It found that whey, which is a by-product of cheese production and found in many dairy products, was more effective at controlling blood sugar than other sources of protein such as eggs, soy or tuna. In an article in the Independent, Dr. Daniela Jakubowicz, professor of medicine at Tel Aviv university, said that the whey protein diet significantly suppresses the hunger hormone ghrelin. J

ason McLean of Method Contracting directs each of his builds with a theatrical bravura. So, when it came to creating his own home on a 4.8-acre spread in Duntroon, his approach was no different. The prologue to this production is an expertly staged entryway, separated from the great room by a sleek floating wall. “It’s feng shui,” McLean says. And then the real drama begins. In front of the wall, an oversized antique school bench from the 1800s awaits visitors. It’s the spot to shrug off coats and boots. “We found [the bench] at an antique shop in Collingwood,” he says. It was a 10th anniversary gift to his wife, Allison. Above it hangs a lively piece of modern art,

deliberately chosen to deliver the theme of the residence — modern meets rustic. Helping McLean bring that theme to life was architectural technologist Pam Farrow. “We’ve done seven homes with Pam,” McLean says. “She gets it.” He and Farrow tend to have three or four site meetings where they discuss flow, his visions on capturing views and the lifestyle routines that will affect the design of the home. “How the kids come in from school, where you dump your hockey equipment and so on,” McLean says. “With Pam, it’s very quick. She’s 80 to 85 per cent there on the first drawings. Extremely talented. We do some tweaks, elaborate on what we want and she always delivers.”

There’s so much light flooding in from the windows, that McLean decided to paint the walls a classic grey. “Lighting is a big thing,” he says. “You have so much brightness in there, you don’t want it to be too stark.” Returning to the kitchen, you begin to truly appreciate the functionality of the space. Appliances include a Pro Line KitchenAid refrigerator and eight-burner Wolf stove. A set of red lounging chairs in front of the island enlivens the area. As much as it’s a show kitchen, it is also for true cooking. The high-gloss cabinetry sports a scratch-resistant coating. The uppers open from below and all hinges are self-closing. Massive double free-standing pantries on the far wall are separated by a workstation that seats two. There’s even a cozy ottoman by the window. “I wanted a workstation for my kids so I can monitor them doing homework while preparing dinner,” McLean says. “And sometimes I want to be around my family, so I’ll do some paperwork there, away from the water.”

Made for family The kitchen island was extended to include a walnut breakfast bar that comfortably seats this family of four. “It’s intimate and cozy,” McLean says. And this is where the family eats most of their meals. The larger live-edge walnut dining table, built by Adam Garbutt of AG Designs, is reserved for entertaining. The main-floor master holds another floating wall that divides the sleeping quarters from the industrial-styled closets, and allows the bed to sit in the centre of the room, taking advantage of the countryside views. The spa-inspired ensuite offers similar views. Here, a soaker tub and walk-in shower stall with a massive rain showerhead eases all stresses. All fixtures are Riobel. The south-facing den also on the main floor is used more as a study room. It has a lower ceiling for intimacy. An old drafting table with architectural legs was a thrift store find, says McLean, who preserved it by topping it with tempered glass, secured with two steel rods on either side.

Flawless flowerbeds without a hint of pest damage, and lawns of pristine green even at the height of summer used to be a source of immense pride for gardeners. Today, however, many of the best and most knowledgeable gardeners know this picture-perfect image is actually not the ideal, because it can only be accomplished through practices that are at odds with the health of the planet — including heavy watering, and using chemical pesticides and herbicides.

Instead, many gardeners are now willingly accepting the occasional blemish in their yards because it means they are being good custodians of the environment. Eco-friendly, or green, gardening is about more than having a chemical-free plot. It’s about creating your own healthy ecosystem where everything is intertwined, and where ultimately the garden requires less maintenance and less expense in upkeep.

