Our two narrow-gauge railways run through the heart of the Snowdonia National Park and provide the perfect way to relax and enjoy the magnificent scenery - during a car-free, care-free journey in comfortable carriages complete with on-train toilets and an ‘at-your-seat’ buffet service. Trains run throughout the year with a daily service from late March to the end of October. There is always plenty to entertain the whole family, both on and around the railways - you can ride the trains all day; you can take a shorter trip to one of our stations and explore the local villages and countryside at your leisure before returning on a later train; or you can visit us for one of our popular, ‘family-friendly’ special events. Launches into Fitness For 2012, the spa decided that as well as offering heavenly pampering experiences, it was time to put fun and fitness on the agenda. Our personal trainer and fitness instructor, Ceri, came up with some great ideas which made the most of all her existing skills. Determined to get our existing members involved we launched Kettle Bells earlier this month

or those of you that haven’t heard of Kettle Bells or Kettlercise, it’s an amazing form of exercise that combines the benefits of cardio vascular exercise and weight lifting. As many of you might already know, lifting weights can be as effective for weight loss as running! Many celebrities such as Penelope Cruz and Jennifer Aniston are testing this theory and have chosen Kettle Bells as their fitness weapon of choice. It’s keeping them lean without adding bulk. Named kettle bells, because the hand held weights actually look like kettles – it’s a fun and inexpensive piece of equipment that you can even use at home. Since launching the classes earlier this month, participants

have commented that they already feel fitter, leaner and have lost weight after only a few classes!

Increase levels of HDL or “good” cholesterol - reducing the risk of developing heart attack or stroke Controls blood pressure - reducing the risk of developing heart disease Boost the immune system Boost self-confidence and help prevent depression, exercise releases endorphins, the body’s natural well being and pain killing hormone Improves lung function – your lungs develop greater capacity enabling you to take in oxygen to nourish your cells. Exercise with weights will strengthen and tone those muscles. Muscle is an extremely active tissue which is very effective at burning calories Different exercises can also help with all sorts of health niggles, such as digestion, poor posture, lower back pain and sleeplessness.

But what types of activity count? To stay healthy most adults need to do two types of moderate physical activity at least twice weekly – Aerobic

Basically any exercise that raises your heart beat and promotes a mild sweat. One way to tell if you’re working at a moderate intensity is if you are still able to hold a conversation. Depending on your age and fitness level, you should aim to achieve at least 30 minutes of moderate intensity exercise at least 5 times a week. This can be broken down into 2 x 15 minutes a day or even 3 x 10 minute sessions. It is possible to achieve this by making simple changes to your everyday routine Examples of everyday activities that count include: • • • • • • • •

Walking up stairs instead of using lifts Walking short journeys instead of driving – e.g. park you car further from the supermarket door Doing the housework at double-time DIY and gardening Go for long walks at the weekend or when you can Walk the dog (or a neighbours dog!) Take a walk around the block in your lunch break Walk the children to school if possible (they benefit too!)

Hailing from Denbigh in North Wales, Bryn’s love for cooking began when he started working at his local bakery. Since that humble beginning, Bryn has worked in some of the most prestigious kitchens in London and with some of the world’s most stellar chefs. In 1997 he began work under Marco Pierre White at The Criterion, went on to work under Michel Roux Jnr at Le Gavroche for 3 years, was Senior-Sous at The Orrery for four years and then moved to open Galvin at Windows with Chris Galvin, before opening Odette’s in Primrose Hill, London for Vince Power in 2006, and taking over as Chef Patron in 2008. In the same year that Bryn opened Odette’s, he was chosen to compete in the first series of the Great British Menu on BBC1. Competing for Wales, Bryn triumphed with his fish course, Pan-fried Turbot with Oxtail and Cockles, which he went on to cook for the Queen’s Birthday

Lemon Posset, Strawberries & Basil Who couldn’t fall in love with this wonderfully sharp and refreshing yet decadent treat? It’s a dream of a dessert. I love to see chemistry in action as the acid in the lemon works its magic to set the cream. I serve this with Shortbread for added crunch. If you can’t get strawberries, a plain posset is fantastic, too. Serves 4 For the posset juice and zest of 2 lemons 500ml double cream 125g caster sugar For the strawberries 400–500g strawberries 1 tbsp sugar handful of baby basil leaves, or larger basil leaves torn at the last minute

Inspired by Bryn’s first book, Bryn’s Kitchen (Kyle Cathie 2011), Cegin Bryn reflects the Welsh influences on his cooking and commitment to local produce. In addition to regular appearances on the BBC’s Saturday Kitchen, UKTV’s Market Kitchen and ITV’s This Morning, Bryn also regularly demonstrates his skills at national events and food festivals, has created recipes for Morrison’s new ‘M Kitchen’ range and endorses Victorinox knives.

