Ingredients Cheesy Vegan Béchamel Sauce - 2 tbsp vegan butter/margarine - 2 tbsp unbleached flour - 1/2 small red onion, cut finely - 1/2 tsp garlic powder - 1/4 tsp turmeric - 1/4 tsp paprika - 1/4 tsp salt - 1 cup vegetable broth - 2 cups unsweetened nondairy milk (or soy) - 1/3 cup nutritional yeast flakes - 1/3 cup cheddar or mozzarella style shreds Potato & Broccoli Casserole - 1.5 lb bag of potato - 1 head of broccoli, cut into florets, and sliced thin - 1/2 cup whole wheat bread crumbs - 1/4 tsp garlic powder - 1/4 tsp onion powder - 1/4 tsp oregano - 1 tbsp melted vegan butter/margarine - salt, to taste - pepper, to taste

Layers of cheesy vegan béchamel sauce, thin sliced Creamer potatoes, and sliced broccoli florets, all topped off with a toasty, herb and garlic bread crumb topping.

Cheesy Vegan Potato & Broccoli Casserole Instructions Cheesy Béchamel Sauce 1 In a medium sized saucepan, heat 2 tbsp of vegan butter or margarine over medium-high heat. Add the chopped red onion and cook until translucent and tender. Whisk in the flour, garlic powder, turmeric, paprika, and salt. Cook for 1 minute. 2 Very slowly whisk in the vegetable broth, followed by the unsweetened soy milk. Stir in the nutritional yeast and cheese (optional). Turn heat down to medium and simmer for a few minutes, until the cheese is melted. Set aside.

Potato & Broccoli Casserole 1 Preheat oven to 375F. 2 Combine bread crumbs, melted butter/margarine, garlic and onion powder, oregano, and a sprinkle of salt. 3 Lightly grease a 9" pie plate with butter/margarine. Begin with 1 layer of thin sliced Creamer potatoes, slightly overlapping. Sprinkle with salt. Add a thin layer of sauce. Layer sliced broccoli florets, slightly over lapping. Sprinkle with salt. Add a thin layer of sauce. Repeat as many times as necessary (1-2 times). Be sure to salt each layer of raw potato or broccoli. Finish with a hefty layer of sauce. Top with seasoned bread crumbs. 4 Cover with aluminum foil and bakefor 50 minutes. Uncover, and bake for another 10 minutes. If crumbs aren't toasted, set under broiler until just toasted. Do not burn. 5 Let sit for 20 minutes before serving.

Arnold states that people eat processed meat and all the stress and antibiotics that the animals take. He believes that a plant based diet seems to be the solution for many different situations. "Animals are sentient beings just like humans. They have eyes, ears, a nose, a mouth and a heart, so they also feel."

Making veganism accessible

Arnold van Putten, a man born and currently living in Curaçao, completed high school and college in the United States and graduated from the Art Institute of Fort Lauderdale. Later on, he went to Amsterdam, where he was a DJ, a music producer and an event manager. Around 2003, his experience of reading a book by Louise Hay, 'You Can Heal Your Life', made him conscious, meaning to be self-aware and to have knowledge of his surroundings. That is when he started to change his way of living. Becoming a vegan 7 years ago and experiencing an inner strength programs back in 2010, both had a great influence in his life. The major switch he went through, from being a music producer, DJ and an event manager to a man who is now the owner of a juice company, did not happen overnight. It was a process; a process he is still going through.

Becoming vegan Life has different phases, so after his music phase, he realized he has another mission. Arnold saw an opportunity in the vegan market in Curaçao and in the Caribbean in general. Since 2014, he decided to

sell his self-made juices that have vitamins, minerals and nutritional values. According to Arnold, there are 3 reasons for becoming a vegan: "for health reasons, for environmental reasons and for the animals." The animals are suffering really badly.

