Most of us living in the Country do not take our Water Supply for granted. Perhaps you have run out of water at some point or have heard of neighbours who have. In the back of our minds we are aware of our water supply’s finite nature. Q. What Are The Different Types Of Wells? The type of Well is determined by the depth of the target Aquifer and the composition of the overburden. There are 3 main types of Wells; 1) Dug Wells- generally less then 30 feet deep. Concrete casing usually at least 8 feet deep due to the soft nature of the overburden. Due to their shallow nature it is a good idea to have sealed upper casing to avoid surface water contamination. 2) Bored Wells- generally not more than 50 feet deep and usually a larger diameter then Dug Wells to allow for a greater volume of water to be housed as a reservoir within the structure. Water levels in Bored Wells are prone to seasonal fluctuations. 3) Drilled Wells-generally 50 to 200 feet in depth. Usually drilled thru heavy bedrock overburden and cased in metal. These Wells are generally less susceptible to seasonal fluctuations and contamination, however a deep well may encounter mineralisation.
Q. So Then Is The Deeper Well a better Well? Not necessarily. It all depends at what depth the most water supply is found. Drilled Wells may encounter mineralisation and perhaps even gas at depth. Shallower wells may not have that same issue but are generally more prone to fluctuations in the water table and are susceptible to surface water contamination. Q. What is an acceptable volume of water from my well? An uninterrupted flow of at least 2-3 Gallons Per Minute over a 1 hour period is an accepted standard for household use. Having said that most

households would not use a total of 120 to 180 Gallons in any 1 hour period unless you have an army of teenagers who take long showers.
Q. What If My Well Produces Less Then 2-3 GPM? This would be perfectly alright if your Well is sustainable at these lower levels over an extended period of time. In this case the home owner may wish to install a reservoir system. The principle behind this system is to supply adequate supply of water for peak demand without putting undue stress on your well. To do this install a submersible pump system that’s pumping rate can be set at a speed less than your Well’s sustainable flow rate. This way your reservoir can fill during none demand hours at a rate that never exceeds your Well’s ability to replenish. Another suggestion would be to add a Cistern Tank somewhere close by to the house to collect and store rain water from your roof’s down spouts. We have a 1,000 Gallon Underground Cistern from which we fill the pool and water the gardens……just a simply way of recycling water. Q. My Water Is Always Clear And Tastes Good. Is It Safe? Most of the time especially from shallow wells where we have little to no sulfur or other minerals, our water tends to be clear and tastes good! But this is no indication that there is not bacteria present in your water. I would recommend that every household install a UV Light System onto their main water line. A UV Light with a proper operating bulb will effectively kill 99.99% of all bacteria in your water. It is all but a fool proof way to protect your family. At a cost of roughly $1,500 installed it is a must for all of us Country Folks to have one!!!! We are blessed with plentiful fresh water, so enjoy it, preserve it, and never take it for granted, and remember to drink lots of it.

It’s the exercise so many of us love to hate — the squat. But this one move can tremendously increase lower-body strength, promote balance and lessen aches and pains. Do them wrong, though, and not only is your work in vain, but you could also make any balance issues or aches and pains even worse, says Robert Karpathios, owner and operator of Barrie’s True Strength Personal Training. Here is his advice on how to do a proper squat.

Keep your gaze forward and your chest up. • One you reach the bottom position, stand back up, keeping your chest up and knees out. “If you’re an absolute beginner with squatting, master the movement first using only your bodyweight, performing three to four sets of 20 repetitions,” Karpathios says. The combination of the first baby boomers turning 65, coupled with an increase in life expectancy has resulted in this jump of 20 per cent since 2011. With so many of our residents entering their retirement years, we have asked local experts to answer some questions and give advice on some of the life decisions so many people are in the process of making. t’s not unusual to see patients leaving the Alliston Denture Clinic smiling from earto-ear, anxious to show off their beautiful new smile to the world. This is the moment that many patients dream of, and it’s also the moment that makes Denturists, and brothers, Ted Protopapas and Andy Protopapas the most proud. “Most people don’t give much thought about their smile, but when you are unhappy with your teeth or are embarrassed about your smile, it’s something you think about all the time,” says Andy Protopapas. “There is a saying, ‘if you look good, you feel good.’ A smile affects everything from our confidence to our health. It is never too late to get the smile you deserve.” Huge advancements have been made to the science of dentistry in terms of making full or partial dentures, according to Andy. “The latest method is to create full upper dentures and stabilize the bottom dentures with at least two implants. Everything is handcrafted onsite in our state-of-the-art lab. As Denturists we understand the design, fabrication, insertion and

