Those lag times can work against your fitness goals, lowering your heart rate as you wait your turn. Studio mood lighting creates fitnessfocused dynamics The studio holds 24 participants at a time and offers unique muted lighting that creates the mood and dynamics of the overall experience. No time to loiter or check text messages in here. Everyone is focused on their own training and their personal data displayed on the screen. “Beginners avoid gyms because they’re intimidating. Here, no one is wandering around, texting or looking at anyone else. They are all focused on their heart rate statistics. We have members who have lost over 40 pounds in a relatively short period of time,” says Hollingsworth. How Orangetheory Works Each member’s optimum heart rate is individually calculated for age, weight and gender. The prime heart rate they are aiming for during their workout will land in what’s called The Orange Zone.

As workouts progress members watch their heart rates rise and fall in real time onscreen. Starting out in the resting gray zone, the member trains through 5 interval heart zones ultimately reaching the coveted orange zone, where calories really start burning! Every minute the heart rate lingers in the Orange Zone extra metabolic benefits are achieved. Like continued calorie burning for up to 36 hours after the workout is done. To help measure a member’s total time in the Orange Zone during each workout, each minute in the zone is a SPLAT POINT.

A University of Michigan study had four lean, active adults consume 30 percent more calories than usual for a week, while continuing with their regular exercise routines. The results? The active adults had no change to existing fat tissue.

If your pill of choice is acetaminophen (the active ingredient in Tylenol), you may be doing yourself more harm than good. DIY decadence Sure, you can use pre-mixed powders to make hot chocolate easily enough. But why not elevate your cup with a richer experience? Whisk 2 tablespoons of unsweetened cocoa powder, 1 to 2 tablespoons of sugar (according to taste), a pinch of salt and 2 tablespoons of milk in a small saucepan over medium-low heat until everything is dissolved. HOMESTEAD ARTISAN BAKERY + CAFE

The local bakery specializes in artisan breads and baked goods, crafted by hand in small batches.

Sourdough or naturally leavened bread is more easily digested than regular bread, both white and whole grain; it is also far more nutritious.”

Nearly every morning, Cait Patrick and Lise Garden get out of bed at 3:30 a.m. And they do so with a cheery attitude. “You need to be a morning person when you work in the bakery business,” admits Patrick with a smile. Together these two 30-year-old best friends and business partners own and operate downtown Barrie’s Homestead Artisan Bakery. The pair met in high school (they both attended St. Joseph’s in Barrie) and always dreamed of owning a business together. The local bakery specializes in artisan breads and baked goods, crafted by hand in small batches. “We use high quality local and organic ingredients because we care about the products we put on your table,” explains Patrick, a former marketing strategist and trained photographer. “We make everything from scratch with no preservatives or additives. Our products are the real deal.” The bakery got its start at the Barrie Farmers’ Market back in 2014, and opened up the cafe in May 2016.

Top sellers for sourdough bread include country blonde, aged cheddar and cranberry and walnut bread. “We’re always developing new breads and currently make about 20 different flavours a week,” she explains. Patrick and Garden studied under world renowned Certified Master Baker Jeffrey Hamelman. Self described foodies, both have always had a passion for cooking and baking. Beyond bread, various bakery items line the shelves including scones, muffins, cookies, morning buns (similar to a cinnamon bun but with less sugar and is not yeasted) croissants, bagels, blondies, brownies and more. “Customers love our brownies because they are just the right amount of sweet and chocolate,” explains Patrick. The Owen Street cafe also serves up delicious sandwiches, soups and salads. Catering is also available. Beyond the downtown Barrie 10-seat cafe, Homestead also has a 2000 square foot production facility on Alliance Blvd. Why specialize in sourdough bread? “The science of sourdough or naturally

water and salt.” The local flours Homestead uses for its sourdough, naturally leavened bread baking process include: rye, spelt, whole wheat, unbleached organic all-purpose,

water and salt.” The bakery produces anywhere from 150 to 500 loaves a day. Having both grown up in Barrie, the bakers are committed to supporting the local community and other small businesses. True to their words, about 85 per cent of their ingredients are from local producers. “We source local flour and grains, maple syrup, dairy products, honey, olive oil, meat, eggs, vegetables, greens and fruits — the list just goes on,” explains Garden. The bakery also regularly donates food to various charities such as the David Busby Centre, Elizabeth Fry, Salvation Army and so on.

Their convenient downtown location even comes with a good story. “Cait’s father-in-law spent 20 years growing up in this very home. We didn’t even know that until we signed the lease,” admits Garden. Now that truly is destiny. Beyond being surrounded by sweet and savoury goodies all day, Garden says there are several bonuses to working at a bakery. “Working with dough is very therapeutic and great for stress relief,” she says with a smile. And the scent of fresh baking at the cafe is another plus. “We even carry the delicious scent with us. People always comment on how our clothes and cars smell like fresh bread,” she says with a chuckle. f you’re not careful, the onset of winter may herald the start of seasonal struggles for your skin. Reduced humidity from cold winter air and central heating can lead to such woes as a tight complexion, an itchy, flaky scalp, cracked hands, chapped lips and dry legs. “In colder weather we tend to see more dermatitis conditions, psoriasis, eczema, acne and dry, cracked, itchy skin,” confirms Newmarket-based naturopathic doctor Michael Morsillo. “The cold and dry weather over the winter months can exacerbate all of these skin conditions.” While Vitamin D can usually offset many skin problems, winter also happens to be the time of year our levels of the sunshine vitamin are lowest. But that doesn’t mean your skin has to suffer until spring. Read on for tips and tools that will help keep you soothed from head to toe. HYDRATE WITH HEALTHY FATS “The most important aspect of moisturizing is hydration,” says Morsillo. “Our body is mainly composed of water, so it’s critical to stay hydrated for overall health and for our skin.” That means more than just drinking water — eating healthy monounsaturated or polyunsaturated (collectively called unsaturated) fats such as olive oil and flax oil is key to skin health. The exception is coconut oil, which is saturated but is considered a healthy fat. Including more nuts, seeds, avocados and cold water fish, such as salmon, mackerel, haddock and tuna in your diet can help keep seasonal dryness at bay. Omega-3 fatty acids, found in foods such

