Canada-OntariO JOb Grant PrOGram Canada-Ontario Job Grant (COJG) provides opportunities for employers, individually or in groups, to invest in their workforce, with help from the government. The Canada-Ontario Job Grant provides direct financial support to individual employers or employer consortia who wish to purchase training for their employees. It is available to small, medium and large businesses with a plan to deliver short-term training to existing and new employees. Important to know: • Employers can get up to $10,000 in government support per person for training costs. • The training must be delivered by an eligible, third-party trainer. • Employers with 100 or more employees need to contribute 1/2 of the training costs. Small employers with less than 100 employees need to contribute 1/6 of training costs.
• For employer groups who want to apply for training supports the government offers a COJG Consortium Stream. The Consortium Stream allows a group of employers (more than 2 employers) to pool their resources to support common training objectives and goals. To apply as a consortium, the intermediary organization needs to ensure all the participating employers and trainees meet COJG requirements and are able to make their required contribution towards the training cost. • The intermediary organization will be paid 15% of the approved COJG ministry contribution to cover the administrative cost related to the completion of the consortium application. If you’re an employer with a particular skills demand, the Canada-Ontario Job Grant might be right for you. Applications are accepted on an ongoing basis. Invasion of the Scarecrows
From mid-September to mid-October, Meaford becomes Scarecrow City. ction Lock – South Georgian Bay started out with a 23 year old mechanic who loved to work on cars and had a knack for fixing almost anything that needed fixing, and a 23 year old girl who worked as a charge nurse supervising the evening shift on an orthopedic and neurology unit. Life doesn’t always go in the direction you expect it to; but often takes you exactly where you were meant to be. Due to circumstances, Steve retrained as a mechanical engineering technologist and resigned to working at a desk, behind a computer. Kim was working in customer service and in 2010 the couple moved to and fell in love with the South Georgian Bay area. It was everything they ever wanted for their home to be. Finding the right employment was their one big difficulty. After an exhaustive search, a series of events took them right to a place that needed to be filled, Wasaga Beach had no locksmith! Combining his engineering and mechanical/
machinist skills with accredited locksmith training they decided to take a chance, jumped right into the deep end and started Action Lock – South Georgian Bay. Since opening Action Lock, Steve & Kim deHaan have worked together to operate their increasingly busy locksmith business. They attribute their steady growth due to the high level of customer satisfaction achieved. afreniere Auto Sales & Service, the local dealership in Stayner, is home to three generations of the Lafreniere family. “Now I’ve got my son here, I’m telling him things that I heard,” said Andy, general manager of Lafreniere Auto Sales and Service, who owns the business with his wife, father and mother. He would’ve heard some similar things back in the 1980s when he started working for his own father at the dealership, which is at 7106 Highway 26. The dealership has been in the business since 1958, serving Stayner and beyond. Back then, it was known as Brockwell and was owned by Merv Brockwell. In 1989 they purchased the business from Brockwell and eventually changed
the name to Lafreniere. Many people have purchased cars from them and continue to come back. They sell about 500 to 600 vehicles a year, as well as servicing, detailing and renting vehicles. “We have people that would’ve bought a car from my dad, and now they’re secondgeneration, third-generation buying vehicles from us — that’s pretty cool,” Andy said. People keep coming because they have trust in the Lafreniere’s vehicles. “Repeat and referral in this business is huge,” he said. Their customers come from beyond Simcoe County, too. “We go above and beyond what everybody else will do, which makes us different from other places.” “What it all boils down to is people have the trust in us that they’re going to

THE JEWEL BOX
he Jewel Box is a family owned and operated jewellery store and gift shop located in Wasaga Beach. Wasaga Beach retail pioneer Edna Osborne, along with her husband Ernie, were the original proprietors of The Jewel Box, located in the castle on River Road West, which is now operated by her grandson, also named Ernie. Edna was the well-known matriarch of the Osborne family, long-time retailers in Wasaga Beach. Mrs. Osborne and her husband, Ernie, opened their first store in Wasaga Beach in 1944. It was the height of a new era of tourism in Wasaga Beach as soldiers, stationed at nearby Camp Borden, discovered the burgeoning resort town, which they visited while on leave. Eventually the family operated several

