A CAPTIVATING COLLECTION OF LOCAL ART BY DAWN RITCHIE
Barrie’s Spring Art Tour celebrates its eleventh year on May 4th with fifteen whistle stops along the two-day self-guided tour. Art lovers are invited into the studios and galleries of a roster of thirty-four artists working in diverse mediums: from metallurgy and sculpture, to visual art, stained glass, jewelry making, pottery, printmaking, woodworking, and textiles. Launched in 2008 by Bonnie Ryerson, who chairs the event again this year, the Barrie Spring Art Tour has become a seasonal highlight in Simcoe County, drawing residents and tourists from all of Ontario. Kicking off the event is an opening night celebration from 7:00 pm to 9:00 pm on Friday May 14

3rd at Victoria Village, 146 Toronto Street in Barrie (Location #7 on the tour). All are welcome to come and mingle with the artists. David Whyne will provide music. Refreshments will be served. Saturday May 4th to Sunday May 5th, the tour begins full steam, with numerous downtown stops within walking distance of one another and a dozen more on the tour route from Barrie to Midhurst, Angus and Springwater. It’s a rare opportunity for a personal one on one with artists at work in their own studios. Tour goers will learn about the artist’s techniques, have the opportunity to purchase original local art, commission new works or even sign up for classes with artists who teach. Along the route there is the Barrie Art Club

at 11 King Street, Unit 8 in the south end where seven artists will be exhibiting their work, including acrylic, oil and watercolour painters, jewelry makers and pencil artists. Three artists will have their work exhibited at Veni Vidi Studio on Collier Street in downtown Barrie. Twelve artists are showing at Victoria Village on Toronto Street, and a group of developmentally challenged artists will be exhibiting at the Camphill storefront on Dunlop Street. Along the tour, you’ll also meet: Midhurst artist, Mary Lynne Atkinson, a professional painter whose work has been collected nationally and internationally. Atkinson was awarded a Bronze Medal in Paris, June 2014, by the Sociéte des Arts, Lettres, Sciences, and has
had her work exhibited in the Carousel du Louvre in Paris, twice. Also in the village of Midhurst, Dan Werstuk is exhibiting his realistic oil and soft pastel landscapes of Algonquin Park in his studio. Moody skies, lakes, waterfalls and rapids of scenic Ontario are his subjects. Master printmaker, Ian Kochberg, is in Springwater. He produces astonishingly detailed limited edition original pieces, many with a musical or old world theme. Each of his masterpieces are handdrawn and coloured personally, embossed from metal plates he cuts and engraves himself before the paper is hand-pulled through the press. In Barrie, you’ll meet glass artists, Deeni De Medeiros and Joe De Medeiros who specialize in Dichroic Art Glass that contains sparkling titanium oxides & quartz crystals embedded in it. Then there is serene landscape artist, Yvette Miller, on Blake Street, who was invited to participate in Fine Art Exhibitions in Florence Italy and a Contemporary Master Artists Exhibition in New York City. Raku and stoneware potter, Jackie Warmelink, is showing at the Victoria Village venue. She mixes her own glazes and hand-builds her vessels, platters and unique animal sculptures, which she mounts on driftwood and barn board. Aboriginal painter Paul Shilling, also at Victoria Village, uses his art as a celebration of the spirit and a medium for healing, plumbing the depths of the many personas that we create in life, that keep us from knowing who we really are. “His work is bold,” says tour chair, Bonnie Ryerson. “We are so happy to have him with us this year.” Ryerson, who is an accomplished wire sculptor herself, is pleased with the high quality of artistry in this year’s show. Much of it has to do with the stringent criteria for participating. All artists must be local and produce original fine art works only. Nothing can be fashioned from store bought molds or crafts. The Way of the Masters BY DAWN RITCHIE
“It was the happiest day of my life,” remarks Pauline Bradshaw, remembering the day she spotted a poster on the Danforth advertising art lessons. Michael John Angel, an instructor in the school of realism, who hailed from Florence Italy, by way of Britain, was now teaching in Toronto. Angel was a former student of the renown Italian portrait and fresco painter, Pietro Annigoni, who taught him the techniques of the old Renaissance masters. Annigoni is most notably revered for his iconic portrait of Queen Elizabeth II that has graced the walls of every classroom and City Hall across Canada for decades. She had found her teacher. Elated, Bradshaw strode into Angel’s studio with great expectations, but soon found herself humbled. “I will never be able to do this,” she recalls thinking. “I will never fit into this place. Then he showed us the way.” 16

