This time of year always takes me back to the mouth-watering aromas coming from my mother’s kitchen. Her turkey was always juicy and accompanied by creamy mashed potatoes, broccoli casserole and homemade stuffing and gravy. And then there were the cookies: shortbread, gingerbread, pinwheels, thumbprints and usually some kind of square thrown in for good measure. She was — and still is — one of the best cooks I know, and her holiday feast was probably the highlight of the season for me. With my own family, I confess, I have to take some shortcuts. Yes, I roast a wickedly good turkey and my garlic-whipped mashed potatoes are a family fave, but my stuffing comes from a box and my gravy from an envelope. And while I generally make about three kinds of cookies (often with children assisting), I don’t shy from supplementing my seasonal treats with offerings from local bakeries. That’s why I’m delighted to feature the delicious work of Collingwood’sTop Shelf Bakery on our holiday cover and in our pages. After all, if you don’t have time to bake yourself, buying from a local bakery is the next best thing (and probably better than what I can cook up anyway). Don’t feel like baking? Shaun and Sarah Stevens, along with longtime friends and business partners Michelle and Jeremy Doornbosch, purchased the property at 108 Craigmore in the Village of Blue Mountain with the intention of creating a modern-yet-cozy cottage for their two families to enjoy together. The end result — a 5,000-square-foot multi-family home — has exceeded their expectations. Shaun and Michelle acknowledge that by adding their combined experience as designers, planners, builders and real estate brokers, they have established a miniature dream team that has allowed them to bring the two families together by creating a unique space they can all enjoy. “This offered a great opportunity to buy into this type of lifestyle by embarking on this challenge together,” Shaun says. “You could do this by yourself, but you’d be broke. By doing this together, it gave us a bigger and better space for less money.” The home offers a number of top-of-the-line features, including a chef-style kitchen with two large islands, built-in coffee maker, ice machine, two dishwashers and restaurant-style refrigerator. The couples wanted to ensure the kitchen had the perfect blend of modern and comfortable by combining quarter-sawn walnut floors with a mix of high-gloss acrylic countertops and stainless steel appliances. The unique lighting above the islands adds to the contemporary feel with its square shape and black metal, but also adds softness, Michelle says. “It was the light fixture that started us drawing the gold into the rest of the house. It’s more of a contemporary design, but the gold colours are really coming back, as opposed to the silver and the pewter,” she says. “We tied

the style through the entire house when we started with those lights.” The oversized kitchen is ideal for entertaining, and leads into an open-concept dining room featuring a 12-foot walnut table, perfect for any large family meal. The main floor also has an open-concept family room featuring a custom-made 20-person couch, where both families can lounge together while watching a movie on a rainy day. It also offers the perfect spot to warm up, thanks to the stunning five-foot-wide natural gas fireplace, which boasts flames that reach 2½ feet high. “We did that because it’s the only one you can buy that has the natural look of a wood burner,” Shaun says. Along with the natural stone fireplace surround, they installed a mantel created with a structural beam from a barn built in 1918 in Grand Bend, Ont. What stands out the most, however, is the eye-catching hot-rolled sheets of steel centred between the wood, enhancing this already stunning feature. “We knew the inside was modern,” Michelle says, “but with it being a cottage geared towards winter, we still wanted it to have a warmth to it. It fits the feeling of the winter, but also the look of the outside.” She notes that their design was centred around the fireplace. “That is the focal point of the main floor. www.sk8georgianbay.com wanted that look to go with the stone and the steel, and tie it all together.” “A lot of people who design modern homes will do the modern both in and out, but they are just too cold-looking,” Shaun says. “They don’t feel warm, comfy and cottagey.” Given the amount of stuff nine people can accrue, the design also includes a large, custom-made mudroom that can store the plethora of mitts, hats and gear required to enjoy a winter up in Simcoe County. “Because of the five kids, and because we are all skiers, we needed a lot of space,” Shaun says. “We came from a very small cabin with nine of us on top of each other, so we have set it up so that the kids have their own drawers inside the walk-in closet in the laundry room, just off the mudroom area.” There are also shelves for ski helmets and other items. Looking up, your eyes follow the lines of the home’s stairs and structural beams, created from TimberStrand structural lumber. The stair stringers and railing are stainless steel cable, helping to add to the warm but rustic feeling of this home. The second floor holds two master suites, plus two other bedrooms, each with its own ensuite. home | House Tour throughout the home, providing a multitude of natural light in the space — not to mention the stunning views of Blue Mountain. “We basically designed the left-hand side of the house to be able to have views of the hill and the lights at nighttime,” Michelle says. “Pretty much no matter where you are in the house, you can see the hill.” The build took about a year to complete, but both families are thrilled with the outcome and how their combined expertise has created a vacation home they can all enjoy. Says Michelle: “We really wanted a warm and comfortable feeling that invites you to come in and make yourself at home.”

