The table linens are pressed. The serving dishes are set out. The largest turkey you can get your hands on in December is roasting in the oven, stuffed with your grandmother’s famous turkey stuffing recipe. You and your mom or maybe your sister remembered the cranberry sauce, and now you are laughing trying to come up with creative uses for the extra you know will not be needed. Michael Bublé is crooning familiar carols in the background. Your youngest niece and nephews, sons or daughters, are doing everything they can to devour an entire box of chocolates before dinner. Their next goal is to encourage their parents to let them go jump on the trampoline in the middle of winter. Drink in hand, the adults sample appetizers and put the finishing touches on what is shaping up to be another enjoyable, albeit hectic, family Christmas dinner. At least this is what happens in my home almost every Christmas Eve. It’s hard to believe the arrival of this edition of GoodLife means Christmas will arrive in less than a month. That’s why, in this issue, we wanted to make the holiday season less stressful by bringing some local shopping to you; a sort of window shopping on your couch so that you can find some unique and fun gifts. Along with holiday shopping, food writer Katherine Elphick visits bakeries throughout the region collecting the best sweet holiday recipes to start your baking off right. If you are going to change up your table décor, the folks at Home Sense provided us with some inspiration and creative colour schemes that would also work for any dinner party throughout the year. At GoodLife, we too love a great deal. When home decorating, it’s common to hold off choice of paint colours until the end, as a finishing touch. But when you own a painting company, things may play out a little differently. That was the case for Dan MacDonald and Tracy Campbell.

>> Knowing which colours are best used to represent an exquisite country style was key to decorating their home. Campbell’s colour choices enrich the coziness of every room in their 1841 Bradford farmhouse. Using the same colour palette around the exterior and interior of the house, Campbell was able to emphasize a country style in every corner. The use of warm red and yellow hues with bursts of cool country blue creates a restful feel

throughout their residence. Through the Victorian country screened front door, you’ll find yourself right in the family room, a space that’s decorated with casual living in mind. Burgundy California shutters cover the large west-facing glass doors, which lead back to their wrap-around porch. “You can watch the sunset over the open fields from here, it’s just amazing.” To the left of the entrance a staircase leads down to the basement. And to the right, exterior brick covers the wall facing the family room’s sofa. It’s where the house actually ended, said Campbell, referring to the brick wall. “The previous owners built this end of the house as an extension to what existed before,” she added. On the other side of this wall is the kitchen, where Tracy first fell in love with the house. The openness of the space was really inviting, she said. The renovated cabinetry provided plenty of built-in pantry space. Behind a couple cabinets the fridge and freezer are hidden. The kitchen was basically redone, with the exception of the red American pine wood floors, she said. Originally the house was built with six bedrooms and no bathrooms. “That many years ago bathrooms were not located inside the house,” said Campbell. “Thankfully, for our modern


The newly updated living room is cozy yet still preserves aspects of this nineteenth century home’s heritage convenience we now have two bathrooms,” she added jokingly. There’s a three-piece bathroom adjacent to the kitchen and another on the second floor. The dining space is open to the kitchen. A country style dining table with four chairs and a bench sit on an oval-shaped braided area rug, one of many found throughout the house. In fact, different colourful braided rugs are seen in every room along with crafted quilts to tie in the charming country atmosphere all around. Miniature versions of these rugs are glued on to every step of the main staircase, adjacent to the kitchen and dining area. Past the pine wood staircase, there’s the living room. The newly updated space is cozy yet still preserves aspects of this nineteenth century home’s heritage. Two wingback chairs, one in a yellow hue and the other in a dark blue, sit on either side of the original wood-burning fireplace, across from the merlot-coloured sofa. Right behind one of the custom designed chairs is the wellaged built-in china cabinet. “We kept it in its original condition and didn’t even replace one of the missing glass pieces,” said Campbell. Past this seating area there’s Tracy’s office. It’s a small room where she plans interior decorating classes she teaches online, through QC Design School out of Ottawa. Being an expert in home staging and interior decorating, it comes as no surprise that Campbell has a collection of her favourite styles on file. She pulls out a binder filled with various ideas collected from a variety of magazines. Most of the pictures highlight Tracy’s love for country style. Luckily her husband shares the same taste. “He would often point at pieces of furniture that were very country and say that’s what he loves,” said Campbell. Having a passion for finding bargain preloved furniture and antiques, Campbell is a frequent visitor of various household auctions. This usually requires her to look past the condition of the items, which often require some restoring.

