I’ve always admired Michelle Obama for a variety of reasons — her poise, her grace under fire and her steadfast support of her husband, to name a few. Known for her eloquent public speaking, it may come as no surprise that Michelle Obama is an equally polished writer. Her mesmerizing storytelling first transports you to the south side of Chicago, where you are taken to the modest home that belonged to her great aunt Robbie. Her tales of playing with neighbourhood children and excelling at school are very relatable and endearing. As the first African American to serve as the First Lady of the United States, Obama helped create the most welcoming and inclusive White House in history. She also established herself as a powerful advocate for women and girls around the world, dramatically changed the ways that families pursue healthier and more active lives, raised two down-to-earth daughters under an unforgiving media glare and stood with her husband as he led America through some of its most harrowing moments. While it would’ve been easy for Obama to focus the memoir on the extensive highlight reel of her life, she doesn’t shy away from the tough stuff and takes readers on a journey through both her disappointments and triumphs. This inspiring book has received rave reviews and topped bestseller lists around the globe, and it’s easy to see why. Her honesty, wit and candor in chronicling the experiences that have shaped her will leave you feeling like you’ve just had a nice, long chat with an old friend.

Ryan Allen Sobkovich
Capturing the Spirit of our Granite Shores by DAWN RITCHIE
Tilting Jack Pines, rippling northern lakes and the iconic granite of the Canadian Shield are quintessential images that speak to the national soul. Which is why the work of Wasaga Beach painter, Ryan Allen Sobkovich, resonates so much. “I’ve always had a passion for landscapes,” says Sobkovich. “I’ve also done portraiture, figurative work and even sculpture, but landscapes are my focus. When I was younger I loved camping, kayaking and just being outdoors.” The scenic wilds of Ontario were the favoured subject of the Group of Seven too. A style of work to which Sobkovich ardently ascribes. His influences lie heavily with Claude Monet and Van Gogh but it is his liberal use of paint and gestural style, that are most reminiscent of Tom Thomson’s work, the artist famed for the ‘Algonquin School’ of work. Like Thomson, Sobkovich’s brush strokes are fearless. He attacks the canvas. Thrusting paint with broad paint-laden strokes in an explosion of conviction and confidence. Penetrating reds, intense blues and burnished oranges find their way onto a waters’ surface or embedded in trees savaged by the rugged elements. You can sense

the interminable winds that forced a bend into a pine leaning at the shore’s edge. Sobkovich was only four years old when he first started “messing around with paint.” By age nine he was studying with Michelle Fleming at The Bay School of Art, learning the ins and outs of oils. By ten, he’d sold his first painting. A small landscape, he vaguely recalls. At 16 his work was already being displayed in his first gallery, The Loft, in Clarksburg. Next it was on to Toronto, where he began showing his work at the Artists Project. And it was there, that his work first caught the eye of scouts from the corporate sales division of the Art Gallery of Ontario. A connection that would later bear fruit when the AGO’s Corporate Art Rental and Sale division brought

Sobkovich into their fold, selling his work to corporations around Canada, at the age of 21. In 2016 Sobkovich graduated with Honours from the Advanced Fine Art Program in the School of Design & Visual Arts at Georgian College. Today his work resides in public collections in Northern Ireland and Egypt. In corporate collections in Toronto, Collingwood and Thornhill and has been entered in exhibitions over 40 times, with five solo and numerous international exhibitions. Sobkovich’s work took Best in Show for the last four consecutive years at the Annual Volunteer Autumn Art Sale, at the McMichael Art Collection in Kleinburg. Now 23, Sobkovich is able to support himself solely with his art. His moderately sized pieces are still within reach of the average home owner’s budget, but his larger murals have begun to command much higher prices. omeowners Andy and Christine Pritchard purchased the rambling five-acre property three years ago and immediately set to work to bring it up to the standards of their active, athletic family. Two of the Pritchard’s three daughters ride equestrian competitively, the third is a hockey star, like her father, who was once a Buffalo Sabres draft pick and played Division One Hockey professionally across Europe. (Currently, he is in the throes of purchasing a Junior Hockey Team.) And then there’s Christine, who harbours a personal affinity for rescuing ponies, having saved two right off the meat truck in Sudbury. One of the first major renovations the Pritchards tackled was the barn makeover. “We repaired the sides and installed six new horse stalls, a two-acre paddock and an outdoor riding ring,” she says. “It’s a big barn, completely renovated now and it has a chandelier inside. You could even hold long table dinners and weddings in there.” The barn belongs to the original 1867 historical farmhouse, which is also still standing on the land. “We call that the farm cottage,” Christine says. “It has three bedrooms and is as cute as a button. The roof is great and it’s built solid. We gutted it to the studs. It just needs new plumbing, electrical, a bathroom and kitchen floors. We’re considering making it into an AirBnB. We can do that in Clearview. Or rent it. A ski family could move in.” The main house, by comparison, is a 5000-square foot four-bedroom executive bungalow, built originally by the Chief of Police for the area, according to Christine. Constructed in 2011, the home was turnkey when they purchased it, but as a designer and the former owner of Habitat Interiors, Christine still wanted to put her own stamp on it. “We changed everything cosmetically,” she says, “I chose a rustic/industrial look to complement the country setting.” The house was repainted, inside and out. Carpets were also torn out and new flooring laid on both levels. “It’s authentic hemlock,” Christine says. “Reclaimed wood, from Bass Lake Sawmills in Orillia. It’s beautiful and affordable. A wonderful family business mills it.” Christine prefers to use as many Canadian suppliers as possible for her sturdy furnishings, shunning the mass-produced items from overseas that are constructed out of cheap particle board. Her trades are proudly local as well. The kitchen is the work of Batteaux Creek Kitchens from Stayner with leathered soapstone counters by DiPietra Design out of Barrie. The industrial pendants over the island are from Mercana. Doors and windows throughout were installed by Van Dolder’s Custom Exteriors from Owen Sound. The barn doors up and down are the creations of Adam Garbutt of AG Designs Co. in Collingwood, who also took care of the barn board wall features. Stone wall treatments came from the Georgian Design Centre. In the dining room, Christine contrasted a ten-seater harvest table with industrial chairs and benches, all originating from Zuo in Montreal. The unique dining room sidetable here was made by a local metal artist, Skot Lawrence, of Desiron Custom Metal in Clarksburg, on which skeleton keys and dinner bell sits at the ready. Above, a festive Edison lightbulb chandelier illuminates the dining table (also from Zuo). To bring more warmth to the dining area Christine had barn board installed inside the high coffered ceiling. The layout of the main floor is so spacious it begs for entertaining, so Christine added a country bar right next to the living area. “The barstools look like corks,” she says. “They’re also from Zuo, but the bar is from a local home store in Collingwood.” In the great room, Christine cleverly mounted the flat screen TV on a hefty artist’s easel, allowing the screen to be elevated while also being tucked into a corner at an angle. She chose robust dark tufted leather chesterfields from Quebec’s CDI Furniture for seating and casual functional side tables from Mercana. Premium quality cozy blankets are stocked about the room: in wood carriers on either side of the TV, strewn across sofa arms and hanging on a roughhewn ladder leaning against the wall. All, within easy reach for snuggling while watching TV or simply gazing out the many windows at the spectacular long view of the Niagara Escarpment. But the unmistakable focal point in the open concept floorplan is, without debate, the six-foot wide cast iron twig chandelier from Currey & Co. that

