lgar Mature is a 10-month old matured farmhouse cheese, with a good strong flavor and natural rind. A cow's milk cheddar made with unpasteurized cow's milk and vegetarian rennet, this cheese is hand-made by Lightwood Cheese next to the Elgar Birth Place Museum in Worcestershire. The milk for this cheese comes from a family-owned dairy in Hereford. Elgar has a more open texture than a cheddar and is suitable for cutting or cooking. It is ideal as a slightly lighter alternative to cheddar on the cheeseboard, and can be enjoyed with a glass of full bodied red wine, or with a glass of good dry cider. Great traditional cheese with a full flavour.

I’m not going to trot out that hoary old chestnut about how the year is flying by, because it just makes me sound like my grandmother, but have you ever wondered why it is that the older we get, the faster time seems to whizz by? There is a theory about that – probably dreamed up by some clever individual with not enough to do – but plausible nonetheless. So here it is - and you can decide if it makes sense, or not: when you are 10 years old, a year is one tenth of your lifespan, which is a large percentage, so time seems to go slowly. As you get older, a year represents a smaller and smaller percentage of your life, so that by the time you get to 50, a year is only one fiftieth of your life which is why time seems to go so much faster. Of course it could just be that when you are 10, you are constantly looking forward to some special event – birthdays, Christmas, holidays, etc. – so time seems to drag, whereas once you reach 50 all you seem to do is prepare and pay for said birthdays, Christmas and holidays, hence the reason the years seem to race by! Which explanation do you subscribe to, or does anyone have any other theories? Well that’s enough nonsense for now, happy reading and enjoy the Bank Holidays. See you again next month.

A Brief History of Hops in the West Midlands article & photographs by Pamela Green

W

e all know that hops have been used for centuries in the brewing of beer! But, did you know the oil from the hops is a powerful antiseptic and is also used in the making of sleeping tablets? Pharmaceutical companies use hops in medication to improve the appetite and digestion. It is said that a pillow of warm Hops will often relieve toothache and earache and allay nervous irritation. Hop Tea, is a mix of hops and ordinary Ceylon or Indian Tea, and can be purchase from most grocers. The infusion combines the refreshment of the one herb with the sleep inducing virtues of the other. The stem of the hops is used to make rope, sack, and paper. Dyes are made from the hops, with a 18

yellow dye being made from the leaves and cones, and the sap makes a brown dye. And finally, for centuries hops have been used as decoration in kitchens and public houses. For generations hops have been grown in the West Midlands and Kent. In the Midlands the fields are called hop-yards and in Kent hop gardens. The kilns were also different, here they are square not like the round oast houses of Kent. I have very fond memories of my early days when my mother and her sister were land girls and we lived on a farm. I recall sitting in a crib while my mother and aunt picked hops. When the crib was full the tallyman would arrive and scoop his basket full, counting how many bushels they had picked. I can even remember

my mother’s call; “weigh ‘em light boy” in other words she wanted more bushels than they had picked. Many families chose September for their holidays and spent them earning money by picking hops. In fact, all school holidays were a delight, and the hop yards were our playground, until we were old enough to help, and then every school holiday I would be there alongside my family working on the vines. In winter we would cut back and manure them, in spring we trained and tied the vines, and the farmer would follow and spray, and in late summer we picked. I remember two large farms close by owned by the Pudge family. This family had owned the farms for 16 generations and had 120

acres of hops planted. The farms were huge and always so busy at hop picking time. In those days the farmer would collect the workers in lorries and take them home again at night.

Sadly with diseases like verticillium wilt and cheaper imports British hops went into decline, and farmers reduced their hop growing drastically and learned to diversify or go bust. On 8th August 1998, Mr and Mrs Pudge opened a farm and craft shop with a café, which they named ‘The Hop Pocket Craft Shop’, and it is still thriving today. They sell some amazing crafts, farm produce, plants and hand made toys. They also have a museum about hop growing through the years. The smell as I walked into the museum brought back so many happy memories of my childhood and the fun we had running wild in the hop yards. Hop growing has changed and new modern machines are used for picking the hops. The Hops are then spread on the upper kiln floor and exposed to fumes of burning sulphur; this kills all the bugs and the farmer gets a brighter sample. When cool the hops are removed from the kiln and packed in bales, known as 'pockets' and sent to the brewers. Today the hop yards are back in full production with the popularity of real beers. Many of the old beer recipes have been resurrected and demand for hops has increased with the state-of-the-art small breweries making real ales.

