Those lag times can work against your fitness goals, lowering your heart rate as you wait your turn. Studio mood lighting creates fitnessfocused dynamics The studio holds 24 participants at a time and offers unique muted lighting that creates the mood and dynamics of the overall experience. No time to loiter or check text messages in here. Everyone is focused on their own training and their personal data displayed on the screen. “Beginners avoid gyms because they’re intimidating. Here, no one is wandering around, texting or looking at anyone else. They are all focused on their heart rate statistics. We have members who have lost over 40 pounds in a relatively short period of time,” says Hollingsworth. How Orangetheory Works Each member’s optimum heart rate is individually calculated for age, weight and gender. The prime heart rate they are aiming for during their workout will land in what’s called The Orange Zone.

As workouts progress members watch their heart rates rise and fall in real time onscreen. Starting out in the resting gray zone, the member trains through 5 interval heart zones ultimately reaching the coveted orange zone, where calories really start burning! Every minute the heart rate lingers in the Orange Zone extra metabolic benefits are achieved. Like continued calorie burning for up to 36 hours after the workout is done. To help measure a member’s total time in the Orange Zone during each workout, each minute in the zone is a SPLAT POINT.

Orangetheory’s regular Challenge Events are also part of the motivating force. “Peak performance challenges are run throughout the year to keep it fresh,” says Hollingsworth. The eight day ‘Hell Week’ challenge in October pushed members to the max and the internal Dri-Triathlon during the summer was a huge success. Orangetheory also runs in-house one month marathons that track overall mileage, and a six-week weight loss challenge (with cash prizes up to $500.) Last year’s winner lost just under 50 pounds in the six weeks! WHAT’S BEHIND POTTERY’S GROWING RESURGENCE? By Dawn ritchie | Photos By MiKe Guilbault

A

mug has to do more than hold coffee these days. It must have a personal story, be handcrafted and locally made. Yes, pottery is experiencing a renaissance, and the millennial disruptors are driving the movement. Ceramics studios have sprung up from Toronto to haliburton, with Groupons for classes selling out faster than concert tickets. There was even a BBC reality show on the phenomenon, The Great British Pottery Throw Down, in which a rather fetching group of contestants fought for the crown of Top Potter, including hunky winner Ryan Barrett, whose resumé lists “male model” as his day job.

Throwing pots — the term for shaping ceramics on a spinning wheel — is downright sexy, sensual, slippery and satisfying. Classes in pottery surged in popularity in the ’90s after Patrick Swayze and Demi Moore revealed how erotic mucking around with clay could be in the movie Ghost. But the demand for lessons ebbed in the decade that followed. That is, until fairly recently, when a pushback against cheap, mass-produced wares took hold and the Maker Revolution was born. This return to the earth and handmade objects has much to do with the new appreciation of imperfection. It’s an aesthetic the Japanese call wabi-sabi, a celebration of natural processes, asymmetrical flaws and objects

created through the inexact workings of hands. The upshot is that pottery is having its moment, and designer boutiques can’t get enough of it. “Taking a pottery class is something people tend to have on their bucket list,” says potter Ken Loverock of Fergusonvale Pottery and Crafts in Phelpston. “You take a box of clay and turn it into functional, useful items.” Loverock operates one of the few studios in Simcoe County and reports a substantial uptick in students for his popular six-week classes. “We have a waiting list now,” he says. “You have to book early, because the small class sizes sell out fast.” Suppliers, like the Pottery House in Oakville and Tucker’s Pottery Supplies in Richmond Hill, also find business booming. Frank Tucker has noticed significant growth in the hobbyist area, especially in the past five years. “Our customer base used to be education facilities and professionals,” he says, “but now retiring boomers are looking for something to 102 | GoodLife Barrie Edition May June 2017

Yes, pottery is experiencing a renaissance and it’s millennial disruptors who are driving the movement do and we’re having a lot of younger people coming in, people in their teens and 20s.” Two of Fergusonvale Pottery’s students, Crystal Vivian and Teddy Cowell, enrolled in class for their weekly date nights. “We were looking for other date-night alternatives, instead of going to the movies,” Vivian says. “We just wanted to get out, learn a new skill, and bond and grow together.” As new parents, the couple also wanted to steer clear of the bar scene. “Drinking and the hangover the next day — not good,” says Cowell, who

has discovered he has a talent for turning out small urns. “He's working on a gravy boat next,” Vivian adds, laughing. The couple loved the experience so much they’ve been encouraging their friends to try it. Loverock’s pottery studio/store houses three kilns, six potter’s wheels and multiple hand-building workstations. The place has been pumping out stoneware since the ’80s, shortly after Loverock graduated from the ceramics and glass design arts program at Georgian College.


“For professionals, it’s a tough way to make a living,” Loverock says, thankful that his shop has the advantage of being on the route to cottage country. “People know us because of that.” But social media is beginning to change that narrative. Loverock’s son recently set up an Instagram account for the shop, and no sooner did he post a photo of a product that he informed his father he had to box it up to ship to a customer. “People who buy pottery want handmade stuff,” Loverock says. “Our kilns fire at such high temperatures, we don’t need lead. There are so many safe glazes out there now. People want clean items to eat off.” And worries about lead and toxins in products coming from overseas have helped fuel safety concerns. There’s also a deep sense of achievement in the creative process. “When students come back to pick up their pieces after they’ve been fired, they can’t believe how great they look,” Loverock says. “I always hear, ‘Holy cow, I didn’t think it would look that good!’”

