Last October, optometrist Dr. David Bond moved his company into a spacious modern facility at 680 Veterans Drive in Barrie. Designed by award-winning Barrie interior designer Catherine Staples, the comfortable modern office is a welcoming place for the generations of patients who rely on Barrie Eye Care for regular eye exams, treatments and glasses.

Another new feature at the office is a software program that does direct billing for patients’ insurance, and lets patients make online bookings for eye care appointments. With daily computer use being a part of many people’s lives, Dr. Bond has seen an increase in screenrelated eye complaints like eyestrain and fatigue. In response, Barrie Eye Care offers protection. “We have blue light coatings for glasses that protect the eyes against damage from the screen light,” explains Dr. Bond. “We can put the coating on plain as well as prescription lenses. A lot of people are opting to do that now.” Dr.Bond also recommends protecting your eyes from sunlight exposure and embracing a nutritious diet to keep your eyes healthy. “Many of us think about wearing sunglasses in the summer, but there’s likely more UVH exposure in the wintertime when you are outdoors,” he explains. “Diet also affects eyesight.You may be drinking too much caffeine and not enough water, or not eating enough fatty fish which is healthy for our eyes and basically everything.”

LOUISE KELLY An Artist’s Hands The artistic life for Louise Kelly began on The Rock. There, on the windswept slopes of St. John’s, Newfoundland, her love of painting en plein air was born. As part of her early art training, Louise would accompany her instructor, the late Reginald Sheppard from The Newfoundland Academy of Art, out to The Battery to capture nautical scenes from the harbour below. loured houses dotted the rocky terrain around them. But it was the fishermen’s upturned boats, that was their focus. “The challenge of seeing an object like that on location in real life and trying to capture it… it’s still how I feel when I get out,” she says. “Just trying to capture it and get it right. The form and the relationship to the landscape.” Today, the countryside neighbouring Barrie is more often the subject of her sketch books. An aging red farm house on Highway #11. The family-owned Harris Corn Farm Stand on George Johnston Road. These snapshots

of pastoral beauty, so delicate in their presence, seem even more urgent for safeguarding as encroaching development swallows up precious acre after acre. “What I like is just finding a place that speaks to me. Trees with certain light on them. A barn in disrepair. Using the colours and the light to illustrate how that place makes me feel. The tranquility and the calmness,” she says. “It is an interpretative thing, even in what we choose to paint. I imagine what they might have been at one point. And there’s the feeling that it might not be there in a few years. A neglected feeling. It’s hard not


to have an emotional response to that.” Louise Kelly has always had an affinity for working with her hands. Harkening back to those early years on Signal Hill when the paintbrush honed her young fingers, it was destiny that those hands would one day not just be instruments of expression but also of healing. In adult life, Louise chose Occupational Therapy as her career, specializing in hand therapy. While studying, she was exposed to weaving, pottery, screen printing, basketwork and wood working. Today she still sculpts in clay and has added banjo plucking and knitting to her sketching and painting. Her works include oils, sculpture and sketching portraiture, but pastels remain her most cherished medium. “You don’t have a brush in your hands. You have a pastel. Right there. In your fingers. Almost a pure pigment, except for some binder. It’s very tactile,” she says. Louise’s passion for pastels have taken her on seven Pastel Painting Trips across the globe with acclaimed artist, Susan Low-Beer. France, Quebec, New Brunswick, the Laurentians, Niagara on-The-Lake have all been destinations. It was an opportunity to quench her en plein air appetite. Now retired from her position as a Hand Occupational Therapist, she has set up a full-time studio in her home where she paints four to five days a week. She also joined the Barrie Art Club. Her favourite events are the summer en plein air sessions. “I love doing it. It’s so much fun, being in a corn field or on a beach painting what you see. There’s a feeling that I can’t really describe. It’s hard to put my finger on it. I feel transported. You feel a part of the landscape.” Louise Kelly exhibits her work in and around Barrie and Midland. She is a member of The Barrie Art Club, Pastel Artists of Canada, Quest Art and Go Figure. State of the Art FAMILY DENTISTRY ALL UNDER ONE ROOF You’re losing a Tooth? Now what? Barrie Primary Care Campus Unfortunately, even with the most modern techniques and treatment in the world, sometimes it is not possible to fix or save a tooth. While this is not great news, it is good to remember that dentistry has come a long way in offering patients excellent tooth replacement options. One method that we have to replace missing teeth is a removable denture. They can either be made out of metal or acrylic and they can be made to replace one or many teeth. If the tooth that you are going to lose is your first, you very likely don’t like the idea of having an appliance that you have to take in and out. However in the case of a front tooth, sometimes the best temporary option is to have an acrylic denture made that you can wear while you heal or consider your options. No one wants to walk around with missing front teeth. The price for a partial denture varies depending on the type and material. Dental insurance often will cover some of the cost.

