Betty's Recipes Coconut Melting Moments (makes about 30 biscuits) 220g flour, sifted 37g cornflour, sifted 105g castor sugar

250g butter 80g desiccated coconut 18 glacé cherries, halved

Put flour, cornflour and castor sugar in a food processor, blend in the butter until a soft dough is formed. • Refrigerate for one hour, until the mixture is firm. • Form into small balls, roll in coconut and place on a lightly greased baking tray. • Place a cherry half in the centre of each round, pushing the ball down slightly. Bake at 150°C for 20 to 25 minutes, or until lightly browned.

Christmas Snowballs (makes about 40 biscuits) 250g butter 40ml castor sugar • • • • •

10ml vanilla essence 600ml flour

200g hazelnuts icing sugar

Cream butter, sugar and vanilla essences. Grind nuts in blender, add to butter mixture with flour and mix well. Roll into little balls and place on a baking tray. Bake for 45 minutes at 140°C. Allow to cool, then roll in sieved icing sugar.

Kirsch Truffles (makes about 30)

225g milk chocolate 25g butter 25ml fresh cream 200g milk chocolate, melted • • • • •

2 egg yolks 25ml Kirsch liqueur 200g icing sugar

Melt chocolate in top of a double-boiler. Add remaining ingredients, except 200g chocolate. Stir mixture over a low heat until thick enough to handle. Remove from heat and allow to cool. Shape into balls, dip in melted chocolate, place in foil sweet cases and leave to set.

Leave in a cool place to set, do not refrigerate. The flavour improves if kept for a couple of days before eating. 10

CHRISTMAS CAKE RECIPE (if you haven't made your cake yet, try this one - its guaranteed to be a great success!)

Ingredients: 2 cups flour 1 tsp baking soda 1 cup of brown sugar 2 cups of dried fruit

1 stick butter 1 cup of sugar lemon juice 2 bottles wine

1 cup of water 1 tsp salt 4 large eggs nuts

Sample the wine to check quality.

Take a large bowl, check the wine again.

To be sure it is of the highest quality, pour one level cup and drink.

Repeat. Turn on the electric mixer.

Beat one cup of butter in a large fluffy bowl. Add one teaspoon of sugar.

Beat again. At this point it's best to make sure the wine is still OK. Try another cup . . . . just in case.

Turn off the mixerer thingy. Break 2 eggs and add to the bowl and chuck in the cup of dried fruit.

Pick the frigging fruit up off floor. Mix on the turner. If the fried druit gets stuck in the beaterers just pry it loose with a drewscriver.

Sample the wine to check for tonsisticity. Next, sift two cups of salt. Or something. Check the wine.

Now shift the lemon juice and strain your nuts.

Add one table. Add a spoon of sugar, or somefink. Whatever you can find.

Greash the oven. Turn the cake tin 360 degrees and try not to fall over.

Don't forget to beat off the turner.

Finally, throw the bowl through the window.

Finish the wine and wipe counter with the cat.

Go to Sainsbury's and buy cake.

Junior Swimming Lessons Swimming Lessons are available at all our leisure centres and are held on Saturday mornings and weekday evenings. They are 30 minutes long and run throughout the year in courses of 10 weeks. How to Join If your child is a nonswimmer and aged 5 years or over, they can be registered on an ASA Stage One Course. If a child can already swim without armbands they can registered for a free assessment to place them at the appropriate stage. Ducklings Swimming Awards The ASA Duckling Awards are designed to introduce young children to safe and enjoyable swimming. Children aged 2 years and over can earn awards as part of Parent & Child Swim sessions. Duckling Lessons are available for those children aged 4 as a 10 week course.

Lessons One on One swimming lessons provide a more personal and concentrated lesson format, with the teacher able to spend more time on stroke and skill development. Swimming lessons are available for both children and adults. To help parents keep track of their children, lesson plans are displayed on the notice board of each centre. These show the course dates, times and teachers as well as information about the content of each stage. At the end of each course each child is given a yellow card which advances them to the next appropriate stage in the scheme.

Winter in the Garden

Winter is here and we can look forward to lots of clear frosty mornings and plenty of sunny days. With the nights drawing in, now is the time to get up early finish off any forgotten chores in the garden. And here are some of the things you could be getting on with:

Planting

This times of year is ideal for planting bare root shrubs and trees before the ground becomes too cold and hard. If your garden is looking a bit colourless, visit your local garden centre and get some plants already in flower, or with attractive foliage and/or bark.

