This time of year always takes me back to the mouth-watering aromas coming from my mother’s kitchen. Her turkey was always juicy and accompanied by creamy mashed potatoes, broccoli casserole and homemade stuffing and gravy. And then there were the cookies: shortbread, gingerbread, pinwheels, thumbprints and usually some kind of square thrown in for good measure. She was — and still is — one of the best cooks I know, and her holiday feast was probably the highlight of the season for me. With my own family, I confess, I have to take some shortcuts. Yes, I roast a wickedly good turkey and my garlic-whipped mashed potatoes are a family fave, but my stuffing comes from a box and my gravy from an envelope. And while I generally make about three kinds of cookies (often with children assisting), I don’t shy from supplementing my seasonal treats with offerings from local bakeries. That’s why I’m delighted to feature the delicious work of Holly’s Sweets and Eats on our holiday cover and in our pages. After all, if you don’t have time to bake yourself, buying from a local bakery is the next best thing (and probably better than what I can cook up anyway). Besides baking, we’ve got appetizers and signature cocktails to round out your holiday entertaining. Or step out for a one-of-a-kind evening at Barrie’s own Speakcheasy, where you can enjoy delicious food and wine in a cool 1930s atmosphere. Feel like staying in? The entrance is purposefully large. Owner Jeremy DeSota enjoys entertaining and needs enough space for groups of people to come and go.
C
ommunity and fellowship are the two words that come up most frequently when Jeremy DeSota talks about his home. “The home is extremely important to our balance in life,” he says. “Architecture can hinder or promote healthy relationships with family, friends and neighbours.” DeSota is co-founder and CEO of EthoEnergy, a solar power business focused on sustainable solutions, and he has recently branched out into building new homes. “It’s been a passion of mine since I was a framer of custom homes right out of school,” he says. “We’ve done two full builds and one renovation so far.” DeSota named his new company Obec Custom Homes (obec means “community” in Slovakian) with the vision of building and growing community as its driving mission. “Research globally has discovered that the largest contributor to a healthy, long life, outside of food, is our relationships and sense of community with our family and with others,” DeSota says. In applying those principles to the design of his own home in Tollendal, a stone’s throw from Tyndale Beach, you find a restful, modern residence that is thoughtfully laid out. It’s the epitome of West Coast Modernism: a fusion of clean simplicity and natural materials that are worked around the existing elements of the land. Instead of mowing a site flat and then landscaping around the structure, in West Coast Modernism, granite rocks can be incorporated into a home’s design. The first thing Obec Homes did was a tree inventory on the property. “It was a wooded lot, but most were just saplings,” DeSota says. “Anything that had a diameter of eight inches or larger was kept.” The rest were cleared. Multi-levelled exterior terraces, accessible from the upper floors of the residence, would be a priority so that the family could enjoy the trees and views of Kempenfelt Bay. “The birch trees, the rustle in the leaves is amazing. It feels cottagey up here,” DeSota says. “It’s another space that you can hang out together without taking away anything from the interior. Technology is distracting us from community in a huge way. In the last 20 years, there’s been a breakdown of the family as we’ve known it for hundreds of years. We wanted places to be together. Upper decks maximize outdoor space.” Inside, each space has been designed to increase social connection and remove stressors, and it starts right at the door. “The entry is decently large,” DeSota says. “It’s highly important when you are having people over. If 10 to 20 people are coming in at the same time, it can get cramped. There’s also seating in the entry.” The bulk of the main floor is open concept, but the great room does feature a distinct division from the kitchen and dining room by means of a contemporary Modore fireplace. “This is a stress-relieving element,” DeSota says. “A mess causes stress for a lot of people who come home from a busy day at work and want to ignore some things for a little while and relax. The fireplace is a way to create open spaces while having a separation. If my wife is working in the kitchen, we’re still

The exterior was just as important to DeSota. He installed multi-level terraces to make the most of the beautiful views of Kempenfelt Bay and worked with the natural landscape of the property.

together. You just don’t see the sink and island from the lounging area.” On the opposite side of the fireplace, the kitchen is roomy and efficient. A sleek, grey Quartz waterfall countertop on the island matches the colour scheme of the adjacent fireplace. The deep island seats four. “It’s a large island, for talking and enjoying fellowship,” DeSota says. The cabinetry here was done by Astro Kitchens, with Brizo Faucets and stainless steel KitchenAid appliances. The pantry is tucked neatly behind a richly stained sliding barn door, and a second door leads off to the main-floor laundry suite. “Pantries are key for storage in this day,” DeSota says. It’s another stress reliever to keep the unruly sundries out of sight yet near at hand.
Even the colour palette of the home is relaxing. Whites, greys and warm natural wood tones are the theme on every floor. A live-edge dining table is situated next to the white kitchen with a six-candled chandelier overhead. Lighting throughout the home came from Savoy House Lighting. Hank Nauta of Nauta Home Designs was the architect, and Amy Ninkovic of Vessel Design did the bulk of the interior work. Pollard Windows was DeSota’s choice for windows that employ a white finish on the interior of the home with a dark finish on the exterior. “Black on interior windows doesn’t work on all homes,” DeSota says. “It makes the colour scheme on the interior picky.” Keeping with sustainability, DeSota installed LED lighting, low-flow/dual-flush toilets and low-emissivity (“low-e”) windows. He also used as many natural, low- or no-VOC (volatile organic compound) materials in the build as possible. “We like to use real wood or reclaimed products,” he says. “Off-gassing in new homes is a common factor, so minimalizing that issue for health is vital.” This was a major consideration, since the family has three children, all under the age of six, with young and vulnerable respiratory systems. “Glue and paint are your largest contributors to off-gassing,” DeSota explains, “and products like carpet, flooring and kitchen trim all use a lot of glue to keep it all together. Glue can off-gas up to a couple of months after manufacturing. Allowing products to sit in storage for a while is beneficial. Even better? Using non-glued products.” Considering that this is a family of five and they were designing the home from scratch, it was curious that DeSota only added three

