Buying or selling country properties may present some specific challenges. Therefore first and foremost engage the services of a qualified Country Real Estate Professional. He or she will have the knowledge and skill to guide you thru the nuances of Country Living. The following FAQ’s are in no way inclusive but may serve as a starting point when considering living in the Country.

Q. Is Local Knowledge important ? Yes it is extremely important not only to understand relative comparable value but to understand such concerns as the Zoning, Conservation Authorities and Permitted Uses of the subject property. Are there plans for future developments in the area? And let’s not forget about what the area has to offer for Schools, Hospitals, Fire Stations and Retail.

Q. Do I, or my agent, need to have an Understanding of Construction? Yes it would be very helpful to understand why certain construction was employed or should have been. For instance a steel roof is a great bonus for shedding snow without lifting your shovel. A paved driveway may not be appropriate if your under lying soil is not stable or has a high water saturation. Come the winter freeze and spring thaw and the movement of the frost will destroy your driveway.

Q. What is important to know about a Well? You want to ascertain the Well Type (Bored, Dug or Drilled) and whether the Well produces

sufficient potable water for normal household use, on a sustained basis. Currently household use is generally 2-3 GPM depending on the size of your family. Sustainable can be determined by the scrutinizing of the Well Report for soil type, depth and screening. The Type of Well also has it’s own characteristics to consider from contamination to flow rate recovery. Ensure that the distance from the Well to the Septic Bed is sufficient; Bored/Dug wells should be 75-100 feet and drilled at least 50 feet.

Q. What is important to know about Septic Systems? A properly working Septic System will last a long time. Avoid plugging it with unwanted materials or excessive use of detergents and bleaches as this will kill some of the necessary bacteria in the Septic Tank. Fix leaking taps and toilets before they dilute your septic system. And if your septic bed is not functioning properly it will let you know with a wet spongy section of lawn.

Q. What is the most cost effective Heating System in the Country? Not Electric! But fear not if you run across it for conversions are plentiful. Now the most cost effective Heating is Geo Thermal……if properly installed! It is expensive and I have witnessed many inefficient systems…so be careful. The problem is that many Geo Thermal Systems use an Electric Heating coil as backup. So if for some reason your system needs back you will be effectively running an electric furnace. Now that kind of defeats the purpose! HE Propane is clean and relatively inexpensive. New HE Wood Stoves/ Inserts are also an option. Please have a proper liner installed, burn only hardwood and have the chimney liner cleaned regularly. Welcome to the Country…..Enjoy it, Respect it and Live it!

Chalet Chic Blue Mountain renovation shortlisted for prestigious design award By Dawn Ritchie | Photos by Heather Goldsworthy

D

esigned by Janice King-Smith of White Elk Interiors and shortlisted for the 2019 International Design & Architectural Awards, this contemporary ski chalet at the foot of the Blue Mountains was transformed from dated and cluttered to fresh and functional over the course of two years. The story began when Chloe Greenhalgh knocked on Janice King-Smith’s front door. Chloe and her partner Darryl Hughes were thinking about renovating their chalet and word had traveled that the designer up the street performed a miracle on the neighbourhood eyesore. Formerly dubbed ‘the prison,’ the peculiar chalet was now a stunning Scandinavian show house where the designer and her family lived. Since they were neighbours, Chloe took the chance on getting a tour. Janice invited her in for coffee and a renovation union was formed.

As extremely active and sociable people, Chloe and Darryl needed a lot more storage and a better layout to accommodate their large social gatherings and regular weekend guests. They also needed a new space for an office where they could address the demands that arose on weekends from their high-profile jobs. They were ready for a style makeover. Modern, minimalistic and contemporary was their design choice. This concept fit right into Janice’s wheelhouse. But achieving all this without changing the chalet’s existing footprint would be a challenge, especially given that nearly every room was trapezoid in shape and the basement was designated as a tenant apartment—off limits. Janice attacked the storage issue as task #1, filling the home with walls of cabinets that blended in seamlessly with the chalet’s new black and white colour scheme. Benjamin