Put the lemon juice in a heat proof bowl and set aside. Bring the double cream, the sugar and the lemon zest to the boil in a heavy-based saucepan over a medium heat. As soon as it reaches the boil, remove from the heat. Pour the simmering cream onto the lemon juice – you must do it this way round: if you add the lemon juice to the hot cream, it will curdle. Watch the cream begin to thicken as it hits the lemon juice, then pass the mixture through a fine sieve into a clean bowl. Divide the posset equally between four heatproof glasses or ramekins, and set aside to cool. Then place in the fridge for at least 2 hours, or until set. To prepare the strawberries, hull and quarter them and place in a bowl. Sprinkle with the sugar and leave to sit for about 40 minutes, until they release their juices, then add the basil leaves. To serve, divide the strawberries equally and place them on top of each lemon posset. Pour over the strawberry juice and serve cold. Bryn’s Tip You can make this dessert the day before serving; just keep it covered in the fridge.

a little background on

Snowdonia animal sanctuary Snowdonia Animal Sanctuary is based near Betws-y-Coed in the beautiful North Wales countryside. We are a registered nonprofit making organisation who are self-funded and rely totally on donations and the hard work of our volunteers. We are also a registered boarding kennels, but our main vocation is the rehabilitation and rehoming of dogs who exhibit some form of challenging behaviour. We have successfully rehabilitated dogs deemed too challenging to be rehomed by the RSPCA, local authorities, many other rescue organisations and the police. We also rescue and rehome dogs who have no serious issues, but their owners can no longer keep them due to personal circumstances or they are next in line to be put to sleep by local authorities. We do not believe in destroying healthy dogs, and have successfully rehabilitated dogs of many breeds to the point where they can be rehomed with a suitable owner and in a suitable environment. The Snowdonia Animal Sanctuary was incorporated as a registered non-profit making organisation in July 2010. Previous to that, we had been taking in dogs for re-homing since 2002. However, the number of requests for re-homing and rehabilitation work dramatically increased, resulting in a massive drain on Anne’s financial resources. The sanctuary is run from a licensed boarding kennels. Initially, the profits from the kennels covered the upkeep of the few dogs in rehome and rehabilitation, but now we rely on donations to cover the cost of food, care and treatment. her dedicated and loyal team of volunteers, none of this work would be possible. Anne has had great success with rehabilitating dogs who have been emotionally shattered and seriously physically abused or neglected. Some of the most severe cases, as well as a few who are too old or disabled to re-home, have remained with Anne as resident dogs. A tiny minority of people have disagreed with our philosophy of only rehoming dogs into homes, and with people, where we feel that there is a good chance of a successful, long-term relationship developing. This, added to the fact that we take in a lot of dogs who have been emotionally and psychologically traumatised, means that we do not have a high turnover of dogs, so we make very little money from rehoming/adoption donations. Anne, her family and the volunteers work tirelessly to exercise, train, socialise and rehabilitate all the dogs several times each day. However, a constant stream of donations and people willing to re-home these dogs, instead of buying directly from breeders, is critical for the continuing care, welfare, rehabilitation and re-homing of the animals in our care.

“British” Barbecue As the Summer warms up we all love to spend more time in the garden, not just sitting and drinking, but cooking and dining

too. It seems such a familiar Summer tradition that it is difficult to believe that it only started to take off in the 1960’s.

Very much an American invention, it was the development of the kettle barbecue by the American company Weber, which allowed whole joints of meat to be roasted outdoors, as well as the usual griddling of sausages and burgers. In fact the very first kettle barbecue was made from a metal flotation buoy which was sawn in half! Gas barbecues were the next step forward, giving much greater control over outdoor cooking, but purists will insist that only charcoal will give you that authentic barbecue flavour. Barbecues are available for every budget, from a few pounds for a disposable barbecue to £4,500 for a top of the range “Grill Centre” which is more of an outdoor kitchen than a barbecue! Weber have remained at the forefront of barbecue development with the introduction of their “Grill Academy” in Oxfordshire. Here the dedicated barbecue cooking school runs courses throughout the year, teaching cooking techniques enabling you to grill, roast, smoke or bake almost anything on your barbecue. In Summer they also take to the road in a huge silver caravan touring Garden Centres and food festivals with demonstrations and tastings undertaken by experienced chefs. Fresh herbs are a vital addition to good quality meat, fish and vegetables for outdoor cooking so plant up pots on your patio now to ensure a plentiful supply of herbs all Summer long. Favourite herbs for barbecue cuisine include parsley, basil, chives, oregano, marjoram and rosemary. Chilli peppers are another favourite for spicing things up and are easy to grow in a pot if you have a nice sunny sheltered position.