To give the residence a country style feel right from the get-go, they added caps to the base of posts and gingerbread scrollwork to the top corners of every post. It’s amazing what a fresh coat of paint can do to unique pieces of furniture “Sometimes my husband takes a quick look and says “what will you do with that’ and I tell him ‘just wait,’” she said. Using items usually found around the house such as mouthwash, baking soda and dryer sheets, she’s able to clean and remove any odours from aged furniture right in the convenience of her home. But her DIY projects do not end at furniture restorations. As an artist, Campbell often spends time in her art studio on the second floor. There, she works on country-inspired whimsical art pieces. Some of her delicate artwork and greeting card designs can be viewed at www.tracycampbell.net. Across from her art studio on the second floor is the master bedroom. This intimate space includes their blue king-size four-poster bed, adorned with a handmade country quilt that combines the home’s warm colour palette. The bedposts tie in the same blue colour used on the stairs railings. And to make use of what would be otherwise wasted space below the sloped ceiling, a closet between the master bedroom and Campbell’s art studio was added. Next door to the master is the guest room. This comfortable space was furnished using a collection of vintage furniture that she gathered from her grandmother. “I love this chair because it was my grandma’s favourite,” she said as she pointed to the wooden rocking chair in the corner.

Another vintage piece that belonged to her grandmother is the sewing machine that sits right outside the guest room, next to the spinning wheel she bought at an antique store. Across the hall is the main bathroom, which used to be a bedroom, she said. Although a pedestal sink, a clawfoot tub and toilet were installed, the space gives off a sophisticated ladies lounge vibe that makes it feel like a room rather than a bathroom. The heritage of this home is clearly evident on the outside as well. On the sides of every window, the couple added dark blue shutters custom made in Bradford. They’re replicas of what they would have installed back in the 1800s, she said. The exterior of the new extension is ivory painted board and batten siding. It’s a cost effective way of emphasizing a country style while embracing the aged brick exterior on the other end. Every little detail was considered in decorating the interiors and exteriors of this home. Despite the heritage and the memories that live in this home, the time has come for the couple to relocate. We’re located in the picturesque Pine River Valley, and the setting is perfect. The rolling hills, views, vistas, rivers, and streams provide a spectacular backdrop to enjoy a few drinks with friends or a memorable meal.

Diners looking for a country adventure should check out Terra Nova Public House. Full of historical charm, Terra Nova offers a warm inviting atmosphere with upscale pub fare and comfort food. “There’s no place around like it,” says Anna Alonso who owns and operates the 40-seat rural pub near Creemore with her husband Troy Gallimore. Recently, this GoodLife reporter took a country drive to catch up with the local pub owner and her chef and brother Malcolm Muth. Over coffee, we chatted about everything from the building’s historical tidbits and local food to why reservations are recommended at this popular eatery. The setting for your restaurant is perfect! An off-the-beaten path vinecovered fieldstone century home surrounded by rolling farm fields. It makes me feel like I’m the city mouse visiting the country mouse. What led you to open a pub in the tiny hamlet of Terra Nova two years ago? Anna Alonso: Seventeen years ago, we bought this place because I always wanted to live in a stone house in the country [laughs]. For the first 15 years, we just lived here but because it’s zoned commercial we always planned to open a business. I knew this would be a great destination restaurant because we’re located in the picturesque Pine River Valley, and the setting is perfect. provide a spectacular backdrop to enjoy a few drinks with friends or a memorable meal either on the patio or inside the dining room. The 20th Sideroad of Mulmur (where the pub is located) is a very popular route for cyclists, motorcyclists, and country drivers. We knew we’d get drive by traffic.

dump, about 15 years ago. When we opened the pub, my neighbour donated the other two which he also picked up at the dump around the same time. It’s so weird to think that someone would think of them as garbage. I have no idea what their progeny is.

The building was once a general store?

We’ll get back to the building’s history a little later. Let’s talk about your menu. I understand that your brother Malcolm is the chef?

