ccasionally new builds don’t go quite as planned. When visions of grandeur meet construction overages a project can completely derail. Such was the case with the executive estate at 3 Pinehurst Lane in Minesing. The original builder spared no expense in facing the exterior of the home in lavish stone from top to bottom. The result was the bearing of a stately manor from the exterior. But cost overruns took their toll on the interior finishes which didn’t live up to that promise. Soon ownership was in different hands and the estate was on the market. Realtor, Nadene Milnes, and husband Ryan, leapt at the opportunity to snatch it up. And thus, began their ten-year journey of refinishing the interior to equal the grandeur of the exterior.

Today the six-bedroom, seven-bathroom home is an entertainers’ paradise with a massive near commercial-sized infinity pool, an inground hot tub with two gas-fired fire bowls, an outdoor sauna, stunning four-season sunroom addition they’ve dubbed “the cabana,” a gourmet kitchen with top of the line appliances, cinema, wine cellar, full-sized wet bar and remarkably, even an indoor hockey rink. Countertops are quartz with a pencil tile backsplash. “I love rustic elements in the home because I find it cozy and warm,” says Nadene. “My husband prefers modern so we worked on combining both styles.” Appliances here are all high performance with a Viking range and fullsized Sub Zero fridge and freezer. The kitchen bustles with extended family during the holidays. “My family loves cooking in this kitchen,” says Nadene. “But the funny story is I hate to cook. turkey is done in only 45. “I love it,” she says. “That’s definitely the one thing I’m never doing without ever again. You click it on, it gives you the time and you’re done. It was expensive, around $15,000.00 but we use it more than we use the stove.” The Milnes also wanted substantial flooring installed. They had rustic, reclaimed hardwood from a barn in Stayner laid on the entirety of the main level, save for the master bedroom which was carpeted for comfort. “Those floors have really taken a beating and they stand up,” says Nadene, who has watched her athletic children drag hockey sticks and ride bikes across them. “Every scrape or dent just adds more character,” she explains. “We recoated them after 5 years and they looked as good as new. They’ll last forever.” Another hefty investment was the addition of that four-season sunroom with a floor to ceiling wood burning fireplace. It’s become the spot where the family spends much of their time. Vaulted wood ceilings elicit a resort lodge ambience and a moveable glass wall opens to reveal the extravagant outdoor playground below. The couple knew they wanted to put in a grand pool and installed the retracting wall screen that would allow for unobstructed views which also reach all the way to the lights of the Snow Valley ski hills in the winter. “It’s a place for the kids to play,” says Nadene. “Leaving the great room as a more formal space.” Windows by Monarch Conservatory. Woodwork by Simcoe Block. The adjoining great room soars with twenty foot ceilings and a balcony that wraps around the room. A stacked stone fireplace is the focal point. “I love fireplaces,” says Nadene. “My favourite time of year at this house is Christmas. We have a wood-burning fireplace in the great room and put a twelve-foot Christmas tree in there. It’s beautiful, and so big that the neighbours have said they can see the lights of the tree from the road.” The main level is where the master and the laundry room is also conveniently located. The master enjoys an electric fireplace and a walkout to a balcony that overlooks the yard. The en suite was just recently remodeled with a stand-alone soaker tub and separate spa shower with ceramic tile. Nadene credits Darrell Sagrati of Level Up Contracting in Wasaga for the work. There are two additional bedrooms on the second level and the lower level has three more making it the perfect family home for a large family, especially one with teenagers. “Every bedroom has an en suite,” says Nadene. “Except for the basement which has a Jack and Jill washroom.”

Entertaining features flourish on that lower level, which was completed by Village Builders. There’s a walkout to the pool and covered patio. A chilled wine room holds dozens of bottles, and a fully equipped wet bar services big crowds. The projection screen cinema has seven red luxurious leather recliners elevated on graduated levels so there are no bad seats in the house. The pool outside is equally impressive. The 40-foot shotcrete infinity edge pool fits easily into the near two-acre property. It’s accompanied by a custom oversized 360-degree infinity hot tub with remote controlled LED lights that change colour on demand. The pool was originally installed with a Marblelite finish but after a few years they decided to upgrade the finish to Pebbletech for a more durable look. The decking is heavy duty IPE wood which can either weather naturally to a grey or be refinished with oil every few years. Betz Pools finished the work on the pool. Darryl McMurter of McMurter Landscaping worked on the landscaping. Adjacent to the pool lies a timber frame gazebo, outdoor sauna, and built-in stone BBQ with outdoor gas fireplace and a three-piece bathroom, leaving no luxury unaddressed. Timmerman Timberworks built the structure. “Being in the backyard is like being in your own little paradise,” says Nadene. “Really, it’s like a resort. Once we had a drummer here who sang and we thought, why go to Cuba when you have this?” But the piece de résistance is the location. Across the road, trails lead through the bush where the family regularly take their ATVs, engage in dirt biking, snowshoeing and hiking. There’s also a cement pad laid for hockey practice outside and in the summer an indoor hockey rink with synthetic ice from Hockey Shot awaits practice. The spacious rink, with penalty boxes and all, is built atop the three-car garage. Originally the space was designated as nanny quarters but Ryan blew out the walls and repurposed it for their son who at age ten already plays in an elite league. “Our family is hockey crazy,” says Nadene. “We’ve sponsored the Barrie Colts at this property for two years in a row.” In fact, hockey is the primary reason they have decided to put their estate on the market. “We love this house,” says Nadene. “But we’ve entered a new phase of all things hockey and are relocating to Kleinberg, closer to where our son plays.” 3 Pinehurst Lane in Minesing is now on the market represented by Royal LePage Locations North

