I’ve always admired Michelle Obama for a variety of reasons — her poise, her grace under fire and her steadfast support of her husband, to name a few. ntermedia artist, Amy Bagshaw, began her art education not long after she learned to walk. Reared by educators who recognized her advanced fine motor skills, she was painting watercolours by six and delving into oils by age eleven. “I wasn’t great on the basketball court,” says Bagshaw. “But I could draw really well and replicate images easily.” By college, she had progressed to fibre arts and began experimenting with installations. “I had two cravings,” Bagshaw recalls. “Conceptual installation and I wanted my hands to move. I was working with video, sound, and computer installations but the fibre work became an obsession. I was exploring burlap. Wrapping and unwrapping, pulling out thread. Knitting with thread. Tying them together to make these super long strands and wrapping and binding journals, thinking about memory.” It was an exercise in isolation and protectionism, Bagshaw explains. A delicate armour created to safeguard the texts that got her through a difficult part in her life. Bagshaw graduated with her BFA from Queens University and MFA from Stony Brook University in New York, before following in her parents’ footsteps as an educator. She taught Visual Art, Art History, Studio Art, and Art Theory at Georgian College for eight years, then moved to RCC/Yorkville University in Toronto as Adjunct Professor. Today she continues to teach fibre workshops at special events and will be conducting a class at the Espanalo Fibre Arts Festival this October. “Installations and fifteen foot drawings are a hard sell,” she says. “I do commissions and private sales but I have never approached my work with selling it in mind. I make my funds as a professor. Some artists are commercially driven. I don’t have that pressure. It’d be the kiss of death for my conceptual work.” Bagshaw is speaking of her latest exhibition, Reminders, presented at Georgian College’s Campus Gallery in January, where massive drawings of mountain ranges streamed across
the gallery’s walls. Each image was drawn solely from recollection and fades into the ether like a dwindling memory one is starting to lose. “They are hyper colours and hyper vistas,” Bagshaw says. “The residue of places, of time. I’m interested in that flux. I’m interested in how we recall the past and when we do, how it is different. An erosion. Some parts are clear and others fade out.” This exploration of the ephemeral nature of time and memory has much to do with her childhood spent at an off-grid cabin northeast of Parry Sound. “We spent a lot of time in that area,” she says. “Young kids four and seven. Months on end without electricity and contact with the outside world, deep in the woods. Culture comes because of our habits. It’s formed by our landscape and climate. How it feels, smells, the texture of it.” The second element of the Reminders exhibition is a breathtaking display of lists, numbering over 2000, which Bagshaw has accumulated over her lifetime. Painstakingly archived and curated, each note holds a position purposely selected. Mounted simply with two little pins. There are shopping lists, To Do lists, personal agendas, notations on the timing of contractions at a birth, even a plan Bagshaw made for herself in Grade 5. ‘Do a drawing every day. Practice the piano. Do something with clouds. Watch a bit of TV.’ “Every line was in a different marker,” Bagshaw remarks with amusement. “Signed with my signature. Like a contract I was making.” Bagshaw’s exhibition is a fearless invitation to become a voyeur into the machinations of her life. But it is also a reminder that the rhythm of all our lives move with these same vibrations. Plans are struck. Unexpected events take hold. Time is fluid and memories are fragile things. We encounter Moisture all around us from rain water, air humidity, ground water, taps, down spouts, eaves troughs, leaking pipes, leaking shower stalls, bath tubs, sinks, windows and door sills……you get it. A constant battle! Well not so bad if you stay on top of it and you make sure that if there is a new presence of moisture inside your home you get it stopped fast and dried quickly. Q. What are the most common causes of moisture I see in Country Properties?
This time of year I see moisture in the basement, usually the foundation walls. The snow is melting, the eaves and downspouts are running and the frost is coming out of the ground allowing the surface water to flush downward against the foundation. I also see window wells being overwhelmed by surface water and leaking into the basement.
Q. What are the easy Fixes you talked about?
Most often your house will have adequate weeping tile wrapping the foundation at its base to handle normal levels of water. However, this tile can be overwhelmed by excess water flow and the result is water seepage into the house. So eliminate the extra water by cleaning your eaves troughs, checking your down spouts and improving the grade away from the edge of the house. Also make sure you extend your down spouts to drain the water safely away from the house.

Q. What if the easy Fixes do not work?
In the worst case situation, the weeping tile maybe plugged and would have to be replaced. The procedure for this is to dig around the perimeter of your home down far enough to retrieve the old weeping tile and replace it with new (wrapped) tile. Then a water proof seal should be applied to the foundation walls followed by applying a full dimple membrane from surface height all the way down to and wrapped under the new weeping tile. Back fill almost to the surface with coarse gravel.
Q. What if we were late in finding the moisture?
Most likely the result of the prolonged presence of moisture combined with the warmth of your home will produce Mold. In this case do not disturb the Mold as you may cause Mold Spores to become airborne. Hire a professional to remove the Mold, dry the area and make sure that the source of moisture has been stopped. If the area of Mold was large then have the air quality tested for the presence of Mold Spores to insure that you got it all and that there are no other areas of Mold to be concerned with.
Q. Should I avoid buying a Home that has evidence of water seepage?
Not necessarily. All properties have some issues… even new builds are not perfect. If this is your dream property, then don’t let the water problem ruin your plans. First off, maybe the cause of the problem has been remediated and you are only seeing the old stains. Possibly the cause is an easy fix. Please investigate the issue before you over react and walk away from what otherwise will be a wonderful property. Anything can be fixed and generally water seepage should not be a deal breaker. If the property is one of a kind to you then invest in finding out the cause and cost of repairing this problem.