A garden that is too crowded fosters disease, so you’re just asking for trouble.” Instead, Polman recommends native plants, as they are adapted to the region, or cultivars specifically bred for hardiness. She also points to drought-tolerant plants, such as hens and chicks, sedum and some grasses, which require little maintenance. Control your pests Those who garden will have their share of clashes with critters. It’s inevitable: a garden will be home to everything from slugs to insects to rodents. But don’t race out for that pesticide spray, Lidstone cautions. “I think people need to adjust their mindset when it comes to pests. We should be looking for diversity, not a surgical-type garden, and pests are a part of a balanced garden ecosys-

soil when planting,” Polman says. “Manure and compost are great, because they assist in water and nutrient retention, and add nutrients to the soil. Sandy soil is difficult to grow in, as it won’t retain moisture or nutrients, so you’ll need to add triple mix.” Adding organic material is incredibly beneficial. That’s why many gardeners have a compost bin in their yard to transform kitchen and yard waste into nutrient-rich material. Bonus: You divert material from landfills while benefiting your garden. “Soil is like humans in that it tends to revert back to old habits, so you need to amend soil on a yearly basis for best results,” Polman says. “If you do, you’ll water, weed and spray for pests less often, because the plants will be healthy.” Control your weeds Unsightly, and crowding out our flowers and

Pick your plants Knowing and accepting what will work in your garden’s conditions is half the battle. Delicate, exotic plants that require special pampering shouldn’t make it past your garden gate, at least not in any large number. “People typically plant by colour, but I think they should plant by drinking habit,” says Debra Lidstone, landscape designer and installer at Barrie Botanix. “Grouping droughttolerant plants together and thirsty plants together elsewhere makes better use of water and leads to better results. People put far too much thought into colour and less thought into the habits and needs of a plant.” Gabrielle Polman, indoor live goods supervisor for Bradford Greenhouses in Barrie, agrees. “It’s important to select plants for your hardiness zone, as well as for the sun and soil conditions. tem. Keep in mind that bad insects are food for the insects we think of as good insects,” she says. Lidstone reminds us that it’s okay for there to be holes or spots on leaves, and asks us to consider: “We love butterflies and plant flowers that attract them, and yet people don’t stop to think that butterflies begin as caterpillars that eat leaves. Not every bad bug needs to be removed; we need to establish an acceptable threshold and maintain a healthy balance.”In many cases, troublesome insects can be hand-plucked, washed away with water or deterred by companion planting.” Companion planting is an age-old practice in which a certain plant is grown near another to ward off an offending insect. Zinnias, for example, are often planted near cauliflower, because they tend to attract ladybugs that help protect the vegetable from pests. Entire books have been written on the subject, and it truly does work. Create healthy soil Healthy soil is the foundation upon which a successful garden rests. “Always amend your

grass, weeds are the bane of the garden. Most people are quick to reach for the herbicide, but chemicals aren’t an Earth-friendly solution. The greenest approach? Pull them out by hand and lay down lots of mulch. “Adding several inches of organic mulch — but not cocoa mulch, which gets mouldy and clumps together — will keep weeds down. It also holds moisture in the soil and improves the soil by adding nutrients as it decomposes,” explains Derwyn Miller, president of the Newmarket Garden Club. One word of caution: Make sure to keep the mulch away from the trunks of trees and the crowns of perennials. This will help prevent rot and keep rodents from making a home near the roots. A real green thumb It’s easy and rewarding to make natural, healthy changes to your garden. It’s beneficial to the environment, and your garden will actually grow better for it. Consider what changes you can make — and enjoy the pride of having a real green thumb.

f you’ve been to Paris, you can’t miss how important café life is to the culture. Parisians believe in lingering intermittently throughout the day to savour a sumptuous meal. It’s one of the things that makes life worth living. Heli Vogrin has brought a little piece of that Paris philosophy to Collingwood in her quaint European-styled bistro, Heavenly Café, which serves French breakfast and lunch classics, organic Kicking Horse coffee and handcrafted desserts that would make any Parisian feel right at home. Cheesy French onion soup, savoury croque-monsieur sandwiches, thick and juicy French toast, goat cheese frittatas, oozing cinnamon buns, decadent chocolate desserts and legendary carrot cake are all served here to tickle the taste buds and satiate ravenous appetites.