rchitectural Designer, Raymond Murkami’s CV comprises a long string of accomplishments, not the least of which is designing the Oakville show home for the Princess Margaret Lottery in 2012 in collaboration with Lynda Reeves. A graduate of Ryerson’s Design programme, Mr. Murakami went on to apprentice with J.F. Brennan for seven years before launching his own design firm in 1989. His company, named simply, Murakami, employs a fulltime staff of six architects, planners and designers who manage twenty projects at any given time in differing stages of completion. Murakami’s

initial focus was the design of properties of distinction for the Rosedale, Forest Hill, Kingsway, and Bridal Path neighbourhoods of Toronto. Soon afterward, he recognized the need for prestige recreational properties. He has since designed chalets, country homes and cottages for the Georgian Bay, Muskoka, Haliburton, and Collingwood areas, where he owns a cottage himself. Having just completed two new luxury properties in Osler and Pretty River Valley he is now turning his sights to the Bahamas and Caribbean.

GL/Do you have a set of design principles you employ when approaching recreational design? We have a pretty elaborate survey system. Understanding a client’s profile is really important, paying attention to their needs. For each property, the setting is important. We spend a lot of time walking the site, photographing it, taking a record of topography. Mature trees, how the sun flows and where the prevailing winds come from are key. If you dine outdoors you don’t want to be in the wind. Paying attention to the light determines the positioning and how you start to articulate these spaces. I like to have the morning sun coming into the kitchen. It’s always nice to have coffee in the morning sun. Screened porches are more geared towards view and setting sun. And you have to maintain privacy in certain rooms. GL/How different is the exterior design from urban residences? This is where you come to escape and find comfort. In a recreational property, we are looking for an understated look but progressive. There’s an unwritten rule in Georgian Bay that properties are more low lying with muted, darker colours. You want drama but not to be too theatrical. Things change and evolve over time, so planning for the long term and looking for simplicity is important in terms of a timeless design. There’s a 20-foot building height limit in Georgian Bay but I was never a fan of big heights anyway. Also, when you arrive to the destination you have lots of stuff. Are you standing in the rain when you’re unlocking the door? Arriving by boat? We always tend to look for covered areas and access to storage right away. GL/How does that translate to the interior floorplans? You need ease of use. That means a good mud entrance and storage. A place for skis, sports equipment, a laundry. Storage is always overlooked. Cottages are much less formal. You don’t need a hall. I’m not a big fan of halls anyway. They take up a lot of space. Other places to escape if there are children or grandchildren visiting. There’s always a good kitchen because eating becomes a big part of your enjoyment. People often have nicer kitchens here than they do in their own homes. GL/What are the greatest challenges when designing a cottage on an island? The siting is really important. Where you’re going to position the dock on arrival so you’re not walking too far from the water. You want a practical path from dock to cottage. And you’re trying to save the magnificent trees. White pines are prominent in Georgian Bay. They’re just beautiful trees. If we can frame them around the building it gives a nice understated look, adds a nice sense of scale. So, you try not to blast rock. But grade changes may be large. We always try to take advantage of the natural setting. We designed a cottage that had a cliff wall and the rock itself was so beautiful we created a private courtyard that faced the rock with subtle lighting to enhance it in the evening. But it’s important to light correctly so that there is no light pollution. GL/ Is upkeep an issue for island properties? It’s important to use practical materials, windows that aren’t going to rot and can withstand cold weather. More and more, sustainability comes into the conversation and that’s important to us when we’re designing. Can we make the house efficient as well? For power people are starting to look a lot at ground source, taking the heat from the ground,
a lake loop for instance, running cables out into the lake. GL/ More people are retiring permanently up at their cottage, what changes in design does that entail? Almost always we try to look at a master on the same level. Easily accessible without steps and stairs. Also, they deserve a beautiful view. And there are little things like a tea station in the master. GL/What is your favourite space in your own home? My sports lockers. I have all my fishing and golf stuff in there. But also, our main room. We have a two-story great room I enjoy. GL/Have you applied the same principles in your work to your own home? I’m married to an interior designer, so it’s ever evolving. My wife, Ann Johnston, has a very successful practice of her own. She’s probably more famous than me. All rooms are nicely appointed and always current. We’ve renovated the place seven times. Done additions. Improved insulation. We’ve never moved. It’s a 100-year-old house. We moved in before we were married and we’re still there, two children later. cedar+sage: Sage Advice and Wellness Treatments in a Restorative, Welcoming Sanctuary By Laurie Wallace - Lynch