Vegas Style How this couple brings the best of Sin City to homes in Simcoe by Dawn Ritchie

W

hat happens in Vegas doesn’t always stay in Vegas, especially when Ryan and Katie Randell make their quarterly trips to Sin City in search of design inspiration for their various building projects. “We’re always on the lookout for new ideas,” says Ryan of Copper Creek Contractors. “We notice the colours will hit there first. Their trends in wallcoverings and lighting are always ahead of the style game.” The Randells stroll the famous Strip, inspecting restaurants, businesses and galleries, drinking in the distinct architecture and

decor. Then they sit and discuss five different things that sparked their interest. These are the concepts they will carry home and incorporate into their custom builds, which includes the work done on their own dazzling home in Springwater. Katie brings the interior-design eye to their projects while her husband tackles the structural and mechanical aspects of the construction. “We’re a great team,” Ryan says. “We buy the land and start with an idea, plug in the number and size of the rooms, rooflines, and the look and all of the features we want on the inside.”

EMBRACING CEILING STYLES One detail that Las Vegas designers do best is ceiling treatments, and the Randells have embraced this effect. “Waffled, cathedral or barrelled ceilings are a must,” Ryan says. “And 10-foot ceilings on the main floor are mandatory with eight-foot doors. We use a lot of trim work. And I put a bathroom with every bedroom because I can. As a plumber, cost-wise it makes sense.” The couple has completed five houses to date and are about to start their next property in Snow Valley Highlands. “We started our first in 2003,” says Ryan, who put together his team with top tradespeople he befriended on the job. “I work in the trades as a plumber and gas fitter, and when you do enough of these, you see the whole building process start to finish and you learn quickly who the good guys are.” The coastal look of their own four-bedroom home was achieved with grey and blue hues, rounded porthole windows and nautical rope accents. For the exterior, a timeless older Georgian style was their choice, with an Arriscraft brick facing and precast architectural mouldings around windows. “Those cost a fortune,” Ryan says of the Paragon Wall Finishings, but they deliver a gravitas that the Randells admired in estate buildings. Sam Spataro was the mason for this project and also installed the Eldorado stone on the wood-burning fireplace in the great room. “He’s probably one of the best I’ve dealt with mason-wise,” Ryan says.

TWO WAYS IN One unique feature the Randells put in all of their custom-build homes is double entry points to every floor. “There are two staircases, one on each side of the house,” Ryan notes. In the event of fire or danger, a second exit could be life-saving. But there’s also another reason. “You could split this house down the middle and have two houses. Very useful when you have guests — or teenagers.” Mark Taylor of Cornerstones Residential Design was the architect for the Randells’ home. Special permission was sought to have the residence sunk lower than the other homes on the street. “We wanted to create the backyard oasis,” Ryan explains. “All the other houses on the street had to be set higher, but we wanted an estate look to our home, with a winding driveway.” The generous home has 4,334 square feet of luxurious interior finished space with additional pockets of unfinished “hidden space,” including 800 square feet in the heated garage, where Ryan installed trusses. “Just lay down plywood and you have another room,” he says. The couple didn’t bother finishing the basement level, however, because in their experience, most people don’t really enjoy below-grade living. “You’re more likely to use a room if it’s upstairs,” Ryan says. So, the second level not only houses children’s bedrooms, but also recreational facilities.

To up the Vegas factor, the couple chose blingy chandelier to hang from a waffled bedroom ceiling.

FUN AND GAMES A theatre room with plush recliners is located just off the second back staircase, atop one of the home’s 3½ garages. Ryan painted the ceiling a dark matte finish to eliminate glare for movie viewing. The theatre has its own powder room and a roughed-in wet bar for a future snack concession. “It’s quite a distance from the two upper bedrooms for noise control,” he says. “We have surround sound with state-ofthe-art Elac speakers.” The games room is at the opposite end of the second floor. Nine-foot coffered ceilings clad in wood create dimension, and a Juliet balcony overlooks the great room below. The Randells added a walkout from this room as well that leads to a spacious rooftop sun patio. “Everything was strategically placed and thought out, room by room, to take advantage of daylight and sunsets,” Ryan says. Because the extra rooms on the upper level are devoted to fun, the guest room was slipped into the den on the main floor. Outside, the backyard oasis, with its 20-by40-foot pool, beckons. A covered cabana has a Sheer Descent waterfall flowing from its brickwork. The Randells chose to install a gas fireplace in the cabana instead of wood burning for convenience. A fire pit for evening campfires was built deeper in the bush. “It’s an entertainer’s dream,” Ryan says. “When I can look at the house and see how unique it is compared to the others on the street, then I can lean back a little bit. Nestled high on a hill above Kempenfelt Bay, secreted within a stand of oak trees, the 6,000-square-foot home, designed by Barrie architect Ian Malcolm, benefits immeasurably from glistening views of Lake Simcoe, quiet neighbours and easy access to Barrie’s boutique shopping and cultural activities. In the summer, there’s boating, jet skiing and swimming; in the winter, snowmobiling, ice fishing and lake skating. “It’s the perfect neighbourhood if you have animals,” Cathy says. “Everyone’s out walking dogs on the paths. It’s so peaceful, your little piece of paradise.” Inside the residence, a marriage of whitepainted wood and expansive windows maximizes the plentiful sunlight. It’s one of the main reasons the Porters purchased the property. Each autumn, they close up their immense 13-bathroom Victorian woodlands home in Shanty Bay to escape here to sun-drenched, mood-brightening rooms. The gourmet kitchen, with tumbled-stone backsplash and mosaic inlay above the double Wolf range, is at the heart of the main floor. Granite countertops stretch around the room, and a centre island with prep sink and four multicoloured pendant lights make cooking a pleasure. The custom cabinetry in creamy white, with exposed hinges and glass uppers, was handcrafted by the former owner, Bram Keeping, who did much of the stunning trim work and wainscoting. “Cabinetmaking was his hobby,” Cathy explains. “He spent hours and hours, did all the panelling. A lot of love was put into this house.” Near the kitchen, a cozy sitting area is the place where the family kicks back during meal prep, enjoying views of the lake. To the right of the family room, a harvest dining table (Pottery Barn) accommodates up to 10 dinner guests, but the main floor is spacious enough to increase that number exponentially. “You can put a massive table the width of the whole level,” Cathy says. “It’s a great entertaining home.” Three separate double French doors with leaded windows offer walkouts to the pergolacovered deck from both the family and dining