WHEN THEY PURCHASED THE CHALET, IT HAD COME WITH ALL THE BELLS AND WHISTLES INTACT, INCLUDING A FULL BAR, SERVING GLASSES AND EVEN THE ART ON THE WALL. Moore Chantilly Lace was the primary wall colour because it best matched the cabinetry, Janice explains. The entryway was really where the clutter explosion began. It had “zero storage” recalls Janice and no closet whatsoever. Not a great scenario for a dynamic, athletic household with a ton of gear. The couple had been making do with a series of hooks, so Janice bumped out a closet by biting into the garage, which too, was trapezoid shaped. Now there was a massive space for clothes, boots, bicycles, skis, snowboards and helmets. “And it still leaves the garage with space enough for a vehicle,” Janice assures. Janice used grey Montauk slate in a Chevron pattern for flooring and added a wide leather upholstered bench for kicking off boots and gear. The existing staircase up to the first level had dated wood railings so she opened that up too with modern glass railings that brought light and openness into the foyer. The lower living area of the chalet was already party central but the owners felt the space needed a major refresh. When they purchased the chalet, it had come with all the bells and whistles intact, including a full bar, serving glasses and even the art on the wall. The Santa Fe style was being

kicked to the curb but it was important that a bar remain for the couple’s renowned parties. Janice’s marching orders were to give the area a cool downtown Toronto, Queen Street West vibe. For Janice that translated into a moody commercial bar that had a funky bistro/trendy café feel—espresso by day and whiskey by night. Janice also saw an opportunity to kill two birds with one stone. The couple had requested that new office space and there was a huge vacant ceiling space right above the bar that made the existing bar look unfinished and out of proportion. She suggested they build a mezzanine level above the bar for the office. This would balance the soaring empty wall space, enclose the bar, giving it a roof, and afford that Queen Street West feel the couple was going for. This design would also provide an airy office level right above the main hangout, so they could work and still enjoy the fire without feeling locked away in a small office on chalet days. This inspired concept virtually added a new room to the building without changing the footprint, and allowed for an additional storage closet where the couple could now hide printers, fax machines, office supplies and cleaning equipment. The mezzanine office would also be filled with natural light from the ceiling level windows and it was mere steps away from the kitchen, so you could walk around, get a coffee but not be looking at dishes while you worked—the perfect location. With a glass knee wall (provided by Dennis Risk and Gil Letourneau of MCR Industries) and a three-and-a-half-meter long desk, the mezzanine became an inviting location to check emails, surf the net and survey the action below. be the dated brick fireplace that covered the entire wall below. That had to go. Janice instead created a svelte modern fireplace using 2 x 4-foot floor-to-ceiling Montauk slate as the new focal point. Mick Vaclavik and his crew of Renovate Inc. hefted the exceedingly weighty tiles into place by hand, much to Janice’s astonishment. The fireplace deliberately has no mantle and houses a mounted Smart TV. Deep niches on either side stock plenty of firewood for the woodburning Regency Pro Series fireplace that was to remain. The cozy sectional chaise sofa here is from Rove Concepts, plush Moroccan carpet from Elte Market. For the bar, Janice tore out the existing oak counters and decided on colour blocking. She now had this “monolithic slab of tile on one side 18

of the room” and wanted to balance it by making the bar wall black as well. For continuity, her choice again was Brazilian Montuck slate with a black tempered glass backsplash and black hexagon tile feature which ran up to the ceiling to draw the eye upward. The paint for the backsplash was formulated and supplied by Glass Paint Technology Inc. from Gormley, Ontario, and painted on by a local car sprayer. Chris Robertson of Extreme Linings and Coatings in Owen Sound poured a concrete bar counter and laid an epoxy finish on the concrete flooring as well. The exterior of the bar was finished in barn board to warm things up and underlit to offer mood lighting. Stools from UK District 8. Bay Bloor Radio was the source for the sound system which is app-controllable with unique


