As I type these words, I have never been happier to say, “Welcome to our SummerGoodLife!” After, what feels like the longest winter on record and a painfully slow start to spring, we are anxious to get outside and enjoy the best weather of the year in Simcoe County. This issue we share stories from our sister magazine Muskoka Life, including a vacation property transformation, and a dock on the move with popular furniture designer and co-owner of Andrew Richard Designs. For those planning to entertain on the dock or host a family barbeque, we feature Delicious Dips from chefs and foodies, complete with recipes. These are easy to prepare and guaranteed to transform the average appetizer into something special your guests will remember. Closer to home, we tour an Innisfil property with a backyard so spectacular you will never want to leave. This custom home’s eclectic style makes for interesting décor and offers lots of home design inspiration. In Violet Hill, we visit a local landmark, and speak to restaurateur Heidi Beufeldt about the success and future of Mrs. Mitchell’s. In addition, we interview homegrown talent and winner of So You Think You Can Dance Canada Jordan Clark to get a behind-the-scenes perspective of how her day-to-day life unfolds. Finally, we want to introduce you to a new friend and travel writer, Bart Card. Bart, a world traveller, brings personal and intimate tidbits back from some of the most interesting destinations. With three-and-a-half acres of land, there’s no need for a cottage in addition to this gorgeous residence. Patrick Anderson and Lisa Oerton, have it all within the convenience of their backyard. The resort-like backyard features a swimming pool with a cabana and a seating area beneath the shed. There are, of course, a couple lounge chairs to relax by the pool. When the family has guests over during the summer, the backyard is the perfect space to entertain, said Lisa Oerton. “We put up a volleyball net right over there,” she said, as she pointed to the large green space by the horseshoe pit. It was definitely the backyard that had Oerton sold when they first toured this home six years ago. Although it didn’t look as fabulous as it does now, the couple saw the potential of the land. The large pond, which sits within their property line, was enough for them to imagine their cottage-like year-round home. They’ve now built a small dock by this pond to hold their paddleboat. And the best part is they’re not the only ones who think their property is the perfect getaway. In previous years, they’ve actually had strangers picnic by their pond, not realizing it’s a private property. »

» Oerton does not blame them though. She compares her backyard to a campsite. With all the trees and greenery that surrounds the area, there’s enough space for her to put up a tent and have the outmost privacy, she said. But it’s not all about the warmer season. Throughout the colder months the family enjoys their outdoor hot tub on the multi-level deck. The handmade copper Tiki torches that they brought back from Hawaii create the perfect ambiance, adding a soothing and romantic feel to an evening outdoors. With glass baluster railings along the deck, they can enjoy the view from just about anywhere. The previous wood railings really closed off the space and obstructed the view. Going with glass was definitely a smart upgrade. “We can now really enjoy the view even from the kitchen,” said Oerton. That was another space where they did a lot of renovating. “We flipped the entire kitchen and the eating space around,” she said. Now the rustic dining table is by the window facing the backyard and the kitchen closer to the entrance. The rich-looking green Brazilian granite countertop complements the cherry wood cabinets. And the stainless steel top wet island breaks off the colours within the space. The heated flooring is great for bare feet during the colder months. Unlike newer homes, the main floor is not open-concept. This was a prerequisite for Oerton, who actually moved from an open-concept home. “If you have young kids it can get really noisy with the TV on all day,” she said. And although open-concepts are great for entertaining, you don’t entertain seven days a week, she added. Regardless if the space is open or closed, there are enough rooms to entertain a large number of guests. “When we have people over, we keep it all open and we’re all over the house,” she said. Both the family and dining rooms are separately closed off with vintage French glass doors. “The aged gold brass handles on these doors were just too rich looking to get rid of,” she said. They’ve also kept most of the luxurious crown molding on the ceiling to mix vintage with modern throughout the house. There’s definitely a sense of eclectic style in every room because Oerton likes a little bit of everything. She combines elements of different styles from a variety of periods and distinctive origins within every room. » GoodLifeMagazine.ca | 13

» Oerton collects many of these unique pieces through her travels and also from her business. She owns a furniture consignment store in Collingwood called Too Good To Be Through. “People often bring in pieces from different places with a variety of styles,” she said. Despite the differences, every piece always seems to complement the room. She does this by matching colour themes or prints. For example the classy damask print is evident in both the dining room and the master bedroom. In the dining room, the black and white damask printed curtain, combined with the straight lines in the rug, help balance a classic style with a modern touch. In the master bedroom, the faded grey damask patterned wallpaper on the focal wall brings true elegance into the room. It adds a noticeable stylishness. “I like to decorate with this print because I think it’s very rich looking and really in right now,” she said. That pattern goes back far in history. Damask is an old style of print that originated in silk fabrics in the city of Damascus during the thirteenth century. And it became popular within classy French interiors a century later. Today the pattern brings sophistication to modern elegant designs. The quatrefoil is another ancient symbol now commonly seen in modern elegant interiors. Oerton blends the four-leaf clover like shape in many parts of the house. The focal quatrefoilshaped mirror in the family room adds a classic touch to the modern vintage space. The same shape can be spotted again on the decorative pillows in the dining room, in the pattern on the night table in one of the two guest bedrooms, and within the rug in the basement. This is how Oerton links the theme around the house. She chose a shape that represents elegance to blend the style throughout. Elegance is visible within all the upgrades that the couple has done around the house. For instance, in the master bedroom, the ensuite bathroom was fully renovated. The large white soaker tub sits beneath the window. For privacy, California shutters are installed. The white marble countertop around the double sinks brightens up the bathroom and adds an exquisite look. On the other end of the bathroom, there’s a large hidden walk-in closet. That’s her husband’s closet. “It keeps our marriage happy, since I don’t have to see his mess,” she said with a chuckle.»