amed after fragrant cedar and sage, two items of nature often associated with healing properties, Cedar and Sage wellness centre in Collingwood is like the calm in the storm of life. “Our focus is to create an environment of grounded wellness through relaxation or clinically-oriented treatments and rehabilitation,” says Jessica Racioppa, who co-owns Cedar and Sage with business partner Deanna Harris. “We are a community based, multi-focused health and wellness studio and the only wellness centre in Georgian Bay offering the unique combination of Registered Massage Therapy (RMT), Float Therapy and Hot Yoga - all under one roof.” Jessica met Deanna when the two wellness advocates worked together at another company. They soon became fast friends who shared a dream of

opening their own wellness centre. Jessica has a degree in musical theatre and a background in dance, music and acting. Her love of movement and passion for well being led her to a career as a Registered Massage Therapist. Deanna is also a Registered Massage Therapist, with a background in social work. Her path led her to Thailand to study to become a yoga instructor. “Our dream,” says Jessica, “was to open a community-based wellness studio where everyone is welcome and where people would be encouraged to try new things on their wellness journey, such as floating.” Floating or float therapy is also known as Sensory Deprivation or REST Therapy (Reduced Environmental Stimulation Technique). Simply put, it involves floating in a special tank of warm saltwater without any distraction from sound or light. This new level of relaxation leaves ‘floaters’ alone with their thoughts as float weightlessly and effortlessly, due to the ratio of water to salt. “Floating has been praised for a myriad of health benefits which can include a heightened sense of relaxation, reduction in pain due to the weightlessness of the body while floating, and for some, it can alleviate symptoms of anxiety and depression,” states Jessica. If thoughts of lying in a giant tank of water without sound or light has you feeling rather claustrophobic, don’t worry, says Deanna. “The tanks are like large domed pods that are eight feet long by 5 ½ feet wide and you are never locked in. You can also customize the experience with ambient light and music. Most people prefer to enjoy the total silence - it’s a rare chance to unplug from the rest of the world!” Having a massage provided by a Registered Massage Therapist is yet another way to relax, rejuvenate and unwind. “Massage therapy can be beneficial in helping manage chronic pain and aid in the healing process of the physical structures in the body, while providing a positive effect on our mental well being,” says Jessica. “Hot yoga uses infrared panels to offer heat ranging from warm to hot depending on the class, which can help increase circulation, eliminate toxins in the body and help improve cardiovascular health and more.” Cedar and Sage opened in September, and already the team are looking forward to expanding. “We are overwhelmed by the warm welcome we have received,” says Jessica. “We are already planning to add staff and to start using our studio as a community space for wellness workshops and community meetings. We want people to feel like this is their new go-to hub to meet friends and a place to come for wellness.”

Luke Anderson: It’s a coffee, beer, wine and whiskey bar. Keaton Grieve: We essentially modelled it after what we like to drink. Coffee in the daytime, then beer if you are barbecuing or engaged in a dinner prep kind of situation, then wine at dinner followed by whiskey after dinner.

wood with a hipster vibe,” they would say. “And the best part is the location — off the beaten track, located down an alleyway, just like a prohibition-era speakeasy.” The high praise and curious description peaked my interest, so I decided to check it out myself. I booked a mid afternoon weekday interview with owners Luke Anderson, age 34, and Keaton Grieve, age 32, and headed to the bar. Upon arrival, the bustling 60-seat venue was full to the brim with customers drinking coffee, sipping cocktails with friends or working away on laptops. After finding a table to sit at, Luke and Keaton were happy to share their story. Here’s how the conversation unfolded.
You opened Gibson and Company in 2017, and guests have been flocking to your door right from the get go. What led two friends with basically no food and beverage experience (in their former careers, Luke worked as an aircraft maintenance engineer, while Keaton worked in retail/business management) to open a bar? KG: We’ve been friends for years, and since our early 20s have had a mutual passion for wine and hospitality. The whole idea started with Luke’s vision because he had always wanted to have his own wine and whiskey bar. He asked me to join him, and the rest is history. Why Collingwood? LA: Our hearts were up here. And because we’ve always loved Collingwood’s laid-back lifestyle, we felt it was the right place to open this type of venue. I’m also originally from the Stayner-area, so this is home for me. What’s your food and beverage philosophy? LA: We only serve what we like, and hope that people will like it, too. We try not to be all things to all people. Because we only serve items we like to enjoy ourselves, we feel that enables us to speak more eloquently and enthusiastically about those products. What are some of your top sellers? KG: On the food front, hands down, our most popular item is the Smoked Trout Dip. It’s an old recipe from Luke’s family and guests love it! LA: On the craft cocktail side, the Old Fashioned, the Maple Bourbon Sour and our Spiked London Fog sell super well because the booze we use is so good [smiles]. And, of course, all of our whiskeys sell really well. On the coffee front, the Gibson (a latte made featuring chocolate, bourbon and whiskey) is our signature hot cocktail and people go crazy for it.
I understand you’ve been fairly rigid about sticking to your vision. Can you expand? KG: We’re definitely known for sticking to our guns about what we serve. For example, our wine program only features Old World (France, Italy and Spain) and Ontario selections, because that’s what we like. We also don’t serve soft drinks, vodka, tequila, scotch or rum — just a lot of whiskey and a little bit of gin. I should mention that our whiskey program has been extremely well received. We only do North American whiskey, so our list is made up of 75 per cent American whiskey and 25 per cent Canadian. We started with 20 bottles and are up to about 120. The concept of ‘sticking to your guns’ led some people to initially criticize Gibson and Co. Can you expand? KG: A lot of people doubted our success in the beginning because of our product list. For example, they would just be floored by the fact that we didn’t serve Scotch, Irish whiskey or rye with ginger ale. When we were serving them, they would say things to us like: ‘you aren’t a real bar,’ or ‘you are going to go out of business.’ LA: It wasn’t easy to hear all of the negativity, but we stuck to our vision. Fortunately, it really worked out for us and we have been pretty busy right from the start. Let’s talk about your unique location. What led you to choose this space? LA: Although we looked at a few other places, this one kind of fell into our laps. Funnily enough, we found it on Kijji. It was just a one-liner without any pictures.

