So how will your year be? If you haven’t made any New Year’s resolutions, now is the time to do so. But don’t just write them down and forget about them later; make them happen!

Si no ha hecho ninguna resolución de año nuevo, ahora es el momento para hacerlo. Pero no solo las escriba para olvidarlas después sino ¡Llévelas a cabo!

In Baja California Sur we don’t need snow to melt away and flowers to start blooming to know that the spring is here. But there is something in the air this spring that makes me feel confident that this is going to be a good year!

En Baja California Sur no necesitamos que la nieve se derrita o que las flores se abran para saber que la primavera llegó. Pero hay algo en el aire de ésta temporada que me asegura que ¡Este será un muy buen año!

We’ve got plenty of things going on all around Baja Sur. We have a new international airport in Cabo San Lucas; the urbanization and construction of hospitality and residential projects are at work again; we’ve got new quality businesses opening, bringing value to us residents and returning visitors. We’ve got the increasing interest of creative young professionals with a vision of the future of Baja California Sur. Several of the state’s architectural projects signed by this ‘new blood’ have already received national and international recognitions. Together with them, and with people who have been passionately working for and promoting this beautiful place through outstanding events, social responsibility projects and education, we can make this a very good year!

Hay muchas novedades sucediendo en el Sur de Baja. Tenemos un aeropuerto internacional en Cabo San Lucas; la urbanización y construcción de grandes proyectos y desarrollos están de nuevo en marcha; hay nuevos negocios abriendo sus puertas, dando valor a nosotros los residentes y visitantes recurrentes.

Contamos con un interés creciente de jóvenes profesionales y creativos en la visión para el futuro de Baja California Sur. HAY UN instrumento en el mundo que, lo quiera o no, lo alegrará e incluso hará que mueva sus pies en contra de su voluntad. El acordeón toca alegres y melodiosas polkas, dulces canciones, baladas sentimentales, valses, marchas, tangos, entre otros, el cual no los dejará indiferente.

This big and shiny squeezebox, as it is sometimes referred to, has its origins in Habsburg monarchy, where the earliest type of accordion was patented in Vienna in 1829. In the mid nineteenth century, when Maximilian of Austria became Emperor of Mexico, several groups of today’s Central European immigrants introduced the accordion and polka music, so common in their homeland, to Mexicans, and started using it at their festivals and popular celebrations. Gradually, local bands adopted these elements and created a unique and distinctive musical genre that includes sung and instrumental melodies, which people began to call Norteño.

Esta grande y brillante caja armónica, como en algunas ocasiones se le conoce, tiene sus orígenes en la monarquía de Habsburgo, donde los primeros tipos de acordeones fueron patentados en Viena en 1829. A mediados del siglo XIX, cuando Maximiliano de Austria se convirtió en Emperador de México, varios grupos de inmigrantes de Europa central introdujeron el acordeón y la música de polka, tan popular en sus países, a los mexicanos, quienes comenzaron a utilizarlo en sus fiestas y celebraciones populares. Gradualmente, bandas locales adoptaron estos elementos y crearon un único y distintivo género musical que incluye melodías cantadas e instrumentales, genero que comenzó a conocerse como Norteño.

El acordeón actual es comúnmente utilizado en diferentes géneros musicales en todo el mundo: el Chamamé en Argentina, la Cumbia y el Vallenato en Colombia, Chanson en Francia e Italia, el Merengue en la República Dominicana, la música celta en Irlanda y Escocia, y Polka en Europa Central.

Currently in Mexico, the accordion is mostly used in the Norteño music.

Nonetheless, many artists have blended the accordion into their music as to produce new tunes, creating melodies rich in contrast and nuance that became very popular. Experience the rhythms of the accordion in different music genres in Mexico by following artists: Julieta Venegas, Nortec, Los Tigres del Norte, El Gran Silencio, Bostich, Fussible, Celso Piña, and Ramon Ayala “The King of Accordion”, amongst others.

No obstante, artistas de otros géneros utilizan éste instrumento para introducir nuevos sonidos, creando con ello música rica en contrastes y matices que se populariza en toda la república. Some historical facts: When Mexican conservatives negotiated with Napoleon III to found a Mexican empire, Austrian Archduke Ferdinand Maximilian (grandson of Emperor of Austria, Francis II), accepted the offer to be made Emperor of Mexico in 1864, in order to bring some much-needed stability to the country, which was still suffering from the Reform War and had defaulted on their international debts. Although Maximilian’s rule didn’t last long, as liberal forces under the command of Benito Juarez destabilized Maximilian’s rule. Captured by Juarez’ men, he was executed in 1867. The most lasting effect of his brief rule is Avenida Reforma, an important street in Mexico City that he had ordered built.

getaway, make sure you get the best out of beautiful Baja California Sur in spring time. With just about perfect temperature at this time of year we suggest indulging in water activities. Swimming, surfing, kite surfing, snorkeling, kayaking, diving, scuba diving, fishing... we have it all. If you are more inclined to explore the other, desertic side of Baja Sur, then head to villages around the state. In Miraflores, for example, they organize a beautiful spring festival, and while you are there, visit a church built with milk. Go to Loreto and see the islands, head to Isla Espiritu Santo, or visit the famous Land’s End.