AA: The original building dates back to the 1830s, and it has been home to various enterprises over the years including a general store, a post office, a gas station, an ice cream parlour, an antique store, and a gift shop. The current dining room was once a tack shop and barn, and dates to around 1910. The dining room has so much rural character, with exposed wooden rafters, field stone walls and ceiling fans, I’m not surprised it was once used as a barn. By the way, I also love the church pew seating, and the antique wooden bar. Tell me about the giant vintage black and white photographs that grace the walls. AA: Aren’t they fantastic! There are three of them: a piano, a group of lawn bowlers and a marching band. I think they date back to about 1870. I found the framed piano at the Mulmur Mall [laughs], which is slang for the local 28 | GoodLife South Simcoe Winter 2013 ■

AA: That’s right. Malcolm Muth: Before Anna opened Terra Nova, I was helping her as a consultant. But as the opening drew closer, it became obvious that the place needed a full-time chef. We thought that it might as well be me [smiles]. I understand you have over 20 years in the food service industry, and have worked at various local restaurants including The Mono Cliffs Inn (Mono Center), Oliver & Bonacini (Blue Mountain) and Hiding in Hockley (Hockley Valley). Tell me about your culinary training and what led you to become a chef? MM: I received my culinary training at the Stratford Chef School. As for why I became a chef? I basically fell into it. When I was younger, a friend of mine called me because


they needed help at the their restaurant. It was a busy Friday night and somebody had quit and so I went into help. One night turned into a full-time job and I’ve been in the business ever since. What’s your cooking philosophy? MM: My training is mostly fine dining, so I cook from scratch and use classical cooking techniques. My cooking philosophy is simple, straight forward and not fancy. I let the ingredients speak for themselves. I use the freshest, highest quality ingredients sourced from local farmers. Along with the pub menu, I understand Terra Nova offers various daily lunch and dinner features. MM: That’s right. I’m constantly experimenting with various salads, soups, fish, meat, chicken and pasta dishes. A few items on today’s daily menu include spaghetti with smoked trout and leeks in a spicy rose sauce, Hakurei turnip and sage soup, braised beef short ribs, and a basket of roasted chicken drumsticks with roasted potatoes.

What are the house specialities? MM: We are known for our braised lamb shank, which we could never take off the menu. Our fresh fish and soups, which constantly change, are also really popular. Our grilled Highland beef burger with a choice of salad or roast potatoes is also a crowd pleaser. Our hamburger is very, very local. The Highland beef is raised just a few minutes away in a nearby pasture. Where do you find culinary inspiration? MM: The picturesque country side inspires me. I cook what’s in season. Today, on the way into work I stopped by a roadside farm stand and bought a box of butternut squash. If it’s available, I’ll make something tasty with it. Right now, we are getting almost all of our produce from Fiddle Foot Farms, a nearby organic farm.

What three course dinner would you recommend? MM: For starters, I’d go with the spicy greens with aged cheddar and honey cider vinaigrette. For the main, I’d suggest the lamb shank with fresh chocolate mint jus, or the baked red spring salmon with lemon butter vinaigrette. For dessert, our classic crème brûlée is a must.

Fresh ingredients inspire me. I love visiting China town or farmers’ markets just to look at interesting fruits, vegetables and aromas.

HAKUREI TURNIP AND SAGE SOUP this delicious recipe is courtesy of chef Malcolm Muth of terra Nova Public House near Creemore. “this soup is very flavourful,” says the local chef. Hakurei turnips are a small, delicately flavored Japanese variety of turnip that are available at various farmers’ markets and select grocery stores. If unavailable, substitute any white turnip. 1/4 cup butter 2 medium onions, diced 1 kg (2.2 lbs) hakurei turnips, washed, tops removed and quartered 1.5 litres chicken stock 1/4 cup dry white wine 1 cup 35% cream 1/4 cup chopped fresh sage Salt and pepper PREPARAtIoN: 1. Melt butter in a large saucepan over medium-low heat. Add onions and sweat the onions until translucent. Add turnips and white wine.