It was the beginning of a personal transformation that would quake her world. The years ticked by as her skills grew under Angel’s tutelage, until Bradshaw finally realized she could no longer function in the corporate world and had to become a full-time artist. She quit her job cold turkey, sold her house in Toronto and moved to Lindsay where she had no roots but living expenses were lower. She was prepared to “embrace poverty” to follow her dream. Twenty years later, Bradshaw is still a force to be reckoned with. Her work today is precise, with the depth and nuance of a dedicated brush. She takes her time with a canvas. Meticulously researches her subjects and their history and constantly allows her work to evolve, with not a whit of nostalgia for past periods. Moving to Barrie twelve years ago, she set up her studio, Veni Vidi, on Collier, where she still works diligently every day. Her day begins at seven when she attacks a fierce

regime of swimming, strength training, and a 6K run before breakfast. Training for triathlons is part of her fitness routine to stay limber for a new passion of printmaking which is physically challenging. After the workout, it’s a combination breakfast/lunch before hitting the studio from 12:30 pm – 6:00 pm. And if that’s not enough, she also enrolled in second year studies at York University to get a second degree. This time her BFA in Visual Arts, all the while working on a large commission on a re-enactment piece staged at Fort Willow. Tuesday evenings for three hours from September to May you’ll also find her in the studio teaching and passing on the knowledge gifted to her by Michael John Angel. It is the same teaching method instructed to him from Annigoni and down the line, in the tradition of the great masters over the centuries. “It’s a rigid curriculum,” Bradshaw admits. Taught with unflinching fervor, and not for the faint of heart. “We have a high turnover for the first few sessions,” she says. “But those who persevere are a dedicated bunch who have stayed with me for years. Year three is when they begin to draw from plaster casts and then onto painting. “My students copy old masters, drawing with pencil,” she explains. fter flipping three homes in Barrie, vintage audio component restorer, Chris Sargent, snapped up a seventies home for his next project. “The moment I walked into the foyer with my agent I said, this is it,” says Chris. “It’s a two-story open foyer with a skylight, so you walk into this beam of light glowing down on you and you can see both levels right from the front door.” The house possessed many of the qualities Chris appreciated in vintage cars and audio equipment—the longevity of solid construction and distinctive virtues of fine design. “I’m fascinated by the fact that back in the seventies people were more likely to outsource a custom build to an architect,” says Chris. “Compared to the highdensity housing we see now in giant development builds where you get to choose from five home designs. Back then, there was more likelihood to having a unique design.” The house was built in 1975 by architect Viktor Damanis and features multiple levels, a sunken living room and numerous smaller alcoves that offer retreat, yet still manage to render a sense of inclusiveness. The layout worked, but the interior décor was not aging well. Decorated in the style of the day, the home laid claim to shag carpets, 90-degree edged laminated kitchen counters and tongue and groove pine. Everything needed updating. But the location was prime. Settled within a grove of trees on the generous lots of the Robwood estate homes in Innisfil, it was only five minutes walking distance to the beach, a stone’s throw to the Allandale Golf course and close to all the amenities of nearby Barrie. “I love the fact that it feels like a Muskoka setting with the convenience of the city that is rapidly expanding towards me,” says Chris. “Living in the woods, it’s quite common to see deer and fox on the property. There is no way you have two-acre lots within Barrie city limits today.” The residence was also cost efficient. With a septic system and well on site, two wood burning fireplaces and a state-of-the-art geothermal system for heating and cooling, the sole utility bill was hydro. There was even a meat and fish smoker built into the outside wall of the chimney. It was an attractive property Chris just couldn’t say no to. The renovation ahead would span four years as he took on the 3000-square foot home, room by room, transforming everything, “top to bottom,” from a minimalist retro seventies style to a contemporary show house. What Chris didn’t prepare himself for, however, was how the home and

the land it sat on would slowly seduce him into staying on well after the renovation was complete. It would be years, in fact, before he could finally part with it. For the interior, Chris chose an all-white theme. The architectural layout presented a series of half walls that made painting room definitions awkward. Chris also wanted to let the focal point be the nature that flowed in from outside. “The entire back side of the home is glass,” he says. “When it’s all white, it reveals the beauty of the forest and draws your eye outside.” Chris chose artwork to imbue colour instead: bold abstracts from Montreal painter, Sophia Paleotheodoros, and sculptural metalwork from local Alcona artist Lubo Naydenov. Interior recessed LED lighting fixtures were added and windows replaced with hybrid industrial aluminum clad exterior with vinyl casing to retain the economy of power usage. Shag carpeting was torn out and engineered birch hardwood installed throughout. Upon entering the foyer, you take a right turn and the sunken great room with eleven-foot ceiling enfolds below you. Step down a few stairs and the wall of windows reveals the serene views of the secluded private forest. Look up to the right and you can see a snug den a half floor above with vertical windows facing the right side of the property. The half wall also allows perspective from the den through the sunken living room all the way to the exterior forest, ensuring that no view is wasted. Climb the four wide steps up from the great room, edged in custom diamond plate stair kicks, and you find yourself in the quiet formal dining area. The full wall picture window here also takes advantage of the lush forest view, as does every room in this home. Continue through and you arrive in a cozy family room with two-sided wood burning fireplace and cathedral beamed ceiling. The floor to ceiling windows have patio sliders that open to the deck, where a heated gazebo provides year-round entertaining possibilities. The gazebo overlooks the vertigo-inspiring plunge to the forest floor below with trails that lead down to a fire pit entertaining platform, also accessible from a second driveway into the forest. Off the family room resides the bright galley kitchen embellished with skylights. Chris stayed with the all-white theme here as well. Cambria Quartz countertops, art glass backsplashes and high-gloss white cabinets with LED under-cabinet lighting keep the look fresh. Blanco faucets, a glass