The fully finished basement is home to a games room with a large-screen TV. It’s also a great space for entertaining guests, with its cushy seating and bar area, featuring a live-edge countertop.

The celebrity designer and HGTV star shares her experience designing and building her planet-friendly home in Creemore BY DAWN RITCHIE

Sarah Richardson Goes Off the Grid

reemore is a bucolic community with picture-postcard vistas and an artsy, farm-to-fork sensibility. This little piece of rural heaven is also the location where designer and HGTV star Sarah Richardson chose to build her 5,000-square-foot, off-thegrid dream home. Operating as her own general contractor, along with husband Alexander Younger, Richardson faced the biggest design challenge of her celebrated career: Ensuring that their new home would tick all the boxes for their happy family of four while remaining sustainable in today’s energy-challenged world was a tall order. But Richardson got the job done and chronicled the journey in her newest HGTV hit, Sarah Off the Grid. Now that the series is complete, Richardson squeezed a little time into her packed schedule to share her creative inspirations, amusing anecdotes and a few of the bumps along the road.

feature | Profile How did you wind up choosing Creemore as your location? I was the designer for a house that was being built in the area and that is how we originally discovered it. We bought the property and then the network asked me to do another TV series. We’d been working on drawings for over four years — designing it, thinking about where to site the buildings and what we were going to do. It was perfect for everybody. This is it, this is forever and we are never moving. What plans do you have for the land? We have 100 acres and have no current plans for livestock. But we are fully off the grid, which is incredible and satisfying because my husband, Alex [Younger], worked hard to make that dream come true. For now, we are going to focus on enjoying the landscape and the area and all the natural resources.

Who was your architect? John Robinson. He has a company called Robinson Residential and he’s out in Regina. They’re a plan company, so they offer readyto-go house plans, but they also do full custom residential. This is the third collaboration with John and my team. He’s amazing. He listens, he’s thoughtful and he’s dedicated to getting it right. We really worked hand in hand together as a team, which is something I

What elements did you know you had to have inside your home? We knew we wanted the house to be heated by wood stoves. So, there are three wood stoves and two fireplaces that act as a major engine for heat to help us reduce our consumption of propane. The fireplaces are made by Renaissance and they’re fantastic. I can’t say enough good things about them — they light fast and they

Were you worried at all about maintaining your country views with developers seizing so much farmland these days? It was a big concern for us. We look out at the Niagara Escarpment. feature | Profile draw well. You’ve got the glass doors that drop down so you don’t lose heat when it’s not in use. And then you can leave the door open in the summer months so that you have good airflow. What was your greatest challenge in the build? The biggest aspect was adding the general contractor responsibilities. It meant that all of those elements were pressing and demanding every day, and the design decisions often got bumped to a little later. When, in a normal scenario, I might be thinking about the fabrics and the style of the furnishings, the kitchen and the cabinetry, instead we were working on the roof, the siding, the insulation, the drywall, the flooring, the plumbing, the electrical — and it just meant those things got shunted a little further down the line. But in the end, I don’t think it suffered. It just was a bit of a juggling act. We really have had the worst of the worst luck with grass because of all the rain. In total, there’ve been four hydroseedings. Nobody wants to watch thousands of dollars get washed away. There are expenses that happen when you’re building a house, but you don’t expect it to all end up at the bottom of the valley. The bottom of the valley is very green.

What’s your favourite design feature? I think I’d have to say it’s the belvedere. It’s such a special spot and it has wow factor. But it’s not there for show; it’s there for enjoyment. We go there if there’s a storm coming in. It’s such a nice place to escape to and have a quiet coffee in the morning or listen to the frogs chirping at night. What was the impetus behind creating the belvedere? We always wanted the house to look as if it had always been there, belonged there and would stand the test of time. There’s a great book called A Field Guide to American Houses [by Virginia Savage McAlester] — it’s like the bible of American architecture, so Alex and I spent a lot of time reviewing. When

we sat down with John, what kept coming out was we wanted the house to be built like a barn, like a rectangle, that would be easy to erect and easy to heat. We didn’t want a whole bunch of wings, but we wanted to have character and personality, and the belvedere was a design flourish that came up a few times. We didn’t want it to be just decorative, we wanted it to be functional, so John designed it to be a great hangout space. I’m sort of known for creating spaces that offer a certain level of comfort. It’s not just beauty and hard edges alone: it’s spaces that really draw you in that you can enjoy. That’s always front and centre on my design agenda.