» Oerton got the other walk-in closet, the bigger one, of course. The three other bedrooms on the second floor each have a unique style. Their daughter’s, room has a French glamour taste to it. With a pink floral focal wall, the other three walls a light blush pink colour and a bedside lamp with dangling crystals, this room cannot be mistaken for anything but a girl’s room. In addition to the two guest rooms on the second floor, the walkout basement alone is a great in-law’s apartment. With a full kitchen, eating area with a fireplace and a three-piece bathroom with heated travertine marble flooring, any guest can feel comfortable in this space. When the family isn’t hosting anyone in the basement, the space is used as Oerton’s in-home office and the family’s gathering area. On the other side of the basement, there’s an enclosed room with fitness equipment and a workshop space in the corner. Right outside that room, there is a built-in all white corner bookshelf. » For example, all the closet doors are frosted glass. It’s a modern look that makes these closets much prettier than the typical white doors. Outside this beautiful home sits a mature neighbourhood. Anyone who follows the dance world will know of 21-yearold Jordan Clark. A resident of Tottenham, Clark won the So You Think You Can Dance Canada competition in 2011 and has been seizing the opportunities that arose from that win ever since. A cast member for The Next Step TV show, going into its second season on the Family Channel, and having just finished filming East Side Story, Clark shared a few of the day-to-day joys and experiences that have gotten her where she is today. 1. GOOD BEGINNINGS It sounds odd but I like to get ready for my day. I have a shower and a protein shake. By preparing myself, I go through a transformation from dead to alive. It excites me a little. I like that process of feeling like a new person and that each day is a new start. 2. AN EYE ON THE FUTURE I love going to the movies at least once a week. Eventually, my goal is to be on the big screen so it’s a great learning experience and not just to relax. I have so many favourites. I loved The Notebook but also The Avengers, especially the Hulk. He gets angry and blows up, and punches people. How cool is that? 3. A SOLID FOUNDATION My mom has always been my #1 supporter. When I was eight, I told her I wanted to be a professional dancer and she didn’t humour

me. She said “Okay. How do we do it?” It really takes a whole family to support this kind of [dream] with all the driving and costs. 4. A Teacher I wouldn’t be where I am today without Vlad Novitski. I started working with Vlad’s Dance Company in Richmond Hill when I was 13. He was like a father figure to me. I often spent more time with him at the studio than with my own family. But he also made me sit out if I didn’t do my homework. 5. A Portable Life My life is on my MacBook Pro. I love pictures of where I’ve been and videos to remind myself of what I’ve done. I use social media to keep in contact with a lot of family and friends because I’m so busy. I don’t like cellphones much but I do love instagram. The fact that you can see what people are doing at that exact moment is amazing. 6. The Go-To Chocolate chip cookies are my weakness. In Grade 12, I taught at two studios, choreographed at three, did my own dancing and was in school. I remember coming home every

night after dance to fresh baked cookies. They were my go to. I try to stay away from them now though. I like Pillsbury cookies with a nice glass of milk but any kind is good. 7. The Release I love hot yoga especially when I don’t have much time. I like to pack my schedule really tight so that I can barely move and then hot yoga is my release. I love to sweat and I love the sweating release. I drink lots of water and eat before. 8. The Passion I couldn’t live without dance. It’s my hobby not just my career. I’ve taken a lot of acting lessons this last year and that’s the direction I want to go. I will always dance but I would love to be on the big screen or on Broadway. I have so many goals now. 9. The Idol I love Beyoncé. The way she dances and the way she sings. It’s so sassy and so inspiring to me. She’s talented and I look up to her. Her middle name is Giselle (the name of the character that Clark plays on The Next Step.) So I think this was meant to be.

BY KATHERINE ELPHICK | PHOTOGRAPHY BY ELLIE KISTEMAKER Thirty-three years ago, Jim and Maureen Baufeldt converted a 19th century rural school house into Mrs. Mitchell’s Restaurant. Located in the heart of Violet Hill, the upscale dining establishment with historic charm quickly gained a strong reputation for serving authentic homemade fare to hungry diners. Today, the second generation continues the tradition with the Baufeldt’s daughter Heidi at the helm. Recently, this GoodLife reporter caught up with the busy 40-year-old restauranteur to chat about growing up in the restaurant business, lessons her parents taught her, and the secret to Mrs. Mitchell’s long-term success. »

Goodlife: You seem like a super energetic and hardworking person. While corresponding about this interview, I received an email from you at 2:30 am. Do you always work so late? Heidi Baufeldt: I don’t sleep much. And your description of me is pretty accurate. I started working at this restaurant at the age of seven, and that’s not an exaggeration. I’m the product of two workaholic parents who had a combination of seven successful businesses. Anything they tackled never failed, so it’s not in my DNA to fail (she laughs). Goodlife: Seven-years-old? In what capacity? Heidi Baufeldt: I began as a dishwasher and worked my way up. By age nine, I was in the dining room and have been here full time for the past 20 years.