KG: We were pretty excited about the location and because it’s down an alleyway the price was lower than main street rents, so we were sold on it. For readers who haven’t visited Gibson & Company, the space has a cool vibe, similar to Toronto’s Distillery District. It’s an open-concept venue featuring an exposed brick wall, plenty of natural light (thanks in part to a large skylight), chalkboards, tables, couches and a large bar with seating. The walls are adorned with local artwork, showcasing Collingwood scenery (featuring photography by Luke’s sister Jessica Crandlemire). Can you talk about the initial renovation process? LA: It was a former dance studio, and when we took it over, it was basically a black room with an old scrappy floor. In short, it was a blank canvas. We added windows (including a skylight), a new floor, fixed the walls, added plumbing, electrical and painted the place. The only thing we kept was the exposed brick wall [laughs]. Let’s hear about your craft cocktail program. KG: We tend to focus on whiskey based classic cocktails like an Old Fashioned, or a Manhattan — those kinds of drinks. For people who don’t drink whiskey, we do have a bit of gin. Actually, our gin and tonics are super popular. It’s funny because people always tell us that we make the best cocktails, but we aren’t cocktail guys. We just use really good products. For example, people go insane over our gin and tonic, but it’s just Dillon’s Rose Gin, a glass full of ice, Fever Tree Tonic Water and fresh lime. During the summer, we often sell over 100 of them in a night.

What about beer and ciders? KG: We only serve local ciders and craft beers from the local area and Toronto. The espresso machine has been humming the whole time I’ve been here. Let’s hear about your coffee offerings. KG: We partnered our coffee program with Pilot Coffee Roasters (pilotcoffeeroasters.com). Based out of Toronto, it’s one of the most successful small batch coffee roasters in Canada. To make our coffee taste even better, we use Sheldon Creek Dairy products. What on the food front? LA: Because our focus was always the beverage side of things, we started off with a pretty limited menu. But, right from the start, the demand for food was much greater than we had expected. To cater to our customers, the menu now features sandwiches, salads, flatbreads, charcuterie platters, cheese boards and other types of sharable items. But, for the most part, we’re definitely more of a pre and post dinner spot, rather than an entree place. Do you offer options for diners with special dietary needs? LA: We have lots of vegan choices, but only some gluten-friendly items. I understand that you have very little waste. Can you expand? KG: We do things a little differently around here. We don’t have ovens or a deep fryer, only hot plates, panini presses and fridges. As a result, we basically have zero food waste. That combined with the fact that we primarily use local suppliers, our carbon footprint is pretty low.

There’s plenty of buzz surrounding chef Randy Feltis’s Honey Bee Elixir. Made with 44 all natural herbs, spices, roots, flowers, berries and lightly sweetened with honey, it’s a local hive to bottle craft beverage worth sampling. And since it’s 10 AM on a Tuesday morning, that’s exactly what we’re going to do. After all, it’s now legal to drink alcohol in Ontario restaurants and bars after 9 AM. “First, we’re going to try it on its own, and then we’re going to spritz it up with some Prosecco,” explains Feltis, who is serving his new liqueur from behind the bar at the Farmhouse, a restaurant he owns and operates in Barrie. “So, bottoms up.” And my first impression is straight up favourable. It’s definitely tasty, but what surprises me is its smoothness and lack of intense sweetness. “Everyone thinks it’s going to be super sweet, but I thought it would have more integrity if we kept the sugar level low,” explains Feltis, who

has been a fixture on the local food scene since he opened his first Barrie restaurant, Oscar Bistro (now closed) in 1999, Feltis is also a popular celebrity chef for CityTV and the director of Barrielicious. “Because it’s 34 percent proof, we just added enough sweetness to hide the alcohol.” Next we try it mixed with Prosecco, and again I’m liking it. “It’s the ultimate bartending companion because it offers endless craft cocktail opportunities,” he explains between sips. “It works in its pure form, on the rocks or neat, but it also makes an awesome Nigroni, or you can spritz it up with something fizzy like soda and fruit or Prosecco.” He adds that the Farmhouse bartenders are definitely having fun with it, and are forever creating new ways to use it. “Lately, they have been throwing it into our homemade ice tea and it’s delicious,” he says. The product is also super local because it’s made with raw honey from Dickey Bee Farms in Essa Township. “I chose Dickey Bee Honey, because I have been buying from them for years. I love their products, and it’s a really cool fourth generation beekeeping family business,” he says. Why honey? “Because it goes with the bees — we wanted to do something that would help the bee population. We wanted to do something sustainable, all natural with no dyes and truly local

