroom. The basement is unfinished, except for a foyer, so the homeowner can put as many bedrooms downstairs as they wish.”

The white quartz counters, marbled mosaic backsplash and the island’s leathered granite use natural materials in a contemporary way. A butcher-block breakfast bar extension at the island is also a mix of both styles. “The butcher block is removable, so you can either pull it away from the island to give extra seating or use it for entertaining,” Pasquale explains. “It’s butcher block but stained dark to give you a little bit more of that modern feel. However, since butcher block is a natural wood product, you get a rustic feel at the same time.” Two-toned colour blocking was also used for the kitchen’s grey and white cabinets. Beside the double ovens, the built-in refrigerator is hidden by cabinetry. The island holds a dishwasher and 24 | GoodLife Georgian Bay Summer 2018

prep sink. Near the kitchen, a short set of stairs leads from the three-car garage to the laundry room and then to the main floor beyond. In the Great Room, the fireplace’s soaring marble surround echoes the look of traditional granite hearths. “The marble is natural but is rectified, meaning it has been textured,” says Pasquale. “It is actually wavy, a cool texture that adds dimension. Again, you have a natural element with a modern look. The mantle matches the ceiling beams. The wall paint colour is called ‘Collingwood’ which is entirely fitting. With a neutral palette, people can easily envision how they could make the house their own.” As well as making the lovely outdoor scenery part of the indoor decor, the home’s windows suit the modern style of these homes offered by MacPherson. Many of the tall, and sometimes transom-topped, windows were custom made. Even the front door is designed with sidelights and a transom window to illuminate the entry foyer while letting the outdoors in. “The goal was to optimize the view of the

VS: That’s right. We produce high-quality products that are not found in traditional retail stores. Before we opened Occasions, only chefs were able to buy these items. Now we are giving consumers access to these chef-inspired products.

Occasions Food Hall is a one-stop shop for entertaining needs. Can you give me a rundown of what’s on offer? Victor Strano: We specialize in selling handcrafted hors d’oeuvres and appetizers, mini dessert bites, handmade imported pastas and all-natural sauces from Italy, selected fall and summer truffle oils, salts and tapenades. For your home-entertaining needs, at the cottage or chalet, we also have fully prepared meats, skewered and grilled, as well as unique side dishes and other culinary delights. You will also find a selection of fair trade cocoa chocolates for your wine tastings, non-GMO snacks and non-alcoholic mixers and sparkling beverages. We also offer a variety of gourmet brunch items. Everything is frozen or dry. The shop has a very clean, minimalist design complete with white walls, marble and

wooden floors, stunning display stands, modern white freezers, and barn board accents. Can you expand upon the decor? VS: The goal was to have an upscale, clean and uncluttered look. We wanted customers to be able to see our food and not be overwhelmed with choices. We are really happy with our display cases, which were made by a local artisan using reclaimed wood. Peter Keresteci: We wanted the space to look as good as the food we are selling. Occasions Food Hall is your first retail space, but it’s just one part of your much larger food service company, Better Food Concepts. Based out of Mississauga, Better Food Concepts produces and sells quality food products for hotels, private clubs, casinos, convention centres, restaurants and more.

Why did you choose Collingwood to open a retail space? VS: Even though our head office is in Mississauga, we all reside here now full time. It’s a familiar story — leaving the city and moving to Collingwood. We love it up here and have spent years enjoying the area as weekend residents before settling here for good. Opening something close to home made sense. It’s a labour of love for us. Why retail? PK: We had been tossing the retail idea around for a few years because we just felt there was a market for it, especially in Collingwood. Part of the reason we opened is because whenever we entertain, people always ask us: “Where did you get this food? We love it! How can we get it?” One of your tag lines is “Visit us and entertain like a chef.” Can you expand on that? VS: We take the hard work out of entertaining at home. The gluten-free pastry sheets are sold at the store. 3 cups assorted berries 1/2 tbsp lemon juice 1/2 tsp salt 1/4 cup unsalted butter, cubed 3/4 cup packed light brown sugar 1 tsp vanilla extract Wheat-less Gourmet gluten-free pastry sheets, thawed 2 eggs beaten for egg wash