RENOVATION REDUX By Dawn Ritchie
M
any homeowners shudder at the prospect of a home renovation: the upheaval, the dust, the horror stories of unreliable contractors, but for Carrie and Vynny Hick, the adventure was exhilarating. The couple had always had an itch to build. But while searching for land in 2009, they discovered a DayCor custom bungalow nestled in a rural oasis of executive homes that fit their needs. Proximity to amenities, quick access to the highway and the fact that the home was close to the beach made it an ideal location. “We had everything at the tip of our fingers,” says Carrie. “And we loved the layout.” So, the couple postponed building, and set their sights on a massive future renovation to tweak the home in the future. What was working already was the spacious layout. The floorplan on the main level offered bedrooms in separate wings. A perfect set-up for the in-law who would be living with them. They also loved the covered patio outside that allowed for al fresco dining in inclement weather. What they wanted to enhance was more exterior living capabilities and additional home-based entertainment facilities. By 2013 they were ready to roll.

Installing a plunge pool was first up. It meant removing a forested section at the back of their one-acre property. A task which Vynny took on himself, aided by a couple of friends and nephews. Together they felled 93 trees. Once the forest was cleared, the Hicks were struck by how much property they had to work with. They increased the pool size to a grander 20 x 40 basin, with a freestanding hot tub nearby. The saltwater pool, elegant in its simplicity of form, has wide entry steps and is framed with a subtle dark grey border with lighter grey deck. Installed by Dan Delong’s Empire Pools, the water is illuminated by two remotely-controlled LED lights with 100 different colour combinations. Set against the dark rural sky, it allows for a serene star-scape to unfold above, unhampered by the glare of flood lighting. Vynny didn’t slack on his lumberjack duties either. After harvesting the trees, he turned them into stacks of firewood for a newly planned outdoor wood burning fireplace. place where summer and winter fires would blaze year-round. “Vynny grew up in the north,” says Carrie. “So, a fireplace was near and dear to him.” Also progressing was the lounge and dining area under the covered patio where an exterior entertainment center with flat screen TV, island and built-in bar fridge emerged. Roll down sun shades were also added. “It’s just a fantastic place to hang out,” says Carrie. “It’s shaded all day with no sun on the deck until 5 pm but the pool’s always in sun.” Finally, their eyes turned inward. The home had matured nearly eight years by now and was begging for an update. The gold wrought iron fixtures, beiges, and dark brown cabinetry popular in 2009 looked tired by 2017. Carrie wanted to stay current with trends and opted for a brighter palette with whites and warmer greys. The lower level was also only partially finished and wasn’t living up to its full potential. Their goal? An entertainer’s wonderland, with a media center, bar/ kitchen, games destinations, guest bedrooms, and room to roam for their frequent party guests. Carrie and Vynny spent weeks online getting ideas and then crawled over the floor with tape measures, visualizing where walls would go and what they wanted it to look like. “When you know exactly what you want it’s easier for them to piece things together,” Carrie says. The whole renovation would span seven months from February to August as they ripped out carpeting upstairs, laid hardwood, changed all the lighting, furnishings and appliances, added wainscoting and built-ins and transformed existing cabinetry. Downstairs they tore down the walls, insulated and restructured spaces before finally repainting everything. Jan Bosch was their contractor and the Hicks have nothing but glowing praise for his precision work. “Jan was phenomenal,” says Carrie. “He has a very good work sense. He does electrical, plumbing, flooring, tiling. Very meticulous, with such attention to detail. If there’s a problem, he tears it out and fixes it. And he does the work himself. He’s not someone who contracts it out.” On the main level, Lee Douglas of Woodcrafter in Guelph worked on the kitchen. The reddishbrown cabinets were painted out in Dulux Dove White. Lower cabinets were reconfigured as pull-out soft-close drawers and new interior-lit uppers were added above the existing ones to stretch storage to the ceiling. A wall pantry was also added to accommodate all the plastic dining ware they now needed for the pool area. Only the granite remained untouched.

Carrie selected chrome and glass fixtures for lighting throughout. Pendant lighting in the upper and lower kitchens and chandeliers in the dining room and master bath were all from Lite Mode on Jane Street. “I personally like how the chrome accents the light,” Carrie says. Fresh, clean subway tile was chosen for the backsplash in the kitchen, and wall tile and mosaics for the lower level were sourced from Tile Giant. Scott Boisclair painted the whole house. On the recreation level, an existing small closedin media room was torn out and walls demolished. The unfinished cold room under the front entry stairs was insulated and the floor rubberized to transform it into a useful gym with rowing machine, pull-up bars, weights, and heavy bag. The lower level’s kitchen was equipped with sink, refrigerator, built-in cabinetry, and wall 22

oven to heat up party hor d’oeuvres. An elongated five-seat counter plus a dinette table also meant guests wouldn’t be forced to eat off their laps or at coffee tables. Then there are all the game destinations. A dart board cleverly set against barn board has plenty of throwing room for tournaments. A full-sized shuffleboard and billiards table also allows multiple games to be enjoyed simultaneously during parties. The recreation level now houses two fireplaces, one tucked into a cozy corner by the billiards table and the second in the lounge area under the flat screen TV. The lower level is also easily accessed through a garage entrance with sleeping quarters for overnight guests. “We enjoyed doing the renovation,” says Carrie. “We got everything exactly as we wanted it.” But as life has a knack of doing, circumstances
suddenly altered and the couple could only enjoy the fruits of their labour for a brief time. A relocation in employment suddenly shifted work up north. “We got tired of the drive in the winter and bought a condo north of Barrie on the waterfront,” Carrie explains. “And downsized by half.” But leaving the hard-won renovation behind was just too much, so they gutted the new condo and brought Jan back in to renovate it exactly like the house. “Everything we picked at the house, we chose again,” says Carrie. “Same colours and tile, the same wainscoting. A
fter twenty successful years in the flooring business as a buyer and scheduler with Kraus Carpet Mills, decorator Darcie Edgar decided to return to school to pursue her true passion. Two years later she was a graduate of Georgian College’s Interior Decorating Program and immediately hired on as an interior stylist with the premiere design firm, Patty Wilson Design. From there Darcie launched her own business, Darcie Edgar Designs, as an accredited member of the Canadian Decorators Association. And today, she operates her business out of Barrie, serving all of Simcoe County and the surrounding areas from Tottenham and Alliston to Oro, Newmarket, and Muskoka. What types of services do you provide? We do in-home colour consultation. Kitchen and bath design. Flooring, lighting, and 3D rendering. We assist in the selection of fabrics and furnishings, millwork, lighting, artwork, accessories and helping clients in picking out finishes and more. Can the average homeowner afford a professional decorator? Absolutely. The bonus is that I pass on my trade discount to my clients. It compensates the sourc24