bedrooms on the second floor. But, as it turns out, that decision was deliberate, as well. Just because you can have something doesn’t always mean you should. “I grew up number six out of seven kids,” DeSota says. “We always shared bedrooms. We’re getting into a day and age when everyone has their own rooms. Kids aren’t forced to work out conflict, to learn to share. When you aren’t forced to share possessions with others, I don’t think anything good comes of that. My two boys will share a bedroom until they move out of the house. I’m the man I am today because of the interaction I had with my brothers. They loved me, taught me and were patient with me, and I got to learn stuff about them and life because of that close proximity. So that’s my bedroom philosophy.” For guests, DeSota built a roomy bedroom on the lower level. “I always put the guest room in the basement,” he says. “They are only used a handful of times a year. A lot of people underutilize basements. Finished basements are always a great way to maximize space.” To make the level welcoming for guests, windows were maximized and ceilings raised to nine feet. “We also spray-foamed the entire basement, so it has the same R-value as the upper floors.” A trick to eliminate dampness. The home’s office was placed at the front entry in the event of meetings with clients. “There are more work-from-home scenarios these days,” DeSota explains, “and that does help with healthier family relationships. You are present when the kids get home from school, but you should be all there at that moment. Again, it’s the life–work balance.”

A Castle Deep When this home renovator and reseller had the chance to build a custom home from scratch, he delved into every detail BY DAWN RITCHIE
“I
knew we had to build something special because of its location,” Ben Oakes says of his capacious 6,000-square-foot Minesing residence. “The way it sits on the lot and the view over both of the streets coming up, it stands out in the neighbourhood.” Prior to constructing 69 Mennill Drive, Oakes had been renovating and flipping homes. He was looking for a new property to turn in October 2015 when he spoke with builder Homes by DayCor. They floated the idea of building from scratch. DayCor introduced Oakes to empty lots in its Springwater division, and he fell in love with a forest-lined property. “The lot backs onto the woods,” Oakes says. “There are walking and jogging paths. We knew we had to design a house to fit on it.”
Mark Taylor of Cornerstones Residential Design was hired as architect and Oakes discussed his dream plan. Much of his floor plan was informed by Oakes’s experience as a mortgage broker. “If you build a custom home, you want to go the extra mile and get great curb appeal,” Oakes says. “Mark was good to work with. This wasn’t just an investment property for [my partner and me]; we were going to live in it for a while. So, we designed it for how we live.” They broke ground in April 2015, but Oakes and his partner didn’t move in until December 2016. DayCor managed the main build, but construction fell off schedule because Oakes wanted to hire some of his own subcontractors. “I like to work with people who work directly with me,” he says. “Hiring self-employed craftsmen was worth the delay.” GoodLifeMagazine.ca | 31

Custom floor-to-ceiling cabinetry in the kitchen was constructed by Bespoke Fine Cabinetry out of Oro. “He was amazing,” Oakes says. “He’s a young guy, but pays a lot of attention to detail. The uppers are white and lowers are grey with glass on top. It’s all lit from inside. There’s undermount lighting, as well.” The backsplash in the kitchen is a fresh glass subway tile, and the kitchen’s quartz countertop is a veined grey-and-white motif with a sophisticated edge profile. “I didn’t want to get too crazy with the modern look,” Oakes explains. “Not everyone who can afford this sort of home wants modern. Some people are more traditional.” Which is another reason he chose lighter sleek pendants from Glass Lighting Gallery to hang over the island. “I didn’t want heavy pendants or anything that obstructed flow,” he says. “Everything light and airy.” Oakes chose an open entertaining space for the main floor. Open concept is on trend and more attractive to new buyers, but that wasn’t the only reason. “I have a big family,” he says. “Growing up, we had people over two or three times a week. There’d be 10 to 15 people, kids and adults, all hanging out. I wanted to have a space to accommodate that.”

The house also accommodates privacy, with Oakes’s study located directly off the main entryway, hidden behind double doors. The master bedroom is also on the main floor, with a walkout to the back woods. “I didn’t want any stairs between us and the fridge,” he says. “I’m pretty snacky.” The master’s five-piece ensuite is a dream spa with a massive six-by-six-foot frameless shower with mirrored back wall, built-in bench, niches for soap and shampoo, and shower heads for two. A waterfall of pebbled tile flows down the wall and spills across the floor, repeated again on the wall and floor adjacent to the freestanding tub. “I chose everything,” Oakes says. “I had a lot of fun with it. It releases your creative energy.” The finer elements are what matter in higherend homes, he insists. “It wasn’t cheap. But if you want quality, that’s what you pay for.” Tiling was installed by Sky Renovation and Design, which also handled the tile work in the entry and the main-floor laundry room. A surprising detail there is the pot filler over their dogs’ dishes. “Every detail has a function and reason for being,” Oakes says. “Our dogs are a huge part of our lives. One is an Italian mastiff and the other is a Doberman. They’re big dogs and we were designing around our lives.” But what remained at the core of this massive project was the reminder that it was still an investment project, which meant the home would have to include not only Oakes’s personal preferences, but also the demands of a rapidly changing market. “We were thinking long term,” he says of the design. “It’s becoming a trend for first-time buyers to live in their parents’ basements, be-

cause they can’t afford to buy their own homes until their 30s. They are there well into their late 20s, saving for a house.” To relieve what could potentially be a stressful living situation for future owners, Oakes built a lower unit that was just as appealing and functional as the main floor. Professionalseries appliances in the custom basement kitchen are identical to those in the main-floor kitchen. “I just bought two of everything,” he says. The cabinetry is also painted similarly and there’s even built-in bottle storage. “The only difference is, the main kitchen upstairs has a garburator and wine fridges.” The lower level holds two spacious bedrooms with their own ensuite bathrooms, a second laundry room, as well as a yoga studio, bar and media room. A second set of stairs
leads directly to the garage, providing a private entrance. But Oakes didn’t stop there. There is a third kitchenette on the home’s roomy upper level with extensive cabinetry, pantry storage and room for a full-size fridge. This level is teeming with extra storage and boasts perfect views of the forest canopy through large, lofty windows. Two more bedrooms are on this level as well, bringing the total to five bedrooms, four bathrooms and three kitchens in all. Oakes doesn’t know where to start when he thinks about his favourite feature in the home, but he keeps coming back to the curb appeal. “We went rustic-contemporary and used extra-wide bagged mortar joints on the exterior to give it that castle look.” They also embedded 16 lights in the soffits so that the home is totally lit up at night — a welcome sight for Oakes. “I feel so lucky when I come up the street and see it there,” he says, “to be able to call a place like this home. We get people coming by all the time to tell us it’s their favourite house.”