rooms. Exposed hinges were the choice here as well, harmonizing perfectly with the kitchen cabinetry. These exterior doors were originally all pine, Cathy notes, but she decided to have them painted Benjamin Moore Muslin to maintain the white design theme. Six steps below the dining room is the inviting sunken great room, overlooked by an interior balcony with open rails on the upper floor. Another swath of French doors leads to a second deck, topped by two sets of transom windows that reach to the lofty 27-foot cathedral ceiling. White wainscoting reaches full door height, and exposed wooden barn beams hover above, delivering warmth while breaking up any cavernous feel. “We erected a 20-foot Christmas tree here for the holidays,” Cathy says, indicating the corner where a white wingback now stands. The Porters chose a nautical theme for the decor. “Being directly on the water, we felt the house suited that,” she says. A ship’s captain’s wheel, model schooners and naval artwork are on display, along with an antique worktable with working grips that add rustic flair.

Mark and Cathy, who own multiple properties from Markham to Florida, brought in many of their existing furnishings and found everything fit just right. Flawless flowerbeds without a hint of pest damage, and lawns of pristine green even at the height of summer used to be a source of immense pride for gardeners. Today, however, many of the best and most knowledgeable gardeners know this picture-perfect image is actually not the ideal, because it can only be accomplished through practices that are at odds with the health of the planet — including heavy watering, and using chemical pesticides and herbicides.

Instead, many gardeners are now willingly accepting the occasional blemish in their yards because it means they are being good custodians of the environment. Eco-friendly, or green, gardening is about more than having a chemical-free plot. It’s about creating your own healthy ecosystem where everything is intertwined, and where ultimately the garden requires less maintenance and less expense in upkeep.

home | Garden Pick your plants Knowing and accepting what will work in your garden’s conditions is half the battle. Delicate, exotic plants that require special pampering shouldn’t make it past your garden gate, at least not in any large number. “People typically plant by colour, but I think they should plant by drinking habit,” says Debra Lidstone, landscape designer and installer at Barrie Botanix. “Grouping droughttolerant plants together and thirsty plants together elsewhere makes better use of water and leads to better results. People put far too much thought into colour and less thought into the habits and needs of a plant.” Gabrielle Polman, indoor live goods supervisor for Bradford Greenhouses in Barrie, agrees. “It’s important to select plants for your hardiness zone, as well as for the sun and soil conditions. Otherwise, you’re liable to end up with weak plants, which are prone to disease

But don’t race out for that pesticide spray, Lidstone cautions. “I think people need to adjust their mindset when it comes to pests. We should be looking for diversity, not a surgical-type garden, and pests are a part of a balanced garden ecosystem. Keep in mind that bad insects are food for the insects we think of as good insects,” she says. Lidstone reminds us that it’s okay for there to be holes or spots on leaves, and asks us to consider: “We love butterflies and plant flowers that attract them, and yet people don’t stop to think that butterflies begin as caterpillars that eat leaves. Not every bad bug needs to be removed; we need to establish an acceptable threshold and maintain a healthy balance.”

ENCOURAGE WILDLIFE A balanced garden ecosystem reduces the amount of work you have to do and increases your success, so it’s a good idea to encourage insects, birds and other wildlife. Among the best to encourage are pollinators, such as butterflies, bees and hummingbirds. Many flowers, flowering shrubs and fruit trees require help to bloom. “Butterflies, bees and hummingbirds prefer simple, open blooms that allow easy access to nectar, and prefer old-fashioned varieties over modern hybrids (breeding hybrids creates gorgeous flowers, but usually less nectar). Indigenous varieties are ideal, as insects and plants have evolved together,” explains Newmarket’s Murray Ogilvie, who has planted a pollinator

garden and rears hundreds of the increasingly rare monarch butterfly each year. “Provide a selection of both annual and perennial plants — ideally those with long bloom periods — for blooms from spring to fall, so that your garden provides nectar and pollen sources throughout the season.” Ogilvie also recommends including a source of water so butterflies can hydrate. Many people shudder at the idea of bats flittering about overhead, but they are extremely beneficial and gardeners are encouraged to include bat boxes in their yards to provide habitat

for these increasingly threatened mammals. According to Christina Davies, wildlife research scientist, species at risk, for Ontario’s Ministry of Natural Resources and Forestry, “Bats will eat several times their own weight in insects every single night. It’s estimated that pesticide use by the agricultural industry is halved thanks to bats, so you can imagine the benefit they have in one’s yard. They also make the yard more comfortable at night by reducing the number of mosquitoes.” She also advises that bats “are also completely harmless, myths aside.”

Create healthy soil Healthy soil is the foundation upon which a successful garden rests. “Always amend your soil when planting,” Polman says. “Manure and compost are great, because they assist in water and nutrient retention, and add nutrients to the soil. Sandy soil is difficult to grow in, as it won’t retain moisture or nutrients, so you’ll need to add triple mix.” Adding organic material is incredibly beneficial. That’s why many gardeners have a compost bin in their yard to transform kitchen and yard waste into nutrient-rich material. Bonus: You divert material from landfills while benefiting your garden. “Soil is like humans in that it tends to revert back to old habits, so you need to amend soil on a yearly basis for best results,” Polman says. “If you do, you’ll water, weed and spray for pests less often, because the plants will be healthy.”

In many cases, troublesome insects can be hand-plucked, washed away with water or deterred by companion planting. Companion planting is an age-old practice in which a certain plant is grown near another to ward off an offending insect. Zinnias, for example, are often planted near cauliflower, because they attract ladybugs that help protect the vegetable from pests. Entire books have been written on the subject, and it truly does work.