Preheat oven to 375°F. Grease a 9x 6-inch rectangular or 8-inch round baking dish. In a bowl, combine berries, lemon juice, salt, brown sugar, butter and vanilla. Place berry mixture in the baking pan. Roll out the gluten-free pastry sheets. Cover the berries in the baking pan with pastry sheets and trim excess pastry, or cut pastry into strips to make a lattice over the berry mix. Brush pastry with beaten eggs. T

his Collingwood company likes to think outside the box — the pasta box, that is. Launched in 2016, Chicapea has made headlines for its innovative product: a nutritious pasta made exclusively from chickpeas and lentils. Today, variations of the pasta are sold in more than 3,000 stores across North America. With the company’s rapid success, the team at Chickapea, led by CEO and founder Shelby Taylor, decided to expand their social responsibility efforts. “We’ve always supported local food banks and charities, and will continue to do so, but now we’re taking it to the next level by partnering with WE Charity,” the 33-year-old entrepreneur explains. WE Charity is part of WE, a family of organizations that makes doing good, doable.

With the goal of providing healthy school lunches to children in need, Chickapea will donate 3 cents from the sale of every package of Chickapea Pasta and Chickapea Mac & Cheese to WE’s unique sustainable development model, WE Villages, made up of five pillars of impact crucial to community development, with proceeds going to the food pillar, to support a school nutrition program in the WE Village of Los Rios. “Between July and December 2018, we have set a goal to feed 12 classrooms for a full year, and hope to quadruple this in 2019. This year, we’re focusing our efforts on Los Rios in Ecuador,” she says. “The school we picked could definitely use our help.” Taylor and her staff, which includes eight full-time employees, at Chickapea’s Collingwood office, are excited to get behind this cause. “It’s not something we are doing as a corporation, we are doing it as a team,” she says, “and everyone here is really excited and passionate about it.” As the company grows, the goal is to help even more schools. “We don’t want Chickapea to be just about making a profit,” she says. “This is our opportunity to make a positive impact on the world.” Why schools? As a mother of two young children, Taylor says the thought of a child going hungry or not having access to a nutritious meal hits home for her. “I can barely stand the thought of my own kids missing a snack or lunch.”

Along with providing healthy school lunches, the program also provides education and support to maintain a school garden, and to help local farmers feed their villages. “We believe that healthy food should be accessible to all,” she explains. Chickapea is in a position to give back due to the whirlwind success of its groundbreaking products. What’s so special about this pasta? As mentioned earlier, it’s made from only two ingredients — chickpeas and red lentils. The original pasta was research and developed by Taylor and her mom, Julie Hilson. Inspiration to create the product dates back to her health food shop ownership days, when she noticed customers regularly searching for more nutritious and easy meal options. “I talked to hundreds of people to find out what their challenges were and what their families wanted to eat — and pasta kept coming up,” Taylor says. “Everyone wanted to eat pasta, but there was guilt around the empty calories and empty carbohydrates.” She was also facing similar mealtime challenges at home in trying to make nutritious food that her young son would enjoy. Inventing a healthy pasta became her mission. “My mom and I rented a commercial kitchen with a pasta extruder in Barrie to work on it, and with trial and error we got far enough to realize it was possible,” she says. They took it to a manufacturer, launched a successful Kickstarter campaign and the rest is history. “Chickapea pasta is the pasta you can feel good about,”

Taylor says. “It's gluten free, vegan, organic, kosher and comes packed with 23 grams of protein and 11 grams of fibre per serving. No added sugars, salt, or ingredients you can't pronounce. Plus, it tastes like pasta and it’s delicious.” Recently, the company added Chickapea Mac and Cheese to its roster. “It’s packed full of nutrients and tastes like the cheesy traditional comfort food we all love and grew up on,” she says. Chickapea’s boxed mac and cheese pairs the brand’s signature, two-ingredient pasta with a real, organic cheese sauce, resulting in a simple, clean ingredient list. Certified organic, nonGMO, kosher, vegetarian and gluten-free. “It’s not just better for you, but actually good for you,” she says. The only organic option in the category, the product offers 19 grams of protein, 8 grams of fibre and less than 500 milligrams of sodium per serving, and is available in three varieties: mac with classic cheddar, mini spirals with classic cheddar and shells with white cheddar. “It turns a childhood favourite into a nutritious, guilt-free meal,” she says. While Chickapea Pasta’s head office is in Collingwood, the pasta is manufactured in the United States, using all North American ingredients. Looking to the future, Chickapea has more products in the works. Over the next few months, the company will be rolling out a vegan creamy mac (with plant-based seasonings) and long pastas like spaghetti, lasagna and fettuccine. “Our customers are really excited about these products,” she says. Continued social responsibility is also in the works as the young company grows. “This is just the beginning,” Taylor says. ith the hot days of summer here, it is the perfect season for a simple menu of mediterranean ingredients — nice and light but full of flavour. Cooking shrimp to perfection is always a little tricky. Just a bit too long in the pan and they have a tendency to turn rubbery and tough. The technique outlined in the shrimp and avocado salad is the most foolproof method for perfectly cooked, always plump shrimp. And the fresh strawberry parfait is a yummy take on the old-school summer favourite: strawberries Romanoff. Vanilla Bean ice cream makes it even more refreshing, with the added crunch of lady fingers for some texture.