Goodlife: Mrs. Mitchell’s has been in your family since 1980? Heidi Baufeldt: My parents had both been in the restaurant business before they met and when the schoolhouse property came available it was an opportunity they couldn’t pass up. Since my mom passed away in June 2011, I’ve become the main owner/proprietor. My dad still helps out, but he’s enjoying retirement. What led your family to Violet Hill? Heidi Baufeldt: My family moved from Toronto to Violet Hill in 1974. My father was a restoration architect and designer with a custom millwork shop in Toronto. They wanted to find a historic building in the country to renovate and raise their two children. My father renovated the old church in Violet Hill into a spectacular historic home which has been featured in many magazines. At the same time, my mother started a small sewing business out of

their home which led to employ many of the local ladies in Alliston, Shelburne and Orangeville. This business grew too large for the house and my parents purchased the Orange Lodge, which was the beginning of “Granny Taught Us How.” They grew to operate several businesses overtime (seven businesses in total) including “Canadian Folk Art” which was the largest supplier of hand-crafted folk art in Canada. Goodlife: Was Mrs. Mitchell the last teacher to work at the schoolhouse before it was restored? Heidi Baufeldt: That’s right. When my parents purchased the schoolhouse in 1980 they learned about its rich history from Mrs. Mitchell herself. Built in 1889, Mulmur Township School Section 2 operated for 79 years before closing in 1968. Mrs. Mitchell was the school’s last and longest-serving teacher. To this day, we still meet many of the students who attended school here and were taught by Mrs. Mitchell.

Goodlife: How would you describe the cuisine at Mrs. Mitchell’s? Judging from the menu it looks like authentic homemade fare. Heidi Baufeldt: That’s a very apt description. I feel that we serve comfort food with an upscale flair. Our cooking philosophy is to keep things simple, fresh, hearty and HOT! Our clientele wants a menu that they can understand. We have always been known to have plentiful portions which suits the surroundings of both the building and the location. I should also mention that we have a carefully curated wine list. Oenophiles are very happy here! THE EVERGREEN STORE

Goodlife: What are your signature menu items? Heidi Baufeldt: For lunch it’s our reuben sandwich, which became famous very quickly!Our baked French onion soup served with a small crusty loaf of bread and a cheddar and port wine spread is also super popular. Finally, diners simply love our large green salad with berries, goat cheese, pecans and grilled chicken. Goodlife: Let’s take a break from food and talk about decor. Your website says: “you’ll feel as though you’re taking a vacation from the 21st century as you dine at Mrs. Mitchell’s.” Can you expand upon that? Heidi Baufeldt: Our decor was inspired by Colonial Williamsburg, a style that my parents always admired and picked up as they traveled through New England and Pennsylvania, which was a regular vacation destination for our family back then. My father’s incredible talent and my mother’s keen eye allowed them to replicate what they loved about Williamsburg and transform it here in Violet Hill. During the restaurant’s early years, our wait staff used to dress in period costume. Thank goodness that’s over! Mrs. Mitchell’s decor takes you back to a simpler time, with the open-hearth fireplace, natural wood floors, beams and rail, pewter serving ware and other details that you just don’t see anymore. But at the same time, it’s carried off without seeming old and stale. Goodlife: I see you have some contemporary decor. Heidi Baufeldt: My goal is to respect the past, while keeping things fresh. We change displays seasonally and complement with new decor elements from our store where appropriate. We’ve even updated our menu slightly by introducing some lighter fare. Goodlife: For someone new to Mrs. Mitchell’s what would you recommend for a three course dinner? Heidi Baufeldt: Start with the mushroom and asparagus risotto, followed by the roast duckling. For dessert, finish your meal off with the apple and raisin bread pudding with rum sauce. You’ll actually get a four course dinner as every entree comes with a salad course, as well. Ask any of our customers and they’ll tell you that you really can’t go wrong. It depends on your taste and what you feel like. We always have special dishes along with the menu, which feature seasonal items or fresh inspirations from the kitchen. Goodlife: I love bread pudding! Heidi Baufeldt: We’re also famous for warm sticky toffee pudding with vanilla bean ice cream. And we were doing this long before it

became trendy. Years ago, we had a Scottish staff member who generously handed over this recipe. It comes from a castle in Scotland, and people tell us -- hands down we offer the most authentic sticky toffee pudding around!Goodlife: What about weddings? Heidi Baufeldt: We love weddings and private parties. Anyone interested in an intimate country wedding, a garden ceremony and fullservice reception for very reasonable package rates, should definitely call us! We are home to some spectacular gardens (including a pond with swans) which create a perfect back drop for the ceremony and photos. Mrs. Mitchell’s is licensed for a maximum of 75 guests. Goodlife: Tell me about afternoon tea and weekend brunch. Heidi Baufeldt: Afternoon tea is a wonderful tradition that we’ve kept alive over the years. It’s the perfect option for a light, yet indulgent snack in the afternoon. Our afternoon tea caters to folks in need of a little refueling as they pass through on route to the cottage; or to those wanting to meet a friend or colleague but don’t want the heft of a full meal. We serve a basket of hot drop biscuits and sweet potato muffins with whipped butter, whipped cream and strawberry preserves, and of course, tea or coffee. As for our weekend brunch? It’s very popular! We serve up various lunch and breakfast options, including my favourite -- cranberry and raisin bread French toast. Goodlife: How do you cater to diners with special dietary needs or restrictions? Heidi Baufeldt: We are one of the most glutenfree places around because we don’t use any flour to thicken our sauces or soups. Everything is made from scratch. As for vegetarians? Sure we can offer pasta and so on, but we’d rather serve up something more memorable. We suggest calling our chef a few days in advance so the kitchen can prepare something special.