Most people want a non removable solution to replace a missing tooth. In the past that usually meant placing a bridge. A bridge is a ceramic type of restoration that is made by the dentist and a lab. It involves cutting down the teeth on either side of the missing tooth and cementing in a 3 (or more) unit bridge to fill the space. Imagine it being an actual bridge over the missing space. Bridges did a good job for many years for people. They are not a perfect solution and are not permanent. After time the cut down teeth can wear or decay; the bridge may have to be replaced and in some cases it has to be expanded because the support teeth are also lost. Meticulous home care is necessary to be successful with a bridge and of course regular check ups and cleanings. If you have good insurance coverage, you may have some coverage for a bridge. The amount is usually limited by the yearly limit of your plan. An estimate will need to be sent and a reply may take over a month. A simple three unit bridge will cost typically $3000 or more. The expected life span is 10-15 years.

In the last few decades, dental implants have become the method of choice to replace a single missing tooth. They are as close as we have to mimicking a natural tooth. A single implant stands alone, it is strong, it can be flossed and the crown on the implant can be made to match the adjacent teeth.

Depending on the location of surrounding structures such as the floor of your sinus or the nerve in your jaw, the doctor will often decide that they need you to have a CBCT scan done. And we can even do these specialized scans in our office, with no referral necessary.

A missing tooth is replaced in a few steps. First the implant part of the restoration; something that looks a lot like a screw, is placed. In some cases dentists are actually able to place the implant on the same day a tooth is extracted! Of course, if there is injury or infection in an area, healing must take place before the implant can be placed. It takes about 4 months for an implant to become fully integrated into the bone. When it has successfully healed, another part called an abutment is placed and an impression is taken. The lab will then make the permanent crown which will be inserted onto the abutment. The result is a natural looking, permanent restoration that you can use the same as your own teeth.

If a tooth has been missing for a long time, sometimes bone grafting needs to be done. In some cases gum grafting also may need to be done around a front tooth so that the result is natural looking. All these factors can affect the price, however they will be discussed with you ahead of time. You will always have a detailed estimate and explanation of the steps of your treatment. It is important to understand that often teeth are not lost individually. While some teeth are lost due to fracture or accidents, most teeth are lost due to periodontal/gum disease. Because gum disease affects your whole mouth,

sometimes a long term solution is not as easy as replacing a single tooth. We want to take the time to evaluate all your teeth and to take the steps necessary to prevent further tooth loss. Part of the treatment plan is always going to be regular dental cleanings. We want your investment to be in a clean and healthy environment! If you have just received the news that you are going to lose a tooth, we don’t expect you to make a snap decision. As I refurbish estate pieces in the back workshop of Le Boeuf’s I often find m self imagining the lives of the women who wore them. The older ones are m favorite, the tell the best stories. Wisp and colourful Art Nouveau neckpieces from the late 1800s; the brooding gemstones and heav ellow gold of the Victorian Era; delicate and geometric Art Deco pieces from the 1920s, dripping in diamonds. I picture women in beautiful, shapel dresses with elaborate hairst les, gloves to their elbows, passing the evenings in dining rooms and parlors, or out in the world watching the silver screen, dancing in hotel ballrooms, sipping cocktails in smok jazz bars. Probabl I’ve read too much Jane Austen and F. Scott Fitzgerald but I can’t help getting wrapped up in the glamourous occasions these pieces marked. Brooches are the best of them, taking the least wear and often requiring onl a gentle polish. Until about 60 ears ago the were the staple piece, worn an where, on an piece of clothing, for an occasion. Our showcases are adorned with perfectl preserved time capsules in platinum or ellow gold, covered in sapphires, pearls, and diamonds. I wonder if women don’t think of them or don’t know how to approach them. Rings are eas , pendants are eas , but a brooch takes creativit and fashion. So I went to the most fashionable woman I know, Trace Baker of Zuzu’s. With the help of her sales associate and brooch enthusiast Karen we spent a morning together pla ing with some of m favorites. We made them the center pieces of jumpsuits and as mmetrical dresses, used them to clasp high collars and fur wraps, to add brilliance to slouch deconstructed purses, as a pla ful accent on a clutch or high boot. We la ered them as faux cuff links, grouped them on lapels and hats, fed scarves through them, hung them from chain and cord as pendants. Some were just for fun but most combinations added polish to pla ful outfits and a sense of occasion to dress ones. When a couple decided to build a new home on their Muskoka property, their beloved original log cabin seemed slated to become an addition. However, a brilliant new option saw the little cabin embraced by the new home in a harmonious blending of the present and the past. t was 1981 when Mara Smelters-Wier and her husband started to build a cosy log cabin using trees from their 20-acre lot in south Muskoka. Sited near 410 feet of shoreline on spring-fed Bearpaw Lake, the cabin was the couple’s much loved weekend getaway before they decided to move in as full-time residents in 1988. However, after a lottery win by Smelters-Wier in 2010, the couple decided to build a brand new home on their peaceful and very private property. Because Bearpaw is 25 per cent Crown land, with a large part only accessible by water, there are just six other properties on the lake. The couple hired David Spolnik of Sprout Studios in Huntsville to design the house. Then, the future of the little cabin was considered. “We wanted to keep the cabin,” says SmeltersWier, who is the only year round resident on the