in the kitchen | Heavenly Café Inside, the café has all the earmarks of a typical European eatery, with an eclectic selection of bistro tables and comfy wingback chairs in corners or by windows. The atmosphere is friendly and unforced. You can grab quick takeout or sit and drink in the Parisian vibe. It all began with a truffle. While in the throes of a busy fashion career, Vogrin attended a demo for basic chocolate-making and was immediately smitten. Before she knew it, she was diving deep into the mysterious method of tempering chocolate and eventually developed her own line of hand-rolled truffles. That journey would lead her to cast aside the career in fashion and become a force in the gourmet sweets industry, where she’s established a vast customer base across Canada, including Pusateri’s, McEwans, Whole Foods and the high-end gift basket market. But Vogrin’s longing for more face-to-face interactions with her customers gradually inspired a new venture — her delightful café bistro. “I love meeting people and talking to them,” Vogrin says. “We have some people who come in every day for their coffee and morning breakfast, or a couple of times a week for lunch. You meet the most interesting people. That’s the best part of this business. People are happy and smiling because they are having something good.” That “good” includes creations that are free of preservatives and artificial flavours, and chocolate desserts that are prepared with authentic Belgiun chocolate. The café’s day begins at 8 a.m. (10 on Sundays), when luscious breakfast crepes and brunch platters jump-start customers’ mornings. The feeding frenzy continues until the supper hour, which is filled by soups, wraps, quiches and tasty ciabatta buns stuffed with brie, figs, toasted walnuts and arugula. A lemon bichon and frangipane torte or macaron afterwards helps to sweeten the day. The café closes at 6 p.m. most days (5 p.m. on Sundays), but with its newly acquired liquor licence, Heavenly Café has plans for themed “International Happy Hours,” starting at the end of June. “We’ll feature a country with a special cocktail and pair that with traditional finger food,” Vogrin says. “For Mexico, the de rigueur margarita and quesadilla, of course.” For Estonia, (Vogrin’s heritage), a vodka-cranberry cocktail and savoury pirukas, a flaky pastry filled with meat, mushrooms and carrots. Canadian Maple Syrup Chocolate Chunk Cookies 1 cup unsalted butter melted and cooled for at least 5 minutes 1 ½ cups light brown sugar ½ cup white sugar 2 eggs room temperature 1 tsp vanilla extract ¼ cup maple syrup 3 ¼ cups all-purpose flour (unbleached, if possible) 2 tsp cornstarch 1 tsp baking powder 1 tsp baking soda 1 tsp salt 1 cup coarsely chopped good quality Belgian semi-sweet or bittersweet chocolate 1 cup mini semi-sweet chocolate chips In a large bowl, stir together the melted butter and sugars. Add eggs, one at a time, stirring and whisking with a fork to combine. Stir in vanilla and maple syrup. In a separate bowl, whisk together the flour, baking powder, baking soda and salt. Gradually add the flour mixture to wet mixture, stirring until completely combined. Stir in the chocolate chunks and chips. Cover the bowl with clear wrap and chill for at least 30 minutes. Preheat oven to 350°F and line 2 cookie sheets with parchment Scoop 2 tablespoons of cookie dough, roll into a ball, keeping them a little taller than wide, and place each on the cookie sheets, keeping them about two inches apart. Bake for 13-15 minutes (they may look slightly underdone, but if the edges are turning golden brown, then take them out). Allow to cool completely before removing from the parchment. Makes about 24 large cookies

Five Questions With Heli Vogrin When did you first become interested in cooking? When I was a small child, about 10 years old, just helping my mom. Probably cakes were the first thing I liked to bake. I loved sweets when I was little. I didn’t get into cooking until I was in my late teens, I’d say. You start dating, get engaged and start cooking for your spouse. Who is your favourite chef? That’s a hard one for me: Wolfgang Puck, chocolatier Jacques Torres, his stuff is amazing in Paris right now. Pierre Hermé…. They’re all so amazing. What would you say is the most common mistake people make when cooking? They don’t measure properly. You have to do things in a certain order, especially in baking. In cooking you can throw and taste and adjust, but you can’t do that with baking. When you’re making cookies for instance, if your butter’s too soft, it’s going to turn out different. Also, always use the best quality ingredients. Measure first, then put them in.” What is your signature dish? Croque-monsieur. What do you order when you dine out? I like to try new things, different things, seafood, something with a wine sauce. I tend toward the more European fine cuisines, lobster thermidor, coquilles St. Jacques, steak l’entrecôte or a really good risotto. I love risotto.

strawberry-stuffed French Toast 8 ounces cream cheese, softened ¼ cup 14% sour cream ¾ cup icing sugar 1 tsp vanilla 1 cup sliced strawberries ¼ cup white sugar

Vanilla Cinnamon French Toast Batter 1 loaf French bread, cut into 1-inch thick slices 3 large eggs (room temperature) 1 ½ cups milk (full milk is better, but 2% will work too) 1 tsp vanilla extract

In a mixer, cream together the cream cheese, sour cream and icing sugar. Beat at low speed, scraping sides down, and then beat at medium speed for approximately 2 minutes.