Shrimp

& Avocado Salad 2 lbs shrimp (41 count), raw with shells on 4 cups water salt 2 avocados ½ cup cilantro leaves 1 lime, juice and zest 1 tbsp honey splash of your favourite beer (try Muskoka Brewery’s Detour) ¼ cup olive oil salt and pepper

In a large skillet or saucepan with a lid, bring the water to a boil and season with a big pinch of salt. Once the water has boiled, remove from heat, add the shrimp and cover. Let the shrimp cook in the hot water for 10 minutess. Once they have finished cooking, rinse the shrimp under cold water to stop the cooking. Pat them dry with a clean tea towel or paper towel. Cut the avocados into 1-inch dice and place in a large bowl. Add the cooled shrimp and cilantro. Combine lime, honey, olive oil, beer, salt and pepper in a bowl, then pour over salad, toss and serve. Makes 4 to 6 servings

Souvlaki 2 lbs pork shoulder, cubed into 1 ½” pieces 2 sweet peppers 1 large red onion 2 green zucchinis 2 lemons, juice and zest ½ cup olive oil 3 cloves garlic 1 tbsp fresh oregano or marjoram salt and pepper to taste wooden skewers pita bread

In a bowl, place the lemon juice and zest, olive oil, garlic and oregano. Blend with an immersion blender to create the marinade for the pork. Add the pork to the bowl and stir to mix thoroughly. Place the pork and marinade in a plastic bag and seal, removing as much air as possible. Let the pork marinate for 6 to 12 hours. Prepare the wooden skewers for the grill by soaking them in water for half an hour before preparing the souvlaki. Preheat the grill to 400°F. Once you have reached this temperature, turn off one side of the grill to create an indirect heating area. Cut the vegetables into chunks similar in size to the pork cubes, then start creating the skewers by alternating the vegetables and pork on the skewers. Season the skewers with salt and pepper and drizzle the left over marinade over the top. To grill the souvlaki, start with the skewers on the flame. Once you have created nice grill marks on each side, check the temperature of the meat. If it is below 155°F, place the skewers on the other side of the grill to finish cooking over indirect heat. The total cooking time should be approximately 12 to 15 minutes. Serve immediately with your favourite pita bread and tzatziki. Makes 4 to 6 servings

Strawberry Parfait 1 lb strawberries, sliced 1 pkg lady fingers,’cut into 1” pieces 1 cup crème fraiche 1 container of vanilla ice cream (such as Belly’s 16 Vanilla Bean) 2 oz Grand Marnier 1 tbsp honey In a bowl, mix together the crème fraiche, Grand Marnier and honey. In each parfait cup, place a scoop of the vanilla ice cream. On top of the ice cream, layer the sliced strawberries, crème fraiche and lady fingers. Top the lady fingers with more strawberries and a final dollop of crème fraiche. Makes 4 to 6 servings

Tzatziki 2 cups full-fat Greek yogurt 2 small cloves garlic, minced 1 English cucumber 2 tbsp fresh lemon juice 1 tbsp best quality olive oil salt and pepper Line a fine mesh sieve with paper towel or cheese cloth and place the yogurt in the sieve. Let the water drain for 30 mins. While the yogurt is draining, grate the cucumber, squeezing out any excess water. Once the yogurt has drained, mix in the cucumber, garlic, lemon juice, olive oil and season with salt and pepper. Let the tzatziki sit in the fridge for at least half an hour to let the flavours meld before serving.