quiet lake. “It was our history, but we didn’t know how we would incorporate it. David, a good friend of ours, came up with four plans. Three were additions and the fourth was to put the cabin inside the new house. We loved the idea of how it dealt with the log cabin. People love the house because it is so different. Everyone who walks in gets this big smile on their face.” Discovering the house shelters a smaller cousin can be a surprise for first-time guests. But even more surprising is the way the traditional log cabin seamlessly blends with the modern house whose innovative design is filled with touches of warm traditional décor. It starts in the front foyer of the 4,140-square-foot home with a natural stone floor and storage space for wood stove logs. The entry opens into an airy, bright kitchen beneath an iron strutted, wood beamed cathedral

ceiling that runs the length of the home. If it’s true that the kitchen is the heart of a home, it’s doubly true here where the original log cabin sits snugly within a modern kitchen accented with rustic décor where Smelters-Wier loves to entertain. A tall stone wall unexpectedly curves around the kitchen’s wood stove, reaching up to the second floor loft. In keeping with Smelters-Wier’s passion for cooking, the kitchen has a large gas stove, two dishwashers and a cabinet-fronted refrigerator. The kitchen’s showpiece is a party sized island with a gorgeous wood top and convenient secondary sink. However, window views of the raised flower and vegetable gardens in front, and the resident chickens’ “palace” – an indoor coup with a huge fenced yard with Muskoka chairs – in the backyard are eye-catching.

Geothermal heating gently warms the kitchen’s cork floor, like all floors in the main house and separate gym. The efficient system also has ducts to provide air conditioning in the summer. “Geothermal was something we planned from the beginning,” says Smelters-Wier. “I love the heated floors.” Two sculptural light fixtures spiral above the kitchen, each bulb mounted on a flexible rod. Retro industrial-style pendants over the island have a switch housed in an electrical box that would be recognized by mid-century cottagers. “I had to go to 18 used electrical equipment places to find it,” says Smelters-Wier. “I wanted a semi-rustic industrial kind of funky feel to the whole thing.” A fully equipped butler’s kitchen and laundry room adjoining the kitchen has its own side-by-

The original log cabin has been reborn as a living room. The bedroom loft is gone, but the intimate space is perfect for quiet nights with the television or as a conversation area for party guests. The home has been the scene of many gatherings, celebrations and charity events over the years. In March, Smelters-Wier hosted a house concert in her kitchen for over 40 people. “I’m on a circuit of roots and folk music through Home Roots,” explains Smelters-Wier. “In March, it was Ian Shepherd from Nova Scotia. We usually move the kitchen table and put little marquee lights around the window as a place for the artist. It’s a wonderful house for entertaining, great for groups.” A picture window in the cabin looks into the home’s spacious dining area. Two long tables created for the space comfortably seat 14 diners. A pair of custom chandeliers, whose cream-toned shades cover individual bulbs, provides evening illumination. “A friend who walked in here for the first time said it looked like the lights hanging in the air of the dining hall in Harry Potter,” laughs SmeltersWier. The screened room overlooks a party-sized patio with a fire pit, pizza oven and plenty of Muskoka chairs. The master bedroom wing includes a walk-in closet with window, a walkout to a lake view patio, and a beautiful ensuite with clawfoot tub and glass shower. The bathroom’s light blue concrete vanity counter is ornamented with pebbles collected from the property and a spiral shell. The objects were embedded into the counter and then sanded. The marble floor has an attractive weathered look. “For the floor, I wanted a worn, farmhouse feel,” explains Smelters-Wier. “We used tumbled marble for a worn look to go with the rustic feel of the bedroom. The bedroom floor is engineered wood with a blue stain. I love sitting in bed in the morning and watching the sun come up over the lake.” A cosy main floor bedroom with shiplap wainscoting and two sturdy birch branches as closet rods is a favourite with guests. An adjacent bathroom features a stunning stone shower fashioned by Signature Stone of Washago. A natural stone seat and shelves make it unique. An upstairs loft with built in shelves and draw-