Heat a skillet and add a pat of butter to the pan.

Slice berries. Toss lightly with the ¼ cup white sugar.

When the skillet is hot, place the coated French toast in and cook each side 2 to 4 minutes till golden brown.

Dip the French toast into the batter coating both sides.

Whisk the milk, eggs, vanilla and cinnamon

Serve immediately with extra berries on top as a garnish, sprinkle icing sugar on top and serve with real maple syrup.

Spread a thin layer of cream cheese filling to cover a slice of bread, making sure to spread it to the edge. Arrange berries in even layer on top leaving a ¼-inch gap around the edges. Spread another layer of cream cheese filling on another piece of bread, and gently press the cheese side onto the other side with the strawberries. Press down all around the edge to make a seal around the berries.

Makes eight servings.

Cut eggs in half lengthwise. Remove yolks and place in a medium-sized bowl. Set egg whites aside. Mash yolks with a fork, then stir in mayonnaise, mustard, salt and pepper. Spoon or pipe yolk mixture into egg white halves. Sprinkle paprika overtop, if desired. Serve immediately, or cover and store your eggs in the refrigerator for up to 2 days. Makes 24.

ith spring here and the snow in Muskoka finally melted away, it is a wonderful time to dream of the sundrenched Aegean sea and Greek islands. What better way to transport you there than by preparing a few delicious Greek dishes such as moussaka and marinated olives? The eggplant in the moussaka really takes on the flavours of the spiced ground beef and adding ricotta helps lighten the texture of the dish. Hummus such a great dish to prepare at home. You can add in your preferred spices and is super simple to make. Kali Orexi! (Enjoy your meal!)

Spiced Hummus INGREDIENTS 2 ½ cups dried chickpeas Water for soaking and cooking 2 tsp baking soda 2 tbsp salt 1 large onion, halved and peeled 12 cloves garlic, divided 4 bay leaves 1 ½ cups tahini 1 lemon, juice and zest ¼ tsp ground cardamom ½ tsp ground cumin Salt and pepper for seasoning Paprika

Earl Grey-soaked Yogurt Cake

Olive oil for garnish Method In a large mixing bowl, place the chickpeas and fill the bowl with water. Soak overnight, adding extra water if needed. In a large pot, place the drained chickpeas, baking soda, 2 tbsp salt, onion, 4 cloves of garlic and 4 bay leaves. Cover with water and bring to a boil. Reduce the heat to a simmer and cook for at least an hour. The chickpeas need to be very soft to blend into a smooth purée. Drain the chickpeas, reserving the cooking liquid to add to the hummus later. At this stage, if you can remove as many of the skins off the chickpeas as possible, you will produce and much smoother hummus. Don’t worry if you miss some, they will still blend up pretty well. Place the chickpeas in the bowl of a food processor or blender and add tahini, the 4 cloves of cooked garlic, and 8 cloves of raw garlic. Add enough cooking liquid to reach the top of the beans and blend for 1 min or until nice and smooth. If the hummus is too thick, add more cooking liquid to loosen the mixture. Once you are happy with the texture, add in the lemon, cardamom, and cumin, then blend until mixed. Check the seasoning and add any extra salt and pepper to your taste. Serve the hummus with a nice drizzle of best quality olive oil and a sprinkle of paprika.

INGREDIENTS Butter or oil and flour for greasing the pan 1 cup Greek yogurt 2 eggs 2/3 cup canola oil 2 cups sugar, divided into 1 cup each 1 ½ cups flour 1 tbsp baking powder 1/3 cup Greek yogurt ¼ cup blueberry jam 1 cup water 2 Earl Grey tea bags Icing sugar for dusting

Method Preheat the oven to 350 F Grease (with butter or oil) and flour a 9” round cake pan. In a mixing bowl whisk together 1 cup of yogurt and the eggs. Whisk in 1 cup of the sugar and oil then set aside. In another bowl whisk together the flour and baking powder. Then fold the dry ingredients into the wet and stir until just combined.