Ernie said the main store (built in 1945) was located in the Main Street mall at the main beach. They also had one store at Balm Beach and one near 22nd Street. When Edna and Ernie moved to Florida to retire, their son Ernie and his wife Elaine took over the management of the business. They also owned the Country Store located next to the castle, which catered to souvenirs, ice cream and lots of goodies! Their son, Ernie, and his wife Kathy, along with their 3 children, Sydney, Kaitlyn and Ernie Jr. now operate the Jewel Box in Osborne’s Castle. Ernie Sr. can still be found with his hand in the business as well from time to time.

Long before building his gorgeous retreat on Georgian Bay in The Blue Mountains near Craigleith, Ron Rudling knew there was a lakefront property in his future. “When I was a little kid, I went to a cottage up north with my Dad to visit relatives,” recalls Rudling, who built his superb waterfront residence in 2015. “I was sitting on a deck overlooking a bay with my Dad. I turned to him and said, ‘Someday I’m going to own a cottage on the water.’ Eventually, I got it. I bought a property near the mountain one spring and bought this Georgian Bay property that fall. I sold the mountain property because I fell in love with the water.” Before building the main house, the owner lived in a small one-storey ‘bachelor pad’ on the property while constructing a back yard designed for large scale entertaining. The welcoming space includes a large pond fringed with gardens and ringed with five stone waterfalls, a 20 ft. by 42 ft. salt water swimming pool with an open view of Georgian Bay, and a 42 ft. by 70 ft. stone patio with an al fresco dining area and a custom built stone wood-burning fireplace fronted with cosy seating. A 20 ft. by 20 ft. wooden viewing deck beside the water is the perfect place to have a glass of wine with friends and family while watching the sun go down and the stars come out. “A friend who is a masonry expert built the outdoor fireplace,” says Rudling. “It is a one-ofa-kind design because those are the only kind he builds. Behind the fireplace is the air-conditioned pool shed that contains the heater pump, filters and storage. We chose a salt water pool because it is beneficial for the body, great for swimming and good for your skin. Basically, we planned the backyard as we went along. There wasn’t a set plan.”

Stone slab stairs at the front of the residence were quarried, cut to size and set in place beneath a portico entrance with stone and wood pillars. A large wooden front door with arched transom and full-length sidelights leads to an atrium foyer lit by two-storey windows and a contemporary black metal and crystal chandelier. A graceful curving staircase with hickory treads and handrails floats up to a second floor catwalk that overlooks the main level. The home’s elevator can also be used to easily reach the upper floor. “I had to fight to get my circular staircase because originally it seemed that it couldn’t be done,” says Rudling. “However, I found someone who could build it and it looks amazing.” Beyond the staircase, the chic Great Room flows into a gourmet kitchen with leathered titanium granite counters and rows of custom wooden cabinets with simple metal pulls. The kitchen’s Fisher & Paykel stainless steel appliances include a double dishwasher. On the wall above the stove, a stainless steel subway tile backsplash adds sass. I wanted the mini chandelier over the bathtub and a big window to be able to look out onto Georgian Bay while soaking and enjoying a nice glass of wine.” The spacious master bedroom has an attractive tray ceiling and a generous walk-in closet with custom shelving and drawers in addition to a balcony walk out. When homeowners are looking for an experienced designer, Missy Sharp’s name is always one that is bandied about. For two decades Ms. Sharp has been the go-to designer for the Georgian Bay/Muskoka region. Cottages, chalets, homes, condos, and light commercial work are all within the scope of her expertise. Her personal mission statement is to create living environments that are a reflection of her clients’ sensibilities, not her own. A directive that accounts for much of the repeat business and glowing referrals she receives. Sharp claims she is of a vintage that came before standard college design courses were ubiquitous. Back in the days when apprenticeships under demanding established designers in Toronto were the trial-by-fire education. That intense on-the-job-training honed skills, developed relationships with top drawer trades and afforded an exposure to a wealth of different tastes and budgets. Skills that have proven invaluable in addressing the varied needs of today’s savvy clients. Currently hard at work on a 6000-square foot addition for an international client, Ms. Sharp managed to take a few moments out of her busy schedule to talk with GoodLife magazine.