AA: Our customers love Malcolm’s homemade crème brûlée. We go through so much of it that it’s hard to keep in stock. Two questions for Malcolm: other than Terra Nova, what’s your favourite restaurant; and what do you cook at home? MM: Around here? The Globe in Rosemont. It’s a great historical building, the food is delicious and the service is especially fantastic. As for home cooking? Like most chefs, I cook simple meals at home. An organic roasted chicken served with a salad is perfect. I hear you have live music. AA: Every Friday night we offer great live music, and there’s no cover. We get musicians in from all over -- some from as far away as the Yukon, BC and the East Coast. It’s a real mixed bag covering anything from reggae and blues to folk music. The place fills up and our customers love it! Any special events coming up? AA: We have wine tasting with food pairing nights with Hobbs Wines, which is one of our distributors. Also, every April we host an annual cribbage tournament in honour of our grandfather Jim Muth (his vintage black and white photo hangs in the dining room). He was a World War I veteran who was bedridden in


his later years due to his old war injuries. From his bedside, he taught all of his grandchildren, including myself, how to play cribbage. What’s with the countless whimsical salt and pepper shakers that line the bar? AA: Customers bring them in and donate them. I’m not really sure why or how it started, but aren’t they great! People look for the kookiest ones they can find and bring them in [laughs]. That’s what I love about this place -- people think it’s their pub and they’ve taken ownership of it. The atmosphere is so comfortable, relaxing and welcoming, and I think that’s because the building is almost like a museum -- full of history, old stories and antiques.

What’s the most interesting historical tidbit about this place? AA: People come to us with stories and memories all the time. One of the most colourful tales we’ve heard is about a former owner named George. Legend has it that he buried a bunch of gold coins somewhere on the property, but died before he could tell anyone the location of the treasure. We’ve heard this story from many customers, but no one is sure if the gold is in the building or buried on the property. Do people ever come with shovels to dig it up? AA: We don’t allow any digging on the property [laughs]. Speaking of digging, my husband Troy dug up an antique gun and bottle when he was digging up our foundation. We have it framed on the pub wall.

From offering a free cupcake for folks celebrating birthdays to donating a portion of sweet sales to local charities, community involvement is key. “This holiday season, we will be offering a complimentary treat to anyone who brings in a non-perishable item for our food bank bin,” explains Teresa Trivino. Specializing in custom cakes to celebrate any occasion, the sweet shop won the Alliston Chamber Award for new business in 2013. Delectable fresh pastries, cookies, cupcakes, cinnamon buns and more fill the bakery’s shelves. “Our chocolate brownie crackle cookie with white chocolate chunks is our signature cookie,” reveals the local baker. Teas and specialty coffees, along with café-style lunches including soups, scrumptious panini’s and gourmet grilled cheese sandwiches, are also available. “We can even host birthday parties, wedding showers, baby showers and business meetings for up to 25 people in our store.” As for the holiday season, the Alliston bakery is a one-stop shop for all of your sweet cravings. Along with oodles of seasonal cookies, holiday cake shots (mini layer cakes served in shot glasses), a variety of flavoured cupcakes such as pumpkin and ginger are on offer. “We dress the cupcakes up with fun and festive toppings such as candy canes and santa’s,” explains the Alliston baker. Sophie’s Sweets will also be participating in Alliston’s Hometown Christmas event on Saturday, Nov. 23. “We’re giving free cookies to children who come into the bakery to write a letter to Santa,” she explains. PUMPKIN CUPCAKES WITH MAPLE CREAM CHEESE FROSTING 2 cups all-purpose flour 1 tsp baking soda 1 tsp baking powder 1 tsp salt 1 tsp ground cinnamon 1 tsp ground ginger 1/2 tsp ground nutmeg 1/4 tsp allspice 1 cup packed brown sugar 1 cup granulated sugar 1 cup unsalted butter, melted and cooled 4 large eggs, lightly beaten 15 ounces pumpkin purée

PREPARATION: 1. Divide batter evenly in cupcake pans lined with paper liners, filling each approximately half-full. Bake approximately 20 to 25 minutes, rotating your pan halfway, or until tops spring back when touched and a cake tester inserted in the centre of a cupcake comes out clean. transfer to a wire rack and let cool completely. Makes 18. 2. In a medium bowl, beat cream cheese and unsalted butter until smooth using an electric mixer. Add maple syrup, vanilla and confectioners’ sugar; continue beating till smooth. 3. Spread cupcakes (that have cooled completely) with icing and decorate as desired.

The colour is amazing and the taste is out of this world! I especially like it because I can offer a gluten-free version with our delicious gluten-free pastry.”