zones in all areas of the chalet. Behind the bar, a wine fridge and trough stainless steel sink from Riobel keeps things rolling. There is also so much under counter storage now that even Christmas decorations are being kept there. To finish the space, Janice commandeered a walk-in closet and transformed it into a powder room/laundry room right next to the bar under the mezzanine so guests wouldn’t have to go up a floor to use facilities. Another of the more significant features in the renovation is the fabulous sauna and shower room. Here Janice again performed her magic by turning it from clutter alley into a serene Nordicinspired spa. The original space had cedar on every surface, making it dark and confined with separate doors to a shower and sauna. Janice tore much of that out to brighten and modernize the look, converting it into one contiguous luxury spa with a hydronic heating system. The shower is enormous with ceiling mounted rain shower and a colourful light display. There are floating benches and a new Far Infrared sauna by SaunaRay, acclaimed for its health benefits and detoxification. The plastic swimsuit drying racks and rattan storage shelving are no more, replaced by storage cubbies, heated towel racks and shower niches. It’s only one more of the many superb highlights of this totally renovated chalet, which doubtless means that many more neighbours will soon be knocking on Janice King-Smith’s door. H

ow designer Sarah Richardson gets so much done is a marvel. With a lengthy resume of half a dozen TV series, a handful of books, a very busy design firm, spokesperson duties for Monogram, and most recently, a fabulous new collection of wallpaper, this powerhouse designer’s creative juices are unstoppable. In 2017, she and husband, Alex Younger, built their off-grid forever home in Creemore, and now they’ve exercised the same principles of exceptional design and eco-consciousness in the renovation of a heritage home on Main Street in their new town. Richardson manages the interior design work. Alex Younger is the passionate force behind clean solar energy. HGTV chronicled the build of their dream home in season one of Sarah Off the Grid and has again filmed this latest project from purchase to final reveal in season two of the six-episode series, now airing.

GL: What made you decide to renovate a new property so soon after completing your house? Well, we finished the house from Season 1, Sarah Off the Grid, and I think it had been all of six weeks and I thought, what should we do next? And there’s this dangerous little creation called the Realtor app and suddenly I was looking at properties. GL: Is there a reason you chose Creemore again? Honestly, I just love the area. I love my town and I thought, well the first home was so much fun, what else could we do? The reasons I do things are not necessarily the reasons other people do things. I think the Georgian triangle is a beautiful place and I want to keep making sure the world knows that. It’s kind of like my current mission. GL: Why renovate a century home instead of building from scratch again? I love historical homes. I’m the daughter of an architectural historian, so it’s in my DNA. And I love the idea of a dramatic ‘before’ that leads to a magazine-worthy ‘after.’ I think we live in a culture where people treat too much as being disposable. Here it sits on the main street and I believe in doing what’s right for the town, for the house, and for history. So, I like the idea of going in and restoring it, to make it work for the next hundred years. And I think it’s really beautiful. GL: Do you encounter a lot of issues in older structures? Yes, but my favourite part of the challenge is, that they have certain architectural features to offer. It’s not a completely blank slate of ‘what shall we do?’ It’s actually, ‘what shall we do with this room that has two bay windows?’ It’s about embracing the best of what’s there and reinventing and reinvigorating what’s not working. Then reprogramming it for an entirely new future that speaks to the needs of contemporary lifestyle. GL: What role did Tommy Smythe play in this renovation? He’s my sounding board. He is always my collaborator. I always say, I’m the Department of Interiors, my husband is the Minister of Exteriors and Tommy is my Style Counsel. 22

GL:A lot of renovators go on the cheap in renovations so they can maximize profits. How do you rein in your designer instincts? I don’t do anything on the cheap because my name’s on it and my brand is too well known. I’d rather make no money than sacrifice my reputation. So that’s Rule #1. Integrity isn’t something you can buy. You either have it or you don’t. In terms of how to balance a budget, I’m very practical. I can save and I can splurge. One of the things I do well is take inexpensive and make it look fantastic. That’s a journey that I love to go on and it’s a game I love to play. I don’t believe that style and budget are mutually exclusive. The first piece of work of mine that was ever published, and it was on the cover of House and Home in 1998, was a rental loft apartment that I lived in. The cover image was a two-dollar lamp, a fivedollar chair, a twenty-dollar table and a ten-dollar mirror. And that has taught me that you don’t have to have money to have good style or to be successful. GL: Were there special appliances you had to choose to go off grid? No, this house is grid tied. We installed solar panels on the roof and a battery bank so that the solar panels can fill the batteries and run what needs to be run in the house. If you need more power than what you’re getting out of the panels and batteries you can buy energy from the grid. But the other thing is, when you’re not home and it’s a gorgeous sunny day and you’re not doing anything, you are winding the meter back. I’m calling it the energy piggy bank, so you can save it for a rainy day. GL: You took a vacation mid-renovation. What ideas did you come back with? Oh, my gosh, so many. In the third episode, which is the principle bedroom, I was inspired by a bathroom at a lodge we stayed at in Kenya. I brought back textiles and colours that inspired me. There