Whisky Is the New 40 Looking for a way to toast to the New Year and cap off Canada’s big 150th? Forget the beer and indulge in some Canadian Club. After all, the oh-so-national distillery recently launched its special 40-year-old whisky, just in time for the holidays. With age has come flavour — resting in American oak barrels in Windsor, Ont., for 40 years has resulted in a whisky with an aroma of dark plum and vanilla with a backdrop of toasted toffee and sweet oak, and a taste that is slightly sweet, with hints of nutmeg, clove and fruit, and a touch of caramelized sugar. What hasn’t changed is CC’s characteristic smoothness. Available in limited quantities at the LCBO, $249.95.

HOLIDAY SHORTBREAD Shortbread cookies are a favourite item at Holly’s Sweets and Eats in Barrie’s south end. Dress up these cookies with coloured or white decorating sugar, or coloured or white royal icing.
1 cup unsalted butter, softened ½ cup icing sugar 1 tsp pure vanilla extract 1¾ cups all-purpose flour ½ tsp salt decorating sugar (optional) Preheat oven to 325°F. In a large bowl, beat butter and sugar until pale (about 3 minutes). Add vanilla, followed by remaining dry ingredients. Using a wooden spoon, mix until just incorporated. Cover with plastic wrap and chill for one hour. Shape dough into 1-inch balls and place on parchment paper-lined baking trays. Flatten into discs and bake 12 to 15 minutes or until barely golden around the edges. You can also roll out the dough and cut with cookie cutters, baking it the same way. If you’re using decorating sugar, you need to sprinkle it on before baking. Cool on racks. Makes about 36 cookies.

It’s a busy season for Lori McClelland.
L
ori McClelland of Holly’s Sweets and Eats loves the hustle and bustle of the holiday season. “In the weeks leading up to Christmas, we have people baking here 24 hours a day,” McClelland says. “It’s totally hectic, but we love it.” It’s a love that began in 2004, when McClelland, then a teacher, joined forces with her sister Holly Cascone, a pastry chef, to set up their bakery and gourmet catering business in the south end of Barrie. The result has been a sweet success story, with the holidays being a particularly busy time. Now is the time when Holly’s serves up plenty of mouth-watering goodies ranging from cookies, chocolates and epic gingerbread houses to various pies, festive cakes, tarts and mincemeat. “Every year, we feature 12 different holiday cookies,” she says. McClelland adds that many of her customers skip the hassle of holiday baking and even use the bakery’s cookies for festive cookie exchanges. “They just call me up and say I need six dozen cookies,” she says. “How easy is that?”

GERMAN MOLASSES COOKIES Use cutters and dress these cookies up with royal icing or decorating sugar. 1 cup salted butter, softened 1¼ cups molasses ¾ cup brown sugar 4 cups all-purpose flour 1 tsp baking soda 1 tsp salt 2 tsp ground ginger 1 tsp cinnamon ½ tsp cloves decorator’s sugar (optional) royal icing (optional) Preheat oven to 350°F. In a small pot on low heat, melt butter, molasses and brown sugar. Let cool. In a medium bowl, sift together flour, baking soda, salt, ginger, cinnamon and cloves. Add molasses mixture to flour mix and stir until combined into a dough. Cover and let rest overnight in refrigerator or up to two days for better flavour. Roll out dough with rolling pin to desired thickness. (McClelland prefers around ¼ inch.) Cut with cookie cutters. Place on parchment paper-lined cookie sheets and sprinkle with decorator’s sugar. Bake for 7 to 12 minutes or until firm and lightly browned at edges. Let cool, then decorate with royal icing. Makes about 2 dozen.
CHOCOLATE CRACKLE COOKIES 8 oz dark chocolate, chopped into pieces 2 tbsp milk ½ cup salted butter, softened 11∕3 cups brown sugar 2 eggs 1 cup all-purpose flour ½ cup cocoa 2 tbsp espresso powder 2 tsp baking powder ¼ tsp salt icing sugar (to roll cookies into)
Preheat oven to 350°F. In a double boiler, melt chocolate. Remove from heat and stir in milk. Set aside. In a mixing bowl, mix butter and sugar until light and fluffy. Mix in eggs until combined and then mix in chocolate mixture. In a separate medium bowl, sift together flour, cocoa, espresso powder, baking powder and salt. Add dry ingredients to wet mixture and stir until just combined. Using a tablespoon, scoop dough and roll into balls; then roll balls in icing sugar until coated (don’t flatten). Bake on parchment paper-lined cookie sheets for 12 to 15 minutes or until firm. Cool on racks. Makes about 24 cookies.