muLmur artist caPtures chanGinG LanDscaPes As an artist in tune with his surroundings, the rural landscape of Dufferin and Simcoe counties has provided Peter Adams with a lot of subject matter over the years. From rolling country roads to neglected barns to snow-covered fields, the Mulmur-based oil painter has been capturing the changing local scenery for more than a decade. Adams was born in Scotland, but has spent most of his life in Canada. He started working with oils in high school and has painted part time for more than 20 years. About five years ago he started painting fulltime, and up until recently had a studio Collingwood (he closed it to open a studio at his home south of Creemore). “My work has always represented a response to my immediate surroundings. Since moving to Mulmur Township 15 years ago, my work has focused on the beautiful landscape of Dufferin and Simcoe counties, but I’ve focused much attention on the changes that are happening to this rural landscape,” Adams says. “It’s always been about responding to what I experience in my own backyard. Similarly, my kids keep creeping into my paintings, and often provide an intriguing contrast to the changing 30 | GoodLife South Simcoe Edition - Summer 2013

landscape in the background.” Keeping a keen eye on the changing scenery, the Melancthon mega quarry proposal sparked a series of paintings for the environmentally conscious artist. While the company behind the 2,300acre limestone quarry proposal eventually withdrew its plans last year, the idea of a mega quarry on prime agricultural land had already planted the seed for Adams’ Earth Scar Series, which focuses on the di-

amond mines of Canada, Russia and South Africa. “Although this represents a departure in subject matter for me, the series is the result of research conducted in response to the proposed mega quarry of nearby Melancthon Township. I’m still thinking about changes to the local landscape in this series, just stepping back a bit and considering the larger industry of resource extraction,” Adams says. The Red River Series, which gets its name from Bob Dylan’s Sunset On Lot 31 love song the River Shore, is his most recent and focuses on the Yangtze River in China. Last year its waters ran red, inspiring Adams to continue exploring the “ecological discourse” of his Earth Scar Series. “I was inspired by a Maclean’s article about China’s Yangtze River turning bright red last September. I have yet to read any official explanation for this change, but it has provided an intriguing (and symbolic) visual for how humans interact with this planet,” he says, adding there are more paintings to come in this series. As Adams pushes himself to explore new subject matter, he is also pushing his boundaries with the mediums he’s putting on the canvas. “In the last year or two, I have started developing my own mixed-media technique, using acrylic washes, paint markers, oil sticks, as well as the oil paints I have always used,” he says. Adams work is getting attention locally. His work has been featured at galleries in Creemore, Collingwood, the Dufferin County Museum and Archives, and more. In 2012 he won the Best of Show in the South Simcoe Arts Council’s Juried Art Show. That accolade led to an exhibit at the Gibson Centre in Alliston entitled Wetlands and Waterways. Growing up in the ’70s, a popular homemade dip consisted of a package of dried onion soup mixed with sour cream and mayonnaise. Served up with some ridged potato chips, this creamy delight held centre stage at every party. While this classic recipe remains a perennial favourite for many, today’s dips have evolved into gourmet masterpieces bursting with flavour and colour. From creamy guacamole and zesty salsa to a fresh batch of hummus or roasted squash dip, it’s easy to find a recipe to dive into. »

eGGPLant caPonata This delectable dip is courtesy of Angela Pidutti of Cravings Fine Food Market and Catering. “This recipe is one of my favourites because it’s so versatile,” says the Barrie chef. Along with spreading the caponata on crackers, pita chips or crostini, this dip has plenty of culinary options. Try it as a tasty topping for goat cheese, grilled fish, or pizza. “You can even stuff a chicken breast with it,” says Pidutti.

inGreDients: 1 large eggplant

1 red pepper salt & pepper to taste 2 tbsps canola oil 2 garlic cloves, diced 1 tsp capers 1 tbsp black olives, diced 1 tsp granulated sugar 1 tbsp balsamic vinegar 1 tsp red wine vinegar

PreParation: Preheat oven to 350F. Dice the eggplant, onion and red pepper into small pieces, and place in a medium-sized bowl. Toss with salt, pepper and oil. Place a piece of parchment paper on a cookie sheet. Spread eggplant mixture in one layer over the parchment paper. Roast for 20 to 25 minutes, or until tender. Meanwhile, in a medium-sized pot, stir together garlic, capers, black olives, sugar, balsamic vinegar, and red wine vinegar. Over low-heat, while stirring occasionally, cook for 20 minutes to reduce mixture. Stir together both mixtures and place in a refrigerator to cool for at least four hours. Makes about 2 cups. Note: after refrigeration, bring the caponata to room temperature before serving.

“Giving guests the option to double dip is something we love to offer” » “When entertaining, you can’t go wrong with a great dip,” says Angela Pidutti of Cravings Fine Food Market and Catering in Barrie. “They’re perfect for grazing over during conversation.” When serving dips, the local foodie recommends offering both dairy and non-dairy based varieties. “That way you’ll appeal to everyone’s tastes and dietary needs.” Homemade dips are packed with flavour, easy to make and often lower in fat and calories. “Many of those supermarket dips taste great, but most are just loaded with fat,” says Beth Hunt of The Globe Restaurant in Rosemont. “When you look at the calories (in those supermarket dips) it’s just mindblowing.” The good news is that healthy dips are easy to make. “Use low-fat yogurt, or lowfat sour cream for any cream-based dips,” suggests Hunt. Another tip includes using puréed roasted vegetables as the key ingredient. Think pumpkin, squash, eggplant, zucchini, peppers and so on. Chickpeas, beans, tomatoes and avocados also deserve special mention. Don’t forget, dip diving requires an edible paring and the choices are numerous–toasted pita bread, chips, crackers, raw veggies, fruit, crostini, or breadsticks – are just some of the possibilities. “Be sure to offer glutenfree options such as rice or polenta crackers” suggests Pidutti. Homemade dippers should also be considered, advises Hunt. And she rhymes off this easy recipe for readers to try: thinly slice a baguette, brush lightly with balsamic vinegar, place slices on a parchment paperlined baking sheet, and then put in the oven at 325F for 15 minutes. Once the time is up, turn off the oven -- leaving the sliced bread inside to cool fully. “So easy, yet so delicious,” says the Rosemont chef. You can use the same baking instructions (just omit the balsamic vinegar) for various other homemade dippers, suggests Hunt. “Try banana bread, raisin bread, hot cross