as walnuts, chia seeds and flaxseeds, can benefit those with eczema, psoriasis and dry skin. “Unfortunately, very few people consume enough of these healthy fats in their diet,” notes Morsillo. Drizzle flax, hemp and pumpkin oils on salads and vegetables for an easy boost of omega-3s. BATHE WISELY In the dead of winter, there’s nothing quite so comforting as a hot shower or bath. But soaking in a hot tub for too long can actually steal precious moisture from your skin. And then there’s the condition of your water. “Water containing high amounts of chlorine can leave our skin feeling dry after a shower,” says Morsillo. But you don’t have to banish bathing. “There are simple shower filters that can keep chlorine levels very low, allowing your water to be moisturizing for your skin.” Santevia shower filters (found at Nature’s Emporium) screw easily onto your shower head. WATCH FOR UNDERLYING ISSUES If you’re hydrating inside and out, but your skin still feels dry, itchy and irritated, maybe winter weather is not to blame. “Skin issues, including dry skin, may signal other underlying health issues,” says Morsillo. “At our naturopathic clinic, we will often test and assess for several hormone imbalances, as these are common causes of dry skin and lack of moisture.” Whatever you do, don’t suffer (and scratch) in silence. Instead, seek professional advice for chronically irritated skin. Ask your doctor to suggest a dermatologist or fnd a naturopath near you.


The term “crack a smile” can take on a whole new meaning when the mercury plummets. To keep your lips smooth, supple and healthy, these three tips can go a long way. 1 Don’t lick. Tempting as it may be to run your tongue over your dry lips, you’ll only be making the problem worse. Your lips will get drier as that wetness evaporates. Plus, the digestive enzymes in your saliva will further irritate your pucker. 2 Hands off. Got flaky or peeling lips? Whatever you do, don’t pick, scrub or brush them. That will only lead to more problems, including cracking and sores. Instead, treat your peeling lips with an ointment-based balm that will both soothe and help heal the skin. 3 Balms away! Do your mouth a favour and apply non-menthol, noneucalyptus lip balms often. This will help seal in moisture, heal peeling and cracks, and generally soothe soreness. Don’t forget to swipe it on at night too. Your lips will thank you.

You rolled up your sleeve for the flu shot and down vitamin C tablets habitually. You glob on antibacterial wash following every handshake — just in case. Maybe you even adhere to the five-feet-away rule to thwart stranger-to-stranger germ transferral. But what if it’s too late? How can you minimize coughs, aches, and interrupted sleep once they’ve taken hold? Bryce Wylde, a Toronto-based alternative health expert, offers this advice. THE SYMPTOM: MINIMAL SLEEP THE FIX: A shut-eye deficit can do more than leave you feeling groggy in the morning. Because sleep provides the ideal opportunity for our bodies to rest and digest after the day’s activities, it’s key that you give yours sufficient time to recharge. “Sleep is imperative to a healthy immune system, and it’s not just about the hours you clock — it’s essential to have uninterrupted, quality sleep,” Wylde says. His suggestion: If you’re congested and having trouble breathing while you snooze, tr y wearing a Breathe Right Nasal strip, which will help open your air ways, allowing for a deeper, more impactful sleep. THE SYMPTOM: ACHES AND PAINS THE FIX: In addition to resting while you treat fever and chills with over-the-counter pain medications like acetaminophen — check with your doctor first to

Another way to speed the recover y process? Physical activity. Research trumpets the merits of jogging, brisk walking and cycling for boosting the body’s defenses against viruses and bacteria. In fact, a study by Appalachian State University found that people working out five or more times a week took 46 percent fewer sick days per year than participants who only logged a day (or less) of exercise each week. For best results, follow the above- and below-theneck rule: If symptoms include a runny nose, dr y cough or sneezing, you should be fine to take on a gentle workout; if symptoms are below the neck and include chest congestion, aching muscles or an upset stomach, resting up may be best.

THE SYMPTOM: PERSISTENT COUGH THE FIX: Hydration is key for nixing a persistent cough, so drink as much water as you can throughout the day. Wylde also suggests downing a few cups of green tea, which packs a healthy dose of antioxidants, and adding a squeeze of lemon juice for its vitamin C and bioflavonoids. Another way to minimize coughing is to keep your humidifier running at home. Says Wylde: “Whether a humidifier is attached to your furnace or kept in your room, having a steady stream of moisture is really important to maintain humidity and speed the recover y process.”

The holidays are over and now it’s time to amp up your fitness regime and work on those 2017 goals. But forget a gym membership or a steep investment in cumbersome equipment. Newmarket-based personal trainer specialist Carla Laakso says that with some select home gear and the right moves, you’ll be on your way to a fitter you. Best of all, her recommendations are all under $200 a piece and can be stored in a closet or drawer. So what are you waiting for? Here’s how to get moving. 1. Lebert Equalizer This metal contraption (purchased as a pair) resembles track hurdles, stands at 28 ½" tall and weighs eight pounds. It’s an all-in-one piece of exercise equipment with dozens of fitness moves encompassing cardio and strength training for the entire body. CARLA’s TIP: I love this piece of equipment because with it, you can not only work every part of your body, but also use it for cardio. 2. Exercise Ball This is essentially a giant pumped-up ball for adults, but with amazing versatility. Effective for core conditioning and getting variety from plain old sit-ups. CARLA’s TIP: Exercise balls come in a variety of sizes; be sure to pick one that is suitable for your height, and regularly check to see if it is sufficiently inflated with just a bit of give.

