Shervonne Davis: Thanksgiving has passed, Christmas and New Year are fast approaching. Looking back over this past year, we have much to be thankful for. LSDOS continues to grow as more and more folks are becoming interested in Dutch oven cooking.
Our Nation has encountered a memorable summer, weather-wise for most of us with heat, floods, hurricanes, drought, wild fires and tornadoes. We have been blessed though with no members that I know of being injured, but some loosing material things that can be replaced. Hopefully we all are doing what we can to help those less fortunate. Many of our Members have been unable to cook due to burn bans across the country, but some have continued to meet for fellowship and fun. As we look forward to 2012, we have our Annual Board Meeting at Salmon Lake in Grapeland, Texas on January 14, 2012. We chose this date, because of a three day National Holiday week-end. Come join us as early as Wednesday before the meeting for some fun, games and fellowship. This is your organization and you are welcome to be at the meeting. Your views and opinions are valued, but only the Officers and Board Members will be able to vote at this time. The Summer Membership Meeting will be announced at the Board Meeting.

October 19-21, 2012 are the dates for the 2012 National Dog Gathering. It will be held in Canton, Texas at the First Monday Trades Day Civic Center. Many of us will be arriving early to assist Leslie and Steve Lovett prepare for the activity. If you are able, they would appreciate your help before and afterwards as they will need help in all areas. If you have never attended a National Dog, this is your opportunity. NATIONAL NEWS 2012 2012 National Dutch Oven Gathering Steve & Leslie Lovett – 2012 National Chairpersons

Hello Lone Star Dutch Oven Friends! The 9th Annual National Dutch Oven Gathering will be held October 19-21, 2012 in Canton Texas at the Canton Civic Center and RV Park. There are 158 RV sites with full hook ups (power, water, and sewer) and tent camping for $16 per night. The Canton Civic Center will provide us temperature controlled space to gather for meals, games, raffle prizes, silent auction, and much more. Only registered participants will be allowed inside the Civic Center since we are prohibited by Texas law from feeding the public. Outdoor activities are open to the public: a large common cooking area for participants to set up outdoor kitchens, an area for the IDOS 3 Pot Cook off competition, a wide variety of vendors, and demonstrations about everything related to cooking in cast iron pots. Please note that the outdoor cooking area has NO shade, so Dutch Oven chefs need to bring a 10' x 10' canopy to provide protection from sun and rain. Canton offers us a great location for food, fellowship, and fun! We continually receive registrations a year before the event kicks off. We are grateful for everyone who purchased the limited edition Camp Chef Texas 12" Dutch Oven and Skillet. Thanks to our friend Dave Fox, we ordered 75 Dutch Ovens and 36 skillets. HELP HELP HELP CHAPTER ADVISOR NEEDED Merry Christmas to all from the Tejas Chapter of LSDOS. We have not been active for quite a long time now and I confess it has been because of my failing strength and health. I have been trying to find someone to take over the reins and the job of Chapter Advisor for quite some time now and would like to put out the invitation here in the newsletter! If someone cannot step up and take over I'm afraid that we will have to dissolve the group. Thanks to the record-breaking heat wave, drought, and relentless burn bans, the Prairie Dog chapter had a very slow start to our cooking season this fall. We canceled our September DOG mostly due to the burn ban across North Texas but also because of a weather forecast for another record-breaking 100-degree day. A small group of Prairie Dogs met in October at Cedar Hill State Park, despite the continued burn ban and record-breaking temperatures. We just didn’t want to let another month go by without gathering for food, fellowship, and fun! Everyone set up their propane stoves to cook on and several used their Camp Chef Dutch oven domes. The group agreed that the domes were a good solution to not being able to cook over coals, although we all agreed, “It just wasn’t the same” In November, our group was back to its normal size, thanks to the chilly morning temperature! We gathered in Arlington’s Randol Mill Park where we actually enjoyed hot coffee in the morning as we set up our outdoor kitchens. Up until a day before the DOG, the burn ban was still in effect, so we decided to meet at this new location since the city of Arlington would allow us to use charcoal as long as we kept the coals contained. The pavilion was covered, parking was very convenient, we had plenty of