How would you describe your brand? My tag line is really how I work: ‘A reflection of you.’ It’s all about you. The design develops through the interviewing process. It’s really putting a puzzle together. Your taste, your lifestyle, budget, the bones of the residence and existing furnishings. I put it all together and funnel it down to the end product. It’s a puzzle. You may be starting with a blueprint. Or a renovation or someone may have a log cabin they want to add on to. The variety is vast. So, forget the cookie cutter. I can’t do anything cookie cutter. Are there certain elements you rely on? Functional efficiency and I do always like to design with understated good taste. I love beautiful fabrics that drape really well. I love colour too, intense pigments like indigo blue. I always say your carpets are your fifth wall. I love gorgeous carpets, wonderful art and simple furnishings. In one space I’m doing right now we’re using old world William Morris patterns that have a lot of pigment, colour and definition. It’s gorgeous. Of course, everyone wants clean and simple right now. Is that the current design trend? The trend right now is mid-century modern. Everything is grey and brown. It all looks the same. And unfortunately, that’s all the suppliers are carrying. But I encourage clients to try out some colour. A room can still be neutral and provide a calm simple feel with a little hit of colour, even if it is only in the artwork, rugs, or accessories. What I’m also trying to do with clients is mix it up with a few antiques. Bring a little history in. A treasured piece from a grandmother, a found object or a personal thing you love. A wonderful pine hutch or armoire. A mahogany piece. Something old and unexpected. When I’m walking down a hall I want to see a beautiful carpet, a beautiful piece of art, a unique mirror or something that’s different. I don’t care if it’s a laundry room, a powder room or a hall. Is that the trick to bringing warmth to contemporary design? It’s one way. I’ve got a new client who I’m going to be working with who has a very modern style and this beautiful grand hall with massive original art. The space is calm and relaxed but she can’t find the right carpet and wondered also about the foyer. I suggested breaking it up with some beautiful wallpaper. Not in your face, but something that’s complementary to everything else that’s going on in the room. Give the foyer a little bit of definition. A bit of character. Is wallpaper coming back? Absolutely. Wallpaper can also provide texture.
If you’re doing a real contemporary space and people don’t want a Chintz pattern I would say grass cloth, a textured burlap look. Brunschwig and Fils and Schumacher are traditional lines. I love mixing that up with contemporary. You end up with something quite unique if you do that.

What is the style of your own home? We’re in a temporary home right now. We just sold our Algonquin cottage and we’re on the brink of building a new home/cottage. We think we may have found the land. On the North Channel, right on Lake Huron. We haven’t bought it yet though. Have you decided on a design concept? My look will be somewhere between super contemporary and traditional. White clapboard with floor to ceiling windows. A one room open concept living room, dining room and kitchen. I’d keep the furnishings simple but comfortable. But first and foremost, the home must fit in with the geography. Of course, if I had an unlimited budget I would decorate with art. What kind of art do you collect? Eclectic mix, abstract colourful art, portraits, group of seven style work. A real mix. I’ve done a fair bit of painting myself that is on my website. I’m drawn to colour. How colour plays together. Art is important. I tell my clients, you’ve spent all this money on the bones and the furnishings, you don’t want to put up gas station art. Your look is only as good as your weakest link. That’s so true. Art is so often overlooked when it’s directly in your eye line every day. If you have something in your home that is garish or in poor taste it stands out like a sore thumb. It doesn’t mean everything has to be expensive, it just needs to be coordinated. For instance, I did a bathroom and we bought beautiful expensive wall tile and complemented with very simple floor tile. It’s knowing where to spend and where to save. What drew you to a career in interior design? It’s something I have been innately drawn to since my childhood. My grandmother had incredible gardens. I was fascinated by the colours and the textures and the shapes. My mother was very creative and had a beautiful design sense and homes, so I was influenced by her. I remember, when I was a teenager, my boyfriend and I would go on dates driving through Rosedale and Forest Hills at night. We’d peek in the lit-up interiors and talk about the design elements. I guess I’ve always been interested in creating spaces, efficiency of spaces and the aesthetics of spaces. It’s just something I’ve always loved and been passionate about.