THERE IS something in the air in La Paz that makes you feel relaxed and calm. Like life there has a different, slower pace, and everything seems alright. The city of piece has that special allure, we could say it has it all; stunning sandy and swimmable beaches, relaxed and friendly atmosphere, and that attractive local vibe, which makes you feel like the place to be. It prides with all the advantages of the state’s capital, and offers abundance of entertainment activities, restaurants and shopping venues.

It is also a sport fishing meka, a place with the richest marine eco-system, and due to its proximity to the US and mainland Mexico, mild weather, location and relaxed lifestyle, an attractive place for second home owners and retirees. In comparison to other towns of Baja California Sur, La Paz is a residential city, not a resort town, and that gives it a great authentic value. We prepared some interesting facts about La Paz and selected some escapes we can never get enough of.

Se enorgullece con todas las ventajas al ser la capital del estado y ofrece una variedad abundante de actividades, restaurantes y tiendas.

Además, es una meca para la pesca deportiva al contar con uno de los ecosistemas marítimos más ricos del mundo, y debido a su proximidad con Estados Unidos, relajado clima, ubicación y estilo de vida, se ha convertido en un lugar deseado para tener un segundo hogar, o para retirarse. En comparación con las otras ciudades de Baja California Sur, La Paz es una ciudad residencial, no tanto un centro turístico, lo cual le brinda un gran valor auténtico. Le preparamos algunos datos interesantes de La Paz, además de algunos escapes de los cuales nunca tenemos suficiente.

Landmarks Malecon - this palm trees lined waterfront walkway stretching for more than 3 miles is a popular spot to walk, jog, bike, gather in the evenings to watch sunset, and engage in family events during weekends.

Balandra, Tecolote and other beaches - La Paz prides itself with some of the most beautiful beaches in Baja California Sur. Visit Balandra beach with beautiful quiet bay and famous rock formation, and Tecolote beach, from where you can see Isla Espiritu Santo.

Isla Espiritu Santo - 23,383 acres, government protected island that is a favorite destination among kayakers and ecologically minded adventurers. Several animal species on the island - including the black tailed jackrabbit and antelope ground squirrel – aren’t found anywhere else in the world. The waters surrounding the island are home to more than 500 fish species as well as dolphins, whales and sea lions.

North La Paz - Northern part of La Paz is becoming home to several upscale residential communities, with adjacent golf course, marina and hotels. High end residential community Pedregal de La Paz offers immaculate 180 degree and more views to Malecón, water park Coromuel, aquamarine waters of the Sea of Cortés, and adjacent golf course and marina.

Jesuit Mission - the first city’s mission in down town built by Jesuit missionaries in 1720.

Coromuel - clean swimmable beach at the end of El Malecon with an Aquatic Park are a popular destination to entertain and relax by locals and visitors alike. Aquatic Park Coromuel received a 1st place award in urban development in national category at the CEMEX 2009 awards.

Sitios de interés Malecón - este paseo con palmeras que comprende más de 5 kilómetros, es un lugar popular para caminar, trotar, pasear en bicicleta, disfrutar del atardecer y deleitarse en familia durante los fines de semana.

Balandra, Tecolote y otras playas - La Paz se enorgullece con algunas de las más hermosas playas de Baja California Sur. Visite la playa de Balandra, una bahía tranquila con famosas formaciones rocosas; o la playa del Tecolote, desde donde puede apreciar la Isla del Espíritu Santo.

Isla Espíritu Santo - isla protegida de 9353 hectáreas, la cual es un destino favorito entre quien gusta del kayak y las actividades ecológicas. Existen diversas especies de animales en la isla, incluyendo la liebre de cola negra y la ardilla antílope, las cuales son endémicas del área. Las aguas que rodean a la isla son el hogar de más de 500 especies de peces, al igual que de delfines, ballenas y leones marinos.

Al Norte de La Paz - el lado norte de La Paz se está convirtiendo en hogar de varios desarrollos residenciales de lujo, con campos de golf, marinas y hoteles. La comunidad de Pedregal de La Paz ofrece inmaculadas vistas de hasta 180° hacia el Malecón, Coromuel, las turquesas aguas del Mar de Cortés y el campo de golf y Marina.