Control your weeds Unsightly, and crowding out our flowers and grass, weeds are the bane of the garden. Most people are quick to reach for the herbicide, but chemicals aren’t an Earth-friendly solution. The greenest approach? Pull them out by hand and lay down lots of mulch. “Adding several inches of organic mulch — but not cocoa mulch, which gets mouldy and clumps together — will keep weeds down. Debra Lidstone is bothered whenever she sees water misuse — like when people water their lawns. “People should bear in mind that when the lawn is brown and crispy in the height of the summer, it’s supposed to be,” Lidstone, a landscape designer and installer at Barrie Botanix, explains. “That’s how it protects itself: shutting down the top growth to preserve the valuable roots.” If you must water, aim for early in the morning, around five or six, when the grass will use the water efficiently. “When you water at night, it sits on the ground, promoting disease,” she says, “whereas during the day, a lot of the water will simply evaporate.” Finally, instead of watering for a few minutes every day, it’s better to water very thoroughly (an inch or so of water) once or

twice a week. When the grass is drenched, the water will seep down, creating deep and hardier roots; less-thorough watering results in shallow, vulnerable roots. “Rain barrels are a great idea. They cut down on the need to use municipal water, and rain water is better for plants anyway, as tap water has a lot of minerals that plants don’t need, like chlorine and fluoride,” Derwyn Miller, president of the Newmarket Garden Club, explains. “Also becoming increasingly popular are rain gardens, which direct rain runoff from homes directly into gardens instead of into storm drains. York Region has a rain garden program where you get a grant if you install one in your yard.”

Cakes By Design Baker Jennifer Mayrl shares both the story behind her sweet success and recipes for mouth-watering Canada Day treats By Katherine Elphick Photos by Mik e Guilbault

C

anada Day preparations start early at Barrie’s Cakes By Design. “We literally start planning the next Canada Day on July 2,” says Jennifer Mayrl, owner of the 13-year-old specialty cake shop. The celebratory cakes take three days to bake, weigh almost 300 pounds and need about four people to transport them over to the event to set them up, Mayrl explains, adding that each cake feeds 500 to 600 people. “Now, that’s a lot of cake.” Over the past nine years, the massive Canuck creations have evolved from eight-foot-long slab cakes decorated with Canadian flags to over-the-top edible works of art. “The designs started getting really creative about seven years ago, when local MPP Patrick Brown was bit by the Cake Boss bug — since then, we’ve gone to town in the creative department,” Mayrl says. Past cakes have included Canadian coins,

hockey jerseys, a map of Canada decorated with icons representing each province, and cake flowerpots filled with handmade provincial flowers. It’s a tall order, considering the sweet shop churns out between 60 and 100 artistic custom cakes a week. “People come to us to have a little fun,” Mayrl says. And Cakes By Design’s creative range is vast. Apart from a bustling wedding cake business, special occasion confections include anything from apple-shaped cakes to zebra-striped cupcakes. So, when it came to creating a special cake for Good Life’s special Canada 150 cover, it seemed only natural to approach Mayrl. We’re sure you’ll agree, the result is stunning. Beyond patriotic cake talk, we also spoke with the local baker about her sweet business and asked her to share recipes for Canadianthemed treats. GoodLifeMagazine.ca | 51


in the kitchen | Cakes By Design What led you down the custom cake path? When I was in high school, I got a parttime job at a custom cake shop in Richmond hill. I was hired to stock shelves, but almost instantly I was hooked on cake decorating. I worked there for about 10 years, right through university [where she studied kinesiology] and beyond. I learned everything on-site, and knew I wanted to do this for a living. We [Mayrl and her silent partner, Michelle Doo] opened Cakes By Design 13 years ago. What are the latest trends in cakes? We’ve been doing a ton of gender-reveal cakes. When a couple is having a baby, they bring in the ultrasound that indicates the gender in an envelope and we make the inside of the cake blue or pink. The cake is enjoyed at celebrations with friends and family, and that’s how everyone finds out whether the baby is a boy or a girl. Other trends include naked cakes — where the icing gets scraped off and the cakes are decorated with fruit and flowers. What are some of your craziest commissions? We recently did a birthday cake for a plumber. It was a roll of toilet paper with “holy crap, it’s your birthday” written on it. We also do lots of hip bone-shaped cakes to celebrate replacement surgery and diaper-shaped ones for baby showers. What’s your cake-making philosophy? It’s twofold. I want every cake to taste as good as it looks. And second, we only make cakes that I would be proud to serve. Where do you find inspiration? Our customers inspire us! They will find something on social media, bring it in, and we will go from there. Other than that, we are constantly keeping on top of the latest trends. Beyond custom orders, what’s on offer at the shop for walk-in customers? We always have cupcakes, ready-to-go cakes, plenty of decorated sugar cookies and more. Finally, what’s the sweetest part of working in the bakery business? We all smell like vanilla and cake all the time, so that’s pretty sweet! 3–4 cups all-purpose flour Preheat oven to 350°F. Line 2 baking sheets with parchment paper. In a mixing bowl, cream together butter and sugars. Add egg, baking powder, maple syrup and vanilla. Add flour slowly, as all may not be needed. Do not over-mix; dough should be soft, but shouldn’t stick to your fingers. Refrigerate for 1 hour. On a floured surface, roll out dough and cut into desired shapes. Transfers to baking sheets. Bake for 15 to 20 minutes or until cookies are golden.

Preheat oven to 325°F. Line two 12-cup cupcake pans with cupcake liners. In a medium bowl, whisk together flour, baking powder and salt. set aside. In a separate mixing bowl, cream butter and shortening together until silky smooth. Add maple syrup and mix until well combined. Add egg yolks and whole egg, one at a time, beating well after each addition. Add half the flour mix and stir until just combined. scrape down the sides of the bowl. Add milk and mix until combined. Add remaining flour mix and stir until just combined.