For over 80 years, the Thornbury Bakery Café has been a landmark in the village of Thornbury. “We’re known for our Chelsea buns, cinnamon buns, sticky knots along with carrot cake, pies and glutenfree, dairy-free and egg-free bread,” says Trish Smith who has owned and operated the historic sweet shop for the past five years with her husband Dave. The packed pastry shelves are also lined with various breads and buns, cookies, cakes, brownies, an assortment of pies, frozen meals-to-go and an ever-expanding line of gluten-free items. And it’s not just sweets; the Thornbury Bakery is also a popular breakfast and lunch destination with line-ups out the door. “We offer delicious food, fantastic coffee and great prices,” explains the local business owner. “On a daily basis, everything is made fresh to order. We are also known for our amazing homemade soups.”

With the mercury dropping, the Thornbury Bakery is gearing up for a busy holiday season. “It’s a very fun time for us,” admits the local baker. “We start early in the season making our homemade fruitcake and traditional mincemeat.” By Olde-Fashioned Christmas, a popular event celebrating the lights, magic and charm of downtown Thornbury held on Saturday December 14, the bakery is in full festive swing serving up gingerbread men, stacks of holiday cookies and various pies including mincemeat, apple cranberry and pumpkin. “We keep on baking holiday treats right through the New Year.” Since the bakery is a hub of activity during the holidays, Smith reminds customers to place orders early. “That way, we can have all of their delicious treats ready for pick-up.”

PIE FILLING: (for one pie) 4 apples, peeled, cored and sliced 1-1/2 cups cranberries, fresh or frozen 3 tbsps all-purpose flour 3/4 cup granulated sugar 1 tsp cinnamon 1 tbsp butter 1 large egg 1 tbsp water

1. Mix apples and cranberries in a large bowl. 2. In a small separate bowl, mix together flour, sugar and cinnamon. Sprinkle mixture over apples and cranberries and mix well. 3. Place filling into pie shell. Place dabs of butter on top of fruit mixture. 4. Make an egg wash by thoroughly mixing the egg with the water in a small bowl. Brush the edge of the bottom pie shell. 5. Place the remaining crust on top of the pie. trim the edges and crimp with your fingers or press down with a fork. 6. Brush the top of the pie with the egg wash, and cut several small vents in the top of the pie. 7. Place pie on a cookie sheet and bake at 350F for 50 to 60 minutes or until golden brown and the apples are tender when tested with a sharp knife.

When the Murphy family renovated their rustic farm market in 2010, adding a scratch bakery was top priority. “Our family has always loved baking, so installing a bakery where we could bake pies and treats we were proud of seemed like the most natural thing to us,” explains Hollis Murphy-English, whose family has owned the Alliston-area farm since 1913. “Our style of baking is both comforting and nostalgic.” No visit to Murphy’s is complete without purchasing a freshly baked pie. “We are known for our pies and tarts,” admits Murphy-English, who runs the farm market and bakery with her four siblings, while their parents tend to the 500 acres of potatoes. “Pie choices change with the season depending on what delicious fruits are being harvested but blueberry, raspberry and apple pies are staples that can be found in the bakery all year long.”

During the cooler months, pumpkin and mincemeat pies take centre stage. Decorated with various antiques and vintage photos, the country bakery also offers a variety of mouthwatering goodies including fresh bread, squares, cookies, biscuits and granola. Fresh seasonal fruits, vegetables and local edible products are also on offer. During November and December, festive treats are added to the bakery’s shelves. “We only make our buttercrunch during the holiday season and it’s to die for,” says the Alliston baker. Buttercrunch is a buttery toffee confection enrobed with a layer of chocolate and topped with freshly toasted pecans or almonds. Additional Christmas confections and goodies include truffles, chocolate dipped fruit, fruitcake, shortbread, biscotti, marshmallows and more. Open May until Dec. 23.

PREPARATION: 1. Preheat oven to 425F. 2. Place boiling water in a small saucepan. Add butter and place over medium heat. 3. When butter is melted and while mixture is boiling, add flour all at once. Stir rapidly until mixture makes a ball shape that comes away from the pan (DO NOT OVERCOOK). Remove from heat. 4. Add unbeaten eggs, one at a time, beating each until smooth (only add the fourth egg if the mixture is not smooth enough). Just remember that the secret to tender cream puffs is long, patient beating. 5. Drop dough by rounded tablespoons (or use a pastry bag) onto a greased cookie sheet a few inches apart. Bake for 30 minutes. Reduce temperature to 325F and continue baking until puffs are dry, about 10 to 15 minutes for small ones and 15 to 20 minutes for larger ones. Cool Completely. 6. Using a sharp knife, slit a small hole in the side of the puff. Fill with whipped cream and sprinkle with icing sugar. Makes about 24.