buns, bagels, cranberry bread– any of them would work.” As for serving suggestions? “Presentation is a critical component of making food appealing to your guests,” says Julie Carter of Men with Knives Catering in Collingwood. Here are a few things to keep in mind. “Use your ingredients as much as possible,” suggests Carter. “There’s an old adage: anything you put on a plate or platter should be edible.” As such, take advantage of fruit, bread and vegetables to create your serving vessels. “A few of our favourites include using multiple hollowed out peppers (red, yellow, orange and green) for herb vegetable dip and serving up fruit kebabs with a Kahlua yogurt dip in half of a honeydew melon,” says the Collingwood Caterer. “Antje Pahmeier, an artisan baker from Meaford, bakes a variety of breads which can also be hollowed out to make great vessels for warm dips.” Because different sized bowls and vessels line the shelves of Men with Knives Catering, they pick and choose the size and shape to match the food and dips being offered. For example, when serving skewered foods, they opt for long white olive dishes so the food can make as much contact with the dip as possible. “Giving guests the option to double dip is something we love to offer, as well,” says Carter. “To do so, we suggest serving your dip in individual shot glasses, small ceramic vessels or Mason jars. This works great when serving shrimp, flatbreads and vegetables.” With all this talk about dips, here are three recipes guaranteed to get the party started. Interestingly, none of these dips include dried onion soup mix, sour cream or even mayonnaise. Enjoy!

• Gourmet@Home • ROASTED SQUASH HUMMUS “Hummus isn’t just about chick peas anymore,” says Beth Hunt of the Globe Restaurant in Rosemont, who provided this recipe. Serve this tasty dip with toasted pita, vegetables, tortilla chips, or with toasted homemade toasted crostini or other homemade dippers (see recipe ideas in text of story).

INGREDIENTS: 1 medium butternut squash, halved and seeded 1 tsp olive oil (for brushing on squash) 1 Tbsp brown sugar 3 Tbsp tahini 3 Tbsp lime juice 1 tsp ground cumin 2 tsp olive oil 1 tsp salt (or to taste) 1⁄8

tsp red pepper chili

3 cloves garlic, chopped 3 Tbsp chopped fresh flat leaf parsley 2 Tbsp toasted pumpkin seed kernels, toasted (optional) extra salt and pepper for seasoning

PREPARATION: Preheat oven to 400F. Place squash halves (flesh side up) on parchment paper-lined baking sheet. Using a pastry brush, brush olive oil onto the squash. Sprinkle the squash with salt and pepper. Roast in the oven for about 35 to 40 minutes, or until flesh is fork tender. Remove squash from oven and scoop out the flesh. Place squash and brown sugar in a food processor, or blender and process until smooth. Add tahini, lime juice, cumin, olive oil, salt, red pepper chili and garlic to the squash mixture in the food processor or blender and process until well combined. Add parsley; pulse until blended. Adjust seasoning if necessary. Place in refrigerator to cool. Place hummus in a serving bowl and sprinkle with pumpkin seed kernels. Makes about 21⁄2 cups.

Preheat oven to 350F. Line a baking sheet with parchment paper. Lightly oil the parchment paper. Using a pastry brush, lightly coat the top side of each tortilla. Stack the tortillas oiled side up in an even pile. Using a pizza cutter or serrated knife, cut the stack into eighths (start with cutting it in half, then into quarters, then into eighths). Separate, and then arrange the individual triangular pieces oiled side up onto the baking sheet. Bake each tray for about 10 minutes, or until the chips are crispy and just beginning to brown lightly. The chips cook very quickly, so watch closely to prevent over-baking or burning. Remove from oven. Using a spatula, remove chips and place onto a large plate lined with paper towel (to absorb any excess oil). Repeat baking process, until all chips are cooked. Season to taste with sea salt.

Having returned from Costa Rica just days before writing this story, adding a guacamole recipe was a must. After all, avocado trees were simply everywhere in this Central American country. While vacationing, I happily chowed down on this creamy appetizer at least once a day. There are several secrets to making perfect guacamole. First, ripe avocados are essential. Secondly, fresh limes and cilantro must make the ingredient list. In other words, resist any ideas of using bottled juice or dried herbs. Finally, the consistency of the dip should be slightly chunky rather than perfectly smooth. If you want to really impress guests, serve with a batch of homemade tortilla chips. They’re easy to make and super tasty. While you can deepfry these chips, I opted to bake them (see recipe on previous page).

PREPARATION: Halve the avocados, remove the pits, and scoop the flesh into a medium bowl. Stir in the lime juice, salt, cumin, onion and jalapeño chile. Mash all ingredients together with a potato masher (or a fork), until well combined but still slightly chunky. Stir in the tomatoes, cilantro and garlic. Adjust seasonings to taste, if necessary. Guacamole can be covered with plastic wrap, pressed right on the surface on the dip, and refrigerated up to 1 day. Remove the plastic wrap at the last moment, before serving. Makes about 2 cups.

“My husband said ‘I can’t fix land, but I can always fix a cottage,’” Barbara Desmond had a pretty good idea of what she wanted in a cottage. She looked at the MLS listing agent Thelma Jarvis had sent and knew this wasn’t it. Desmond runs through the list of things that were wrong with the place. It faced north. It was sheltered behind Rankin Island, where they wanted open water. It was more money than she had planned to spend. And above all, it was visually unappealing in a way that only an unreconstructed 1970s era design can be. But she and her husband Bob were trying to get a better idea of what was available as they planned their move to Muskoka from Peterborough’s Stoney Lake, so they agreed to see the place. And what they saw served as a lesson. “The MLS listing doesn’t show you everything,” Barbara said. As they toured the property on the west side of Lake Muskoka, they could see that it did have lots to recommend it: deep, deep water right off the rocks on one side of the point – so deep the Segwun cruises within hailing distance every day – and a shallow wading area on the other; views of open water to the east and a dappled view to the west; multiple sitting areas includ42 | GoodLife South Simcoe Edition - Summer 2013