nest | home tour hangs over the main conversation pit. It cements the rustic country theme. Christine carried this twig motif throughout the home. It is also found in table lamps in the great room and master bedroom and in a pendant fixture hanging over the basement stairwell (also from Currey and Co.) The main level also houses the laundry facilities, mudroom, den, and a sizable separate office, that is not at all an afterthought. That room is flooded with light and views of the ski hills through generous windows: a relaxing place to work. From the office, you enter the ensuite master bedroom. Sleeping quarters here are separated from the spa bathroom by a double-sized sliding barn door. An adjoining walk-in closet lies to the right off that entrance. The family’s three other bedrooms reside on the lower level, which, according to Christine is also Andy’s chief domain. The entry point to this level is directly from the center of the main living area. Christine commissioned a unique industrial staircase enclosure to protect the stairway. Immediately down the stairs you’ll find an exercise area, large enough to function as a yoga studio, and through another set of barn doors the recreation room unfolds. A music area holds a piano and bean bag chairs, with a walkout to the back hot tub, fire pit and landscaped gardens. In the media section Christine has placed a light grey Stylus sectional, side lounges and poofs to enjoy the Leaf’s games on their 80-inch TV screen. The four-seater bar, on the opposite side of the room, with a stamped tin façade, was built by St. Jacobs Mennonites, and this is where Andy’s team jerseys hang. Much of the rest of the artwork on this level comes from Thornbury’s Shelagh Fox Gallery. “I think I will miss it,” says Christine, as the Pritchards have recently placed the home on the market. “There’s literally open land right to the escarpment and valley. But there are other opportunities. We only have one child at home now and she goes to school in Collingwood. The other two are away at university. It’s time to downsize and pass this beautiful property on.” The new opportunities Christine refers to is her next home design boutique, The Nest, which will soon be opening in Collingwood. She is busily preparing currently for her grand opening.

CENTURY HOME GETS A MODERN COASTAL MAKEOVER
G
rowing up in a 1000-square foot home with a family of eight, Melanie Auchincloss learned a thing or two about how to make a house work. Creating areas for togetherness and for separateness are vital. That, and the seamless integration of interior and exterior spaces that expands the living environment. Melanie’s passion for creating “peaceful and balanced” homes inspired her to launch her own renovation business, Coastal Life Homes, in 2017. It meant leaving behind a successful twenty-year career in advertising at a top firm. “I had three passions growing up,” says Melanie. “Architecture, home design, and advertising. I’d done advertising. Now was the time to transition to home design.” To date she has flipped five homes: two in the GTA and three in Collingwood.

125 Hamilton Street, a regal century home, circa 1905, is her latest project. Situated in the heart of Collingwood, fifteen minutes to Wasaga Beach and a five-minute drive to Collingwood’s beach, the location is ideal. Lush hundred-year-old trees dot the property and the home is filled with history. “It’s gorgeous,” says Melanie. “I think it’s important we retain our history. I consider these houses as people. They’ve seen so many families. A lot of laughter and tears.” Melanie loved the home’s footprint but knew it would require substantial updating to meet her exacting standards. The tired stucco exterior needed to be changed and the interior was a total do-over. She turned to Andrew VanderMeer, a custom home builder, to work on the design plans, then got to work tearing everything out to the studs while they waited for permits. Unique to Melanie’s renovating technique is her artistic approach. “The way I start houses, I look and get a sense of the outside and inside and then