was no shortage of inspiration. I think that you never regret traveling. Travel is the most incredible journey you can take for inspiration. There are photographs in the bathroom, in the first episode, which I took while we were on safari. GL: What’s your favourite room in the house? The kitchen/dining room. It was the game changer in the house. Walls removed, spaces opened, complete redefinition of how it was used and how it looks and still completely contemporary, while being sympathetic to the original architecture. Tommy has this game called Keep or Toss, and so the keep was: keep the original stair, keep the gorgeous handrail, keep the trim, keep the baseboard. Toss: the walls, the original floors, which were all a disaster, the popcorn ceiling, the leaking stack coming through the corner of the kitchen. You know, toss what’s not working. Keep what’s awesome. GL: What was your biggest challenge in this project? When I bought it, it had a little addition on the back and what looked like a perfect foundation and I thought we could literally put a two-story addition on top of the original foundation and be good to go and spend the $400,000 that I had allocated at the outset. But the foundation was three rows of concrete block sitting on absolutely nothing. So, we ended up with a house that was useless because the addition was garbage. The foundation was non-existent. And we had less than 1000 square feet of living space. I had no choice but to dig, and essentially, I had to double my original budget to pull it off. I thought I’d spend four hundred and I had to spend eight hundred. GL: What was your high point? I think my high point to this day is driving down and passing my house and having it look so pretty and proud. It makes me smile. I mean, for me it was about saving a piece of local history.

A

fter 28 years as a stained-glass artist, Joyce Buck has abandoned the familiar images of flora and fauna and entered the world of abstracts. “It’s so freeing,” she says. “When you’re doing an abstract you’re thinking piece by piece. You get away from doing the repetitive and can go hog wild. I go with the flow and the colours. I just keep adding to it, building. In some cases, I’ll be going from squares to long pieces to… hey, why don’t I throw a few round nuggets in the piece or make some trees out of solder and throw on a piece of glass. It’s a good way of using up bits and pieces and creat-

ing something new with them.” Which is a good thing, because her Black Swan Stained Glass Studio in Rosemont is so stocked with raw glass that she admits she will need to keep creating until “age 150” to use it all up. “It becomes an obsession,” she laughs. “You go to the glass shop and you look around. I like that piece, I don’t know why, or what I’ll do with it, but I’ll have some of that, and some of that, and some of that. My husband had to build shelves to separate it into colours.” Joyce Buck’s journey into the world of stained glass began in the early nineties with a gift originally meant for her husband. “It’s a funny story,” she recalls. “A girl was teaching in Violet Hill and I had bought a gift certificate for a class for my husbands’ birthday. I thought he might enjoy working with glass and soldering. But he was working shift work and couldn’t find the time. I thought, well, this has sat around long enough, I’ll go and try it myself.” One class and she was instantly hooked. The very first piece she made is still hanging in her living room to this day. By her third project, she was designing stained glass lights to hang over a pool table. Since then, she’s done transom windows on commission, garden art and stepping stones, lamps, window panels, sculptures, vessels, and objets d’art. Currently her


work is found in homes across the globe from Germany and Spain to Australia. As the artistic years ticked by for Joyce it was destiny that she too would become a teacher, introducing others to the creative world of stained glass. It’s a love affair, she explains. This dance with colour, glass, and light. “My life was busy but it kept pulling at me and pulling at me. What I’ve always liked about it is the layers. It can become 3D. My customers say that’s what they love about my work. That it’s not always flat, it has a dimension to it.” While her loyal clientele continues asking for nature and wildlife scenes, the work that really inspires her today are the free flowing abstract panels and fused glass sculptures shaped by the heat of the kiln. One of her most recent pieces was molded around a metal martini shaker. “Things go helter-skelter in the kiln,” says Joyce. “You use a metal martini shaker, coat that with a special coating so the glass won’t stick to it and the glass molds down the side, twisting and turning and comes out like a vase with holes in it. It would be nice with a candle inside.” Over the years, the physical demands of standing for long hours working in the studio have taken their toll and she finally set aside her teaching. Today she says she’s slowed down in quantity but not the least in creative inspiration. “When I was younger I could spend the whole day in there,” she says. “Now I’m slacking off. I do it in short spurts. Always listening to music. Enya, Sarah Brighton, Willie Nelson. My music is like me and my art. Cooking For Charity

