Welcome to Issue 16 of Goodtimes Magazine 2 Years ago the very first Goodtimes Magazine was published. Since then the magazine has grown and grown in popularity and has established itself as the biggest free magazine in the area. We set out with the idea of producing a ‘feel good’ magazine, showcasing local events and businesses, publishing something a bit different to the normal advert packed regional magazine. We wanted something that would keep our readers interested, not just page after page of adverts! We are delighted to say that you seem to like it, indeed we are finding that copies of the magazines are being taken quicker than ever from our distribution outlets. And feedback from our advertisers indicates that more and more of you are using the businesses we feature. Supporting local businesses is more important than ever and we appreciate all your support. 2011 was a busy year for us, we published our first North Wales Homes & Gardens Magazine which is available every 2 Months and our North Wales Weddings Guide, which is an annual publication and will be available in August. Able Fitness After almost three decades as a professional fitness instructor and personal trainer, having created and taught classes for local authorities, ranging from aerobics to circuit training, aqua and indoor cycling then studio managed and co-ordinated at a private fitness club, in 2008 I took the step to set up my own private Health & Fitness Studio, Able Fitness. I resigned from my full time career as an NVQ Fitness Assessor and Examiner, in order to concentrate on this important career move.

“I have spent many years in the industry and hold, as well as many other qualifications, Level 3 Personal Trainer. I am a member of the Register of Exercise Professionals and hold appropriate Health and Safety, Equal Opportunities, Equality and Diversity and First Aid certificates. I also have the Wright Foundation GP Referral qualification, Exercise to Music Level 2, Fit Ball Level 2, Level 2 Circuit Training, Muscle Max, N.A.B.B.A. Weight Training, Speedo Aquatic Certificate plus too many more to list. Because I believe it is important to be completely qualified in order to teach safely and effectively I make sure I stay abreast of all the latest developments in techniques and equipment, and regularly attend workshops and seminars to up-date my skills. Even though I have been in full time employment since leaving

school, the decision to ‘go it alone’ was both daunting and exciting. Running my own business gives me the opportunity to utilise all the knowledge I have gained during the many years of teaching and assessing for others, without the distraction or rules set by a company regime. I have established and constantly maintain my own very high standards. In Able Fitness I have helped and encouraged many customers to lose weight, get fitter and adopt a positive healthy lifestyle. My aim is to help my clients understand the vital importance of healthy living, and then provide the help, advice and motivation to live that lifestyle! I have an 80% success rate, because as I often say to people ‘you have to want it to do it’, if a customer is not prepared to put the hard work into changing then there will be no point in starting. I am not a magical fairy and have no wand. Just as I left the safety and security of full-time employment, so must a customer think carefully about making a massive life change, it’s a big move. If a customer cannot commit then the transformation

will simply not happen. This is why I encourage clients to value changes, big or small, which can be made in their lives, enabling them to achieve their goals. My clients will feel positive and motivated, and want to continue eating healthily and exercising regularly, even after my sessions with them are concluded. Make this year

a SMART New Year

The Christmas tree has been put away, the last of the chocolates eaten and New Year’s resolutions to get fit, lose weight, drink less, quit smoking or eat healthily are made. BUT how long will they last? Most of us set targets and goals that are unrealistic and therefore unachievable, even if we convince ourselves they are not. This is where the SMART format helps. By Carol Mead of Able Fitness

But what does it mean? Setting a goal gives you a purpose, something to aim for and look forward to. A goal can encourage you to focus your time and energy on a specific objective, which increases your chances of succeeding. Be positive and visualise the end result, if you have something to focus on you will succeed. S = specific: Be honest with yourself by making clear specific goals, think about why you want to make that change. Instead of saying I’m going to lose weight, which is unclear, try saying I’m going to lose 1lb of excess body fat a week. This way you won’t give up. M = measurable: Put a number against what you want to achieve. Instead of focusing on simply eating more fruit, keep on track by saying I’ll eat three pieces of fruit a day. A = achievable: Don’t set unrealistic goals, keep them small and progress slowly. If you don’t achieve the goal you have set, you are likely to feel a failure and give up. Instead of saying I’m going cycle 25 miles everyday, say I’m going to cycle 5 miles every other and progress gradually.

