The LSDOS Membership Meeting was held at Salmon Lake on July 19, 2014. If you were unable to attend you missed a very good meeting with FUN, FOOD, and much FELLOWSHIP. We had 11 camping couples that started arriving on Thursday, and we had 45 for lunch on Saturday.

We had nominations for offices. There were no other nominees, so these individuals will begin their terms in January, 2015. President will be Stacy Sick from the Armadillo Chapter; Robin Clute from the Prairie Dog Chapter will be the 1st Vice President; and Stephanie Vickery from Sam Houston Chapter will serve as Secretary. There were no nominees for the 2nd Vice President and Trustee, therefore, these positions remain unfilled. Please consider these two positions and who you think would best serve the LSDOS. Greg Petrey has decided to remain the Webmaster.

The Little House Cookers Chapter has had a couple DOG's recently. The first was held on June 14th and was our Father's Day DOG. It was held at Oxbow Park near Byron, MN. Even though we had a little afternoon rain, the dishes were all cooked to perfection and we all stayed fairly dry. We had 8 people cooking and when the meal was ready we had 12 people there to enjoy the meal. As usual at most DOGs, nobody went away hungry!

On July 3rd through July 6th we met at Pihl's Park near Wells, MN for our July "Patriotic DOG".

There were 6 families camping for the weekend and we divided up the meals so that we all didn't have to cook for every meal. Each family took one meal and cooked for the whole group. We had everything from Mountain Man breakfast to biscuits and gravy and cinnamon pull aparts, egg bake, sausage stuffed bread, blueberry coffee cake, corn on the cob, fried potatoes with chorizo sausage, sloppy joe's and root beer floats.

The DOG meal was on Saturday night where we had a theme of "All American Favorites". There were about 18 people there for the meal and we enjoyed: 5 bean chili, dutch oven BBQ Chicken and Ribs, Stuffed Pork Loin, Maple glazed carrots, green bean casserole, dump cobbler, double baked beans, Roasted garlic and rosemary potatoes, peach stuffed pork loin, Apple pie, yeast buns, cornbread, banana cornbread, and meatball sub on a stick.

We all had a great time and it was really nice to be able to all camp and spend the long weekend together. Our next DOG and demo will be on August 9th in Rochester, MN at the Days of Yesteryear Festival held at the Olmsted County Historical Site.

Our June Dog was held on 6/14/14 at Vic's, Mathis, Texas. The owner of the business has allowed us to set up and cook on his property located behind his business. There are restrooms and water available for our use. We had a good turnout even though it was a very hot day. We had 4 canopies set up to provide shade for the cookers & visitors that stopped by to check us out. Our cooks did a great job and provided a variety of tasty food. The menu consisted of cowboy stew, hillbilly spaghetti, stuffed jalapeno peppers, 15 bean soup, chicken in a can (cooked hanging over a tri-pod), pan de campo and corn bread. Desserts consisted of Pineapple upside down cakes and do-nut holes. One of our visitors who stopped by with his wife was impressed with our chapter and asked for an application to join LSDOS and become a member of "Keepers of the Fire". A good time was had by all. Looking forward to our next DOG. Our July DOG was held on 7/12/14. We only had 2 members and their wives cooking. The majority of our members were unable to attend as they had other commitments. One member did stop by to visit. The cooks did a great job preparing and cooking a big pot of beans, corn bread, smothered hamburger steaks and gravy, blackberry cobbler, also there was a pot of "cowboy coffee" hanging on a tri-pod hanging over an open fire. (Too hot for coffee - but it looked impressive). Had a few visitors stopped to join our fun. Every one had a great time.

It was decided by members to hold our DOG's on the 2nd Saturday of each month.