3. Bosu Balance Trainer Half ball, half flat surface, “the Bosu,” as it’s known to fitness folks, engages your muscles and tests your balance, whichever side you stand on. CARLA’s TIP: My favourite move is the plank. The instability of the ball makes you engage your core muscles even more than normal, so it is really effective. 4. 5. & 8. Weighted Balls, Hand Weights and Kettle Bell Weighted items are great tools to intensify your workouts. Pick them up, slam them, hold them or lift them — as long as they are off the ground, you are using your muscles. CARLA’s TIP: If you can, purchase a few different weighted items so that you can progress and have different options for different exercises — large muscles can handle heavier weights, while smaller muscles require lighter ones.

6. Skipping Rope Yup, this is the good old classic you grew up with. It’s a low-cost tool for great cardio — just channel your inner-child and start skipping. CARLA’s TIP: Use as a 1–2 minute interval to other exercises to keep your heart rate up and increase your calorie burn. 7. Ab Roller This is a rotating wheel with two handles. Simply roll out and then roll back, with knees on or off the floor — and wait for the burn. CARLA’s TIP: You want an ab workout? Look no further. This piece of equipment will help you feel your abs the next day. 9. 10. 11. & 12. Refillable water bottle, mat, running shoes and portable smartphone case No brainers: Avoid injury, stay hydrated, and blare the tunes to stay motivated! 13. Stretch Band Many people struggle with flexibility and as a result, may find it difficult to do even simple stretches. But

you can use this band to help when you can’t reach to ensure that stretching is incorporated. CARLA’s TIP: Don’t forget to stretch at the end of every workout and hold stretches for at least 30 seconds. 14. Carpet Discs Small discs with one side smooth (slides on carpet) and a second that is soft (slides on hardwood). These discs allow you to move your feet no matter what floor you are working on. 15. Handled Bands Resistance bands with handles are easy to hold and maintain proper form — key to safe and effective training. Use them for your usual arm exercises by placing the middle of the band under both feet while you’re standing. Then, working against the resistance, do bicep and hammer curls, arm raises and rows. CARLA’s TIP: Sneak these bands in your suitcase for quick workouts away from home. Now you have no more excuses for skipping those exercises when you’re on the road!

That includes the storage drawers, built by Stairhaus in Barrie, to the Jenkins’ specification, hidden inside the lower steps of the recreation room stairway of their current east-end project. “Kids can put their toys in there or store their winter mittens,” Katie says. The house is the second flip for the couple in the northeast end of Barrie, an area they find attractive due to its large mature lots. “It’s my second, but Brad’s done four,” Katie says. “We started out with a very small footprint — 1,100 square feet — and stretched it as far as we could go.” The tiny home originally had an all-brick exterior, now replaced with Maibec siding. The dated interior had a series of smaller rooms, teal countertops and a pink bathroom. Today, it has been transformed into a bright, airy, contemporary showpiece. “We knew we wanted a modern look with some industrial touches,” says Katie, “a house that people would notice and talk about yet one that would still fit in nicely with the neighbourhood.” The previous resident had tended a luscious vegetable and flower garden, which Katie agonized about taking out. She did manage to save some Irises, and replanted them at the side of the house. In place of the former garden, the Jenkins installed a modern deck with glass railing, new fencing and privacy wall, a patio with fire pit, retaining wall with armor stone and fresh turf that opened up the yard to create an expanse large enough to host the couple’s wedding event. The whole renovation took well over a year, but the sleek two-story modern farmhouse now clocks in at 3,079 square feet from top to bottom.

Planet-friendly project The Jenkins took a green approach to their build. “We like natural, environmentallysound products,” explains Katie. “We don’t like strong chemicals.” The VOC-free paint throughout the house, for instance, is white Dulux with a splash of green undertones to add depth and avoid starkness. The hardwood flooring, meanwhile, is raw

Norwegian White Oak, which they sanded themselves before sealing with Woca Oil — a plant-based, nonpolluting, sustainable finish, with no preservatives. “It’s amazing,” says Katie. “If there’s a scratch on the hardwood from the dog, you just give it a light sand and apply more Woca. The floor is perfect again.” The Jenkins also repurposed reclaimed barnwood for their living room wall treatments and hung a 100-year-old sliding barn door on their kitchen pantry. Black iron industrial galvanized pipes were crafted for towel, toilet and closet wardrobe bars for a touch of industrial chic (a look echoed in their bed frames). Upcycled furnishings are featured throughout, including the rustic factory cart that acts as their living room coffee table, and the timeworn wooden cable spool that works as a side table in the master’s sitting area. Tasteful grey porcelain tile greets you at the entrance, where a sizeable glass front door lets in light from the street. Katie insisted that the tile be laid in a herringbone pattern for added interest. A hall running down the front of the house acts as a mudroom with plentiful cubbies and coat hooks. Midway, a powder room is accessed through another sliding old wood door, hung barndoor style.