Over the past six years, local restaurateur, Clyde Almeida, has raised over $36,000 for local charities with his cooking classes. Held once a month on a Sunday at his Alliston restaurant, Indian Flames, the local chef teaches 10 eager students the art of cooking tempting traditional Indian dishes. owntown Alliston’s Table for 2 offers a wide range of sizzling steaks to suit any meat-lovers palate. You arrived in Canada from Pakistan with your wife, Vanessa, 21 years ago with only $75 in your pocket. Fast forward to today and you now own and operate two restaurants. Can you talk about that journey? Clyde Almeida: You know, I always carry $75 in my wallet. If I’m ever feeling low, I look at that money and it tells me that everything’s going to be OK. It’s my security and it keeps me motivated. And going back to those early days, when I arrived in Canada, all I wanted to do was own my own business and create employment for other people. Because I was a trained chef, I decided to open restaurants. Seven years ago, I opened Indian Flames, and then last year, I opened Table for 2.

Why a steakhouse? CA: The same reason I decided to spice up Alliston with an Indian restaurant. Alliston didn’t have any Indian cuisine or a steakhouse. I wanted to change that [smiles]. Table for 2 is very close in proximity to Indian Flames. Do you move back and forth be-tween the restaurants regularly? CA: Even though, I’m now chef at Table for 2, I go back and forth between both kitchens at least three or four times a day. It actually takes 45 seconds to go from one to the other — so it’s no problem at all. I have trained an excellent chef to look after the culinary duties at Indian Flames so I can focus on Table for 2.

Take Your Backyard Entertaining Up A Notch

What’s on the menu at Table for 2? CA: Everything from salads and soups to mouthwatering steaks, delicious seafood, fresh fish, chicken and homemade desserts. What are the top sellers? CA: Bacon wrapped medallion steaks, prime rib steaks, rib eyes, and the New York sirloin with the seafood medley topping. I should add that our homemade steak sauces are really wonder-ful. What’s the secret to making a great steak? CA: Freshness, proper aging, and a good chef who knows the hot and cold locations on the grill. Because the meat we use is properly aged — it just melts in your mouth. What’s your food philosophy? CA: I believe our main purpose as humans is to serve. The best way to serve somebody is by feeding them good food. That’s my philosophy and it has taken me a long way. I love pleasing people as it gives me great pleasure and joy. In terms of food, we only use fresh high quality ingredients and we make everything from scratch. Even our steaks our cut in-house. We never use a freezer or microwave — I don’t think restaurant should. What about diners with special dietary needs? CA: We offer Thai vegetarian stir-fries as well as vegan and gluten-free options. We can even bring over Indian food from Indian Flames, if requested. And we have done that! Since we cook everything to order, we can also accommodate most food allergies.