ing fees. I like to stay Canadian if possible, but there are good U.S. manufacturers too. I also have a strong list of trades that work contract with me. I do have some DIYers and for them I can help with choices, product procurement, ordering and tracking items, arranging deliveries, styling, etc. They also get that trade discount. What is your favourite task in decorating? I love choosing patterns, textures, and colours for the home. Focusing on the soft furnishings: area rugs, cushions, window treatments, fabrics and furnishings and accessories. So they work cohesively together as a colour. I also love mixing patterns but you need to take care that things don’t get too busy. Your eye needs to rest. Is there a common mistake homeowners make when they decorate themselves? Yes. Picking the undertone. They really need to consider things as a whole. They may have an orange undertone in wood flooring and a cooler countertop colour that doesn’t work with cabinetry, or the wrong colour palette overall. It can be a costly mistake because those undertones and colours are what pull it all together. What advice would you give DIYers? It’s important to keep things simple and cozy so
your home is relaxing. You want to enjoy your space. Some people want their homes to be show pieces, but they still need a relaxing room to kick back. What sets you apart from other decorators? Good question. I’m not high pressure. I find my clients are very comfortable and connected with me. I get them. I just want to help clients with their vision to make a house a home. What is the colour palette of your own home? Neutral grey and navy and white. How often do you refresh? Seasonally. I love Christmas, and spring is always fun. So, spring, fall and Christmas. I haven’t thought much about spring yet. This year has been a bit of a whirlwind, but I went to a colour seminar last week. Coral is the Pantone colour of the year. I’m looking forward to incorporating that trend colour into some accent pieces. Maybe some soft furnishings like pillows or throws, glass wear, candles, vases. Homeowners Andy and Christine Pritchard purchased the rambling five-acre property three years ago and immediately set to work to bring it up to the standards of their active, athletic family. Two of the Pritchard’s three daughters ride equestrian competitively, the third is a hockey star, like her father, who was once a Buffalo Sabres draft pick and played Division One Hockey professionally across Europe. (Currently, he is in the throes of purchasing a Junior Hockey Team.) And then there’s Christine, who harbours a personal affinity for rescuing ponies, having saved two right off the meat truck in Sudbury. One of the first major renovations the Pritchards tackled was the barn makeover. “We repaired the sides and installed six new horse stalls, a two-acre paddock and an outdoor riding ring,” she says. “It’s a big barn, completely renovated now and it has a chandelier inside. You could even hold long table dinners and weddings in there.” The barn belongs to the original 1867 histori-

cal farmhouse, which is also still standing on the land. “We call that the farm cottage,” Christine says. “It has three bedrooms and is as cute as a button. The roof is great and it’s built solid. We gutted it to the studs. It just needs new plumbing, electrical, a bathroom and kitchen floors. We’re considering making it into an AirBnB. We can do that in Clearview. Or rent it. A ski family could move in.” The main house, by comparison, is a 5000-square foot four-bedroom executive bungalow, built originally by the Chief of Police for the area, according to Christine. Constructed in 2011, the home was turnkey when they purchased it, but as a designer and the former owner of Habitat Interiors, Christine still wanted to put her own stamp on it. “We changed everything cosmetically,” she says, “I chose a rustic/industrial look to complement the country setting.” The house was repainted, inside and out. and Cloud White being the primary choices. Carpets were also torn out and new flooring laid on both levels. “It’s authentic hemlock,” Christine says. “Reclaimed wood, from Bass Lake Sawmills in Orillia. It’s beautiful and affordable. A wonderful family business mills it.” Christine prefers to use as many Canadian suppliers as possible for her sturdy furnishings, shunning the mass-produced items from overseas that are constructed out of cheap particle board. Her trades are proudly local as well. The kitchen is the work of Batteaux Creek Kitchens from Stayner with leathered soapstone counters by DiPietra Design out of Barrie. The industrial pendants over the island are from Mercana. Doors and windows throughout were installed by Van Dolder’s Custom Exteriors from Owen Sound. The barn doors up and down are the creations of Adam Garbutt of AG Designs Co. in Collingwood, who also took care of the barn board wall features. Stone wall treatments came from the Georgian Design Centre. In the dining room, Christine contrasted a ten-seater harvest table with industrial chairs and benches, all originating from Zuo in Montreal. The unique dining room sidetable here was made by a local metal artist, Skot Lawrence, of Desiron Custom Metal in Clarksburg, on which skeleton keys and dinner bell sits at the ready. Above, a festive Edison lightbulb chandelier illuminates the dining table (also from Zuo). To bring more warmth to the dining area Christine had barn board installed inside the high coffered ceiling. The layout of the main floor is so spacious it begs for entertaining, so Christine added a country bar right next to the living area. “The barstools look like corks,” she says. “They’re also from Zuo, but the bar is from a local home store in Collingwood.” In the great room, Christine cleverly mounted the flat screen TV on a hefty artist’s easel, allowing the screen to be elevated while also being tucked into a corner at an angle. She chose robust dark tufted leather chesterfields from Quebec’s CDI Furniture for seating and casual functional side tables from Mercana. Premium quality cozy blankets are stocked about the room: in wood carriers on either side of the TV, strewn across sofa arms and hanging on a roughhewn ladder leaning against the wall. All, within easy reach for snuggling while watching TV or simply gazing out the many windows at the spectacular long view of the Niagara Escarpment. But the unmistakable focal point in the open concept floorplan is, without debate, the six-foot wide