Cozy, contemporary kitchen The open-concept kitchen-dining-living area was designed to be both warm and cleanlooking. A touch of wood in the kitchen offsets the white walls, white subway-tile backsplash and white quartz countertops to keep things cozy. The custom cabinetry was constructed in tiger maple with cut-outs for hand pulls instead of door knobs. Two sets of double-doored walkouts to the patio are accessible from the kitchen and dining room, and a light-filled office sits adjacent to the kitchen. “I wanted a unique kitchen,” says Katie, “not something extremely trendy that would get old, but rather, a timeless design.” A photo on Pinterest inspired the flush-faced 3/4” slab wood cabinets with dovetail drawers. Second-floor decisions While the couple had a clear idea of what they wanted for their first floor, they were less decisive about the second level. Architect Paul Flindall of IPD Consulting & Designs drew a four-bedroom plan for the second level, but the couple began to vacillate about whether three larger bedrooms would suffice. “People are increasingly wanting larger masters with spa bathrooms and walk-in closets,” Katie says. So they left the second floor unframed for months. Eventually they settled three bedrooms and a rambling master that encompasses a sitting area. The spa bathroom has a “humongous shower,” says Katie, with two rainfall showers. A finished recreation room on the lower level can accommodate a fourth bedroom if new owners need to add one. When it came to their children’s rooms, Brad and Katie brought their personal sensibilities to the decor. Brad is a firefighter and fire hall memorabilia and badges populate their son’s room, including a bright red fire truck art piece painted by Katie herself. Their daughter’s room is a haven for art and music, with Katie’s vintage cameras resting on the dresser, and a built-in desk ready for art projects. The completed project has brought a deep sense of satisfaction and accomplishment for the Jenkins, but itchy creative rumblings have already begun again. Says Katie: “We’re that couple that drives around and looks at houses in our free time.”

etired designer Michelle Crowley developed her cozy post-and-beam Cape Cod home from the ground up — literally. “I took a piece of rock from Georgian Bay,” she explains, “then hunted around to find a slab that matched it for our granite countertops.” Every aspect of her restful 4,700-square-foot sixbedroom Collingwood home was planned with this deliberateness. From the canary yellow walls on the lower level that take advantage of a southwestern exposure to brighten the room, to the double doors leading out from the library to her secret rock garden, to the private den off the master suite which provides a quick escape when needed. “If the boys want to watch

The Walking Dead. I can still watch Downton Abbey,” she says happily. She and her husband, musician Kerry Crawford, chose a Cape-style home because of their deep love of New England architecture. “We used to go to Kennebunkport all the time,” says Crowley about their many road adventures to the East Coast. “We love the houses in Maine.” They also wanted their new quarters to have a bit of the character of their former Parry Sound cottage, adding a gabled roof with cedar shakes and board and batten siding. Timberpeg, the premiere artisans of post and beam construction in New Hampshire, was their choice of fabricator.

Dressing the mantle and side tables are models of sail and lobster boats, handcrafted by folk artists in Quebec. Sofas and armchairs are custom designed by Crowley.

Timberpeg assisted in the design, then cut, milled and assembled the structure in New Hampshire before disassembling it again, packing it and shipping it to Ontario. “What you get essentially is a barn,” says Michelle. “The interior is all up to you.” The couple hired contractors Carl McCoy and Pat Coulter for the excavation, foundation and assembly of the framed structure. Next came the interior elements. Kitchen cabinets were all custom made and painted a hand rubbed hunter green finish with yellow undertones. A barn door was hung on the master suite entrance. Crowley picked up authentic barn door hardware at a co-op to hang it. “No one was hanging barn doors 17 1/2 years ago,” she laughs. Much of the true work behind building a post-and-beam home comes prior to the final build explains Crowley. The couple wanted the tongue-and-groove walls set behind the posts and beams. This meant that all the inner workings of the home that are normally hidden behind drywall (wiring, heating, plumbing) would have to be done on the outside of those walls. Each decision, from the placement of lighting fixtures and heating vents to the sort of window framing that would be installed, had to be made mindfully. Once built, any changes could create permanent visual blemishes. Michelle Crowley brought the eye of a seasoned designer to the job. The former owner of Pack Rat, a Toronto design and furnishings boutique at Yonge and Rosedale, Crowley knows a few things about how to create atmosphere. “I went through every single room mentally,” she says, “what we wanted, from ceiling to floor. That took a long time.” In the dining room, for instance, the ceilings are only eight feet high, which helps

Crowley loves to source unique items, transforming them into useful objects in what she calls her funky-casual-chic style. The woolen throw rugs were hand-loomed in Santa Fe from traditional patterns. And she placed two roomy, rustic twig chairs from The La Luna Collection in the living room. The long entry foyer, with slate flooring, has plenty of spots to store the family’s outer wear.

She found an obelisk-shaped object in an antique store that came out of the corporate office of an oil company and made it into a lamp. The overall effect is a delicious banquet of artistically inspirational comfort. “We live in our whole house and it’s very casual,” says Crowley. “We live everywhere. I’m not a person who says, don’t sit there.” Keeping that mantra in mind, Crowley designed a long entry foyer that looks like an extended mudroom with slate flooring running from end to end. Plenty of hooks are available to hang coats and gear and at the

far end of the hall is the two-piece powder room. “I was just being practical,” she explains. “Life is different here from downtown life, more casual. People coming in a door and having a little three-by-three-foot section to stand on just doesn’t work. You come in from hiking all muddy or you’d have six kids piling in from snowboarding. This way, there’s plenty of room, and no need to take off boots if they have to use the washroom quickly. So what if they get a little water on the stone? You don’t worry. Keep your life as stress-free as possible.”