get a picture that reminds me of the house,” she explains. A favourite artist Melanie uses is New York painter, Karen Bauer Schmidt, whose work lists on Etsy at The Painted Life Studio. Schmidt’s watercolours evoke a breezy coastal feeling that echoes Melanie’s vision for her company. “The painting becomes the guiding post for everything I do,” she says. “The colours, direction of materials, it streamlines everything. When I was picking bathroom tiles for instance, I chose ones with a texture that reminds me of waves.” In the next five months, Melanie and her team would gut the house, update plumbing, electrical and HVAC, tear out plaster and lathe, reinforce joists and support beams, install new flooring, kitchen cabinetry, windows, a fireplace, and an addition. They also added Maibec siding, eaves, soffit, fascia work, and new exterior decking and landscaping wherever a view from a window was inadequate. The result was a transformation from a dated and closed-in interior to an open, airy, and bright floorplan that let nature flow throughout the house. “One of the big jobs was taking up the kitchen floor,” she recalls. “The subfloor was rotted and underneath that were rotted joists.” They all needed to be replaced and brand new support beams added. When they attacked the plaster and lathe some of the house’s history also began to emerge. “You get behind the walls of old houses, you never know what you’ll find. Newspaper for insulation, maybe dead mice,” she says. “We found ethnographic newspapers from 1905 and 1910, remnants of hornets and wasps’ nests, an old Pepsi sign, a jacket and a Crokinole board.” As the work quickly progressed, the claustrophobic main floor opened up. The kitchen which sits in the center of the residence had been closed in by a bathroom that obstructed the rear garden view. Melanie removed that wall, installed sliders on the back exterior wall with a transom above and added an additional set of three wide windows on the opposite side. “Windows are always my number one expense,” she says. “It’s a priority to bring in nature and light.” Pro-Fit Windows out of Wasaga did the work and that singular change altered the entire main level, flooding light into the kitchen and creating a new family sitting area where the garden could be enjoyed, year-round. The kitchen got a new eleven-foot island and full height modern custom cabinetry. “People need room to work,” Melanie says. She also chose large

Less grout to clean.” RockWood Kitchens in Barrie installed the quartz counters. “All of the materials and surfaces we choose are durable,” insists Melanie. “We design for people who live in Collingwood. They don’t want to stay home and clean. They’re at the beach, the golf course, on the ski hills. They lead active lives. The kids come in tracking sand from the beach. The home needs to hold up.” To accommodate that eliminated bathroom on the main level, Melanie converted a large closet on the opposite side of the kitchen into a main floor laundry and new bathroom. The existing closet had been appropriated as a makeshift wardrobe by the former owner to make up for the lack of storage on the second floor. But Melanie already had an addition planned to address those shortcomings. “I’ve lived with laundry on the upper floor, the main floor and the lower level,” she says. “The main floor is always easier because that’s where you are during the day. And it’s right opposite the kitchen, because you’re always in the kitchen.” A few steps down from the kitchen a long narrow sunken entertainment area is found which had a previous life as an art studio. Each end of the space has an exterior exit. At the back of the house it offers a walkout to the rear yard and at the front, French doors lead directly to the driveway. “The previous owner did stained glass and artwork in there,” says Melanie. “My immediate take was, it’s a great entry point for a mudroom.” She sourced cubbies for installation, then changed her mind, deciding to let the buyer determine the room’s function. “What if the future owner wanted to use the space as an exercise room or yoga studio?” she says. “They can open up those French doors in the summer and let the air flow through.” She turned her attention to the living room where she converted the wood burning fireplace
to gas and used the room’s new April Snow Oak engineered hardwood as the fireplace’s surround. “It was an inspiration from a designer on Pinterest,” she says. “A great focal point. A clean, simple look. Very soothing.” The new addition on the second level addressed all of the home’s other issues, bigger baths and more storage. The half bath there became a fourpiece bath and the new addition included a walkin closet, linen closet, and luxurious five-piece en suite spa bathroom with a discreet toilet closet. The room is bathed in light through the massive windows that bounce light off the Benjamin Moore Glacier White paint Melanie chose for the wall colour. “The view at sunset is amazing,” she says. “Now you can sit in that bath and have a tea or glass of wine and see the most brilliant colours. he day after she graduated high school, fashion aficionado Jane Grahel headed for downtown Toronto. The 17-year-old had decided she would work at Creeds or Holt Renfrew, the city’s top fashion stores. That afternoon, she came home with a job in the Miss Renfrew department at Holt’s. A few months later, Grahel told her parents that when she grew up she would open a store stocked with only black clothing and accessories, the preferred colour choice of her Holt’s customers. “Mom said to call it Furbelows,” says Grahel, who took her advice and opened Furbelows boutique in Thornbury in 1985. “Furbelows is an English word that means the frill or flounce on the bottom of a petticoat, or useless ornamentation. It was a brilliant name for my shop.” A familiar sight on Thornbury’s main street, Furbelows is a fashion destination for local residents and style enthusiasts from afar. The spacious boutique carries Canadian and international clothing lines, some exclusive to the area. Canadian lines include the globally inspired Pink Martini, ethical clothing by Quebec company Myco Anna, and eco-friendly active wear by Vancouver’s No.Mi.No.U. For the fashion forward,