Beside the main residence, a smaller building houses a gym with a loft, bathroom and woodburning sauna. It is the favoured retreat of Smelters-Wier’s nieces and nephews. The space could also be used as a yoga studio, guesthouse or artist’s studio. Recently, a group of excited bird watchers from the Muskoka Field Naturalists watched from the gym as two rare bird species, including the red-bellied woodpecker, appeared. “Because some rarer species are moving farther north and I’m at the lower south end of Muskoka, they are arriving here,” says Smelters-Wier. The property’s double garage with carport has one standard bay and an extended bay with raised roof to accommodate RV vehicles. The space could also accommodate a workshop or boat storage. A pet door lets in the owner’s three foundling cats. Each of the property’s three buildings has a steel roof and a distinctive blue, red and light brown exterior colour scheme. “Oliver, one of the builders, used to do window displays for Gucci,” says Smelters-Wier. “We asked if he could help us put colours and textures together for the exterior boards. He had a wonderful sense of how to place things. or the Galics, building is family sport. As owners of Newport Interiors, a busy drywall firm servicing major developments, a love of construction is deeply seated within the family tree. Each member has had their fingers in building numerous homes. Peter Galic who has built “five or six” hires all the trades. Darlene Galic and daughter Amanda choose the interior’s layout, fixtures, finishes and furnishings. It’s a process they enjoy as a family, says Amanda, who began saving for her first home at age 19. She built it by 22. Now, only in her early thirties, she’s already got two under her belt. Darlene’s most recent project was a modern loft bungalow near the Friday Harbour development. An existing cottage occupied the heavily treed property. Peter tore it down while preserving the bulk of mature trees Darlene cherished. “My wife wanted to build her dream home,” he says. “She had a design in her head for many years. She and my daughter sat down with Mark Taylor of Cornerstones Residential Design. They selected a plan and modified the whole thing to get it the way they wanted.” While Peter Galic supervised construction, Amanda joined her mother to work on the interiors aiming for a clean, simple look with superior functionality. The 3000-square foot structure took over a year to build. If a building product wasn’t readily available, they didn’t substitute. They waited. “We weren’t in a hurry,” says Peter. “We wanted it done right.” Enter the front foyer and your view into the great room is through a linear ribbon of fire. The two-way Napoleon gas fireplace before you sits at eye level in a floating wall that divides the entryway from the main living area. “We wanted to keep the entry inviting while still giving privacy to the rest of the home,” explains Amanda. Around the wall to the left, an open stringer staircase runs up and down the home’s three levels. Spiraling down from the loft’s ceiling above is a striking crystal ball chandelier from Glass Light Gallery in Barrie. The bubbles whirl like cascading water, spilling light across the gleaming stainless steel handrail and glass railings of the staircase. Instead of trying to conceal the stairwell, the Galics decided to make it a focal point. “Originally the glass rails were going to be in-between the posts,” says Peter. “We looked at it and decided it would take too much away from the staircase. It was Alpa Stairs who came up with the idea of putting the button on the outside of

the stringer. That way you get full use of the stair, you don’t compromise on space. It looked so good we decided to go all the way from the top floor down to the basement. Most builders don’t bother with the lower level. I was really happy with the outcome.” Past the stairwell, you enter the open concept great room, dining area and kitchen. The contemporary dining table from Shelter is lit by a Slimline pendant from Union Lighting. The living room offers a slouchy, tempting sofa with abundant pillows and rustic coffee table. Darlene chose a two-toned colour scheme for her home to create a restful atmosphere, painting it in Benjamin Moore Wedding Veil white with varying shades of grey for contrast. Furnishings and tilework also adhere to this palette. Her rustic touches balance the contemporary design. Jute rugs, roped vases and rattan seating are found on every floor and garden deck. Even the exterior of the home, clad in Permacon Lexa Stone from Patene Building Supplies, maintains this vision. “We wanted a variation of stone,” says Amanda. “We used cedar for an organic feeling.” Inside, Peter installed plentiful windows and transoms that flood the home with light and added dozens of recessed lights for evening illumination. But as lovely as the view is out the windows, by far, the most distinctive feature in the home is the kitchen. Modern, bright, and sleek, the 24 by 24-inch porcelain tiles resembling Carrera marble set the tone here. High gloss cabinetry that opens upward is staggered, exposing all the dishware for easy access. “They are elongated and streamlined,” says Amanda. “Instead of the 42-inch standard. You can see everything at once. It’s a lot easier I find. It was a new design to Ora Kitchens who 28

They had never done a look like this before.” There are also double pantries, tons of drawers and additional storage for less frequently used equipment in the adjoining main floor laundry. The storage is so ample and well-conceived, in fact, that it defies clutter. White Caesarstone tops the waterfall island and grey quartz countertops complete the kitchen. The Thermador refrigerator, gas range and vent hood were sourced from TA Appliances. Bosch was the choice for dishwasher and the double ovens. The deep Franke Techna Double Sink is an 18x31 under mount from Bathworks. Another significant finishing feature is the home’s interior doors. Amanda and Darlene chose a modern look from Doorland’s Groove line with high end hardware and hinges. “It’s something you normally don’t think about investing in,” says Amanda. “But you can feel it when you open the door. People notice the weight and quality. Because they are solid core doors, no matter how much the house ages, the humidity and climate aren’t factors.” Amanda credits much of the inspiration to the great deal of time they spend leafing through design magazines, books and searching Pinterest. “It’s a passion and because we do drywall we see all the other designers’ ideas and pick and choose what is unique and different. Some are sticking with the traditional but some builders are breaking through which is great.” The home’s numerous bathrooms are another example of eye-catching design. “In the bathroom, your tile is your artwork,” explains Amanda. “It was really important we had a beautiful design with tile. We used roping, herringbone and borders mixed in with a lighter colour. It works instead of having to put artwork in there.