There’s another reason Crowley chose stone floors at entrances and it has to do with passive solar heating. While the home utilizes forced-air heating, it also benefits from a measure of passive solar heating due to the post-and-beam construction. “When the sun streams in the windows, you get ambient heat that warms the timbers,” explains Crowley. “They hold the heat, as do stone floors. Drywall holds heat for about a nanosecond in comparison.” The exterior of her charming home enjoyed just as much attention to detail. An avid gardener, Crowley wanted an English

Bates Sand and Gravel, who did all the landscaping, planted them. “Our maples were 15 feet when we put them in. Now, they’re 60 feet high.” Carl McCoy built the lovely gazebo at the back of the pool and all the stairs were done by Parklawn Landscaping, which also did the driveway. But when it came to the outdoor furniture, it was Crowley’s design skills that kicked in again. “All the Cape Cod chairs, lounges and umbrellas were designed by me,” says Crowley, who found a few old Cape Cod chairs at a junk store, took them apart and examined their structure before redesigning exactly what she wanted. “I took my new design prototype to a carpenter. He’d build it, then I would try it out and make adjustments as he worked on it.” She wanted just the right size paddle arms and wide seat pans large enough to curl up in. Rolls: With a vegetable peeler or mandolin, peel zucchini into 6 to 8 thin slices with. Mash avocado with a fork until it’s smooth yet chunky, and season with salt and pepper and a splash of lime juice. Break all other veggies into small matchsticks or perfect julienne. Lay sliced zucchini down and spread avocado on the first 2 inches. Pile up matchstick veggies and roll. If the ends don’t stick, apply a little avocado as glue. Salsa: In a large mortar, smash garlic and hot pepper with salt to create a paste. Chop up tomatoes and basil, and mix with garlic paste. Serve on side for those who like it hot. Makes 4 servings

In medium stock pot, bring chicken broth to a boil and reduce the heat to a low simmer. Add chopped ginger, lemon zest and juice, steep for 30 minutes. Slice chicken breasts into thin strips and add to the pot. Cook for 20 minutes. Two minutes before serving, add the red pepper and spinach. By adding these ingredients at the last minute, you preserve the nutrients and texture. Season to taste with salt and pepper, and serve topped with cooked rice. MAKES 4 TO 6 SERVINGS

1 bunch cilantro, chopped finely Assembly 3 cups cooked rice (I prefer basmati, but use your favourite) 11/2 cup grated mozzarella or mild cheddar 6-10-inch whole wheat wraps Start cooking your rice. You will need 3 cups. In a high sided frying pan, heat 1 tbsp of oil and sauté sweet potatoes until tender. Set aside with black beans. Stir in zest and juice from 1 lime into the warm sweet potato and black bean mixture.


Enchilada Sauce: In the same pan, heat 2 tbsp oil, add jalapeño and cook for 2 minutes. Add flour, using a whisk, stir until it forms a paste. Continue to stir for 1 minute to cook the flour. Add cumin and garlic powder and cook for 1 minute. Now add tomato paste, and cook until it smells fragrant. (Do not ignore this step or your sauce will have a raw tomato taste). Whisk in broth a little at a time to avoid lumps. Bring to a simmer (low-medium heat) and cook for 5 minutes, until thickened. Cilantro Cream: In small bowl, mix sour cream, maple syrup and ¼ cup of the chopped cilantro. Rice: Once your rice is cooked, pour juice and zest of 1 lime over the rice. Assembly: Lay out all 6 wraps. Portion out ½ cup of rice per wrap. Evenly distribute the sweet potato and black bean mixture. Spoon 2 tablespoons of enchilada sauce over everything, and toss extra cilantro over top and roll up (envelope-style tucking in the ends as you roll). In a greased 9”x13” pan, spread ½ cup of the enchilada sauce on the bottom. Place all 6 prepared enchiladas in the pan and brush completely with enchilada sauce. Top each one with cheese and cover the pan with foil. Bake 20 minutes at 350°F covered and an additional 10 uncovered. When plating, dollop the cilantro cream on each enchilada. This can be made the day before and stored in the fridge for dinner following day.

Pear, Ginger and Almond Breakfast Rice Bowl INGREDIENTS: 1 medium pear, peeled, cored and diced 1 tsp fresh lemon juice 1 inch ginger, peeled and finely grated 1/2 tsp cinnamon 1 tsp brown sugar 1/2 tsp butter 1 tbsp honey 1 tbsp almond butter 1 oz Sultana raisins 1 oz chopped almonds 1/2 cup coconut milk 2 cups cooked brown rice or white rice (leftover is fine) PREPARATION: In a large bowl, add pear, lemon, ginger, cinnamon and brown sugar. Place butter, honey and almond butter in a medium saucepan and heat over medium-low until softened. Add the pear mixture and sautĂŠ until the pears have softened, but are still firm. Add the raisins and almonds and stir to combine. Add the coconut milk and bring to a boil, stirring occasionally to prevent burning and ensure that everything is well combined. Reduce heat to low and cook for about 3 minutes. Add cooked rice, stirring until all the ingredients are evenly mixed. Continue cooking for about 5 minutes, until rice is warm and soft. Top with more almonds, raisins and cinnamon and serve immediately. Makes 2 servings.