Pour the batter into the cake pan and smooth the top. Place the cake in the middle rack of the oven and bake for 50 mins. The top will be golden brown and the cake set all the way through when done. While the cake is baking, mix together the 1/3 cup yogurt and the jam, then make the Earl Grey syrup. To make the syrup, place one cup of sugar and one cup of water in a small sauce pan and heat over high heat. Stir and once the sugar has dissolved, place the tea in the pot and heat for another 2 mins. Remove from the heat and let the syrup cool in the fridge. Once the cake is finished, take the cake out of the oven and place it in the pan on a cooling rack for a few mins to cool. Using a dinner knife, run it between the edge of the cake pan and the cake to release it from the side of the pan. Cover the cake with a large plate and tip upside down to remove the cake from the pan. Flip the cake off the plate and onto the cooling rack, let cool to room temperature. While the cake is cooling, prick it with a fork all over. Then brush 4 tbsps of the cooled syrup over the cake. Using a fine mesh sieve, dust the cake with icing sugar while still on the cooling rack, then transfer to a cake plate and serve with the jam and yogurt sauce. Makes 8 servings. Lemon and Dill Marinated Olives INGREDIENTS ¼ cup fresh lemon juice 1 tsp honey 1/3 cup olive oil 1 tbsp dill, chopped 1 tbsp parsley, chopped 2 tbsp red pepper, finely diced

Method In a bowl with a lid, combine the lemon juice, honey, olive oil, dill, parsley and salt and pepper. Stir together until thoroughly mixed. Stir in the olives and red pepper. Cover the bowl and set aside to marinate for at least an hour. (They will last in the fridge for at least a week.)

Skillet Moussaka Serves 4

INGREDIENTS 1 eggplant, sliced into ¾” thick slices Olive oil for drizzling and 2 tbsp for cooking 1 onion, diced 1 lb of ground beef 1 tbsp tomato paste 4 sprigs fresh oregano, stem removed

the mixture constantly, let it brown to a nice light tan to medium-brown tone. (This should take a few minutes.)

Turn the oven to broil, put a rack in the top position and broil the eggplant for 4 mins a side, or until they have started to brown.

Add in the milk and stir to combine. Switch to a whisk and stir while the milk comes to a boil – this will prevent lumps in your sauce. Once the sauce begins to bubble and the texture is nice and thick, you can remove from the heat. This should will take about 10 mins.

3. Remove the eggplant from the oven and set aside. Then preheat the oven to 350 F. Heat a cast iron skillet over medium high heat and add the olive oil. Once the oil starts to shimmer, add in the onions and beef.

Once the beef is just cooked through, add the tomato paste, fresh oregano, cinnamon, allspice, honey and a pinch of salt and pepper. Cook for another 5 mins over medium-low heat until the mixture is fragrant and any excess water has evaporated.

Salt and pepper 1 1/3 cups ricotta 2 tbsp flour 2 tbsp butter

Add in the past, pepper and nutmeg and stir to combine. Layer the eggplant slices over the meat and spread the ricotta over the eggplant. Then pour the béchamel sauce over the ricotta and place in the top third of your oven. Bake for 30-40 mins. Once the top is nicely browned, it is ready to serve.

Taste the mixture and add in any needed salt and pepper. Take the mixture off the heat and set aside.

Get your toes into tip-top shape for sunshine-filled days and sultry summer nights By Andrea Karr

Super Soaker First things first: Take a shower or soak your feet in warm water for up to 10 minutes. This will soften the skin to make pushing cuticles back and filing dry patches much easier. “Just don’t soak your feet for too long, because you don’t want them to be so flooded with water that you can’t tell the difference between dead and live skin,” Khan says. Clip-N-File Clip your nails straight across. Don’t cut them too short; otherwise, you might encourage a nail to grow into the skin — known as an ingrown nail — rather than out and over. Also refrain from letting your nails grow beyond the end of your toe, which can cause irritation when wearing shoes. No matter the length of your toenails, try to avoid narrow, tight footwear, which can put unwanted pressure on your feet. Next, file your nails to smooth and shape them as necessary. Use a rougher grain first to remove excess dry skin, then file

Paint Job After placing separators between your toes, apply a base coat to protect the nails from yellowing, and then brush on two coats of colour and one layer of top coat to seal in your hard work. Buenos Aires is a beautiful city of contrasts. From the iconic Casa Rosada, with its stunning balcony (above) where Eva Peron so famously spoke, to the humble and numerous parrillas, where barbecue is the order of the day. Taking in both experiences, by the way, is well worth your while.