Fill cupcake pans so that each cupcake liner is ¾ full. Bake for 20 to 25 minutes until cupcakes are spongy. ICING: Using a mixer (preferably with paddle), cream together butter and cream cheese until smooth. Add icing sugar and beat until smooth. Frost cupcakes with icing and decorate as desired. Makes 24.

classic devilled eggs Boston lettuce leaves, washed cherry tomatoes, halved strips cooked bacon, each cut into 6 shorter strips

Place 1 devilled egg on each lettuce leaf. Add half a cherry tomato followed by two bacon strips to each egg. Serve immediately, or cover and store in refrigerator for up to 2 days. Makes 12.

Classic Devilled Eggs 12 hard-cooked eggs, peeled 1/4 cup mayonnaise 2 tsp Dijon mustard 1/4 tsp salt 1/4 tsp pepper Pinch paprika (optional) Cut eggs in half lengthwise. Remove yolks and place in a medium-sized bowl. Set egg whites aside. Mash yolks with a fork, then stir in mayonnaise, mustard, salt and pepper. Spoon or pipe yolk mixture into egg white halves. I

ndia Pale Ales ... No other style flutters the heart of the devoted, craft-loving hophead more than a good IPA does. There are many varieties, such as the more malt-forward English IPA, the aggressively well-hopped American IPA and the extra punch of alcohol and hops in the Double IPA. And then there is the wide range of flavours brought on by the many varieties of hops: citrus, apricot, orange, pineapple, mango – all such flavours can be found in an IPA and for many breweries here in Ontario, the style offers a great chance to let their creativity shine. In recent years the IPA has become synonymous with craft beer, having in some cases replaced the regular pale ale as a new brewery’s debut beer. here in Muskoka, residents can’t help but express a bit of pride in Bracebridge’s own Muskoka Brewery kicking off Ontario’s love of hoppy IPAs

with Mad Tom. The beer, originally part of the “Cabin Fever” series of one-offs, was released in 2011 and very quickly became a year-round addition, beating the brewery’s famous cream ale as the best seller. It should be said, however, that while the IPA’s popularity may seem like a more new trend, its origins are anything but, going back to the height of the British empire in the 1700s. With many outposts stationed all over the world, and all demanding beer, India was a tricky one for the Brits to accommodate. The climate was too warm for brewing over there, so beer had to be sent over to India by boat. And so a special pale ale was brewed with additional alcohol and hops, both of which acted as preservatives to prevent spoilage for the long journey by sea. the mixture constantly, let it brown to a nice light tan to medium-brown tone. (this should take a few minutes.)

turn the oven to broil, put a rack in the top position and broil the eggplant for 4 mins a side, or until they have started to brown.

Add in the milk and stir to combine. switch to a whisk and stir while the milk comes to a boil – this will prevent lumps in your sauce. once the sauce begins to bubble and the texture is nice and thick, you can remove from the heat. this should will take about 10 mins.

3. Remove the eggplant from the oven and set aside. then preheat the oven to 350 F. heat a cast iron skillet over medium high heat and add the olive oil. once the oil starts to shimmer, add in the onions and beef. once the beef is just cooked through, add the tomato paste, fresh oregano, cinnamon, allspice, honey and a pinch of salt and pepper. Cook for another 5 mins over medium-low heat until the mixture is fragrant and any excess water has evaporated. taste the mixture and add in any needed salt and pepper. take the mixture off the heat and set aside. to make the béchamel sauce, heat the butter and flour over medium heat in a small saucepan. stirring

Add in the past, pepper and nutmeg and stir to combine. Layer the eggplant slices over the meat and spread the ricotta over the eggplant. then pour the béchamel sauce over the ricotta and place in the top third of your oven. Bake for 30-40 mins. once the top is nicely browned, it is ready to serve.


SPICED HUMMUS INGREDIENTS 2 ½ cups dried chickpeas Water for soaking and cooking 2 tsp baking soda 2 tbsp salt 1 large onion, halved and peeled 12 cloves garlic, divided 4 bay leaves 1 ½ cups tahini 1 lemon, juice and zest ¼ tsp ground cardamom ½ tsp ground cumin Salt and pepper for seasoning Paprika Olive oil for garnish METHOD In a large mixing bowl, place the chickpeas and fill the bowl with water. Soak overnight, adding extra water if needed. In a large pot, place the drained chickpeas, baking soda, 2 tbsp salt, onion, 4 cloves of garlic and 4 bay leaves. Cover with water and bring to a boil. Reduce the heat to a simmer and cook for at least an hour. The chickpeas need to be very soft to blend into a smooth purée. Drain the chickpeas, reserving the cooking liquid to add to the hummus later.

At this stage, if you can remove as many of the skins off the chickpeas as possible, you will produce and much smoother hummus. Don’t worry if you miss some, they will still blend up pretty well. Place the chickpeas in the bowl of a food processor or blender and add tahini, the 4 cloves of cooked garlic, and 8 cloves of raw garlic. Add enough cooking liquid to reach the top of the beans and blend for 1 min or until nice and smooth. If the hummus is too thick, add more cooking liquid to loosen the mixture. Once you are happy with the texture, add in the lemon, cardamom, and cumin, then blend until mixed. Check the seasoning and add any extra salt and pepper to your taste.