It adds that sparkle.” Five bedrooms are found on all three levels. Two on the main floor, two more on the lower and the loft is devoted solely to the master. Here, the bedroom is airy and filled with light. A sitting area with a fireplace provides a private TV viewing area and large sliding doors lead out to an upper lounging deck for extra sanctuary. The adjoining ensuite is massive, with spa shower, soaker tub and a separate dressing area lined with a solid wall of floor to ceiling closets. “The master bedroom was really fun to design,” says Amanda. “In Australia, there’s a builder who uses false walls a lot. On one side is the sink and on the other they put the bed against it. We did something similar. Dividing the sinks from the dressing area. We didn’t want just another walk-in closet either. Instead we installed a wall of closets opposite the mirrors and makeup table. This way you can get dressed, do your makeup and walk down your own cat walk to check your look in the mirrors without ever leaving the room.” The lower level of the home is equally aweinspiring with a media area, big screen TV and fireplace, another bathroom with exquisitely appointed tile, two full sized bedrooms, an exercise nook, and even an office large enough to take meetings. No skimping on interior doors here either. The solid core Groove doors continue on this level. But since no dream ever remains static, Darlene is already revising her concept of a perfect home, and has recently been eyeing a new property in Oro where she intends to build another house. The primary change? Pedro Pereira never sits still. As the chef and CEO of Fishbone Restaurant Group, he’s constantly moving between his four restaurants. “I’m pretty good at racking up the mileage on my car,” admits the 39-year-old restauranteur who owns and operates eateries in Aurora, two in Stouffville and his newest one (and the focus of this story) in Innisfil’s Friday Harbour. Opened last summer, Fishbone at Friday Harbour offers Portuguese inspired upscale dining. “Our goal is to provide good food and good service in a nice looking space,” explains Pereira, a self-taught chef, husband and father of three daughters. Situated on the boardwalk and sandwiched between a Starbucks and a soon to be opened LCBO, the 60-seat dining room is a beautiful venue showcasing cottage, Portuguese and nautical design elements. It also features a picturesque view of the newly constructed marina. “The place has a great vibe, especially in the summer with all of the boats coming in and out of the marina,” he explains. To learn more about Fishbone, I conducted two interviews with Pereira — one at Friday Harbour and the second one over the phone while he was driving between restaurants. 34

Goodlife: Let’s start with your journey into restaurant ownership. With a grade nine education, you came to Toronto from Portugal at the age of 18 to pursue a soccer career. Soon realizing you needed to supplement your income, your coach got you a restaurant job. And you loved it right from the start. Correct? Pedro Pereira: That’s right. I started out as a food runner at Adega on Elm Street and worked my way up to managing some of the best restaurants in Toronto, including Centro and Zucca Trattoria.

When did you decide to give restaurant ownership a try? PP: In 2008, I opened a take-out Portuguese barbecue chicken restaurant in Aurora. After selling it, I opened the first Fishbone in Stouffville in 2010, and it grew from there. What led to the Friday Harbour location? PP: We wanted to expand our Fishbone brand and based on the demographics of the development, we’d thought it would be a great match. It’s a wonderful project, but it’s going to take time to build up to what it needs to be. With a focus on the vibrant flavours of Portugal (think paprika, pimento paste, white wine and garlic), Fishbone’s menu is small and delicious. Why is it important to keep the menu limited? PP: We keep it small for a good reason — what we do, we do well. We serve what’s fresh at the markets, and change our menu between four to six times a year. We also do lots of menu research by regularly travelling to Portugal to check out the latest food trends and wines. Portugal is so amazing because every 20 kilometres is a new gastronomic world. Every little village or town has its own specialty or a great local product that they’re known for. Why the name Fishbone? PP: It comes from our whole fish offerings. Once diners are seated and settled with a drink, they are shown a selection of fish on ice, which they can choose. Once it’s cooked, we debone it right at the table for you. We work with market availability and seasonality so the choices usually range between one to five different types of fish such as Mediterranean sea bass, sea bream, snappers, and more.