The Brazos Valley Chapter met for a rainy day DOG on March 15 at the Brazos Center Pavilion. We had a great group with nineteen folks here. Warren and Cindy Dunaway, Bob Hall and his wife, daughters and grandkids, Bill Chance and his daughter in law and granddaughter, Kathy and her granddaughter Meredith, Bud Nichols, Charlotte and Shervonne were all in attendance. We had a fancy meatloaf ring with asparagus, potatoes and carrots standing in the center and Bud made a moist tenderloin. We also had Orange Harvey Wallbanger cake made by Bob, Bill’s variation on the Perini Ranch Bread Pudding and so much more! A bride was touring the park to plan her wedding reception and stopped by to visit and see what we were up to.

On April 4, we held a demonstration during the First Friday event in Downtown Bryan. Baine and Donna Morrow, owners of Must Be Heaven restaurant allowed us to set up on their corner which was a prime location near the theatre where the

Bud Nichols made stuffed jalapenos that had the unusual combination of ketchup and cheese and they disappeared quickly! Bill and Sherry Chance made Honey Almond cream cheese crescents which were a hit. Another crowd favorite was Bob Hall’s Orange Harvey Wallbanger cake. Warren and Cindy Dunaway kept us supplied with biscuits and Shervonne and David Smithey provided a pot of cornbread. Kathy Maurer and Shervonne were kept busy at the sample table talking to guests about the club and trying to keep up with the demand for samples. We estimate that we gave close to 500 samples out that night. The night turned out to be one of Downtown Bryan’s busiest First Fridays. It turned out to be a great night for us because a tour bus containing high school students in outdoor education classes arrived from the Dallas area and the kids were fascinated by what we could cook in the pots over coals.

We had a smaller group in May. The bride who visited the March DOG had the pavilion rented so we met in the parking lot behind Hillcrest Baptist Church. It was beautiful weather with a pretty strong wind which helped keep it cool. Bud and Charlotte made baked “fried” chicken strips that were crunchy and wonderful. Shervonne and David one of their favorite casseroles. Warren Donaway joined us later to cook and visit. His wife, Cindy brought cookies to share. We had a lot more food prepared, but it has been so long that I no longer remember what the rest of it was! We had way too much food for the six of us but a couple of families were at the church doing some work on the lawn so we convinced some of them to come by and eat.

Mervin Peters asked if we would be interested in cooking for the Business Men’s Bible Class at First Baptist Bryan for their gathering on his ranch in mid-June. Heat concerns kept some members away, but Bill Chance, Kathy Maurer, Ronnie Allen, David Smithey and Shervonne Smithey agreed to do the meal.

Bill took the lead with the menu and recipes and led the group in making his baconwrapped pork loin with chipotleraspberry glaze for the main dish. We also made the ranch potatoes that we made in the chuck wagon cook-off, an Italian squash casserole and hot rolls. Chicken breast strips were baked atop a creamy rice dish for variety. The hit of the night were the beautiful pineapple upside down cakes that Bill is known for. Mervin brought two trays of marinated tomatoes for a cool addition to the meal. We laughed because we planned to “cheat” and use the propane ovens to heat the rolls. In the final minutes we realized that the ovens didn’t light properly and weren’t hot. Being well-trained Dutch oven cooks – we grabbed our still warm cast iron and left over coals and quickly heated up the rolls! The guests enjoyed watching us cook in the ovens and sharing their own cast iron memories with us. Mervin’s

We’ve finished another round of cold winter cooking!! Commonly known as Chi-beria! We did go outside and cook and found the bright spots of food, fun and fellowship!

Blackhawk Cooks are always busy. We cook 12 months a year, outside! Snow, rain, wind, cold. Hot, humid, camping. But that doesn’t mean we eat outside 12 months a year! Come join us if you are in northern Illinois or southern Wisconsin. We’ll make a DOG just for you!

This past quarter we cooked a few times, each time with new food and new friends. Blackhawk activities included our annual New Year’s Day DOG but moved it to 1st Saturday of Jan 2014 because of snowfall predictions. Some of our folks travel over 1 hr and better to be safe than sorry. Hip deep snowflurries, not withstanding! Blackhawk celebrates with ham, biscuits, greens, and blackeyed peas in true southern, up north style. We served Carne Guisada con Poblano, Hot Tamale Corn Bread, Rutabaga soufflé, Tortellini with red sauce, Mushroom Gratin, Spicy Spinach with Sunflower Seeds and Chocolate Brownies.