While the cookie flavours change from year to year, visitors to Holly’s can always count on shortbread, artfully decorated sugar and gingerbread cookies, cardamom trees, rugelach, chocolate espresso crinkles, lemon wreaths, pizzelles and more. “All of our cookies are made with real butter,” McClelland says. “It’s a real scratch bakery, which means no mixes or shortcuts of any kind.” Holly’s also offers a variety of glutenfree and lactose-free baked goods. But the bakery’s signature dessert is its sticky toffee pudding with sauce. “We also make an amazing gingerbread cake with salted caramel buttercream.” she adds. Along with satisfying your sweet tooth, Holly’s has a savoury side. “We feature 12 holiday appetizers that you can pre-order,” she says. And it doesn’t stop with hors d'oeuvres. The full holiday menu includes tourtière, roasted turkeys or stuffed turkey breasts with all the fixings, side dishes and much more. “We can prepare your entire holiday dinner, so you can have time to spend with family and friends,” McClelland says. Just remember to book your order with plenty of notice. Guests can also enjoy a meal at the bistro, shop for epicurean products like scrumptious jams and preserves, or simply relax with a coffee and muffin. MINI POTATO PANCAKES WITH SOUR CREAM AND SMOKED TROUT Best served right away, these little gems are quick and easy. 4 large potatoes, peeled 2 onions 2 eggs, beaten 1/4 cup all-purpose flour salt and pepper, to taste vegetable oil 1/2 cup sour cream 4 oz smoked Ontario trout, in small strips snipped fresh chives or small sprigs of dill (optional) In a food processor or by hand, shred potatoes and onions. Place in a clean tea towel and squeeze out excess moisture; transfer to a bowl. Stir in eggs, flour, salt and pepper. In a large heavy skillet over medium heat, heat a thin film of oil. Using about 1 tbsp of the mixture for each pancake, place round mounds in hot skillet, a few at a time, and press to flatten. Cook until golden brown, about 3 to 4 minutes each side, turning once. Add more oil as needed for remaining pancakes. Drain well on paper towels. To serve, top each pancake with a dollop of sour cream. Arrange strip of trout on top and garnish with a length of chive or dill sprig. Makes 24 pancakes.
SAVOURY APPLE AND GOAT CHEESE LOG This simple make-ahead appetizer is a life-saver during the holiday season. Serve with crackers or crostini. 5 oz herbed Ontario goat cheese, softened 2 oz cream cheese, softened 1 apple, peeled and coarsely grated 2 green onions, finely chopped 1/2 tsp pepper 3/4 cup toasted pecans or walnuts, chopped In a medium bowl, blend together all the ingredients except the pecans until combined. Place on a large sheet of waxed paper. Using paper to help, form into 1½-inch-diameter log. Refrigerate until firm. Place nuts on a plate. Roll log in nuts to cover. Wrap log in waxed paper and refrigerate until ready to serve. Garnish with apple slices, if desired. Makes 10 to 12 servings.

Purée vegetable mixture in a blender or food processor until smooth. Season with salt and pepper. Serve hot or cold, garnished with sour cream. Makes about 20 shooters.

CURRIED CREAM CHEESE AND VEGETABLE SPIRALS You can use any flavour tortillas for these easy make-ahead appetizers, but whole wheat will add more fibre. 1 medium carrot, coarsely grated 1/2 sweet red pepper, chopped 1 small onion, finely chopped 1 clove garlic, minced 1 tsp curry powder 1 tbsp vegetable oil 1/3 cup chopped fresh coriander or parsley 1 tbsp lemon juice 1/2 tsp salt 8 oz light cream cheese, softened 4 large whole wheat tortillas In a large skillet, cook carrot, red pepper, onion, garlic and curry powder in oil until softened, 3 to 5 minutes. Remove from heat. Stir in coriander, lemon juice and salt and let cool slightly. In a bowl, stir cream cheese with a wooden spoon until creamy. Stir in vegetable mixture. Spread each tortilla evenly with filling, then roll up tightly, pressing firmly to seal. Wrap in plastic wrap and refrigerate at least 1 hour or overnight. Then personalize those party libations with a unique signature cocktail. We’ll show you how in six simple steps. Step 1: Design Your Cocktail Around Your Party’s Theme
Choose a cocktail theme that gels with your event. For yuletide celebrations, think frosty, sparkly, spicy, creamy holiday concoctions — the Santa’s Sleigh, the Jack Frost, the Gingerbread Crumble.
The same goes for a celebration around any major achievement, such as a wedding shower or even a significant weight loss. Dropping the pounds and revelling with friends? How about tall, thin highballs filled with muddled herb creations? Call it The Last Ten, the Skinny Shinny or the New Me.

Step 2: Choose Your Spirits
Selecting spirits has a lot to do with your party’s vibe. If it’s a quiet gathering around a fire, a full-bodied liquor is in order — something with a slow burn, like bourbon or a creamy chocolate liqueur. An afternoon brunch, on the other hand, calls for a sparkling berry burst of gin or an orangey Aperol spritz. Will there be dancing? Nothing gets a party rolling faster than a flight of festive shooters. Tequila shooters are standard fare, but layered shooters are signature drinks! Creating a layered shooter: Pick three different-coloured liqueurs. Form distinct layers by pouring the liquor over the back of a spoon into a shot glass very slowly. It will prevent the liquor from plunging into the layer below and mixing.
Step 3: Build Your Recipe
Your aim is to deliver a delicious drink with a level of complexity. Take the palate on a ride by firing off several taste buds — sweet, sour, salty, savoury, bitter. Use the fundamentals of perfume formulation — top note, heart note and base note — as a model to build your drink. Top note: The introductory sensation. Think bright, citrusy fizzes that tickle, or luscious, creamy, chocolatey hits . Heart note: After the top note subsides, it sneaks in as the body of the main spirit bleeds through. Choose something savoury. Base note: The lingering taste. This is your closer, that herb you mashed in, a spice or that splash of bitters. Go for sour or bitter. Your three ingredients don’t have to include a mix at all; all three notes could be alcohol. Just keep in mind, you want to take the palate on a ride and give your guests a friendly buzz, not have them crashing into furniture.