Once native to the Niagara region, Ontario wineries are popping up closer to home. From Grey and Bruce Counties to Muskoka, there are several local cellars worth discovering. Along with wines, many producers are also bottling hard ciders made from local apples and pears. Here are three wineries worth visiting:

HOITY TOITY CELLARS “Wines are often considered snobby and intimidating,” Making fun and approachable wines is Hoity Toity Cellar’s driving philosophy. “Wines are often considered snobby and intimidating,” explains Gary Fischer, who started the Mildmay-area winery in 2010 with his wife Diane. “We’re about having fun and making wines with a wide appeal.” Demystifying wines is reflected both in the cellar’s name ‘Hoity Toity’ and its products. Amusing bottle monikers such as Kicked out of the Country Club and Rusty Bling to Maid’s Night Off, give visitors a good chuckle. “There’s nothing fancy about us,” explains Fischer. “We’re just hardworking farmers making artisan wines and craft ciders.” Red, white and dessert wines are made from Bruce County cold climate grapes, while Hoity Toity’s trend-setting ciders are made from local apples and pears. Along with daily complimentary tastings, the winery can host special events for up to 35 people. Impromptu tours can be accommodated, but calling ahead is recommended. “Visitors love the behind-the-scenes stuff,” chuckles the local winemaker. “Even if you are just washing out a barrel, they want to know what’s going on.” Looking to the holiday season, Hoity Toity Cellars will be a hub of activity. Along with daily tastings, specialty gift baskets filled with wines, ciders, chocolates and specialty cheeses will be available in the gift shop. Visitors are also invited to ski, hike or snowshoe along the Bruce County Rail Trail that borders the winery. Guests will also get a kick out of Elvira the sheep and her two wooly friends who serve as professional vine groomers, as well as the farm’s super friendly Australian Shepherds -- Nellie and Stella. With 12 products lining the shelves, Fischer recommends taking home a bottle or two of 66 Pickup, the cellar’s most popular hard cider. “We just won gold for it at an international cider competition in the United States,” quietly boasts Fischer. Why cider? “Hard cider is the hottest market going right now,” he explains. “The market is growing about 60 to 70 per cent per year right now, eclipsing both the wine and craft brewing industry.” On the wine front, Fischer suggests trying Belle of the Barn, a Frontenac rose for red. For white, he recommends Dusty White Glove, a crisp Frontenac gris. Hoity Toity wines and ciders can be purchased from the gift shop, or online. “We can ship a case of wine or cider pretty much anywhere in Ontario for about $20,” he explains. When cranberry farmers Wendy Hogarth and her husband Murray Johnston started Muskoka Lakes Winery, they wanted to create a product that reflected the rugged beauty of the region. “Grapes don’t grow in Muskoka,” explains Hogarth. “But cranberries and other fruits do.” The Johnston family have been Bala cranberry growers for over half a century, and own and operate Johnston’s Cranberry Marsh. As crimson red fruit experts, they opened Muskoka Lakes Winery in 2001. Working only with fruit native to Muskoka, the winery now boasts a range of award-winning wines from dry to dessert. “We want you to taste what’s beautiful and unique about this area,” explains Hogarth. The Bala farm cultivates more than 11 hectares and produces about 137,000 kilograms of cranberries a year. “There is a misconception that all fruit wines are sweet,” explains Hogarth, who is also a sommelier. “They don’t have to be, it just depends on the fermentation process. They can be full-bodied or light, crisp and refreshing. You can find a Muskoka wine for any occasion and all types of food.” The award-winning Muskoka Lakes Winery sells about 5,000 cases per year. The wines are available online, at the shop and in LCBO stores. Their flagship cranberry wine has a crisp, tart