adjustment of dentures to get the perfect fit. The convenience of the clinic- to- lab facility allows us complete control over quality and saves our patients time and money as we’ve eliminated the middle man and they get their dentures sooner.” Replacing a single tooth can be done in as little as two appointments whereas full dentures may take a series of four or five appointments to ensure the proper fit. Every mouth is different and deserves customized attention. In addition to full and partial dentures, Alliston Denture Clinic can also repair broken dentures, relines for loose dentures or soft cushion liners for sore dentures. “We also do sports mouth guards and in most cases repairs can be made the same day,” says Andy. “Our patients range in age from teenagers to one patient who recently celebrated his 100th birthday. No referral is necessary and the initial consultation is complimentary.” Brothers Andy and Ted grew up in Barrie and are often asked if they are twins. They are, after all, just 16 months apart. Ted is the elder and he became a denturist in 1997 and es-
tablished the Barrie Denture Clinic. Andy followed in his footsteps and became a denturist in 1998, and established the Alliston Denture Clinic. “Dentistry is a family affair,” chuckles Andy. “Ted and I both met our wives in dental school and they are dental hygienists. We both have three children each who are actively involved in hockey, so if we are not at the office, you will find us at the hockey rink. This is a great place to raise a family.” Asked what they enjoy most about the work they do, Andy answers: “We like the fact that the business is so hands-on and we get to create smiles every day which is so impactful for our patients and so rewarding for us as denturists” says Andy. “When people look in the mirror and see their new smile for the first time---we’ve had people cry, or get out of the chair and hug us, and best of all, they can’t stop smiling!” Alliston Denture Clinic is located at 180 Parson Road, Unit 9. Times have changed, and so too have the number of options available when it comes to planning end-of-life decisions. ikipedia defines a condominium as “a form of ownership... technically, a condominium is a collection of individual home units and common areas, along with the land upon which they sit.” As a licenced realtor since 1989, Kelly McCague, Sales Representative for ROYAL LePAGE RCR REALTY, Brokerage in Alliston has experienced a gradual increase in the number of people considering condominium ownership. “If you are planning to downsize for your retirement years then a condo lifestyle may be something to consider,” says Kelly. “Due to a recent shift in demographics, downsizing and retirement planning have become a popular topic of conversation for many Canadians. A condominium ticks many of the boxes for an affordable lifestyle.” If you are considering a move to a condominium, here are some aspects of ownership that Kelly says should be considered: Type of Condominium A condominium is not only a high rise apartment; condominiums can range in size from an apartment of a few hundred square feet in a downtown city core to a detached home of several thousand square feet on a golf course or greenbelt. Condominium Ownership “Whether you decide on a condominium apartment or fully detached home, you still have an interest in the ownership of the land that it sits on,” says Kelly. “However, with the ownership of a condominium come some restrictions, i.e. fencing the area surrounding your town-