No-bake Breakfast Squares with Almonds and Cranberries

INGREDIENTS: 2 cups of pitted dates, pulsed into a paste (will equal 1 cup) 1/2 cup water 1/2 cup of natural peanut butter or nut butter of your choice 1 tbsp pure maple syrup 1 tsp of pure vanilla extract 2 cups rolled oats 1/2 cup shredded unsweetened coconut 1 tsp flaxseeds 1/2 tsp ground cinnamon pinch of salt 1 oz of raw almonds, divided 1 oz dried cranberries, divided PREPARATION: Line an 8x8 square pan with parchment paper that has been lightly sprayed with cooking spray, leaving an overhang over the pan so you will be able to remove the bars easily. Add dates and water to a blender and blend until a paste forms. Place the date paste in a medium saucepan over medium-low heat for 3 to 5 minutes, until smooth and softened. Add peanut butter and maple syrup, stirring constantly to combine. Remove from heat once mixture is smooth and all the ingredients are evenly incorporated (about 1 minute). Stir in the vanilla extract, ground cinnamon and salt till combined. Fold in the shredded coconut, rolled oats and flaxseeds. Fold in half of the almonds and cranberries until combined. Pour into prepared pan, spreading evenly and pressing down firmly using a flat spatula. Sprinkle evenly with remaining almonds and dried cranberries, and press down firmly again with spatula (or your own clean hands) to flatten and bind the cranberries and almonds. Chill in the refrigerator for 3 hours, or overnight, to set. Remove from the fridge and, using the parchment overhang, lift and transfer the uncut bars to a cutting board. Using a sharp knife, cut into even rectangles. Wrap each bar individually in parchment or wax paper so they are easy to take away. Store the bars in an airtight container in the refrigerator. Makes about 10 squares. NOTE: These bars are best enjoyed straight out of the fridge since they tend to soften up at room temperature. The bars will keep well in an airtight container in the refrigerator for up to 1 week or store in the freezer for up to 1 month.

A

nna Kim wants to spread the word about Korean food. “It’s so delicious and healthy,” says the former owner of Kohyang House, now called Furusato. “More people in the Barrie area need to try it. In Korea, we have lots of vegetables in our meals. That’s how we stay so healthy.” To help introduce local diners to the flavours of Korea, she opened her restaurant three years ago in downtown Barrie, near the Five Points. The menu also featured Asian and Japanese cuisine and many considered it to have the best sushi in the city. And though Kim recently sold the restaurant to her cousin Jimmy Park, she remains on staff at Furusato. In the weeks before she sold the restaurant, Kim, 71, shared her story with us over a cup of Korean tea.

You’ve been on the local restaurant scene for 15 years. First with Furusato and now Kohyang House. What got you into the restaurant business? It was always my dream to open a restaurant. I just love to be in the kitchen cooking. It’s my happy place. Some people go shopping or eat to reduce stress — I cook. I find it very relaxing, and it makes me feel good. What does Kohyang House mean in Korean? It translates to home town. I’ve lived in Barrie for 42 years, and Korea for only 19 years. Barrie is my true home and I love it here. Furusato also translates to home town in Japanese. What should diners know about Korean cuisine? It’s fresh, low in calories and very tasty. It’s also healthy and packed with goodness because it’s loaded with vegetables. It’s a bit spicy, but we can control the amount of spice to please everyone. Korean food is huge in New York, Los Angeles and Toronto. It’s only a matter of time before the word spreads. You were born in Korea, but in 1967, at the age of 19, you left to work in Germany at a textile factory. And 76 | GoodLife Barrie Edition - January February 2017 ■

that’s also when you really started to enjoy cooking. When I was in Germany, I lived in a very large girls’ house. It was an international residence with about 150 women and we all worked in the textile factory sewing. When I wasn’t working, I always wanted to get into the kitchen and cook for the other girls. I really enjoyed that. In 1970, you left Germany and moved to Toronto. But cooking was always in the back of your mind. I always thought about cooking, but when I first moved to Canada it was very difficult and I didn’t have much time to be in the kitchen. I worked in a factory for a sewing company, and I made little money, had no education and no English. It was a hard time. Because I didn’t have the time or money to go to school, I learned how to speak English myself. In 1970, I married my husband and started having children. What brought your family to Barrie? I came from a small town in Korea, so I found Toronto to be too big and busy. Looking for something smaller, we moved to Barrie and I immediately fell in love with area because everyone was so friendly and nice. Back then, I had a convenience store called Enterprise at the corner Bayview and

Little. But owning a restaurant was always in the back of my mind. It was my dream, my passion. After 24 years, I sold the store to my family and was finally able to open a restaurant. That restaurant was Furusato, which specialized in sushi and Japanese cuisine. That’s right. We also offered Korean food, but not too much. After 10 years in business, I sold it and retired for three years. But I couldn’t stay retired. I was bored and I like staying busy. That’s when I decided to get my hands back into the restaurant business. So you opened KoHyang House? In the back of my mind, my desire has always been to open a Korean restaurant that focused on home cooking. KoHyang House is now three years old and every year we get busier as more people discover Korean cuisine. What’s the most popular item? Bibimbap is our best seller, and my personal favourite. Bibimbap is a large bowl of rice topped with an array of individually prepared vegetables and beef (or chicken or tofu), served with seasoned red chili pepper paste (gochujang), and topped with a fried egg. We can prepare endless variations of this dish depending on your


tastes and dietary requirements. Bibimbap is a festival of vegetables and colours. What are other top sellers? Bulgogi is one of Korea's most popular beef dishes that is made from thinly sliced, marinated high-quality beef, and then grilled or pan-fried. It’s served with a side of lettuce, spinach, or other leafy vegetable, which is used to wrap a slice of cooked meat. It is often served to non-Koreans as a first taste of Korean cuisine. Diners also love our Japchae, which is similar to pad Thai. Japchae consists of Korean glass noodle stirfried with meat and vegetables. Our Koreanstyle soup is also extremely popular, as well as our sushi and Japanese menu. Local sushi lovers say your Japanese food is the best in town. We do have a great Japanese menu, anything from sushi to teriyaki and everything in between. But the secret to good sushi is using fresh, high-quality ingredients. Along with super-fresh fish, we use high-quality rice, soy sauce, rice vinegar and so on. Although 80 percent of our menu is Korean, we do have a really nice Japanese section. So there is something for everyone here.