Step 4: Mix It Up
Decide how you want to mix your cocktail during the party. Here are your options. The straight pour: This works for layered drinks and triple-note alcohol drinks. Shake and stir: Shake or stir your cocktail in front of guests and let them be a part of the show. Have all mixes, herbs, berries and bitters ready ahead of time. Infuse: Infuse flavour in syrup or alcohol in advance; then just pour and dress it up. Consider spices, herbs, or floral infusions like lavender or elderflower. Simple syrup recipe: 2 cups of sugar dissolved into 1 cup boiling water. Add spices or flavourings to infuse. Let steep, then strain and cool before using. Muddle: A muddler is a long, wooden pestle, great for crushing herbs, spices and berries right in the glass. Herbs are de rigueur in signature cocktails. A muddled drink also brings out the strong flavour of an herb or spice.

owntown Barrie’s Speakcheasy is fast becoming one of the hottest and hippest foodie destinations around. “It’s a fun place because it has the look and feel of a 1920s speakeasy,” says Jessi Fournier, who owns the cozy 30-seat establishment with her sister, Bekki Martin. The pair also own J’adore, a gourmet cheese and chocolate shop located upstairs.

Surrounded by Prohibition paraphernalia, including photos of notorious bootleggers, guests can enjoy a chocolate or cheese fondue or a tempting cheese platter while sipping a glass of wine and listening to classic tunes from a bygone era. “We came up with the name Speakcheasy because of the cheese connection,” Fournier explains. “It’s a fun play on words.” To learn more about this local gem, we recently sat down with the siblings to chat about cheese, chocolate and the birth of the Speakcheasy. In 2014, you opened J’adore, a Parisianthemed cheese and chocolate shop a few doors down from your current location. What led you to move the shop and open up the Speakcheasy downstairs? Bekki Martin: J’adore was becoming so popular that we were busting at the seams. When space became available down the street, we jumped at it. The funny thing is, we had no intention of opening the lower level to the public. Our original plan was to use the downstairs space as a private event and tasting room, and as an extra space to make cheese platters and gift baskets.

How did it evolve into the Speakcheasy? Jessi Fournier: The more private events we would host downstairs, the more people kept asking us to open it up more regularly. They loved the decor and social atmosphere. We had gone with a speakeasy decorating theme to give the place [built in 1886] more character, and our mom, Maggy Edwards, a former antiques dealer, did an amazing job accessorizing it with plenty of Roaring Twenties antiques, Prohibition-era curiosity items and photos, chandeliers, fringed cushions, Tiffany lamps and more. Long story short, we decided to hire a chef and open it up. Why the speakeasy theme? JF: The two of us have always been fascinated with speakeasies and the music from that era. I think we were born in the wrong decade. When I was in Chicago recently, I visited Al Capone’s favourite hot spot, the Green Mill. It was so cool — old and dingy — but the former speakeasy still had Al Capone’s famous booth and a trap door behind the bar. What’s unique about your menu? BM: It’s very cheese-inspired. We offer various cheese and chocolate fondues, cheese sharing plates, traditional raclette (melted cheese served at the table), grilled halloumi, cheese ravioli, cheese-inspired appetizers, salads and more. We also shuck fresh oysters every Friday night. Why specialize in chocolate and cheese? JF: Cheese and chocolate is just such a nice marriage. They pair so beautifully together. Chocolate is that sweet loveliness that everyone loves to feed their soul with. And cheese is that savoury delight that tastes so perfect and fills you up. Besides, who doesn’t love cheese or chocolate — most people love both! What’s popular? BM: Our cheese or chocolate fondues are big sellers. The sharing cheese platters also go over really well. Many of our customers love the Armstrong cheese platter, because it’s full of crowd-pleasers. But the Al Capone cheese platter also sells well, because it’s for the tough at heart — made up of stronger cheeses.

Any cheeses you are addicted to? BM: We have a lot of cheeses that will knock you to your knees, but our two current favourites are a three-year-old Lindenhoff Gouda from Holland, and a French triple-cream brie with a thin line of mustard seeds called Château de Bourgogne à la Dijonnaise. Both are perfect! What are your vegan and gluten-free options? JF: We have a vegan cheese tasting plate made with Nuts for Cheese [dairy-free cheese] made in London, Ont. We also offer a vegan chocolate fondue and vegan ice cream. Our cheese plates come with gluten-free crackers, and our fondues have gluten-free dippers. What about beverages? JF: Along with a fully stocked bar, we have wines from all over the world that pair really
well with our cheeses. We also offer local craft beer, and some really fun specialty coffees. We even pay tribute to the speakeasy era with our Tea Time, when we serve up Prohibition cocktails such as Bees Knees, Hanky Panky and Al Capone’s own Southside Fizz. Southside Fizz was served at his infamous speakeasy in Chicago. Since it was a rougher hooch compared with his competitor’s product, he added simple syrup and mint to it to make it more palatable. Why do we serve it in teacups? Back then, many speakeasies would serve drinks in teacups just in case there was a raid. What special events do you offer? BM: We offer build-your-own cheese plate workshops, chocolate making for kids, various wine and cheese tasting events, cheese and chocolate tastings, scotch nosing, local craft beer and cheese pairings, murder mystery nights. French loaf, cut into cubes
Rub garlic clove around the base of a four-quart heavy pot. Add wine and bring to a simmer over medium heat. Add cheeses slowly, stirring after each addition. Stir in flour. Once all the cheese is melted, stir in nutmeg and salt. Transfer to a fondue pot set over a flame. Serve with French loaf cubes. Serves 5 to 8 guests.

Because a big part of our business is cheese and chocolate platters, we are now able to deliver those, as well. Or, you can pick them up. The same goes for our gift baskets. What’s available upstairs at J’adore? BM: We currently have about 150 cheeses from Canada and around the globe, so there’s something for everyone. We also offer cheese boards, gift baskets, baked goods, gourmet edibles, home decor items, handmade chocolates and more. To keep up with demand, we’re expanding our in-house chocolate production and have hired help to assist our resident chocolatier, Suse Ives. Suse makes an amazing variety of gourmet chocolates, ranging from royal Earl Grey tea chocolate to Tulsi Lemon Ginger chocolate. She also makes vegan peanut butter chocolates — which are to die for. For the kids, there are plenty of superhero-themed chocolates, as well. What’s your food philosophy? JF: Food is one of life’s most beautiful pleasures, but everything needs to be enjoyed in moderation, and there needs to be balance. I believe that you can enjoy a bit of chocolate and cheese without overindulging. These foods are lovely, and they feed the soul, so it’s okay to enjoy them and still live a healthy life.