It makes the perfect pairing to turkey, ham or venison. “Even though our cranberry wine is our best seller, a close second is our cranberry-blueberry wine.” Visitors to Muskoka Lakes Winery can enjoy various activities including the bog to bottle experience which runs daily at 1 p.m. The guided farm tour takes visitors from the peat bog to a tutored wine tasting ($10 per person). For an extra cost, guests can sample an artisanal cheese tray. Guests can also rent a GPS to embark on a high-tech hidden treasure hunt at the farm. Additional entertainment highlights include: an art discovery tour, a kids’ trail and more. Holiday shoppers will enjoy touring the gift shop for Muskoka-themed gifts. Various cranberry preserves and goodies, wines, and local artisan wares are on offer. During the winter months, winery visitors can also rent snowshoes and tour 10-acres of trails. “It’s a real Muskoka experience,” says Hogarth. Robert Ketchin of Georgian Hills Vineyards is excited to be part of Georgian Bay’s emerging wine region. “For over a century, Beaver Valley apple farmers have been talking about a micro climate along the Georgian Bay shoreline that’s perfect for growing grapes,” explains Ketchin, who owns and operates Georgian Hills with partners Murray Puddicombe and John Ardiel. “Sooner or later, someone had to give it a try.” With its first commercial harvest in 2006, Georgian Hills is a trailblazer within the local wine industry. “The timing was right,” Ketchin explains. “The Blue Mountains has become a four seasons playground with a viable local food and culinary industry. All that was missing was a wine region.” Visitors are invited to taste distinctive local wines and enjoy the beauty of the vineyards during all four seasons. The cottage style tasting room is situated on the winery farm at Victoria Corners. While enjoying a glass of wine, guests can take in the beautiful view of the vineyards, and the stunning hills and a glimpse of Georgian Bay. Starting this winter, groups of 30 people can be accommodated for tours and tastings.

Anything from sampling four varietals (complimentary to guests who buy a bottle of wine, otherwise it costs $5 per person ) to wine and artisanal cheese tastings ($15 per person) to the winery’s perfect pairings tasting ($20 per person). “With perfect pairings, guests will enjoy five contrasting wines with carefully selected food pairings,” he explains. Offered every Saturday at 1 p.m. and 3 p.m. and Sundays at 1 p.m. (reservations only required for the perfect pairings tasting). Georgian Hills focuses on the cool climate grape varieties of northern Europe that have proven to be hardy and make outstanding wine. The local cellar offers a full range of locally grown white, rosé, red and dessert wines. “Our wines are delicate, fruit driven with good acidity and light tannins. We are known for our delicious sweet wines.” Signature wines at Georgian Hills include Riesling, Seyval Blanc, Gamay Rose and Marechal Foch. Wines can be purchased at the cellar door and online. Seyval Blanc is available at select LCBO locations. “If a customer is to leave with just one bottle, I would recommend Seyval Blanc because it’s what nature does best every year,” suggests Ketchin. Winter is a great time to visit the winery. “We have plenty going on,” he explains. Starting in November, the tasting bar will focus on serving wines best suited to festive entertaining. Gift packages will be available for purchase. Guests are also invited to snowshoe or cross-country ski along the vineyard’s trails. finished stage and review that with the client so they know what I’m thinking to make sure we’re on the same train of thought,” she says.

It was the late ‘80s and the Mansfield mother wanted to work from home. At the time she could only hope her hobby would blossom into a fulltime career.

The process means a lot of custom adjustments. Trees will be taken out or fire pits added in based on the client’s wishes.

The self-taught watercolour artist has found a way to make it work. It took a couple of years before it was a fulltime job, but she has been busy ever since. Most of Berry’s time is spent working on custom work and an annual wall calendar (she’s currently working on her 16th for 2016). A lot of the custom work is capturing memories for her clients.

“By the time I am actually at the point of putting paint on the surface all the details are worked out. I actually don’t feel the pressure, I think I enjoy the challenges,” she says. Berry has carved out a niche in creating limited edition prints. The tradition started in 1989 and over the years she’s created about 100 paintings in the series.

She says people will ask her to create paintings of a parent in their younger years, or a family cottage.

Flipping through the limited editions is like taking a trip through the local countryside. And it’s no coincidence. Berry says a lot of the scenery is from Alliston, Mansfield, Collingwood, and more.

“We put a lot of time into the planning stage. I usually sketch out a quick, rough drawing of what I’m picturing the scene to look like at its

painting has precise detailing. “Some of these places I’ve combined different places together to create a scene that existed in my mind but doesn’t actually exist out in the countryside,” she says. Berry’s artwork is on display in Alliston. She recently partnered with Papermoon Gallery, which meant moving her work from the Hockley General Store. Setting up at the downtown Alliston business was a natural transition for Berry, who has always used the business for framing her work. “The workmanship of the framing, the quality of their framing is so top quality,” she says. “Most of my pieces are hanging on a 100-year-old brick wall and there’s so much character, it’s just ideal for the artwork.”