The kitchen leads to an intimate breakfast nook for casual meals and off that is a handy pantry with a second sink and beverage fridge. lower level offers a smaller footprint. One challenge Chris encountered there was the decision about an interior hot tub that was installed by a previous owner. Although well-ventilated and situated near the adjoining indoor sauna, Chris considered moving it outside. But upon further inspection of the logistics he realized it would only come out one way, in pieces. Chris decided owning a hot tub was better than not and made the bold decision to convert the whole floor into a media spa experience, with a new glass corner shower off the sauna, built-in towel warmers, inceiling speakers and mounted flat screen media centre. In the adjoining room, he installed a seventeenfoot granite-topped bar kitchen with craft cabinets, sink, beverage fridge and Marvel draft tap. Chris chose water-friendly checkerboard vinyl sheet flooring for the entire lower level to give it an extra punch. Pleased with the solution, he declares that the indoor spa has become one of his favourite features in the home, used nightly for hot tub movies, year-round. Now that Chris has decided to take an early retirement from his fulltime finance position, he’s ready for his next adventure of travelling, spending more time with family and enjoying his restoration hobbies. But the hardest decision of all was readying himself to part with the much-loved residence.

fter twenty successful years in the flooring business as a buyer and scheduler with Kraus Carpet Mills, decorator Darcie Edgar decided to return to school to pursue her true passion. Two years later she was a graduate of Georgian College’s Interior Decorating Program and immediately hired on as an interior stylist with the premiere design firm, Patty Wilson Design. From there Darcie launched her own business, Darcie Edgar Designs, as an accredited member of the Canadian Decorators Association. I like to stay Canadian if possible, but there are good U.S. manufacturers too. I also have a strong list of trades that work contract with me. I do have some DIYers and for them I can help with choices, product procurement, ordering and tracking items, arranging deliveries, styling, etc. They also get that trade discount.

What is your favourite task in decorating? I love choosing patterns, textures, and colours for the home. Focusing on the soft furnishings: area rugs, cushions, window treatments, fabrics and furnishings and accessories. So they work cohesively together as a colour. I also love mixing patterns but you need to take care that things don’t get too busy. Your eye needs to rest. Is there a common mistake homeowners make when they decorate themselves? Yes. Picking the undertone. They really need to consider things as a whole. They may have an orange undertone in wood flooring and a cooler countertop colour that doesn’t work with cabinetry, or the wrong colour palette overall. It can be a costly mistake because those undertones and colours are what pull it all together. What advice would you give DIYers? It’s important to keep things simple and cozy so your home is relaxing. You want to enjoy your space. Some people want their homes to be show pieces, but they still need a relaxing room to kick back. What sets you apart from other decorators? Good question. I’m not high pressure. I find my clients are very comfortable and connected with me. I get them. I just want to help clients with their vision to make a house a home. What is the colour palette of your own home? Neutral grey and navy and white. How often do you refresh? Seasonally. I love Christmas, and spring is always fun. So, spring, fall and Christmas. I haven’t thought much about spring yet. This year has been a bit of a whirlwind, but I went to a colour seminar last week. Coral is the Pantone colour of the year. I’m looking forward to incorporating that trend colour into some accent pieces. Maybe some soft furnishings like pillows or throws, glass wear, candles, vases. Pier One has a fair chunk in a variety of colour intensities. You keep a decorating blog too, correct? RENOVATION REDUX By Dawn Ritchie
M
any homeowners shudder at the prospect of a home renovation: the upheaval, the dust, the horror stories of unreliable contractors, but for Carrie and Vynny Hick, the adventure was exhilarating. The couple had always had an itch to build. But while searching for land in 2009, they discovered a DayCor custom bungalow nestled in a rural oasis of executive homes that fit their needs. Proximity to amenities, quick access to the highway and the fact that the home was close to the beach made it an ideal location. “We had everything at the tip of our fingers,” says Carrie. “And we loved the layout.” So, the couple postponed building, and set their sights on a massive future renovation to tweak the home in the future. What was working already was the spacious layout. The floorplan on the main level offered bedrooms in separate wings. A perfect set-up for the in-law who would be living with them. They also loved the covered patio outside that allowed for al fresco dining in inclement weather. What they wanted to enhance was more exterior living capabilities and additional home-based entertainment facilities. By 2013 they were ready to roll.