It’s in the shadows where good art is realized, asserts artist M.J. Jones. “The shadow is what brings the painting alive.” Jones, a passionate skier and golfer, moved to Collingwood in 2007 after decades of making the weekly haul up from Toronto for ski retreats at Big Blue. Today, painting the mountain is one of her greatest passions. Jones regularly ventures to the summit of Blue Mountain when the sun is at its zenith and shadows are peaking to compose and photograph reference photos for future paintings. “I have a pile of photos on my phone and in art drawers,” she says. “I like painting water and snow. Snow mostly, because there are so many shadows on snow. Shadows help you navigate your way down the hill.” Jones’ style has become so identifiable, in fact, that many of her friends and critics say they can always tell which paintings are hers because you

A prime example is her acrylic, entitled “Lifted.” Jones takes you right up the mountain with her, seating you aloft at chairlift level where you can feel the blustery chill of the ascent mixed with anticipation of the thrilling descent awaiting below. Jones has acquired a bit of a reputation as a ‘ski painter’ of late. One of her paintings of a ski run has just been selected to figure on Thornbury’s street banners this fall. It is part of the Thornbury Business Improvement Association’s four season playground promotional drive. Jones studied art at the University of Toronto before going on to become an educator. But she says she’s been drawing since age four. “I’d spend six hours a day drawing as a child,” she recalls. While in school, she started searching for her own style. Renown artist, Ken Danby, was a good friend of Jones’s art professor and for a time, she thought she wanted to paint like him. “Or like Bateman. Painterly. But not his style,” she says. Gradually she found her own voice and much of her adult journey was spent exploring watercolours, which she credits for helping her discover the value of shadow. “You can only paint once with watercolour and you have to think about the negatives and positives,” she says. “Watercolour is a precision art. Acrylics allow more latitude.” It wasn’t until she retired from her position as a school principal and sought out galleries in the Georgian Bay area that she discovered that watercolours hung under glass were less desired by galleries. And so, Jones’s acrylic exploration took flight, and along with that, her sales and notoriety. Today, fifty percent of her sales comes from commissioned art work, but the rest is for pure pleasure. “I’ve begun experimenting with abstracts now,” says Jones. “It’s about how you see things, and getting the shadow into the flower.” See M.J. I had heard the high praise before picking up Jodi Picoult’s Small Great Things, with the cover review even touting it “the most important novel” she’s ever written. So needless to say, I cracked the book open with high expectations. And all I can say is, wow. This fascinating read tackles the challenging but crucial issues of prejudice, race and justice at a time when it couldn’t be more relevant, as daily headlines reveal. The book centres around Ruth Jefferson, an experienced labour and delivery nurse. During her shift, Ruth begins a routine check-up on a newborn, only to be told a few minutes later that she’s been reassigned to another patient. The parents are white supremacists and don’t want Ruth, who is African American, to touch their child. The hospital complies with their request, but the next day, the baby goes into cardiac distress while Ruth is alone in the nursery. She hesitates before performing CPR and, as a result, is charged with a serious crime. So begins a tumultuous journey for Ruth, who fights for a state of normalcy for her family, particularly her teenage son, as her case becomes a media sensation. Adding a layer of complexity is the fact Ruth’s lawyer is a white public defender who insists that mentioning race in the courtroom is not the way to win. It’s hard to stop turning the pages as the trial proceeds, with the culmination delivering a shocking twist in true Picoult fashion. One can’t help but reflect inwardly as they read this novel and ask, in a world so embattled with racial injustice, what small great thing can we do to help? And that’s exactly the effect Picoult hopes her book will have. As she explains in her author’s note, “There is a fire raging, and we have two choices: we can turn our backs, or we can try to fight it. Yes, talking about racism is hard to do, and yes, we stumble over the words — but we who are white need to have this discussion among ourselves. Because then, even more of us will overhear, and — I hope — the conversation will spread.”