ing a deck atop a boathouse that catches the sun throughout the day. “My husband said ‘I can’t fix land, but I can always fix a cottage,’” Barbara said. But oh, that cottage! Not that there was anything seriously wrong with it – there were no avocado bathtubs, gold shag, embossed wallpaper, or any of the other usual horrors of the ’70s. It’s just that so many things weren’t really right about it. It did have a few features to recommend it, though, including an astonishing eight bedrooms – most of them small, but perfect for a couple who frequently entertain members of their large family. So when the price of the cottage came down, the couple made an offer. The initial plan was to spruce up the cottage, apply a few coats of paint to the dark brown panelling and the faded kitchen cupboards. But a closer look at the cupboards revealed an elaborate network of mouse tunnels, which explained the abundant droppings. Pulling out the cupboards showed that the floor was riddled with critter holes. That led to thoughts of expanding the kitchen, and before long work was afoot to redo the entire cottage. »

» While some would have considered gutting or even razing the cottage and starting again, Barbara and Bob decided to take a less aggressive approach. The bones of the cottage would remain intact; the skin, though, would be heavily overhauled. The only structural change was the kitchen expansion, which involved losing an adjacent bedroom (with eight of them, the couple felt they could probably afford to lose one). Barbara quickly learned to appreciate the dedication shown by contractor Bruce Boyes from Northern Custom Homes and his crew. For two solid weeks the workers were clad in protective gear as they pulled down ceiling tiles and opened up walls, each swing of the wrecking bar revealing a potent mix of old insulation, dust, animal droppings and skeletal remains. Some of the discoveries were more surprising, like the day they learned that the pipe connecting the septic system to the tank had ruptured long ago, and everything had been just filtering into the soil. “My husband had said ‘it smells bad at that end of the cottage,’” Barbara said. For fixes like that, safety and security were paramount, just as they had been when they had decided to replace the deck railing (or, in the case of one deck, to build a deck railing where there was none at all. The view was fabulous, Barbara said, but it wasn’t exactly child-friendly). For the same reason, the couple decided to replace the entire electrical system even though parts of it were perfectly adequate. “Secure and safe were the key words,” Barbara said. Other fixes were more a matter of taste. The two fireplaces in the cottage were replaced, for example. One was suffering from a bad case of the ’70s, with blue tiles in the hearth and a stucco surround. The other, though, was classic Muskoka flagstone; while it looked acceptable, the scale was all wrong for the room, with a massive hearth that occupied an entire living room wall. “I know some people would say ‘why would you take that out?’” Barbara said, “it had to go.” As removals proceeded, Barbara began to make plans for what would be installed. Her first stop was the magazine rack, where she bought subscriptions to eight different home design magazines. As each issue arrived, she would flip through and cut out images of » » elements she liked, making notes on them and pasting them into a binder. To save money on the renovation, she bought stock items where possible. Sometimes it just took a simple step to personalize them: the stock kitchen cabinets on the island got a custom look thanks to a back panel made from dimensional lumber. The idea came from another magazine article and was easily built by her contractor. Of course, there were also a few splurges along the way. The kitchen countertops are polished quartz. A number of the rooms have lighting from multiple directions. An upstairs den (Bob’s “man cave” is what Barbara calls it) has abundant windows as well as a skylight, flooding the room with light. Even the staircase is well lit, thanks to another skylight. The skylights are possible thanks to the cottage’s mansard roof. It’s another feature Barbara didn’t care for when she first saw the building, a design feature that had its heyday in the 1970s but has faded in popularity since. It didn’t help that the cedar shakes were in dire condition, with so much moss that the couple was sure they would need to be replaced. A contractor offered another suggestion: brushing them all with a solution of hydrogen peroxide and washing it off a couple of weeks later. The result was remarkable, and at less than $1,500, a fraction of the cost of replacement. That combination of innovation and vision, a willingness to try something and an ability to see past the flaws, has paid off for the Desmonds. A cottage they once dismissed has been transformed into a place they love, and love to share.

Throughout Muskoka, the scene at dockside is the same. Motorboats fill with passengers while some brave soul casts off the mooring lines and jumps gingerly into the craft. The boat pulls away from the dock, the motor roars to life and the group is but a speck and a receding wake in a matter of seconds.

» They do things a little differently on Walker Lake, a tranquil oasis just north of Huntsville. Here, the passengers fill the dock and the dock pulls away. Walker Lake is a restricted speed lake, with traffic limited to 12 kilometres per hour. For years, many Walker Lake cottagers have followed the limit by accessorizing a floating dock with a low power motor to create the woody version of a pontoon boat. Add a few benches, life-jackets and maybe a pirate flag and you’re good to go. Then Andrew Bockner, an outdoor furniture designer and outdoors enthusiast, arrived on the lake and kicked the dock/boat phenomena up a notch. He saw the spartan furnishings on docks gliding over the waters and envisioned a comfortably furnished outdoor living room instead. He contacted Pipefusion in Huntsville to construct the dock, picked out some suitably cosy pieces from his collection and made it so. “When you have a lot of people at a cottage on Walker Lake, your choices are to have a pontoon boat or a fun watercraft,” said Bockner, coowner with brother Richard of Andrew Richard Designs (ARD), a company whose luxurious outdoor designs are found in international ho-

tels, restaurants and private residences. “I chose to make my dock a floating living room with my own furniture. People on this lake had motorized docks when I got here. I thought it was a great idea, but most were very utilitarian. The only thing I did was see the use in a different way.” Bockner’s choice resulted in an impressive new watercraft. His 20- by 30-foot wooden dock is outfitted, appropriately, in ARD’s Tranquility furniture collection. Guests gravitate to the Tranquility bed – an extended double lounger upholstered in broad green and white stripes, piled with pillows and finished in woven Solartex fabric. The bed was one of Bockner’s first designs and is now a signature piece. An equally welcoming full-length sofa faces the bed, and both are sheltered from the summer sun by a generous brown canvas umbrella. Bockner’s own Muskoka chair and ottoman, designed with slimmer arms and built of smooth, durable teak, gives the driver comfortable seating beside the 5-hp Mercury. Another lounge chair and assorted side tables complete the “room.” Surrounding it all is a wooden railing with one entryway for passengers and another with retractable ladder for swimmers.