Our Hearts R Healthy DOG is in February was another great feast. We enjoyed the company of everyone. We try to healthy a Dutch oven dish. Always a treat to see how folks end up making a dish better!

In March, we celebrate with GREEN! Green meaning Irish, spring or anything in between. We go up to Pioneer Farm and enjoy both the clay oven and the Dutch ovens. It turned out to be a fantastic spring day and we could have shirt sleeves instead of all our outer clothing and no wind! Plenty of snow still around too. We channeled our cowboy friends with chicken friend corned beef!

Enjoyed green eggs and ham (I am!), chicken stew, Irish Soda Bread, colcannon, corned beef with veggies, green quesidillas.

Bean stews. First time cooks making beautiful apple pies!

April means Spring DOG. Spring visited for just 1 day so far, and it was DOG day! After the hail storm, came the sun and 70’s.

Back to snow the next day. Blackhawk had 9 cooks, 12 pots on the table with chicken and rice, 2 smoked sausage dishes, blueberry cobbler, veggies with cheese, rice and asparagus, black bean chilaquiles, mustard chicken, strawberry bread, bread rolls.

And first time biscuits! Always ready to learn and everyone ready to teach. What a great group to cook with!

May..time for spring and warmer weather! Women in the Outdoors training, Becoming an Outdoors Woman! And good food from clams and mussels in broth, to southwest chicken (chicken, beans and other wonderful flavors), creamy chicken noodle stew, veggie casserole, faux toffee ( A Bisquick crust, melted chocolate, and topped with chopped nuts -- no toffee at all!).

Later in June, we partied under the old, tall trees on a hot day at the Tinkler home. There we found the renovated, old, and historic McConnell Barn. This barn is from part of the founding families of the McHenry Co, Illinois! We had great appetizers, ribs, curry stir fried rice, crusty artisan bread, fried fish, fish stew. And it was Simon’s 1st DOG because Simon is Bob and Ann Tirk’s 7 month old grandson! He got himself a great start!

July is our annual Pell Mountain DOG at Gwen and Bob’s home. A beautiful day with great friends enjoying everything that a grill and a Dutch oven can offer. Breads, salmon bake over red potatoes, poppers, upside down cream cheese chocolate cake, ribs and brisket!

We enjoyed a marvelous great time at Ottawa Lake SP in Kettle Moraine Forest in southeast Wisconsin. The DOG was held with great food, and always too much of a good thing! After dinner, we all went down to the Owl Talk at the amphitheater. The program was on rehab’g owls and caring for those birds that can’t be released. Seen were Screech, Barred and Great Horned Owls.

Something a little different.

August brings another DOG and more great food and friends.

Looking forward to seeing all our friends at National DOG 2014 in Iowa.

The Sam Houston Chapter met on May 24, 2014 at the Willis American Legion. Five RVs started camping on Friday. There were 30 total for lunch on Saturday with one new joining member and five visitors.

The June DOG was held again at the Willis American Legion. We had four campers, and on Saturday there were about 20 others that joined us. Since the temperature is rising, we have started our “Summer Plan”. We continue to meet monthly, but during the summer hot months, you cook if you want or bring cold foods. We believe it is very important to meet monthly and not have a break from gathering and enjoying the FELLOWSHIP. As the Sam Houston Chapter makes its yearly schedule, it considers the LSDOS Board and Membership Meeting dates, and schedules their monthly DOG to meet in conjunction with these important meetings. We feel it encourages our members to participate in the LSDOS and meet more LSDOS members. Therefore, our July DOG was held at Salmon Lake on July 19, 2014 with the LSDOS Membership Meeting.

We had six campers that started arriving on Thursday. On Friday, we went to town for lunch at the Grapeland Creamer Café. We enjoyed a buffet of fried fish, chicken fried steak, all the trimmings and a hamburger (to die for). It was a real treat to have food prepared for us. On Saturday we had breakfast at 8:30am and immediately started preparing for our 12:30 lunch. As always, we had way too much food and of course we felt we had to sample everything!!! It was so nice to see members from other chapters and have time to visit.