R = relevant: Make sure the goal is suitable for you and you alone. If it doesn’t appeal to you and you don’t enjoy it you will soon give up. Do something you want to do, if your friend suggests joining a local gym and you hate the gym then don’t join. Find another form of exercise that makes you happy, such as dancing, badminton, walking or swimming. T = timely: Give yourself a shorter deadline and set your mind for that date, this will help to motivate you and you are more likely to succeed. Mark the date you are aiming for on the calendar and tick off each day until you reach it. If you have already written down a list of resolutions, look at them again and decide which is the most significant and realistic. Choose the most important goal and concentrate on focusing on it. Food Glorious Food! Many of you attempted the recipe idea’s we featured in 2011 courtesy of Matthew Briddon, head chef at The Tavern 1924, Red Wharf Bay, Anglesey. We know because you contacted us to say how much you enjoyed them! Great to hear that they were a big success with you and we will continue to bring you some more in 2012. If you missed any of our issues in 2011 then don’t worry, they were so delicious that we have decided to include them all in this issue. Enjoy!

Duck Cottage Pie

(serves 4 people)

Ingredients • 4 x confit duck legs • 2 x finely diced carrots • 2 x finely diced onions • 2 x sticks of finely diced celery • ½ pint of good jus or chicken stock • Dash of Worcestershire sauce • Dash of brown sauce • 4 x large potatoes (mashed with butter milk and salt and pepper) • 1 sprig Rosemary • 1 sprig Thyme • Vegetable oil • Salt & Pepper

Method 1. Preheat the oven 195oC (gas mark 5) 2. Heat a little vegetable oil in a large frying pan, add the diced carrots, onions and celery, cook until they have colour and are soft. 3. Add the brown sauce and Worcester sauce and cook for a further 2 minutes. 4. Shred the confit duck from the bone and add to the mixture, finish with the herbs and stock, reduce until the mixture is halved, season to taste. 5. Place the mixture into an ovenproof dish, cover with the mashed potato and bake for 25 – 30 minutes.

Sautéed Dolmeinir Lamb Chops glazed with fig and rosemary honey, with fondant potato and split pea and green peppercorn sauce. Fig and Rosemary Honey • 1x Jar of good Quality Honey • 3x Fresh Figs (or the same quantity of dried figs) • 2x Sprigs Fresh rosemary Method 1. Heat the Honey a little 2. Add Figs and Rosemary and Warm for two minutes 3. Store in an airtight container until needed Sautéed Dolmeinir Lamb Chops • Ingredients per person • 3 x Lamb Chops per person • 1 x Small Potato per person • 50g Split peas or frozen garden peas if you wish per person ( if using split peas you will need to soak them 24 hours before) • 6 x Green pepper corns in brine per person • Chicken stock as needed • Salt • Pepper Method 1. Season Lamb with Salt and pepper, allow to come to room temperature. 2. Peel and shape your potato into oval shape. Season and place into an oven proof dish, cover with stock. (The stock can be Chicken, Lamb or just water) slow cook at 185’c or until tender but still holds its shape. 3. Take your pre soaked Split peas with the green peppercorns and add a little water to cover. Season and cook until tender. This will make a sauce while cooking. Add more water or stock as needed. 4. Heat a Large Pan, then sauté your lamb to your decided liking, remove from heat and add your honey sauce and rest. 5 . Plate, Eat and enjoy.

White Chocolate, Coconut and Natural Liquorice Panna Cotta with Glazed Strawberries Ingrediants • 1 x pint double cream • 90g caster sugar • 30ml Malibu (coconut liquor) • 125g white chocolate • 4 x gelatine leaves • Pinch of natural liquorice root (optional) (found in any good health food shop) • 24 fresh strawberries • 2 x tbsp strawberry jam • 2 x fresh mint leaves Panna Cotta Method 1. Soak the gelatine leaves in cold water until they soften. 2. Over a low heat infuse the cream with the caster sugar, Malibu, white chocolate and liquorice until just below boiling. 3. Add the gelatine and mix until dissolved. 4. Split the mixture evenly between 6 ramekins then chill until set. Glazed Strawberries Method 1. Warm 2 tbsp of strawberry jam with 2 tbsp of water. Let the mixture cool slightly then add the finely chopped mint leaves. 2. Cut the strawberries in half and glaze with the mixture.