Misión Jesuita - la primera misión de la ciudad en el centro construida por misionarios Jesuitas en 1720.

Coromuel - una playa ideal para nadar al final del Malecón con un parque acuático, se ha vuelto un lugar popular para disfrutar y relajarse, tanto para locales como turistas. El parque acuático recibió el 1er lugar en desarrollo urbano en la categoría nacional en los premios CEMEX 2009.

ESCAPES A LA PAZ

Historia La desafiante tierra de Baja California Sur fue difícil de conquistar. Hernán Cortés fue el primer explorador en llegar a la región en 1535 y nombró a la ciudad Santa Cruz. Después de varios intentos fallidos de fundar una misión, la abandonó varios años después. El nombre de La Paz se lo dio el explorador español Sebastián Vizcaíno, quien llego al área en 1596. En 1720, los misioneros Jesuitas fundaron la primera misión actualmente conocida como Misión Jesuita. La Paz era conocida por sus perlas y atrajo a muchos cazadores de perlas en su búsqueda de riqueza. Éstas fueron reconocidas mundialmente hasta 1940, cuando una enfermedad desconocida infectó los criaderos de ostras locales y destruyo la industria de las perlas.

History The challenging land of Baja California Sur was hard to conquer. Hernán Cortés was the first explorer to land in the region in 1535, and named the city Santa Cruz. After failed attempts to start a colony, he abandoned it several years later. The name La Paz was given to the city by a Spanish explorer Sebastian Vizcaino, who landed in the area in 1596. In 1720 Jesuit missionaries built the first mission of La Paz, known today as Jesuit Mission. La Paz was well known for its pearls and attracted many pearl hunters in their search of wealth. La Paz pearls were world known until 1940, when an unknown disease infected the local oyster beds and destroyed the pearl industry.

La Paz in a day If you had only 1 day to spend in the city, this would be our To-Do list.

8-9 AM: Breakfast and coffee overlooking the sea in one of several coffee places on Malecón. If you come early enough, you might get lucky and see the dolphins playfully jump out of the water.

10.30 AM: Explore downtown by foot. We love morning strolls among local shops, galleries, boutiques and just watching the life. You might also like to try to jump into the tourist bus or “turibus” as locals call it to get to know the Malecon tip to tip or take a walking tour and discover downtown secrets.

12.00 PM: Head to the popular Coromuel beach with water park. Its adjacent location to the center and swimmable beach is one of its greatest advantages. Don’t forget to use a sun protector and sit under the umbrella. Grab a light lunch at some of taco restaurants on Malecón, we recommend El Bismarksito with great seafood. And then return to the beach for a necessary siesta.

6.00 PM: we recommend a culinary night out. La Paz has a rich variety of good restaurants with great food selection. In the northern part of La Paz we suggest restaurant Azul Marino, located in Marina Costa Baja; in downtown you shouldn’t miss Las 3 Virgenes; or if you feel like tacos & beers, El Rancho Viejo is one of our favorites.

La Paz en un día Si solo pudiera pasar un día en la ciudad, esta sería la lista de las cosas por hacer: 8-9 AM: Desayuno y café viendo el mar en uno de los diferentes restaurantes en el Malecón. Si va temprano, y con un poco de suerte, podrá ver a los delfines jugar en el agua.

10.30 AM: Explore el centro a pie. Nos encantan las caminatas en la mañana por las tiendas locales, galerías, boutiques y ver su ritmo diario. También puede tomar el autobús turístico o “turibus”, llamado así por los locales, para que pueda ver el Malecón de punta a punta, o disfrute de alguno de los tours caminados en el centro y descubra todos sus secretos.

12.00 PM: Diríjase a la playa de Coromuel. Su ubicación en una playa nadable es uno de sus grandes ventajas. No olvide utilizar protector solar y sentarse debajo de una sombrilla. Lleve un lunch ligero de uno de los restaurantes de tacos de mariscos en el Malecón. Le recomendamos El Bismarksito con deliciosos mariscos. Y luego vuelva de la playa para una siesta reparadora.

Urban life One of the activities I personally found incredible is “cruising” or “maleconeando” as locals call it. What you need to do? Drive slowly with your friends along El Malecon at night, with your windows down and music on the radio... passing Malecon lengthwise, up and down, and up and down again until you get enough of it. Maleconear is a popular activity in any city with el Malecon (for example also in Loreto, BCS; Mazatlan in mainland Mexico…)

Vida urbana Una de las actividades que en lo personal encuentro increíble es ir a “maleconear” (así llamado por los locales). ¿Qué necesita hacer? Solo maneje despacio con sus amigos a través del Malecón en la noche, con los vidrios abajo, música en la radio… recorra el Malecón de punta a punta disfrutando la vista. Maleconear es una actividad popular en aquellas ciudades que tienen Malecón (como lo son Loreto y Mazatlán).