Pour the batter into the cake pan and smooth the top. Place the cake in the middle rack of the oven and bake for 50 mins. The top will be golden brown and the cake set all the way through when done. While the cake is baking, mix together the 1/3 cup yogurt and the jam, then make the Earl Grey syrup. To make the syrup, place one cup of sugar and one cup of water in a small sauce pan and heat over high heat. Stir and once the sugar has dissolved, place the tea in the pot and heat for another 2 mins. Remove from the heat and let the syrup cool in the fridge. Once the cake is finished, take the cake out of the oven and place it in the pan on a cooling rack for a few mins to cool. Using a dinner knife, run it between the edge of the cake pan and the cake to release it from the side of the pan. Cover the cake with a large plate and tip upside down to remove the cake from the pan. Flip the cake off the plate and onto the cooling rack, let cool to room temperature. While the cake is cooling, prick it with a fork all over. Then brush 4 tbsps of the cooled syrup over the cake. Using a fine mesh sieve, dust the cake with icing sugar while still on the cooling rack, then transfer to a cake plate and serve with the jam and yogurt sauce.

f you follow Ontario wines, the word “Cabernet” has a very different meaning for you than your American or Australian counterparts. In Ontario, Cabernet usually refers to Cabernet Franc, a grape whose worldwide claims to fame are: the red wines of the Loire Valley in France; the third grape of Bordeaux; and the fact it fathered (along with Sauvignon Blanc) the most famous Cabernet of all: Cabernet Sauvignon. The world over, except for here in Ontario, “Cabernet” means Cabernet Sauvignon. Yes, “Franc” gets used in places like the USA, Chile, Australia, Argentina and other New World countries – but just like in Bordeaux France it is used as a blending grape, something to add seasoning to other wines, much like salt and pepper does in cooking. On the world stage, Cabernet Franc has been eclipsed by its more approachable, more accessible and more

well-known son. Maybe one day Cab Franc will have its day in the sun and I’ll be recommending a wide selection being released for you through Vintages ... but that day is not today. Cabernet Sauvignon is popular the world over, and it is one of the most well-known red varieties around. California made its name on the back of Cabernet Sauvignon, the right bank of Bordeaux leans heavily on it, the Chileans and Argentineans use it liberally and Italy uses it to blend. however, in certain Tuscan wineries Cabernet Sauvignon is the backbone – the star – creating what are known as “Super Tuscan” wines. Some of the most expensive wines in the world are Cabernet Sauvignon-based and when it comes to pairing with steak Cab is king. So let’s take a look at some Cabernets you should be stocking up on; some for the cellar and some for right now.

Summer is coming, so it’s time your feet come out of hibernation and go on full display. Think that means your salon bill has to skyrocket? While a professional pedicure is a luxurious treat, you can also achieve wonderful results at home, thanks to this step-by-step guide to the perfect pedicure courtesy of editorial nail artist Nargis Khan. Clip-N-File Clip your nails straight across. Don’t cut them too short; otherwise, you might encourage a nail to grow into the skin — known as an ingrown nail — rather than out and over. Also refrain from letting your nails grow beyond the end of your toe, which can cause irritation when wearing shoes. No matter the length of your toenails, try to avoid narrow, tight footwear, which can put unwanted pressure on your feet. Next, file your nails to smooth and shape them as necessary.

Push Comes to Shove Use an orange wood stick or cuticle pusher to push back overgrown cuticles and clean underneath the edge of each nail, “especially around the corners of the big toe,” Khan says. “Clean outwards so you’re getting out all the gunk and dead skin instead of shoving it in, which could lead to an ingrown nail.” If you’ve cleaned out under your nails and you still have a bad ingrown toenail, put a tiny bit of cotton under the corner of the nail to relieve the pressure and help the nail grow out. Buff Stuff Give your nails a good buff to create a rough surface to which the polish can adhere. Also buff the cuticles and skin around the nails so that you have to trim as little skin as possible with cuticle nippers. “The rule is to nip anything that’s white and wavy or sticking up,” Khan says. “Make sure you don’t touch live tissue.”

Filing System Once you’re done grooming your nails and cuticles, file the bottoms of your feet — the heels in particular. Use a rougher grain first to remove excess dry skin, then file with a finer grain to smooth everything out. “Don’t over-file,” Khan says, “because you could worsen cracks or cause bleeding.” Scrub-A-Dub-Dub Rub away dead skin and rough surfaces with a sugar scrub, which will also help lotion to absorb more easily into the skin. Don’t forget to rub between your toes, around your nails and over your heels. Extra points if the scrub smells good enough to eat! Balm Dot Com The one area that most people forget to moisturize is their feet — but you can avoid cracked, dry heels if you consistently apply a rich balm or body butter. If you need a quick fix before donning open-toe shoes, rub

Super Soaker First things first: Take a shower or soak your feet in warm water for up to 10 minutes. This will soften the skin to make pushing cuticles back and filing dry patches much easier. “Just don’t soak your feet for too long, because you don’t want them to be so flooded with water that you can’t tell the difference between dead and live skin,” Khan says.

ou know those ads where people eat probiotic-infused yogurt every day and suddenly their digestive issues are history? Joel Thuna, operations manager of the Barrie-based herbal manufacturer Pure-lē Natural, begs to differ. “The science has shown that probiotics require feeding,” explains Thuna, a trained herbalist and lecturer on the subject. “Lactobacillus acidophilus and Bifidobacterium bifidum are the two most researched probiotics, so we know they work. But you have to have enough of them — not just a little sprinkling found in some yogurts, but a high enough dose — and then you need the food to keep them alive.” To meet this requirement, Pure-lē Natural is the first in Canada to develop a probiotic capsule teeming with six billion active

cells and a fibre prebiotic food source. It is certified organic, vegan, kosher and pareve, which means the natural probiotic microbes weren’t grown in a dairy medium, but rather on rice, making the capsules shelf stable for storage without refrigeration. Thuna, whose hobby is reading clinical trials ( “I read eight to 10 a day”) is aided in his research by his medical librarian wife, Mindy, and a group of PhDs who assist with Pure-lē Natural’s ever-evolving formulations, but his passion for natural cures runs in the family, starting four generations ago. It all began with patriarch Max Thuna, who seized on herbalism in 1864 in Austria, before his son Jack brought his cutting-edge remedies to Canada in the early 1900s. Thuna Herbal Remedies quickly grew in popularity, and the family launched a chain of 25 stores across Canada. They were the first to bring Tiger Balm, tea tree oil and Korean ginseng to Canada. Since those early days, numerous arms of the company have blossomed from retail and wholesale operations to import divisions and online sales, all initiated by the grandfathers, brothers and Thuna cousins. Dr. Jack Thuna, son of Max, also founded one of North America’s first schools of herbal medicine, the Emerson College of Herbology, in Montreal. accept any side effect to get out of pain.” That is something Thuna says has always scared him. He cites American ads that beautifully portray the product, which is then followed by “two pages of contraindications. One medication for leaky bladder had a loss of control of your anus as a side effect — imagine.” Thuna says that’s a big concern of his. “So, what we try to do here is come up with solutions that don’t have a sledgehammer effect. They may be a slower process, but you don’t have to be scared of them.”