North Texas Prairie Dog Chapter [continued] room to set up our outdoor kitchens, and there were plenty of picnic tables as well. We were delighted to have several new cast iron chefs join the group, including Ron and Gloria Gillinhan and Stephanie and David Amon. We gathered again in Randol Mill Park for our December DOG and enjoyed chilly temperatures under clear blue skies and no wind. Perfect! Our group of 30 prepared a wide variety of delicious dishes in a total of 18 cast iron pots. We enjoyed having 8 folks stop by to observe and learn and were thrilled to hear that Larry, Lisa, and Will Swinea joined LSDOS and the Prairie Dog chapter. We enjoyed meeting Katy and her family, members of the Brownwood Chapter and granddaughter of Thaira and Charles Johnson. Our meeting ended with a joyous Chinese Christmas gift exchange where good friends enjoyed “stealing” gifts more than a few times! The Prairie Dogs are looking forward to co-hosting the 6th Annual North Texas Regional DOG with the Collin County Cooker and the Dogwood Cookers March 16-18, 2012 in Canton, Texas. We’ve changed our name from being Northwoods! So now, we cover southern Wisconsin and all around Chicago. Much easier to make chapter DOGs and demo time available for the people! Blackhawk held the HOT DOG in August at The Hollows Conservation Area in Cary, IL. The spirit was a little dampened by the all morning pouring rains. We had hoped to have lots of people stop by the popular fishing spot, but the rain chased most of them away. Our members did show up after noon time, and we cooked up a storm. Our cooks made Heirloom Tomato Pie with cheddar cheese crust, taco casserole, two different pork roasts with potatoes and stuffing. Sides of green beans and potatoes, corn casserole and rolls. For dessert, Ed W. made Lemon Squares, Tina M made Triple Chocolate Brownies, Laura T made Turtle Cheesecake. A few new folks saw our advertising and stopped by. We’ll make sure they know about the next one too! September was a pretty big month with members joining the Iowa Prairie Rose chapter for their competition. Lesley Tennessen took home 4th in Dessert for her Rum Infused Maple Syrup and coconut pie. Lesley did a teaching session for Johnsburg, IL Boy Scout troop just before their campout weekend. She joined them for their troop cook off too. They really learned their lessons and there were no burned cookies! Blackhawk also held a Fall DOG and the Trick or Treat DOG up in West Bend, Wisconsin. We have a nice growing group of newer cooks started there. They are fun, love to learn new things and have lots of ideas for future DOGS. Thanks to the McAughey family for hosting both times this fall. The Fall DOG focused on autumn and harvest foods. We had stews, chili, and cakes. Peter S joined us the first time. Welcome aboard. You’ve got some great practical ideas for everyone! October is our Trick or Treat DOG, and of course…we did ‘gross grub’. Why not? We had little fingers (pigs in a blanket), eye of newt (sausage and cheese balls), intestines (puff pastry with chocolate filling) and a few other very tasty treats. Our big event was held on Oct 8th in McHenry, IL. We held the Young Eagles Rally and Cook off on the most perfect cooking day. How about 80 deg, little to no wind, low humidity and sun? Gets no better than that in the fall. There were several youth teams that cooked some rocking good food. We have a great bunch of young scout cooks that always step up to the plate when it comes to cooking. The adult teams cooked some delicious dishes for the 3pot competition. First place overall went to Ed and Debbie Weisbrod, 2nd place overall to Lesley Tennessen and 3rd overall to Brian Lumpp. Congrats on a job well done. Nicole and Rob Sherman were the coordinators for this event. They did a fine job. Most of all, we would like to thank the Moose Lodge of McHenry for hosting us and this event. We have a great friend in the Elgin, IL Park department too. Many thanks to April A for asking us to be part of her program. We did a DOG and demo in late October celebrating the autumn. Another perfect day with beautiful view of the trees, leaves and pond. We made a lentil stew, taco cornbread, pumpkin lasagna, rice and butternut squash, party beans, apple cakes, pumpkin cakes, cookies. Chuck Frost down in Winchester IL hosted a November DOG. We had 4 great cooks and double that for ‘taste-testers’. Lots of great food that opened with Jalapeno poppers, dates wrapped in bacon and stuffed spicy meatballs. Dinner included sourdough