with a low carbon footprint,” explains the 45year old chef and entrepreneur. And it’s different because there’s really nothing similar in the liqueur section at the LCBO like it. “It’s a true Canadian craft beverage. We even use the wax from the hives to seal the bottles.” Feltis says it helps the bees because most of the ingredients need to be pollinated and with every bottle sold, a new bee is added to the hive. As a result, it also helps the beekeepers because they are creating more hives. The local chef says he began thinking about making a craft beverage after visiting Scotland about two and a half years ago. “I visited some craft distilleries over there, and was quite impressed with how well they were doing with the farm to bottle concept,” he recalls. “They were growing their own juniper berries for gin and their own potatoes for vodka — similar to what Beattie’s Distillery is doing in Alliston. Let’s just say, I was impressed.” But after visiting MacCallan (one of Scot-
land’s biggest Scotch distilleries) the next day, he realized just how big the distillery business is and wanted to get in on it. So, the wheels started churring. Several ideas were tossed around from farming his own ingredients to using his dad’s maple syrup to make something unique. But the cost for both seemed prohibitive, especially since maple syrup is so expensive. He stumbled upon the honey idea when driving his young son, Cash, to Karate one day. “Cash brought up the subject of bees, and a lightbulb just went off,” he recalls. Like any good chef, he headed to the kitchen and started sampling recipes. “It was a lot of trial and error and my kitchen was certainly a disaster for a while,” he confesses with a chuckle in his voice. “I made about 65 batches — some good, some not so good.” After spending months perfecting the taste profile of the liqueur, he hit the pavement in search of a local distillery willing to make his product. At first, he faced rejection. “I asked

about 30 distilleries and they all said no,” he admits. “It was a bit of a mountain to climb to get this product made.” Then with the help of Holly Wyatt, a wellknown spirits representative for Kinetic Brands, he was able to eventually find a Vaughan-area distillery up to the task. And the rest, as they say is history. Honey Bee Elixir is now available at 15 local LCBO stores and it’s selling like the bees knees. “There’s nothing else on the market quite like it, and people seem to love the local aspect,” he explains. The next step is to ramp up production and get into 25 LBCOs, with the eventual goal of 300 stores. “Now, that would be a sweet win,” he says enthusiastically. fter months of bundling up, shovelling driveways and socializing indoors, Canadians are more than ready to embrace the start of spring by the time March and April roll around. Time to throw open the windows, enjoy whatever beginnings of growth our gardens reveal, and turn our backyards into extensions of our kitchens. Even our palates seem to notice the seasonal change, and crave something different — something fresher, lighter, and, after a season of indulging in comfort food, something better for our waistlines. Nature answers this call with the upcoming arrival in local fish markets of wild salmon. The seafood’s limited availability provides the perfect excuse to prepare and enjoy a delicious meal — and maybe learn a culinary thing or two.
Springtime means wild salmon Fish sales increase as the weather gets warmer and the days get longer. People start cooking more, socializing more and going to restaurants less. Many customers are dedicated wild salmon fans who are happy campers when sockeye, king and coho start arriving in stores late spring. Some people view fish as an important part of their weekly diet. For others, fresh fish is more of an indulgence for special
occasions or entertaining. There’s much debate surrounding farmed versus wild fish, with farmed salmon available year-round. Customers are encouraged to do their research, give both a try and then to see which they prefer. Wild salmon tends to be leaner and have a meatier texture than farmed salmon, which has a softer texture. Wild salmon also tends to have a richer flavour than farmed, although the exceptions are farmed Irish organic salmon and some of the higher quality farmed Atlantic salmon.
Get out the barbecue Whichever salmon you choose, barbecuing is a great way to enjoy it in the warmer months. Salmon has a firm flesh, so it doesn’t fall apart easily on the grill. It is recommended to fold over some good quality tin foil to form a surface onto which you can directly place the salmon. When the fish is done, you can slide a spatula under the fish to carefully remove it, handily leaving the skin behind, sticking to the foil. An alternate method is placing the salmon on a cedar plank, which results in a nice smoky flavour. Or put it skin-side down straight on the barbecue and season it with some fresh-squeezed lemon, sea salt, fresh-cracked pepper and a bit of garlic. Filet and crab with béarnaise sauce Serves: 4 Sear: high Cook: indirect/medium
½ lb asparagus, tough ends removed 2 tsp extra-virgin olive oil 1/8 tsp kosher salt 1/8 tsp freshly ground black pepper 1 tsp kosher salt 1 tsp freshly ground pink peppercorns 1 tsp freshly ground black pepper Extra-virgin olive oil 4 filets mignons, about 6 ounces each and 2 inches thick
Sauce
1/3 cup 1 tbsp 1 tbsp 1/4 tsp 1/8 tsp 2 1 stick 2
white wine vinegar finely chopped shallots finely chopped fresh tarragon, divided kosher salt freshly ground black pepper egg yolks unsalted butter, melted king crab legs, precooked (thawed, if frozen)
1. Put the asparagus on a plate or platter. Drizzle the olive oil over the asparagus and season with the salt and pepper. 2. In a small bowl mix together the salt with the pink peppercorns and black pepper. Lightly brush or spray both sides of the filets with the olive oil. Season with the salt and pepper mixture. Allow the filets to stand at room temperature for 20 to 30 minutes before grilling. 3. Meanwhile, make the sauce: 4. In a small saucepan combine the vinegar, shallots, 1/2 tbsp of the tarragon, salt, and pepper along with 1 tbsp water. Bring to a simmer over medium heat and continue cooking until the mixture is reduced to 3 tbsps. Remove from the heat and allow to cool for a few minutes. 5. In a small bowl whisk together the egg yolks. Whisk 1 tbsp of the vinegar mixture into the eggs. Pour the egg mixture into the saucepan with the vinegar mixture and whisk until smooth. Place the pan over low heat and whisk the mixture constantly until it thickens to the consistency of mustard. Then, immediately start drizzling the melted butter in a thin stream into the pan, whisking constantly, until the mixture reaches the consistency of thin mayonnaise. If at any time the sauce looks like it is separating, remove the pan from the heat and continue whisking to cool it down. Set the sauce aside at room temperature. 6. Sear the filets over direct high heat for 10 minutes, turning once halfway through grilling time. Continue grilling over indirect medium heat until the internal temperature reaches 135°F for medium rare, 5 to 8 minutes. Citrus dusted wild halibut & fresh avocado salsa
Method
1. Preheat oven to 350°F. Prepare a parchment lined baking sheet for later. Season each piece of halibut with a little salt and a drizzle of canola oil.
Serves: 4-6 as a light main course
2. In a medium sized mixing bowl, combine avocado, celery, cucumber, citrus juices, and fresh herbs. Season with salt to taste and set aside.