How do you cater to people with dietary restrictions? Since everything we make is to order, it’s very easy for us to please all customers with allergies or food preferences. Because Korean and Japanese food is rice based, there are also several gluten-free and vegetarian and vegan items on the menu. We also have gluten-free soy sauce. Describe your average work day. I get up at 6 a.m., and go to the restaurant to get organized for the day. Then I’m off to morning mass. After that, I’m back at the restaurant to open for the day. I greet my customers and talk with them as much as I can. I love meeting new people and getting to know them. I have many repeat customers, and before they even sit down I know what they will order [laughs] because they come so often. I stay until about 9:30 p.m. each night. I eat all of my meals here and I cook for my chef. That’s why he’s so happy. Being busy makes me happy. I don’t like to sit still. BIBIMBAP SAUCE INGREDIENTS: 4 tbsp paste)

gochujang (Korean hot pepper

2 tbsp

sesame oil

shitake mushrooms, sliced

beef or chicken, cut into thin slices

tofu, cut into squares

4 eggs 4 cups

steamed sushi rice

sesame seeds

PREPARATION: Bibimpap sauce: In small bowl, combine gochujang, sesame oil and sugar. Set aside. Mildly seasoned bean sprout/spinach: Cook bean sprouts and spinach separately in a large pot of boiling water until soft, but not mushy, 3 to 4 minutes. Drain well. Transfer each to separate bowls, add salt and sesame oil; toss to coat. Set both aside. Mildly stir-fried carrots/mushrooms/radishes: Heat 1 tsp olive oil in large nonstick skillet and cook the following separately — carrots, mushrooms and radishes until softened (add more oil as needed), about 3 to 5 minutes. Sprinkle with salt. Set aside, in separate bowls. Heat 1 tsp of olive oil in nonstick skillet over medium heat and brown beef or cook chicken, and set aside. Clean pan and add 1 more tsp of oil and pan fry tofu until lightly browned. Set aside. Heat 1 more tsp of olive oil over medium-heat and fry the eggs just on one side until yolks are runny but whites are firm, about 2 to 4 minutes. To assemble the dish, divide steamed rice into 4 serving bowls; top with assorted vegetables, meat and tofu. Place 1 egg on top of each serving. Add bibimbap sauce as desired and sprinkle with sesame seeds. Makes 4 servings. GoodLifeMagazine.ca | 81

emes devoted to coffee worship fill our social media feeds, leaving tea lovers standing outside of the cool crowd. But tea drinkers take heart: The versatile bevvy is second only to water in popularity worldwide. And your hot drink of choice boasts benefits you can’t get from coffee. Drs. Jason and Maria Granzotto, a husband-and-wife team of naturopathic doctors in Vaughan, frequently recommend herbal teas to their patients to soothe symptoms of illness and boost overall health. “Herbal teas are a great, naturally caffeine-free alternative to coffee and hot chocolate,” says Maria, “especially in cases of anxiety, insomnia and adrenal stress, where caffeine will worsen the condition.” How else can tea help? Here are the couple’s picks for brewing better health.

Astragalus This herbal infusion might just be your best friend in winter. A member of the legume family, this plant has a long history as a disease fighter and a stress reducer. “Astragalus stimulates our immune system to help prevent colds and flus,” says Jason. If you’ve already been hit by a nasty bug, astragalus can relieve sinus congestion and reduce the length and intensity of colds and flus. Because it has been shown to help reduce inflammation, many fans of the tea drink it daily as a preventive measure in fall and winter.

Licorice Popular for digestive issues, this tea is recommended for those with weaker constitutions, as well as for indigestion, excessive fatigue and low blood pressure with dizziness. But it’s even said to be good for the common cold, with many sippers swearing by the brew to relieve sore throats and help them feel better. “It has a fortifying effect on all the organ systems,” notes Jason.

Peppermint Got an annoying tickle in your throat? Peppermint tea can bring it to a soothing halt. What other powers does pepperming pack? That carb-heavy comfort food can become a painful memory when it causes gas and bloating. Try peppermint tea to aid digestion and ease your discomfort. The main components — including menthol — are antispasmodic, calming the gastrointestinal tract. Bonus: it can improve your breath too. Take note if you suffer from heartburn though: peppermint relaxes the sphincter between the stomach and esophagus and may worsen your symptoms.


Chamomile A favourite of mothers everywhere, chamomile tea can help calm frayed nerves and treat stomach cramps. Like passionflower and valerian, chamomile is recommended for alleviating anxiety. “These teas calm the nervous system,” says Jason, “to allow for a more restful, restorative and higher quality sleep.” Some claim the daisy-like herb can also support the immune system — news to make many of us feel more relaxed right away.

Nettle It doesn’t have to sting! A great multipurpose tea to keep in your pantry, nettle is a good source of minerals. “It’s what we would consider nutritive, meaning nourishing to the body overall,” says Jason. “This is the type of tea that you can use after any illness to build up your strength and after a pregnancy to rebuild your strength and stamina.” Nettle’s antiinflammatory qualities may help alleviate the symptoms of hay fever. It is also being studied as a natural treatment for eczema.