Installing a plunge pool was first up. It meant removing a forested section at the back of their one-acre property. A task which Vynny took on himself, aided by a couple of friends and nephews. Together they felled 93 trees. Once the forest was cleared, the Hicks were struck by how much property they had to work with. They increased the pool size to a grander 20 x 40 basin, with a freestanding hot tub nearby. The saltwater pool, elegant in its simplicity of form, has wide entry steps and is framed with a subtle dark grey border with lighter grey deck. Installed by Dan Delong’s Empire Pools, the water is illuminated by two remotely-controlled LED lights with 100 different colour combinations. Set against the dark rural sky, it allows for a serene star-scape to unfold above, unhampered by the glare of flood lighting. Vynny didn’t slack on his lumberjack duties either. After harvesting the trees, he turned them into stacks of firewood for a newly planned outdoor wood burning fireplace. place where summer and winter fires would blaze year-round. “Vynny grew up in the north,” says Carrie. “So, a fireplace was near and dear to him.” Also progressing was the lounge and dining area under the covered patio where an exterior entertainment center with flat screen TV, island and built-in bar fridge emerged. Roll down sun shades were also added. “It’s just a fantastic place to hang out,” says Carrie. “It’s shaded all day with no sun on the deck until 5 pm but the pool’s always in sun.” Finally, their eyes turned inward. The home had matured nearly eight years by now and was begging for an update. The gold wrought iron fixtures, beiges, and dark brown cabinetry popular in 2009 looked tired by 2017. Carrie wanted to stay current with trends and opted for a brighter palette with whites and warmer greys. The lower level was also only partially finished and wasn’t living up to its full potential. Their goal? An entertainer’s wonderland, with a media center, bar/ kitchen, games destinations, guest bedrooms, and room to roam for their frequent party guests. Carrie and Vynny spent weeks online getting ideas and then crawled over the floor with tape measures, visualizing where walls would go and what they wanted it to look like. “When you know exactly what you want it’s easier for them to piece things together,” Carrie says. The whole renovation would span seven months from February to August as they ripped out carpeting upstairs, laid hardwood, changed all the lighting, furnishings and appliances, added wainscoting and built-ins and transformed existing cabinetry. Downstairs they tore down the walls, insulated and restructured spaces before finally repainting everything. Jan Bosch was their contractor and the Hicks have nothing but glowing praise for his precision work. “Jan was phenomenal,” says Carrie. “He has a very good work sense. He does electrical, plumbing, flooring, tiling. Very meticulous, with such attention to detail. If there’s a problem, he tears it out and fixes it. And he does the work himself. He’s not someone who contracts it out.” On the main level, Lee Douglas of Woodcrafter in Guelph worked on the kitchen. The reddishbrown cabinets were painted out in Dulux Dove White. Lower cabinets were reconfigured as pull-out soft-close drawers and new interior-lit uppers were added above the existing ones to stretch storage to the ceiling. A wall pantry was also added to accommodate all the plastic dining ware they now needed for the pool area. Only the granite remained untouched.

Carrie selected chrome and glass fixtures for lighting throughout. Pendant lighting in the upper and lower kitchens and chandeliers in the dining room and master bath were all from Lite Mode on Jane Street. “I personally like how the chrome accents the light,” Carrie says. Fresh, clean subway tile was chosen for the backsplash in the kitchen, and wall tile and mosaics for the lower level were sourced from Tile Giant. Scott Boisclair painted the whole house. On the recreation level, an existing small closedin media room was torn out and walls demolished. The unfinished cold room under the front entry stairs was insulated and the floor rubberized to transform it into a useful gym with rowing machine, pull-up bars, weights, and heavy bag. The lower level’s kitchen was equipped with sink, refrigerator, built-in cabinetry, and wall 38

oven to heat up party hor d’oeuvres. An elongated five-seat counter plus a dinette table also meant guests wouldn’t be forced to eat off their laps or at coffee tables. Then there are all the game destinations. A dart board cleverly set against barn board has plenty of throwing room for tournaments. A full-sized shuffleboard and billiards table also allows multiple games to be enjoyed simultaneously during parties. The recreation level now houses two fireplaces, one tucked into a cozy corner by the billiards table and the second in the lounge area under the flat screen TV. The lower level is also easily accessed through a garage entrance with sleeping quarters for overnight guests. “We enjoyed doing the renovation,” says Carrie. “We got everything exactly as we wanted it.” But as life has a knack of doing, circumstances
suddenly altered and the couple could only enjoy the fruits of their labour for a brief time. A relocation in employment suddenly shifted work up north. “We got tired of the drive in the winter and bought a condo north of Barrie on the waterfront,” Carrie explains. “And downsized by half.” But leaving the hard-won renovation behind was just too much, so they gutted the new condo and brought Jan back in to renovate it exactly like the house. “Everything we picked at the house, we chose again,” says Carrie. “Same colours and tile, the same wainscoting. It’s a Thursday afternoon at 2:30 pm and Barrie’s newest Mexican restaurant, Cocina Mexicana, is hopping. “We just opened on January 19, 2019, and we can’t believe how busy we are,” confesses Ricardo Sierra, who owns and operates the cheerful eatery with his wife, Veronica Serrano, and business partner, Ulises Hernandez. Serving up fresh and authentic Mexican fare, Cocina Mexicana is Barrie’s first all-you can-eat Mexican restaurant. “We are definitely bringing something new to local diners,” he explains. To learn more about the 46-seat restaurant, this Goodlife reporter recently sat down with the trio of owners. Over a few cups of Café de la Olla (a delicious Mexican style coffee with brown sugar and cinnamon), we chatted about everything from the secret to great Mexican cuisine and future patio plans to some of the bustling restaurant’s hottest dishes. 42