The staff provides a safe and friendly place to discover your next look. “I love that, as a boutique, we can work one-on -one with people,” says Grahel. “We give everyone a nice experience and are honest with them. Sometimes I need to tell a woman that today is not her day, but to come back. We have new things coming in every day. A woman told me, ‘I’m the mother of the bride and my ex is going to be there with his new younger bride and I have to look hot.’ That happens quite a lot in this day and age. I say okay, let’s go!” Grahel is very practical when it comes to buying for Furbelows. She says her ability to quickly see design flaws in clothing is her superpower. “For the last two seasons, there has been dropped shoulders, dolman sleeves and wrist details like ruffles,” she says. “You can’t have a dinner party and ruffles. They will end up in your
soup. As for the sweaters, we live in Canada and wear coats. You can’t wear a dolman sleeve that comes out at your waist in a coat sleeve.” As an international traveller interested in religion and history, Grahel advises vacationing customers on how to be respectful of various cultures. “You need a scarf to cover your head inside temples, and elbows have to be covered in Dubai,” she explains. “I have super light little shawls in 30 colours that can be a head scarf, cape or a skirt. These tricks let people pack compactly.” Grahel’s personal style, which favours black and white clothing and heels, has inspired others to adopt her look. For one woman, it was a big but satisfying transition. “When she came out of the change room, she was three inches taller, smiling and all her friends said OMG,” says Grahel. “Because we give our customers a good experience, people drop in just to say hi. A new organic craft cidery has set up shop. Located in the heart of the Blue Mountains, Spy Cider House and Distillery’s first offering is Golden Eye — a dry, light, crisp and refreshing organic cider. “With a respect for the land, our mission is to create small batch artisanal ciders that are both flavourful and unique,” explains general manager Eimear Duggan. THE MILL CAFÉ By: Katherine Elphick
L
ocated in the heart of Thornbury, the Mill has been a popular culinary destination since the 1970s. And with good reason. Along with serving up plenty of local history, the Mill boasts breathtaking views of the Thornbury Dam and is a well known attraction for its trout and salmon fish latter. Proprietorship has changed over the years, and today the Mill is owned and operated by chef Andrew Barber and his wife, Sylvia Gardulski. “Because the building and its surroundings have so much beauty and character, it offers the perfect backdrop for a dining experience,” explains the 36-year-old chef. “When the restaurant became available in 2015, we jumped at the opportunity

to take it over.” To find out more about the Mill Café, this Goodlife reporter recently caught up with Andrew after lunch service. During his kitchen break, we dished about the Mill’s seasonal menu, what it takes to succeed in the restaurant business, historical tidbits about the landmark building and much more. The Mill’s view is a huge draw. What makes it so special? Andrew Barber: Sitting on one of our outdoor patios overlooking the Beaver River and the Thornbury (triple spill way) Dam with the landmark fish latter is pretty amazing. It’s quite a spectacular site -- the trout jumping in the spring and the salmon
working their way upstream in the fall. The Mill Pond is also quite picturesque with its resident swans and ducks. There’s no place quite like it! Do you know much about its history? AB: Originally built in 1855, the Thornbury Mill was the first of many to be established along the Beaver River, and was Thornbury’s first commercial operation. It initially functioned as a sawmill and also hosted Methodist services prior to the construction of the local church. The original building and the one that it replaced were both destroyed by fire, but in 1877 it was reconstructed as a grain mill for flour and oatmeal. Since then, it has seen several incarnations, and last served as an

operating mill for alfalfa in the 1960s. After that, various restaurants have operated out of the space and there are apartments above. It still operates as a functioning hydro dam providing electricity to about 1500 area homes. What’s the best way to describe the menu? AB: Our slogan for the Mill is fresh, local and inspired. We serve simply prepared food that is very seasonal, and ideally indigenous to the area. Menu highlights include hearty soups, delicious salads, plenty of shareable plates, our ever popular Angus beef burger, fresh fish, pastas, seafood dishes, great steaks and more. What are the top sellers? AB: Our burgers and hand cut fries are to-diefor. We’re also really well known for our steak and feta salad and our fish tacos.

I LIKE TO KEEP THINGS REALLY FRESH, SIMPLE AND IN SEASON.” How would you describe the Mill’s decor? AB: The space definitely has rustic and historic charm. Our diners love the original stone fireplace, wood accents, high ceiling sand open kitchen. The tables are live edge and the walls are graced with local artwork. As for capacity? We can seat about 60 indoors, and about 60 on the patios.
I understand you took a shine to cooking early in life. AB: I’ve always loved to cook. My parents even tell stories of me making scrambled eggs on our gas stove when I was just three. But I was born into a family of local chefs and restaurant owners, so cooking runs in my veins. Even though you’re only 36, you’ve been a fixture on the local culinary scene for decades. Can you expand? AB: My parents got me into the industry. In the 1970s, my dad was the chef at Stereo’s Steak and Seafood in Thornbury. Then in the mid 1980s, he opened Babby’s Bistro a staple in Collingwood until the late 1990s. It was at Babby’s that I got my start in the industry. At age 11, I started as a part-time dishwasher and did small food preparation. For me, it was an opportunity to learn about the industry, but also to hang out with my parents because they were both working at the restaurant. After Babby’s, my parents opened Pier 74 in Meaford. During my teenage years, I worked at Pier 74, and other local restaurants. Eventually, I enrolled in the Stratford Chef’s School and graduated in 2003. After

What about options for diners with special dietary needs? AB: We always offer gluten-free options as well as menu choices that are friendly to vegans and vegetarians. We also work hard to accommodate any other dietary restrictions or food allergies.
What’s your food philosophy? AB: I like to keep things really fresh, simple and in season. My goal is to let flavours stand for themselves. I also believe in cooking from scratch. Everything from desserts to sauces and dressings are all made in our kitchen. Even most of our pastas are made in-house with fresh noodles.