Set up camp There are many neighbourhoods to hit, but establish home base in the fashionable, comfortable Palermo, which is divided into three sub-hoods: Palermo Viejo, Palermo Soho and Palermo Hollywood. From there, break up your days visiting other parts of town. The core (Microcentro), San Telmo, La Boca, Recoleta and Barrio Norte, just to scratch the surface. Our pick of the boutique bunch in terms of Palermo hotels is Home Hotel (homebuenosaires.com), whose name really suits it — fantastic decor, a cool spa, a terminally cute back garden and pool, and some of the best cocktails in town. For best value, though, consider renting a condo and getting a bunch of friends to travel with you. There are many websites that can set you up comfortably and easily, in particular, Buenos Aires Habitat (buenosaireshabitat. com). Try to find something chic with a rooftop pool — great for reviving the soul after an afternoon in the considerable heat. See the sights Take time for the obligatory Buenos Aires must-dos, even if some of them are merely a breeze-through. Don’t miss the Plaza de Mayo, a key commercial area bounded on one side by the Casa Rosada, the pink presidential palace with the world-famous balcony (and just try not to sing that song). Trip through the chaos of Florida Street, hopefully side-stepping the pickpockets. The Japanese Garden is a perfect chance to get away from it all for an hour or so, as is the Museo Evita (museoevita.org.ar), which is filled with memorabilia and some pretty cool souvenirs. Set aside a solid two hours for the marvellous Museo de Arte Latinoamericano de Buenos Aires, or MALBA (malba.org.ar). The café there is top-notch, should you want to schedule your visit around lunch. Note that most art galleries and museums are closed on Tuesdays. Recoleta Cemetery (recoletacemetery.com) exhibits a maze of above-ground crypts old and new, where lie the city’s well-to-do. The mix of architecture makes for interesting snapshots and the beauty is surprisingly un-creepy. This is where Eva Peron is buried, so make sure you get the obligatory photo. And if you really need to see an overpriced tango show, by all means: try Rojo Tango at the Faena Hotel + Universe (rojotango.com). Tuna carpaccio with shaved foie gras, veal tartare, sea bass, stuffed quail, amazing desserts. Patrons are buzzed in through a graffiti-strewn entrance, enhancing the mystique. Make La Cabrera (lacabrera. com.ar) a priority, the top steak place — or parilla, is constantly busy to overflowing. Bio Solo Orgánico (biorestaurant.com.ar), a small organic vegetarian restaurant, is a delightful fresh-flavour experience, and a huge break from the barrage of beef. For cocktails, Frank’s (no website, Arévalo 1445) has a Get Smart-type entrance, where you gain entry by dialling the “secret code” in an American phone booth, the back of which then opens out onto a ’20s-style lounge. Suspender-wearing bartenders specialize only

in drinks fashionable from that era, and the well-dressed mixed crowd is interesting and friendly. For more pre-club congregating, head closer to the centre of town to step back in time at old Argentinian mansion-cum-restaurant bar Milión (milionargentina.com.ar) and see the town’s beautiful people at play. Hit the shops Palermo Soho is one of the best shopping regions in Palermo, home to all the top boutiques in town, all kitted out in former industrial buildings and spruced-up old mansions. Set your sights on Jorge Luis Borges, Armenia, Honduras, Gurruchaga or Malabia streets and take it from there. The open markets on Plaza Serrano and Plaza Armenia are busy on the weekends with both tourists and

locals, if you like that sort of thing. Take Care Palermo is relatively safe and quiet, but elsewhere, beware of the bling! Flashy jewellery and watches say, “I have money” and “My bag likely has a nice phone in it.” Bank machines are few and far between, so stock up when you see one, unless it’s at night (never a good idea). Expect lineups, especially midday. Tread carefully: The concept of picking up after your pet has not reached Argentina. Described by the guidebooks as a “relaxed atmosphere,” customer service is hit and miss. Shoppers and retailers actually chat, sometimes for many minutes. Be prepared to watch servers bus a table for a full five minutes before wandering over with a menu. Have fun!