Blackhawk Dutch Oven Cookers Chapter [continued] rolls, creole stew, sweet potatoes vindaloo and Bacon-wrapped chicken thigh with goat cheese and hatch chiles. Dessert was a great pumpkin laced with condensed milk and chocolate syrup. Our Holiday DOG was held in early December. It rained all morning, but thanks to Bob and Ann Tirk for hosting in the garage. I think that this is the very first DOG where we have eaten with silver and fine china! We had lots of dishes from a pork roast with Everglades rub, carrots and cranberries, rice pudding, chicken and wild rice soup, beans and ham stew, pumpkin cornbread, chicken pot pie. The FROZEN challenge with our fellow cold weather, snow burdened, wind loving chapters is coming up in January. I say, Bring It On! It’s a good challenge and the stakes are pretty good..a bottle of local BBQ sauce. Keep cooking, Keep enjoying!

Since we were still under the burn ban in September, we just met for a "social" and brought pot luck from home. We had 17 attending and a variety of food. We had a good time just sitting around visiting, telling stories and relaxing. No one was in a hurry and seemed to enjoy the fellowship. October DOG.....we did not meet. November DOG: The burn ban was lifted just a couple days before our DOG. Some decided to Dutch oven cook and others brought pot luck from home. We had some great food and again a good visit. Quite a few didn't get to come this month. Only nine members and a couple visitors. We do not meet in December. We are looking forward to the new year and actually being able to cook in our Dutch ovens in January. See you then!!

Our October 10th DOG at Willis started on Friday when four campers arrived to begin the weekend’s activities. We enjoyed visiting in the COOLER temperatures and being together. On Saturday as we started getting things organized for the big meal, everyone started arriving to join the fun. By 10:00am, we had 23 members (a new couple joined that day), and one visitor. There were a total of 15 hot pots on the table at 1:00pm and we ate TOO MUCH as usual. After the pots were cleaned and we had visited a while, the cards and dominoes arrived for our usual games, laughing, and much sharing of FUN. Three days before our November 5th DOG, it started to RAIN!!!! THE BURN BAN WAS LIFTED!!!!!!!!! We honestly had a true wood burning fire. We had four campers that got the campfires started on Friday night and kept them burning until late Saturday night. We had 19members/friends/family that gathered for our Thanksgiving DOG. There were 13 hot pots on the table and much too much food to sample just a small spoonful of each!!! Greg and Sarah came to join us in the “sticks” for the first time. We certainly enjoyed having them come to Willis, and hope they return soon. Well, we prayed for cooler, wetter weather, and the good LORD answered our prayers. The last DOG for 2011 truly made us pull out the coats/sweaters/jackets/ and mud boots. This was a time to be glad for electric blankets, open fires, and hot chocolate----which all put into good use from Friday until late Saturday night. We had three campers that braved the cool winds, mist, and wonderful sunshine that arrived in time for the Saturday December 10th DOG. Because of holiday activities, our DOG was smaller than usual, but it didn’t keep the attending 13 members and two visitors from kicking up a good time and enjoying the FELLOWSHIP. We had ten hot pots on the table with everything from hot soup (warm the bones) to black eye peas (early New