I stayed there for about five years, moved around a bit and then opened up Simplicity Bistro in Thornbury with my wife and another partner. AB: It’s a rustic casual dining restaurant that specializes in fresh and seasonal local fare. The menu features comfort food, but we take it up a notch. SEARED RAINBOW TROUT, SPRING VEGETABLE RISOTTO, CAPERS AND LEMON BROWN BUTTER PREPARATION: 1. Brown Butter: In a pot, cook butter on stovetop on high, as the butter begins to foam, milk solids will begin to brown on the bottom of the pot. Once milk solids are golden brown, remove from heat and stop the cooking process with lemon juice. Set aside to be reheated later. 2. Risotto: In medium pot, bring stock and wine to a simmer. In a separate larger pot, add rice and extra virgin olive oil and cook over medium high heat, slightly toasting the rice to bring out flavour. 3. Add onion, garlic, thyme, saffron and diced vegetables (keep peas and asparagus aside to add later). Stir. Add 1 litre of hot stock to the rice. Stock should fully cover the rice by roughly 1/4-inch. Cook at a simmer, stirring occasionally to remove any risotto that may be sticking and adding stock as needed to keep the level 1/4-inch above the rice. As the rice approached its desired doneness, gradually stop adding
additional stock to manipulate the desired consistency. 4. Finish risotto by stirring in peas, asparagus and parmesan cheese. Adjust seasoning with salt and pepper. Serve immediately. 5. Note: Risottos like pastas are usually left with some chew to the rice (al dente). However, it is a personal preference to the consumer, the consistency or risotto also changes with the consumer. 6. Trout Fillets/To Finish: Season trout fillets with salt and pepper. Heat oil in frying pan and on medium, high heat, cook fish skin side down. Allow skin to get crispy and golden cooking three-quarters through on the skin side. Flip trout flesh side down to finish. Garnish with capers and heated brown butter.

espite its appeal, there’s really nothing new about this distinctive pancake syrup that food influencers claim as the next up-and-coming contender. While tree sap has been boiled in kettles housed in Ontario and Quebec sugar shacks for centuries, its time may be about to happen in popular culture. So let’s do something patriotic and give it a hand as it works to out-muscle pumpkin spice as the next hottest flavour trend.

There’s nothing like the sweet taste and scent of maple syrup, but did you know it has dozens of other functions besides sweetening waffles and pancakes? Since you can substitute maple syrup for the sugar in most recipes, garden-variety roasted pork, salad dressings, cinnamon rolls and baked beans may be no more. Whether you can describe it or not, maple is clearly gaining ground as a budding old-is-newagain flavour. It’s been introduced in a wide range of food and drink products, from granola, yogurt and potato chips to liqueur, flavoured waters and beer. Made from the sap from red, sugar or black maple trees, the amber elixir is native to a relatively small geographic area in Canada and the US, known as the Maple Belt. It spans from the Midwestern United States through Ontario, Quebec and New England and into New Brunswick, Nova Scotia and Prince Edward Island. British Columbia, Manitoba and Saskatchewan also produce some syrup. Canada’s aboriginal peoples taught early European settlers how to harvest sap and boil it down to produce maple syrup. Canada produces the majority of the world’s syrup, with estimates running in the 70 to 85 per cent range. Maple syrup is an excellent source of manganese and a good source of zinc. If heart health is important to you, you might want to consider switching to maple syrup for all your sweet dietary needs. Zinc not only acts as an antioxidant, it also helps decrease the development of hardening and narrowing of the arteries. It’s also believed the presence of manganese helps with the levels of good cholesterol. The combination of these two trace minerals is also said to support the immune system. Other important nutrients include potassium, thiamine, calcium, iron, magnesium and riboflavin. There are a good number of local spots to tap into the sights, smells and tastes of Ontario’s maple season, with some beginning as early as late February and going well into April. Undeniably at the centre of our cultural identity, maple is a flavour whose time has definitely come. Although as true-blue Canadians we’ve always known it was worthy of wider attention, it will be interesting to watch it flourish. And who knows, it could even out-rival pumpkin spice as the next ubiquitous flavour, showing up, as pumpkin did, in all suitable and not-so-suitable places. Anyone up for maple margarine, lip balm or vodka?

Maple mixture: In medium bowl, whisk together maple syrup, Dijon mustard, vinegar, salt, pepper and garlic. Reserve 1/4 cup of the maple mixture. Set aside. Spoon remaining maple mixture over vegetables; toss well to coat. Roast in 375 F oven for 30 minutes, stirring once. Remove from oven and place fillets, skin side down on top of vegetables. Brush reserved maple mixture over fillets letting any maple mixture run down onto vegetables. Return baking sheet to oven and roast until trout is cooked and vegetables are tender, about 15 minutes.

This easy-to-make crème brûlée is even more special with the addition of Ontario maple syrup. Preparation Time: 10 minutes Cooking Time: 35 minutes Chilling Time: 3 hours Serves 6 2 cups Ontario whipping cream 1/2 cup Ontario maple syrup 2 Ontario eggs 2 Ontario egg yolks 1 tbsp vanilla 1/4 cup packed brown sugar In small saucepan, heat cream and maple syrup over medium heat just until small bubbles begin to form around the edges; remove from heat. In large measuring cup, whisk eggs, egg yolks and vanilla until well blended. Gradually whisk hot cream mixture into egg mixture until blended. Divide among six 3/4-cup ramekins or custard cups. Set ramekins in shallow pan and place pan in oven. Pour in enough hot water into pan to come halfway up sides of ramekins. Bake in 350 F oven for 30 to 35 minutes or until edges are set but centres still jiggle when gently shaken. Carefully remove from water; let cool on rack. Cover and refrigerate for about 3 hours, until chilled and set, or for up to 2 days. Just before serving, place ramekins on rimmed baking sheet; blot top of custards with paper towel to dry. Sprinkle sugar evenly over custards. Broil as close to heat source as possible until sugar melts and bubbles, about 30 to 60 seconds. Let cool to harden.