How to

Navigate

Connecting Flights Never throw caution to the wind. Take all the right steps to make sure your flight connections flow as smoothly as possible. Here’s how By Doug Wallace 1. Whenever possible, try to leave plenty of time between your flights just in case your starting leg kicks off behind schedule. A good rule of thumb is to aim for at least 90 minutes. 2. Carry-on luggage is always preferred. If you do have to check a bag, keep in mind that you may need time to collect it from the carousel and recheck it through to your final destination.

5. Never take the last flight out of anywhere, or you could find yourself settling into a nice bourbon at one of the airport’s cardboard motels. 6. Never assume the airline has built in the necessary time to connect. Find out what the minimum connection time is at your connecting airport. 7. Smaller connecting airports will have fewer problems, fewer people and less traffic than the insanely busy JFKs and LAXs of the world.

3. Build in time for possible security checks at the connection. Don’t assume you’re going to just saunter over to your next departure gate. You may even have to change terminals.

8. Consider the weather in the connecting city. There is more chance of a weather delay in New York than in Miami.

4. Book the flights as far in advance as possible, and go with the morning routes. You’ll have a much better chance of correcting a connecting problem if it occurs early in the day.

9. Never buy two separate tickets. If your first flight is delayed, you will have to eat the cost of the missed second flight. Or, book flights within the same alliance.

10. Try to sit at the front of the plane for your first flight so that you can make a quicker exit. 11. If you’re a worrier and like to leave several hours between flights, sit down and enjoy a nice steak before your next flight. So civilized. 12. You can also plan for an even bigger window and do something bigpicture: take a city tour, go downtown for a quick shop or get a massage at the airport spa. (Warning: Don’t take a nap without setting an alarm!) 13. It’s smart to mentally prepare yourself for delays. Sometimes no matter what, things are just not going to go your way — and there’s nothing you can do. 14. Can’t handle it? Then bite the bullet, pay the extra money and simply fly non-stop.

travel | Getaway Get into the groove Make time at the outset to get acquainted with all this resort has to offer. Ste. Anne’s sits on 400 acres of farmland and includes the Main Inn, with treatment rooms, a restaurant, relaxation and eucalyptus steam rooms and more; the Ste. Anne’s Bakery; horse stables; herb and rose gardens; and Maison Santé, which houses workout equipment, a sauna and a hot tub. Worth trying: wellness classes. I was skeptical at the start of our 30-minute Yoga Nidra class. I struggle with turning off my hamster-wheel brain, even when I’m exhausted, so I was pleasantly surprised to find my body relaxing, part by part, as I lay on the yoga studio floor, listening to the instructor’s soothing voice. Savour local flavour Ste. Anne’s mouth-watering meals feature local ingredients whenever possible. The mojito tuna tartare, an appetizer infused with mint and rum and served on butter lettuce, melts in your mouth. The duck confit, which features spinach, shallots, apples and toasted walnuts, is a popular choice. Beef lovers may wish to ask about the daily beef feature, created with Ste. Anne’s own grass-fed cattle. All menus include vegetarian and vegan options. For another kind of local experience, consider a stroll to the bakery, where you can find cheese, soap, salvaged lumber cutting boards and other delights from nearby farms, along with organic tea, coffee, freshly baked bread, cakes and treats.

Settle in Sandy and I enjoyed the quiet of Sentosa East, a short walk from the Main Inn and a world away from grocery shopping, taxiing kids around and the bleeping of smartphones. Our room in the triplex had two cushy queen-size beds, a sitting area, a fireplace and a generous deck with a view of the countryside. The overall unit includes a shared kitchen, living room and outdoor hot tub. Larger parties or whole families can take advantage of cottages, like the fourbedroom Vista Lago or the Maison Santé Nook. Need a room for just one or two? Stay in the original 150-year-old Massey family structure and enjoy a room with a whirlpool tub and wood-burning fireplace.