Preparation

New spring seed catalogues will soon be out, so now is a good time to start planning your garden for next year. Ordering your seeds now will ensure you get what you want before supplies run out. Christmas Traditions At this time of long dark nights, and cloudy, dull days, the Christmas break mostly comes as a welcome respite. Our prehistoric ancestors knew a thing or two about brightening this time of year with their festival celebrating Saturnalia, the birth of the sun. This began on 19th December and lasted for seven days. In Northern Europe, 21st December saw the winter solstice with its traditional feast of Yule, when logs were burned in tribute to the gods Thor and Odin. The Yule log was traditionally lit from kindling from the previous year's log and the fire kept alive throughout the festival, the flames symbolising the undying sun. The Norsemen's god Woden, was said to have ridden across the frozen land leaving presents. The 25th December was the highpoint of the Saturnalia merrymaking whilst on the same date the Romans celebrated the birth of their sun god Mithras, when the giving of gifts was encouraged. A tradition grew up that baby Jesus was first warmed by a fire of ash wood since it is one of the few woods that will burn straight from the tree and could have been used by shepherds on Bethlehem's hillsides. The church therefore attempted to give the custom Christian significance by insisting the Yule log be of ash. It was therefore thought to be unlucky to throw ashes out on Christmas day as these were believed to have magical properties, being a cure for all manner of ailments, especially toothache. In this, as in many other instances, the early Christian missionaries absorbed existing celebrations into their teachings. Although the date was chosen many centuries following the birth of Christ, the church incorporated many of the earlier traditions Having adopted the 25th March (the pagan festival of Spring) as the day when the Angel Gabriel visited Mary forecasting her pregnancy, nine months later would signify the date of the birth as the 25th December. During the 4th century this date was gradually adopted by most Eastern churches although in Jerusalem, opposition to Christmas lasted longer. During the Middle Ages, Christmas became the most popular festival of the year. However during Oliver Cromwell's Long Parliament, its pagan associations were considered inappropriate and a series of laws came into being regarding its celebration. The eating of more than three courses of Christmas dinner was forbidden by a law passed in 1646 and all sport on Christmas Day was unlawful, although archery was allowed and later, leaping and vaulting. Everyone was not only obligated to attend church on Christmas Day but to have walked there, as the powers-that-be could confiscate any vehicle used to get to church, the money being given to the poor. It wasn't until after the restoration of the monarchy in 1660 that celebrations could continue. Probably the most familiar icon at this time of year is that of Santa Claus, the cheery old gentleman in a red coat and wearing a long white beard, dispensing gifts. This picture though is a modern one, for until an early 20th century advertisement for Coca Cola appeared, he was depicted as wearing blue, green or even purple. Santa Claus is a direct descendent of St. Nicholas, the patron saint of sailors and children. Dutch immigrants to the USA took the name 'Sinter Klaass' with them and it became anglicised.

The real St. Nicholas was a Turkish Bishop who is said to have left purses of money to three poor young girls in distress because they had no dowries and therefore could not marry. This story spread to Russia and into Siberia where the idea originated of him living in a land of ice and snow and using a sleigh drawn

by reindeer. The notion of him flying through the air and using the chimney as a way of entering houses was a slightly later tradition thought up by the Shaman, who lived in that part of the world. For centuries both church and home were decorated with evergreens, chief amongst these being holly with its blood red berries and prickly foliage representing Christ's blood and his Crown of Thorns, and it was thought to act against evil spirits and witches. In pagan times ivy was linked with the god Bacchus as it was thought to prevent overintoxication, and its clinging habit made it a symbol of love and friendship. A Cornish legend says that when the famous lovers Tristan and Iseult were burned apart from each other at the behest of the jealous king, branches of ivy grew towards each other from both graves and were finally united. It was also said that anyone wearing a wreath of ivy acquired the gift of prophesy and the ability to recognise witches. The Druids regarded mistletoe as divine, revering the oak and apple trees on which it mainly grew. On the sixth day of the sixth moon they would cut it and place it in water that would then act as a charm against witchcraft and also cure all ills. In the Middle Ages the herbalist Culpeper described how dried powdered mistletoe if given for 40 successive days, would cure palsy, apoplexy and falling sickness. The Norsemen believed that if enemies met beneath mistletoe they would instantly become friends presumably our custom of kissing beneath the mistletoe has some connection with this belief. The true origins of the Christmas tree are not really known. St. Boniface is said to have used a young fir tree cut down on Christmas Eve as a symbol of the new Christian faith instead of a pagan oak. Prince Albert is usually the one credited with bringing the idea to Britain from Germany, as the royal couple displayed a large tree at Crystal Palace, and the idea quickly caught on, but an earlier Royal couple, Queen Charlotte and George III, first displayed a tree at Windsor Castle in 1789. The first recorded instance of such a decorated tree was in Alsace in 1520 and by the early 17th century it had become an established custom in Germany. The trees were decorated with roses of coloured paper, sweets and apples, with later, candles to represent the starlit heavens with a doll to represent the Christ child placed on the top, giving rise to the later tradition of an angel or fairy. Candles were a terrible fire hazard so the tree wasn't usually decorated until Christmas Eve and it was only after the introduction of the first electric tree lights in 1890 that the custom of keeping the tree for a much longer period became possible. Twelfth Night (5th January) is the day when all Christmas Decorations should be taken down, or risk bad luck; if they are not taken down on Twelfth Night, then the decorations should stay up all year. The superstituion that leaving the decorations up would bring back luck stems from the days when people believed that tree-spirits lived in the greenery (holy, ivy etc) they used to decorate their homes. The greenery was brought into the house to provide warmth and safety for the tree-spirits during the winter. Once winter was over the greenery had to be returned to the outdoors to release the tree-spirits into the countryside once again. Failure to do so meant that vegetation would not start growing again, and there would be no spring which would result in agricultural disaster. It was also believed that if you kept the greenery indoors, the tree-spirits would cause mischief in the house until they were released, hence the bad luck. Today, even though the tree-spirits are long forgotten and Christmas decorations are made of tinsel and glass, people are still superstitious about leaving them after Twelfth Night.