Sam Houston Chapter [continued] Year’s). The dominoes and good times were supplemented with a lot of hot coffee (foofoo!!!), ear muffs, and gloves, but the GAMES MUST GO ON!!!! We are always glad to have our friends come and join our “laid-back” atmosphere and fun loving group. If you have never come, make plans to be with us sometime. I guarantee you will have fun!!!! Here is out schedule for 2012. Hope to see you at one of our DOGs. If it is not stated otherwise, all of the Sam Houston Chapter DOGs are camping weekend DOGs. But if you do not camp do not let that stop you from coming out and joining in the FUN, FOOD and FELLOWSHIP. Join us for our DOG on Saturday, pots are on the table at 1:00 PM and unless another place is mentioned we meet at the American Legion Campgrounds on FM 1097 in Willis, Texas. This write-up missed the last newsletter. Since I had a “senior moment” and forgot to send in a report for the last newsletter, we’ve had quite a bit going on and a lot to report for the Chapter. We’ve been pretty busy all summer with some individual things, but we’ve also been busy cooking corporately with Chapter events. Here is a listing of our chapter events and we had a great time at all of them. On April 16th, chapter members helped conduct a Dutch Oven cook-off fundraiser with the proceeds going to the Twin Valley Council of the BSA. We had 2 Youth teams and 4 adult teams competing. Snow on the ground and high winds hurt the attendance, but it was still a good time. On June 18th, we had a Father’s Day DOG at Oxbow Park near Byron, MN. We had about 7 people cooking and about 16-18 there to share the meal. In July, John and Jackie Frerichs from the chapter made the trip to Wooster Ohio to attend the 2011 National DOG. Was a great time and was fun to catch up with old friends and made lots of new friends as well.

Little House Cookers Chapter [continued] In August, the chapter had a Demo/DOG at the Days of Yesteryear event that was help in Rochester, MN. We cooked and gave out samples and visited with people during the day and for supper we had our DOG meal. September 10th brought about our 3rd annual River DOG, that was held this year at St. Croix Bluffs Regional Park near Hastings, MN. We had about 6 people cooking and about 14 people there all together. Coming up for us is our next DOG on October 8th. We are calling it our SNUNCH DOG and will be making snack-lunch items and we’ll be grazing rather than have a full meal. Should be fun to see what comes out of the pots! This DOG will be held at Whitewater State Park, just east of Rochester, MN. So as you can see we’ve had a busy summer and have done lots of cooking and had a great time doing it!! On September 10th the Little House Cookers Chapter met at St. Croix Bluffs Regional Park near Hastings, MN for our annual River DOG. It was a beautiful day for cooking and the dishes that were made were great! We had ten people cooking with other family members joining us for the meal. Tim and Kathy Mott made Devil on Horseback for an appetizer, Baby Back Ribs, and Peach Crumble; Mike Collins made Taco Casserole and M & M Bars; Ron and Mary Jane Michels made Cream Cheese and Bean Dip with chips for an appetizer, Potatoes with Bacon and Onions, Honey Glazed Carrots, and Garlic Bread; Ron and Betty Jones made Chicken Pot Pie; and John and MaryAnn Frerichs made a StrawberryPeach-Raspberry Tart and a Cajun Garlic Pork Loin. Come later to join in the meal was Greg and Roxanne Collins, JoAnne Brede, and Valerie and Bryan. We held our last “official DOG of the year on October 8th at Whitewater State park in Southeast MN. Since that time of year it starts to get dark so early we called the DOG our “SNUNCH DOG” and started cooking early and made dishes that were good for snacking or lunch. Then we grazed during the late morning early afternoon as the dishes got ready. We had nine people in attendance and enjoyed the following dishes. Ron and Mary Jane Michels made Olive Bacon Wraps, Brownies, and Cream Cheese and Bean Dip with chips; Greg and Roxanne Collins made Cabbage Rolls, Cajun Cabbage Bake, and Veggies with Spicy Dip; Mike Collins and JoAnne Brede made Pillsbury Biscuit Mini Pizzas, and Hot Feta and Artichoke Dip with crackers; John and MaryAnn Frerichs made Pizza Balls with dipping sauce and Jalapeno Poppers.
On December 1st, John and MaryAnn Frerichs cooked a Dutch oven meal for the people working at the annual “You Can Make a Difference Campout for Kids” event that was held in Blue Earth, MN. The three day camp out in 20-30 degree weather is to collect donations of food, toys, and cash to help the needy during the Christmas Season. For the meal we made the campers, a Hawaiian Pork Loin, Country Potato Casserole, Glazed Carrots, Biscuits, and a peach cobbler.