nest | home tour cast iron twig chandelier from Currey & Co. that hangs over the main conversation pit. It cements the rustic country theme. Christine carried this twig motif throughout the home. It is also found in table lamps in the great room and master bedroom and in a pendant fixture hanging over the basement stairwell (also from Currey and Co.) The main level also houses the laundry facilities, mudroom, den, and a sizable separate office, that is not at all an afterthought. That room is flooded with light and views of the ski hills through generous windows: a relaxing place to work. From the office, you enter the ensuite master bedroom. Sleeping quarters here are separated from the spa bathroom by a double-sized sliding barn door. An adjoining walk-in closet lies to the right off that entrance. The family’s three other bedrooms reside on the lower level, which, according to Christine is also Andy’s chief domain. The entry point to this level is directly from the center of the main living area. Christine commissioned a unique industrial staircase enclosure to protect the stairway. Immediately down the stairs you’ll find an exercise area, large enough to function as a yoga studio, and through another set of barn doors the recreation room unfolds. A music area holds a piano and bean bag chairs, with a walkout to the back hot tub, fire pit and landscaped gardens. In the media section Christine has placed a light grey Stylus sectional, side lounges and poofs to enjoy the Leaf’s games on their 80-inch TV screen. The four-seater bar, on the opposite side of the room, with a stamped tin façade, was built by St. Jacobs Mennonites, and this is where Andy’s team jerseys hang. Much of the rest of the artwork on this level comes from Thornbury’s Shelagh Fox Gallery. “I think I will miss it,” says Christine, as the Pritchards have recently placed the home on the market. “There’s literally open land right to the escarpment and valley. But there are other opportunities. We only have one child at home now and she goes to school in Collingwood. The other two are away at university. It’s time to downsize and pass this beautiful property on.” The new opportunities Christine refers to is her next home design boutique, The Nest, which will soon be opening in Collingwood. Unit hails from Nova Scotia, while Special Consensus from Ohio and Nothin Fancy are from the Virginia area.” The Tottenham Bluegrass Festival is an annual event which first began in 1984 as part of Tottenham’s Centennial celebrations. The festival attracts the cream of the crop of Bluegrass bands from across North America. Since its inception, over 250 Bluegrass bands have performed “at the pond”. Visitors not only enjoy Bluegrass Music in the natural amphitheatre of the Tottenham Conservation Area near the village pond, they can camp out for the entire weekend and enjoy songs around the campfire, music workshops, try a variety of instruments and more. The Festival has proven to be so successful that last year event organizers added an additional stage. “We added a new Back 40 stage with what I would call alternative Bluegrass, and it went over really well last year,” says Al. “We are working on the lineup for this stage now. There is also a Band Scramble on the Thursday night at the Legion. We put a bunch of instruments into a golf card and pull names out of a hat and put bands together. The made-up bands get a few hours notice to work up three songs to play. Last year we had 11 bands and it turned out great!” The 16th annual Bluegrass Kidz Talent Competition is one of the highlights of the weekend. “It encourages Bluegrass music appreciation among our youth and gives them a chance to show off their talent and to win some great prizes,” states Al.

The Children’s Musical Talent Contest takes place on Saturday June 15th at 2 p.m. with preregistration starting at 11:30 a.m in the Children’s Stage Area. First, second and third place prizes are awarded in each age category ($100, $50 and $25 respectively) for age categories for children 8 years and under; 9 to 12 years; and children aged 13 to 16 years. SET FOR ANOTHER GREAT YEAR Plans are already underway for the 46th Annual Potato Festival, happening August 9th, 10th and 11th. It’s a fun-filled weekend for the entire family. “It is the people in our community that contribute to the success of this annual event,” says Dennis Burt, President of the Alliston Potato Festival. “A 46 year tradition of hosting this festival is indication that the community looks forward to this weekend and what it represents—community, fellowship, home coming and sometimes, new beginnings.” The Alliston Potato Festival Organizing Committee is hard at work planning this year’s events which will include the return of some popular events, along with the addition of some new shows, yet to be announced. A Committee spokesperson points out a few highlights to expect at the upcoming festival: “The Friday Night Opening Parade along Victoria Street, the Annual Texas Hold ‘Em Poker Tournament at the Memorial Arena; allweekend Vendors Marketplace, Midway, Food Court, Live Bands all day into the evening at the Beer Gardens, and live entertainers of all sorts including buskers, dancers, an animal petting zoo and Kid’s Zones set up the three days at the Fairgrounds and on Victoria Street on Saturday, and the Pancake Breakfast on Saturday morning and the Sunday Morning Baby Show.” The annual parade presented by the Rotary Club of Alliston kicks off the festivities on Friday August 9th, beginning at Banting High School on Victoria Street, then along Ontario Street, ending up at the Alliston Memorial Arena on Nelson Street. The Midway opens at the Alliston Fairgrounds at 6 p.m. to kickoff a weekend of activities. Victoria Street downtown will be a flurry of activity on Saturday (August 10th) with RUBAN Sights and Sounds happening from 10 a.m. to 5 p.m. “Voted one of Ontario’s Top 100 Festivals, the Alliston Potato Festival is truly a community event,” says Linda Spurr, Alliston BIA General Manager. “There is so much to do all around town—there is truly something for everyone. Saturday is a big day downtown. at the 17th Annual Essa Salmon Festival & Riverbank Derby in Angus
Last fall, Dustin Carpenter reeled in “the big one” at the 16th Annual Essa Salmon Derby in Angus and proudly claimed the grand prize of $2,000 for the longest salmon caught at the Derby. The salmon measured 88cm in length. This year, eager anglers will congregate along the banks of the Nottawasaga River for their chance for fame and fortune as they try their luck at catching this year’s largest salmon. It all happens the weekend of September 21 and 22 at the 17th Annual Essa Salmon Derby taking place at the Nottawasaga Fishing Park. “Essa has a new Committee dedicated to fishing and the Annual Essa Salmon Derby so there will be lots of exciting things happening along the riverbank in Angus,” says Colleen HealeyDowdall, Manager of Planning and Development, Township of Essa. “Our Fishing Committee Chair is our new Mayor Sandie Macdonald.” The event is held annually on the third weekend in September at the Nottawasaga Fishing Park, organized by the Essa Township Economic Development Committee in conjunction with the Angus and District Lion’s 40