house, semi-detached or fully detached condo. Since your ownership of the condominium lands is based on a percentage interest in the land, the area surrounding your home does not have defined boundary lines. However, you do have exclusive use areas such as the driveway, deck and patio. On the flip side, there are merits to not fencing your property as it provides an overall sense of space and continuity.” Enjoy the Lifestyle One of the main reasons for selling the big family home and moving to a condominium is “no longer being able to do yard work without outside help.” A condominium provides the benefit of someone else doing most of the work, so you can spend more time doing what you like most. Kelly explains: “The majority of condominium corporations maintain the lawns and landscaping around the unit and the common areas. The corporations also generally maintain the exterior of the home including the roof, bricks/mortar, siding, and the foundation. Water and sewer costs may also be included in the monthly maintenance fee.” Condominium Management Condominium developments are incorporated upon a percentage of completed units and they must then form a Board of Directors which is managed by a property management company hired by the corporation. The Board of Directors is mainly comprised of property owners and provides homeowners a chance to get involved. Exterior Changes and Additions Since the corporations and management companies are in charge of maintaining the condominium exteriors, they require that any changes or additions to the exterior receive their consent. These checks and balances are in place to maintain the integrity of the property. Social Events The majority of condominium developments
focus on providing an enjoyable lifestyle. Generally there is a long list of activities and social events that residents can participate in on a daily or monthly basis. Carefree Lifestyle The term “carefree lifestyle” is often associated with condominium ownership. The condominium exterior offers carefree maintenance for the most part, but since you have ownership of the interior, you are responsible for its maintenance. Condominium Community “A ‘Sense of Community’ is a feature that attracts many people to condominium ownership,” adds Kelly. “Condominium developments provide amenities and features that give homeowners a secure feeling that has helped to coin the phrase ‘Lock the Door and Leave’. Also, in many condominium developments, the streets are the property of the corporation and thus are restricted to through traffic. A
Good Samaritan is someone who goes out of their way to help others and it seems to be the perfect name for Good Samaritan Seniors’ Complex where nurses and staff go above and beyond to help the Residents live life to the fullest each and every day. The “Good Sam” as it is fondly known, is a Seniors Lodge and Long-Term Care Home in Alliston with a renowned reputation for providing quality care and services at affordable prices. “Our mission is to excel in meeting the holistic needs of our Residents and to enhance their social well-being and wellness by treating Residents with dignity, honesty, respect and kindness,” says Deirdre Britton, RN, Administrator/Director of Nursing. “Many of the full time nurses and staff of the Retirement Lodge have been here since the Retirement Lodge opened. We are a community where everyone is welcome. It seems there is always something special to celebrate. “We have many celebrations throughout the year where the Resident’s families are invited to join us, such as the upcoming Summer Barbecue in June,” says Activity Director Kristen Hewison. “At our Christmas Social we feature seasonal food, drinks, music and Santa comes to visit.” Fellow Activity Director Paula Bilz adds: “There are daily activities like exercise classes (yoga, stretching, walking), cards, bingo, cooking classes, a regular visit from the local library, and Residents can help care for the flower and vegetable gardens on the property”. Speaking of food, Deirdre mentions their beloved cook Kathy is retiring soon after 35 years and Stephen, a long time employee in the dietary department, will take the helm. “They cook meals for the entire complex and are able to accommodate all dietary needs such as vegetarian or gluten-free meals which have become more in demand over the past few years. Suzie marries Johnny, a few years later, Suzie and Johnny split up and Johnny wants half of the house value. He says they don’t owe any money as it was a gift to the couple. Dr. Tom Ellis opened the clinic in 2004 with the goal of creating a clinic that could treat all members of the family much like a traditional family doctor. the Country A simpler life was what this couple wanted for themselves and their five children. As a result, they found a lovely lot in the country and built a home with tranquil views from every room. Moving to the country gave them not only a simpler life, but a better one.
J
ust over two years ago, Diane Bettencourt and her husband Len Barrowclough were raising their five children in a pleasant home in a subdivision in Schomberg. Life was good. But their kids, ranging in age from kindergartner to teenager, were growing and needed more room indoors and out. The couple realized it was time to find a larger nest and fulfill a longstanding wish to live in the country. “Our former home was about 2500 sq. ft. in size,” says Bettencourt. “The girls were sharing bedrooms, but we knew they would need their own space as they got older. We wanted a bigger kitchen and an open concept living space. Our new home is nice because it’s not over the top. It’s just perfect.” A serious search for a suitable lot ensued. During an online search, they found a promising property. It was just over an acre and located on a quiet side road near Schomberg. “A week later, we came out to see this property and I said ‘This is it!’” says Bettencourt. “It belonged to the neighbours next door. We met them and loved them right away. We warned them that we had five kids and would be getting a dog, and they loved it.” Bettencourt designed their new family home in collaboration with Woodbridge architect David Cirocco. Construction commenced in November 2016, but a severe winter pushed the completion date from April to August of 2017.