Our next DOG will be August 23, 2014 at the Willis American Legion. Come join us!!!

COME OUT AND JOIN IN THE FUN, FOOD AND FELLOWSHIP THAT WE ALWAYS HAVE WHEN WE GET TOGETHER. We usually meet on the fourth weekend of the month and generally we camp. Call or email, (281-292-3960 or marymeri@att.net.

Hope you can join us for our Sixth Annual Regional DOG at Salmon Lake Park in Grapeland, Texas September 26 – 28, 2014. These gatherings are a lot of fun. The Sam Houston Chapter will be preparing the dinner meal on Friday the 26th so you do not need to hurry in and cook, just plan on joining us in fellowship. Hope a lot of our fellow Dutch oven cookers can join us for this fun weekend of ----- FUN, FOOD AND FELLOWSHIP. We will be camping in the Sunshine Lodge area and have use of the building, so no matter what the weather we will be comfortable. There are cabins if you are not able to camp, but you will need to call Salmon Lake Park for reservations, otherwise you do not need reservations.

LSDOS General Membership Meeting July 19, 2014 Salmon Lake Resort Greg and Shervonne certified the quorum of current paid members present. Twenty-one members were needed, twenty-three were present.

Greg began with the invocation. Patti led the group in the Pledge of Allegiance.

Patti thanked everyone for being here and asked what time they wanted to have breakfast on Sunday morning. They decided on 8:30.

Minutes The minutes from the 2013 General Membership meeting and the January Board of Directors meeting. Dee Sims made a motion they be accepted as presented. Joe Huber 2nd. Passed unanimously.

Financial Report Greg shared the financial statement as of June 30. Most revenue comes early in the year with membership renewals. In June we had $211.66 in excess expenses. We are $2,081.81 ahead for the year. As of June 30, we had $26,884.47 in assets with $8,000 in checking, $687 in accounts receivable and $3743 in inventory.

Rhonda said that $500 had already been given to the National DOG as voted on last year. Another $500 in towels are on order.

Steve Lovett asked for a year to year membership comparison. Mary found that we had 259 members in 2013 and 206 currently.

Leslie asked how much inventory we have. Greg said “lots�! It consists of cutting boards, Christmas ornaments, cookbooks, etc.

Membership Mary said that we have 206 members, down 53 from last year. As far as she is aware, there are no new chapters in the works.

Website Report We are having about 40,000 visits to our site each month with about 7,000 of those being first time visitors (as reported by IP addresses). Monday at 1:00pm is the busiest time of the week. The majority of visitors connect from the USA, Germany, Ukraine, and the Czech Republic which leads to security concerns since there are so many hackers in those last two countries. The average visitor spends about two minutes which is good. Thirty percent of visitors came directly to the site (not from a link). Top referrer information is no longer available.

We are having lots of errors on the site and Greg is not sure why. He is in the process of converting the site to a content management tool operated by Word Press. It will be easier to update, even remotely, and more than one person can update it.

We still need to create a social media presence. (Update: In the week after the meeting, Leslie Lovett contacted the board and offered to lead in creating a Facebook, Twitter and Pinterest presence with multiple moderators. Her offer was gladly accepted.)

We are still having issues with retrieval of the newsletter. Various browsers treat it differently, causing problems for users. The magazine format seems to work well.

LSDOS General Membership Meeting (continued) Newsletter Mary said that she chose to wait until after this meeting. She will send a notice asking for chapter updates.

She will probably get it out at the end of August.

This is her last newsletter and we will need a new newsletter editor as she is stepping down. Patti said that she had done a great job.