Club and the Parks and Recreation Department, in partnership with local sponsors. From beginners to seasoned anglers, the annual Salmon Derby is hugely successful, attracting people from near and far, in hopes of landing the biggest (longest) salmon for big prize money! The very first Derby winner was Winston West who caught an 87.5 cm long salmon. The record for the largest salmon caught during the Derby is currently held by Robert Orr for his 90 cm long salmon snagged in 2013! While Dustin Carpenter claimed the $2,000 first prize for the largest fish at last year’s Derby, the second place winner took home $1,000. Third, fourth and fifth place prizes were $500 each respectively with prize money donated by local businesses. Other prizes were also available. “The event is open to everyone,” adds Colleen. “Registration is $20 per person for both Saturday and Sunday, with registration taking place during the two days.” You can also go online and buy a yearly fishing pass for $40 which includes free entry into the Salmon Derby, available at www.essatownship.on.ca. The saying “the early bird catches the worm” applies to registration which opens at 6:45 a.m. on Saturday. The Derby hours are 7 a.m. to 4 p.m. on Saturday and 7 a.m. to 2 p.m. on Sun-
day with the prize presentations happing at 3 p.m. on Sunday and the winners must be present to claim their prize. All that fishing and time spent outdoors will surely work up an appetite so food is available for sale both days at the Lion’s Hall. There’s also a Trade Show happening at the Lion’s Hall on Saturday. Last year, new children’s activities were introduced on Saturday from 10 a.m. to 2 p.m. which included a colouring contest, craft table, painting station, bean bag toss, a giant Snakes and Ladders game, and the highlight was a “Kid’s Casting Competition” (on land with safety on hooks) with great prizes to be won. “Our Derby raises funds to protect and enhance the environment and restore the Nottawasaga riverbanks and its tributaries with the focus to improve the habitat of the fisheries and to help with the beautification of our Fishing Park,” as stated on the Essa Salmon Riverbank Derby website. With the mission to protect and enhance the environment by restoring the Nottawasaga Riverbanks and Fishing Parks, the Derby also encourages a Catch and Release program. “One of the most amazing things about the Honey Festival is that families can come for an entire day and never spend a cent—there is no charge for admission or parking and all of the kids’ activities are free, including the rock wall, slides, bouncy castles and more,” says Penny Coleman, President of the Beeton Honey Festival. The one-day Beeton Honey Festival takes place on May 25th from 9 a.m. to 4 p.m. Crowds of visitors “swarm” historic Main Street which is closed to vehicle traffic that day. Almost 200 vendors line the quaint Victorian Main Street, offering unique merchandise ranging from “Perennials to Pastries, Fashion to Farm Produce and Golf Balls to Garden Tools”, according to the festival website. There are also three different entertainment stages offering live music all day, including The Muddy Waters Bandshell, The Four Corners and the Free Family Fun Zone, featuring bands, jugglers, puppet shows, dancers and more. “The Classic Car and Truck Show is huge!” exclaims Penny. “We have well over 100 cars and the drivers get a chance to win trophies

or prizes in different classifications. Car owners can also participate in the Junk in the Trunk event, where they can sell car parts and other items from the trunk of their vehicle. It’s a chance for visitors to get some unusual finds.” A great way to start the day is by purchasing a big stack of freshly-made pancakes at the Fireman’s Pancake Breakfast. Then no matter what you are craving throughout the day, you are likely to find it offered at the many food vendors. All of the festival favourites are here: funnel cakes, gelato, fudge, kettle corn, donuts, sweet potato fries, pizza, BBQ, Caribbean Jerk, deep fried pickles and more. And of course, there’s plenty of honey for sale. “Beeton is originally a Bee Town, so we honour our heritage by providing free space for local honey producers and encourage honey vendors to offer educational displays,” explains Penny. “Beekeepers have really stepped it up by providing unique educational displays like glass units where you can see bees working in the hive, and the beekeepers are on hand to answer questions or give talks on bees and beekeeping.”

The area’s beekeeping history dates back to the 1860’s when storekeeper/postmaster David Allanson Jones settled in the small West Gwillimbury community of Clarksville. By 1870, he became the first commercial beekeeper in Canada; known as the Bee King of the 19th Century. Pedro Pereira never sits still. As the chef and CEO of Fishbone Restaurant Group, he’s constantly moving between his four restaurants. “I’m pretty good at racking up the mileage on my car,” admits the 39-year-old restauranteur who owns and operates eateries in Aurora, two in Stouffville and his newest one (and the focus of this story) in Innisfil’s Friday Harbour. Opened last summer, Fishbone at Friday Harbour offers Portuguese inspired upscale dining. “Our goal is to provide good food and good service in a nice looking space,” explains Pereira, a self-taught chef, husband and father of three daughters. Situated on the boardwalk and sandwiched between a Starbucks and a soon to be opened LCBO, the 60-seat dining room is a beautiful venue showcasing cottage, Portuguese and nautical design elements. It also features a picturesque view of the newly constructed marina. “The place has a great vibe, especially in the summer with all of the boats coming in and out of the marina,” he explains. To learn more about Fishbone, I conducted two interviews with Pereira — one at Friday Harbour and the second one over the phone while he was driving between restaurants. 46