Microchipping Your Cat

E

ffective April this year, it is now law to have your dog microchipped. However it is just as essential to have your cat microchipped too. Cats are free to roam and may become lost or unable to return home. It is an important part of responsible pet ownership to have your pet registered to your home address, which could save much heartache if your cat was to go missing. Having a small chip inserted into the cat's scruff is a relatively painless procedure. It then gives the cat an identity, making sure there is less dispute over where the cat lives, and increases the chances of a lost cat being reunited with the owner. Each microchip has a unique fifteen digit number, that is individual to the cat. This number, the cat's details and the owner's details are then stored on a database. This also means that if the cat does become lost and is handed in to the vets or local rescue centre, it will be scanned immediately for a microchip, and then hopefully be returned home quickly. As the cat then has some way of being identified, a collar is not needed. Collars can be the cause a lot of injuries to cats, especially if they are not the quick release type. If your cat does go missing, then inform your local vets, rescue centres, neighbours, and make posters with your cat's details. It is also worth mentioning to the local post man that your cats is missing as they may have local knowledge or had a sighting. Also inform the microchip company so they can register the cat as being lost. If you move house, change your phone number or circumstances are

ike all areas of the garden, by creating different environments for plants to grow means you can extend the range of varieties needed.

Rock gardens offer the chance to grow alpines in your garden, that would normally grow on the side of hills. These areas of changing interest are coming back into fashion with the wide range of plants available in garden centres nowadays.

A straightforward rock garden is one without water; obviously water is another thing that can be added in to create movement through a rock garden, but can be quite complex to build into the rockery. Therefore we are just looking at rockeries themselves.

Stones The type of stone used is particularly important. Ideally,

when picking rocks, a granite stone and not a porous stone would be preferable. This will prevent them shattering during the frosts/winters and ensure that the rocks look as good as when they first went in. Rockery Options There are two options for building a rockery: either build it into an existing slope, or create/construct a mound with the rocks built into it. Either option is suitable, but the selected plants would change. If you are building into an existing bank, the bank might already be wet. If you are creating a mound then this area would tend to be drier. Therefore choosing the correct plants would be essential to fit into those areas. Choosing your Rocks The best thing to do is to choose a random selection of rocks. If they are all the same size then this looks rather unnatural. If they can be

layered, i.e. resemble a natural rock face, this would create the desired result. Placing the rocks in a crescent shape, starting at the bottom and digging into the bank, will create pockets for planting. Choosing your Plants Choosing your plants is obviously very critical because you want plants that will flow over the edge and slowly cover some of the rocks to make it look natural. Something to bear in mind when placing your plants is that you might want to use some of the stones as stepping stones through your planting in order to maintain and weed the area.

Strata of the Rocks The strata lines and the shapes of the rocks are very important. By getting a cluster of three, i.e. two lower ones and one onto the next level gives you the area, but you ideally want them to look like they have fallen and have settled to naturally protrude from the soil. So the strata lines - the lines of soil or settlement materials that have formed over billions of years, creating the ridges or layering in the rocks - getting these to flow in the right direction will make it more pleasing to the eye.

Again choosing your plants carefully is hugely important and adding horticultural grit over the whole area would help to keep it down and the weeds under control.

Weeding Weeding is highly important, ensuring unwanted weeds such as cooch grass don’t get a firm hold. Once they root underneath the stones it then becomes a real issue. Safari Park Celebrates first Rhino birth in 10 years . . . mum. Ailsa will have her work cut out for her over the next few weeks, as the newbie needs feeding regularly throughout the day and will stay close by her side for up to two years.

taff at West Midland Safari Park are celebrating the birth of a male southern white rhino calf (Ceratotherium simum simum). After a lengthy pregnancy of sixteen months, first time mum, six year old Ailsa, gave birth to the long awaited new arrival on Good Friday, 25th March. This is the first baby rhino to be born at the tourist attraction since the baby’s dad, Barney, who was born in 2005. Within the first hour the cute youngster was up on his feet, demanding attention from