A do-no-harm philosophy Thuna reasons that, just as with pharmaceuticals, no remedy will work for everyone. “For between one and seven per cent of people, there is no remedy that will work. But ours won’t hurt them,” he says. “Our company’s philosophy is to try and help people with natural products and do no harm.” Today, Pure-lē Natural is looking to the future by revamping its 230 products with a move toward organics. The manufacturing facility, with its 15 local employees, has already been officially delegated USDA Certified Organic and Kosher status. “We’re launching a new product every eight weeks for the next three to four years,” Thuna says. “That’s our goal. We’re hoping to have several hundred in the certified organic product line.” The greatest stumbling block has been


finding high-quality ingredients to fill their orders on a long-term basis. Also on the agenda: building relationships with certified organic farmers who are committed to producing superior crops. “It’s all part of creating a healthy planet,” Thuna says. “Industrial farming has depleted the land for three to four generations.” The solution, he believes, lies in part in reverting to doing stuff by hand, weeding, trimming and getting a feel for what the soil needs. “I look at this for my own kid,” Thuna says. “If I have a choice between giving him something that’s been treated or giving him something cleaner or purer, I’d go with cleaner or purer. When I started in the business, 25 per cent of the population was obese or diabetic. Now it’s over 60 per cent. In 25 years, that’s a huge shift.“ Thuna equates much of that increase to the declining nutritional values that come through processed foods. “We cook from scratch at our house,” he says. “My nine-year-old son has never had fast food in his life. If you’ve tasted what you think is a really amazing Granny Smith apple and then tasted a good organic apple, it’s day and night. Organic milk tastes so much better, too.” It’s that same philosophy Thuna applies to his business: To always seek the higher value in nutritional standards.

By the fall of this year we will have our Advanced Cardiac program in full swing including an outstanding team of eight cardiologists, a new cardiac catheterization lab and team providing diagnostics and interventions such as angiograms and angioplasty procedures.

That’s not the only healthcare game changer in the region. The playing field is also being levelled for children and youth facing mental health issues. We know that suicide is the second leading cause of death among teens and that one in five children and youth are affected by mental health issues and that’s a heartbreaking tragedy. Soon these young people will find care they need closer to home as RVH has begun construction on an eight-bed inpatient unit, set to open in late 2017. The unit will provide care for up to 300 young people a year. A comprehensive day hospital program will provide an additional 3,000 outpatient visits annually.

This news is music to Rick Jocsak’s ears.

This is not just good news, it is hope for families who in the past have looked to us for the care they need and we have not been there for them.

That’s because Jocsak, 61, had a heart attack at his cottage at Six Mile Lake, north of Port Severn, and didn’t realize he’d have to drive right past RVH to get the care he needed.

“I had to go to Newmarket. That’s a long drive and I thought, ‘but, I’d be driving right by Barrie, why aren’t we stopping there’,” says Jocsak. “Of course at the time you just do what you have to do. And so as I headed down the highway in the back of ambulance I was thinking, ‘I hope to hell nothing happens on the highway.’” Soon, cottagers and residents throughout North Simcoe Muskoka dealing with a heart issue won’t have to make that trip and will be able to get their care closer to home at RVH.

Buenos Aires is a beautiful city of contrasts. From the iconic Casa rosada, with its stunning balcony (above) where Eva Peron so famously spoke, to the humble and numerous parrillas, where barbecue is the order of the day. Taking in both experiences, by the way, is well worth your while.

Set up camp There are many neighbourhoods to hit, but establish home base in the fashionable, comfortable Palermo, which is divided into three sub-hoods: Palermo Viejo, Palermo Soho and Palermo Hollywood. From there, break up your days visiting other parts of town. The core (Microcentro), San Telmo, La Boca, Recoleta and Barrio Norte, just to scratch the surface. Our pick of the boutique bunch in terms of Palermo hotels is Home Hotel (homebuenosaires.com), whose name really suits it — fantastic decor, a cool spa, a terminally cute back garden and pool, and some of the best cocktails in town. For best value, though, consider renting a condo and getting a bunch of friends to travel with you. There are many websites that can set you up comfortably and easily, in particular, Buenos Aires Habitat (buenosaireshabitat. com). Try to find something chic with a rooftop pool — great for reviving the soul after an afternoon in the considerable heat. See the sights Take time for the obligatory Buenos Aires must-dos, even if some of them are merely a breeze-through. Don’t miss the Plaza de Mayo, a key commercial area bounded on one side by the Casa Rosada, the pink presidential palace with the world-famous balcony (and just try not to sing that song). Trip through the chaos of Florida Street, hopefully side-stepping the pickpockets. The Japanese Garden is a perfect chance to get away from it all for an hour or so, as is the Museo Evita (museoevita.org.ar), which is filled with memorabilia and some pretty cool souvenirs. Set aside a solid two hours for the marvellous Museo de Arte Latinoamericano de Buenos Aires, or MALBA (malba.org.ar). The café there is top-notch, should you want to schedule your visit around lunch. Note that most art galleries and museums are closed on Tuesdays. Recoleta Cemetery (recoletacemetery.com) exhibits a maze of above-ground crypts old and new, where lie the city’s well-to-do. The mix of architecture makes for interesting snapshots and the beauty is surprisingly un-creepy. This is where Eva Peron

