Santa visits both of our railways during December - on the Welsh Highland Railway he is joined by a band of Merry Elves for a journey from Caernarfon to Waunfawr and return... while on the Ffestiniog Railway Santa enjoys a traditional Victorian Christmas train ride from Porthmadog to Tan-y-Bwlch and back. Santa travels on the trains and chats and jokes with the children as he gives out presents along the way. Adults are not forgotten however, as they enjoy a glass of sherry and a mince pie during the journey - making this a day to remember for all the family! Well Hello, I am very happy to be bringing you all the latest goings on either in my world or in the showbiz world, every month. Hope you had lots of trick or treaters for Halloween and enjoyed some fireworks …does this mean we can now talk about IT…you know the ‘C’ word …..Christmas! Can’t believe I still haven’t bought any presents at all and I am skinto!! I went to an awesome Halloween party, more about that in a moment.

ut first congratulations to the Echo in Liverpool who once again played host to the MOBO’S for the 17th Annual MOBO Awards, great night was had by all who attended. Emeli Sandé(nominated in 5 categories) and was the top winner, it looked like a tough job carrying all three awards for best album, best single and best female ……Emeli returned to the Awards to perform, incredibly well, ‘My kind of Love’, as did JLS who were said to have arrived on Easyjet and performed ‘hottest girl in the world’. They also went home with the gong for best video and London rapper Plan B scooped Best Male Act and Best Hip Hop / Grime Act. Rita Ora, who flew in from her tour of the US for the occasion and to collect her first ever award also did well. She won Best Newcomer. Rita, tweeted her delight: “I won BEST NEWCOMER thank you to everyone who voted it’s the First thing I’ve ever won!!” Not forgetting 90s American pop trio TLC who were awarded a special award for their Outstanding Contribution to Music Personally I am counting down to see Robbie Williams in a few weeks, so excited. I am sure he must be smiling, after making it to number one with ‘Candy’ on the big top 40. He tweeted a picture of his single’s cover on its release day and is of a big white and pink head! Also still smiling must be Kelly Osbourne who is looking great at the moment and must be feeling it to as she has won The Ultimate Style Icon award at the Cosmopolitan awards tweeting that she is still ‘in shock’. I just love live music, I went to see Muse recently they
were absolutely incredible! They kind of got engulfed in a music pyramid on stage ….the effects were brilliant, except I didn’t half feel old when I was sitting high in the gods at the 02, scared of heights!! As one of my favourite west end shows is Wicked (just adore defying gravity!) I decided to go to my friend’s Halloween party as Elphaba and have only just about got all the green paint off!! Serves me right for having too many drinkies on the weekend ….I didn’t even know Boxer David Haye and Toploader were in the room with me! I have Alan Carr to thank for that, tipping me over the edge with wine from his shoulder pads- yes it is true!! Fab idea though for going out next weekend, cheap night!! Only joking, I wouldn’t dream of it! It seems a spat has broken out between Lady Gaga and Calvin Harris following an interview he did in which he admitted he turned GaGa down saying ‘I was busy”. Gaga explained that she had never emailed him etc …Yet Calvin hit back explaining it was her label that emailed him and that it was back before she became a star …the good news is that they have made up now, phew! We can all sleep!! If you haven’t seen the new Bond movie- you must go, I am not a big Bond fan admittedly but this movie is the best Bond ever …the opening sequence is incredible!

The Spa at Tre-Ysgawen
Spa & Fitness It’s that time of year where you might be panicking about the weight you might put on over Christmas. Dark nights often mean cosy nights in, comfort food and definitely fewer trips to the gym. So how about starting a weight loss regime now that doesn’t mean starvation diets, living on cabbage soup or exercising morning and night. We often forget that weight gain happens over a long period of time so why is it we expect to lose it so quickly? I’m going to suggest that you spend the 6 weeks leading up to Christmas aiming to lose 1-2 lbs a week. Small changes can go a long way so here are my tips:1 - Have a cut off point each day, for example don’t eat after 7pm 2 – Go to bed on time. The longer you’re awake the more likely you are to snack – especially in the evening. When we sit down to a good movie or programme, we associate this with eating so before you know it, out comes the popcorn or the bag of sweets 3 – Start drinking more water! It’s the old cliché but it’s really amazing for weight loss. Hunger pangs are often just your body’s way of telling you it’s thirsty. If you feel hungry and it’s

not a mealtime, try a big glass of water first. 4- Eat to satisfy your hunger but not until you’re full. Make sure you feel comfortable after a meal – you shouldn’t need to undo a button or two. 5- Set a routine for mealtimes – it does your body the world of good and will stop you snacking and bingeing. 6 – If you do need a snack, the best ones are fruit, nuts, yoghurt and freshly squeezed juices