Feasting with famed chef Michael Smith in PEI by Barbara Ramsay Orr

Chef Michael Smith is on fire — and that’s a good thing, both for the Canadian culinary scene and for anyone hoping to pay a visit to our smallest province, Prince Edward Island. The Inn at Bay Fortune, a scrubbed and wind-washed gem overlooking the Atlantic Ocean, is a 15-room boutique hotel, the only five-star property on the island. It’s the place from which Michael Smith launched his career as a celebrity chef, with the warmly received televised cooking series The Inn Chef in the 1990s. He went on to capture the hearts of cooks and foodies with his down-to-earth approach to good food, and his ahead-ofthe-curve emphasis on local producers and ‘farm to fork’ eating. After many television projects and 10 cookbooks, the talented chef has closed the circle, returning to his origins to make his culinary dream a reality. With wife and partner Chastity, he is now the innkeeper at Inn at Bay Fortune, as well as the executive chef and primary cheerleader. I came to the Inn because I’m a foodie and a big fan of the chef, but I would have come just for the accommodation experience. The Inn is small, an intimate establishment where it’s easy to feel as if you’re a guest at the (elegant) home of close friends. Rooms vary in size — mine, in the tower, was smallish — but each one is detailed to perfection. The feel is beachy, with soft greys, blues and lots of white; many of the textures, finishes and elements are natural and local. All of the rooms are washed with light from plentiful windows, and paintings by PEI artists hang on the walls. The common rooms are spacious and bright, with polished wood floors, a large fireplace and a gentle coastal palette. The dining areas are lined with windows giving on to views of the sloping lawn and the bay.

Surrounding the Inn itself are acres of farmland and gardens, the primary source of most of the ingredients for the dishes served in the dining room. Touring the farm with Michael Smith was like a quick course in responsible living — and a foodie’s dream come true. The man is an inspiration for doing things well, being gentle with the earth, and celebrating the bounty we have around us. “We are so blessed to be cooks here. We are surrounded by farmers and fishermen and culinary artisans of every type and stripe. That’s what makes Prince Edward Island one of the most unique culinary destinations in the world,” he tells me. “This island is remarkably rich, with abundant produce and all that the seas provides. Not only that, there are dozens of local producers who harvest the best oysters or make things like black garlic or preserves or artisanal vinegars. I can forage for wild greens and mushrooms; I know where the best ones can be found, but I’m not telling! The local bounty is virtually endless.” It was enlightening and inspiring to hear him talk about how the Inn’s kitchen uses everything it can from the garden, about what a blessing it is to make a salad from ingredients that were picked just minutes before. In a pen near the back of the farm three pigs happily snorted and snoozed in the shade. “Today, it seems as if we have lost the connection with our food and where it actually comes from,” explains Smith. “These pigs are part of our commitment to rebuilding that connection. The cooks have given them names, the three of them eat like kings and they will enjoy a lovely summer, with one bad day at the end.” And then it was time for the main event, the celebration of food that brings guests from across Canada and abroad to this little inn: The Feast at Fireworks. roam | bay fortune cooked over flames — either in the outdoor fire pits, the smokers, or the massive wood-fired oven in the centre of the dining room. The Fire Brigade, as Smith calls his team of well-choreographed servers, sous-chefs and chefs, keep the fires stoked and the guests superbly fed. But before we take our places in the dining room, there’s a leisurely pre-dinner tasting and sipping in the garden. It begins on the lawn outside, where guests mingle, sip handcrafted cocktails made from artisanal spirits and savour starters like pork roasted over the outdoor fire pit and served on grilled homemade pitas topped with an edible flower. There are fresh oysters on ice at the bar, just harvested from Colville Bay and perfectly paired with a glass of chilled Benjamin Bridge bubbly. I’m given a lesson in shucking, and then get to taste the result: a perfect plump oyster topped with frozen Bloody Mary slurry—easily the best I have ever eaten, briny and chilly and just slightly salty. There is a pre-dinner toast, led by Chef Smith standing on the grass below the flags of Canada and Prince Edward Island, welcoming the guests and thanking the many people who helped make the feast.