“Classics never go out of style,” says vintage stylist, Elaine Kettlewell, the doyen of architectural salvage in Georgian Bay. Her selfnamed shop, Kettlewells, on County Road 124 in Collingwood is a 1500 square foot repository of “vintiques” and florals that has become a mainstay for locals since 2016. “Architectural salvage pieces can be like artwork,” she says. “It adds a difference in texture. They’re timeless.” Kettlewell’s styling career started in her early teen years when she first jumped into the field of floral design. She refined those skills through her twenties and early thirties before transitioning into the world of sales and marketing, but home décor and design has always remained her primary passion. Today, she gleefully labels herself as a picker, junker, and designer of vignettes. And every year, come early spring, Kettlewell goes “junking,” closing the shop and setting off with truck and trailer on her annual month-long road trip through the dusty backroads of Canada and the U.S. “I hit every little town,” she says. “Pulling a one-eighty at the sight of something that catches my eye.” Her journeys will have her knocking on doors, digging through barns and heaving building supplies as she unearths forgotten treasures that are dripping with the patina she so admires. “It’s a lot of work,” she remarks. “A lot of hauling and lugging and packing my trailer. It’s not all glamour. You get dirty. But sometimes a stone turned reveals a fabulous gem. And you meet absolutely fantastic people.” Europe is another wellspring of riches that Kettlewell explores. She regularly frequents France’s brocantes (flea markets) in search of the unique specialty items that will populate the shop and configure the vignettes which she changes daily. She sat down with GoodLife to tell us more about her dynamic and fascinating life.
“
What drew you to this unique line of work? I’m a lover of old things. An old soul. I always had a really good eye for curating spaces. It’s been in my blood my entire life. I guess it runs in the family. My late mother was very artistic. And I get the business side from my grandfather. He was an entrepreneur.
I’m creating a space for people to come and be inspired. That’s one of the comments everybody says when they come in here. Like, ‘Oh this is my happy place,’ or ‘Okay, now I’m inspired.’ I give them a little shot of something different. So, they can see what they can do. Because I colour outside the lines.
What sort of items do you carry in your shop? Architectural salvage and furnishings. But it’s not a furniture store. They’re all hand-picked pieces that don’t fit into any genre. It can be doors, windows, fretwork, corbels, all different kinds
Do you ever work with clients in their own homes? On occasion. I do perform personal design work for clients, go into homes and help them reimagine their look.

It’s a little like the shop, Horse Feathers, in Toronto. Or 507 on Carroll Street. That was a beautiful collector of old pieces… now closed. I wanted to bring a bit of that up to the north.” Do you manipulate the things you bring in? Paint or refurbish them? Like chalk painting? No. Other than cleaning them up, no. They already have the patina. You don’t paint a classic piece. Classics are good pieces and they’re cast aside. I like to work with old things and keep them to their true self. Are you still doing your floral design work? Yes, the store has a boutique floral studio. I have hanging baskets in the summer as well. So, it’s more like a garden flower studio. Who tends to be your customer base? It’s basically homeowners or designers. People who want something for their home. They want to come in and get inspired because they’re doing a renovation or looking for certain pieces. I put together little vignettes in the store so people can see how they can utilize the pieces. Basically,
What is your own personal colour palette? Neutrals. My favourite paint colour is Cloud White for sure. But I like raw materials like stone, metal, wood. Just love stone. Stuff that is just its own natural colour.
Do you use architectural salvage in your home as well? I don’t have a home right now. I’m staying with friends. I just bought the land here, 24 acres, to build a new one on. Have you decided on the design for your new residence yet? I have dry stone stacked walls at the entrance of the property. So, my house will be like that. Sort of like a Cotswold cottage. I’m getting older so it’ll be one floor living with a small footprint. Heated cement floors and Persian rugs. That’s it. Gas fireplace, not wood burning. The store is laborintensive so I want the house to be easygoing. Kind of like wash and wear. And it will go with the integrity of the property. There’s a pond on the property and a greenhouse, quite lovely. When are you going to start building? I’m starting this summer. Very excited. Your career is a lot of heavy lifting. How long do you think you’ll be doing this? Till I die. (laughs) Oh yeah, definitely, until I die. I absolutely love it. It’s not like work at all.

ABCS OF ITALIAN WINE FROM

THE
TUSCAN

A trip to Italy isn’t quite complete if you haven’t experienced its wine or even better, a tour of one of its many wine regions. In fact, there are 20 regions in total spanning the entire country (Tuscany, Piedmont and Veneto are arguably the most famous). Within these regions there are 73 DOCG status wines — the strictest and highest classification that an Italian wine can be awarded (think Amarone, Barolo, Chianti) — and at least 330 DOC status wines, which are no less prestigious, but the geographic zone might be a little bigger or the rules might be more relaxed. These are appellation zones, each with a set of laws governing its viticulture, permitted grape varieties and wine style. The region of Alto Adige is deep-rooted in its bi-cultural heritage (both Italian and German speaking) and is Italy’s northernmost wine region located between Austria and Switzerland. The area benefits from the best of both worlds — a perfect balance of brisk Alpine air and Mediterranean sun. Beautiful vineyards with a backdrop of snow-covered mountains are synonymous with high-quality wines of authentic varietal character. While it’s one of Italy’s smallest wine growing regions (less than one per cent of the country’s total production), Alto Adige is renowned for minerally, well-structured white wines, with white grape varieties grown in more than 60 per cent of the region’s vineyards. International varieties like pinot grigio, chardonnay, pinot blanc and sauvignon blanc thrive in this cooler-climate environment. 62