Southern white rhino are considered a conservation success story, with this particular subspecies being the most common of all the world’s rhino species. However, rhinos still face a huge threat in the wild due to habitat loss and more commonly, poaching. Deputy Head Keeper of Ungulates, Lisa Watkins said, “The calf is absolutely gorgeous and his birth is not only fantastic news for the Park, but also for white rhino conservation. The International Union for Conservation of Nature lists them as ‘near threatened’ and with rhinos being poached every day for the trade in illegal rhino horn, we

hope that our adorable newcomer will help highlight the very real danger the species still faces.” She added, “The baby hasn’t got horns yet, but these start to develop straight away and can reach almost a metre when fully grown. Both mum and baby are doing brilliantly well and Ailsa is providing all the care we would expect, even though she is a first time mum. It doesn’t seem that long ago that the calf’s dad, Barney, was out and about, bouncing around the reserves and I’m sure he will be keeping his eyes on him when he makes his public debut onto the reserves, next month.” Although the new baby is only a few days old, he already weighs a whopping 67.5kg, but still has lots of growing to do - adult male rhinos are one of the largest land mammals reaching weights of around 2,500kg!

The not yet named calf is the newest addition to the Park’s small ‘crash’ of southern white rhinos, made up of four females and one male. It marks a great success for the Park’s European Endangered Species Programme, a breeding initiative of endangered species in association with the European Association of Zoo and Aquaria.

Chocolate Ganache Meringue Meringues are a light but indulgent treat at any time, and this chocolate version makes a delicious and decadent desert that’s easy to make and popular with the whole family.

METHOD

INGREDIENTS For the Meringues 3 egg whites 165g caster sugar 1 tablespoon cocoa For the Filling 375ml double cream 1 tablespoon icing sugar 1 teaspoon vanilla essence extra cocoa, for dusting For the Ganache 100g dark chocolate 125ml double cream 1 egg, beaten

Preheat the oven to 120°C/100°C fan.

Line three baking trays with baking paper; draw an 8cm x 25cm rectangle on each piece of paper, turn paper over.

Beat egg whites in a small bowl until soft peaks form. Gradually add sugar, beating until dissolved between additions.

Fold in sifted cocoa.

Spread mixture evenly over rectangles.

Bake 45 minutes or until firm. Cool in oven with the door ajar.

To make the ganache: Combine chocolate and cream in a small saucepan; stir over a low heat until smooth.

Cover and refrigerate until almost firm.

Meanwhile, beat cream, icing sugar and vanilla in a small bowl until soft peaks form.

Place one meringue layer on a serving plate. Spread with half of the Ganache, top with half of the whipped cream.

Ageism: where are we three years on?

A

geism (discrimination based on a person’s age) is on the national discussion agenda this month. For ‘royal’ watchers this may not come as much of a surprise! We are some three years in to a dissolution of the retirement age and some people seem to think that attitudes to ageing should have disappeared from society just because we amended a law (The Equality Act) and told everyone it wasn’t legal. I grew up in a rural Worcestershire community so I never quite understood retirement age, or did farmers just always look older than 65 when they retired? Just to confuse the message even more we have spent all the time in the interim arguing about when you can get your state pension; if you are entitled to one; how much it will be and how it should be set! Whilst much focus has been made on ageism in the workplace, the change applies to a range of issues; credit; insurance; quality of service delivery; health service support; club membership and a host of other issues. So are attitudes to ageism changing?

I personally think the answer is yes, but, just like its counter part – racial discrimination whilst it has officially been outlawed, it will take decades for people to change their habits and adjust indoctrinated beliefs. We do not live in a perfect world and there is still much more we can do. Thinking about how we treat older people is a good place to start. Ask yourself some obvious questions. How do I want to be treated by others when I get older? Should it cost me more when I buy things just because I am older? Should I be offered the choice of health treatments at any age? How can I show my working

capability has nothing to do with my age? Older people generally deserve our respect. They have lived through some very challenging times and contributed to getting us where we are today as a society. Their generations set up, or implemented many great things we see today, including The Equalities Act! Older people contribute to society significantly. My oldest employee (and I don’t know what age she is) helps hundreds of older people annually to claim support they are entitled to. She raises over £500,000 a year for them collectively; her experience is