“We told David every requirement we needed for the house,” says Bettencourt. “For instance, we wanted a cathedral ceiling in the living room but not in the kitchen even though it is an open concept design. The house was actually planned over coffee at Tim Hortons. David only made about three drawings before the design was right on. He really listened and was phenomenal.” The New Tecumseth home is a handsome bungalow with a second storey loft and a finished basement with walk out. A main floor deck off the Great Room overlooks a huge back yard that is a hit with the kids. The couple turned to Alair Homes Aurora and project manager David Clayton to build their custom 4,000 sq. ft. home. The home’s design is traditional country with contemporary touches. “I just absolutely love it,” says Bettencourt. “It’s our first time living in the country and I love waking up and looking out at the scenery. It’s calming. Winters are beautiful as well. The kids go out with their toboggans to the hill in the back yard. In summer, they are always outside playing. The kids have space to do whatever they want both outdoors and inside. After school they come home, have a snack and do their homework on the deck. It’s truly a liveable country home. The master bedroom, which overlooks tree-bordered fields, has a generous walk-in closet and a walk out to the deck. Behind the ensuite’s stand-alone bathtub, which is illuminated by a charming chandelier, a feature wall that appears to be hardwood is actually tile. These elements, like many throughout the home, are both classic country and modern design. “You want something that is timeless, that ten years down the line is still going to look like it is in style,” Bettencourt says. Across the hall from the master bedroom, their son’s room is decorated in a rustic Muskoka theme with a natural wood feature wall and half moon window above the lower pane for lots of natural light. His adjacent bathroom has shiplap walls and cleverly concealed storage shelving. In springtime, the kids in the main level bedrooms watch for the cows to appear at the farm across the street. “My youngest girls have named one white cow Milky and another Spotty,” says Bettencourt, with a smile. “Jasper always wants to go over and say hello.” Upstairs, the older daughters’ bedrooms are decorated simply and festooned with photos of friends and family. They share a bathroom with a glassed-in shower and double sinks. Off of the entry hall, a cozy den houses the children’s collection of books on built-in shelves. “When I can’t find one of my daughters, she’s likely in here reading,” says Bettencourt. “All my kids love books. They always wanted a library and a ladder to get books from the top shelf. I said no to the ladder idea.” Embedded into the top of the Great Room’s cathedral ceiling, a 400-year-old beam from an old post office adds a cottage touch. Also reminiscent of cottage country is the lofty Town & Country fireplace made of hand-squared Essex County natural stone with antique beam mantle. The soaring double iron circle candle chandelier was found on Pinterest and sourced at Living Lighting. The black iron fixture look is repeated in the kitchen’s two lantern-style pendants and dining area’s single circle candle chandelier. Meals with family and friends around the custom table in the dining area means fabulous food and lots of conversation with beautiful views over the countryside. At large dinner parties, guests use the seating at the kitchen’s quartz-topped island. One recent family dinner was disrupted by a little bit of wildlife. “One Sunday, my husband and kids were outdoors scooting around on the ATV when they saw a coyote,” she recalls. “They came in for dinner and sat down. Then, my husband looked out the window and said one word – coyote. They all ran outside and jumped back on the ATV. It was hilarious. All I saw was the five of them on top of one another on the ATV going to find the coyote.” The couple decided a separate dining room would not be necessary in their new home. “For large parties or holiday celebrations, we pull up more chairs in the kitchen and dining area and make it work,” she explains. “With the open concept, everyone has room to spread

The exterior of the home reflects the country feeling of its interior. Board and batten siding in a custom pale navy colour by Benjamin Moore is accented with grey stonework and white trim around the windows and doors. The navy colour was also used for the kitchen’s island. The wood on the ceiling of the front porch was left natural after the owners saw how lovely it looked. A natural stain lets the wood grain and knots be seen. With the couple selecting and requisitioning every item for the house, they feel it is truly their own. “The kids really enjoy living here,” says Bettencourt. “The little ones help my husband with the yard work and it’s so nice. We are happy here. We wanted a simpler life and found it. T
he Coop Foodiary and Public House is a neighbourhood Alliston restaurant that serves up friendly service and delicious pub fare. “The place has plenty of heart and soul, and we pretty much know most customers by name,” owner Sandra Lambie explains. “It’s a true local pub.” To learn more about the 54-seat eatery, GoodLife recently sat down with Lambie to talk about everything from wings and her famous cookie jar, to what makes a neighbourhood watering hole successful.
2010. What led you to operate a pub in Alliston? I was born and raised in Alliston, and grew up about two blocks from the pub. For 20 years, I worked at the iconic Loretto Tavern, but when the owners sold it, I found myself looking for a new opportunity. I purchased The Coop about eight years ago (back then it was called CW Coop) with my former boyfriend and the rest is history. Two years ago, I changed the name to The Coop and now I’m the sole owner. It’s a true labour of love for me.
Despite a few restaurant name changes, you’ve owned and operated The Coop since
The place has plenty of character, with its rustic barn board floors and accents, re-
claimed tin bar, Bruce Springsteen posters and eclectic antiques. Can you tell me a bit about the decor? I love antiques and I’m what you’d call a picker. I think having unique antiques around gives the place character. Some of my favourites include the folding chairs from a New York jail, vintage movie theatre seating, a barbershop pole and a dude car from the 1940s. Our front desk is actually the front of a 1953 Pontiac Chieftain. We found it in a farmer’s field and cut it in half and made a desk out of it. As for the Bruce Springsteen concert posters, let’s just say that I’m a big fan of the Boss