Dolmeinir Lamb Falafels with quick pickled salad, rosemary roasted peanuts and a Y Cwt Caw goat’s cheese, herb and lime yogurt sauce and a sweet chilli dip –in sauce. Lamb Falafels (for a vegetarian option just leave the lamb out) Ingredients • 6oz lamb mince • 1 cup of canned chickpeas (drained) • 1 large onion, chopped and fried off until coloured, allow to cool • 2 cloves of garlic, roughly chopped • 3 tablespoons of fresh parsley, chopped • 1 teaspoon coriander • 1 teaspoon cumin • Pinch of curry powder • 2 tablespoons plain flour • Salt , pepper & oil for frying Preparation 1. Fry the lamb mince until evenly browned, season to taste with salt, pepper and a mild curry powder. 2. Combine chickpea’s, fried lamb, garlic, fried onions, coriander, cumin and salt and pepper (to taste) in a bowl then add the flour. 3. Mash all the ingredients together to form a thick paste (you can also use a food processor) 4. Form the mixture into small balls, about the size of a ping pong ball, and slightly flatten. 5. Fry the falafels until golden brown, drain excess oil and season. Quick Pickled Salad & Roasted Rosemary Peanuts Ingredients • 1 carrot peeled, then use the peeler to make ribbons

• 1 thinly sliced white onion • 1 thinly sliced red onion • 1 cucumber deseeded and peeled then thinly sliced • Peanuts • Sprig of Rosemary • 1 tablespoon sugar • 1 teaspoon sea salt Preparation 1. Combine the vegetables with the sugar and salt in a small mixing bowl; let them sit for 5 to 10 minutes. 2. Rinse under cold running water, dry on a tea towel serve straight away or refrigerate for up to 4 hours. 3. For the roasted rosemary peanuts - make stock syrup by warming equal parts sugar and water; infuse this with rosemary making sure the sugar combines with the water. 4. Coat your peanuts in the rosemary syrup then place on a grease proofed oven tray and bake at 180oC for 6-10 minutes then allow cooling. Y Cwt Caws Goat’s Cheese, Herb & Lime Yogurt Sauce Ingredients • A selection of your flavour soft herbs i.e. parsley, dill, basil or tarragon • Yogurt • Goat’s cheese • Lime juice, freshly squeezed • Salt & pepper Preparation 1. Add all ingredients in a food processor and blend until all have combined, season to taste.

Banana & Twix Sticky Toffee Pudding, Toffee Sauce (serves 4) Banana & Twix Sticky Toffee Pudding • 350g dates (roughly chopped) • 4 x bananas (crushed with a fork) • 4 x Twix (roughly chopped) • 650ml water • 350g sugar • 350g self-raising • 125g butter • 4 eggs • 1 tsp bicarbonate of soda • Add the dates, water and bicarbonate of soda together in a pan, bring to the boil. • In a separate pan melt the butter, remove from heat and add the sugar, bananas and finally 1 egg at a time until thoroughly mixed. • Combine the date mixture with the egg mixture, gradually add the flour. • Bake the mixture for 45 minutes at 350 degrees F/175 degrees C/Gas Mark 4. Toffee Sauce • 1 pint double cream • 125g butter • 1 pint caster sugar • Combine all the ingredients together in a pan, bring to the boil and simmer for 2 minutes.

ROYAL AIR FORCE VALLEY RAF Valley, the home of Combat Pilot training since 1951. RAF Valley, situated on the western coast of the island of Anglesey in North Wales, has undergone many changes in recent years and now, more than ever, plays a crucial and exclusive role in training the future fast jet pilots for the Royal Air Force and Royal Navy HISTORY The role of RAF Valley has not always been to train aircrew. The Station was opened in February 1941 and was first used as a base for day, and latterly, night fighters. In 1942, the Base took on a training role and, a year later, detachments from the United States Air Force arrived to set up a Trans-Atlantic reception facility for aircraft routing both to and from America. Throughout the War years, Valley acted as a welcome landing ground for aircraft operating on combat missions and patrols over the Atlantic. From this role, RAF Valley gained its motto: “In Adversis Perfugium” - A Refuge in Adversity. Following the end of the War, the Station became a Military Emergency Diversion Airfield, remaining open 24 hours a day to receive aircraft either in difficulty or diverted from other bases because of bad weather. In 1949, Valley became a major Mountain Rescue Centre, with its own Mountain Rescue Team (MRT). In March 1951, No 202 Advanced Flying Training School (FTS) was formed at Valley, converting pilots trained on piston-engine aircraft to the more complicated jet fighters. In 1958, No 4FTS arrived at RAF Valley to train fast jet pilots - a role the Station has maintained ever since. Initially flying Vampires, the school re-equipped with Gnats (known to those who flew them as the ‘rocket powered roller skate’) in 1962. These aircraft were supplemented by the arrival of Hunters in 1967. The British Aerospace Hawk took over flying training duties in