Bolgheri is a relatively young, yet prestigious DOC appellation, located within the Maremma on the Tuscan coast. Featuring sloping coastal vineyards close to the Tyrrhenian Sea, it’s named after a town in the north of the region. The Bordeaux trio goes into the majority of Bolgheri wines: cabernet franc, cabernet sauvignon and merlot, producing deeply coloured, supple yet age-worthy red wines. In fact, this is where the term “Super Tuscan” was born, and it’s home to some of the world’s most famous wines, namely Ornellaia, Masseto, Antinori’s Guado al Tasso, and of course, Sassicaia — the original Super Tuscan. Regarded as one of Italy’s flagship wines, Sassicaia was first released commercially in 1968 and steadily gained a reputation before exploding in popularity when Robert Parker scored the 1985 vintage a perfect 100 points. Like most wines made in the old world, Chianti derives its name not from the grape used to make the wine, which is sangiovese, but from the appellation where it is made. The Chianti zone, labeled as a DOCG, is also located in Tuscany and is well known for its sweeping landscapes, burning hot sun and its wealth of art and food history. For a Chianti to be a Chianti, it must be produced in one of the eight Chianti sub-zones and be made from at least 80 per cent sangiovese grapes. You can expect a wine that’s very earthy and rustic, has a smell and taste that’s reminiscent of cherries and strawberries, and is high in acidity, which makes it the perfect wine to pair with food, especially tomato-based dishes.

The city of Victoria, at the southern tip of Vancouver Island, is almost too cute to be true. Voted second best small city in the world by Conde Nast readers in 2017, it’s seemingly built on a human scale of pleasantries. Indigenous cultures and modern artists have long praised the spiritual and physical beauty of the Pacific Coast. By happenstance and by design, Victoria has managed to develop into a place that’s almost Disneyesque. Pretty gardens boast Canada’s warmest climate despite ocean waters cold enough to chill the evening air at any time. Spring comes earlier here. Downtown is quaintly modern and pleasantly walk-

able. Northward from the city, rolling hills, forest and rocky coasts are quickly reached by car. As expected, hiking, biking and kayaking are big in this green-conscious, fitness-oriented enclave. Good food is part of the lifestyle too. West Coast cuisine is synonymous with fresh ingredients prepared in a range of gastronomic styles, now joined by an exploding brewpub scene. Little Vic has developed its own vibe.

ACCOMMODATIONS Edwardian Fairmont Empress is the undeniable Queen Mum of hotels in town. Positioned at the center of Inner Harbour, it casts a regal gaze over the downtown. Sunsets from Q Bar and Restaurant are splendid. The hotel’s recent $60 million renovation continues a tradition of timeless elegance, including afternoon ‘Tea at the Empress,’ since 1908. Across the bay Inn at Laurel Point is a fine example of modern coastal design by Arthur Erickson. Like its high-end colleagues, The Oak Bay Beach Hotel on the eastern edge of Victoria overlooking Juan de Fuca Strait offers all the luxuries one would expect. Ocean views are spectacular from the hotel, pool area and adjacent Victoria Golf Club. Cuisine is regional and there’s a choice between fine dining, pub or café fare. GASTRONOMY In addition to luxury hotel dining, Victoria serves up some fine independent fare. Afternoon tea at Butchart Gardens is elegantly served in the original Butchart family residence, surrounded by flowers and greenery. The Dining Room serves local foods paired with the best BC wines. Harbour Air has a Fly ‘N’ Dine flight from downtown that includes garden admission, dinner and a limo back to town. Less known despite its classic West Coast plantings of Garry Oaks and Japanese maples, the Abkhazi Garden and Teahouse is currently run by volunteers with the Land Conservancy of British Columbia. ‘A romantic garden setting,’ says Fodor’s. Two restaurants on the ‘A’ list would be the Agrius and Courtney. The Courtney Room in the Magnolia Hotel is proud of its beverage list, meats and seafood, including a tasting menu. Agrius Restaurant supplements its fanatically organic ingredients with BC-favoured wines and beer plus custom breads and pastries.

Two hours north/northwest of Victoria at Merridale Cidery, Distillery & Eatery in Cobble Hill, brewer/distiller Rick Pipe, his lovely wife Janet and stepson Kevin are on a mission to bring the world back to sustainability. Ciders are made from heritage apples shaken from the trees, gaining awards for quality even in ancestral Britain. Try Rick’s 47-botanical gin or ciders made with hops. Future plans include a LEEDS distillery. Under the stars, if not the influence, luxury yurts are available for overnighting. Nearby, Unsworth Vineyards is cultivating 12 acres of grapes tested expressly for the climate and soil conditions of the Cowichan Valley. Owners Tim and Colleen Turyk have long family ties in the area and share a genuine concern for agricultural sustainability. An innovative partnership with local farmers assures fresh seasonal cuisine. High quality continues at Snowden House, a restored farm near Sydney, North Saanich, where Laura Waters has tapped 1,600 Douglas fir trees to make infused essences and vinegars sold in her 70