Treat the tastebuds Palermo’s restaurant highlight award goes to Tegui (tegui.com.ar), for gorgeous meals in a glam setting. Tuna carpaccio with shaved foie gras, veal tartare, sea bass, stuffed quail, amazing desserts. Patrons are buzzed in through a graffiti-strewn entrance, enhancing the mystique. Make La Cabrera (lacabrera.com.ar) a priority, the top steak place — or parilla, is constantly busy to overflowing. Bio Solo Orgánico (biorestaurant.com.ar), a small organic vegetarian restaurant, is a delightful fresh-flavour experience, and a huge break from the barrage of beef. For cocktails, Frank’s (no website, Arévalo 1445) has a Get Smart-type entrance, where you gain entry by dialling the “secret code” in an American phone booth, the back of which then opens out onto a ’20s-style lounge. Suspender-wearing bartenders specialize only in drinks fashionable from that era, and the well-dressed mixed crowd is interesting and friendly. For more pre-club congregating, head closer to the centre of town to step back in time at old Argentinian mansion-cum-restaurant bar Milión (milionargentina.com.ar) and see the town’s beautiful people at play. Hit the shops Palermo Soho is one of the best shopping regions in Palermo, home to all the top boutiques in town, from clothing to shoes to gifts all kitted out in former industrial buildings and spruced-up old mansions. Set your sights on Jorge Luis Borges, Armenia, Honduras, Gurruchaga or Malabia streets and take it from there. The open markets on

Take Care Palermo is relatively safe and quiet, but elsewhere, beware of the bling! Flashy jewellery and watches say, “I have money” and “My bag likely has a nice phone in it.” Bank machines are few and far between, so stock up when you see one, unless it’s at night (never a good idea). Expect lineups, especially midday. Tread carefully: The concept of picking up after your pet has not reached Argentina. Described by the guidebooks as a “relaxed atmosphere,” customer service is hit and miss. Shoppers and retailers actually chat, sometimes for many minutes. Be prepared to watch servers bus a table for a full five minutes before wandering over with a menu. Have fun!

Navigate Connecting Flights

Never throw caution to the wind. Take all the right steps to make sure your flight connections flow as smoothly as possible. Here’s how

1. Whenever possible, try to leave plenty of time between your flights just in case your starting leg kicks off behind schedule. A good rule of thumb is to aim for at least 90 minutes. 2. Carry-on luggage is always preferred. If you do have to check a bag, keep in mind that you may need time to collect it from the carousel and recheck it through to your final destination. 3. Build in time for possible security checks at the connection. Don’t assume you’re going to just saunter over to your next departure gate. You may even have to change terminals. 4. Book the flights as far in advance as possible, and go with the morning routes. You’ll have a much better chance of correcting a connecting problem if it occurs early in the day.

5. Never take the last flight out of anywhere, or you could find yourself settling into a nice bourbon at one of the airport’s cardboard motels. 6. Never assume the airline has built in the necessary time to connect. Always find out what the minimum connection time is at your connecting airport. 7. Smaller connecting airports will have fewer problems, fewer people and less traffic than the insanely busy JFKs and LAXs of the world. 8. Consider the weather in the connecting city. There is more chance of a weather delay in New York than in Miami. 9. Never buy two separate tickets. If your first flight is delayed, you will have to eat the cost of the missed second flight. Or, book flights within the same alliance.

An Artful Celebration The Bayside Artists’ unique commemoration of Canada’s 150th birthday BY Pat Guinn

nited by our love of the creative process, we are artists who share our original works in various venues and maintain a rotating exhibit at the Edge Gallery, Barrie, owned and curated by one of our members. As continuing learners, we regularly participate in workshops, seminars and classes to hone our artistic skills that have been developing since we were young. In early 2016, we discussed how we could artistically commemorate Canada’s upcoming 150th birthday. We decided to create

a montage, a process that produces a new composite whole from fragments of images. Our new composite whole: Canada’s flag. Our fragments of images: 18 canvas panels, 16 of which are original paintings. Careful attention was given to our palette to designate the red and white of our nation’s flag. Our first challenge: how to effectively render our images using only these two colours. We decided to use neutral tones to represent the “white” areas of the flag, and burnt umber would create depth and perspective in the “red” areas.


There were other challenges, too. Because Our Canada is 110 inches wide and 54 inches high, installation was tricky, but we managed it. Our montage was exhibited at the Holcim Gallery in Milton, the Barrie City Hall Rotunda, the Springwater Township council chambers and in the constituency office of MPP Ann Hoggarth, Barrie. In her introduction of the artwork to the City of Barrie, Hoggarth said: “Through these powerful images, this installation highlights Canada’s significant historical moments and the story of what has made Canada what it is today.”

Mary Lynne Atkinson painted images relating to Franklin’s exploration of the Northwest Passage, while Eileen Sweeney celebrated the success of women such as Roberta Bondar and Nellie McClung. David Suzuki and Terry Fox received acclamations in the renderings by Carmen Prieto, and Kate Ramos successfully created a tactile panel that recognizes the significance of the Canadian Pacific Railroad. A successful artist herself, Barb Ritchie portrayed another renowned female artist, Emily Carr. On a second panel, she recognized the famous poem created by Lt-Col. John McCrae, “In Flanders Fields.” Margaret Paradis focused on 17th-century explorations of our country and the significance of Canada’s natural resources. As an excellent portrait artist, Norma Jacobs effectively portrayed our first prime minister, Sir John A. Macdonald. Ottawa’s Peace Tower is featured on the first panels painted by Jo Appleby; a second pays homage to the well-known aircraft the deHavilland Beaver. On the final two panels I give credit to Portia White’s musical success, and to the nationwide presence of the Royal Canadian Mounted Police. For more, see baysideartists.com.