What led you to open a Mexican restaurant in Barrie? RS: We are all from Mexico City, but Veronica and I have lived in Canada for the past 15 years. We met Ulises about two years ago and became friends. Together we decided to open a restaurant because we felt that Barrie was lacking an authentic Mexican restaurant.

The second secret is Sazón, which is the talent of mastering acidity, seasoning, tradition — a technique in a Mexican kitchen. Our chef, Oscar Jimenez, has passion, Sazón and a love of Mexico. Mexican Flautas, Tacos Dorados De Pollo (recipe by chef Cocina Mexicana) This recipe for Mexican Flautas is very easy and quick to make. The Mexican Flautas are traditional Mexican tacos that are made with corn tortillas and a chicken filling. The secret of these flautas is that they are crispy. Because they are rolled, you can eat them with your fingers. 500 grams chicken breast 2 cloves garlic 1/4 small onion, chopped 1 Tbsp salt 1 Litre water 24 corn tortillas 1 cup sour cream 250 grams Feta cheese Queso Fresco, cut into pieces ½ bowl, shredded lettuce 1 avocado, chopped 1 tomato, chopped ½ cup canola oil for frying
PREPARATION 1. Place the chicken with garlic, onion, salt, and water in a pot and simmer on medium heat covered for about 30 minutes or until tender. Let it cool and shred. 2. Heat the tortillas on a griddle to make them more pliable and easier to roll. Put some shreds of the chicken close to the edge of the tortilla. Roll tightly but not too much to avoid squeezing the filling out of the tortilla. Secure the tortilla with a toothpick. Repeat this process for the rest of the tacos. 3. While you are rolling the tacos, heat the oil in a frying pan on high heat. 4. Deep fry the flautas in the heated oil turning once until golden and crisp. 5. Remove and drain the excess oil on paper towels. 6. Serve topped with sour cream, lettuce, tomato, avocado and cheese.

Authentic Mexican cuisine is a mixture of Spanish, Aztec and Mayan food. Are all of these influences reflected in your menu? VS: Yes. We have taken the most popular recipes from around Mexico and featured them. Our menu is a tribute to the best that Mexico has to offer on the culinary front. The menu features about 45 different variations of classic Mexican dishes. What are some of the top sellers? RS: The Enchiladas Potosinas (homemade corn tortilla infused with a red chili sauce, filled with cheese and guacamole, Enmoladas (2 soft corn tortilla dipped in a mole Poblano sauce, filled with chicken topped with cheese, onion and sour cream), Carnitas (braised pork tacos) and our Churros. What would you suggest I order for dinner? RS: I would recommend starting with the Enchiladas Rojas o Verdes (soft corn tortilla filled with chicken, topped with cheese and onion, baked with green or red sauce), followed by Pozole (soup made with hominy and pork, seasoned and garnished with shredded cabbage, onion, radishes and limes), then one Quesadilla, and one Taco de Pescado (fish taco). For dessert, I would suggest a Café de la Olla and a slice of Pastel 3 Leches (cake dipped in three different kinds of sweetened milk).