7 – ‘Cheat’ days are not necessarily a good idea because it normally ends up being an over indulgent day that takes a few days to recover from. Instead, I suggest one or two cheat ‘meals’ or ‘snacks’ per week 8 – Completely cut out the junk food, swap white flour for wholemeal, white rice for brown and keep the evening meals light. 9 – Find an exercise you like and try to exercise 3 times a week – I suggest Kettle Bells at Treysgawen Hall, a great combination of cardio, strength and resistance that helps with weight loss 10 – Be patient – most of us spend a long time putting weight on so we should be patient when trying to lost it. Slowly is the best way to keep it off long term. If the above sounds like a lot to do all in one go then take baby steps week by week:-
Week One – eat your normal meals but reduce the portions and don’t pick between meals Week Two – increase the water intake! Week Three – start exercising for 20 mins a day, at least twice a week (I recommend Gillian Michaels 30 day Shred, available on Amazon) Week Four – if you’ve done the above, you should have lost at least 4-5 pounds by now!

big day. It’s really tasty, light and the perfect way to start

to and then we don’t leave the table till we’re fit to burst. It’s the only time of year when we let ourselves go and
eat our body weight in chocolate, nuts, crisps and mince pies. Well not me…..
When I was a child my mother had made mince pies and had one on a plate on the floor cooling when I ran in to the living room bare foot and stood on it! The fresh out of the oven molten lava filling welded on to my little
foot and I spent the next couple of hours with my foot in the sink of cold water. I have never eaten a mince
pie since and it’s one Christmas tradition I will never partake in.
I am lucky as I have never worked a Christmas day in
my career. This is very rare for a chef but I really believe Christmas day is for family and friends and even more
so these days as I have a two year old daughter and wife to be with.
The Christmas season is full of wonderful ingredients to be inspired by like game, Jerusalem artichokes, celeriac, beetroot, pumpkin, shellfish, nuts, citrus fruits, apples and lots of wild mushrooms.
The recipe I have done is my Christmas starter for the

Chicken liver parfait with mulled wine jelly and toasted sourdough • • • • • • • • •
300g of trimmed chicken or duck livers 250g Butter 1 large egg 100g thinly sliced shallot 1 sprig of Thyme 1 clove of Garlic thinly sliced 100ml Port 285g mulled wine 2 gelatine leafs
Put the shallot, garlic, thyme and port in a sauce pan and reduce till thick and syrupy. Leave to cool. Place the butter in a sauce pan and melt. Leave to cool to room temperature. Add the livers, butter, eggs and shallot reduction into a food blender and liquidize. Pour the mixture through a fine sieve and season with salt and pepper. Pour into oven proof ramekins and place in tray. Fill the tray half way with boiling water to make a ban Marie. Bake on 160oc for 25mins or until the parfait has a slight wobble then put I the fridge in a tray of ice water to speed up the cooling proses. Put the gelatine in cold water to soften. Put the mulled wine in a pan and bring to the simmer. Add the gelatine and whisk. Leave to cool and pour over the parfaits to set. This will keep them fresher as it stops the air getting to them. Serve with toasted sourdough or bread of your choice and nice chutney. Enjoy!