You might be able to do that in most of the local restaurants or serve yourself at home.

Escaping out of the city We strongly recommend a trip to Isla Espiritu Santo, and if you have more time, visit Loreto, a city at the northern part of Baja California Sur and the first capital of the state.

Originally from California, Gail and Larry fell in love with Los Cabos when attending their daughter’s birthday celebration at an adjacent resort.

They liked the place so much, that they returned after a week, and in the next day found and purchased a beautiful ocean front land to build their dream home. At that time, only 3 home sites were available right on the water.

Les gusto el lugar tanto que volvieron después de una semana, y al día siguiente encontraron y adquirieron un hermoso terreno de frente de playa para construir su hogar soñado. The husband, an architect and builder, worked together with the architect Jacinto Ávalos to design a home that would be compatible with the nature, with open ample spaces that would breathe in and out fresh breeze just as the ocean. Spaces of this beautiful home are thoughtfully planned in order to work well independently, but also working well balanced with each other, as a well designed mosaic of spaces. If you pay attention while walking around, you will notice that each opening, a door frame, a window or a pillar is like a frame of a picture. They are all oriented towards the ocean and cherishing the nature that surrounds them.

El esposo, un arquitecto y constructor, trabajó mano a mano con el arquitecto Jacinto Ávalos para diseñar un hogar que fuera compatible con la naturaleza, de espacios amplios y abiertos que respiraran la fresca brisa del océano. Los espacios de este hermoso hogar han sido cuidadosamente planeados para que puedan funcionar independientemente, pero bien balanceados uno con el otro, cual armonioso ensamble de mosaicos. Si prestas atención mientras caminas, notarás que cada entrada, marco de puerta, ventana o pilar, es como el marco de una fotografía. Todos están orientados hacia el océano y celebran la naturaleza que los rodea.

Los Cabos has been Gail and Larry’s home for already 5 years. Our owners spend here 9 months in a year, and from July to September they are in California with their family, and harvesting their pistachio farm. First meant as a second residence, their Los Cabos home soon became a place where our owners wished to spend most of their days. The atmosphere in Quinta Cangrejo is always friendly and welcoming. Edgar, Robbie and Scout, three beautiful Labradors greet you on your way in; and if you deserve it, you’ll get a gentle meow and a snug of at least one of the 4 cats called Puka, Paco Bell, Pickle and Polly.

Los Cabos ha sido el hogar de Gail y Larry por 5 años. Ellos pasan 9 meses del año aquí, y de Julio a Septiembre están en California con su familia y cosechando su granja de pistaches. Originariamente destinada como su segundo hogar, su casa en Los Cabos pronto se convirtió en un lugar donde deseaban pasar gran parte de sus días. La atmósfera en Quinta Cangrejo siempre es agradable y acogedora. Like crabs work to protect their families and use their shell to protect its home, the heart of this country villa is protected from the outside with a shell, a wall which very well hides the inside and doesn’t give the impression of the magnificence of its presence.

Así como los cangrejos trabajan para proteger a sus familias y utilizan su cascarón para proteger su hogar, el hogar está protegido del exterior con un cascarón, un muro que esconde muy bien los interiores y no da la impresión de lo espléndida de su presencia.

The home boasts with 3 independent but interconnected levels. Inside elevator and stairs, and an external staircase enable an easy access all around the property. On the ground level you will find an open dining room and kitchen, palapa, Gail’s office, living area by the ‘dogs’ pool, lounge area, masters bedroom and a casita for their full time caretakers.

El hogar cuenta con 3 independientes pero interconectados niveles.

Elevador, escaleras internas y exteriores, permiten el fácil acceso a toda la propiedad. A nivel calle encontrarás un comedor y cocina abiertos, palapa, la oficina de Gail, sala a un lado de la “alberca de los perros”, sala de estar, recámaras principales y casita para su personal.

On the level below there is a big swimming pool, guest bedrooms and Larry´s astonishing office with a piano. It is not astonishing just because of its shape - it is round - but also because it prides with a magnificent collection of antique carousel animals.

Un nivel abajo hay una gran alberca, recámaras para huéspedes y la impresionante oficina de Larry con piano. Impresiona no sólo por su forma circular, pero porque ostenta una magnífica colección de antiguos animales de carrusel.