How did you choose your fabrics? This project gave me the opportunity to use my newest collection that I designed for Kravet. So, a lot of the fabrics that you see throughout the house — on the window coverings, as upholstery, everything actually — I designed. So that’s kind of a proud moment. How did you choose the colour palette? When you think about forever and about investing in a home, you have to think, “What have I always loved for the last 20 years and what will I still love for the next 20 and beyond?” The entire main floor is an open space, so a soft neutral palette. We wanted each

room to feel sort of signature to where it was located and what it looked out to. Our daughter Robin loves to sit on the window bench and draw. She’s always thinking about creative ideas, so that became the idea of blue-sky thinking, and she wanted blue, whereas her sister’s room looks out to the forest and the trees, and she embraced the green. In our bedroom, we wanted to feel like we were waking up in a cloud, so it’s really soft. The bunk room has a sunny feeling — it’s bright and cheery and happy, and all kids have fun in a bunkroom. The guest room was to have a feeling of luxury and warmth that would make people feel cozy and welcome.

fourth project that Alex has done with them. He built an off-grid cottage in 1998, so he has 20 years of experience under his belt in terms of how to power and live off the grid. This was our most ambitious by far. He was the driving force behind the off-grid aspect from beginning to end. I was just the beneficiary.

You’ve got 5,000 square feet — that’s a big house. A lot to clean? We have a robot vacuum. We like to entertain and it really works for that. It’s a big house, but we can run everything with our solar system — we run five fridges, including bar fridges, we have multiple dishwashers, washer and dryer. If you design a system right, you can live as though you’re sacrificing nothing.

Chocolate Kisses (recipe from Tanya Mear, Top Shelf Bakery)

T

he holiday season is the sweetest time of the year for Tanya Mear, owner of Collingwood’s Top Shelf Bakery. “I’m in non-stop baking mode,” the red seal pastry chef says. “It’s pretty hectic, but I love it!” Founded eight years ago, Top Shelf Bakery was originally based in Bracebridge. When Mear’s husband got a job in Collingwood four years ago, the couple and their two young children moved — and so did the bakery. A passionate baker since age 17, Mear trained at Banff’s Rimrock Resort Hotel under Canadian pastry chefs James Holehouse and Guy Vaugeois. “I honed my skills under these two amazing teachers,” she says. “Both of them competed internationally at pastry chef competitions.” (Continues on p. 61)

½ cup unsalted butter, softened ½ cup granulated sugar ½ cup brown sugar 1 egg 1 tsp pure vanilla extract 1 cup all-purpose flour 2/3 cup unsweetened cocoa powder 1 tsp baking soda ¼ tsp salt 2 tbsp milk icing sugar for rolling 30 chocolate kisses, unwrapped In a large bowl with an electric mixer, cream butter and sugars until light and fluffy, about 2 minutes. Slowly add egg and vanilla and mix until well combined. In a medium bowl, sift together flour, cocoa powder, baking soda and salt. Gradually add dry ingredients to the butter mixture, then add milk and mix until combined, scraping down the sides of the bowl as needed. Cover and refrigerate dough for one hour. Preheat oven to 350°F. Line a baking sheet with parchment paper. Using a spoon, scoop about 2 teaspoons of dough into 30 balls, about 1 inch in diameter, and roll in icing sugar until lightly coated. Place balls on baking sheet and bake for 8 to 10 minutes, or until lightly golden around edges. Let cool for 5 minutes, top each cookie with a kiss, then immediately place cookies in the freezer until completely cool, so the kiss doesn’t melt. Makes 30 cookies.

In a large bowl, sift together flour, baking powder, ginger, nutmeg, cloves and cinnamon. Set aside. In a medium bowl, mix together remaining ingredients. Add flour mix and stir until well combined. Divide dough in half, pat down into 1½-inch-thick rounds, wrap in plastic wrap and refrigerate for at least 3 hours. Preheat oven to 350°F. On a lightly floured surface, roll dough out to ¼ inch thick. Cut into desired shapes with cookie cutters. Place cookies 1 inch apart on a parchment paper-lined cookie sheet. Bake for 10 to 12 minutes. When cookies are done, they will look dry, but still be soft to the touch. Remove from baking sheet to cool on wire racks. Once cool, the cookies can be frosted with the icing of your choice. Makes about 3 dozen cookies.

combined. Beat in icing sugar in 3 additions; beat for 4 minutes or until very stiff. Add desired food colouring. If icing gets too dry to spread or pipe, stir in a few drops of water. Cover with a damp towel to prevent icing from drying out.