Deep Fried Brussels Sprouts (recipe by chef Pedro Pereira) This dish is a popular appetizer at Fishbone. It serves four as an appetizer. 2 lbs Brussels sprouts 1 cup sweet chilli sauce ½ cup peanuts, crumbled and unsalted 2 litres vegetable or canola oil for frying Salt & Pepper Sweet Chilli Sauce 3 large garlic cloves, peeled 2 Jalapeno peppers ¼ cup white distilled vinegar ½ cup granulated sugar ¾ cup water ½ Tbsp salt 1 Tbsp cornstarch 2 Tbsp water PREPARATION: Sweet Chilli Sauce: 1. In blender, purée together all the sweet chilli sauce ingredients, except for the last two. 2. Transfer mixture to a saucepan and bring to a boil over medium-high heat. Lower the heat to medium and simmer until the mixture thickens up a bit and the garlic-pepper bits begin to soften, about 3 minutes. 3. Combine cornstarch and water to make a slurry. Whisk in the cornstarch mixture and continue to simmer one more minute. The cornstarch will help the sauce to thicken slightly thereby causing a nice suspension of the garlic-pepper bits; otherwise, you get a thin sauce with all the little pieces floating on the surface. 4. Let cool completely before storing in a glass jar and refrigerate. PREPARATION: Brussels Sprouts: 5. Preheat fryer or pot with oil (no more than half way) with vegetable or canola oil to 325F. 6. Trim or remove dark spotted leaves. Cut Brussels sprouts into quarters if they are large or into half if smaller. 7. Cook sprouts in one pound batches so they don’t boil, as opposed to fry due to moisture content. 8. Place sprouts in oil and fry 3 to 4 minutes until leaves are crisp and brown (not too dark).

9. Strain from oil and place sprouts in a bowl and toss while seasoning with salt and pepper to taste. Then toss while adding a nice coating of Sweet Chilli Sauce. 10. Place them on plate or platter and garnish with crumbled peanuts.

What’s your food philosophy? PP: Freshness, simplicity, seasonality and good seasonings are the foundation of my food philosophy. It’s similar to my life philosophy, which is a little bit of common sense and logic. We make everything from scratch in our kitchens, even our bread. The only thing we don’t make is ice cream. What are some of the most popular items? PP: On the appetizer front, our deep fried Brussels sprouts are a staple, and our octopus is the most tender you will ever have. For entrees, the whole fish is the most popular along with various daily specials.

We make our own ice, juices and syrups and even smoke our own glassware (for certain cocktails) for an elevated beverage experience. Craft beers are also on tap. We have a great bar, where guests can come in and enjoy a glass of wine or sip on a cocktail and munch on appetizers. What about Saturday and Sunday brunch? PP: Weekend brunch items range from a chèvre and arugula frittata or ricotta blueberry pancakes to fried chicken and waffles. We also offer bottomless mimosas for $25. Do you cater? PP: We cater up to 400 people, anywhere from Toronto to Muskoka. It’s a big part of our business. Fishbone is currently operating with winter hours, which are Wednesday to Sunday 5 PM to 9 PM, with brunch on Saturday and Sunday from 11 AM to 2:30 PM. When do you switch to your 7 day a week summer hours? PP: Weather permitting we plan to offer summer hours right after Easter. Around here, the summer is just nuts, so we are planning on a very busy season. Any interesting future plans? PP: Outdoor seating is on tap for the spring. Our diners can look forward to a stunning new 70-seat patio when the warm weather hits.

Mini Pavlova with Whipped Cream & Fresh Berries Serves 8 Preparation time: 15 minutes Cook time: 1 hour

Ingredients 3 egg whites (at room temperature) 1/16 teaspoon cream of tartar (optional) 3/4 cup confectioners sugar plus 2 to 3 tablespoons for dusting 1/4 teaspoon vanilla extract 1Âź teaspoon cornstarch 2 cups fresh raspberries and blueberries (or fruit of your choice) 1/2 cup heavy whipping cream Instructions To make meringues: Preheat the oven to 250 F and line a baking sheet with parchment paper. Put the egg whites and cream of tartar into the bowl and beat on a medium speed until the mixture forms soft peaks. Increase the speed to high and start adding sugar, 1 tablespoon at a time. Add vanilla extract and beat until stiff and glossy peaks form. Take a rubber spatula, gently fold in cornstarch. Spoon 8 mounds on a prepared baking sheet and using a back of the spoon create a slight dip in the centre of each meringue. Bake one hour. Turn off the oven and let the meringues dry completely in the oven for about 45 min. To make cream: In a large mixing bowl, beat whipping cream until stiff peaks form. Spread about a tablespoon of cream into each meringue, garnish with berries and dust with confectioners sugar. Serve immediately. Note: Pavlovas (without cream or berries) can be baked the day before and stored in a sealed container at room temperature.