The lowest level of Quinta Cangrejo includes a lawn, storage for Larry’s ATV, palapa, and a direct access to the beach. There is also a hidden spot where Gail and Larry especially like to be just before sunset. Each evening they have a cocktail, sit in their rocking chairs, and watch the ocean and the sun setting behind the famous arch.

El último nivel de Quinta Cangrejo incluye un jardín, bodega para los ATV de Larry, una palapa y acceso directo a la playa. Hay también un lugar escondido donde Gail y Larry disfrutan justo al atardecer. Cada tarde se deleitan con un cocktail, se sientan en sus mecedoras y admiran el océano y al sol caer detrás del famoso arco.

“¿Cómo no te pudiera gustar Los Cabos?” pregunta Gail durante nuestra conversación. “Me siento bendecida al poder vivir en este hermoso lugar”. Sintiéndose premiados y agradecidos, un deseo fuerte de Gail era estar involucrada con la sociedad, poder ayudar a los necesitados. Se convirtió en la directora de la Humane Society local, y junto a otros logró 2 cosas importantes: unir a la Humane Society de Cabo San Lucas con la de San José formando The Los Cabos Humane Society; y adquir el status de donatario por parte del gobierno.

Gail and Larry have 5 children and 4 grandchildren, and they strongly believe that children are our future. This is also one of the reasons Gail joined the Board of Directors of The Los Cabos Children’s Foundation.

While the foundation has been very active in the area for more than 6 years already, their latest efforts are directed towards getting the first cancer treatment center for children to Baja California Sur. BCS is the only state in Mexico that does not have cancer treatment for children. She wishes to include the Los Cabos Humane Society to be part of a third phase of the Children’s Medical Campus and build a new Center that would provide physically, mentally and emotionally challenged children an opportunity for emotional and physical growth and to also introduce the therapeutic value of animals in rehabilitation.

Gail y Larry tienen 5 hijos y 4 nietos y creen fervientemente que los niños son nuestro futuro. Esa es una de las razones por las que Gail se unió al Comité Directivo de The Los Cabos Children’s Foundation. Mientras la fundación ha estado bastante activa en el área por más de 6 años, sus últimos esfuerzos están dirigidos hacia tener el primer centro de tratamiento del cáncer de niños en Baja California Sur. BCS es el único estado en México que no tiene un centro de tratamiento de cáncer de niños. Ella desea incluir a Los Cabos Humane Society para que sea una parte de la tercera fase del campus médico y construir un nuevo centro que proveería a niños con discapacidades físicas, mentales y emocionales, una oportunidad de crecimiento emocional y físico, a la vez que se les ofrece el valor terapéutico de los animales en su rehabilitación.

“How could you not like Los Cabos?” asks Gail during our conversation. “I feel blessed to be able to live in this beautiful place.” They feel rewarded and thankful, which led Gail’s strong desire to get involved in the community, to be able to help to those in need, to give back. She became a director of local Humane Society, and among others helped achieve 2 important things: they merged Humane Society of Cabo San Lucas with San Jose chapter in one organization, The Los Cabos Humane Society; and they got the donatorio status.

ANCIENT Mexican culture has always accentuated the wisdom,

experience and learning of the Curanderas; people connected with the environment and nature and born with a special gift to heal people. The practice of curanderismo in Mexico dates back to centuries ago when the illness of body and soul were remedied through a combination of herbs and practices involving nature. Back then people came to their shaman or hierbero (herbalist), a truly respected person within their society, for both physical and spiritual consultations.

EN LA ANTIGUA cultura mexicana ha destacado la sabiduría, experiencia y enseñanzas de las Curanderas, personas conectadas con su entorno y con la naturaleza, las cuales nacen con un don especial para sanar a las personas. El curanderismo en México data de siglos atrás cuando los males del cuerpo y alma tenían remedio a través de una combinación de hierbas y costumbres que involucraban a la naturaleza. En ese entonces, las personas acudían al chamán o hierbero, un personaje respetado dentro de su sociedad para consultas tanto físicas como espirituales.

The concepts and traditions of healers have changed over the years.

Today, though erroneously associated with magic and quackery, curanderos are people who allow the energy of Mother Nature to flow through them and understand the value it brings through herbs and the elements that surround them, such as the moon, the sea, the plants and the desert.

A curandera takes these elements, learns from them and is inspired by their benefits in order to help people.

El concepto y la tradición de una curandera han cambiado a través de los años. Hoy en día, aunque erróneamente asociado con magia y charlatanería, los curanderos permiten que la energía de la madre naturaleza fluya a través de ellos y comprenden el valor que ésta aporta a través de las hierbas y elementos que nos rodean como la luna, el mar, las plantas y el desierto. Un curandero toma éstos elementos, aprende de ellos y se inspira en cada uno de sus beneficios para auxiliar a sus semejantes.