And then we dine together. Part of what Chef Smith believes in, and that he fears we have lost, is the joy of sharing food communally. So the Feast is served at long butcher-block tables where guests become a family for the evening, and soon it seems as if we have known our dinner companions for years. The first course is a thick and seafood-heavy chowder, served like a work of art, complete with an anchor-shaped biscuit. There is, of course, fresh local lobster, as well as choice island specialties in the multi-course meal. The salad is a masterpiece, composed of lettuces, herbs, leaves and seeds from the garden and accompanied by a trio of purees. There’s even ‘edible dirt,’ a melange of seeds and nuts. Afterwards we hunker around the outdoor fire with our new best friends, roast homemade marshmallows and enjoy fireworks that light up the bay. In the morning, breakfast carries on the flame-fired theme, with home fries, eggs and mushrooms served sizzling in a cast iron pan. Locally made jams and jellies, freshly baked bread and house-cured bacon are all delicious ways to greet the morning. There are other things to do in the area: great golfing on three different courses, fishing, hikes and tours of

Charlottetown. The best lobster roll known to man can be found at Dave’s Lobster down by the Charlottetown waterfront. Visitors can tour the new Stompin’ Tom Connor’s Museum, see a production of Ann of Green Gables or visit the birthplace of confederation at historic Province House. There’s a lovely drive from Charlottetown to Greenwich in Prince Edward Island National Park, where visitors can see the famous parabolic dunes and hike along the floating boardwalk to Greenwich Beach, with its red sand, green marram grass and blue water. There are colourful fishing villages, lobster dinners in quaint town halls and artisanal shops and galleries sprinkled all over the island. But let’s not kid ourselves — for the dedicated culinary tourist, it’s the Feast at Fireworks that draws us! A comfortable stay at the Inn at Bay Fortune is the bonus.

At departure from the Inn, each guest is given a freshly baked loaf of bread to take home, cooked in the wood-fired ovens, still a bit warm and smelling faintly of wood smoke. It’s the perfect souvenir of a memorable dining adventure.

ROBERT POINTER, PAINTING OUR LIVES BY DAWN RITCHIE A bleak industrial landscape set against a smog-choked sky. An aerial view of a subdivision illuminating the constraints within which we shelter ourselves. A woman in repose by a museum statue, consumed by painful memories. These are the subjects painter Robert Pointer chooses to explore. And they have a way of making you question your personal choices. “I want to express something beyond the niceties of life,” says Pointer. “I just want to dig deeper.” Robert Pointer’s work probes the ennui of being, but it also examines the exhilaration of souls breaking free. The unbridled joy of leaping off a dock into a refreshing Canadian lake. An unexpected encounter with a fox during a walk in the woods. The vitality of trudging through deep snow in the heart of winter. You can feel the crispness in the air. The bite of cold crushing into your lungs. Juxtaposed against the sturm and drang of daily life, his images deliver the promise of being part of a greater story. Pointer has been a fine arts teacher and painter since his early college days when he studied Fine Arts at Guelph University and Education at the University of Western Ontario. He assumed a career as an art and music teacher in the school system, but continued to exhibit his work at galleries across Southern Ontario from Toronto to Owen Sound. Most recently, he won First Place for the People's Choice Award at the Mad and Noisy Gallery in Creemore for his amusing 2016 work, "Ain't Nobody Here but us Chickens." Pointer began his early career working in oils and painting abstracts, inspired as he is to this day, by the Impressionists, Spanish painter Diego Velázquez and Dutch artist, Rembrandt. His move

to acrylics came later when a faster drying medium was needed to meet his need for speed in getting paint onto the canvas. In 2014, after retiring from teaching, he piled his easel into the trunk of his car and set out daily in search of remote hillsides to capture a feeling. He was completing a new work every day during that frenzied year of creativity and acrylics were the only answer. “The process of painting a picture, it’s almost a conversation with the canvas,” says Pointer. “It’s all about exploring. Today I’m working backwards to some of my roots. Exploring what I love about art and painting. The way that paint can wrap around an object. The way brushstrokes can express an idea so simply.” Pointer structures his work around the building blocks of art: colour, form, perspective and composition, but it’s really his subjects, lost in solitary moments of reflection or summoning steely fortitude, that most impact the observer. They are familiar. They are true. A skinny dipper on a dock gazing out over a tranquil lake, emptying the stresses of the day. A German Shepherd languishing nearby, eyes adrift over the same scene. “It’s a shared experience if you’re ever with an animal,” says Pointer. “They seem to be enjoying the same thing you’re enjoying.” And that’s the magic of his work. Capturing that which may at first seem mundane when it is really the essence of what it’s like to be alive.