“We’re proud of the meals and service we offer and want our guests to feel the difference. [smiles]. But, I’m pretty low on the fan list because I’ve only seen him 18 times. And when you’re a true Bruce Springsteen fan — that’s a low number! I’ve heard you say that The Coop is like your own living room. It’s true, because it’s so comfortable in here. I had one customer describe it as walking into a big hug. What’s on the menu? It’s basically classic pub fare. Wings, burgers, wraps, salads, club house sandwiches, and ribs on occasion — that sort of thing. I expanded the menu to draw in more families, 48 | GoodLife South Simcoe Summer 2018
and it has really worked. Before, we were just known as a wing joint and I wanted to change that by offering more variety. What makes your wings so special? We use only fresh, never frozen, Ontario wings. And that’s a big deal because most restaurants serve Brazilian or American wings. We have over 110 sauces or combinations of. We do anything from dry barbecued and Cajan, to roasted garlic and pepper. But, even with so many choices, the most popular ones are still hot and honey garlic. Right now, we are selling about 600 pounds a week of wings, and wings are roughly about half of our total food sales.
Beyond wings, what else is popular? Our hand-pressed burgers are really good and sell well. It’s all about the ingredients. We top them with real cheese, bacon and onions, which I caramelize myself. The ACE burger buns are also high quality. Do you make everything from scratch? Mostly. We make our own beef and turkey burgers, the specials, ribs and all of our dips and salad dressings. What about diners with special dietary needs? We offer a pretty extensive gluten-free menu, and even have a special fryer for gluten-

free items. All of our wings, burgers (including buns), chicken fingers, breaded chicken breasts and wraps can be gluten-free. For vegans, we serve tofu wings, cauliflower bites, black bean burgers, salads and wraps. What’s your food philosophy? Fresh and the best ingredients that you can buy. Do you have live music? We have this wonderful guy, Marshall Dane, and everyone loves him. He’s a local country singer and he lives next store. He comes in about once a month and the place is packed. In the summer, we have a huge barn party at my sister’s place where we invite our customers and Marshall plays. It’s a great time. What about specials? We offer menu specials on Wednesdays and Fridays. Tuesdays and Thursdays are wing nights for $8.50 a pound. And every day from 3 p.m. to 6 p.m., we offer 32-ounce beer mugs for $9.99. We also offer a dinner-and-movie package with the Circle Theatre. Get a wrap or burger, or a pound of wings and a ticket to a movie for $20, taxes included. What can you wash those wings and burgers down with? We have a large variety of local and international beers on tap. We also serve wine, including some Ontario varietals. We serve Ardiel craft cider from Collingwood, and also make a pretty mean Caesar.

The Coop Butter Tarts ingredients: Pastry: 5 cups pastry flour 1 tsp baking powder 1 tsp salt 1lb butter or vegetable shortening 1 egg 1 tsp vinegar 1 cup ice cold water Filling: 1/2 cup raisins or nuts, optional 1/2 cup melted butter 1 cup brown sugar 1/2 cup maple syrup 1 tsp vinegar 2 eggs, slightly beaten 1 tsp vanilla method: Pastry In large bowl, toss together the flour, baking powder and salt.
Filling Heat oven to 400°F.
Cut in the butter or shortening using a pastry blender or two knives until mixture resembles coarse oatmeal.
If using raisins, in small bowl, place raisins and cover with hot tap water; let stand on the counter for 30 minutes.
In a measuring cup, combine the egg and vinegar. Add water.
In large bowl, using a wooden spoon, mix together butter, brown sugar, maple syrup and vinegar; stir well until sugar is dissolved and butter is creamed.
Gradually stir in the liquid, adding just enough to make the dough cling together. Gather into a ball and divide into two equal portions. Roll out the dough on a lightly floured surface to about 1/8" thick. Cut out pastry circles using a 3- to 4-inch cookie cutter and fit into your muffin cups (lined with parchment paper). Place into the refrigerator until ready to fill.

Add eggs and vanilla and mix well. Drain raisins. Retrieve tart shells and divide raisins or nuts (if using) equally into all shells; then divide butter mixture into all tarts. Bake for 15 to 20 minutes; filling will be lightly browned but still bubbling. Makes about 24.
Everyone loves our cookie jar! About three years ago, I started baking chocolate chip cookies and I put them in a jar on the bar. The original idea was to sell them, but no one was buying them. So, I decided to just give them away to customers. The idea took off and many people call our pub “that cookie place.” Three months ago, I decided to stop making the cookies with the changes in minimum wage. But, with so many customers disappointed, I had to bring them back. Everyday, I make about six dozen cookies for that jar and it’s empty by the end of the day. I do it because my customers love it. Wrapped Up for Good By PATTI VIPOND
If only there was a food wrap that kept food fresh for ages, was chemical-free, came in assorted sizes, was washable and compostable, and lasted for over a year. Happily, such a wrap actually exists and was invented locally by an eco-conscious Mom.
I
f you had a choice, would you save your food in plastic wrap that is made with chemicals and discarded after one use, or in an ecologically friendly, biodegradable wrap that can be washed and reused for over a year? Though such a wrap may sound like something from the future, thanks to the inventiveness of Lacey Alexandra, such a food wrap exists right now. The concept for the eco-friendly wrap came to Alexandra, who is a social worker and single mom, while doing alzheimers and dementia care with clients. “We were talking about how they preserved food back in the day when people used iceboxes,” recalls Alexandra, who owns and operates Labeille, her beeswax food wrap company, from a mini studio in her apartment. “A lady who was 98 years old mentioned that her grandmother used to cut up old tablecloths and wax them to wrap cheese and produce. I thought that was really cool.” After giving the old timey food wraps some thought, Alexandra experimented with various materials and methods for ten months.