Local restaurateur, Michael Mikhail, is one busy guy. Within the last year, he’s opened three Potato Factory Bar and Grills, first in Collingwood, then Niagara Falls and now Wasaga Beach. During that time period, the 46-year-old and his parents also opened Collingwood’s Steakhouse Social Eatery. “Lately, I’ve been sleeping with one eye open, because there’s just so much going on,” admits the entrepreneur with a cellphone that never stops ringing. “But, I love it because it’s super exciting.” Despite his hectic schedule, Michael recently met with this Goodlife reporter at the new Potato Factory in Wasaga Beach (which was set to open the very next day). Racing in with a delivery from his other nearby restaurants and nursing a sore back from constructing the new bar, he happily sat down to dish about his growing eatery empire and the decision to specialize in potato cuisine. 40

I understand you have a business background, and that you and your family have owned several businesses in the Toronto area over the years, including staffing companies, car dealerships as well as restaurants and lounges. What led you to open the first Potato Factory in Collingwood? MM: We did some location research and quickly discovered that Collingwood is a great place to do business. It’s a vibrant community with an extremely supportive and helpful BIA. So, when a downtown historical building became available last March, we jumped on the opportunity, and opened our very first Potato Factory in Collingwood on July 14, 2017. Shortly after, we opened another Collingwood restaurant — the Steakhouse Social Eatery. Based on the success of our Collingwood restaurants, we opened up a Potato Factory in Niagara Falls, and now Wasaga Beach. Why specialize in spuds? MM: There are so many reasons [smiles]. I mean, who doesn’t love potatoes? Right? But to answer your question…..for years, I had tossed around the concept of opening a restaurant that focused on potatoes. Sure, there are other places that specialize in poutine or fries, but few have such a comprehensive menu where potatoes take centre stage. We didn’t invent the wheel, we just tweaked it a bit. Potatoes are a comfort food, have incredible culinary versatility and are also very healthy. Potatoes are fat, sodium and cholesterol free, and they also have more potassium than bananas. They also aren’t expensive, so they provide a healthy profit margin.

There are also several potato farms close by. MM: Absolutely! We only buy our potatoes from local growers within a 100 mile radius. Actually, the same goes for our meat, chicken, and other ingredients on the menu. We love supporting nearby farmers and the local economy. How many potatoes do you go through a week? MM: A lot! We use over a ton of potatoes a week at each location. We get deliveries everyday to ensure freshness and quality. And our chefs cut, wash and blanch all of our potatoes on site. Let’s hear more about the menu. MM: We serve breakfast, lunch and dinner and our menu features various styles of potato dishes. We pair them with traditional Canadian fare like soups, salads, chilli, fish, hamburgers and more.

For example, our award winning hamburger, which is delicious by the way, is served on a freshly made potato bun. And our tomato and feta bruschetta is served on a potato rosemary crostini. We’ve got lots to choose from — anything from spicy sriracha fries, or traditional kettle chips to butter chicken poutine and everything in between. Can you list the top sellers? MM: French fries, duck poutine, Coney fries, fish and chips, Irish nachos, smoked duck potato skins, and our chicken or beef burgers are to die for! Our salads, particularly the Cobb salad and the Nicoise salad are just phenomenal. But the top seller is the ferris wheel, which is a sharing plate that allows you to try four appetizers. It’s great because you can sample a bit of everything from cinnamon sugar or parmesan herb fries to pirogies, chicken wings and more. What’s your food philosophy? MM: Freshness is number one, followed by presentation, service and price point. We offer delicious, high quality food at great prices. We make everything in house from scratch — even our breads, desserts, sauces, batters, burgers and soups are all made in house. Nothing is store bought. What about diners with special dietary needs? MM: We have lots of gluten-free, vegan, vegetarian and lactose free items. Since we make everything in house, we know exactly what the ingredients are, which is helpful for those with allergies. How would you describe the Potato Factory decor? MM: The overall theme is comfortable and cheery, which creates a great energy and a great vibe. Along with plenty of colourful artwork and various TVs, the bars are made from reclaimed wood and steel, so there’s a bit of a rustic, urban look, as well. Our Collingwood location is particularly charming because it’s located in a historic building. The Wasaga Beach location is a bit more casual because it’s located right at Beach 1, with the Wasaga River running behind it. All of our locations have lively summer patios. 42