invaluable. Grand-parenting is a well-developed contribution to our economy and society, and the contribution of older people to volunteering is immeasurable. Hopefully in this very memorable year when our Queen reaches a landmark age of 90, we can take an important step in eradicating ageism by changing our views of older people and making Herefordshire and Worcestershire a better place to grow older. t seems that many business owners mistakenly think that R & D Tax Credits are only available to large, Pharmaceutical or Tech companies, and that making a claim would be too difficult to complete and follow up with HM Revenue and Customs. Because of these misconceptions lots of SME’s are potentially missing out on claims. The reality is that R & D Tax Credits are available to most UK Companies, regardless of size (there are two sets of separate legislation – one dealing with small and one dealing with large companies) so long as they meet certain qualifying conditions. It is true that the rules governing the eligibility of claims are complicated however in essence two key phrases stand out “advancement of knowledge� and “technical uncertainty�.

To put it simply, the legislation is aimed at those who take risks by innovating to develop processes, products or services. This can mean that companies operating as engineers, architects, furniture manufacturers, software developers, chemists and widget makers could all potentially qualify for the relief. From 1st April 2015 relief is given on 230% of “qualifying eligible expenditure” which in simple terms this means that if you incur £1 of eligible expenditure you can potentially claim relief on £2.30 of costs! Eligible expenditure can include, but is not limited to, direct salary and NIC costs, pension contributions, subcontract costs, costs of goods purchased and a proportion of light, heat and power costs. To put some meat on the bones let’s look at the following example: A company has eligible expenditure of £10,000 consisting of salary and material costs. Assuming the company was profitable they would be able to make an R & D claim of £23,000 which in turn would save the

company £4,600 in corporation tax (at the current tax rate of 20%). If this company was not profitable they would still be able to benefit from the relief and would be able to claim a “tax credit” equal to 14.5% of the enhanced expenditure as a refund. Garden & Shed Security The basics of protecting your home and garden

pring is now upon us and many people across West Mercia will be turning their attention to the garden, others will be taking out their bikes to enjoy the warmer weather and some may be preparing the BBQ. Many people store their gardening equipment, tools, bikes and BBQ's in their shed and unfortunately this means that these outbuildings are often seen as an easy target by thieves. But there are many ways to keep your garden, shed and home safe and below are some of our tips to help you protect your property. The basics of protecting your home and garden Thieves will generally take the easiest option when considering breaking into a shed, outbuilding or home and security measures such as a side gate and motionactivated lighting, can deter the would-be thief. However, there are other ways to protect your home and garden. Gravel paths and drives are a fantastic way of cheaply and unobtrusively discouraging a thief from entering your garden. Gravel makes a loud noise when stepped on which carries well at 46

night and may wake the home owners, neighbours or a dog. This is instantly off-putting to a thief. Another way to protect your home is to plant prickly hedging around the perimeter of your garden. Protecting your shed The first aspect of protecting your shed is to fit a good quality lock. There is a range of sturdy padlocks, bolts, hasps and staples available on the market but make sure you get one that is appropriate to the strength of your shed door and frame. Remember that any opening windows on your shed will also require a good quality lock. In addition to a lock, you may wish to consider fitting an alarm on your shed. There are three types of alarm system that could be used: r An infra-red detector in the shed that picks up movement and body heat. r A door contact system. r An alarm within the padlock itself, which sounds if the lock is forced open or tampered with. These systems can be purchased

from most DIY stores and locksmiths. Another aspect of protecting your garden shed is that the items inside it - as well as being expensive to replace - can also be used to break into your home. For example, a garden spade applied with the right leverage could be used to force open a window or door. Take these items into consideration when planning the security of your shed and think about chaining and padlocking tools that could assist a thief. General garden precautions Don't leave items in your garden that could make the life of a thief any easier. For example, a ladder left out in your garden could be used to get into the upper floor of your home or onto the top of your shed. Likewise, other tools and gardening equipment left outside could be used to break into your home. Just taking a few minutes to lock these items away will greatly increase your security. Also consider using a property marking system to protect the items in your garden and home. Property marking makes your belongings much less attractive to thieves as they realise that the

goods can easily be identified as stolen and traced back to the original owner. There are many ways to mark property; including engraving, UV marking and forensically coded systems such a SmartWater.