1977 and, in the same year, a Central Flying School Squadron was established on base to train instructors on the new aircraft. No 19 (Fighter) Squadron now undertakes this role. Valley was not the first airfield to open on Anglesey. Five miles along the A5 road, towards the Mainland, is RAF Mona. Today, Mona acts as the Relief Landing Ground for Valley, and is used by student and instructor pilots alike to practice flying airfield circuits. Staff from Valley travel to Mona each morning, to provide Air Traffic Control, fire and medical cover. There are only a handful of buildings at Mona now but, when opened in 1915, Mona was a thriving airship base with, at its peak, 22 hangars and miles of taxiway around an airfield of an impressive size that included 3 runways. No 22 TRAINING GROUP RAF Valley now comes under the command No 22 (Training) Group, part of HQ Air Command at RAF High Wycombe. With the closure of the Tactical Weapons Units at RAF Brawdy and, latterly, RAF Chivenor, responsibility for providing all future aircrew to the RAF’s fast-jet front line passed to Valley, and this remains the Station’s primary function. SEARCH & RESCUE (SAR) RAF Valley is one of the busiest flying stations in the RAF and has a number of important secondary roles. The Station plays host to several Lodger Units, the longestserving of which is ‘C’ Flight, 22 Squadron, flying the Sea King Mk 3 helicopter in the Search and Rescue (SAR) role.

The unit took up residence at RAF Valley in 1956, flying the Westland Whirlwind. The crest of No 22 Squadron shows the mathematical symbol ‘Pi’ superimposed over a Maltese Cross. This originates from an earlier period in the Squadron’s history when, based in Malta, the aircraft would take off and overfly the nearby Headquarters of No 7 Group - hence, 22 over 7, 22/7, or ‘Pi’. The Squadron motto, “Preux et Audeacieux” means “Valiant and Brave”. C Flight is one of 3 detached units of 22 Squadron located at various bases around the UK. The Whirlwind saw 20 years of service at

Valley, being replaced in 1976 by the Wessex. In 2008, the Flight conducted the 8000th rescue mission from RAF Valley, making ‘C’ Flight the most accomplished SAR unit in Great Britain. Virtually all the rescue missions are flown to aid civilians in distress, be they walkers in the hills of Snowdonia, yachtsmen and fishermen in the Irish Sea, or sick children requiring rapid transfer between hospitals. Occasionally, 22 Squadron is called upon to rush donated body organs to hospitals all over the UK, so that lives can be saved. There are literally thousands of people alive today who owe their continued existence to the skill and professionalism of the crews on 22 Squadron. In 2008, the Search and Rescue Force Headquarters moved from RAF St Mawgan as a ‘lodger unit’ to a purpose built facility at RAF Valley. At the same time, the Headquarters of all the SAR squadrons (22 Sqn, 202 Sqn and the Sea King Operational Conversion Unit – 203 Sqn) located to Valley as part of the overall migration. In addition, the Headquarters of the RAF Mountain Rescue Organisation and the reformed RAF Valley Mountain Rescue Team, which had moved to Valley in a separate reorganisation, were brigaded under the SAR Force Commander. The Mountain Rescue Service Headquarters at RAF Valley supports the RAF’s four Mountain Rescue Teams at RAF Kinloss, RAF Leuchars, RAF Leeming, and RAF Valley. Each team consists of 7 full-time personnel and up to 30 volunteers. The unpaid volunteers give up their spare time for training on at least two weekends in four, as well as one evening a week. Each team trains regularly with its civilian counterparts for the best possible cooperation and effectiveness. Their high standard of training and fitness enables them to search difficult terrain rapidly and effectively in adverse conditions. Apart from their mountaineering prowess RAF Mountain Rescue Team personnel are specialists in the management of aircraft crash sites. Once an accident site is located, they can provide first aid to any survivors, assist with evacuation and guard the area until crash investigators and assistance arrives. With the exception of the Aeronautical Rescue Coordination Centre at RAF Kinloss in northern Scotland, all of the RAF rescue organisations are now based and parented at RAF Valley SEARCH AND RESCUE TRAINING UNIT Valley has another helicopter unit on Base - the Search and Rescue Training Unit, or SARTU. This unit is now a permanent detachment of the Defence Helicopter Flying School, and flies the Griffin HT1 medium-lift helicopter. SARTU is the world’s leading SAR training school, instructing all RAF helicopter pilots, navigators and crewmen, as well as providing specialist post-graduate training for