BAKED STUFFED POTATOES This delicious side dish is courtesy of Lonnie Sanberg, executive chef of the Potato Factory Bar & Grill. Enjoy it at the restaurant, or make it at home! 4 large baking potatoes 1 cup shredded 3 blend cheese 1 cup sour cream 1/2 cup fresh chives, diced Pinch of salt and pepper
Preparation: Preheat oven to 350F. 1. Bake potatoes in preheated oven for 45 minutes, or until cooked through. 2. Slice tops off of potatoes and scoop the flesh into a large bowl, leaving skins intact. 3. To the potato flesh add the cheese, sour cream, chives, and salt and pepper to taste. Mix well and spoon mixture into potato skins. 4. Bake for another 30 minutes, or until heated through. Serves 4.
What about specials? MM: We offer a great line up of specials, including: Caesar Sunday and wing night ($5 Caesar and 75 cent wings), Monday rib night ($2 off full rack of ribs, $1 off half rack) taco Tuesday (features two different styles of tacos in addition to our signature taco), craft beer Thursday (each week features a local craft beer at a reduced rate, when you order an entree) and Friday unlimited fries (unlimited fries are always available if you order an entree, but on Friday you only have to order fries to qualify for unlimited fries). Do you have entertainment? MM: At the Collingwood and Wasaga Beach locations we do open mike Tuesday, trivia night Wednesday (with John Eaton from the PEAK FM — broadcasted in both locations) and live music on Friday and Saturday nights. Any interesting future plans? MM: We have lots on the go! By next year, we hope to have another four or five Potato Factory locations. Possible local sites may include Barrie and Alliston. Right now, I’m 46 and by the time I turn 50, I want 50 restaurants. It’s a bit of an aggressive plan, but I’m confident we can do it. We’re also incredibly excited about our very own vodka line, which should be ready by next year. WHAT ARE YOUR SIGNATURE DISHES? Our diners favour our rack of lamb, sea bass, calamari, sushi roll and our prosciutto. It is important to me to create a diverse and ever-changing menu and diners enjoy the variety offered. I like to intrigue people by dabbling in new foods and being on the cutting edge, with a mind to always maintaining and enhancing the fine dining experience. WHAT IS YOUR FAVOURITE INGREDIENT? That has to be our beef as we dry age our beef, which is an involved process that makes the beef tastier and more tender. We are the only local kitchen to dry age ribeye and striploin for 45 days and the results are worth the effort. Fresh ingredients and unique products from Chinatown or farmers’ markets are also inspiring with their abundance of unique textures, colours and aromas. WHAT’S THE ONE THING WE SHOULD TRY BEFORE LEAVING YOUR ESTABLISHMENT? People rave about our desserts. We like to treat our customers and when they leave we want them to feel that they have had a special experience. We have been known to delight groups with an element of surprise in our presentation. Great traditions are grandmother’s mouthwatering butter tarts, warm chocolate lava cake, and my personal favourite, banana cream pie.

JENNIFER MAYRL WHAT LED YOU DOWN THE CUSTOM CAKE PATH? When I was in high school, I got a part-time job at a custom cake shop in Richmond Hill. I was hired to stock shelves, but almost instantly I was hooked on cake decorating. I worked there for about 10 years, right through university studying kinesiology. I learned everything on-site, and knew I wanted to do this for a living. WHAT ARE THE LATEST TRENDS IN CAKES? We’ve been doing a ton of gender-reveal cakes. When a couple is having a baby, they bring in the ultrasound that indicates the gender and we make the inside of the cake blue or pink and that’s how everyone finds out whether the baby is a boy or a girl. Other trends include naked cakes- where the icing gets scraped off and the cakes are decorated with fruit and flowers.
WHAT ARE SOME OF YOUR CRAZIEST COMMISSIONS? We did a cake for a plumber with a roll of toilet paper on it and the words “Holy Crap, it’s your birthday” written on it. we also do lots of hip bone- shaped cakes to celebrate replacement surgery and diaper- shaped ones for baby showers. WHAT’S YOUR CAKE-MAKING PHILOSOPHY? It’s twofold. I want every cake to taste as good as it looks. And second, we only make cakes that I would be proud to serve. WHERE DO YOU FIND INSPIRATION? Our customers inspire us! They will find something on social media, bring it in , and we will go from there. Other than that, we are constantly keeping on top of the latest trends. BEYOND CUSTOM ORDERS, WHAT’S ON OFFER AT THE SHOP FOR WALK-IN CUSTOMERS? We always have cupcakes, ready-to-go cakes, plenty of decorated sugar cookies and more. FINALLY, WHAT’S THE SWEETEST PART OF WORKING IN THE BAKERY BUSINESS? We all smell like vanilla and cake all the time, so that’s pretty sweet!