Much has been said about the South of Baja being a magical place where two seas collapse with a rocky, barren desert, yet so warm and unique, that in combination with plants such as basil, rue, orange blossom, pepper tree, rosemary and lemon, a healer can work wonders in restoring the physical and spiritual health of those who seek it.

Josefina seeks for help and strength to the Gods and Mother Nature when healing. Being a connoisseur of the beneficial characteristics of herbs, her infusions are a combination of different plants so it is through them that health and peace are restored. She explains how

Hoy, Josefina da consulta a los clientes de Auriga Spa, y al inicio de cada tratamiento, ayuda al hacer una ceremonia de purificación con limón, albahaca y romero. Sus propiedades permiten que el cliente se sienta relajado para recibir lo mejor del tratamiento que sigue.

Born in Jalisco but resident of Los Cabos for a little more than half a century, Josefina stresses the relevance of understanding the nature, the moon and the sea, their principles, and how they change every season, discarding the bad and learning from the good. At the end, she invited us to take a moment out of our days, admire the place where we live, and let the energy emanating from the desert and ocean to fulfill our soul and bring in the harmony and perfect balance.

Originaria de Jalisco pero residente de Los Cabos desde hace poco más de medio siglo, Josefina nos indica la relevancia de comprender a la naturaleza, a la luna y al mar, de cómo se rigen y cómo cambian con cada estación, desechando lo malo y aprendiendo de lo bueno. Para finalizar la charla, Josefina nos invitó a que nos tomáramos un momento dentro de nuestro día y admiráramos el lugar donde vivimos, dejando que la energía que emanan el desierto y el mar llene nuestra alma y nos llena de harmonía y balance perfecto.

Chocolate, perhaps the most popular of sweet foods, has a long history in Mesoamerica and was an important part of Mayan and Aztec culture, at which time it was neither sweet nor a food, but a beverage, and a sour one at that. Today’s word chocolate derives from Nahuatl, the language of Aztecs, from word xocolalt, meaning bitter water*. The Aztecs made a variety of drinks made of chocolate, combined with honey, nuts, seeds, spices, flowers, hot chili pepper among others. The thick and cold drink was believed to be a health elixir with aphrodisiac qualities, bringing wisdom and power to anyone who enjoyed it.

Chocolate, probablemente el alimento dulce más popular, tiene una larga historia en Mesoamérica y fue un importante componente de la cultura Maya y Azteca, donde no era ni alimento ni dulce, sino una bebida amarga.

Hoy en día la palabra chocolate se deriva de la palabra Nahuatl xocolaltx, que significa agua amarga*. Los aztecas hacían una gran variedad de bebidas derivadas del chocolate y la combinaban con miel, nueces, semillas, especias, flores, chile, etc. Se creía que esta bebida gruesa y fría era un elixir para la salud con cualidades afrodisiacas, dando poder y sabiduría a quien disfrutara de ella.

Montezuma was the one who introduced cocoa beans and chocolate to young Spaniard Hernán Cortés, who conquered México in 1519 and in 1528 returned to Spain with some cocoa beans. The Spaniards were the ones first starting to add sugar to the drink, and discovered that sweet it was quite a delicacy. The formula for this highly demanded and noble potion was kept a secret, which Spain managed to keep from the rest of the world for almost 100 years!

Moctezuma fue quien presentó los granos de cacao y chocolate al joven español Hernán Cortés, quien conquisto México en 1519, y fue en 1528 cuando regreso a España con granos de cacao. Los españoles fueron los primeros en agregar azúcar a la bebida, y descubrieron que ese dulce realmente era un manjar. La fórmula para esta gran demandada y noble poción se mantuvo secreta, ¡Lo cual los españoles lograron por casi 100 años!

Slowly, the secret was revealed, and chocolate was introduced to royal courts in France in 1615 and Austria, in 1711. A Frenchman opened the first chocolate house in London in 1657, and Italians began serving chocolate in Florence and Venice in 1720. The chocolate was first introduced to United States in 1764. Industrial Revolution in 18th century helped make chocolate available to masses. We got first eatable solid chocolate in 1847 by an Englishman Joseph Fry, and… you know the rest.

Today, chocolate in Mexico is still widely used. Not just as a drink or sweet food, but also as an ingredient in popular sauce mole, used for poultry, and more. The most traditional use for chocolate is for hot beverages such as Atole, Champurrado and Mexican Hot Chocolate.