2 lbs of MSC certified Halibut portioned into 4-6 equal sized pieces 2 limes, zest and juice kept separate 1 medium grapefruit, zest and juice kept separate 2 lemons, zest and juice kept separate 2 oranges zest and juice kept separate 2 ripe avocados, small diced ¼ cup celery, finely chopped ¼ cup cucumber, small diced 2 tbsp each, fresh mint, cilantro, Thai basil and lovage (optional), roughly chopped Canola oil, Salt
4. Fit halibut pieces without crowding on one or two pans. Heat to medium high and drizzle with oil. Decide which side of the halibut you want to present on the plate (the ‘presentation side’) and place the fish that side down in the pan. Do not move the fish for at least 5 minutes to create a nice, think golden crust. 5. Flip the halibut onto the prepared parchment lined baking sheet and roast in the oven for 7-10 minutes to finish the cooking. 6. Remove halibut from oven. Sprinkle the crispy side with the zest mixture and season with a little salt. Evenly distribute the avocado salsa around or on top. Serve immediately. skinless salmon fillets, pin bones removed, cut into 1-inch pieces 8 oz ox-style smoked salmon, finely chopped 1/2 cup panko bread crumbs 3 tbsp finely chopped yellow onion 3 tbsp minced fresh chives 1 tbsp minced garlic 1 tsp kosher salt Freshly ground black pepper 3 oz cream cheese, softened 3 scallions (white and light green parts only), finely chopped 1 tbsp extra-virgin olive oil 6 English muffins, split 1 tbsp unsalted butter 6 large eggs Microgreens or sprouts
can also be enjoyed chilled. A popular suggestion is serving salmon either whole or in chunks on top of a Caesar salad — or any kind of salad — for a light spring meal.
Snow crab arrives too Just in case salmon’s not your thing… enter the crab. The snow crab, to be specific. Like wild salmon, snow crab — sold cooked — also arrives in April and May. Frozen king crab is available year-round, but crab season is when people can enjoy the smaller, sweeter crabs. Most people are unaware of all that’s involved in the seafood industry, including the many factors — like weather and logistics — that affect just when salmon, snow crab, and other favourite catches arrive at the store. Perhaps that’s reason for the rest of us to appreciate our long awaited plates of salmon and snow crab just a little bit more.
1. In a food processor fitted with a metal blade, pulse the salmon fillet pieces 8 to 10 times until coarsely chopped but not pasty; transfer to a bowl. Add the remaining patty ingredients to the bowl, including ¼ teaspoon pepper, and stir gently to combine. Form six patties of equal size, each about ¾ inch thick. Cover and refrigerate the patties for 1 hour. 2. Prepare the grill for direct cooking over medium heat (350° to 450°F) and preheat a grill-proof griddle. 3. Mix the cream cheese and scallions until well blended. Refrigerate until ready to grill the patties. 4. Brush the patties on both sides with the oil. Place the patties on the griddle and cook over direct medium heat, with the lid closed, until fully cooked but still juicy, 6 to 8 minutes, carefully turning once. During the last 30 seconds to one minute of grilling time, toast the English muffins on the cooking grates, cut side down, over direct heat. 5. In a skillet over medium-high heat, melt the butter. Fry the eggs until the whites are set to your desired doneness. 6. Spread the scallion cream cheese on both sides of the toasted English muffins. Place a patty on each muffin bottom and top with an egg and a small handful of microgreens. Season with pepper. Serve warm with the muffin tops on the side. ©2014 Weber-Stephen Products LLC. by Carmelo Giardina With the rapid increase in climate-related news, a new mega-trend is hitting home with people and gaining considerable momentum. Customers are becoming more environmentally conscious, wanting sustainable products from sustainable companies. This includes everything from labour practices to the environmental impact of their production. We’ve read the labels: ‘all natural’, ‘fair trade’, ‘organic’. An ever growing number of products include these claims of sustainability. But what do all these claims mean? Describing a product as “sustainable” could mean that it’s sourced responsibly or that it utilizes recyclable packaging – as well as a whole host of other potential attributes. Using the wine industry as an example, understanding the how and why when it comes to sustainable grape growing, and more specifically, winemaking is critical to understanding how, when and why consumers prioritize sustainable options. It’s great to think that the vineyard your wine originated from was utilizing sustainable practices, but what does that look like for a vineyard?