Non-profit Status Greg said the 501c3 is held up at the State Comptroller’s office. He has reapplied four times. Somehow there were six taxpayer id’s affiliated with LSDOS which he had to cancel as they were discovered and reapply each time. He last applied in December and the application showed that it was still active a month ago. After it clears the Comptroller, it will go before the IRS. Chapter Incentives Rhonda said that in previous years, we have been sending half of the dues back to chapters. The board voted in January to give 100% of the dues back to chapters this year, but you get to vote on that. The bylaws allow us to vote to refund a percentage of the dues and it is best to keep the accounts below $25,000 to maintain non-profit status.

Joe Huber made a motion that 100% of dues paid by the end of May 2014 be returned to chapters to help chapters. Terry Cobb seconded. Someone noted that the last two years a lot of people renewed before the end of the fiscal year, especially at the National DOGs. Measure passed unanimously.

National DOG (NDOG) Leslie and Rhonda shared that there was no new update from Ron. A well-known pie lady from Iowa is coming. There are still camping spots available. It will be held in Monticello, Iowa. The question is, are we hosting a membership booth? Ron is sharing a lot of local events in the area. Steve suggested everyone share the Facebook information with other groups they participate in to help get the word out. LSDOS gained 40 new members at the last NDOG. Joe pointed out that we will need people to man the booth. Patti asked who is going and can be in charge of merchandising the booth and scheduling workers. Mark Scheffler volunteered to lead it. Leslie will give him more information. Joe and Janet are also going so he may have some help getting the merchandise up there. Greg said he would make sure that it gets there.

Leslie suggested having it open Friday afternoon and all day Saturday. She will make sure Ron knows to reserve a space and that we are listed in advertising.

We usually have some goodies in a basket for a drawing for members who renew at NDOG and a special raffle for new members. Steven Sick made a motion that $100 go to the new members Dutch Oven. Mel Sims seconded. Leslie will help make sure the oven gets there. The vote passed unanimously. Greg will give the tickets to Mark.

The 2015 NDOG will be at Bryce Canyon in Utah. Rhonda said we have supported the NDOG for the last five years with $500 in cash and $500 in merchandise. The next sponsor is not a LSDOS member and all the past sponsors were. The discussion was whether the sponsor needed to be a LSDOS member in good standing and the fact that the next several NDOGs will be in states far away from Texas. David Jones thinks it is penny ante to insist on their membership. Joe said the NDOG is good for Dutch oven groups in general

so we should do it. Patti said that at first we were doing it to help support our members who were trying to host NDOGs. Leslie noted that the NDOG is a perfect venue to attract members and if we don’t do it, it is a

LSDOS General Membership Meeting (continued) lost opportunity. Steven sick said that regardless of the location, we can still support it. Bob Schave had asked if NDOG would be close to Texas as in the past. Rhonda proudly exclaimed that it says LSDOS is best!

Bob Shave made a motion that in order for us to support NDOG financially, the host has to be a LSDOS member in good standing in the year we vote to give and the year of the NDOG. Scott seconded. Two members voted yea, others nay so motion failed. Discussion included the fact that it would just be a matter of them paying their $20 fee which didn’t necessarily mean they would participate as a member.

Leslie made a point of order and a new motion that LSDOS sends $500 in merchandise and $500 in financial support. This matches what we have done in past years. There were two nay votes and others were yea.

Measure passes.

LSDOS Society-wide DOG Patti shared a letter that was sent to the Board by Mike Key from the Rio Grande Chapter. He had suggested a state-wide DOG. His group is willing to travel up to 300 miles to somewhat central Texas and suggested that it could include a cook-off. She said that based on his letter and the board’s discussing, that we need to discuss having a LSDOS DOG in the state of Texas and give $1000 in start-up funds. Someone mentioned that 300 miles wasn’t very far. Robin asked why it couldn’t be combined with the summer meeting.

Someone asked if they held one “down there”, would we go. Steven Sick said that meeting times weren’t appropriate for competitions. Joe pointed out that east Texas is central to the entire LSDOS membership as pinpointed on maps, including the out of state chapters. Robin asked about rotating it around the state.

Steven pointed out that no place in Texas will be perfect for all but he is not in support of it always being in a single location. Bob reminded us that some discussion about the NDOG was that the next 5-6 years, the National is in Utah, California, Kansa, etc. – nowhere near Texas.