Just Plane Dirty Good, clean advice on how to stay healthy during your flight BY DOUG WALLACE
How many times has this happened to you? You have a fabulous vacation or weekend away, then immediately feel as if you’re getting a cold the minute you step off the plane. Was it the woman with the runny nose in the seat next to you? Did you pick something up from the beverage trolley? Or, were you just run down and overly susceptible? Whatever the cause, here are 10 tips to protect your health in flight.

Accept the fact that your hands are going to be filthy throughout the airplane experience — from security, the waiting area, the handle of the baggage cart and more. You need to considerably step up your handwashing. From the second you board the plane until you are at your final destination, never ever touch your face. Even though you washed your hands before you boarded, keep
fingers out of your eyes, nose and mouth — particularly if you are one of those licky page-turners. 3.
Immediately upon boarding, wipe down arm rests and your tray table — especially the latch — with a disinfecting towelette. Include the air-vent nozzles and the seat belts; no one ever cleans those. If you get looks from your seatmates, offer them a towelette. You’ll be surprised how many will accept.

The seat pocket in front of you is a cesspool of germs. Never put anything in it. Avoid over-handling anything that is already in the seat pocket. Do not take the free magazine with you when you deplane — do not even touch it. Put all carry-on luggage in the overhead bin, leaving the space under the seat in front of you for just your feet. This will help stave off deep vein thrombosis. Loosen your shoes so your feet can swell freely. Speaking of which, if you take off your shoes, put on a second pair of socks. Why? The floor is germy beyond belief. Never go the lavatory without shoes.

Speaking of which (again), use the anti-bacterial gel instead of the soap and water in the lavatory. Bring a small bottle of your own to use once you’re back at your seat.

Only drink water you can see is coming from a bottle. (The ice is okay.) Never drink the coffee or tea, regardless of how good it smells. The water holding tanks on airplanes are seldom cleaned or replaced. Bring your own litre of water.

Staying healthy also includes sleeping well. A neck pillow and ear plugs go without saying, but throw on an eye mask as well. Keep sleep aids simple: melatonin, an anti-nausea treatment (check with your doctor before taking any medications). Alcohol just tends to make an in-flight sleep more fitful, so try to keep that to a minimum. Worried about in-flight air quality? Don’t be. The ventilation systems do their jobs extremely well. Not convinced and still dabbing antibiotic ointment in the nostrils? You can stop: It’s a myth.

hen practically anyone can find a beach to sit on somewhere for a week, privacy is the ultimate luxury. No one knows this better than visitors to French Polynesia, the gem of the South Pacific — distant, exotic, romantic and unspoiled — which sees as many tourists in one year as Hawaii does in one week. The isolation is the attraction. After all, this is one of the last places on earth to be settled by humans. The weather comes a close second, with year-round temps averaging 27°C. The charming French flavour is point number three, from the baguettes tucked under everyone’s arms in the morning to the double-kissing and the simple-yet-perfect cuisine.
Moorea’s over-water rooms are worth the splurge.
It’s hard to beat Moorea’s tranquility.
A visit to French Polynesia reveals a tranquil, reserved haven that has been enchanting people since the European explorers started arriving in the early 1500s. Five chains of 118 islands cover a fairly wide swath in the southern Pacific Ocean, spread out over 2,000 kilometres, on about the same latitude as Lima, Peru. The islands are autonomous, yet administered by France as a “collective,” with those ties going back to the mid-1800s. Like Hawaii, the biggest island’s name has come to denote the whole region. How to Get There The capital city of Papeete has the only international airport. Air Tahiti Nui (airtahitinui.com) flies there in eight hours from Los Angeles up to five times a week. All French Polynesia domestic flights are run by Air Tahiti (airtahiti.com), which flies to 46 islands in the five archipelagos, as well as to Rarotonga in the Cook Islands. This Bora Bora view doesn’t get tiresome.

Enjoy Island Hopping Unlike typical sunny locales, there aren’t a ton of all-inclusives in French Polynesia, nor is it the type of place you pick just one spot and stay there the whole time. You need to island hop, so your visit becomes less of a beach rest and more of an adventure. Your first stop should be the tranquil island of Moorea, just a half-hour ferry ride north of Papeete. Close enough to the big island but still rather isolated, this is a small community where you’ll get your first lesson in slowing down — the maximum speed limit is 60 km/h — and your first taste of the over-water bungalow experience. While they are more expensive, over-water rooms are worth the splurge, as well as larger and more lavish than they look from the outside. Their biggest benefit is the fact that you don’t really have to leave your room, because you can see everything from your deck: the lagoon, the ocean, the beach, the boats. You can even watch the fish swim under your cabin through the window in the floor — when you’re not snorkeling, that is. Just add room service and a good book. Take In History and Culture Moorea is famous for its two magnificent bays — Cook’s and Opunohu — with Secret Mountain sitting between them, long considered sacred, the bottom of it ringed with temples and shrines. Also found throughout this and most regions of French Polynesia are maraes: stone monuments where the elders of the ancient tribes would come to talk religion, politics and business. Twenty minutes by plane farther north sits Huahine, a two-island grouping, one of the most authentic communities in the region. Unspoiled and more reflective of true Polynesian life, with a history that predates both Hawaii and Fiji, this is the place to learn about the past while immersing yourself in the present. Huahine is a bit of an artist enclave, with a slightly bohemian vibe. It’s also great value: the top spot for finding alternative accommodations like family home-stays, hostels and smaller hotels. A visit to the museum at Maitai Lapita Village uncovers the history of the Lapita people, the pre-Polynesian ancestors. Ancient pottery