Goodlife: Let’s start with your journey into restaurant ownership. With a grade nine education, you came to Toronto from Portugal at the age of 18 to pursue a soccer career. Soon realizing you needed to supplement your income, your coach got you a restaurant job. And you loved it right from the start. Correct? Pedro Pereira: That’s right. I started out as a food runner at Adega on Elm Street and worked my way up to managing some of the best restaurants in Toronto, including Centro and Zucca Trattoria. When did you decide to give restaurant ownership a try? PP: In 2008, I opened a take-out Portuguese barbecue chicken restaurant in Aurora. After selling it, I opened the first Fishbone in Stouffville in 2010, and it grew from there. What led to the Friday Harbour location? PP: We wanted to expand our Fishbone brand and based on the demographics of the development, we’d thought it would be a great match. It’s a wonderful project, but it’s going to take time to build up to what it needs to be. With a focus on the vibrant flavours of Portugal (think paprika, pimento paste, white wine and garlic), Fishbone’s menu is small and delicious. Why is it important to keep the menu limited? PP: We keep it small for a good reason — what we do, we do well. We serve what’s fresh at the markets, and change our menu between four to six times a year. We also do lots of menu research by regularly travelling to Portugal to check out the latest food trends and wines. Portugal is so amazing because every 20 kilometres is a new gastronomic world. Every little village or town has its own specialty or a great local product that they’re known for. Why the name Fishbone? PP: It comes from our whole fish offerings. Once diners are seated and settled with a drink, they are shown a selection of fish on ice, which they can choose. Once it’s cooked, we debone it right at the table for you. We work with market availability and seasonality so the choices usually range between one to five different types of fish such as Mediterranean sea bass, sea bream, snappers, and more.

It serves four as an appetizer. 2 lbs Brussels sprouts 1 cup sweet chilli sauce ½ cup peanuts, crumbled and unsalted 2 litres vegetable or canola oil for frying Salt & Pepper Sweet Chilli Sauce 3 large garlic cloves, peeled 2 Jalapeno peppers ¼ cup white distilled vinegar ½ cup granulated sugar ¾ cup water ½ Tbsp salt 1 Tbsp cornstarch 2 Tbsp water PREPARATION: Sweet Chilli Sauce: 1. In blender, purée together all the sweet chilli sauce ingredients, except for the last two. 2. Transfer mixture to a saucepan and bring to a boil over medium-high heat. Lower the heat to medium and simmer until the mixture thickens up a bit and the garlic-pepper bits begin to soften, about 3 minutes. What’s your food philosophy? PP: Freshness, simplicity, seasonality and good seasonings are the foundation of my food philosophy. It’s similar to my life philosophy, which is a little bit of common sense and logic. We make everything from scratch in our kitchens, even our bread. The only thing we don’t make is ice cream. What are some of the most popular items? PP: On the appetizer front, our deep fried Brussels sprouts are a staple, and our octopus is the most tender you will ever have. For entrees, the whole fish is the most popular along with various daily specials. What if you don’t feel like eating fish? PP: We’ve got some really delicious meat options such as flat iron steak, Cornish hen, duck, pasta dishes and more. Where did you learn how to cook? PP: Since I was born and raised in Portugal (he comes from the town of Caldas da Rainha), I was exposed to great flavours and some of the best seafood in the world. I’ve always loved food and grew up watching my parents make great meals. Both of them are very skilled in 48

the kitchen. What’s your favourite menu item? PP: A good whole fish with lemon, olive oil and sea salt does it for me. It’s something that I grew up on and I love it! Are there options for diners with special dietary needs? PP: Gluten-free and vegan dishes can be ordered because we prepare everything a la minute. We even have a special gluten-free deep fryer. Do you have specials? PP: Wednesday is half price wines, Thursday features a half dozen oysters for $10, and Friday is no corkage. What’s on offer to wash down Fishbone fare? PP: About 99 percent of our wines are Portuguese. Our extensive list even showcases our own red and white wine label, which is bottled and produced by the award winning winemaker, Luis Louro, who won Portugal’s winemaker of the year in 2016. Let cool completely before storing in a glass jar and refrigerate. PREPARATION: Brussels Sprouts: 5. Preheat fryer or pot with oil (no more than half way) with vegetable or canola oil to 325F. 6. Trim or remove dark spotted leaves. Cut Brussels sprouts into quarters if they are large or into half if smaller. 7. Cook sprouts in one pound batches so they don’t boil, as opposed to fry due to moisture content. 8. Place sprouts in oil and fry 3 to 4 minutes until leaves are crisp and brown (not too dark). 9. Strain from oil and place sprouts in a bowl and toss while seasoning with salt and pepper to taste. Then toss while adding a nice coating of Sweet Chilli Sauce. 10. Place them on plate or platter and garnish with crumbled peanuts.

Maple syrup clearly hits all the right markers for such exalted status: great nutrients, widespread appeal and uses, and an age-old mythology that gives the golden elixir a near high holy status in the shrine of fabulous flavours.