GLAZED LAMB SHANK (recipe by chef Clyde Almeida) This delicious dish is sure to impress your friends and family. • 2 lamb shanks • 1 Litre water • 2 oz (1/2 cup) fresh ginger, peeled and chopped • 2 oz (2 whole bulbs) garlic, peeled and chopped • 2 oz (1/2 cup) onions, peeled and chopped • 3 pieces cloves • 3 pieces black pepper • 3 pieces green cardamom • 4 oz (1/2 cup) butter • 6 stalks asparagus • 3 oz (1-1/2 cups) • shiitake mushrooms, chopped • 3 oz (1-1/2 cups) • brown mushrooms, chopped • 3 oz (1-1/2 cups) • white mushrooms, chopped PREPARATION: 1. In a medium pot, add lamb, water, ginger, garlic, onions, cloves, black pepper and green cardamom. Cook for 90 minutes on medium heat or until meat is tender. Once the lamb is tender, remove from pot (keep the pot juices) and let cool. 2. In medium size pan, add butter and cook on medium until melted. Add asparagus and all mushrooms to pan, sauté. Add 6 oz (3/4 cup) of the au jus (juices from the medium pot of ginger, garlic....) into the pan with the mushrooms and asparagus. 3. Add lamb shanks into the pan of au jus and vegetables, cook on high heat for 3 to 4 minutes, stir frequently. 4. Place lamb shanks and vegetables in the centre of plate, pour sauce onto lamb shanks. You’re well known in Alliston as someone who gives back to the community. Over the past six years, you’ve raised over $36,000 for local charities with your Indian Flames cooking classes. Held once a month on a Sunday, you teach 10 eager students the art of cooking traditional Indian dishes. And they get to eat a meal at the end. Can you ex-pand? CA: The cost is $45 per person and 100 percent of the money goes back to charity. Countless local charities and not-for-profits including: Stevenson Memorial Hospital, Matthew’s House, My Sister’s Place, the Rotary Club and local schools — to name a few, have received donations from these classes.

In terms of decor, Table for 2 is long and narrow and features an open kitchen and local art. With only 26 seats, it serves up an intimate setting. Can you accommodate larger groups? CA: We can do more than tables for two [laughs]. We are great for parties and can serve up to 36 people. What about specials? CA: Every month, we feature a new steak special. In July, for example, we’re running a Jack Daniels marinated steak special. And on Tuesdays, we offer a three course meal (soup or salad, dinner and dessert) for $30. On Thursdays, we offer charcuterie platters starting at $35 for two people and $90 for four people. We also offer select wines on those nights. When I interviewed you for Indian Flames a few years ago, you said you were more interested in making friends, not just clients. Can you expand? CA: My overall philosophy in life is just to be a good person. Many of the guests that eat at my restaurants eventually become friends of mine. I just can’t believe how large my circle of friends has

Mini Pavlova with Whipped Cream & Fresh Berries Serves 8 Preparation time: 15 minutes Cook time: 1 hour

Ingredients 3 egg whites (at room temperature) 1/16 teaspoon cream of tartar (optional) 3/4 cup confectioners sugar plus 2 to 3 tablespoons for dusting 1/4 teaspoon vanilla extract 1Âź teaspoon cornstarch 2 cups fresh raspberries and blueberries (or fruit of your choice) 1/2 cup heavy whipping cream Instructions To make meringues: Preheat the oven to 250 F and line a baking sheet with parchment paper. Put the egg whites and cream of tartar into the bowl and beat on a medium speed until the mixture forms soft peaks. Increase the speed to high and start adding sugar, 1 tablespoon at a time. Add vanilla extract and beat until stiff and glossy peaks form. Take a rubber spatula, gently fold in cornstarch. Spoon 8 mounds on a prepared baking sheet and using a back of the spoon create a slight dip in the centre of each meringue. Bake one hour. Turn off the oven and let the meringues dry completely in the oven for about 45 min. To make cream: In a large mixing bowl, beat whipping cream until stiff peaks form. Spread about a tablespoon of cream into each meringue, garnish with berries and dust with confectioners sugar. Serve immediately. Note: Pavlovas (without cream or berries) can be baked the day before and stored in a sealed container at room temperature.

Basil Frittata with Smoked Salmon Makes 8 slices | Preparation time: 10 minutes | Cook time: 8 minutes Ingredients 1 to 2 tsp horseradish cream 250ml (1 cup) sour cream 6 eggs 1/3 cup cream 1/3 cup shredded fresh basil 1/2 cup grated parmesan cheese salt and freshly ground black pepper 2 tbsp canola oil 16 slices smoked salmon 100g arugula, baby spinach or pea shoots 38

Instructions In a small bowl, mix horseradish and sour cream. Add more horseradish if you like heat. Set aside. Preheat oven to broil. In a medium bowl lightly whisk the eggs, then add the cream, basil, cheese, salt and pepper. Heat oil in a 12â€? heavy-based, oven proof frying pan over a medium-high heat. Pour in the egg mix. Lower heat and cook for 4-5 minutes, or until the frittata is mostly set. Transfer pan to oven and ďŹ nish under a grill until slightly brown and set

in the centre. Remove from oven (careful, handle will be hot) and allow to cool slightly. Slide the frittata out of the pan while still warm. You may need to run a palette knife under the frittata to ease it out. Cut into eight wedges. To serve, top each slice with two slices of smoked salmon, arugula and a dollop of the horseradish cream, or serve whole with slices of salmon and arugula arranged on top, with horseradish cream in a bowl on the side.