Hoy en día, el chocolate en México sigue siendo muy usado. No solo como una bebida o un dulce, sino como un ingrediente popular en los alimentos. El uso más tradicional para el chocolate es en bebidas calientes como atole, champurrado y chocolate caliente.

Atole is originally made with corn masa. It can also be made out of grits, wheat or rice, and have chocolate for taste. It is frequently served with tamales.

El atole originalmente se elabora en base a la masa de maíz, puede también hacerse con sémola de maíz, trigo o arroz y condimentarse con cacao para darle sabor. Frecuentemente se acompaña de tamales.

Champurrado is also served as a dessert with Churros or a sweet bread called Pan Dulce. This drink is whipped up using a wooden whisk called a molinillo (you can also use a blender). The whisk is held between the palms of your hands. Then using a back and forth motion the whisk moves back and forth in the mixture until it is aerated and frothy.

El champurrado es servido con churros o pan dulce. Esta bebida es batida utilizando un molinillo de madera, aunque también se puede utilizar una licuadora. El molinillo es sostenido con la palma de las manos, y usando un movimiento de vaivén, el molinillo se mueve hacia atrás y adelante en la mezcla hasta que se vuelve airosa y espumosa.

Tejate is an Oaxacan specialty. An interesting cold drink is made of dark chocolate, corn masa, cocoa flowers, then marinated and frothed.

El tejate es una especialidad Oaxaqueña. Una interesante bebida fría hecha de chocolate amargo, masa, flores de cacao entre otros. Se deja marinar y que espume.

Mole is a sauce that varies in content depending on the region. The traditional red mole contains chilies, garlic, nuts, tomato, spices and chocolate. It is important to note that the amount of chocolate is very small and enhances but does not overpower the sauce. The sauce is served with turkey or chicken. Mole does not use the Mexican flavored chocolate but instead a dark bitter, unspiced version.

El mole es una salsa que varía en contenido dependiendo de la región.

El tradicional mole rojo contiene chiles, ajo, nueces, tomate, especies y chocolate. Es importante notar que la cantidad de chocolate es muy pequeña, haciendo la salsa grandiosa sin dominar en el sabor. La salsa es servida con pavo o pollo. El mole no utiliza el tradicional chocolate mexicano de sabor, sino uno amargo y sin especias.

HOT MEXICAN CHOCOLATE

CHOCOLATE CALIENTE

Although Montezuma drank his frothy chocolate cold, we can enjoy a delicious whipped version of hot Mexican chocolate.

Aunque Moctezuma bebía su espumoso chocolate frío, podemos disfrutar de una deliciosa versión de chocolate caliente.

In a bowl, put 1 cup sugar, ½ cup cocoa powder, and mix with enough water to make a thin paste. In a large pan, bring to a boil 4 cups milk.

Break 2-4 cinnamon sticks into the milk.

Reduce heat and simmer 5 minutes.

Carefully stir in the cocoa mix.

Turn off heat and whip to a froth just before serving.

En un tazón, agregue 1 taza de azúcar, ½ taza de cacao en polvo y mézclelo con suficiente agua para formar una pasta espesa. En una olla grande, hierva 4 litros de leche.

Agregue de 2 a 4 varitas de canela.

Lleve a fuego lento y continúe así por 5 minutos.

Con cuidado, agregue la mezcla de cacao.

Apague el fuego y bata hasta espesar y sirva inmediatamente.

BAJA CALIFORNIA SUR (BCS), the youngest state of Mexico (35 years), has been acknowledged as one of the most beautiful places in Mexico, and due to its proximity to the United States, often referred to as a second home retreat for baby boomers. With the growth and development of Baja the interest and migration of young professionals to this unique place have grown as well. Young professionals are good for BCS, not only because we’ll have a generation that will continue the legacy of the land, but mostly because they are the ones who will be able to promote it, build it and make it grow with new creative and quality ideas. Today, we need strategic urban planning, development of walking areas, functional drainage systems, traffic re-direction, sustainable, efficient and cost effective ideas and implementation, which will improve the future of the towns and of people who live here.

BAJA CALIFORNIA SUR (BCS), es el estado más joven de México y ha sido reconocido como uno de los lugares más bellos del mismo, y por su vecindad a los Estados Unidos, usualmente es considerado un segundo hogar para los “baby boomers”. Con el crecimiento y desarrollo de la BCS el interés y migración de jóvenes profesionistas ha crecido también. Los jóvenes profesionistas son buenos para la región, no solamente por que serán la generación que continuará el legado de esta tierra, sino por que ellos serán quienes promuevan, construyan y hagan crecer con nuevas ideas de calidad. Hoy día, con el incremento poblacional necesitamos planeamiento estratégico urbano, desarrollo de áreas peatonales, sistemas de drenaje efectivos, rediseño del transporte público, ideas económica y ecológicamente sustentables y aplicables, las cuales mejorarán el futuro de las ciudades y las personas que en ellas viven.

