Tangle Creek Golf & Country Club is known for creating memorable experiences whether it is a golf tournament, wedding reception, or an evening with friends. Since opening in 2002, Tangle Creek’s golf course has been a favourite for families, friends and colleagues, whether playing as members or in public play. elanie Barrett is where she wants to be. “People tell me that I should expand and make my restaurant bigger,” says the owner of downtown Barrie’s Groovy Tuesday’s Bistro, “but I like it small, that way I can see and interact with all of my diners. Getting a bigger space would change that, and make it less personal.” Happy with her 32-seat bistro, the local restauranteur recently sat down with us and chefs, Sarah Jones and Justin McNutt, about her popular eatery and its casual dining fare.

What dreW you to the restaurant business? I have a degree in sociology and English, and one in social work, and trust me, I use my social work training every day. I started in the local restaurant business in 1998 at Filthy McNasty’s, and other than year off in Australia, I’ve never left. I also worked at Oscars, helped open At the Five and then landed here.

and served with homemade beer-battered onion rings. What’s your food philosophy? To put our best plate forward. From our breads and pastas to our desserts, we make absolutely everything from scratch. Being consistent with the quality of our food is really important to us.

hoW Would you describe the menu? Our menu is small, fresh and always changing. Chef Sarah, says it’s a very comfort-food-focused menu, but we like to switch it up and make it a bit snazzier. Why is changing your menu important? We change our menu four times a year, because I think it’s important to be constantly evolving and challenging yourself. It helps to fuel the passion. We love what we do and we love impressing people. This philosophy seems to be working for us because we’ve noticed an increase in our business in the last year and a half. They say it takes five years to know if a restaurant is going to make it, and I think we’ve turned that corner.

What are the most popular dishes? The cauliflower wedges just fly out of the kitchen. Our homemade soups, pastas and risottos are also super popular. People also love our cobb salad, steaks, pan-seared scallops, and lunchtime homemade burgers. Every day we do a different burger topping at lunch. For example, today’s burger is topped with coconut curry sauce, roasted cauliflower, grilled portobello mushrooms

We are definitely a “say yes” restaurant. We always try to accommodate a diner’s special dietary needs, whether it’s vegan, gluten-free or an allergy. And we go all out with these dishes because we want to give them the same dining experience as our other guests. do you cater? We do a ton of private events in here, including weddings. We always sold feed to the local farmers for their animals when we had the mill and we thought it would be great if we could complete the circle and sell healthy food for our human customers. Consumers have become more and more food savvy and want more variety, so we wanted to step it us and keep with the food trends so we diversified to selling food grown locally. HOW DO YOU PICK YOUR SOURCES? Our customers are the best 42

source. I have been given names of people to visit at farmer’s markets, local chefs have recommended suppliers and other foodies have recommended family businesses. We try to get as many local products as possible and I meet with the suppliers to see what they are about and their philosophy on food. I try to sample as much as possible but sometimes my wife, Sheila or staff need to help as I cannot handle spicy food. We have 85 local food suppliers, 15 from Alliston area.

WHAT IS YOUR HIDDEN GEM? The Homestead Tea biscuits and Homestead Artisan Sour Dough bread. There is many a time when I pick them up, the sour dough bread goes right from the oven into our vehicle to bring to the store and I almost need oven mitts. We have many people leave us with their order to ensure they can get some before we sell out. WHAT MAKES YOU UNIQUE? People love the story behind the food and I think we are trying to do a good job of that. On our Savoury Saturdays, a local producer comes in to offer samples, talk how they make the food and hand out recipes. g

At The North, we love to try new things such as our Wild Game Festival in the fall that introduces sensational dishes that accentuate the unique taste of kangaroo, wild boar, squab, and venison. I enjoy shaking things up. WHAT IS YOUR FAVOURITE INGREDIENT? That has to be our beef as we dry age our beef, which is an involved process that makes the beef tastier and more tender. We are the only local kitchen to dry age ribeye and striploin for 45 days and the results are worth the effort. ommy Tran’s philosophy is, “Always strive to do better.” Which is why his popular T.O.M.I. NAILS salon on Essa Road has been the recipient of thirteen coveted awards in the seven years since it opened. Five prestigious Top Choice, Mark of Excellence Awards for business (2014-2018), five Readers’ Choice Awards (2013-2017) and The Best of Barrie five years running (2011-2015). “We do waxing, manicures and pedicures from regular to deluxe, shellac manicure, nail enhancement and permanent hair removal,” says Mr. Tran. “I specialize in solar nails, a CND exclusive.” Mr. Tran also insists that his salon exceeds the standard required by the Department of Health. “Our salon is very hygienic with the latest technology. It’s a clean, sanitized, relaxed environment,” he says. “I want to raise the standard and the bar all the time. We even have a hightech ventilation system, so guests won’t experience fumes.” The salon’s success has much to do with Mr. Tran’s commitment to excellence. “I want to contribute to Canada,” he says with deep emotion. “I appreciate it every

day. It gave me a home.” Becoming a Canadian citizen in 2001 was a proud moment for Mr. Tran, but his remarkable story of how he got here began decades earlier at the tender age of ten. “I was a boat person,” he recalls. “The last of the boat people to get out. After us, they sent the others back.” The memory of his harrowing journey is so haunting that he still chokes up today in the retelling of it. “We were on the sea for ten days and ten nights. 136 people crammed together on a small fishing boat. We ran out of food and thought we were going to die.” Rescue came at the last tenuous moment from a Norwegian ship. Tran and his aunts were then transferred to a refugee camp in Singapore until his uncle in Canada could sponsor him. He spent the next ten years in Ottawa then enrolled in Georgian College with the ambition of becoming a Computer Program Analyst. But when he learned of family members’ dire struggle in Vietnam he nobly quit school to work fulltime in his uncle’s nail salon at Bayfield Mall so he could send money home and sponsor them.

A year later Tran opened his own salon so he could employ his family. “They’re here now,” he says happily. “Both parents, my two brothers and my sister. They all own houses. My brother opened a salon and restaurant in Burlington.” All are contributing. While his college education was interrupted, Mr. Tran insists on “constantly learning.” His latest achievement was in getting his financial license in his spare time. He is now Marketing Director for the World Financial Group. “I’ve learned to manage my own money and I want to help others,” he says. “I always want to challenge myself.” In his quest to better his salon Tommy Tran is launching a new permanent hair removal product from Israel into his services this September. Epilfree is a hair inhibitor that is applied to the follicle after waxing. It was developed by an innovator who worked for Christian Dior. “We always introduce new and better advancements and implement it into our service here,” says Mr. Tran proudly. “We’re always improving.”

I

’m very fortunate to have a career that I am passionate about. I’ve photographed some amazing people, been to fabulous locations and have learned so much about the world around us - and all through photography. One aspect that has grown tremendously in the past few years is my Fine Art photography, and specifically local landscapes. Although I have images from exotic locations, it’s the local landscape that receives the most attention. I print mostly on canvas and although many are framed, they may also be displayed without. Canvases range from 20 or 30” all the way up to eight feet in length. We have an image for just about any sized wall you need to beautify.