VS: We do have some vegan and gluten-free options and are planning on expanding those items. Since our kitchen cooks everything to order, they can work with the needs of our diners. What are the buffet prices and hours of operation? VS: Breakfast and lunch runs from Monday to Saturday from 7 AM to 3 PM and the cost is $13.99 per person. Dinner runs from Monday to Saturday from 3 PM to 9 PM and the cost is $18.99 per person. Prices are subject to change. Is there a Sunday brunch? VS: Yes! It runs every Sunday from 9 AM to 5 PM. Each Sunday, we offer two special dishes along with our regular menu. The price is $18.99 per person (subject to change). What about reservations? A trip to Italy isn’t quite complete if you haven’t experienced its wine or even better, a tour of one of its many wine regions. In fact, there are 20 regions in total spanning the entire country (Tuscany, Piedmont and Veneto are arguably the most famous). Within these regions there are 73 DOCG status wines — the strictest and highest classification that an Italian wine can be awarded (think Amarone, Barolo, Chianti) — and at least 330 DOC status wines, which are no less prestigious, but the geographic zone might be a little bigger or the rules might be more relaxed. These are appellation zones, each with a set of laws governing its viticulture, permitted grape varieties and wine style. The region of Alto Adige is deep-rooted in its bi-cultural heritage (both Italian and German speaking) and is Italy’s northernmost wine region located between Austria and Switzerland. The area benefits from the best of both worlds — a perfect balance of brisk Alpine air and Mediterranean sun. Beautiful vineyards with a backdrop of snow-covered mountains are synonymous with high-quality wines of authentic varietal character. While it’s one of Italy’s smallest wine growing regions (less than one per cent of the country’s total production), Alto Adige is renowned for minerally, well-structured white wines, with white grape varieties grown in more than 60 per cent of the region’s vineyards. International varieties like pinot grigio, chardonnay, pinot blanc and sauvignon blanc thrive in this cooler-climate environment. 48

Bolgheri is a relatively young, yet prestigious DOC appellation, located within the Maremma on the Tuscan coast. Featuring sloping coastal vineyards close to the Tyrrhenian Sea, it’s named after a town in the north of the region. The Bordeaux trio goes into the majority of Bolgheri wines: cabernet franc, cabernet sauvignon and merlot, producing deeply coloured, supple yet age-worthy red wines. In fact, this is where the term “Super Tuscan” was born, and it’s home to some of the world’s most famous wines, namely Ornellaia, Masseto, Antinori’s Guado al Tasso, and of course, Sassicaia — the original Super Tuscan. Regarded as one of Italy’s flagship wines, Sassicaia was first released commercially in 1968 and steadily gained a reputation before exploding in popularity when Robert Parker scored the 1985 vintage a perfect 100 points. Like most wines made in the old world, Chianti derives its name not from the grape used to make the wine, which is sangiovese, but from the appellation where it is made. The Chianti zone, labeled as a DOCG, is also located in Tuscany and is well known for its sweeping landscapes, burning hot sun and its wealth of art and food history. For a Chianti to be a Chianti, it must be produced in one of the eight Chianti sub-zones and be made from at least 80 per cent sangiovese grapes. You can expect a wine that’s very earthy and rustic, has a smell and taste that’s reminiscent of cherries and strawberries, and is high in acidity, which makes it the perfect wine to pair with food, especially tomato-based dishes.

This combination perfectly demonstrates the success of the vintage, with vibrant fruit, silky and generous texture, all underlined by a fresh and lively acidity. $29.95

Ruffino’s Ducale Gran Selezione “Oro” brand was first produced in 1947 and is only made during stellar vintages. There’s nothing like the sweet taste and scent of maple syrup, but did you know it has dozens of other functions besides sweetening waffles and pancakes? Since you can substitute maple syrup for the sugar in most recipes, garden-variety roasted pork, salad dressings, cinnamon rolls and baked beans may be no more. Whether you can describe it or not, maple is clearly gaining ground as a budding old-is-newagain flavour. It’s been introduced in a wide range of food and drink products, from granola, yogurt and potato chips to liqueur, flavoured waters and beer. Made from the sap from red, sugar or black maple trees, the amber elixir is native to a relatively small geographic area in Canada and the US, known as the Maple Belt. It spans from the Midwestern United States through Ontario, Quebec and New England and into New Brunswick, Nova Scotia and Prince Edward Island. British Columbia, Manitoba and Saskatchewan also produce some syrup. Canada’s aboriginal peoples taught early European settlers how to harvest sap and boil it down to produce maple syrup. Canada produces the majority of the world’s syrup, with estimates running in the 70 to 85 per cent range. Maple syrup is an excellent source of manganese and a good source of zinc. If heart health is important to you, you might want to consider switching to maple syrup for all your sweet dietary needs. Zinc not only acts as an antioxidant, it also helps decrease the development of hardening and narrowing of the arteries. It’s also believed the presence of manganese helps with the levels of good cholesterol. The combination of these two trace minerals is also said to support the immune system. Other important nutrients include potassium, thiamine, calcium, iron, magnesium and riboflavin. There are a good number of local spots to tap into the sights, smells and tastes of Ontario’s maple season, with some beginning as early as late February and going well into April. Undeniably at the centre of our cultural identity, maple is a flavour whose time has definitely come. Although as true-blue Canadians we’ve always known it was worthy of wider attention, it will be interesting to watch it flourish. And who knows, it could even out-rival pumpkin spice as the next ubiquitous flavour, showing up, as pumpkin did, in all suitable and not-so-suitable places. Anyone up for maple margarine, lip balm or vodka?