Due to several reasons, it wasn’t always possible to find the best quality for things we would like to do in this region. Slowly, this has changed, and the once popular demand for caricaturized “Mexican” homes often seen in some western movies, has started to be replaced with contemporary design, sustainable living and a preservation of local nature.

Debido a varias razones, no siempre fue posible encontrar la mejor calidad para hacer las cosas como quisiéramos en esta región. Lentamente, esto ha cambiado, y la demanda de casas de estilo “Mexicano” caricaturizado en películas tipo “western”, ha comenzado a ser remplazado con diseño arquitectónico contemporáneo, estilos de vida sustentables y la preservación de la naturaleza local.

Young professionals in BCS have been often under-appreciated. Good news is that young architects with academic and professional international experience have started coming here, recognizing its development potential and a challenge they want to be part of. In this occasion, I’d like to talk about four young architectural offices established in BCS, which have recently received national and international recognition for their work in the area:

Los jóvenes profesionistas comúnmente han sido despreciados en BCS. La buena noticia es que jóvenes arquitectos con educación y experiencia profesional han comenzado a mudarse aquí, reconociendo el potencial de desarrollo y el reto del cual ellos quieren también ser parte. En esta ocasión, me gustaría hablar de cuatro jóvenes oficinas de BCS, las cuales recientemente han recibido reconocimientos, tanto nacionales como internacionales, al trabajo que han desarrollado en BCS:

Colectivo MX [www.colectivomx.com.mx] is an architectural office with Los Cabos and Mexico City offices, guided by Arch. Javier Gutierrez. They received a Silver Medal in the X Mexican Biennale of Architecture in 2008 for their project Casa Shelly, an ecological home located on the East Cape, which uses solar energy to generate electricity, has pool with salted water, a system for re-use of treated water and other ecological techniques.

Colectivo MX [www.colectivomx.com.mx] es una oficina de arquitectura con sucursales en Los Cabos y México D.F. dirigida por el Arq. Javier Gutiérrez. Ellos recibieron la Medalla de Plata de la X Bienal Mexicana de Arquitectura por su proyecto de la Casa Shelly, un hogar ecológico localizado en el Cabo del Este, la cual utiliza energía solar para generar electricidad, piscina de agua salada, sistema de reciclaje de aguas y otras técnicas ecológicas pasivas.

Lastly we’d like to mention a10studio [www.a10studio.net], with presence in Los Cabos and Mexico City, whose project Re.evolution lounge+bar has been extensively published in acknowledged and specialized design and architectural media, and is nominated for the international award “Restaurant and Bar Design Awards” in the U.K..

También mencionaremos a a10studio [www.a10studio.net], con presencia en Los Cabos y México D.F., cuyo proyecto en Cabo San Lucas: Re.evolution lounge, ha sido ampliamente publicado en medios especializados de arquitectura y diseño, y está nominado para la categoría internacional de los “Restaurant and Bar Design Awards” en Inglaterra.

These four young architectural offices are a small example of talent that we have in the region today, and we’ll be surely hearing about them in the future.

Hopefully, planning and urban authorities, developers and clients will support the young talents, listen to their new ideas, views and possibilities for the better future development of our State.

Estas cuatro oficinas son un pequeño ejemplo del talento con el que contamos hoy en la región, y seguramente seguiremos escuchando mucho de ellos. Today’s Value. As with any investment, the value of your property or housing investment is varying as well, largely depending on the alternatives which are driven by combinations of local/regional capital markets, and added value (such as location, amenities, proximity to school, hospitals, downtown, beaches i.e.). In case of BCS real estate, we have seen a historic trend over the past 35 years which assures any owner that their investment will increase in value in the mid and long term. There is no other location in the world that could offer you such an amazing combination of location, weather, nature and stable economic conditions of the country (Mexico has no deficit!).

El valor de hoy en día. Como en cualquier otra inversión, el valor de su propiedad varía también, mayormente dependiendo de las alternativas que combinan las condiciones de capitales locales/regionales y de valor agregado (como la ubicación, las amenidades, proximidad a escuelas, hospitales, el centro, las playas, etc). And even though some buyers who bought their secondary, vacation or investment properties in 2007 are now experiencing a temporary halt in their value rise, they are certain that as capital markets get back on their feet they will again see price growth, in the mean time: it’s the best investment they have and one they can come to enjoy with friends and family! Some of them are even taking advantage of lower prices and are buying additional properties, as they are savvy to the strength of the market in the area.