Ingredients 2 cups chopped honeydew melon 3/4 cup apple juice 1 cup fresh baby kale or baby spinach 6 to 8 mint leaves Instructions Place all ingredients into a blender and blend until frothy and smooth. Note: For a frozen treat pour the mixture into popsicle moulds and freeze.

Is one style of wine better than the other? Fans of oak-aged Napa Cabernet Sauvignon and Australian Shiraz will likely gravitate toward modern styles of wine, whereas lovers of earthy red Burgundy and savoury Chianti will probably find more satisfaction with traditional styles. But isn’t this proverbial new vs. old world debate getting a bit… old? These days, there’s absolutely no need to take a definitive stand in this battle. The line that once separated new and old is being erased. An increasing number of new world wine producers are using old world practices, and old world producers are adopting more sustainable techniques – something that, at one time, was more synonymous with new world wines. In other 40

words, there’s delicious wine for everyone, from every region. Three hot and trendy techniques causing a major buzz in the world of winemaking, not to mention winning the hearts and taste buds of consumers, are terroir-expressive single vineyard wines, natural wild-ferment wines and the use of the appassimento method to produce wines. They’re transcending the old vs. new debate and are becoming the new norm. TERROIR

Terroir is defined as being the complete natural environment in which a particular wine is produced, including factors such as the soil, topography and climate. These elements impart taste


taste | GL wines and flavours that can be unique to other surrounding areas. The type of soil and the slope of the terrain determine the needs of the vines and significantly affect the work in the vineyard. For example, gravely soil, rich in mineral salts, can be perfect for producing grapes with a high level of acidity and with intense aromas. Even though wines emphasizing terroir have been around for decades – if not centuries (think Burgundy) – it’s only become a hypedup topic in the past ten years or so, especially in new world regions. Consumers are now willing to pay more for single vineyard bottlings, and producers are identifying specific vineyard blocks or sites right on the label. There’s no doubting that an important relationship exists between the components of the terroir and the quality of wine. The specific techniques used in the cellar by the winemaker are what can separate it from the rest. It’s the added variable for obtaining a higher quality wine.

Ontario is a “new world” region home to a variety of winemaking styles including, but not limited to, each of the mentioned methods. Enjoy delicious wine, made with a deliberate sense of traditional technique and modern flare.

APPASSIMENTO

Appassimento is a wine processing technique in which harvested grapes go through a drying process prior to fermentation. This process is used traditionally in certain Italian wine regions to make the popular Amarone, Recioto and Valpolicella Ripasso wines. Appassimento influences the flavour and concentrates sugars in dried grapes resulting in a more rich, bold and complex wine. Although Italy made this technique famous, it’s a style that’s been adopted by many new world winemakers, further signifying the adage “what’s old is new again”. NATURAL WINEMAKING

Natural winemaking is a trend that’s been on the rise for several years now. It’s a polar opposite method than that of the one mentioned above. No additives or processing aids are used, and intervention in the naturally occurring fermentation process is kept to a minimum. As such neither fining nor filtration is used. The result is a ‘living’ wine – wholesome and full of naturally occurring microbiology. Even if you’re not drinking a 100 per cent natural bottle, you can expect this trend to have trickle-down effects across the industry as winemakers are adopting more sustainable practices to keep up with demand for wines that are made in harmony with nature.