SUSTAINABLE WINERIES ARE FOCUSED ON MINIMIZING THE EFFECT THEIR WINEMAKING PROCESS HAS ON THE ENVIRONMENT. Sustainable wineries are focused on minimizing the effect their winemaking process has on the environment. They prioritize conservation, preservation, social responsibility and economic feasibility. Portugal’s Symington Family Estates has set out to lead the way in terms of sustainability practice and is perhaps the most forward thinking winery in the world today. Located within the historic Douro Valley region, the Symingtons were awarded Ethical Company of the Year in December 2019 and joined companies as diverse as Patagonia and Kickstarter in becoming a ‘B Corporation’. The prestigious B Corp certification cements a large number of varied social and ecological projects that the Symingtons have put in place recently and are continuing to pursue. In fact, the Symingtons are stepping it up a notch with the creation of the Symington Impact Fund – a one million euro pledge to support projects in the Douro. The primary use of the funds will be for community well-being and health, environmental protection and conservation and cultural heritage and education. Rupert Symington, CEO of Symington Family Estates, has stated that “we have always sought to run our family business in a way that benefits people – be they our employees or the wider community. We are also committed to protecting the beautiful natural environments where we produce our wines. The Symington Impact Fund is a way of formalising this commitment and ensuring we support projects which are most aligned with our values and where we can have the maximum positive impact.”
Another family owned winery that’s leading California’s sustainability effort is Sonoma County’s Rodney Strong Vineyards. In 2010, the winery was officially certified as a sustainable operation. They’ve become completely carbon neutral, installed solar power and earned a Fish Friendly Farming certification among several other sustainable designations, including air quality, soil and water conservation and wildlife protection. Ontario’s sustainability impact is also prevalent. One Niagara based winery leading by example is Hidden Bench Estate Winery, a certified sustainable winery which utilizes geothermal energy to provide cooling and heating for both their building and winemaking processes. Also one of the launch customers for Bullfrog Power – Ontario’s first green electricity company – Hidden Bench’s foregoing initiatives as an organic and biodynamic winery, as well as their ongoing approach to sustainability, has permitted them to be recognized as an environmental leader in the community. Choosing to embrace new energy technologies presents a triple bottom-line win in productivity, profits and planet, so it would seem that becoming sustainable is a worthy investment that many more will and should take. After all, consumers vote with their purchases. And so as we come to terms with the fact that our environment is increasingly being compromised, it becomes very important that every aspect of what consumers are now buying into is studied to ensure that businesses leave the environment in the very best shape possible at the end of the day. The question we all need to ask ourselves now is: are we all on board?

Chryseia is the flagship offering made with the finest grapes from Prats & Symington’s own Douro Valley vineyards, Quinta de Roriz and Quinta da Perdiz. 2016 was a very hot and dry summer but was bookended with a wet spring and wet fall. This weather pattern was decisive in achieving balanced vine maturations. What we get here is a rich and chewy, powerful wine, with notes of plum, blackcurrant, mocha and some dark chocolate. The barrel play is expertly integrated. A tremendous bottle that shows great ageing potential. Definitely one for cellar collectors and best consumed 2023 through 2030.
Rodney Strong 2016 Estate Russian River Valley Pinot Noir ($29.95)
Rodney Strong Vineyards have gone acre by acre through their estate properties to ensure they’re taking every step possible to safeguard their region’s ecosystem. They’re solar energy system is one of the largest of any winery in the world and were officially the first to offset their carbon footprint in Sonoma. They produce one of my favourite pinots to come out of California and it is an excellent value. Medium bodied with complex notes of baking spice, vanilla and some yummy cran-cherry jam-like flavours. 2016 was a more balanced vintage for California and this is a great expression of that balance.
Hidden Bench 2017 Estate Chardonnay ($29.95)
Situated within the Beamsville Bench, Hidden Bench is an artisanal, terroirfocused winery dedicated to crafting premium wines solely from their own certified organic estate vineyards. They’ve established an ongoing reputation for consistent excellence both domestically and internationally, producing wines of pronounced complexity and character which bear a sense of place and time. This estate chardonnay is a quintessential example of how meticulously maintained vines can lead to an outstanding result. Bright, fresh and lively textured, this is drinking beautifully now.

