To make blender hollandaise, melt 10 Tbsp unsalted butter. Put 3 egg yolks, a tablespoon of lemon juice, 1/2 teaspoon salt in a blender, blend for 20-30 seconds, until eggs lighten in color. Turn blender down to lowest setting, slowly dribble in the hot melted butter, while continuing to blend. Taste for salt and acidity and add more salt or lemon juice to taste. Transfer it to a container you can use for pouring and set it on a warm-but not hot-place on or near the stovetop.

Eggs Benedict Ingredients - 8 pieces of bacon - 2 Tbsp chopped parsley for garnish - 4 eggs - 2 teaspoons white or rice vinegar - Any bread you like - Butter

Cook the bacon
Bring a large saucepan twothirds-filled with water to a boil, then add the vinegar. Bring the water to a boil again, then lower the heat to a bare simmer.
Turn off the heat, cover the pan, and let sit for 4 minutes. (Remember which egg went in first, you'll want to take it out first.) When it comes time to remove the eggs, gently lift out with a slotted spoon. Note that the timing is a little variable on the eggs, depending on the size of your pan, how much water, how many eggs, and how runny you like them. You might have to experiment a little with your set-up to figure out what you need to do to get the eggs exactly the way you like them.

Begin toasting your English muffins.
To assemble, butter one side of the bread. Top with slices of bacon. Put a poached egg on top of the bacon, then pour some hollandaise over. Sprinkle some parsley over it all and serve at once.

This week’s spotlight is on Art Ruler Alana de Haak, who has been the only female DJ student to do the DJ workshop back to back since year one. About to graduate high school, DJ Alana months away from moving to the United States to pursue her studies in Music Production; not before joining this year’s DJ workshop. She’s booked with gigs most weekends and has even started making her own music. Needless to say, Alana is excited to join the extended DJ + Beat Making workshop this year.

Celebrating 5 Years of Art Rules Passion for music Alana’s passion for music and curiosity for DJing led her to buy her first mixer in 2014. At first, she wasn’t sure about signing up for Art Rules, “I’m really shy and awkward around people, but my mother convinced me to give it a try,” explains Alana. “I knew I loved music, liked the equipment but had no knowledge. So I was very happy to learn all the basics that first year, especially how to mix.” The DJ workshop is one of Art Rules’ most popular workshops. Students learn a range of skills from making playlists, reading crowds, and music selection. They are encouraged to battle each other and to create

their own signature style. “Art Rules helped me get out of my shell,” says Alana. “DJ students are competitive, but we are a community and very supportive of each other. When one of us brings out a mix, we all play it at parties.”