JESSI FOURNIER & BEKKI MARTIN WHAT LED YOU TO OPEN UP THE SPEAKCHEASY DOWNSTAIRS BELOW J’ADORE? J’adore was becoming so popular that we were busting at the seams. When the perfect space became available down the street, we jumped at it. The funny thing is, we had no intention of opening the lower level to the public. Our original plan was to use the downstairs space as a private event and tasting room, and as an extra space to make cheese platters and gift baskets. ANY CHEESES YOU ARE ADDICTED TO? BM: We have a lot of cheeses that will knock you to your knees, but our two current favourites are a three-year-old Lindenhoff Gouda
from Holland, and a French triple-cream brie with a thin line of mustard seeds called Château de Bourgogne à la Dijonnaise. Both are perfect! WHAT ARE YOUR VEGAN AND GLUTEN-FREE OPTIONS? We have a vegan cheese tasting plate made with Nuts for Cheese [dairy-free cheese] made in London, Ont. We also off er a vegan chocolate fondue and vegan ice cream. Our cheese plates come with gluten-free crackers, and our fondues have gluten-free dippers. WHAT ABOUT BEVERAGES? Along with a fully stocked bar, we have wines from all over the world that pair really well with our cheeses. We also off er local craft beer, and some really fun specialty coffees. We even pay tribute to the speakeasy era with our Tea Time, when we serve up Prohibition cocktails such as Bees Knees, Hanky Panky and Al Capone’s own Southside Fizz. Southside Fizz was served at his infamous speakeasy in Chicago. Since it was a rougher hooch compared with his competitor’s product, he added simple syrup and mint to it to make it more palatable. Why do we serve it in teacups? Back then, many speakeasies would serve drinks in teacups just in case there was a raid.

The Cook Basic Program is a 300 hour course that provides hands-on and in-class theory training in classic culinary techniques and is offered as a full or part-time student program.The Cook Advanced Program is for graduates of the Basic Cooking Program. It lays special emphasis on meal presentation, food quality and creativity. Students also learn mathematical skills, costing, kitchen and restaurant management. Liaison’s emphasis on teaching students to produce consistent, highquality food goes hand-in-hand with the principles of sustainability: locally sourced ingredients, where possible, strict attention to limiting food waste, and encouraging efficiency wherever possible. Our campus is steps away from the farmers market and so students know exactly where most of their food comes from. Sourcing food is just one aspect of sustainability for Liaison students, although it’s a big part. Food waste is another big concern—to the point that students are required to keep a bowl of trimmings, which is weighed at the end of a lesson. The students are taught to use trimmings and leftovers in dishes. Vegetable cuttings go into the stock pot, as do bones and meat bits. Leftover genoise cake is used as crumbs for a cheesecake crust. Efficiency begins in the kitchen And it’s not only food that gets the efficiency treatment. Teaching efficiency generally—eliminating waste of all sorts, keeping costs under control—is a big deal.

I’m standing in a circle of people in fluffy white robes at the 36cinq Lounge water bar, lobbing questions at the water sommelier about source, temperature of consumption and mineral count. Behind him is an altar-like cabinet of several dozen bottles, dramatically backlit to emphasize the clarity of the liquid, the colour of the glass and the curves of the containers. At Switzerland’s Grand Resort Bad Ragaz — one of the world’s most prominent luxury spa resorts — they take to heart that old Chinese proverb, “When you drink the water, remember the spring.”