Most visitors are surprised to learn that Bermuda has world class shopping and restaurants appealing to the most discriminate of tastes. The flight into Bermuda is unlike any other window-seat experience. As the plane begins its descent, your eyes become fixated on the mesmerizing waters – an exquisite shade of turquoise highlighted by the beautiful coral reefs that cast deep shadows in the water. Regardless of how many visits back to this magnificent Island I make, the experience transfixes me every time. Once landed, the traveller is greeted by local musicians hard at work, pumping out the rhythmic, heartthumping sounds of calypso music. The music, together with the scent of fresh air and vibrant sunshine, truly captures the essence of Bermuda and announces ‘paradise’ to all your senses. Growing up on the Island, I actually thought that everyone must live in this type of paradise, with warm weather, friendly people and a slow pace. It was not until I got older, and lived in the big cities of London, New York, Sydney and Toronto that I came to 62 | GoodLife South Simcoe Winter 2013 ■

realize Bermuda is as Hubert Smith’s Bermuda Calypso says, “another world.” The type of world I herald to my friends and readers so that they too can enjoy the colourful history and contrasts that make up this fantastic island. My ancestors first settled on the island in 1612 roughly 85 years after Bermuda was first discovered in 1505 by the renowned Spanish explorer Juan de Bermudez, an experienced seaman, who had been a crew member on the “Pinta” during Cristobel Colon’s epic voyage of 1492 to the Americas. 2012 marks the 400th anniversary of the settlement of Bermuda. What better time to revisit the island I call home. While nothing is known of his encounter with Bermuda in 1505, Bermudez returned again in 1515, accompanied by the chronicler Oviedo y Valdes. Oviedo’s account of the second visit, published in 1526, records that they made no attempt to land because of the inclement weather at the time.


Bermuda remained uninhabited until 1609 when Sir George Somers on board the “Sea Venture” was shipwrecked by Bermuda’s reefs. Somers managed to land all 150 crew and colonists on the uninhabited islands, without the loss of a single life. The shipwrecked sailors were stranded on the islands for ten months while they built two new small ships to replace their wrecked ship. By 1610, Somers managed to construct the “Deliverance” and the “Patience” and set sail from Bermuda for Jamestown. Three men, however, elected to stay behind in Bermuda. Those who sailed on to continue their journey to Virginia wrote such glowing reports about the island that in 1612 more permanent settlers arrived from England (including my great-great-great ... well, you get the idea). The first settlers’ account of the islands hailed the ‘pink’ beaches created through the unsuspecting help of a tiny single-celled animal called Red Forams. Living under the coral reef, their red exoskeletons mix with the white sand and broken seashells, creating the dynamic pink tinge or hue found on every shore. Despite all my world travels, I have never laid eyes on beaches as beautiful as those in Bermuda. My recent stay on the island afforded me the opportunity to stay at one of Bermuda’s most prestigious hotels, the iconic Pink Beach Club. Located in Tucker’s Town (home to the likes of Ross Perot, Michael Bloomberg and former Italian Prime Minister Silvio Berlusconi), this phenomenal property is one of elegance and class. It is a rare case of old-world Bermudian hospitality, a radiance of charm not always found in today’s cookie-cutter tourist destinations. Pink Beach Club & Cottages boasts not one, but two of the pink coral sand beaches Bermuda is famous for. The main beach is a quick walk from guestrooms. That is, of course, if one is not tempted to first take a dip in the heated freshwater pool. Built in 1947, before the era of large island hotels, accommodations at Pink Beach Club consist of two and three-storey cottage buildings containing a total of 94 suites and junior suites. All rooms have their own private balconies overlooking the ocean, where you can enjoy breakfast service every morning, served by your personal cottage housekeeper. Tennis players have two courts, and equipment can be rented for an early morning match. Two championship golf courses – the private

I will continue to engage friends and family in stories of Bermuda, hopefully driving them to make the trip themselves down the line. Bermuda is a place one must experience in person. It is not simply a beautiful island in the middle of the Atlantic, but rather a wondrous escape to another world.