Beat in vanilla. On low speed, beat in half of dry ingredients. Using a large spoon, stir in remaining dry ingredients. Divide dough in half and pat into rounds. Wrap well and refrigerate until firm, at least 2 hours or overnight. Preheat oven to 350°F. Line baking sheets with parchment paper. On a lightly floured surface, roll out dough about ¼ inch thick and cut with cookie cutters. If using, apply coloured sugar directly onto cookies before baking. Transfer to baking sheets and bake on upper and lower racks of oven for 10 minutes, switching pan positions after 5 minutes. The cookies are done when edges begin to brown. Cool on sheets until firm, then transfer to rack to cool completely. Decorate cookies as desired. Makes about 3 dozen cookies. Make ahead: Refrigerate wrapped dough for up to 3 days or freeze for up to 3 weeks. Store baked cookies in airtight container at room temperature for up to 2 weeks. Do not freeze frosted cookies.

Today, her client base is large and includes local catering companies such as Men With Knives and Culinary Design. Various local restaurants, such as the Dornoch Tap and Grill, the Leeky Canoe Pub and Eatery, Northwinds Brewhouse and Kitchen, and Bayview Wildwood Resort in Port Severn all feature her desserts. “I bake a variety of sweets — whatever my customers want, I can make.” This time of year, Mear bakes up an assortment of festive treats to savour and share. “One of my best sellers is the holiday cookie box,” she says. The tasty collection features 25 artfully decorated cookies and costs $20. “The boxes are perfect for hostess gifts.” Cookie box flavours include shortbread, gingerbread, meringues, chocolate peppermint, and sugar cookies. Additional festive goodies include sticky-toffee pudding, pumpkin pie, flourless chocolate cake, mincemeat tarts, fruit crumbles and lemon tarts. “My whisky tarts [made with Collingwood Whisky], which are basically a grown-up butter tart, are also super-popular,” she says. “I make everything from scratch and only use high-quality ingredients.” Although Mear doesn’t have a traditional storefront, she does take orders from the public. M

ost people who purchase a gym membership don’t typically expect to get a say in how the facility is run, but that’s not the case with the Collingwood Squash and Wellness Centre. The club, previously Tag Fitness, is located at 90 High Street and was purchased this past October by a group of members who didn’t want their squash courts to disappear. The members, including Larry and Barbara Hall, Murray and Gail Scott and Rod Brown, pooled some money and saved the club from auction, manager Janet Hughes says. The club is also being changed from a corporate, profit-driven model to a “for members, by members” not-for-profit facility. The club’s new vision is to one day be fully not-for-profit, with all membership dues going back to help improve the facility, create new programming and expand the wellness offerings in Collingwood — all to be directed by member committees and the resources. “We want to be a centre for wellness in the town, so on top of all of the physical programs — squash, fitness classes and so on — we also want to have different alternative practitioners on-site, including athletic therapists, massage therapists, medical doctors, naturopathic doctors, 64 | GoodLife Georgian Bay

They also want the facility to connect with youths in the community. “One of the key partnerships we are working on right now is with the newly formed Collingwood Youth Centre,” Hughes says. “We would like to see some youth leagues and teach youth how to play squash. It’s a really great game because you get an incredible cardio workout and can burn up to 800 calories an hour.” Besides being a great physical workout, the game offers a healthy outlet for aggression. “Plus, it brings in the spirit of competition,” she says. While squash tends to be a game played mostly by more mature adults, the Collingwood Squash and Wellness Centre is hoping to change that by reaching out to appeal to the 30-and-under crowd. “Along with keeping them active, there is also a very social aspect to it,” Hughes says, likening it to the team feeling of baseball or hockey. “We want to bring that social component back to life at this facility. Typically at a squash centre, the wives are in doing fitness classes, working out on the fitness floor or playing [squash with each other] while their husbands are there doing the same thing. It’s a really great way for couples to do something together that is social and active and beneficial to their health and wellness long term.” The club will be holding fundraising events for Collingwood General and Marine Hospital

and intends to link its wellness vision there to the grander Georgian Bay wellness vision. As with any change, there will be a few hiccups along the way, but Hughes says the transition has been going as smoothly as one would expect, adding staff are working diligently behind the scenes to try to keep the facility business as usual for members. “The membership has been really cooperative and understanding. They are happy to be able to continue their routines, and we are just wrapping up the end up our membership drive and getting things continuing along,” she says. As for feedback, Hughes says members are thrilled the facility will be staying. “Everyone was sad they were going to have to move to a different fitness facility or that they weren’t going to have their squash at all,” she says. “Our current membership is really excited and happy to be cooperative with our new direction and focus. They are also excited that they get to have input in the facility, as opposed to being owner-driven. They like knowing their money is going directly back into the facility they love.” As for the future, Hughes says the club is here to stay. “The members are dedicated to keeping this facility and seeing it improve. We have been around a long time and people may have preconceived notions about what the building is like because of past owners.