Patty said that part of choosing the location would be finding someone near enough to a location who would volunteer to plan it. When we come to Salmon Lake, it has lots of space, cabins and the building is free with 10 campers. Rhonda said that geo cachers rotate to different regions around the state. Someone noted that Mike’s chapter is new and just wants to get involved. The board had voted to do it and are bringing this to the membership today. Joe Huber said that people want to know what they “get” for their $20 membership, so we should do this. Dee Sims made a motion to support having a LSDOS DOG within the state of Texas.

Bob seconded. The vote was unanimous in support. One thousand dollars was approved by the board and is already in the budget in case the membership wants to host one. The January discussion by the board was that any competition would be non-sanctioned, just fun, no prizes. Leslie said that the host would check in with the board for approval of plans. David Jones asked why the competition couldn’t be sanctioned.

Steven Sick said LSDOS could have competition just for fun. Someone said it would be a good opportunity to promote youth or scout cooking.

Joe Huber said it should be kept simple – no name tags, no goody bags, no frills. Canton is cheaper and simple. Patti said that the $1,000 was for finding and reserving a location. Joe suggested that paid members not pay a registration fee to attend and the fee for non-members is to join LSDOS, which is $20 per family.

Joe was nominated to host the first event. Janet allowed Joe to accept with Leslie and Steve to help plan the big DOG. Patti reminded everyone that they had all voted for it and need to help. Joe had already checked some dates with Canton and at last check, April 16-18 or 23-25 were open, along with Mother’s Day weekend.

Discussion around the room settled on April 23-25 if still available. (UPDATE: In the week after the meeting, Joe learned that the site was no longer available on the chosen date. The Lone Star Dutch Oven 11 11

LSDOS General Membership Meeting (continued) Society First Annual Rally will be held April 17-19, 2015 at the Canton Civic Center/Campground.) With 30-100 “nights” of paid camping at $16 per night, per camper, we would get the huge civic center building for free.

New Business Joe made a motion that we use some of our excess inventory of merchandise to help struggling chapters who could use them as chapter incentives. (Such as door prizes, etc.) Scott seconded the motion. Greg recommended an amendment which was accepted, to allow the board’s discretion to reduce excess inventory. The vote passed unanimously.

Rhonda announced the 1st annual Sunflower Invitational the first week in August in Ottawa, Kansas. They will have three-pot and kids competitions. She suggested that if y’all support the kids because they are the future of Dutch oven cooking. There will be 5 kid teams so about 10-15 kids competing. Bob made a motion to provide an LSDOS apron to each kid on a kid team. Steven Sick seconded. Vote was unanimous to support.

Leslie made a motion to also give $100 towards prizes for the kids. Terry Cobb seconded. Vote was unanimous to send $100 for prizes.

Nominations of Officers All positions on the board are being vacated and are open for nominations. Bylaws state that nominations must be made at the General Membership Meeting and that uncontested positions will automatically be elected without an election by ballot. Nominations are: President: Stacy Sick 1st VP – Robin Clute 2nd VP (Membership) – no nominations Secretary – Stephanie Vickery Trustee – no nominations According to the bylaws, if a position has no nominees, the President may appoint members to the positions at their discretion.

2015 General Membership Meeting Robin Clute made a motion to use the brand new Hamm Creek Park, near Cleburne and Johnson City for the General Membership Meeting next summer. It is 7 miles from Rio Vista, TX, about an hour south of Ft. Worth. It has both rv and tent camping. Hotels are about 20 miles away. The cost is $24 per night for full hookups, water, electric, and showers are available.

Patti noted that on top of campsite fees, state parks also charge a day use per person. Corps parks are half price for seniors.

Leslie seconded Robin’s motion. It was unanimous contingent on availability of a pavilion. They will aim for a date at the end of June but not the first weekend (graduations), and avoiding Father’s Day. Steven Sick asked what would happen if the location falls through. Greg said that the board could do a called meeting to resolve.
