Get ready for a quick and easy Baja fish tacos recipe! Flaky white fish seasoned and blackened, then served in flour tortillas with creamy slaw and zesty avocado sauce!
Ingredients - 1 pound white fish (I used 4 4-ounce mahi mahi fish fillets), cut into 1 inch pieces - ¼ cup taco seasoning - 2 cups slaw or thinly sliced cabbage - ¼ cup mayo - juice of 1½ limes, divided (addi tional lime wedges for serving) - 8 taco-sized flour tortillas (6-inch tortillas)

In a blender or food processor combine the avocado, lime juice, cilantro, mayo (or Greek yogurt), and salt and garlic powder for the sauce and pulse until smooth. Add 1 tablespoon or milk or water at a time until desired consistency is reached. (You just want it to be easily spreadable and smooth) Set aside.

Toss slaw or cabbage with ¼ cup mayo and juice from ½ of a lime. Set aside.

Grease a skillet and preheat over medium heat. Add fish pieces. Drizzle juice from 1 lime over fish, then sprinkle with taco seasoning and sauté over medium heat 6-8 minutes until outside is browned and fish is tender.

Assemble tacos by dividing slaw, fish, and avocado sauce between tortillas.
Serve with additional cilantro and lime wedges.

Traveling
Sujenne is a hard working woman who loves to travel, explore, acquire knowledge and try new cuisines. Expanding her horizon is what she is all about. She was born, raised and is currently living in Curaçao. Next to working 3 jobs she is attending an online school studying hospitality management. Additionally, blogging is what she does as her hobby. At the age of two, Sujenne used to go on many family trips. “Every year I would be the one planning the vacation even though my parents had the final say”. At that time, she already knew that traveling is an activity she wanted to expand on and do more of in her life. One thing she didn’t know was: “that I would be traveling at least 6 times a year”. Reason for traveling regularly Due to working Monday to Monday, was the reason why Sujenne made the decision to start traveling regularly. “Not only do I expand my knowledge, but also it’s a way to keep the stress away”.

regularly was a trip to Barcelona. “I wanted to just prove myself that I can survive for a weekend on my own in a different place”. She didn’t have expectations but she sure was scared. She was constantly making sure she is safe from pickpockets, but “after that, I realized that it wasn’t really necessary to do that when traveling”.
Traveling expectations Sometimes, one’s expectations do not match the reality of the actual traveling experience. To prevent the disappointment, do not expect anything from your trip. “I go with a blank page”. Sujenne makes her planning beforehand, but without expecting it to go exactly how she planned her trip. This way you will remain “open for changes”.
Perspective on traveling Traveling is so much more than jumping on an airplane to reach a destination. Sujenne finds that traveling is about gaining knowledge about cultures, the countries’ history and cuisine. She also enjoys meeting the locals and talking to them about their lives. “Traveling is the same as opening a book and learning”. Believe it or not, traveling even taught Sujenne to balance “be prepared, be informed, be safe, be open minded and be flexible” all at once.
Sujenne’s best traveling experience Looking back on her experience in Cuba, she would say it was “a mix of history and the new world”. Sujenne had the opportunity to perceive the life of the locals and the little resources they had. What made the
biggest impression on her was how the locals were making the best of what they had and didn’t complain about their lifestyle. “After leaving Cuba I was a different person”. Ever since, she has never complained about her “beloved island, Curaçao”.

Sujenne’s traveling plans
This year Sujenne wants to explore the Caribbean, and next year she is looking forward to see Europe and North America. There are so many places she wants to visit, “but I take it step by step and year by year; sometimes even month by month”. Sujenne is also excited to learn more languages; “no school, no books, just the locals and I”.
Traveling advice If it is in your budget, “DO IT”. Sujenne suggest to book your ticket, reach your destination, explore and “get lost” in what the country has to offer. “Don’t only go to the tourist places that are known, but also visit some locals, talk to them. You’ll be amazed at what you will learn from them”.
Top 5 Traveling Tips 1. Be safe “No matter where you are, you have to be safe. Don’t walk around with ear buds in, or put your backpack down to give directions”. 2. Be prepared “Going to Cuba is a whole different thing than going to Miami. The culture shock will hit you if you are not prepared”. 3. Be informed “Where do you need a Visa to enter”, “what are the requirements for the passports”, and which places people do not recommend to visit are a few of questions according to Sujenne, you must ask yourself prior to traveling. 4. Be open-minded “Be open for what the destination has to offer. Sometimes it’s totally not what you imagined, but you have to be open to accept it”. Try to make the best of it! 5. Be flexible “If plans do get cancelled, you have to be flexible to quickly make changes” and perhaps changes that might be out of your comfort zone.

Make your own terrarium A terrarium is a tiny garden in a transparent container in which a collection of plants are grown. It lets you enjoy its visual aesthetic without needing much space or maintenance. They are easy to create, and you can give it your own touch to complement your decor style. Add a layer of charcoal to absorb moisture and excess water. Additionally, the charcoal layer helps to keep plants from rotting. Layer the potting soil deep enough to cover the plant roots. Not sure which type of soil to use? Call your local nursery for their guidance and recommendations. Start adding plants! Start with larger succulents (or the plant of your choice) and then proceed with the smaller ones to fill the empty spaces. Using chopsticks can be very handy for maneuvering plants into place.
Place the rocks at the bottom of the container for drainage. Keep in mind that the larger your container, the thicker the rock layer. Leave enough space at the top of the container to keep your terrarium looking spacious.

Add decorative accents. Add decorative accents of your choice. You can keep it natural by using accents like moss, geodes and sea glass.