espite its appeal, there’s really nothing new about this distinctive pancake syrup that food influencers claim as the next up-and-coming contender. While tree sap has been boiled in kettles housed in Ontario and Quebec sugar shacks for centuries, its time may be about to happen in popular culture. So let’s do something patriotic and give it a hand as it works to out-muscle pumpkin spice as the next hottest flavour trend.
There’s nothing like the sweet taste and scent of maple syrup, but did you know it has dozens of other functions besides sweetening waffles and pancakes? Since you can substitute maple syrup for the sugar in most recipes, garden-variety roasted pork, salad dressings, cinnamon rolls and baked beans may be no more. Whether you can describe it or not, maple is clearly gaining ground as a budding old-is-newagain flavour. It’s been introduced in a wide range of food and drink products, from granola, yogurt and potato chips to liqueur, flavoured waters and beer. Made from the sap from red, sugar or black maple trees, the amber elixir is native to a relatively small geographic area in Canada and the US, known as the Maple Belt. It spans from the Midwestern United States through Ontario, Quebec and New England and into New Brunswick, Nova Scotia and Prince Edward Island. British Columbia, Manitoba and Saskatchewan also produce some syrup. Canada’s aboriginal peoples taught early European settlers how to harvest sap and boil it down to produce maple syrup. Canada produces the majority of the world’s syrup, with estimates running in the 70 to 85 per cent range. Maple syrup is an excellent source of manganese and a good source of zinc. If heart health is important to you, you might want to consider switching to maple syrup for all your sweet dietary needs. Zinc not only acts as an antioxidant, it also helps decrease the development of hardening and narrowing of the arteries. It’s also believed the presence of manganese helps with the levels of good cholesterol. The combination of these two trace minerals is also said to support the immune system. Other important nutrients include potassium, thiamine, calcium, iron, magnesium and riboflavin. There are a good number of local spots to tap into the sights, smells and tastes of Ontario’s maple season, with some beginning as early as late February and going well into April. Undeniably at the centre of our cultural identity, maple is a flavour whose time has definitely come. Although as true-blue Canadians we’ve always known it was worthy of wider attention, it will be interesting to watch it flourish. And who knows, it could even out-rival pumpkin spice as the next ubiquitous flavour, showing up, as pumpkin did, in all suitable and not-so-suitable places. Maple Glazed Trout with Root Vegetables Photo and recipe courtesy of Foodland Ontario Preparation Time: 10 minutes Roasting Time: 45 minutes Serves 6 3 large Ontario carrots, cut into 1-inch pieces 3 Ontario parsnips, cut into 1-inch pieces 2 Ontario leeks, cut into 1-inch pieces 1 Ontario red onion, cut into wedges 6 Ontario rainbow trout fillets, with skin (about 150 g each) Maple mixture: 1/2 cup Ontario maple syrup 1/4 cup Dijon mustard 1 tbsp red wine vinegar 1/2 tsp each salt and pepper 2 cloves Ontario garlic, minced On large parchment paper-lined rimmed baking sheet, spread carrots, parsnips, leeks and red onion in single layer. Maple mixture: In medium bowl, whisk together maple syrup, Dijon mustard, vinegar, salt, pepper and garlic. Reserve 1/4 cup of the maple mixture. Set aside. Spoon remaining maple mixture over vegetables; toss well to coat. Roast in 375 F oven for 30 minutes, stirring once. Remove from oven and place fillets, skin side down on top of vegetables. Brush reserved maple mixture over fillets letting any maple mixture run down onto vegetables. Return baking sheet to oven and roast until trout is cooked and vegetables are tender, about 15 minutes. 54

This easy-to-make crème brûlée is even more special with the addition of Ontario maple syrup. Preparation Time: 10 minutes Cooking Time: 35 minutes Chilling Time: 3 hours Serves 6 2 cups Ontario whipping cream 1/2 cup Ontario maple syrup 2 Ontario eggs 2 Ontario egg yolks 1 tbsp vanilla 1/4 cup packed brown sugar In small saucepan, heat cream and maple syrup over medium heat just until small bubbles begin to form around the edges; remove from heat. In large measuring cup, whisk eggs, egg yolks and vanilla until well blended. Gradually whisk hot cream mixture into egg mixture until blended. Divide among six 3/4-cup ramekins or custard cups. Set ramekins in shallow pan and place pan in oven. Pour in enough hot water into pan to come halfway up sides of ramekins. Bake in 350 F oven for 30 to 35 minutes or until edges are set but centres still jiggle when gently shaken. Carefully remove from water; let cool on rack. Cover and refrigerate for about 3 hours, until chilled and set, or for up to 2 days. Just before serving, place ramekins on rimmed baking sheet; blot top of custards with paper towel to dry. Sprinkle sugar evenly over custards. Broil as close to heat source as possible until sugar melts and bubbles, about 30 to 60 seconds. Let cool to harden.

A trip to Italy isn’t quite complete if you haven’t experienced its wine or even better, a tour of one of its many wine regions. In fact, there are 20 regions in total spanning the entire country (Tuscany, Piedmont and Veneto are arguably the most famous). Within these regions there are 73 DOCG status wines — the strictest and highest classification that an Italian wine can be awarded (think Amarone, Barolo, Chianti) — and at least 330 DOC status wines, which are no less prestigious, but the geographic zone might be a little bigger or the rules might be more relaxed. These are appellation zones, each with a set of laws governing its viticulture, permitted grape varieties and wine style. The region of Alto Adige is deep-rooted in its bi-cultural heritage (both Italian and German speaking) and is Italy’s northernmost wine region located between Austria and Switzerland. The area benefits from the best of both worlds — a perfect balance of brisk Alpine air and Mediterranean sun. Beautiful vineyards with a backdrop of snow-covered mountains are synonymous with high-quality wines of authentic varietal character. While it’s one of Italy’s smallest wine growing regions (less than one per cent of the country’s total production), Alto Adige is renowned for minerally, well-structured white wines, with white grape varieties grown in more than 60 per cent of the region’s vineyards. International varieties like pinot grigio, chardonnay, pinot blanc and sauvignon blanc thrive in this cooler-climate environment. 58

Bolgheri is a relatively young, yet prestigious DOC appellation, located within the Maremma on the Tuscan coast. Featuring sloping coastal vineyards close to the Tyrrhenian Sea, it’s named after a town in the north of the region. The Bordeaux trio goes into the majority of Bolgheri wines: cabernet franc, cabernet sauvignon and merlot, producing deeply coloured, supple yet age-worthy red wines. In fact, this is where the term “Super Tuscan” was born, and it’s home to some of the world’s most famous wines, namely Ornellaia, Masseto, Antinori’s Guado al Tasso, and of course, Sassicaia — the original Super Tuscan. Regarded as one of Italy’s flagship wines, Sassicaia was first released commercially in 1968 and steadily gained a reputation before exploding in popularity when Robert Parker scored the 1985 vintage a perfect 100 points. Like most wines made in the old world, Chianti derives its name not from the grape used to make the wine, which is sangiovese, but from the appellation where it is made. The Chianti zone, labeled as a DOCG, is also located in Tuscany and is well known for its sweeping landscapes, burning hot sun and its wealth of art and food history. For a Chianti to be a Chianti, it must be produced in one of the eight Chianti sub-zones and be made from at least 80 per cent sangiovese grapes. You can expect a wine that’s very earthy and rustic, has a smell and taste that’s reminiscent of cherries and strawberries, and is high in acidity, which makes it the perfect wine to pair with food, especially tomato-based dishes.