aircrew selected for dedicated SAR duties. SARTU boasts an enviable reputation world-wide, and trains many aircrew from overseas. The close proximity of large mountains, sea cliffs and the specialist training vessels and crews of AV Seaworks Ltd (formerly No 113 Marine Craft Unit), enable the Unit to teach all aspects of search planning, mountain flying, cliff and sea rescue.

ANGLESEY AIRPORT/MAES AWYR MON The opening of the Welsh Assembly Government funded and Anglesey Council run Anglesey Airport in May 2007 was the culmination of a 10-year vision to bring a regional airport facility to Anglesey. The airport provides a twice-daily service to and from Cardiff and its runaway success has taken most observers by surprise. The 3-year passenger target was exceeded inside 2 years and ways of increasing capacity on the route as well as prospects for new routes are under active consideration. RAF Valley has been a staunch supporter of the airport and are represented in all the ongoing discussions. No 4 FLYING TRAINING SCHOOL (4FTS) Returning to the primary function of Valley - the training of future fast-jet aircrew. Student pilots spend about 10 months at 4FTS - also known as the Advanced Training and Tactics Unit (ATTU). In order to be selected to attend a course, they will have already proven themselves as capable aviators on University Air Squadrons, or courses at RAF Barkston Heath, operating the Firefly, and at RAF Linton-On-Ouse, flying the Tucano at No IFTS, the Fast Jet Basic FTS. But they do not get their hands on the 550mph Hawk straight away.... GROUND SCHOOL When they first arrive at Valley, all students spend 6 weeks completing an intensive Ground School syllabus. This includes detailed instruction and examination in a number of subjects, ranging from the aircraft technical systems, to pilot navigation, avionics, meteorology and aerodynamics. They fly a demanding series of sorties in the Hawk Simulator. They are also briefed on weapons systems employed by the