Lemon and honey No worries if your tea drawer isn’t fully stocked at the moment. “Something as simple as concocting a tea from fresh lemon and honey is very effective for a sore throat and cough,” says Maria. Despite what some may say, there’s no way around jet lag, says Siddiqi. “I’ve found, to date, the best way to get over it as quickly as possible is to adjust eating patterns to the time of your destination. So, if I’m flying to Europe on an overnight flight, and they’re serving dinner on the plane any time after 6 pm ET, I won’t eat because that’s midnight at my destination,” she explains. “That, and having a shower after I arrive helps minimize the effects and duration of jet lag for me.”

How to: Avoid travel bugs

Hydrate, hydrate, hydrate. Simply doing this keeps your body from feeling depleted overall, which, of course, helps ward off bugs. That said, Siddiqi adds that sometimes there’s not much you can do to offset sickness, and if it you come down with something, rest up. “The silver lining is, you can ask for help and maybe get to try some homespun remedies, just like the locals.”

How to: Minimize roaming charges

Putting your phone on airplane mode right away is step one, as is seeking out Wifi hotspots. Before you go, Siddiqi says downloading Whatsapp or a similar web-based messaging service to communicate via Wifi instead of data is also ideal. “Increasingly, though, I’ve found carriers are offering civilized roaming plans,” she says, “so check with your provider before you go for both price and capacity.”

How to: Pack realistically

If there’s one area to follow the Savvy Traveller herd in, it’s going the carry-on-only route. Pare down your list of essentials to bare bones – Siddiqi advises calling the hotel or resort before you leave to ensure they have a hair dryer so you won’t need to haul one along – and then pare it down again. “I pack things that can be worn multiple times, and wear my bulkiest items on the plane to save room in my luggage,” she says. For shoes, she advises loading up on flats, which pack easier than heels, and if you anticipate the need to wear the latter, she suggests shopping local for a shoe-venir. 86 | GoodLife Barrie Edition - January February 2017 ■

CRUISES If you think being on a massive ship entails being stuck with boring people, crowded quarters and ho-hum food, get ready to throw a boatload of myths overboard BY CHRIS TRABER

hen you’re faced with a dizzying array of vacation options, a cruise holiday may be last on your list — and likely for the wrong reasons. Misconceptions about sea voyages abound, and if you’ve fallen for one, you may be denying yourself an indulgent, affordable and exciting five-star experience like no other. We busted some onboard myths with the help of Sean Wurmhoeringer, hotel director of Norwegian Cruise Line’s newest and largest ship, the Escape, on a week-long voyage from Miami through the Caribbean. Here’s what we learned.

Myth: Cruising is expensive. All vacation destinations have varying seasonal rates. Escape’s recent cruise offered inside cabins from $596, balcony suites at $861 per person to $3,183 for the exclusive Haven. During high season, Dec. 24 to 31, for example, expect double the costs. For the very well-heeled, there are


large ultra-luxurious penthouses, villas and owner’s suites with private amenities, butlers and concierges — at up to $30,000 per cruise. Norwegian’s exclusive “Free at Sea” offers, including unlimited open bar, friends and family sail for free, specialty dining, shore excursions and internet, can save you up to $2,800 based on the regular fees per package. However, read the fine print which itemizes the gratuities that you’ll have to pay for each promotional offering.

Myth: Cruise ships are crowded and quarters are cramped. OK, day one may seem a tad congested as you and fellow passengers explore the levels, pool, shops, bars and gawk in awe at the opulence — including the twostorey, multi-hued LED atrium chandelier, glitzy casino and restaurants. Fret not: Once you’ve acclimatized, you can party with the masses poolside and at the clubs, or find a quiet nook in or outside the ship. With 2,175 cabins on 20 guest decks, the Escape is longer than 10 football fields, and comfortably accommodates up to 4,266 guests tended to by 1,733 crew members representing 70 different nationalities. The 1,150 balcony cabins, ranging from 207 to 239 square feet, make up the majority

Myth: Cruising is for the elderly. Wrong. “Love it,” enthuses Jackie Dove, 26, travelling on her eighth cruise with friend Josh Bryans, 28, both from Jacksonville, Fla. “It’s a beautiful, modern ship. The late night comedy shows are fun. I like this

bigger ship. You’re definitely never bored, and the onshore excursions in St. Thomas and Tortola are amazing.” Bryans agrees: “The food is amazing and the inclusive drink package saves us a lot. With all the dining and entertainment options, it’s a great value.”

Myth: You’re committed to an assigned dining table and time with strangers. Absolutely not. Norwegian initiated the freestyle onboard lifestyle in 2000,

Cruises offer a mix of people, places and experiences. On the Escape, for example, you can try your luck at the casino, enjoy a drink in one of the ship’s bars, or simply stroll and enjoy the ocean breeze outside or the eye-catching décor inside. Next day, there will still be plenty more to do.

Myth: Activities onboard are limited. In reality, a week isn’t enough to do it all. Just on the Escape, for example, you can take in Broadway-quality productions in the theatre, including Pitch Perfect, After Midnight, For the Record: The Brat Pack, and the melodic Oh What a Night! tribute to Frankie Valli & The 4 Seasons. Or you can enjoy all-age musical and comedies in the various lounges. For other tempting morning-to-midnight indulgences, there are spa treatments, games, trivia and contests, cooking demonstrations, wine and beer tastings, theme parties, bingo, karaoke, fine art auctions, lotteries, 3-D movies, and a lavish casino with poker tournaments, gaming tables and, of course, banks of slot machines.

Myth: Cruising isn’t family friendly. On the contrary, the Escape is kid-focused with supervised childcare, a “Guppies” program for toddlers and a safe splash pad. The Entourage program for teens gives big kids their own (parent-free) party room, a video arcade and youth-specific games and contests.

Myth: Tried one cruise, you’ve tried them all.