Last month, the BBC 1 Countryfile programme filmed at Anglesey Circuit, showcasing the dramatic setting and the wide, exciting, undulating track offered by this fully licensed motor racing circuit. So what can you expect from a visit here?
As a spectator – Car and Motorcycle Race Meetings

Each race meeting would normally have several different races for a variety of categories ranging from Formula 3 to Saloons and Sports cars and our motorcycle race organisers include events for Sidecar Championships, National solo championships and with special events including the Moto Super Prix of Wales and the Anglesey Grand. The number of starters depends on the type of event, which circuit is in use and the specification of the competing car or motorcycles.
Stage Rallies
Referred to as a single venue event as a series of rally stages take place on different parts of the various circuit layouts or, on occasion, using some of the service roads as well. The competitors’ cars use the specially prepared stages, offering spectators continuous action.
Car Sprint
Car sprinting is basically time trials for a wide selection of different vehicles. The cars start individually and usually complete a lap and three quarters of the circuit, finishing their timed run

at a different place to the start, thus allowing the next car to start before the previous car has finished. Interest for the spectator would often be the different types of cars assembled in the paddock more than the track activity. So if you are a car driver and, having enjoyed your drive experience, tried track days you want to move on to a competitive event how do you go about it? Sprinting is probably the least expensive form of competitive motor sport. MSA speed events, which include speed hill climbing and sprinting, still offer the opportunity to participate in a normal road car. The production classes are for licensed road vehicles and as yet do not require special equipment, i.e. roll cages, special seat, a full harness. So your perfectly normal car can be a competition car for the day. It will require scrutineering, as a safety check in this case, race number on the doors and bonnet and a simple timing strut protruding from the front. This can be a piece of plastic or aluminium which does not require much in the way of engineering skill to cobble up. Speed events can be very sociable. The track time is, of course, quite restrictive as you are out on your own although it is normal for the next car to start as the previous car is towards the finish. The competitive nature of the event creates a totally different atmosphere as everyone is comparing their time with other competitors and thinking of ways of gaining more speed. Most events would offer two practice runs and two to four timed runs depending on conditions. The production classes are the obvious category to just have a go and see what it is all about. However, there are classes for just about any type of car, for example rally cars, modified road cars, classic cars, single seaters, sports racing cars – it is quite varied. The only bad news is that the MSA in their wisdom have a ruling that as it is a fully insured, permitted event, competitors must hold a speed competition licence. A speed licence, now referred to as a Non-Race National B, costs £41, is valid for one year and you do not require a medical. You will need MSA approved helmet, race suit, gloves and boots. The Chester Motor Club, who have run very successful events at the circuit, have kindly offered to run a joint venture with the Anglesey Circuit Club in March 2013. This may be just the opportunity you have been looking for. Please contact the circuit office for further details. And who knows, the next stop might be your ARDS racing licence!

Time to plant
Raspberries Autumn is the best time to plant a new raspberry plantation; the field grown canes are lifted from early November onwards as the leaves are dropping and usually sold in bundles of 5 or 10, potted in compost. Buy them now whilst fresh before they have time to dehydrate or suffer from frost damage. Soil temperature is still relatively warm and coupled with good moisture levels the canes will establish well with minimal losses.

s raspberry canes will remain in situ for at least 10 years it is a good idea to incorporate plenty of organic matter into your soil prior to planting, dig it over thoroughly and remove any roots of perennial weeds that are visible.Summer fruiting raspberries will also need a robust support system consisting of sturdy 6ft posts 10 ft apart along the row with galvanised wire stretched between the posts. Separate the canes and plant them 18” apart along the row, firming them in well. A sunny position will give the heaviest crops , but raspberries will tolerate some shade. When growth starts to appear in Spring the cane can be cut back close to ground level. New canes will develop around the base of the old cane and as they grow they should be tied in to the galvanised wires. |These canes will go on to fruit in the following year.Subsequent pruning consists of cutting out all canes which have born fruit, retaining the newly produced canes. Autumn fruiting varieties however fruit on canes produced in the same year. Pruning is much simpler, consisting of cutting back all canes to ground level in February. “Autumn Bliss” is the most popular autumn fruiting variety cropping from August until October. Flavour is good, yields are high and growth is compact and sturdy so support is not needed. “All Gold” is a sport
of “Autumn Bliss” with distinctive yellow fruits and an exquisite sweet flavour. “Glen Clova” is a very popular Summer variety producing heavy crops and is one of the earliest to fruit. “Malling Jewel” is a reliable summer variety with excellent flavour and compact growth. “Glen Prosen” is a maincrop variety with the bonus of spine free canes. It is a heavy cropper and has good flavour.