Get More Social The next stop? Bora Bora, “the pearl of the Pacific.” With a larger lagoon comes more hotel chains with more over-water bungalows and more people. But that doesn’t take away from the experience; it just makes things a bit more social. Bora Bora is also the most exotically beautiful — shades of aqua too numerous for your eye to properly process, big Mount Otemanu looking down on you, seemingly taking everything in. Lagoon cruises will take you out to snorkel coral gardens, feed giant stingrays and swim with black point and lemon sharks, all before sitting down to a barbecued lunch on a private island set on picnic tables in the shallow water, while ukuleles play and palm trees sway. As for your fellow adventurers, you’ll soon start seeing familiar faces in the airport lounges and get chatting with those who seem to be following you around. In general, this is a well-travelled bunch. Naturally, the French love this place. And it’s not just those who have money; many middle-class French families flock here, happy for the easy kinship their passports and common language allows. Mix in the Japanese, Americans and Canadians and you’ve got a melting pot. Peak season is from March to October, with May and June being the driest. Avoid the rainy season, from November to January, when it can rain for three weeks straight. In the end, is it worth the eight-hour flight from Los Angeles? A thousand times yes. You thought it was farther, didn’t you? So does everybody else.

Rest Assured Why prioritizing sleep should rank high on your to-do listand the simple changes that can help you get enough BY LIZ BRUCKNER
W
hen it comes to scoring a deep, restful sleep, the obvious rules are well known: No coffee after dinner. No bright lights before bed. But it’s not just the pre-bed prep that can help you nod off quickly. Here’s expert intel on why sleep is so necessary, how to get more and whether sleep aids are worth trying. Why is sleep so vital? Sleep’s main benefit is that it enables our bodies and minds to rest and recover, says Wendy Hall, a professor of nursing at the University of British Columbia’s School of Nursing. “When adults don’t sleep enough, beyond feeling like we’re in a fog and having difficulty with problem solving, we can feel very sleepy.” Daytime sleepiness has been equated to walking around as though you’ve been drinking, which can make driving and operating machinery unsafe. When children don’t
get enough sleep, they can become aggressive, struggle to pay attention and become depressed or anxious. Teens with chronically inadequate sleep may engage in risky behaviour, such as take drugs and alcohol, and reckless driving. How many hours do you need? While people differ when it comes to individual sleep requirements, Hall says that generally the younger you are, the more sleep you need. Newborns benefit from 14 to 17 hours, while infants need 12 to 15 hours and toddlers do well with 11 to 14 hours. Preschoolers will ideally sleep 10 to 13 hours, school-aged kids need nine to 11 hours, and teens do best with eight to 10 hours each night. Sleep needs settle into a more regular pattern in young adulthood, with seven to nine hours as the norm for those between 18 and 64, while adults over 65 benefit most from seven to eight hours.
What’s the best way to get more sleep? There are myriad options for increasing your sleep intake (see “5 Easy Tips for Improving Your Sleep,” right), but should dreamland continually evade you, Hall hails behavioural therapy as the best restorative course of action. “It looks at changing people’s thoughts and feelings about falling and staying asleep, incorporates sleep restrictions to the point that time in bed is limited to help consolidate sleep,” she says. “It also encourages changing negative sleep habits, improves sleep routines, employs techniques like mindfulness, meditation or relaxation, and promotes the approach that activities in the bedroom should be restricted to sleep and sex.” Are sleep aids a safe option? A natural approach that’s been highly touted in recent years is the use of

Improving Your Sleep Whether because of the cold, the heat, worrying about tomorrow’s to-do list, or too much Netflix in bed, a lack of sleep does more than affect you physically. Recent studies have found that just one night of compromised shuteye can leave you vulnerable to emotional meltdowns and affect how the brain discerns between what is and isn’t important. The fix: Sleep, and plenty of it. Here are five easy ways to catch more zzzs. Skip late-night workouts Sure, getting in a daily workout is important, but for some people, vigorous activity before bed can result in a night of tossing and turning. To get your heart rate up without compromising sleep, aim to exercise in the early morning or afternoon hours so your body has time to wind down. Or, try simple stretching or yoga before bed — both help you relax before hitting the sack. No booze before bed While it’s commonly known that drinking before bed can make you drowsy, intoxicated sleep isn’t quality sleep. Yes, you nod off quickly, but studies confirm that your body is awakened by a revved-up nervous system during the second half of the night, leaving you groggy the next morning. What’s more, drunken sleep can also
melatonin, a hormone made by your brain that regulates your internal clock. While some users swear that it helps them fall asleep, others find it largely ineffective. Though Hall says studies have shown it has positive effects on jet lag and some small benefits for adults struggling to fall asleep, she adds that unless you aren’t producing enough, incorporating it into your nightly routine isn’t likely to affect your sleep pattern. As for prescription and over-the-counter pills, they can be very helpful and many are a safe, viable option for the infrequent user. However, Hall cautions, it’s important to ensure that you weigh the pros and cons of this type of medication in advance. “It’s always wise to have a conversation with your doctor before you begin to take anything so as to avoid complications and potential health problems.”

To make drifting off easier, keep screens out of your bedroom, as they can lower your body’s sleep-aiding melatonin levels. Keep your room dark Just as keeping electronics light low — or better yet, off — is important, so is minimizing bright lights in the bedroom. The National Sleep Foundation reports that melatonin can only be stimulated in a dimly lit space, and bright lights inhibit that process. Having problems minimizing street or city lights? Use heavy fabrics on windows to darken the room, or try a sleeping mask to block light blasts. Hone your sense of purpose A study by Illinois’ Northwestern University found that participants who focused on past achievements and goals for their future were less likely to experience sleep apnea and restless leg syndrome. They also had a higher quality of sleep overall, prompting researchers to consider “life purpose” as an effective and drug-free option for improving sleep quality, particularly in those ages 60 and up.