Instructions In a small bowl, mix horseradish and sour cream. Add more horseradish if you like heat. Set aside. Preheat oven to broil. In a medium bowl lightly whisk the eggs, then add the cream, basil, cheese, salt and pepper. Heat oil in a 12â€? heavy-based, oven proof frying pan over a medium-high heat. Pour in the egg mix. Lower heat and cook for 4-5 minutes, or until the frittata is mostly set. Transfer pan to oven and ďŹ nish under a grill until slightly brown and set

in the centre. Remove from oven (careful, handle will be hot) and allow to cool slightly. Slide the frittata out of the pan while still warm. You may need to run a palette knife under the frittata to ease it out. Cut into eight wedges. To serve, top each slice with two slices of smoked salmon, arugula and a dollop of the horseradish cream, or serve whole with slices of salmon and arugula arranged on top, with horseradish cream in a bowl on the side.

n the 31 years since Darlene Price opened her Skinsational Day Spa in Barrie, some aspects of her business haven’t changed. People still want to look and feel their best, and Skinsational’s professional aestheticians, massage therapists, skin specialists and nail technicians still make that happen. However, technology for skin care and the scope of technology services has evolved enormously since 1988. “I love today’s skin care technology,” says Price, whose expanding business required a move from her first 565 sq. ft. spa to a facility of almost 3,000 sq. ft. “For instance, the Radio Frequency Facial helps build and plump up collagen using heat. Heat breaks down the collagen slightly and then rebuilds it stronger. It’s similar to how exercise breaks down muscle and then rebuilds it.”

To assess clients’ skin care needs, staff asks what products they use, if they are having any health concerns and whether they are taking any medications. “Everything affects your skin,” explains Price. “Skin tells a lot about what is going on inside your body. I can mix and match treatments for a client’s specific needs to deal with their issues.” Having the latest technology at her spa is a priority for Price. Staff often attends technology training seminars. A recent one was for the latest IPL (Intense Pulsed Light) laser. IPL is used for skin care, broken capillaries, pigmentation marks and hair removal. The spa also has BBL (Broadband Light) treatments, a new level of light therapy that targets conditions associated with aging and sun damage. A technology that has given clients huge results

is Micro Needling. This micropen collagen therapy plumps up collagen, reduces pigmentation and smoothes out acne scarring. “Micro Needling has been around awhile, but we have an advanced pen that works at different depths,” explains Price. “With most technology, you have to pick a depth and work with it. We can work with people with thicker, more acneic skin as well as those with thinner, more delicate skin.” Staff also recently had training for Henna Brow,


a new Skinsational service. Henna, a natural semi-permanent dye, is applied to the skin beneath brow hairs to visually fill in any gaps. The treatment, which lasts six to seven weeks, is for people who don’t want to commit to tattooed brows or microblading, or as a trial run for those treatments. For those wanting a fabulous look fast, the spa launched the Lift Supreme Facial. The hour-long facial uses creams, lotions and massage technique to stimulate blood circulation and create glow. “People see a real difference after one treatment,” Price says. “With a series of three treatments, you get even better results.” The Ultimate Indulgence Facial is for anyone wanting complete relaxation with their skin care. Skin is cleansed, toned and exfoliated before a galvanic current takes beneficial gels deeply into the skin. “This facial deals with whatever problems a person is having,” explains Price. “We also do a hydrogenation treatment with a heat wand and a soothing massage of the face, neck and décolletage areas. Afterwards, a mask is applied while a hand and arm massage is done. It’s very decadent. People love the look and feel of their skin afterwards.” Price sees beautiful skin as the result of a clientaesthetician partnership. isters Sandi McMillan and Wendy Greene grew up with first hand knowledge of the pleasures of working in a family business. Their family members happily worked together in their Dad’s welding supply business. So, it was that fitting the sisters eventually decided to open a business together, and then brought in two more family members to work with them. Our House, their unique gift store, opened in downtown Barrie in 1993. The path to launching the business was, naturally, a family affair. “Subsequent to a number of things happening back then, Wendy wasn’t working and I had two small children,” recalls McMillan. “We thought we needed to do something, to start a business. Wendy, our Mom and me thought about the things we loved, came up with a business idea and decided to name it as if it was our own place. Our House came out of it.”

Our House specializes in innovative and imaginative gifts, jewellery, home accessories, beauty products, pottery, cards and a few comestibles like jams by B.C’s. Salt Spring Kitchen Company and The Preservatory. The shop’s free gift wrapping is always a hit with customers. “We work really hard to find different things for our store,” says McMillan. “If we’re travelling somewhere and see something nice, we source it out. If it’s feasible to bring the product in, we try to do it. It’s hard work, but worth it to give our customers things they’re unlikely to find in a mall. Growing up in Barrie, we’ve always shopped the downtown. It was our aim to have our store downtown and we’ll have been here 26 years in June.” McMillan and Greene recently switched things up. Our House now carries a number of quality local products like the handcrafted skin care prod-

ucts by Barrie’s Two Sisters Naturals, and delicious therapeutic herbals teas by The Willow’s Bark. “Beeswax wraps by Oh, Beehive! in Barrie are becoming very popular,” says McMillan of the reusable wraps that keep foods fresh far longer than disposable plastic wrap. “It’s an eco-friendly product that many people, especially young people, really like.”