The furniture’s configuration makes the dock an attractive gathering place for conversation, meals, sunning and drinks at sunset when moored, and a safe, comfortable sightseeing vehicle for all ages when under power. The new living room motoring around the lake also influenced Bockner’s fellow cottagers. “I have to say that people on the lake have been inspired and have taken their docks to a whole new level,” Bockner says with a smile. As an added bonus, neither the dock nor the furniture needs to be brought inside for the winter. But that season is far from Bockner’s mind as he looks forward to cottage time this summer with his wife Melissa and two-year-old daughter Avery. The family rented the cottage for two years before buying the property last year. Walker Lake’s high percentage of permanent residents, motorboat speed restriction and proximity to Algonquin Park attracted them to the scenic location. “It’s peaceful, tranquil and quiet,” he says. “My daughter absolutely loves it. This will be her third summer up here. She’s a great swimmer and she loves going out for a ride on the dock. We have a great time – I love it.” Bockner, who is known as a specialist when it comes to entertaining guests at events, offers this advice for enjoying your non-motorized dock with your visitors. Keep things casual and comfortable. Don’t stress when preparing for your guests – be ready to relax and enjoy. And don’t overload your dock. “I don’t like cluttering the space,” he says.» “On a smaller dock, about 8 by 20, a few Muskoka chairs look nice or a couple of chaise lounges with some water toys and plastic mattresses. If you have a large dock or deck, then, of course, bring in a sectional couch, a bed. We have furnished a lot of decks in Muskoka, and you can have a whole outdoor living room and dining room. People even ask for outdoor yoga sections now.” The designer plans to spend as much time as possible in the great outdoors this summer, including lots of leisurely cruises with friends and family aboard his unique, and inspiring, dock. “My job is to inspire people to live outdoors any way they like and I’m more than happy to do so,” says Bockner. “I’m all about living life to the fullest and enjoying it however you choose.”

» Everyone has seen the tourism ads featuring beautiful friendly people, blue skies, vast open spaces and a unique abundance of flora and fauna. Usually accompanied by a theme song featuring at least one didgeridoo, most people would think these ads look just a little too good to be true. When it comes to Australia, I can honestly say, they are completely true. Known for its uniqueness; a number of tag lines usually accompany conversation about this dry and vast country. Those tag lines go something like this: all of the world’s most poisonous snakes are Australian, it is the only country that is also a continent, it is the least populous nation (per mile) in the world, there are more than 150 million sheep in Australia and only some 20 million people and last but not least, Australia is the fourth largest exporter of wine in the world. As a young man I lived in Australia for four years, helping to build the railroad that now connects Sydney to Perth. Since then I have been lucky enough to visit numerous times. Despite all of the time that I have spent in this magical country, I have still not had my fill, and have certainly not seen all there is to see.

Unless you are a backpacker with months to spare, Australia is much too vast to tackle all in one trip. On my most recent adventure I had the pleasure of visiting South Australia, exploring the Great Ocean Road, Melbourne and the wineries that are speckled in between. Planning a trip to Australia can sometimes be overwhelming. Most people dream of exploring this fantastic destination, but are scared off by the flight or the sheer size of the country itself. The first decision that must be made is where to go. Once that has been decided the question becomes how do I get there? There are several ways to get to Australia. On this particular trip I took American Airlines from Toronto to New York then Qantas to Los Angeles. From there it is a direct flight to Sydney then on to Melbourne. This time I was lucky enough to be in business class. Although getting there can be relatively harrowing, in the end it is always worth the trip. I arrived in Melbourne and checked in to Sofitel Melbourne. After such a long trip I took the rest of the day to catch up on some much needed sleep. The next morning I made my way to Federation Square for a walking tour of

» Melbourne. Known as one of the world’s most liveable cities, Melbourne has a unique culture of fashion, food, sport and entertainment. With a deep history and heritage, the arts are celebrated through a plethora of museums and galleries. If walking isn’t your thing, Real Melbourne Bike Tours offers bike tours in and around the city. In a few hours you can see more than most see in days. From a bike you can soak up the atmosphere and explore the bohemian backstreets, lively markets cafes, hidden arcades, bike paths and bluestone laneways. After a few days in Melbourne, we were off to start the second leg of our tour. Melbourne is the gateway to regional Victoria, which offers myriad of opportunities in a very compact and accessible area. Whether its deserts, alpine ski resorts, mighty rivers, great lakes, wildlife, or the unparalleled spectacle and beauty of the world renowned Great Ocean Road, Victoria is all about quality experiences. Many of the state’s regional attractions, including valleys of vineyards and international surf beaches, are less than a two-hour drive from Melbourne. But with more time to spare, the entire state offers a variety of scenic routes ideal for self-drive and personalized tours. In the morning we packed up our gear and headed to the Mornington Peninsula for a horseback winery tour. What better way to enjoy the scenery than on horseback. The day was spectacular. We rode through the beautiful vineyard region of Red Hill, stopping only to taste some of Australia’s finest wines and enjoy a gourmet BBQ by the lake. The day was complete when we arrived at Peninsula Hot Springs for a well-deserved soak. Our next stop was a walking tour of the Twelve Apostles. Much needed after hours in the saddle the day before. As one of Australia’s most recognizable natural features, the Twelve Apostles were formed by harsh weather conditions from the Southern Ocean gradually eroding the soft limestone below and forming caves in the cliffs. Eventually these caves became arches which in turn collapsed; leaving rock stacks that measure up to 45 metres in height. The site was known as the Sow and Piglets until 1922 and was renamed the Twelve Apostles for tourism purposes, even though there have only ever been nine stacks. From the Twelve Apostles we boarded a helicopter for a tour over the Great Ocean Road. Listed as an Australian National Heritage site, the