Arnold van Putten created a platform for everything in connection to veganism, and has been organizing the Curaçao Vegan Food Fest events since 2016 and is now busy with his 7th vegan event. These events are a way to show people what their vegan options are by bringing together as many small businesses as possible. The entrée fee is Naf 10,- and they make sure that all the meals and snacks have affordable prices for everyone who would like to visit the event. Arnold believes that promoting veganism and providing more vegan products in supermarkets will make veganism accessible to more people on the island. From now on, all the events will have different themes. On June 24th, 2018 the next event, The Vegan Goods Market, will be in full swing at Hofi Cas Cora. Its focus will be agriculture, how to plant and how to make your very own vegetable garden. "I am a vegetarian once a week, because in my opinion, a person does not necessarily need a piece of meat 7 days a week to stay alive. There are more alternatives."

"My mom told me since I was a toddler I spat the meat out of my mouth. It was more the texture and taste I don't like (the bones, blood vessels, cartilage and fat.) Since I can remember I never used to like meat. I did (do) love local fresh fish from Curaçao. With my background in health (nurse and dermal clinician) and with a mom who is a Nutritionist, was I very aware about healthy nutrition. Next to that I watched allot of documentaries about food (and health), so I became more strict about what I put into my body. (vegan) Being conscious of my health, the environment, the love for animals and nature, this is why I eat green!"

Why did you go Vegetarian or Vegan?

I decided ta adopt a more conscious approach to what food I consume. For years I've seen countless videos of how much harm is done to our animals in food production. For years I've read countless peer reviewed studies linking meat consumption to heart disease, blood pressure, diabetes and cancer. I've read about the unsustainable carbon footprint in our food industry. I've decided to cut meat for a month to merely try it out and haven't eaten a single bite of chicken or red meat ever since. My cheat meals are limited to a bit of fresh fish once in a while. I would not label myself a vegetarian or vegan, but for over a year I've made the conscious decision at every meal to pick something that is plant based. It feels great!

Anita Marks "The reason why I chose a vegetarian dietary pattern is because vegetarian food contributes to a good and healthy living environment. It ensures less use of water, less deforestation and lower greenhouse gas emissions, which are responsible for climate change. In addition, I am very sensitive to certain nutrients, and when I stopped eating meat, I noticed that I immediately started to feel much better."

"Actually I am more than just a vegan and is often refer to as an Alkaline Vegan! Because it was a Life calling followed by my own interest into a healthier life style which would benefit me and possibly others. I am surrounded by those with health complications and it breaks my heart to see them struggle and continue to be part of this disease cycle which is still increasing in numbers due to bad dieting and false information. "Ever since I was a little girl there was one thing that defined me; my love and awe for animals, nature and the ocean. As the years passed and I grew up I would often have this feeling of unease when thinking about the meat on my plate, but quickly brushed it off because, well... Eating meat is considered 'normal' in our society. It is only now that I recognize this feeling for what it is, namely 'cognitive dissonance'. Approximately 5 years ago I saw a documentary called 'Earthlings' and within 20 minutes of watching decided I did not want to partake in the horrors that I saw on screen. I realized that by paying

for meat I was in fact part of the system that is responsible for all the pain caused to these animals and the earth, so I started to identify as a vegetarian. Last year I fully made the connection. Our meat AND dairy consumption causes immense suffering to sentient beings that experience basic emotions the same way we do (56 BILLION killed yearly), uses disproportionate amounts of land (18 times more than vegans) and livestock production is responsible for nearly 15% of global greenhouse gas emissions (even moreso than the transport industry) with global warming as a result. Summing up: after much research I concluded that it is simply not logical to call myself an animal and nature lover and be at the core root of their destruction just for my appetite. Vegan out of love and compassion for myself, animals and the earth."

Malishka Sharma "I became vegan when I realized the dairy industry was just as cruel as the meat industry. I was raised as a vegetarian in Curaçao and understood that the harm done to animals for meat was unnecessary. There are millions of people who thrive on a plant-based diet and do not need meat to be healthy. However, I did not know that dairy and eggs were harmful to animals. Many baby male chicks are disregarded by the industry as they cannot produce eggs. Female cows are also forced in small spaces and often have machines attached on their udders to pump milk. Based on the following unpleasant treatment of animals listed above; this influenced me to become a vegan. It is a chance to explore new ingredients and ways to cook which can be very fun. There are many vegan recipes online. There are also plenty of alternatives to milk and meat products. Give it a try and go vegan!"