“We also have Judi Anne Handbags that are made of cork,� adds Greene. “She’s a quilter by trade and makes these incredibly beautiful bags lined with designer fabrics. They are so light and water repellent. Another product we carry now are handcrafted wooden charcuterie boards by Timbers in Muskoka.� Newly arrived for spring is the brightly coloured Corkcicle line of insulated wine glasses, coffee mugs and water bottles. Fans of Ireland’s Inis perfumes and body lotions, who had to buy them overseas, will be pleased to hear they are now on the shop’s shelves. Our House is the only local retailer and one of only a few in Canada to carry Brighton jewellery from California. The signature silver plated pieces have a lacquer finish and often a heart motif. One item that is always in stock is the store’s bestseller – Gurgle Pots. “It’s a crazy little name,� laughs McMillan. “They are little fish jugs. When you pour them, they go glug, glug. Children love them. Parents love to buy them for their kids because they’ll drink more water and so on. They have a retro look almost like Fiestaware.� Since opening, McMillan and Greene have almost always worked in their store with family members or close friends. Currently, their coworkers are Greene’s daughter and a girlfriend McMillan met in kindergarten. “We grew up working for our Dad,� says McMillan. “You worked as a family, got along as a family and it all worked. Portland: epicentre of cool culture It could almost be Canadian — environmentally conscious, liberal, outdoorsy and friendly. The idiosyncratic character of Portland, Oregan, though, makes it unique. I love the unpredictable funk of this city. Where else would the new trend in natural wine bars find such instant popularity? Natural wines are those that have been made from wild yeast, with no chemical intervention — a controversial but interesting new/old twist on wine. Bar Norman is just one of a clutch of new bars that focus on natural wine. It was here that I got hooked on Stumptown coffee, Voodoo Doughnut and food cart dining. Then I discovered there was more than Stumptown. The city has the highest concentration of independent coffee roasters in the US. Portland is also known for its experimental food scene and craft beers. Try a glass of Moon Pie, a dark stout from Great Notion Brewing. Walk through the Pearl District to enjoy galleries, shopping, brewpubs, coffee houses and restaurants. Fork-town Food Tours offers niche food tours, including a gluten-free one. Great restaurants are numerous. At Beast, award-winning chef Naomi Pomeroy serves produce-driven fine dining. Bullard, in the new Woodlark Hotel, is run by Top Chef alumnae Doug Adams. Visit the Portland Saturday Market where you can meet local makers, try out the food carts and indulge in some creative shopping. There are gorgeous gardens; outdoorsy types can enjoy a pedal boat tour on the Willamette River or take a hike or bike tour through urban neighbourhoods and the surrounding countryside to appreciate the scenery. The nearby Willamette Valley produces some of the best pinots in North America and a wine tour invites you try many of them. For a unique hotel stay, book a room at the new Hoxton Hotel, next to the gate to Old Town Chinatown, a historic space re-imagined with local designers.

Amsterdam: abundant arts At the beginning of Donna Tartt’s Pulitzer Prize winning novel, The Goldfinch, protagonist Theo Decker is sitting in a hotel room beside a Dutch canal, wondering when he will be arrested. I loved the novel, but the really captivating thing for me is the fact that Theo is sitting in my favourite hotel in Amsterdam, the Ambassade. It’s a treasure: a 56room, five-star hotel comprised of 10 different canal houses joined together. But the real attraction is the library, filled with over 5,000 books, all of them signed by their authors. Because the hotel is situated on the Herengracht, which is the location of many of the city’s publishing houses, visiting authors have been routinely booked into the Ambassade and have contributed copies of their books. Tartt’s stay at the hotel gave her the background for her opening chapter. Read the book, if you haven’t already, and visit Amsterdam before September when the film version of the novel, starring Nicole Kidman and Ansel Elgort as Theo, is due to be released. You will be primed to enter into the densely-plotted story about a famous painting, the importance of art and the role of fate in our lives. The painting in the book, a small portrait of a goldfinch chained to its perch, painted by Rembrandt’s student, Carel Fabritius, is an exquisite example of Dutch golden age painting, and that’s another important reason to visit this year — the city will be celebrating Rembrandt’s 350th anniversary. The Rijksmuseum as well as others will be highlighting Rembrandt in honour of the anniversary. Amsterdam’s Rembrandthuis, where the artist lived and worked for several years, celebrates the artist’s life with a recreation of his studios and living quarters. The Rijksmuseum will map out art trails through Amsterdam to places where the artist lived and worked. The trails can be accessed on foot, by bike and by boat on a canal cruise.