3 large Ontario carrots, cut into 1-inch pieces 3 Ontario parsnips, cut into 1-inch pieces 2 Ontario leeks, cut into 1-inch pieces 1 Ontario red onion, cut into wedges 6 Ontario rainbow trout fillets, with skin (about 150 g each) Maple mixture: 1/2 cup Ontario maple syrup 1/4 cup Dijon mustard 1 tbsp red wine vinegar 1/2 tsp each salt and pepper 2 cloves Ontario garlic, minced On large parchment paper-lined rimmed baking sheet, spread carrots, parsnips, leeks and red onion in single layer. Maple mixture: In medium bowl, whisk together maple syrup, Dijon mustard, vinegar, salt, pepper and garlic. Reserve 1/4 cup of the maple mixture. Set aside. Spoon remaining maple mixture over vegetables; toss well to coat. Roast in 375 F oven for 30 minutes, stirring once. Remove from oven and place fillets, skin side down on top of vegetables. Brush reserved maple mixture over fillets letting any maple mixture run down onto vegetables. Return baking sheet to oven and roast until trout is cooked and vegetables are tender, about 15 minutes.

This easy-to-make crème brûlée is even more special with the addition of Ontario maple syrup. Preparation Time: 10 minutes Cooking Time: 35 minutes Chilling Time: 3 hours Serves 6 2 cups Ontario whipping cream 1/2 cup Ontario maple syrup 2 Ontario eggs 2 Ontario egg yolks 1 tbsp vanilla 1/4 cup packed brown sugar In small saucepan, heat cream and maple syrup over medium heat just until small bubbles begin to form around the edges; remove from heat. In large measuring cup, whisk eggs, egg yolks and vanilla until well blended. Gradually whisk hot cream mixture into egg mixture until blended. Divide among six 3/4-cup ramekins or custard cups. Set ramekins in shallow pan and place pan in oven. Pour in enough hot water into pan to come halfway up sides of ramekins. Bake in 350 F oven for 30 to 35 minutes or until edges are set but centres still jiggle when gently shaken. Carefully remove from water; let cool on rack. Cover and refrigerate for about 3 hours, until chilled and set, or for up to 2 days. Just before serving, place ramekins on rimmed baking sheet; blot top of custards with paper towel to dry. Sprinkle sugar evenly over custards. Broil as close to heat source as possible until sugar melts and bubbles, about 30 to 60 seconds. Let cool to harden.

aybe you’re starting a new career or recovering after losing your job. You’re beginning a relationship, or are ready for a new one. No matter the cause, you are a woman who wants a fresh look for a new start. However, fashion isn’t your strong suit. “That’s our favourite type of client,” says Tracey Baker, owner of ZuZu Fashion Boutique at 25 Dunlop St. E. “Trying something new can be intimidating, so we work really hard to make it comfortable. This is an intimate business and we take it seriously. We only ask three things. First, be willing to try things on. Nothing looks good on a hanger. Second, bring your sense of humour and third, trust us. My staff and I are here to help as style consultants. We can outfit a woman head to toe, including her shoes.” ZuZu carries an impressive selection of accessories and jewellery, but its main game is clothing. Baker stocks lines made specifically for boutiques such as Canadian

Baker’s previous 25-year career in marketing, business development and sales at downtown Toronto law and accounting firms, banks and non-profits gave her a rich background in customer service. But the self-described “corporate chick” always loved fashion and developed her own sense of style early in life. Baker has an eye for classics, but likes a bit of edge. If there’s something outside the box hanging on ZuZu’s racks, chances are good she bought one for herself and another for a fashion forward customer. “I like statements, whether jewellery or clothing, but with classic lines,” explains Baker. “I look for something that will last in terms of style but you won’t see in many places. I like people to see what I’m wearing and think it’s cool, maybe something they could wear. Many times they could. It’s just about being a bit bolder. They can wear their own interpretation of it which is what fashion is all about.”

A Barrie native, Baker came home for family in 2011 and worked on business development contracts downtown. She dropped into ZuZu in 2012, liked the store and chatted with the owner. When Baker mentioned her contracts were finished, the owner asked if she was interested in working at the store. “I thought that was the last thing I wanted to do,” says Baker, with a laugh. “I’m more of a business-to-business girl. But I liked the shop and thought ‘okay’.” Baker later became manager. When the owner was ready to sell the shop, she went all-in and bought the business. “It was the most terrifying thing I ever did, but what’s life without change?” says Baker. “I was up for a challenge. There’s not much difference in customer service from one business to the next. For me, it’s more about the making it a really warm, embracing experience. My biggest worry was would anyone come back when the previous owner left? But customers loved the shop and stayed.” Baker and her staff, including sales associates Della and Karen, administrator Gail and bookkeeper (and sister) Joanne, are all active in the community through ZuZu. Baker is on Barrie’s BIA board and the shop’s ongoing charity is COPE Service Dogs. The shop runs the fashion shows at COPE’s annual Mother’s Day High Tea and the Toy Tea for Children’s Aid and Gilda’s Club. “It’s a very busy career I’ve chosen, but I have an amazing staff who allow me to do what I love,” says Baker. “They are incredible women. It’s a cliché, but you’re only as good as the people you surround yourself with. We’re a team that has enabled the shop’s success and hopefully that will continue.” GoodLife | Barrie March - April 2019