243 kilometre stretch of road along the southeastern coast of Australia connects the Victorian cities of Torquay and Warrnambool. The road was built by soldiers between 1919 and 1932, and is the world’s largest war memorial; dedicated to casualties of the First World War. It is an important tourist attraction in the region, which winds through varying terrain alongside the coast, and provides access to several prominent landmarks. The awe-inspiring flight over some of Australia’s most beautiful scenery really provides a unique perspective and is highly recommended for anyone hoping to truly experience this vast landscape. After a few wonderful days of walking, biking, riding and flying, I was certainly ready for the next portion of the trip: wineries in the Adelaide Hills. Driving from Melbourne to Adelaide, we stopped for lunch at the Royal Mail Hotel in Dunkeld and I was not disappointed. The Royal Mail Hotel is a unique rural destination set among native gardens and fruit orchards with stunning views of the Southern Gramians Ranges. Accommodation, an award winning restaurant and wine cellar, café, public bar, meeting and conference facilities and the historic Mt. Sturgeon Estate and homestead are all available to explore and enjoy. That night we checked into the Baroka Downs, in Halls Gap, located approximately halfway between Melbourne and Adelaide. The Boroka Downs offers truly five star selfcontained accommodations. There are just five architecturally designed luxurious and exclusive residences with sweeping views of the surrounding nature. In the morning I opened the curtains and was greeted by a troop of kangaroos. You can’t get much more Australian than that. After a few more days in the Adelaide Hills we made our way into the city. Checking in to the Adelaide Hilton, I spent the afternoon exploring the Adelaide Central Market. Buzzing with sounds, colours and wondrous smells the Central Market is truly a destination for food lovers. It is no secret that I love outdoor markets and having visited some of the world’s best, Adelaide did not disappoint. Offering not only fresh fruit and vegetables, the market also offers one of the largest ranges of meat and fish along with the gourmet specialties. Our stay in Adelaide was short-lived. The next day we were back on the road-headed for Kingsford Homestead, a stunning 1856

With quality food and wine, an abundance of wildlife and spectacular postcard scenery around every bend, the Barossa is the heart of Australia’s wine industry, the home to gourmet delights and an area blessed with a rich cultural heritage. At just over an hour’s drive north of Adelaide, the Barossa thrives on a living heritage, food markets, quality wines, old preserved buildings, and a wealth of culinary pleasures. There is a strong sense of cultural identity and community spirit, which adds to the appeal of the region. While working in the outback as a young man, we drank a lot of wine. I vividly remember the mornings when we would wake up in the heat and regret all the cheap wine we had consumed the night before. The smell alone would kill any flies that landed on us. Needless to say I did not have the chance, in my younger days, to visit the Barossa or any of the wineries it is now famous for; luckily that all changed on this trip. Once in the Barossa, we were lucky enough to be accompanied by John Baldwin, a wine specialist tour guide and owner of Barossa Daimler Tours. John’s extensive local knowledge, uncanny ability to recognize individual tastes, 64 | GoodLife South Simcoe Edition - Summer 2013

and restored 1957 Bentley made for a fantastic experience that I will not soon forget. We spent the morning visiting Yalumba Wines for a tour and wine tasting. Samuel Smith founded Yalumba in 1849 after purchasing a 30-acre parcel of land. Six generations and more than 150 years later Yalumba, Australia’s oldest family-owned winery, remains one of the most popular wineries with tourists because of its beautiful landscaped gardens and the winery’s Clock Tower (circa 1906). In the afternoon, we made our way to Penfolds for a Make Your Own Blend Experience. Acting as winemaker for an hour we tried our hands at the craft. A fascinating and satisfying experience, blending to suit your own personal taste, and even more fulfilling to take the wine home. After a fantastic day in the wineries we were off again, this time to Kangaroo Island. On arrival we were met by a representative from Exceptional Kangaroo Island Tours who then accompanied us on a full day of touring. Kangaroo Island is one of Australia’s great natural wonders, as well as one of its best, and most surprising, tourism destinations. It’s a wildlife sanctuary without fences, where visitors can see Australian animals in their natural habitat. Around 30 per cent of the island is protected as parks, and its 541-kilometre coastline includes

excellent swimming and surfing beaches, a spot where visitors can walk among sea lions, spectacular cliffs and amazing rock formations such as Remarkable Rocks. The island also has a growing reputation as a food and wine region, renowned especially for its honey, eucalyptus oil and sheep dairy farms. While on Kangaroo Island, we stayed at the Southern Ocean Lodge. Designed to float amongst the dramatic coastal beauty of the island’s south west coast, the world-class lodge offers unrivalled luxury in a uniquely Australian setting. Organic-luxe suites feature lavish sleeping areas, sunken lounge, glass walled ensuite and breathtaking ocean vistas. Planning a trip to Australia can at first be overwhelming and somewhat ominous. The travel time and sheer size of this great nation is often all it takes to dissuade perspective visitors. If I have any advice it is to identify what you want to do, research where to do it and then focus on one region or location. This will allow you to fully experience the people, culture and feel of a place, without ever being overwhelmed or stressed.