She worked with cotton, oils and resins to see what combination would wrap up best. Unfortunately, none of them worked. After trying everything, she finally gave up on the idea. However, the apparent end of her quest was actually a prelude to its continuation. “I went to bed one night and had a dream about how to make the wraps,” recalls Alexandra. “Turned out, it was the opposite of what I was doing. I woke up and tried it right away. It worked! That was the moment I knew I was going to do this.” In her dream, the budding entrepreneur saw how to do the resin process properly. The cotton wraps needed to be infused in a certain way and initially be extra tacky to adapt to almost any shape and cling strongly enough to preserve the wrapped item. stay fresh in a Labeille wrap for up to two weeks. Alexandra once found a forgotten green pepper that was still fresh in its beeswax wrap after three weeks. “It was a little blessing,” says Alexandra. “Because of the beeswax and the jojoba oil, the wraps are naturally antibacterial and antifungal. Those properties keep food fresh longer and keep it clean. There’s no bacterial build up as with plastic wrap. Food needs to breathe and plastic wrap suffocates food. The beeswax wraps are permeable, so they protect food from the outside environment while keeping the inside environment perfect.” The creation process for the sustainable food wraps has changed a few times since that revelation. Alexandra uses 100 percent patterned cotton material with a specific thread count. The cotton is infused with organic jojoba oil, local beeswax and Canadian pine resin.
In the beginning, she could make 12 wraps in eight hours. After being in business for less than two years, she and a helper can turn out 300 to 400 wraps over an eight-hour day. The wraps comes in small, medium and large sizes as well as a bigger Mason jar size that was invented for a specialty order. A woman ordered 25 of them to wrap up baking gifts. “This size goes right over a Mason jar and is pretty cute,” says Alexandra. “We are also making bread sizes. The large ones are already good for bread, but we need bigger ones for baguettes or really big artisan loaves.” Though the texture of the wraps is similar to the stiffness of a waxed piece of paper, they are flexible enough to mould to any food in almost any manner. “If you want to scrunch it over, let’s say, a lemon or an avocado, the warmth of your hand and the force of the scrunching movement will wrap it up,” explains Alexandra. “The solution was using pine resin. If there is only beeswax in the wrap, you have to play with it, warm it up and really stick it to infuse the cotton. When I was developing the product, I knew that wasn’t good enough to put the wrap on the market. It’s the pine resin that give the wraps an instant seal.” Because she uses a beeswax base for the wraps, Alexandra called her company Labeille, French for ‘bee’. The word is actually spelled L’abeille, but the apostrophe created pronunciation problems for some customers. As well, Alexandra thought the spelling was a bit harsh for a company name.