gourmet gift shop. Laura also gives cooking lessons in the 1900s farmhouse that doubles as a B&B. Sea Cider Farm & Ciderhouse is an upscale property with panoramic views of orchards and the sea. ACTIVITIES For a mix of sightseeing and shopping, Victoria expert Michele Davis pampers visitors with personal guided tours to eclectic shops and businesses offering unique and local products. ish Columbia Museum and adjacent Thunderbird Park totem poles, plus throngs of other people soaking up the views. TRANSPORTATION For those wishing to arrive in style, North America’s first carbon-neutral airline, Harbour Air Seaplanes, has constant flights from the mainland. Deplane at the Inner Harbour airport terminal with its ecofriendly roof supporting 50 solar panels and a colony of 10,000 honey bees. Buy their honey in the coffee shop and step into downtown. Seaborne arrivals have two choices. BC Ferries offers daily direct service from Vancouver (actually, Taswassen, just south of the city). The modern fleet carries passengers and vehicles year-round among the Gulf Islands. Scanning the horizon on a sunny day it’s easy enough to immerse oneself in an Alex Colville print. Or just lie back and soak up the rays.

Exploring possibilities for curated experiences around the corner, around the country & around the world By Barbara Ramsay Orr
Grootbos Private Nature Reserve, South Africa It isn’t often that jet lag is a good thing, but that was the case at Grootbos Private Nature Reserve in the Gansbaai region of the Western Cape. In a private villa nestled into the hillside, on a second cup of coffee as the sun rose at 5 a.m., I found myself doing laps in the infinity pool. Morning mist was just clearing from the tip of the Cape of Good Hope and birds were beginning their morning songs. It was one of those moments of exceptional beauty that you want to freeze-frame. The five-star resort is discretely snugged into the rolling hills of ‘fynbos,’ the rich bush vegetation with more than 9,000 species, many of which are found nowhere else in the world. While a flower safari may sound pretty tame, it is anything but. A tour, either on horseback or in a Jeep, of the rolling hills covered in flowering bushes reveals the magical interconnectedness of plants, birds and insects. It

feels a little like ‘forest bathing,’ an immersion into green nature. Some of the plants documented at Grootbos are found only in this private reserve, and it’s that special and rare diversity that the resort is dedicated to saving. If you’ve seen the animals and the plants, why not do the fishes? Grootbos arranges marine safaris, with the chance to see the marine big five — dophins, whales, sharks, seals and penguins. You can try out shark cage diving in the Gansbaai too, if that’s something on your risk-list. The cuisine at the resort is exemplary, with local ingredients, seafood, fish and fruit and vegetables from local providers dominating the menu. Barbados
In addition to white beaches and blue skies, Barbados is justifiably famous for its cuisine. Restaurants like The Cliff, Daphnes and Champers are world-class. I love ordering the local seafood and dining within steps of the ocean. But on a recent visit to the island, I stepped off the beaten path and explored some of the smaller local places to dine, discovering in the process some real island gems. Bajan chef Michael Harrison was my guide to the places favoured by locals, where the dishes reflect the fresh produce and unique spicing that defines Barbados cuisine. We visited a rum shop for a cold Banks beer and fish cakes. We toured the city farmers market to taste fruits and vegetables used in popular dishes. A visit to the fish market let us sample freshly grilled fish, drizzled with lemon, in a little booth just steps from the boats that had recently caught them. Best of all was a visit to Chef Harrison’s childhood neighbourhood for a quick stop at The Roti House for one of the best chicken roti ever. Barbados isn’t all about food, of course. One of the cool, and free, experiences is to join the horses from the nearby Garrison Racetrack for an early morning swim, around 6 a.m., at Pebbles Beach. Their pleasure at being in the water is a joy to see and you can join them, if the trainers give you permission. There’s also rum, a Caribbean specialty, and something you should savour while here. Try some of the aged rums, many of which are only available on the island. “Rum is like a woman,” Simon Warren of St. Nicholas Abbey tells me. “As it ages, it gets smoother — and more expensive.” There are several places to do rum tastings, from the historic plantations to the tasting rooms at the Mount Gay Rum factory. The Sea Breeze Beach Club is a newly renovated resort on a quiet a beach. The Hilton in Bridgetown is well situated for walking into the town and has lovely beaches. Fairmont’s Royal Pavilion on St. James Beach is high style and gorgeous in pink. There’s car racing at Bushy Park, polo matches, submarine excursions, hiking, water sports — a great collection of adventures. Barbados is an island the satisfies all your cravings. The Vineyard Cottage at 13th Street Winery, Twenty Valley
Whatever it is that draws you to Niagara for a visit — the Ice Wine Festival in winter, the Shaw Festival in summer or the harvest celebrations in the fall — now there’s a new reason to linger for a sleep over. In a white clapboard house that used to be home to the farm’s hired hand, 13th Street Winery has created the Vineyard Cottage, a luxury retreat that’s perfect for a family getaway, a girlfriends’ retreat or a romantic couple’s weekend. The décor is elegantly contemporary without being stark, with soft touches added by original art, cosy fireplaces, lots of light pouring in through multiple windows and personal touches like a complimentary bottle of 13th Street wine in the fridge. Guests can rent the whole cottage, which sleeps eight, or just the separate apartment for two. The kitchen is beautifully equipped, making a group dinner in the dining area an easy task, but there’s also the opportunity to arrange a private chef to prepare dinner. There’s a spacious patio for warm weather lounging. Located in the Twenty Valley on Fourth Avenue, just steps from the winery, the cottage is a great location for visiting wine country, going to the theatre or exploring Niagara Falls. Guests can stroll over for lunch on the winery verandah or to sample the famous 13th Street butter tarts. There are several wineries located nearby for tastings, the shopping district of Jordan is just down the road and the cottage is surrounded by fruit orchards and vineyards, perfect for long walks.
