Ingredients - 1 pound sweet potatoes, peeled and diced into 3/4-inch cubes - 1 1/2 tablespoons olive oil, divided - 12 corn tortillas (6 inches each) - 1 medium onion, diced - 1 1/2 tablespoons dark chili powder - 1/2 tablespoon chipotle powder - 1 teaspoons ground cumin - 1 cup roasted or thawed frozen corn - 1 cup roasted red peppers - 1 can (15 ounces) low-sodium black beans, rinsed and drained - 2 cups cooked short grain brown rice - 1 can (8 ounces) enchilada sauce - 1 cup shredded low-fat pepper Jack cheese, divided - 1 avocado, thinly sliced - 1 scallion, chopped - 6 sprigs fresh cilantro
This healthy and so very delicious recipe, is great for lunch or dinner. It’s easy to make every time of the day, even for breakfast. Just try it!
Veggie Enchiladas Directions 1 Heat oven to 300°F. 2 In a bowl, toss potatoes in 1 tablespoons oil; spread on a baking sheet. Bake until potatoes are soft and browned, 20 to 25 minutes. 3 Wrap tortillas in foil; bake 10 minutes. 4 In a large pan over medium heat, heat remaining 1/2 tablespoon oil. Add onion, chili powder, chipotle and cumin; cook until onion is tender, 3 to 5 minutes. Add corn, peppers and

black beans; cook 5 minutes. Set aside half of corn mixture. Add potatoes, rice and enchilada sauce to pan; cook 6 minutes. 5 Place 6 tortillas on a baking sheet. Spread potato mixture and 1/2 cup cheese evenly among tortillas. Top with remaining 6 tortillas, remaining 1/2 cup cheese and reserved corn mixture; bake 7 minutes. 6 Divide avocado, scallion and cilantro among enchiladas.

Melissa Vijay Bharwani
Sending Curaçao around the world with Dhan Arts Art has never been purposely sought by Melissa, as out of boredom, she started sketching when she was home alone back in 2012. When her mother arrived and flipped through her sketchbook, she saw Melissa’s creativity. Her mother suggested that she should paint the Handelskade, a historic waterfront, of Curaçao and sell it in her mother’s shop. “In my opinion, (we are our own worst critic), because we make ourselves feel horrible. I never thought I was good at what I did.” Even though she was not confident, her mother’s suggestion was an incentive that made Melissa take the next step towards painting the Handelskade. She never took art seriously, but selling her first art piece was a surprise and a motivation to her, so she started painting more and more. Melissa Bharwani, also known as Dhanu, is now a 32-year-old self-taught artist and a saleswoman born in New Jersey with Indian heritage. She is filled with artistic passion with a mission to send Curaçao around the world with her unique paintings.
Melissa never had the intention of making her art her career, so she took her journey one day at a time. Her first painting of the Handelskade brought her to her purpose, which is to promote Curaçao with her art. It is what she has been doing with Dhan Arts ever since. Melissa has a strong connection to Curaçao. “I’m very patriotic.” She wants to continue making souvenirs because she believes in what she is doing for Curaçao. “This is my island,” and it is the little things that make a difference.
Dhan Arts Making souvenirs “makes Curaçao incomparable to the other islands.” Melissa realized that not everybody wants a painting, so her first item was a coffee mug. Then she introduced magnets, oven mittens, potholders, little wooden cats and dogs and Christmas ornaments. The cherry blossom and the cats, Ringo and Skadey, are special touches to Melissa’s paintings. Her family always had a cat in their house, and she noticed how her cats sit on the windowsill and stare outside. So she asked herself: “if they can stare out the window,

why can’t they look at our Handelskade?” Melissa was inspired and created a series of artworks, 'The Cats Enjoying the View'. That is when Ringo, the big brown cat, and Skadey, the cat inspired by Vincent van Gogh’s painting, 'The Starry Night', became a part of Melissa’s artworks. The two cats are the most recent street art that everyone can take pictures with and enjoy in Punda, Curaçao.

A few weeks ago, I gave you a taste of a full body workout to get you all set up for summer, but also for your personal goals. In this edition, we will take look closer at your workout, as we work on the legs and the gluteal muscles that make up the buttocks. The best part is that you can do all the exercises at home or another place of your choice. This week’s exercise is for busy lifestyles. That means you can have a great workout in a short period of time. If you have more time, you can double your workout. By: Jesse
Let’s shake that butt Let’s go
Set your timer for 36.8 minutes. If you are not that busy, double the time to 73.6 minutes and start your exercise. - The exercises are numbered from 1 to 4. - Do each number for 1 minute. - When you are ready with the first cardio and legs/buttocks exercise, take a break for 30 seconds. - Then proceed with the next exercises on the list until you finish all 4 exercises.
- Start again until you reach your 36.8 or 73.6 minutes. - Total workout per exercise = 2 min workout + 0.30 seconds rest = 2.30 minutes x 4 sets = 9.20 min workout. You will go for 4 rounds, so your total workout is 36.8 minutes in total.

You can do this exercise 2 times a week (Monday and Thursday), and use the remaining days as breaks. For stretching: take the lunge position
1 Single leg high knee kicks to the front as high as you can. 2 Do high sprinting on one spot. 3 Do little lunges: one leg in front, one leg backward and jump to switch their position. 4 Jumping jacks: jumping to a position with the legs spread and hands touching overhead.
Leggs/Butt (Glutes)
1 Squats: Place your feet shoulder-width apart, extend your hands straight out in front of you, chest up and slowly go down in a 90 degrees position. For support, you can use a chair to tap on the seat and stand up again.

2 Standing lunges: Standing lunges: one leg to the front, the other leg backward and move slowly up and down. Do 30 seconds for each leg and then switch.
3 Sumo squats: Sumo squats: legs in wide position, toes pointing outwards and go up and down slowly.
4 Sliding squats: Same position as the sumo squat, but now we are going to slide from left to right while our body stays low.