Little House Cookers Chapter [continued] Our next DOG will be our annual Mid-Winter DOG the 3rd weekend in January. Should be a lot of fun since our Winter DOG Challenge between the Western New York Chapter and us has expanded to include a few more chapters now too. Looking forward to a great time and good food this January
Hawaiian Roast Pork Loin 2 lbs Boneless pork Loin 1 cup finely chopped fresh pineapple ½ cup Honey ½ cup light soy sauce ¼ cup white wine vinegar 2 TBS grated fresh ginger 2 cloves garlic, minced 1 teaspoon coarsely ground black pepper Score the loin in 1 inch diamonds with a sharp knife ( about ¼ inch deep ). Place in a resealable plastic bag. Combine all remaining ingredients in a small bowl, pour over pork loin and marinate a minimum or 2 hours to overnight in the refrigerator. Heat the oven to 350 degrees. Remove the loin from the marinate and place in a foil lined baking pan. Roast for 1 to 1 ½ hours until internal temp reaches 150-155 degrees. Place the remaining marinate in a small sauce pan, bring to a boil. Baste the meat with the marinate during the last 30 minutes of roasting. Let stand 10 minutes before serving.

We cooked Sat. Dec. l0. A lot of our regulars were working or vacationing in Florida. I was the only one in our family there. We had 17 present with 3 visitors. A wide variety of foods was prepared, from dry blackeyes to cornbread dressing with pork. Lots of desserts as well. I cooked Mansel's Pineapple & Blueberry Dump Cake BY MYSELF. Also cooked Pete & Mary Morgan's Ultimate Cornbread and both were well received. Keep those good recipes coming. I read the recipes first in the Newsletter and then the news. Our syrup making was great. Had about 400 to 500 people coming and going all day. We also made corn meal. Several tractors were on display. The A Model Club from Beaumont was there in their A Models. Music was played all day by about 35 musicians. We are scheduled to do a demo at Dam B for Friends of the Park in March 2012. Here are some of the recipes that were prepared at our last cookout.

Chicken Rice Casserole – Dee Sims 1 can cream mushroom soup '1 can cream chicken soup 1 can french onion soup 1 can water 3 or 4 cups minute rice 1 cut up fryer, bone side up - this keep meat moist Put rice in Dutch oven Combine all soups and water, pour over rice, Making sure all is moistened. May even need to stir. Press cut-up pieces of chicken into mixture and bake at 350 degrees for 2 hours or until done.

Words from Wildflower The news is fairly mundane for Wildflower this quarter. We haven’t been able to actually get together and use our black pots for a true gathering all summer and fall. I’m sure the Texas drought has affected more than our group this year. We have kept in touch this year and had some pot luck and restaurant gatherings to keep our fellowship alive and well. The group gathered at the home of the Mike and Jackie Yuhr in November for a good old fashioned pot luck. We all brought our favorite dishes and filled our plates for a hearty meal. It was great just being together and sharing dreams of firing up some charcoal for a real outdoor event. It has been so long that the conversations really did seem dreamlike. Rain finally came to our community in late November and early this month. The burn bans were lifted! Plans were set to fire up the pots on the 17th. Unfortunately, the month of December is also filled with family festivities, travel and readying ourselves for the holidays. We had to postpone till January. This delay has not however dampened our spirit for that big event when we can light that charcoal and heat up those black pots. We look forward to the New Year, new friends and all those new recipes. Corn Casserole Diane Lapierre 1 can creamed corn 1 can whole kernel corn (not drained) 1 cup uncooked macaroni ½ cup butter, sliced 8 oz Velveeta cheese, cubed Preheat oven to 350 degrees. Grease Dutch oven. Mix creamed corn, whole kernel corn and uncooked macaroni in medium bowl. Add butter and cheese. Place in Dutch oven. Bake 30 minutes. Uncover, stir and bake 30 minutes more with additional top heat.