The city of Victoria, at the southern tip of Vancouver Island, is almost too cute to be true. Voted second best small city in the world by Conde Nast readers in 2017, it’s seemingly built on a human scale of pleasantries. Indigenous cultures and modern artists have long praised the spiritual and physical beauty of the Pacific Coast. By happenstance and by design, Victoria has managed to develop into a place that’s almost Disneyesque. Pretty gardens boast Canada’s warmest climate despite ocean waters cold enough to chill the evening air at any time. Spring comes earlier here. Downtown is quaintly modern and pleasantly walk-
able. Northward from the city, rolling hills, forest and rocky coasts are quickly reached by car. As expected, hiking, biking and kayaking are big in this green-conscious, fitness-oriented enclave. Good food is part of the lifestyle too. West Coast cuisine is synonymous with fresh ingredients prepared in a range of gastronomic styles, now joined by an exploding brewpub scene. Little Vic has developed its own vibe.

ACCOMMODATIONS Edwardian Fairmont Empress is the undeniable Queen Mum of hotels in town. Positioned at the center of Inner Harbour, it casts a regal gaze over the downtown. Sunsets from Q Bar and Restaurant are splendid. The hotel’s recent $60 million renovation continues a tradition of timeless elegance, including afternoon ‘Tea at the Empress,’ since 1908. Across the bay Inn at Laurel Point is a fine example of modern coastal design by Arthur Erickson. Like its high-end colleagues, The Oak Bay Beach Hotel on the eastern edge of Victoria overlooking Juan de Fuca Strait offers all the luxuries one would expect. Ocean views are spectacular from the hotel, pool area and adjacent Victoria Golf Club. Cuisine is regional and there’s a choice between fine dining, pub or café fare. 66

GASTRONOMY In addition to luxury hotel dining, Victoria serves up some fine independent fare. Afternoon tea at Butchart Gardens is elegantly served in the original Butchart family residence, surrounded by flowers and greenery. The Dining Room serves local foods paired with the best BC wines. Harbour Air has a Fly ‘N’ Dine flight from downtown that includes garden admission, dinner and a limo back to town. Less known despite its classic West Coast plantings of Garry Oaks and Japanese maples, the Abkhazi Garden and Teahouse is currently run by volunteers with the Land Conservancy of British Columbia. ‘A romantic garden setting,’ says Fodor’s. Two restaurants on the ‘A’ list would be the Agrius and Courtney. The Courtney Room in the Magnolia
Hotel is proud of its beverage list, meats and seafood, including a tasting menu. Agrius Restaurant supplements its fanatically organic ingredients with BC-favoured wines and beer plus custom breads and pastries. Meanwhile, in nearby Cowichan Valley and Saanich Peninsula, cideries, distilleries and wineries are chalking up awards. Small group tours are offered by several companies such as Luxury Wine Tours and Cheers Cowichan. Two hours north/northwest of Victoria at Merridale Cidery, Distillery & Eatery in Cobble Hill, brewer/ distiller Rick Pipe, his lovely wife Janet and stepson Kevin are on a mission to bring the world back to sustainability. Ciders are made from heritage apples shaken from the trees, gaining awards for quality even in ancestral Britain. Try Rick’s 47-botanical gin or ciders made with hops. Future plans include a LEEDS distillery. Under the stars, if not the influence, luxury yurts are available for overnighting. Nearby, Unsworth Vineyards is cultivating 12 acres of grapes tested expressly for the climate and soil conditions of the Cowichan Valley. The oldest grapes are 2007 Marechal Foch, which have produced the winery’s award-winning Ovation. Sipping a Prosecco-style sparkling white Charme de L’Ile, I pronounced my taste buds satisfied. Owners Tim and Colleen Turyk have long family ties in the area and share a genuine concern for agricultural sustainability. An innovative partnership with local farmers assures fresh seasonal cuisine. High quality continues at Snowden House, a restored farm near Sydney, North Saanich, where Laura Waters has tapped 1,600 Douglas fir trees to make infused essences and vinegars sold in her gourmet gift shop. Laura also gives cooking lessons in the 1900s farmhouse that doubles as a B&B. Sea Cider Farm & Ciderhouse is an upscale property with panoramic views of orchards and the sea. Hospice Simcoe’s annual Gala was another successful event. “An Evening in Paris” raised approximately $94,000 for Hospice Simcoe programs and services. Elegant evening of dining and dancing was held at Tangle Creek Golf and Country Club on February 8th. This year’s Master of Ceremonies was Jim McIntosh and Dr. Brian Morris our guest speaker.