Bachelder 2015 Lowrey Vineyard Pinot Noir

Thomas Bachelder is an expert when it comes to expressing a wine’s terroir. He’s got various projects on the go, but this wine, coming from his own label, is truly an exceptional example of what is happening right now in Ontario when it comes to single vineyard bottlings. This Pinot, from the esteemed Lowrey Vineyard site, is deep with earthy ripe and concentrated dark fruit flavours, structured to age gracefully for up to a decade. Taste the difference terroir makes. There is no mistaking this for another. ($44.95)

Foreign Affair 2016 Temptress

Ontario’s 2016 vintage was excellent, producing fruit with very ripe flavours and lower acidity. Known for their Italian winemaking influence, Foreign Affair’s Temptress is a wine made partially in the appassimento style with 25 per cent of the grape makeup set aside to dry for 100 days. Only the best barrels from individual vineyard blocks are chosen for this five-varietal blend which boasts a lovely bouquet of aromas and a hearty, bold and elegant palate. If you can resist the temptation of wanting to drink now, this will happily age well over the coming five to seven years. ($44.95)

Southbrook Vineyards 2017 Estate Wild Ferment Chardonnay

This vegan friendly wine, containing a variety of certified organically grown grapes, was made out of naturally occurring yeasts. Wild fermentations are slow and create wines of complexity and a distinct taste of place. This is definitely a wine with aging potential, but right now it exudes a delicious balance of refreshing acidity and savoury oak flavours. Once you go natural, you may never go back! ($35)

Portland: epicentre of cool culture It could almost be Canadian — environmentally conscious, liberal, outdoorsy and friendly. The idiosyncratic character of Portland, Oregan, though, makes it unique. I love the unpredictable funk of this city. Where else would the new trend in natural wine bars find such instant popularity? Natural wines are those that have been made from wild yeast, with no chemical intervention — a controversial but interesting new/old twist on wine. Bar Norman is just one of a clutch of new bars that focus on natural wine. It was here that I got hooked on Stumptown coffee, Voodoo Doughnut and food cart dining. Then I discovered there was more than Stumptown. The city has the highest concentration of independent coffee roasters in the US. Portland is also known for its experimental food scene and craft beers. Try a glass of Moon Pie, a dark stout from Great Notion Brewing. Walk through the Pearl District to enjoy galleries, shopping, brewpubs, coffee houses and restaurants. Fork-town Food Tours offers niche food tours, including a gluten-free one. Great restaurants are numerous. At Beast, award-winning chef Naomi Pomeroy serves produce-driven fine dining. Bullard, in the new Woodlark Hotel, is run by Top Chef alumnae Doug Adams. Visit the Portland Saturday Market where you can meet local makers, try out the food carts and indulge in some creative shopping. There are gorgeous gardens; outdoorsy types can enjoy a pedal boat tour on the Willamette River or take a hike or bike tour through urban neighbourhoods and the surrounding countryside to appreciate the scenery. The nearby Willamette Valley produces some of the best pinots in North America and a wine tour invites you try many of them. Amsterdam: abundant arts At the beginning of Donna Tartt’s Pulitzer Prize winning novel, The Goldfinch, protagonist Theo Decker is sitting in a hotel room beside a Dutch canal, wondering when he will be arrested. I loved the novel, but the really captivating thing for me is the fact that Theo is sitting in my favourite hotel in Amsterdam, the Ambassade. It’s a treasure: a 56room, five-star hotel comprised of 10 different canal houses joined together. But the real attraction is the library, filled with over 5,000 books, all of them signed by their authors. Because the hotel is situated on the Herengracht, which is the location of many of the city’s publishing houses, visiting authors have been routinely booked into the Ambassade and have contributed copies of their books. Tartt’s stay at the hotel gave her the background for her opening chapter. Read the book, if you haven’t already, and visit Amsterdam before September when the film version of the novel, starring Nicole Kidman and Ansel Elgort as Theo, is due to be released. You will be primed to enter into the densely-plotted story about a famous painting, the importance of art and the role of fate in our lives. The painting in the book, a small portrait of a goldfinch chained to its perch, painted by Rembrandt’s student, Carel Fabritius, is an exquisite example of Dutch golden age painting, and that’s another important reason to visit this year — the city will be celebrating Rembrandt’s 350th anniversary. The Rijksmuseum as well as others will be highlighting Rembrandt in honour of the anniversary. Amsterdam’s Rembrandthuis, where the artist lived and worked for several years, celebrates the artist’s life with a recreation of his studios and living quarters. The Rijksmuseum will map out art trails through Amsterdam to places where the artist lived and worked. The trails can be accessed on foot, by bike and by boat on a canal cruise.
