Understanding the Upcoming Canadian Dairy Commission (CDC) Price Increase - February 1st, 2022 Due to the COVID-19 pandemic, there have been unprecedented and sustained inflationary pressures throughout the entirety of the supply chain. Producers have faced increased production costs for raw materials, feed, energy, and fertilizer. Overall, there has been a significant impact on the cost of manufacturing, transportation, warehousing, logistics, distribution, and packaging. In October 2021, the CDC conducted a review of Canadian farm gate milk prices and various other costs used in administering the supply management system. As a result of this review, the cost of milk used to make dairy products will increase by an average of 8.4% as of February 1, 2022. IMPORTANT TO NOTE: Item-specific increases will be higher than this depending on the butterfat content and what amount vendors are planning to add from a manufacturing standpoint to offset their rising operational costs.

Milk & Yogurt: Freeze in an airtight plastic container Note: Milk may turn yellow. Don't panic! Simply defrost overnight and stir before use. Cream: Do not freeze in a liquid state. Whip it first! Pipe/dollop on a parchment lined baking sheet & freeze overnight. Once frozen, transfer portions to an airtight container. Top a mug of hot coffee or hot chocolate OR top a slice of pie or cake to make a midweek dessert feel extra special!

GOT LEFTOVERS? When planning your menu, be creative and think ahead about multiple uses for dairy leftovers. Leftover sour cream: Add it to mashed potatoes or swap it for mayonnaise in cold salads Leftover plain yogurt: Incorporate it into cake or muffin batters (replacing oil) Leftover shredded cheese: Sprinkle it over scrambled eggs or cooked broccoli/cauliflower Extra milk: Incorporate it into a cream soup

SOY DRINK, ORIGINAL Best choice for COOKING. It is stable at high temperatures. Nutty & slightly sweet. Contains the most protein of all non-dairy milks. If using in cooking, add at the end of the recipe to minimize risk of separation.

FROZEN, DICED BUTTERNUT SQUASH Best choice for CHEESE SAUCE. Cooked butternut squash pureed in a blender alongside a few simple ingredients creates a smooth & creamy sauce that is packed full of nutrients! Substitute for some of the cheese in your 'Mac N' Cheese' recipe to help reduce cost.