Just say, “Spaaaah!” No escape to Ste. Anne’s would be complete without indulging in at least one of its treatments. And why stop at one? Sandy and I treated ourselves to facials and massages. My “Express Facial” was 45 minutes of head-and-shoulders heaven, with a hand-andarm massage thrown in for good measure. My sister’s one-hour “Signature Facial,” meanwhile, included a foot and head massage. As for the essential oils lingering in her hair post-treatment, she declared it was totally worth it. I had my own oiled-hair experience the next day during my 75-minute aroma stone therapy massage. After custom blending three essential oils, my therapist gently massaged me from head to toe using warm stones on my skin. I left feeling more relaxed than I can remember.

A

mug has to do more than hold coffee these days. It must have a personal story, be handcrafted and locally made. Yes, pottery is experiencing a renaissance, and the millennial disruptors are driving the movement. Ceramics studios have sprung up from Toronto to Haliburton, with Groupons for classes selling out faster than concert tickets. There was even a BBC reality show on the phenomenon, The Great British Pottery Throw Down, in which a rather fetching group of contestants fought for the crown of Top Potter, including hunky winner Ryan Barrett, whose resumé lists “male model” as his day job. Throwing pots — the term for shaping ceramics on a spinning wheel — is downright sexy, sensual, slippery and satisfying. Classes in pottery surged in popularity in the ’90s after Patrick Swayze and Demi Moore revealed how

erotic mucking around with clay could be in the movie Ghost. But the demand for lessons ebbed in the decade that followed. That is, until fairly recently, when a pushback against cheap, mass-produced wares took hold and the Maker Revolution was born. This return to the earth and handmade objects has much to do with the new appreciation of imperfection. It’s an aesthetic the Japanese call wabi-sabi, a celebration of natural processes, asymmetrical flaws and objects created through the inexact workings of hands. The upshot is that pottery is having its moment, and designer boutiques can’t get enough of it. “Taking a pottery class is something people tend to have on their bucket list,” says potter Ken Loverock of Fergusonvale Pottery and Crafts in Phelpston. “You take a box of clay and turn it into functional, useful items.”

Loverock operates one of the few studios in Simcoe County and reports a substantial uptick in students for his popular six-week classes. “We have a waiting list now,” he says. “You have to book early, because the small class sizes sell out fast.” Suppliers, like the Pottery House in Oakville and Tucker’s Pottery Supplies in Richmond Hill, also find business booming. Frank Tucker has noticed significant growth in the hobbyist area, especially in the past five years. “Our customer base used to be education facilities and professionals,” he says, “but now retiring boomers are looking for something to do and we’re having a lot of younger people coming in, people in their teens and 20s.” Two of Fergusonvale Pottery’s students, Crystal Vivian and Teddy Cowell, enrolled in class for their weekly date nights. “We were looking for other date-night alternatives, instead of going to the movies,” Vivian says. “We just wanted to get out, learn a new skill, and bond and grow together.” As new parents, the couple also wanted to steer clear of the bar scene. “Drinking and the hangover the next day — not good,” says Cowell, who has discovered he has a talent for turning out small urns. “He's working on a gravy boat next,” Vivian adds, laughing. The couple loved the experience so much they’ve been encouraging their friends to try it. Loverock’s pottery studio/store houses three kilns, six potter’s wheels and multiple hand-building workstations. ceramics and glass design arts program at Georgian College. “For professionals, it’s a tough way to make a living,” Loverock says, thankful that his shop has the advantage of being on the route to cottage country. “People know us because of that.” But social media is beginning to change that narrative. Loverock’s son recently set up an Instagram account for the shop, and no sooner did he post a photo of a product that he informed his father he had to box it up to ship to a customer. “People who buy pottery want handmade stuff,” Loverock says. “Our kilns fire at such high temperatures, we don’t need lead. There are so many safe glazes out there now. People want clean items to eat off.” And worries about lead and toxins in products coming from overseas have helped fuel safety concerns. There’s also a deep sense of achievement in the creative process. “When students come back to pick up their pieces after they’ve been fired, they can’t believe how great they look,” Loverock says. “I always hear, ‘Holy cow, I didn’t think it would look that good!’”