Reflections on Quietude JANET LIESEMER’S

n the Loft Gallery’s website, you will find painter Janet Liesemer’s artist statement. “Peace. A state of tranquility or quiet. A sacred presence in a world of busyness and chaos. Peace is what I paint, serenity is what I feel. Calm is what I crave. Create your own story as you take a moment to listen to the silence. It’s an enticing invitation to Liesemer’s landscapes, which adeptly deliver that promise of stillness. Sweeping farmland, rustic barns, drifting fishing dories and rolling foothills draw the observer into the uncluttered quietude where tensions are eased and the unhurried life is felt. Represented by the Loft Gallery in Thornbury, Liesemer began her association with the gallery after entering their Annual Square Foot Show five years ago. “All paintings are 12 x 12,” says Liesemer. “I put in ten paintings and every one sold.” That’s when the gallery came calling. A request to visit her studio in the small hamlet of Ayton brought the entirety of her collection into the gallery. She’s been exclusive to the Loft ever since. Working primarily in acrylics and ink, Liesemer generally has three or four paintings on the go at the same time. She paints religiously, four days a week from 7:30 am to 4 pm and daily during her frequent travels throughout Northern Ontario on camping/painting trips. “When I travel, I always bring my paints with me,” she says. “I pack two suitcases. One just for art supplies. There are more art supplies, than clothes.” Her popular Wellness and Art retreats also take artists of all skill levels to romantic locales across the globe, such as the historic Chianti Region of Tuscany. There she teaches a new technique each day, including palette knife painting, ink sketching and watercolour work.
Liesemer discovered her talent at a young age. But like many budding artists, had the hope of an art career driven out of her. For Liesemer, it was an embittered high school art teacher whose own aspirations had not met with success. He steered his gifted students away with the warning, ‘You’ll never make a living from art.’ So instead, she forged a career in finance. Art continued to tug at her heartstrings, however, and in 2000 she began painting murals and soon was wrangling an eager clientele who wanted murals for their children’s bedrooms. But it wasn’t until a family tragedy intervened in 2005 that her life’s trajectory truly changed. The sudden and unexpected loss of her husband returned her to the solace she found in her art practice. By 2014 she transitioned to full-time landscape artist. “Tragedies do make you reflect on your life,” she says. “They’re a catalyst for change. You ask, is this what I want to do with my life? It made me change course and have the courage to do what I always wanted to do.” Today Janet Liesemer’s life is blissfully transformed. Now remarried, her personal life is happy again and her professional life, invigorated. In addition to her sold-out Wellness and Art retreats, her sales through the gallery and her art classes, which are run from her studio and at the gallery, Liesemer is often commissioned to paint old farm manors for families relinquishing homes. Realtors have even engaged her for this mission, gifting their clients with the paintings. “I’m busy but it’s not draining,” she says. “It energizes me. It blows my mind, really. by David Wallace-Wells Book review by Danielle Leonard “It is worse, much worse than you think,” writes author David Wallace-Wells in the introductory paragraph of his book, The Uninhabitable Earth. The deputy editor for New York Magazine is referring to climate change and the impending disaster our earth faces whether we do anything about it, or not. While the impetus for the book is to wake humanity up to the shocking reality of our deteriorating habitat, it is also clear that there may be little we can do to stop its course. With Earth Day’s 50th anniversary taking place 58

April 22, it seemed fitting to dive into one of the latest books on climate change. In it, Wallace-Wells explains, ‘this is not a book about the science of warming; it is about what warming means to the way we live on this planet.” Human activity is harshly implicated in the chaos that he says will soon descend on the earth due to climate change. Consider this: half the carbon emitted into the atmosphere by the burning of fossil fuels has happened in just the past three decades. Today, there is a third more carbon in the atmosphere than there has been at any point in the last 800,000 years. It is impossible to read Wallace-Wells’ book without an increasing sense of doom, and frankly, that’s not the worst thing. The chapters offer a staggering level of scientific fact along with realistic scenarios that our species faces if we continue with our status – which is to do next to nothing about climate change. The Uninhabitable Earth explains the inevitability of the earth’s rising temperature – each one degree Celsius increase unleashing irreversible and devastating effects on our environment and, conequently, us. According to the research, we are on a trajectory to increase the world’s temperature by four degrees by the year 2100. The earth will likely survive, but will humans? This, he indicates, is less clear. Is The Uninhabitable Earth a bleak read? Admittedly, yes. It is unforgivingly honest. In fact, WallaceWells tells the reader, almost two-thirds through the book, “if you have made it this far, you are a brave reader. Any one of these twelve chapters contains, by rights, enough horror to induce a panic attack in even the most optimistic of those considering it.” I found reading the book to be both anxietyinducing and overwhelming, but at the same time, necessary. While I consider myself a moderate environmentalist, I had little understanding of the urgency facing the planet and agree with the author’s assessment that political will is imperative to truly make a difference at this point in the game; individual efforts, alone, are not enough. I recommend this book to anyone who has a stake in this planet. In other words, if you’re human, read it. The good news is that it’s not imperative to read its entirety to feel the weight of our collective burden. My hope, and I would imagine WallaceWells’ hope too, is to read just enough to act. And, please, do it soon.