“I took the apostrophe right out, made it one word and made it our own,” she says with a smile. Materials for the beeswax food wraps are sourced locally except for the resin. Finding a pine resin supplier was a challenge. Alexandra finally found two suppliers in Alberta. She buys pure cotton material from local small businesses. The beeswax comes from a local source and the jojoba oil is from a natural health food store in her neighbourhood. “Sometimes I buy cotton right on the bolt, but I really like to change things up,” says Alexandra, noting Labeille wraps’ wide variety of attractive colours and cheerful patterns. “We are always changing our designs to suit anyone who might want to use a beeswax food wrap.” In the Labeille care guide, Alexandra tells customers how to rejuvenate a wrap that is over a year old. If it is beyond saving, the biodegradable wrap goes in the compost. Labeille wraps were originally marketed via Facebook to her friends and family. When Alexandra started doing local shows, her product sold out. Now, she is hoping to open a storefront or café that will further serve her community. That is the true goal of Labeille. “Anything we can do to empower the people in our community is what I want to do,” says Alexandra. “We are teaming up with Contact Community Services, an organization who helps people with housing, clothes and other things. A portion of our wrap sales will go towards all the fantastic things they do.” One of Alexandra’s future goals is to take Labeille beeswax food wraps on the Dragons’ Den television show. But for now, she’s working with graphic and website designers to completely rebrand Labeille and set up the company’s first website. The changes reflect the company’s success and growth. “Ever since I started, there have been lots of pop ups trying to replicate our product,” says Alexandra. “So far, no one has got it quite right. he classical elements: wood, fire, metal, and water, are bladesmith Jason Duclos’s medium. He forages for his raw material in Simcoe forests, eyes peeled for knots of exotic burl lurking in the deadfall. Each fortunate piece of wood will find new life as a carved, dyed and polished handle on his custom-crafted knives. The steel for his blades originate from equally exotic sources. Salvaged metal from old truck leaf-springs, files and railway spikes are the foundation of elaborate Fantasy Swords and Ladies Imps. Each rusty castoff, is born anew inside Duclos’s own homemade forge. Duclos has been a “backyard bladesmith” for seven years now. He built his forge himself, out of a propane tank, plumbing parts, and a burner. Then traded one of his knives to a gasfitter for a blanket of pricey thermal kaowool. “I’m a diehard do-it-yourselfer,” says Duclos, who revels in upcycling. His passion for knives and antiquities originally began as a collector, when he’d spend upwards of $750 on specialty custom knives. The cost began to take its toll and eventually he decided to make his own. Today the hours melt away as he shapes, hones, etches, and refines his masterpieces to a mirror polish. The tang inside the handles are a vision of detailed filework. The dyed boxwood elder handles fit the hand like a glove. And the luster of the blade, imbued with the distinct hamon of a Japanese master, proves his craft. The hamon—that wavy line running down a blade—denotes the separation from the hardened edge of the blade and the softer spine and is the mark of a true bladesmith. But Duclos’s knives are more than just art pieces, they are also functional tools, holding their cutting edge longer than the average knife.

That’s why the discriminating will pay handsomely for a kitchen knife made by Duclos. “People will spend $350 or more on a knife,” he says. “Some people just want a beautiful vegetable knife.” While fantasy knives may be made from an old file or railway spike, kitchen knives are forged from food grade barstock steel. Duclos also assigns them amusing nicknames. Like the Steak Slayer, The Elite, Kitchen Fighter, and Fantasy Croc-Killer. “I started naming all my knives,” says Duclos. “Not as much now. But if a knife has a personality to it, I’ll give it a name.” An enthusiast of antiquities, Duclos has also created replicas of artifacts such as diptychs, an ancient Roman writing tablet which predates parchment use. Each side of the tablet is hollowed out wood filled with beeswax that is hinged together like a small book. A metal stylus, embedded inside holds a pointed end to scratch notes into the wax and a flat end to smooth it out and refresh the writing surface. Expanding his work, he’s also now delving into sculpture. His latest piece is a spectacular natural burl sculpture, nearly as tall as he, embedded with turquoise and hand polished for over 600 hours. INGREDIENTS: 2 cups of large shell on shrimp 6 cloves of garlic
1 tbsp Curry Rub (Metropolitan Chef- Barrie Olive Oil Co.) 3 tbsp Hot Pepper Peach Jam (Stonewall Kitchens - Barrie Olive Oil Co.) 2 tbsp Harissa Olive Oil 1 lime
DIRECTIONS:
Quickly pull the legs and tails off the shrimp. Using a non-stick frying pan on a medium heat. Peel and very finely slice the garlic, fry with 2 tablespoons of Harissa Olive Oil until crisp. Remove the garlic from the pan leaving the Olive Oil remaining in the pan. Stir the curry powder into the Harissa Olive Oil, then add shrimp. Sautee for 4 minutes, or until the prawns are cooked through, tossing regularly. Stir in the Hot Pepper Peach Jam and stir for 30 seconds, taste, season to perfection with sea salt and black pepper, then dish up. Toss the crispy garlic on the shrimp and finely grate over half the lime zest and serve with lime wedges, for squeezing over the dish.