The city of Victoria, at the southern tip of Vancouver Island, is almost too cute to be true. Voted second best small city in the world by Conde Nast readers in 2017, it’s seemingly built on a human scale of pleasantries.

Indigenous cultures and modern artists have long praised the spiritual and physical beauty of the Pacific Coast. By happenstance and by design, Victoria has managed to develop into a place that’s almost Disneyesque. Pretty gardens boast Canada’s warmest climate despite ocean waters cold enough to chill the evening air at any time. Spring comes earlier here. able. Northward from the city, rolling hills, forest and rocky coasts are quickly reached by car. As expected, hiking, biking and kayaking are big in this green-conscious, fitness-oriented enclave. Good food is part of the lifestyle too. West Coast cuisine is synonymous with fresh ingredients prepared in a range of gastronomic styles, now joined by an exploding brewpub scene. Little Vic has developed its own vibe.AC-

COMMODATIONS Edwardian Fairmont Empress is the undeniable Queen Mum of hotels in town. Positioned at the center of Inner Harbour, it casts a regal gaze over the downtown. Sunsets from Q Bar and Restaurant are splendid. The hotel’s recent $60 million renovation continues a tradition of timeless elegance, including afternoon ‘Tea at the Empress,’ since 1908. Across the bay Inn at Laurel Point is a fine example of modern coastal design by Arthur Erickson. Like its high-end colleagues, The Oak Bay Beach Hotel on the eastern edge of Victoria overlooking Juan de Fuca Strait offers all the luxuries one would expect. Ocean views are spectacular from the hotel, pool area and adjacent Victoria Golf Club. Cuisine is regional and there’s a choice between fine dining, pub or café fare. 64

GASTRONOMY In addition to luxury hotel dining, Victoria serves up some fine independent fare. Afternoon tea at Butchart Gardens is elegantly served in the original Butchart family residence, surrounded by flowers and greenery. The Dining Room serves local foods paired with the best BC wines. Harbour Air has a Fly ‘N’ Dine flight from downtown that includes garden admission, dinner and a limo back to town. Less known despite its classic West Coast plantings of Garry Oaks and Japanese maples, the Abkhazi Garden and Teahouse is currently run by volunteers with the Land Conservancy of British Columbia. ‘A romantic garden setting,’ says Fodor’s. Two restaurants on the ‘A’ list would be the Agrius and Courtney. The Courtney Room in the Magnolia
Hotel is proud of its beverage list, meats and seafood, including a tasting menu. Agrius Restaurant supplements its fanatically organic ingredients with BC-favoured wines and beer plus custom breads and pastries. Meanwhile, in nearby Cowichan Valley and Saanich Peninsula, cideries, distilleries and wineries are chalking up awards. Small group tours are offered by several companies such as Luxury Wine Tours and Cheers Cowichan. Two hours north/northwest of Victoria at Merridale Cidery, Distillery & Eatery in Cobble Hill, brewer/distiller Rick Pipe, his lovely wife Janet and stepson Kevin are on a mission to bring the world back to sustainability. Ciders are made from heritage apples shaken from the trees, gaining awards for quality even in ancestral Britain. Try Rick’s 47-botanical gin or ciders made with hops. Future plans include a LEEDS distillery. Under the stars, if not the influence, luxury yurts are available for overnighting. Nearby, Unsworth Vineyards is cultivating 12 acres of grapes tested expressly for the climate and soil conditions of the Cowichan Valley. The oldest grapes are 2007 Marechal Foch, which have produced the winery’s award-winning Ovation. Sipping a Prosecco-style sparkling white Charme de L’Ile, I pronounced my taste buds satisfied. Owners Tim and Colleen Turyk have long family ties in the area and share a genuine concern for agricultural sustainability. An innovative partnership with local farmers assures fresh seasonal cuisine. High quality continues at Snowden House, a restored farm near Sydney, North Saanich, where Laura Waters has tapped 1,600 Douglas fir trees to make infused essences and vinegars sold in her gourmet gift shop. Laura also gives cooking lessons in the 1900s farmhouse that doubles as a B&B. Sea Cider Farm & Ciderhouse is an upscale

property with panoramic views of orchards and the sea. A flight of ciders paired with artisanal meats and cheeses make a picture-perfect picnic. Complimentary tours of the orchards and cider making process are available too. ACTIVITIES For a mix of sightseeing and shopping, Victoria expert Michele Davis pampers visitors with personal guided tours to eclectic shops and businesses offering unique and local products. Maintaining West Coast ‘green’ sensitivity, Eagle Wing Whale Watching Tours has led the way with carbon neutral tours offering sightings of orca whales. No guarantees, of course, as the whales don’t always check daily tour routes, but the odds are good. Slip into a kayak to view sea lions up close and the city skyline at your own pace. Ocean River Sports sells, rents, teaches and guides kayak tours under the banner of an eco-responsible pledge to help spread the word. Always free and invariably entertaining is a walk along the Inner Harbour and shoreline pathway to
Fishermen’s Wharf, past artists and vendors, ferries and floatplanes, patio restaurants, the châteaustyle Empress Hotel and 1897 Parliament Buildings topped with Captain George Vancouver, Royal British Columbia Museum and adjacent Thunderbird Park totem poles, plus throngs of other people soaking up the views. TRANSPORTATION For those wishing to arrive in style, North America’s first carbon-neutral airline, Harbour Air Seaplanes, has constant flights from the mainland. Deplane at the Inner Harbour airport terminal with its ecofriendly roof supporting 50 solar panels and a colony of 10,000 honey bees. Buy their honey in the coffee shop and step into downtown. Seaborne arrivals have two choices. BC Ferries offers daily direct service from Vancouver (actually, Taswassen, just south of the city). The modern fleet carries passengers and vehicles year-round among the Gulf Islands. Scanning the horizon on a sunny day it’s easy enough to immerse oneself in an Alex Colville print. Or just lie back and soak up the rays.