In the early days, the brave guests seeking holistic treatments were lowered into the waters of the gorge in baskets suspended from ropes. By the mid-1800s, a luxury resort had been built, along with a four-kilometre long pipe to bring the water to Bad Ragaz, supplying its wellness spas and pools. The town has kept its quaint Heidiland appeal, while the resort has expanded its range of services to include wellbeing getaways to soak in the thermal waters, medical consultations and a general health focus using the waters for everything from detox to weight loss to antiaging. There are packages of services and regimes integrating the thermal water with almost any health benefit imaginable, from health-promoting fitness and relaxation to massage, to movement and training. Against the backdrop of the looming Pizol Alp, the expansive, five-star resort includes several distinct hotels built in different styles — from the historic charms of the gracious Palais, to the mix of traditional and modern of the Hof Ragaz, to the classic elegance of the Quellenhof, to my ultra-contemporary Spa Suite in the modern tower. There are seven restaurants including the one-star Michelin restaurant IGNIV by Andreas Caminada, with a focus on the shared experience of dining. With one call to the sommelier, it’s possible to have water paired to the different courses. They certainly built them… and they came — the guests looking for water therapy and searching for a sense of wellness included the rich and famous like French writer Victor Hugo, the German philosopher Friedrich Wilhelm Nietzsche and Wimbledon champion Roger Federer. The country’s top athletes come to the Bad Ragaz Resort’s Swiss Olympic Medical Center for performance diagnostics, treatment and medical training advice. I promised myself to savour the relaxation experience. Dedicating half days to the main thermal bath — the Helena, named after a Russian princess who caught the eye of the resort’s architect — I slide into the resort’s thermal pool and surrender to the power of water, embracing that oh-so-very-Swiss regime dedicated to balance and wellness. The Conde Nast Traveller Spa Guide implored visitors to take the waters: “Walk in it, bathe in it, drink it!” The thermal pools are kept at body temperature. After bobbing around in the large pool, I alternate between the Finnish sauna and the steam bath (with a bracing cold shower rinse between). 64

There’s even a “textile-free zone” for the poised and confident. In all areas, the focus is one of European wellness and recuperation; it feels quite different from the pampering indulgence of most North American spas. Not a hint of piped-in New Age flute tunes. sommelier can describe each bottle by region, influences, mineral breakdown, taste and history. When I decided my water needed a little flavour boost, I found the tea station, where the same sommelier steeped a small pot of Jasmine Pearls, a green tea from the Wuyi Mountains of southeast China, with a fragrant aroma suggestive of freshly picked jasmine blossoms. Sipping or dipping into the restorative water has been an easy sell. After several days I feel calmer, balanced, lighter and more grounded. I am convinced it must be something in the water. I know my sommelier would agree.

Painful incurved or ingrown toenails? We can help! The most difficult and painful nails we see as Chiropodists are caused by a condition called “involution”. Involuted nails curve deeply into the skin of the toe and the pressure can be painful even when the nail isn’t cutting the skin! Callus can develop around the nail and increase the pain. Rough edges or spikes can easily ingrow in these tightly curved nails. Ingrown nails can also happen with normal shaped nails pierce the skin. A nail that is stubbed or trampled can cut into the skin. If a nail breaks off badly in the corner due to injury or poor trimming, rough edges can cut into the skin around the nail. It is important to have the nail removed from the skin as soon as possible. In most cases if it is addressed early, an ingrown nail in a normal shaped toenail will not need to be permanently removed. If a nail is imbedded in your skin for too long, the skin starts to swell. The body reacts to the nail as it would a foreign object. If the swelling is long standing and ingrown is chronic, permanent narrowing of the nail is necessary to allow the skin to heal.

1. Heat oil in large saucepan over medium heat. Add mushrooms, shallots, garlic, Thai pepper and ginger; cook, stirring occasionally, until softened, 4 to 5 minutes. 2. Add broth; bring to a boil.