Feasting with famed chef Michael Smith in PEI by BARBARA RAMSAY ORR
C
hef Michael Smith is on fire — and that’s a good thing, both for the Canadian culinary scene and for anyone hoping to pay a visit to our smallest province, Prince Edward Island. The Inn at Bay Fortune, a scrubbed and windwashed gem overlooking the Atlantic Ocean, is a 15-room boutique hotel, the only five-star property on the island. It’s the place from which Michael Smith launched his career as a celebrity chef, with the warmly received televised cooking series The Inn Chef in the 1990s. He went on to capture the hearts of cooks and foodies with his down-to-earth approach to good food, and his ahead-of-the-curve emphasis on local producers and ‘farm to fork’ eating. After many television projects and 10 cookbooks, the talented chef has closed the circle, returning to his origins to make his culinary dream a reality. With wife and partner Chastity, he is now the innkeeper at Inn at Bay Fortune, as well as the executive chef and primary cheerleader. I came to the Inn because I’m a foodie and a big fan of the chef, but I would have come just for the accommodation experience. The Inn is small, an intimate establishment where it’s easy to feel as if you’re a guest at the (elegant) home of close friends. Rooms vary in size — mine, in the tower, was smallish — but each one is detailed to perfection. The feel is beachy, with soft
greys, blues and lots of white; many of the textures, finishes and elements are natural and local. All of the rooms are washed with light from plentiful windows, and paintings by PEI artists hang on the walls. The common rooms are spacious and bright, with polished wood floors, a large fireplace and a gentle coastal palette. The dining areas are lined with windows giving on to views of the sloping lawn and the bay. Surrounding the Inn itself are acres of farmland and gardens, the primary source of most of the ingredients for the dishes served in the dining room. Touring the farm with Michael Smith was like a quick course in responsible living — and a foodie’s dream come true. The man is an inspiration for doing things well, being gentle with the earth, and celebrating the bounty we have around us. “We are so blessed to be cooks here. We are surrounded by farmers and fishermen and culinary artisans of every type and stripe. That’s what makes Prince Edward Island one of the most unique culinary destinations in the world,” he tells me. “This island is remarkably rich, with abundant produce and all that the seas provides. Not only that, there are dozens of local producers who harvest the best oysters or make things like black garlic or preserves or artisanal vinegars. The local bounty is virtually endless.” It was enlightening and inspiring to hear him talk about how the Inn’s kitchen uses everything it can from the garden, about what a blessing it is to make a salad from ingredients that were picked just minutes before. In a pen near the back of the farm three pigs happily snorted and snoozed in the shade. “Today, it seems as if we have lost the connection with our food and where it actually comes from,” explains Smith. “These pigs are part of our commitment to rebuilding that connection. The cooks have given them names, the three of them eat like kings and they will enjoy a lovely summer, with one bad day at the end.” And then it was time for the main event, the celebration of food that brings guests from across Canada and abroad to this little inn: The Feast at Fireworks. Virtually everything we eat will have been cooked over flames — either in the outdoor fire pits, the smokers, or the massive wood-fired oven in the centre of the dining room. The Fire Brigade, as Smith calls his team of well-choreographed servers, sous-chefs and chefs, keep the fires stoked and the guests superbly fed. sipping in the garden. It begins on the lawn outside, where guests mingle, sip handcrafted cocktails made from artisanal spirits and savour starters like pork roasted over the outdoor fire pit and served on grilled homemade pitas topped with an edible flower. There are fresh oysters on ice at the bar, just harvested from Colville Bay and perfectly paired with a glass of chilled Benjamin Bridge bubbly. I’m given a lesson in shucking, and then get to taste the result: a perfect plump oyster topped with frozen Bloody Mary slurry—easily the best I have ever eaten, briny and chilly and just slightly salty. There is a pre-dinner toast, led by Chef Smith standing on the grass below the flags of Canada and Prince Edward Island, welcoming the guests and thanking the many people who helped make the feast. And then we dine together. Part of what Chef Smith believes in, and that he fears we have lost, is the joy of sharing food communally. So the Feast is served at long butcherblock tables where guests become a family for the evening, and soon it seems as if we have 64 | GoodLife South Simcoe Summer 2018
known our dinner companions for years. The first course is a thick and seafoodheavy chowder, served like a work of art, complete with an anchor-shaped biscuit. There is, of course, fresh local lobster, as well as choice island specialties in the multi-course meal. The salad is a masterpiece, composed of lettuces, herbs, leaves and seeds from the garden and accompanied by a trio of purees. There’s even ‘edible dirt,’ a melange of seeds and nuts. Afterwards we hunker around the outdoor fire with our new best friends, roast homemade marshmallows and enjoy fireworks that light up the bay. In the morning, breakfast carries on the flame-fired theme, with home fries, eggs and mushrooms served sizzling in a cast iron pan. Locally made jams and jellies, freshly baked bread and house-cured bacon are all delicious ways to greet the morning. There are colourful fishing villages, lobster dinners in quaint town halls and artisanal shops and galleries sprinkled all over the island.