Held their Second Dutch Oven Cooking Demonstration at the Old San Patricio Museum on Saturday October 15, 2011. The Black Potters cooked many delicious dishes for our visitors to sample to include Camp Bread, Beer Bread, Cowboy Stew, Chili, Shepherds’ Pie and much, much more. We had a wonderful turn out throughout the day; many of the visitors who attended are planning to join our group. The Black Potters meet every third Saturday of the month; our next DOG will be Saturday, November 19, time and place to be announced. We are having such a great time learning how to cook in these beautiful black pots and the best thing of all is getting to know and share with others who are just as passionate as we are. We had about 20-25 people attend, only 2 DO cookers; most of our members could not make the DOG. We roasted a turkey, pig quarters, sweet potatoes and white potatoes in the ground; everything was delicious. None of us had ever cooked in the ground before; it was a wonderful learning experience that we plan to do again. Thanks to all that helped out; we had such a good time trying something new. Janis baked a Pineapple Dumpling dessert and David baked the most wonderful Buttermilk Biscuits to accompany our roasted goodies. Welcome, Jimmy Rogers, who is planning to join us in January. Melvin & May's Red Beans & Rice Concho Valley Chapter 1 lb dried red kidney beans water 1 smoked ham hock 1 ring precooked smoked sausage 1 table spoon roasted minced garlic 1 onion
1 bell pepper 3 ribs celery 1 teaspoon Worcestershire 1 scant tablespoon dried parsley 1 teaspoon dried thyme 1/4 teaspoon dried basel
garlic salt 1teaspoon Tony Chachere's cajun/creole seasoning 1 tablespoon Tabasco sauce Veggie oil 4 cups cooked hot rice
Soak beans overnight in enough water to cover. Do NOT drain off water used to soak. Heat beans and ham hock to a boil and reduce heat to a simmer. Concho Valley Chapter After 1 hour or so cook chopped up onion, bell pepper, and celery in a little bit of veggie oil and dump it into beans. Cut up sausage and dump it into beans. Concho Valley Chapter Adjust water to cover all but not too much. You want the bean dish to thicken. Add all other stuff except rice. When beans are tender mash some of them on the side of the pot to help thicken up the broth and adjust to taste with garlic salt and more Tony Chachere's. Concho Valley Chapter Remove the ham hock to a cutting board then remove the bone, skin, then chop up the good stuff and return to the pot. Prepare of good quality long grain rice, not the boil in the bag kind or minute rice. Put some rice in a bowl and then put some beans on top and eat it. Delicious Melvin

Vanilla 4 Eggs 1 C. Toasted or Candied Pecans ½ Salt ½ Cup white sugar ½ C. Brown Sugar 2 Tsp. Allspice 2 Tsp. Cinnamon 1 Carrot Cake Mix ¾ C. Melted Butter 1. 2. 3. 4. 5. 6.
Preheat 12 inch Dutch Oven 350° Mix together pumpkin, sugar, spices, and ¼ cake mix Stir in vanilla, milk and each egg one at a time, then pour mixture into DO Sprinkle remaining cake mix and pecans over pumpkin mixture Drizzle melted butter all over top. Bake at 350° for about an hour or until edges are browned

Heart of Texas Chapter [continued] Bananas Foster Upside-Down Cake by Mansel Clay ½-cup chopped pecans (toasted) ½-cup unsalted butter, softened and divided 1-cup firmly packed brown sugar 2-Tbsp. rum 2-ripe bananas ¾-cup granulated sugar 2-large eggs ¾-cup milk ½-cup sour cream 1-tsp vanilla 2-cups Pioneer Baking Mix ¼-tsp ground cinnamon Preheat 12 inch Dutch oven to 350 degrees and melt ¼ cup butter, remove from heat; stir in brown sugar and rum. Cut bananas diagonally into ¼ inch slices; arrange in concentric circles over brown sugar mixture. Sprinkle pecans over bananas. Beat granulated sugar and remaining ¼ cup until well blended. Add eggs, 1 at a time, beating just until blended after each addition. Add milk and next (2) ingredients; beat just until blended. Beat in baking mix and cinnamon until blended. Pour batter over mixture in Dutch oven. Place Dutch oven back on heat and cook until golden brown on top or until toothpick inserted in cake comes out clean. *line bottom of Dutch oven with parchment paper that has been lightly greased on top only before heating butter.