The celebrity designer and HGTV star shares her experience designing and building her planet-friendly home in Creemore BY DAWN RITCHIE

reemore is a bucolic community with picture-postcard vistas and an artsy, farm-to-fork sensibility. This little piece of rural heaven is also the location where designer and HGTV star Sarah Richardson chose to build her 5,000-square-foot, off-thegrid dream home. Operating as her own general contractor, along with husband Alexander Younger, Richardson faced the biggest design challenge of her celebrated career: Ensuring that their new home would tick all the boxes for their happy family of four while remaining sustainable in today’s energy-challenged world was a tall order. But Richardson got the job done and chronicled the journey in her newest HGTV hit, Sarah Off the Grid. Now that the series is complete, Richardson squeezed a little time into her packed schedule to share her creative inspirations, amusing anecdotes and a few of the bumps along the road.

feature | Profile How did you wind up choosing Creemore as your location? I was the designer for a house that was being built in the area and that is how we originally discovered it. We bought the property and then the network asked me to do another TV series. We’d been working on drawings for over four years — designing it, thinking about where to site the buildings and what we were going to do. It was perfect for everybody. This is it, this is forever and we are never moving. What plans do you have for the land? We have 100 acres and have no current plans for livestock. But we are fully off the grid, which is incredible and satisfying because my husband, Alex [Younger], worked hard to make that dream come true. For now, we are going to focus on enjoying the landscape and the area and all the natural resources.

Who was your architect? John Robinson. He has a company called Robinson Residential and he’s out in Regina. He listens, he’s thoughtful and he’s dedicated to getting it right. We really worked hand in hand together as a team, which is something I
What elements did you know you had to have inside your home? We knew we wanted the house to be heated by wood stoves. So, there are three wood stoves and two fireplaces that act as a major engine for heat to help us reduce our consumption of propane. The fireplaces are made by Renaissance and they’re fantastic. I can’t say enough good things about them — they light fast and they

Alyssa McManingwell draw well. You’ve got the glass doors that drop down so you don’t lose heat when it’s not in use. And then you can leave the door open in the summer months so that you have good airflow. What was your greatest challenge in the build? The biggest aspect was adding the general contractor responsibilities. It meant that all of those elements were pressing and demanding every day, and the design decisions often got bumped to a little later. When, in a normal scenario, I might be thinking about the fabrics and the style of the furnishings, the kitchen and the cabinetry, instead we were working on the roof, the siding, the insulation, the drywall, the flooring, the plumbing, the electrical — and it just meant those things got shunted a little further down the line. But in the end, I don’t think it suffered. It just was a bit of a juggling act. We really have had the worst of the worst luck with grass because of all the rain. In total, there’ve been four hydroseedings. Nobody wants to watch thousands of dollars get washed away. There are expenses that happen when you’re building a house, but you don’t expect it to all end up at the bottom of the valley. The bottom of the valley is very green. What’s your favourite design feature? I think I’d have to say it’s the belvedere. It’s such a special spot and it has wow factor. But it’s not there for show; it’s there for enjoyment. We go there if there’s a storm coming in. It’s such a nice place to escape to and have a quiet coffee in the morning or listen to the frogs chirping at night. What was the impetus behind creating the belvedere? We always wanted the house to look as if it had always been there, belonged there and would stand the test of time. There’s a great book called A Field Guide to American Houses [by Virginia Savage McAlester] — it’s like the bible of American architecture, so Alex and I spent a lot of time reviewing. When we sat down with John, what kept coming out was we wanted the house to be built like a barn, like a rectangle, that would be easy to erect and easy to heat. We didn’t want a whole bunch of wings, but we wanted to have character and personality, and the belvedere was a design flourish that came up a few times. We didn’t

want it to be just decorative, we wanted it to be functional, so John designed it to be a great hangout space. I’m sort of known for creating spaces that offer a certain level of comfort. It’s not just beauty and hard edges alone: it’s spaces that really draw you in that you can enjoy. That’s always front and centre on my design agenda.

How did you choose your fabrics? This project gave me the opportunity to use my newest collection that I designed for Kravet. So, a lot of the fabrics that you see throughout the house — on the window coverings, as upholstery, everything actually — I designed. So that’s kind of a proud moment.
How did you choose the colour palette? When you think about forever and about investing in a home, you have to think, “What have I always loved for the last 20 years and what will I still love for the next 20 and beyond?” The entire main floor is an open space, so a soft neutral palette. We wanted each room to feel sort of signature to where it was located and what it looked out to. Our daughter Robin loves to sit on the window bench and draw. She’s always thinking about creative ideas, so that became the idea of blue-sky thinking, and she wanted blue, whereas her sister’s room looks out to the forest and the trees, and she embraced the green. In our bedroom, we wanted to feel like we

were waking up in a cloud, so it’s really soft. The bunk room has a sunny feeling — it’s bright and cheery and happy, and all kids have fun in a bunkroom. The guest room was to have a feeling of luxury and warmth that would make people feel cozy and welcome. You’ve got 5,000 square feet — that’s a big house. A lot to clean? We have a robot vacuum. We like to entertain and it really works for that. It’s a big house, but we can run everything with our solar system — we run five fridges, including bar fridges, we have multiple dishwashers, washer and dryer. If you design a system right, you can live as though you’re sacrificing nothing. How many panels did you put in? Sixty. We worked with Sentinel Solar. It’s the third or fourth project that Alex has done with them. He built an off-grid cottage in 1998, so he has 20 years of experience under his belt in terms of how to power and live off the grid. This was our most ambitious by far. He was the driving force behind the off-grid aspect from beginning to end. I was just the beneficiary. Creemore is such a quaint town with boutiques and cafÊs. Everybody’s moving up from the city now. What do you wish Creemore had more of, or what does it need? Creemore has everything going for it! What it needs is more people using all of the great businesses that are there. If you love everything about your small town, you have to shop there. You want the businesses to thrive, and that’s part of my agenda and why we decided to share the fact that we’re in Creemore. We think it’s a wonderful part of the world and we wanted to shout it from the rooftops and tell people where we were and how much we loved it. And what do I think we need? I think we need a great hotel. And I’m available to design it.