front line, and taught aircraft, ship, missile and armouredvehicle recognition. Towards the end of Ground School, the students are taken into the hills of Snowdonia and made to survive for several days, with only the kit they would have available should they be shot down over enemy territory. To add realism, they are pursued by would-be ‘hunter forces’ and taught a number of survival and fieldcraft techniques. They practise building makeshift shelters from parachutes, and concealing themselves using only the natural surroundings. They have the opportunity to practice using emergency equipment, including pyrotechnics, so that, should they ever be unfortunate enough to face such a situation for real, their training ensures that they perform the correct actions instinctively. If that were not enough, they are also thrown into the Irish Sea, in order to practice life raft drills in case of ejection over water. 208 SQUADRON Following Ground School, the students then move up to No 208 Squadron, to begin their flying. The flying course at Valley is split into 2 parts. Phase One, where the students are taught how to fly the Hawk, includes skills such as instrument, formation and acrobatic flying, lowlevel navigation at 420 knots as a single aircraft, and tactical formation manoeuvring. This phase culminates with a ‘Final Handling Test’, incorporating all of the above disciplines in one sortie, which the student must pass before progressing to Phase 2 of the course, conducted on No IV Squadron, the Tactical Weapons Squadron. IV(R) SQUADRON Here, for the first time in their training, students are instructed in how to operate an aircraft as a weapons platform. For the students, this phase of training presents a very high workload - part of their effort, previously entirely taken up in flying the jet, must now be allocated to concentrating on how to use it to fight. On Phase 2, students are taught how to drop bombs, in both level and dive patterns, strafe a target using the aircraft’s cannon, fight other aircraft in air-to-air close combat, intercept ‘enemy’ fighters with the help of ground-based radar stations, and lead tactical formations at low level in order to ‘hit’ targets. The end of course standard is daunting - flying solo, the student must plan, brief and lead a pair of aircraft, on a low-level simulated attack profile, to hit several targets, some at an exact time, in ‘enemy’ territory with the constant threat of attack by a staff pilot simulating a hostile fighter. The sortie lasts just under one hour, and is the most highly concentrated test of tactical awareness and flying ability in the RAF training system. SPECIAL FEATURE Farnborough. Since then they have flown bi-planes during WW1, specialising in artillery spotting and during WW 2 operated with several aircraft including the American P51 Mustang, the Spitfire and the Mosquito operating in Battles such as The Battle of France. Following the war IV(R) Sqn took it upon itself to move into the ‘Jet-age’. It was re-equipped several times and flew jets such as the Vampire and Hunter aircraft. In 1969 IV Sqn(R) starting operating the Harrier aircraft and this was the case up until 2010 when the Harrier went out of service, becoming the longest serving aircraft of the Sqn. The Harrier was flown by the Sqn in Belize, Germany, The Falklands, Iraq, Yugoslavia and Afghanistan, making it one of the most senior Squadrons in the RAF. The IV(R) Sqn crest is a sun in splendor divided per bend by a flash of lightning. This was approved by HRH King Edward VIII in May1936. The red and black segmented sun suggests round-the-clock operations, while the lightning flash is a reference to the unit’s early use of wireless telephony for artillery co-operation. No 4FTS could not operate without the support of the engineering, operations and support organisations of the Station. RAF Valley was the first base to let a Multi Activity Contract (MAC) that covers many of these areas - but predominantly the Engineering aspects. This MAC was won by the consortium of Brown & Root and Marshall Aerospace (BRAMA) and began on 1st April 1997. Since then, the contract was re-let to Babcock Defence Services (BDS) and now falls to BAe Systems under the Hawk Integrated Operational Services (HIOS) contract. This ground-breaking arrangement allows BAe Systems as the principle contractor to support the entire military Hawk fleet using best practice and principles resulting in significant efficiencies and economies. BDS is still the largest contractor employer but know undertakes its’ role as a sub-contractor under the HIOS concept. Although the loss of uniformed personnel at RAF Valley was mourned, the contractorisation has benefited the local community greatly, through the creation of hundreds of highly skilled and well-paid jobs in an area of economic and social deprivation. OPERATIONS Operations Wing is responsible for providing RAF Valley, and RAF Mona, with first class airfield facilities for Valley’s flying squadrons and our many visiting aircraft, from RAF and RN front line jets, to aircraft from various other NATO nations. Wing Operations provides a vital role as the conduit supplying the flying squadrons with flight and flying programme management information and with an extremely busy Air Traffic Control Tower and a well-equipped Fire

Section, Valley is served as admirably as, if not better than, any civilian aerodrome. SUPPORT WING Support Wing at RAF Valley is as vital to the Station as any other asset, being responsible for Personnel, Management, Medical, Dental, Financial Budgeting, Station Services, Contract Monitoring and Chaplaincy services on Base. COMMUNITY Over the years, RAF Valley has integrated fully into the local community, helped by our children attending the two local primary schools, which teach in both Welsh and English, and the local secondary school in Holyhead. In 1981, the Station won the Wilkinson Sword of Peace, for the community services provided by the Station personnel. Valley was granted the Freedom of the City of Bangor in 1974, the Freedom of the Island of Anglesey in 1982, and the Freedom of Llandudno in 1995. In 1985, the Mountain Rescue Service was presented with the RAF Escaping Society Award. THE FUTURE With the arrival of the Hawk TMk2, the first major introduction of a new aircraft at RAF Valley since 1977, the Station is entering a new and exciting period in its long association with advanced flying training. The new aircraft is the first tangible aspect of the multi-billion Pound Military Flying Training System (MFTS) which is being introduced throughout the UK Armed Forces. Valley is vital to the future of the RAF, both in terms of providing new crews to front line aircraft and the facilities and services provided in many diverse areas. The Station’s roles continue to mature, and RAF Valley looks forward to maintaining a high profile in delivering a quality product to all of our customers, be they in the Service or the civilian community.
